5 Minute Shakshuka Cook & Prep: 5 M Serving: 4 Recipe by: Estee Kafra / Source: Family Table by Mishpacha Magazine

Ingredients

Black pepper, for sprinkling ½ cup salsa (store-bought is great — choose your desired level of "heat") 1 cup Tuscanini Marinara Sauce

1 teaspoon oil 2 - 3 eggs 1 - 2 tablespoons freshly chopped parsley Salt, for sprinkling

Start Cooking

Combine the salsa and tomato sauce in a bowl. Place oil in a small skillet or pan and preheat over medium heat. Pour the sauce into it. Let cook for two to three minutes. Meanwhile, crack two eggs into two different bowls. Make a small hole in the tomato sauce with the back of a spoon and pour in one egg. Repeat with the second egg (and a third, if desired). Cover the pan with a pot lid larger than the pan circumference and cook just until whites are firm and yolks are set. Uncover, sprinkle with fresh parsley, and serve with baguettes or crusty bread.

Ingredients

2 large spaghetti squash 2 - 10 oz. box of fresh portobello mushrooms 1 bag fresh spinach leaves 2 large purple onion 1 - 24 oz. bag of cauliflower florets ¾ cup milk

Start Cooking

½ cup low-fat mozzarella cheese 1 jar Tuscanini Marinara Sauce 4 garlic cloves salt, to taste pepper, to taste 2 frozen garlic cubes oil for sautéing

Cut squash in half (lengthwise) sprinkle with salt and pepper (spray with cooking spray-optional) and bake on 350 F° for one and half hours. In the meantime, cut mushrooms, four garlic cloves and purple onion into small pieces and sauté about seven minutes. Add bag of baby spinach leaves and sauté another few minutes. In a separate pot, cook the cauliflower in water with a little salt until very soft, strain well. Once strained but still hot, place cauliflower back in pot and add milk and cheese. Add salt and pepper and two frozen garlic cubes to taste. Use an immersion blender to blend it into a fine, thin cream sauce. Once the spaghetti squash is cooked, remove the seeds. Then use a fork to scrape out the entire inside of the squash in strands. You are now almost ready to eat! You can plate this dish individually or layer it in a pan and let people help themselves. Place spaghetti squash on bottom, followed by marinara sauce then the sauteed veggies and finally top it with your cream sauce. Enjoy!

QUESTIONING KENYA Kudos to The Monsey View for scouring the world to find such interesting stories. Your magazine has so much toichen! I read with interest a recent article in your magazine about the woman who traveled to the jungles of Kenya seeking natural “herbal” medical treatment for her chronic condition. The article does not specify whether the woman was zoche to a refuah shleimah as the result of her treatments. In any case, while I wish her a refuah sheleimah and hope that we are never “tested” with such circumstances, I question the idea of seeking such “natural” or herbal treatments in the heart of Africa. According to the United Nations Department of Economic and Social Affairs (UN DESA) World Population Prospects (The 2015 Revision), Kenya ranks 173 out of 201 countries for life expectancy, with 1 representing the longest life expectancy and 201 being the shortest, lo aleinu. That means that Kenya falls roughly in the lowest 14th percentile of life expectancy in the world. Israel, by the way, ranks number 9 by that same UN counting. Africa, on a whole, ranks the lowest for life expectancy in the world among all continents. If the local “natural” treatments are so good in Kenya, why don’t the locals take advantage of them? I suspect that, sadly, it appears that someone in Kenya is taking advantage of desperate people. It was not a blanket statement for all seeking medical treatment, but a single-time occurrence. While there, there was obvious healing, though it did not last when the treatments were discontinued upon leaving Africa. As for natural treatments in general, and natural treatments specifically in Kenya, I am sure that there are many scams and scammers, though methods that actually do work truly can be found in the mix. The problem lies within knowing whom to trust. This is a problem that we have even over here in America, both in terms of “natural” healing and with the standard medical system. Unfortunately, there is a plethora of bad medical practices whichever way you turn. May Moshiach come speedily and may we all merit true refuah!

I want to thank you for your delicious gluten-free recipes a few weeks ago; we greatly appreciated them! The Bundt cake became our newest favorite. I would like to share with the gluten-free community a doughnut recipe I converted to gluten-free that came out tasting delicious: DELICIOUS AND EASY GLUTEN-FREE DOUGHNUT RECIPE 1 T. dry yeast 2 T. sugar ¾ cup warm water ¼ tsp. salt 1 T. oil 1 egg yolk 1 tsp. xanthan gum ¼ tsp. baking soda 2¼ cups gluten-free all purpose flour (or 3/4 cup brown rice flour, 3/4 cup tapioca flour and 3/4 cup potato starch) Directions: Dissolve yeast and sugar in water. Let yeast mixture rise 3–5 minutes. Mix together all ingredients in mixer (dough is very soft). Put dough on floured baking paper and flatten dough with floured hands to approximately ¾ inch thick. Cut into circles with floured glass. Let rise on the paper for ½–1 hour. Deep-fry for about two minutes on each side. Yields 10 doughnuts. Enjoy! M.H.

PROBLEMS WITH PARKING Baruch Hashem, the amount of batei medrashim in my neighborhood has grown tremendously. Our tiny street has gone from being a dot on the radar screen to practically the center of town. Unfortunately, the amount of parking available for shul-goers is nowhere near sufficient, which causes a tre-

mendous amount of parking build-up on the surrounding streets. Once again, baruch Hashem! But when the laws of the town prohibit parking on the road from November 1 through March 31 (to allow for snow removal), then not only are you inviting a ticket, but you may also cause a homeowner agmas nefesh if you park near the sides of their driveway because the snow plow will veer around that property, neither depositing salt nor plowing. If you see that your wrongly parked car caused accumulated snow to remain at the end of my driveway, please be so kind as to shovel before you leave! I would also suggest that during the summer months, when a homeowner would like to park their own car at the spot near their driveway to allow their kinderlach to play in the driveway during the long Shabbos afternoons, it would be mentschlich (although not mandatory because the property is public) to obtain the homeowner’s permission. I have been working with children as an occupational therapist for over 15 years now, and I absolutely love what I do. Over the course of my career, I have worked with hundreds of children who really needed my help. I have also worked with hundreds of children who really did not need my help. I would like to address what I, along with so many other professionals, feel is an unnecessary pressure that our community has been putting on its children and their parents: too much therapy for “problems” that are normal parts of growing up. Our waiting lists of patients have grown and grown, and while this may sound good for us therapists, it is not good for the children suffering from real disabilities or delays. These children genuinely need our services, but cannot immediately receive them because we are too busy treating toddlers who don’t hold their crayons properly in playgroup and elementary school students who wiggle a little in their seats. I have had a parent run crying to me that her daughter’s teacher said she needed therapy to help her with transitions because she often needs reminders to put away her lunch box after lunch time. She was three and a half years old! I have also had parents crying that their child needed my services because she sat too close to her peers at circle time, and others coming because they were told that their son is too clumsy in the playground. While I feel that my job is important, teachers should remember that kids are not born automatically knowing how to share, how to transition, how to build relationships and how to manipulate a pencil; it is your job to teach them.

And some kids may just naturally be more shy, or more clumsy. Some things can be outgrown! Or at least worked on without therapy. RE: PRIVATE PROPERTY (ISSUE #121) I’ve been following the discussion regarding shortcuts with interest, and I would like to explore another aspect of this topic with your readership. Yes, I agree that people should be more appreciative of property owners who kindly allow them to trespass on their properties and be more understanding of those who choose to keep their privacy intact. I was wondering what your readers think of shortcuts with a locked gate, which only the owner of the property uses. While the owner’s family ends up trespassing on their backyard neighbor’s property when using their shortcut, their neighbors get no access. I don’t want to be that hard-to-live with neighbor and put my own gate or say something, so we watch the parade and keep quiet, taking the roundabout route when getting to places, but I am wondering what insight your readers may have to offer. A YOM TOV, NOT A SEASON As we all know, Chanukah is a yom tov where we remember and rejoice in the nissim that Hashem had done for the Yidden in the times of the Yavanim. Unfortunately, the true meaning of Chanukah has faded away, and now most people associate Chanukah with parties, games and gifts. These have absolutely nothing to do with Chanukah and everything to do with the goyishe holidays. What bothered me in last week’s issue was a sentence in the article “That Perfect Gift in a Game” that read: “In honor of the season of giving…” Since when is Chanukah a season? Do we have a “season” to eat matzah? Do we have a “season” to sit in a sukkah? Now is a goyishe season of giving! That’s what it shall remain. ONE OF THE MOST common questions I am asked during an initial consult is: “What about exercise?” My standard answer is usually, “Don’t worry about it this week. Take the week to get adjusted to the new food plan, and we will discuss exercise next week. There are enough changes to be made this week without complicating things with exercise.” I like to delay the discussion of exercise, because most clients are coming to me to lose weight, and most of the weight can be lost without exercise. This is not to say that I don’t want my clients to exercise; it just means that they don’t have to exercise in order to lose weight. In truth, the main reason I don’t push my clients to exercise at the beginning of their weight-loss journey is because exercise, while incredibly healthy and important, tends to actually slow down the weight-loss process in the short term. This is due to the fact that exercising causes inflammation from microtears in muscle, and this inflammation makes the scale tick upward. Additionally, exercise can build muscle that can slow the weight-loss results, as muscle weighs more than fat. Finally, vigorous exercise stimulates the appetite and can make it more difficult to stick to a proper food plan. Therefore, if a client is already exercising, I encourage them to continue their routine. However, if the entire health and weight-loss journey is new, I prefer that a client adjust to their new food plan first, and then, once they lose a fair amount of weight, incorporate a new exercise routine to round out the complete picture of health and wellness. Don’t get me wrong, getting your

cardio in has vital health benefits including: • Weight loss in the long run • Stronger heart and lungs • Increased bone density • Reduced stress • Reduced risk of heart disease and some types of cancer • Temporary relief from depression and anxiety • More confidence about how you feel and how you look • Better sleep • Toning and loss of inches While many of us commonly think about cardio for weight loss, strength training has similar benefits:

I am not proud to say this, but right now, almost — but not quite — nothing. While attending our CBT training several weeks ago, I committed to doing ten squats four times a week (don’t ask; they put me on the spot in a group setting!), so I am still faithfully doing that. There are times that I am more into it and will hit the gym several times a week. At one point, right after my twins were born, I was running up to six miles several times a week and was in incredible shape. But at this very moment, it’s just those measly


squats. I like to believe that anything is better than nothing. I try to encourage my clients not to be black and white about dieting, and the same holds true for exercise. Just because you can’t be perfect doesn’t mean you can’t do something. But don’t follow my example. Follow Tanya’s. She works out regularly! And this is in addition to giving exercise classes. And in addition to running nine locations, growing the wholesale department and caring for her four children. So if anyone is “too busy” to exercise, it is Tanya, yet she finds the time. Which means so can I. And so can you. In fact, many of my clients do end up incorporating exercise into their routine. We have an entire training department dedicated to fitness and are happy to set you up with someone who will help you reach your fitness goals. Just please don’t depend on the exercise to push the scale down faster, as you may be disappointed. Chanukah

“HI CHAVY, IT’S MOISH. I’m just calling to let you know I’ll be coming home late tonight. I’m a bit behind schedule at work.” Chavy was a little confused since Moish worked for a frum company. “Wow, Moish, what happened? Didn’t Mr. Spitzer let everyone go home early like he usually does on Chanukah?” “Yeah, sure he said we could go, but I just have to stay a bit longer. I set a goal this year for how much money I need to earn in commissions in order to meet our growing budget. I calculated how many sales I need to make each day, and I’ve fallen short today. I’m going to keep making calls until I get those last few sales.” Chavy paused to collect her thoughts. Her father had always made it a point to tzind Chanukah licht as early as possible. Chavy restrained her disappointment and responded. “Well, we already told your father that we’ll be joining him tonight. What should I do, Moish?” Moish sighed. “Well, I guess that’s one more phone call I need to make tonight. I’ll call him now and ask if he minds waiting for me.” The events of Chanukah overturn our usual understanding of the delicate interplay between bitachon and hishtadlus. On the one hand, we are to trust that Hashem will send us everything we need. On the other hand, we must go forth and make an effort to attain our needs. For many people, these two concepts are at odds. If Hashem will sustain me, why must I work? And if I perceive that I earn my sustenance through hard work, doesn’t that weaken my bitachon? During the events of Chanukah, doing hishtadlus was itself an act of deep bitachon. When the laws of nature are stacked against a person, but he recognizes that success and failure come only from Hashem and therefore he proceeds to do hishtadlus, the hishtadlus itself is an act of bitachon. The battle of the Chashmonaim was one of the few against the many and the weak against the strong. Victory was extremely unlikely, yet they took action, trusting in Hashem. Doing hishtadlus was there-

fore an act of bitachon. Likewise with the oil; by the laws of nature, there was not enough oil to last for eight days. Yet, a person is only required to put in effort and trust Hashem for the outcome. Lighting a single day’s oil was an act of bitachon. When a person takes action in accordance with the Torah, and he has in mind that the outcome is purely in Hashem’s hands, then his act of hishtadlus is an act of bitachon as well. The Gemara states that the zman of lighting Chanukah candles to be “ad shetichleh regel min hashuk — until people are no longer walking in the marketplace.” R’ Moshe Leib Sassover explains “until people are no longer walking in the marketplace” to mean that a person should have bitachon and not overdo his hishtadlus by spending too much time in the marketplace. Moish called his father to let him know that he needed to work late that night and was surprised at his father’s response — his father laughed. Apparently, Moish’s father had once made a similar call to his father-in-law many years earlier, and his father-in-law had quickly set him straight about what his priorities should be vis-à-vis hishtadlus. “Moish, you’re making a big mistake. The Chanukah licht remind us that our hishtadlus is meant to create an opening through which Hashem can send us our sustenance — we have to have bitachon. By choosing to do more hishtadlus rather than tzind licht on time, you are taking Hashem out of the picture and undermining the entire meaning of Chanukah.” Moish sat in stunned silence. His father was absolutely right. How had he so completely misplaced his priorities? Clutching the receiver, Moish finally spoke in a choked voice. “Thank you so much for setting me straight, Ta. Chavy and I will be right over.” As we tzind Chanukah licht this year, may we all remember the powerful lesson of Chanukah. Hashem can take our tiny acts of hishtadlus and turn them into resounding success beyond all physical limitations.

Last-Minute Lighting Love and Warmth from the Chanukah Lights Based on a lecture by Rabbi Fischel Schachter

F

FOR ONE WOMAN living in Toronto with her husband, life drastically changed when she was unfortunately diagnosed with a serious disease. Tremendously worried, the couple decided that they would visit a doctor in New York who was supposedly capable of treating the illness. The doctor was a genuinely kindhearted man and, after examining the woman’s situation, believed he would be successful in treating her. But there was only one problem: It would cost a fortune. “I think I can help your wife,” the doctor said to the husband. “The only issue is that your Canadian insurance will not cover the cost, which is expensive.” While on the one hand the husband and wife were elated that there was a cure, they were simultaneously disheartened by the news that they could not afford it. Lamenting their pitiful circumstance, tears began to fall down their faces. Catching sight of the couple’s anguish, the doctor said, “I am terribly sorry. I personally would waive the bill of my treatment. The only problem is that you will still have to pay the hospital bill. That itself is also quite expensive.” Sitting down silently, the husband and wife remained devastated. The doctor, too, was at a loss of what to say. But then he came up with the following idea: “I have a student of mine who practices as a doctor in a small city just northwest of Toronto. If you would like, I could tell him the exact protocol to follow and give him directions on what to do step by step. If you are treated

by him, your Canadian insurance will cover the cost.” The husband and wife both agreed to go through with this arrangement. Calling this doctor in Canada, they were unsuccessful in making an appointment with him. His schedule was simply too full to administer a surgery. Finally, though, he called them back. “I have an opening on Friday afternoon. Would that work for you?” The husband began thinking about how they would be cutting it close to Shabbos if they would schedule the surgery for Friday afternoon, aside from the fact that this particular Shabbos was the first night of Chanukah, and he decided to call his rav. “Do what you have to do,” replied the rav. “Stay in a hotel over Shabbos, and make sure your wife is taken care of.” After being admitted into the hospital, the couple met the doctor. And as expected, he informed them that he had spoken to the other doctor in New York and went over the details of the procedure with him. He reassured them that everything would go well. Shabbos was rapidly approaching, and so was the time to light the Chanukah candles. But the husband wished to wait until the doctor was available to be seen. Just minutes before the latest time he could light the menorah and Shabbos candles, the doctor walked into his office, again reassuring him that everything would be all right with his wife. The husband felt a bit more at ease. “But Doctor,” said the husband, “can I ask for a favor? The first night of Chanukah is tonight, and I need to light candles. There are only a few minutes left for me


to do so. Would I be able to light here in your office? I don’t think I will have enough time to make it back to my hotel room.” Taking out his menorah and candles, the husband looked at the doctor in a desperate plea. “I’m sorry,” the doctor replied, “but you cannot light candles in the hospital. There are smoke alarms all over, and they will definitely go off. The fire department will be here in no time.” Faced with an answer he greatly wished to avoid hearing, the man felt pressured; time was running out. Looking all around, the husband noticed that the doctor had another small office in the back. Running there, he opened the door and peered inside. There was no smoke alarm in there. Racing back to the doctor, he said, “Doctor, what about in your back office? There’s no smoke alarm there.” “You’re pushing me here,” said the doctor. “Please let me light!” insisted the husband. “I hate to say it, but you never know if this may be my wife’s last Chanukah.” “If you must,” finally relented the doctor, “but please do it quickly.” Hurriedly making his way to the back office, the husband fumbled to set up the menorah. After finally situating the one candle in its place and preparing the shamash with which to light the candle, he opened the matchbox. There were two matches left. Striking one against the box, it caught fire. But then it flickered out. He was now left with one match. Wishing to himself that he had taken along a box with more matches, he attempted to light the second and last match. But it, too, flickered out before the shamash could catch fire. Now stuck without any matches, the husband did not know what to do. Returning yet again to the doctor, he frantically asked, “Doctor, do you have any matches?” Looking strangely at the husband, he replied, “No, I don’t have any matches.” “Please,” the husband begged. “There are only a couple minutes left to light. Look in your drawer; maybe there are some matches there.” “I told you already,” repeated the doctor, “I have no matches!”

“Just please look,” pleaded the husband. Opening his drawer, the doctor found a lighter. Surprised, but knowing that the husband needed to light the candles as soon as possible, he threw the lighter to him. It was literally minutes before the last time to light when the husband did so. Walking back over to the doctor, the husband profusely thanked him. The doctor stood there, shocked. “Let me tell you something,” the doctor said. “For fifteen years there was no lighter here in the office! First of all, I am not a smoker. Second of all, there is no use for a lighter here because, as I told you before, there are smoke alarms all over the place. But you know why I had a lighter in my drawer? Just this morning as I was leaving my house, I saw a group of teenagers, among them my own daughter, smoking on the porch. I was so angry that I grabbed the cigarettes and lighter from them and threw them into my briefcase. When I got to work, I shoved them into my drawer and forgot all about them. This all happened this very morning! You know what I think? G-d loves you.” Listening to the moving words of the doctor, the husband stared back at him and said, “No doctor, G-d loves you. I knew He was with me the whole time. He wanted to show you that He is there.” Sometimes we wonder how we will ever be able to make it through a situation. “It’s impossible!” we tell ourselves. But then the lights turn on and Hashem reveals to us that He was with us all along. “I never left you, My dear child. I love you and will never forsake you.” While we may think we are groping in utter darkness all alone, we would be wise to reconsider. Even with just minutes to go until it is too late, a shining light of love and warmth from our Father in Heaven beckons on the horizon. Or perhaps more accurately, an illuminating light of love and warmth is awaiting us right in the drawer.

Tartikov Rabbinical College Scores Major Win in Fight with Pomona IT WAS A MAJOR VICTORY for Congregation Rabbinical College of Tartikov after a federal judge released a 112-page ruling saying that the Village of Pomona’s zoning codes unconstitutionally interfered with the yeshivah’s right to build a school with a dormitory on a property that it owns at the corner of Route 306 and Route 202. Tartikov sued the village in 2007, saying that its land-use regulations on the 130-acre property were unreasonable, reported The Journal News. The

issue has remained in the courts since that time. In the ruling issued last week, U.S. District Judge Kenneth Karas agreed with Tartikov’s contention that portions of the Pomona village code were “enacted for an improper, discriminatory purpose,” violating the 1st and 14th Amendments to the United States Constitution, the New York State Constitution, the Religious Land Use and Institutional Persons Act of 2000, known as RLUIPA, and the Fair Housing Act.

As of 2016, Pomona had spent more than $3 million in legal fees to fight the proposed yeshivah. Its double-digit tax hikes have earned the village the dubious distinction of being one of the state’s most distressed communities. Tartikov hopes to build 250 housing units on approximately 100 acres, and received the court’s permission in 2016 to ask that it be reimbursed more than $4 million in legal fees by the village.

New Yorkers Dodge Bullet As Planned Subway Terror Attack Fizzles FOR THE SECOND TIME in seven weeks, New York City was the scene of a terror attack, this time with a would-be suicide bomber detonating a pipe bomb in the subway system during the Monday morning rush hour. ABC News reported that 27-year-old Akayed Ullah, originally from Bangladesh, told authorities that ISIS propaganda inspired him to carry out the attack. Authorities said that Ullah had been living in Brooklyn for seven years and had created the explosive device by rigging a 12-inch pipe stuffed with black powder and nails to a 9-volt battery and a small light bulb. After strapping the bomb to his own body using velcro and zip ties and riding the subway to Manhattan, Ullah detonated the device at 7:20 a.m. while walking in a crowded subway passage between the Port Authority bus terminal and the Times Square subway station. Thankfully, the explosion lacked the force to shat-

ter the pipe, which could have caused significant damage. Witnesses reported hearing a loud bang and seeing smoke and dust when the bomb went off. Ullah was one of five people hurt in the attack and the only one to suffer serious injuries. He was apprehended quickly by undercover Port Authority Police Officer Jack Collins with the help of three other officers, and later told authorities that he was hoping to avenge the death of Muslims around the world. A press conference held on Monday morning featured a rare appearance

of Governor Andrew Cuomo and New York City Mayor Bill de Blasio standing side by side in unity, both clearly relieved that a potential disaster had been averted. “Thank G-d the perpetrator did not achieve his ultimate goals,” said de Blasio. “Thank G-d our first responders were there so quickly to address the situation to make sure people were safe.” Subway service was suspended through the area as the investigation continued, and the bus terminal was closed for several hours. Photographs of Mayor de Blasio riding the subway to prove that the city’s trains are as safe as ever surfaced later in the day, with the mayor’s press secretary noting, “New Yorkers won’t be deterred.” A statement released on Monday by President Trump stressed the importance of enacting legislation to enhance domestic security by preventing dangerous individuals from entering the country. “America should always stand firm against terrorism and extremism,” said Trump.

GRANDMA’S POTATO LATKES INGREDIENTS: 5 large Idaho potatoes, peeled and washed 4 eggs, lightly beaten ½ tsp. salt ¼ tsp. black pepper ¼ tsp. baking powder 2 T. matzo meal 1 small onion, optional

DIRECTIONS: 1. Shred potatoes and onions on medium blade. 2. Combine with rest of ingredients. 3. Heat frying pan with half inch of canola or vegetable oil. 4. Using a large spoon, place about half a cup of batter into hot oil and fry about 6 to 8 minutes on each side.

And while many grocery stores have their own in-house brands, no bakery is as synonymous with Chanukah as Royal Donuts. Made fresh in Brooklyn every day during Chanukah, these delicious confections have been enjoyed by the kosher consumer for over 20 years. Donuts are delivered all over the TriState Area, from Monsey to Brooklyn to Monroe to Queens to Lakewood to the Five Towns...

Year-round doughnut sales are but a fraction of what is sold during Chanukah.

We walk further into the belly of the warehousecum-ballroom-cum-bakery and reach the far end where huge tubs of dough are rising. Like puffy pillows, the yeasty mix is rounded, fluffy, ready for hafrashas challah. A tall woman approaches, a face I vaguely recognize, having seen her at various simchos. “I’m going to take challah now,” she tells me, her face aglow. “I love my job. I love this mitzvah.” I watch the woman grasp a lump of dough, close her eyes, and with heartfelt kavanah, pronounce the bracha. For this moment she has deeply connected with her Creator, her face illuminated in an otherworldly glow. She’s not the only one who works with the dough. Near every tub sits another person, waiting for the right moment to perform their mitzvah. It is chilly here in this drafty room, and I hug my coat tighter about me. Time to move on, toward the warmth of the kitchen where doughnuts are being fried. We enter a side room where rows of deep fryers line the walls. Freshly shaped dough is plopped into the oil where we watch the donuts-inthe-making sizzle as they turn a golden hue. With deft movements, the bakers flip them using stick-like pieces of wood. Flip, flip, flip. It is much like watching a game of dominoes, as one golden-sided doughnut seems to segue into the pale unflipped side of the next. One by one, the hot doughnuts are removed and put to rest on a draining table. In another area of the room, vats of molten liquids are waiting. Workers dip the doughnuts into the chocolate, caramel and white-colored toppings and then treat some to sprinkles as well. Other doughnuts receive a heavy snowfall of confectioner’s sugar as a worker sifts white powder in the air above them. Nearby, another baker picks up ready doughnuts, two at a time, and pushes them against a machine with a needle-like protrusion. When he is finished, the doughnuts have been transformed from simple creations into plump and enticing works of art, jelly and/or custard oozing from their insides. I ask if we can custom order double filling. The baker smiles and acquiesces. My husband and I choose our flavorings and our bursting-with-filling confections are carefully nestled inside one of the iconic brown Royal Donuts boxes. We’ll take these treats to go. There are many other doughnuts ready to go. All around us are multi-tiered racks of all the lovely

There are many different fats and oils out there. How do we know what to use when? We use fats in salad dressings, cooking, frying, baking, sautéing and in recipes. The types of fats and oils that are used in recipes have specific impacts on sensory, nutritional and functional aspects of a finished product. Fats and oils, called “lipids,” impart lubricity, which improves food texture. The way cocoa butter melts on the tongue gives chocolate its unique sensual properties. A solvent is a liquid that is capable of dissolving another substance; for example, water is a solvent for salt. Lipids are solvents for flavors. That is the function of oils and fats; cream and butter are used not only for their textural qualities, but also for their ability to carry the flavors that people crave. The flavors of meat are carried through their lipids; the flavors of beef, lamb and veal would be totally indistinguishable if not for the fat in between the muscle. SO CHANUKAH IS COMING UP, AND THERE’S A LOT OF FRYING TO BE DONE… WHICH OIL WOULD BE BEST FOR THAT? Americans use more than 50 pounds of cooking oil per person, per year. There are many different oils out there, and choosing the right one can seem intimidating. Health aside, there are some important factors that must be considered when choosing an oil, and that is heating temperature and flavor. All oils react differently to heat, and that brings us to the smoke point of oils. What exactly is a smoke point, and why would it matter to us? Have you ever left a pot of oil on the stove, and suddenly, it started smoking? Every cooking fat has a point where it starts smoking. When that happens, the oil breaks down and starts to form some bad stuff like aldehydes, ketones, alcohols, etc. The worst of all is acrolein, which is formed during the smoking process and is very toxic to our cells. Inter-

preting these signals is a crucial element in understanding which oils are good for which purpose. To get a better understanding of this, we have to know where our oil is coming from. Oils are extracted from nuts and seeds. It can be done through mechanical crushing and pressing, which yields cold-pressed, raw oil that still has its original color and flavor. Most of the time, cold-

ing, filtering and heating to get rid of all compounds. At the end of the process, you are left with oil that has no flavor, has a longer shelf life and a higher smoke point. Have you ever heard of clarified butter? It basically follows the same concept. You heat the butter to rid it from the heatsensitive components, thereby raising its smoke point so you can use it like regular oil. The more refined the oil is, the higher the smoke point because the refining has removed all or most of the oils’ impurities. So to bring all of this information into the kitchen: FOR SEARING: When you sear food, the goal is to heat it very quickly and get a nice browning. For this you should choose an oil with a high smoke point, like vegetable, canola, peanut or corn oil, and heat it until it is very hot before adding the meat. FOR SAUTÉING: You don’t need very hot oil to sauté your food. You can choose an olive oil or other oil with a medium smoke point for that, and it will work perfectly fine.

The yom tov of Chanukah has two mitzvos: 1. To light Chanukah candles | 2. To say Hallel and hoda’ah LIGHTING THE MENORAH: • Every male or female (over the age of bar/bas mitzvah) is mechuyav in the mitzvah of Chanukah licht. • It is widely accepted that all males over bar mitzvah light the candles themselves. • Women and girls do not perform the actual lighting themselves, but are yotzei through the lighting of the baal habayis. It is imperative that they should see the candles burning. It is preferable for women not to light themselves, but to have their obligation fulfilled by the baal habayis. In a situation where there are no available men to light the menorah, women should light the menorah themselves. • It is preferable to use olive oil with cotton wicks. However, use of other oils and wicks are permitted. • There are different opinions regarding where to light the menorah. Some say to light by the door or window where the lights can be seen from the outside in a public place, and there are those who light inside, across from the mezuzah at the door in the room that has the most action, e.g., the dining room or kitchen. • The menorah should be no lower than three tefachim from the floor (approximately 10.5 inches or 27 centimeters) and no higher than 10 tefachim from the ground. • Those who light the menorah so that it can be

seen from the outside should make sure that it is lower than 20 amos from the ground. • There are different opinions as to when to light the menorah. Some light at shkiah, and others light after tzeis hakochavim. Some who light indoors are not makpid and light later. However, one should light the candles as long as the family is up and around. Bedi’eved, at least two people should be awake when the menorah is lit in order to publicize the nes. • On the first night of Chanukah, one says the bracha of Shehecheyanu, in addition to the two other brachos. • All of the brachos should be said before one lights the candles. Women should not do any work for the first half hour that the candles are burning (or after candle-lighting). For example, women should refrain from things like sewing, doing laundry and cleaning. However, cooking or preparing for a supper or party is permitted. • It is assur to speak between the brachos and the completion of the lighting of the candles. • One may not lift or move a menorah after it has been lit while the lights are still burning. • On Shabbos, if one lit the menorah by the open doorway and wants to move it in order to close the door, one should put a valuable object, like a ring or watch, on the menorah tray before moving it. It is preferable that the menorah be moved after the lights are


extinguished. • On Erev Shabbos, one lights the Chanukah licht first and then lights the Shabbos licht. • If a woman first lights the Shabbos candles, she may not light the menorah afterward (just as she may not perform any melacha). • On Motzei Shabbos, the minhag is to first make havdalah and then light the menorah. • The candles should only be lit in one’s own domain if one is sleeping at home. • If one is a guest at someone else’s house (e.g., one has a Chanukah party and stays over for the night), then one must light the menorah in the room where they sleep. If one still intends to return home that night, then one must light in one’s own house, making sure to light before alos hashachar and to have at least one other person present. • If one has to travel before the time of candlelighting, one may light as early as plag hamincha. If this is not possible, one should try to at least see some candles that were lit by others, and in that case, only recite the second bracha of She’asah Nissim. • It is not permitted to light candles in a place that is not a residence, e.g., in an airport, office or simcha hall. • If one is traveling and has no other way to be yotzei, one may fulfill their obligation with their spouse’s lighting, even if they were not present, as long as it would be the correct zman for the person who is traveling. • If one goes away for Shabbos Chanukah, one lights in the room where one sleeps. One who plans to return home on Motzei Shabbos must light when one returns home, even if it’s late. However there must be another person present during lighting. (There are some who are meikel that if one already lit the candles before Shabbos in the host’s home, then one may light on Motzei Shabbos in the place they were staying for Shabbos.)

• It is a minhag to put enough oil in the glass, or to use a candle that is long enough, to burn for at least a half hour after tzeis hakochavim. • One should not be mevazah (treat with disrespect) any object that was used for the purpose of a mitzvah. Therefore, one should not throw away the burned wicks, but should burn them instead. Many have the minhag to burn the wicks from the menorah with the chametz on Erev Pesach. AL HANISSIM • Al Hanissim should be said in Shemoneh Esrei in the evening, morning and afternoon of Chanukah, including during Musaf on Rosh Chodesh. • If one forgets to say Al Hanissim, and then realizes that he forgot, he must go back and say it as long as he has not already pronounced the Shem Hashem at the end of the bracha of “Hatov shimcha u’lecha no’eh l’hodos.” After that point, one is not allowed to say it in Shemoneh Esrei, but one may say it just before “Elokai netzor leshoni.” • During bentching, Al Hanissim should be recited before the words “V’al hakol.” If one forgets to say it there and has already pronounced the Shem Hashem, one may not return to it. However, before the words “Harachaman Hu yezakeinu,” one should say: ‫“הרחמן הוא יעשה לנו ניסים ונפלאות כמו שעשה‬ ”.’‫לאבותינו בימים ההם בזמן הזה; בימי מתתיהו וכו‬ SEUDOS CHANUKAH • The days of Chanukah coincide with the days of the chanukas hamizbayach of Mishkan Moshe. Therefore, making seudos on Chanukah is considered ktzas (a bit of a) mitzvah. However, if one sings shiros v’sishbachos during the seudah, the seudah becomes an entire mitzvah. Adding divrei Torah by the seudah becomes a big mitzvah. • The minhag is to serve cheese and milchigs at the seudas Chanukah.

Despite having worked for over two years, he had never formally applied for a job before, having gone straight from yeshivah to working in his father’s warehouse business. After being tied down to the family business for the past two years, he was tired of working for family, being treated like…family and being expected to dedicate himself to the business for life. He wanted to branch out on his own and see what he would be good at without being handed a built-in position. He couldn’t complain about salary, as his father was generous, yet he was prepared to take a pay cut for the benefit of striking out on his own. Mendy was thinking of applying to a local property management position, but was worried that he didn’t stand a chance without hav-

sume, I wanted to create a longterm strategy based on Mendy’s skills to ensure that this move would have a long-term plan instead of just being a fun, but deadend job. We discussed why property management seemed like a good field, where he saw potential for growth in the future and how his skills matched up to real life on the job. He had done his homework and knew that there were a few directions a career in property management could take. Mendy’s dream was to start off with an entry-level position and eventually move up to be an investor in real estate deals. He had an excellent ability to visualize opportunities and was willing to start off at the bottom of the ladder with the vision of what he

Sure enough, a few days later, Mendy heard back from someone looking to hire. The salary was lower than he had anticipated, but he decided to give it a try. He says the hours are grueling, the work is tough and there are often difficult employees to deal with, but he couldn’t be happier. Mendy is doing work that he chose, is working his way up and is loving every challenge that each new day brings. I look forward to keeping in touch with him to help him keep moving right up.

The olive is a fruit, not a vegetable. It starts out green, and then turns a dark purple or black as it ripens.

Roughly 11 pounds of olives need to be pressed to produce one quart of olive oil, and an olive tree can produce over a gallon of oil each year for hundreds of years!

Olive trees originate from countries in Western Asia, including Eretz Yisroel, and the trees then spread to the countries at the coast of the Mediterranean Sea, like Spain, Italy and Greece. From the leaf of an olive tree the yonah brought to Noach to the oil in the Menorah in the Beis Hamikdash, olives date back to the very beginning of our history.

Historically, olive oil was used for many purposes other than food. Olive oil was used for lamps, soaps, skin care and medicine. That’s why ancient Romans said that two liquids were important for good living: wine for ingesting internally and olive oil for applying externally.

Spain produces approximately half of the world’s olive oil, followed by Italy and Greece. Greece, however, dedicates the greatest percent of their oil production to extra-virgin olive oil, at a whooping 80 percent. It comes as no surprise, then, that the average Greek consumes almost 7 gallons of olive oil each year!

An olive tree can live between 300 and 600 years, though the Olive Tree of Vouves, which is thought to be the world’s oldest living olive tree, is estimated to be at least 2,000 years old. This tree, located in Crete, Greece’s largest island, is a protected natural monument and attracts thousands of tourists each year.

The Spaniards were the first to realize the potential of olives in the New World, and they took the first cuttings to Peru in the mid-16th century. From there it traveled north until they were planted in California in 1769. Until today, California grows more olives than any other state in the U.S.

Years ago olives were handpicked, but today olive trees are harvested either by using vibrating rakes or hand rakes or by shaking the boughs or trees so the olives could drop into prepared nets.

Extra-virgin olive oil is the highest-grade olive oil with superior flavor due to its being produced only by using mechanical methods. No heat or chemicals are used to extract extra-virgin olive oil, which results in an oil that is pure and unrefined.

Ever since the dove in Parshas Noach appeared with an olive branch in its beak, the leaves of an olive tree represent peace. This is the reason a depiction of an olive branch can be found on many ancient coins and paintings. Similarly in pursuit of this great virtue, three towns and one city in the United States are named Olive Branch, and the flags of seven nations, four U.S. states and the United Nations feature an olive branch as well.

‫יא! עס שוין מער נישט א חלום‪ ,‬נאר א פאקט‪.‬‬ ‫דער מייסטערהאפטיגער אלבום "מיין חלום" איז שוין אין די געשעפטן‪...‬‬ ‫מיין הארץ איז פול מיט דאנק צום גרויסן באשעפער וואס האט מיר געשאנקען דעם כח און טאלאנט‬ ‫אהערצושטעלן דעם אייגנארטיגן סטייל פון באהעפטן דעם עולם מיטן ניגון‪ ,‬צו הייבן מענטשן אין די לופטן‬ ‫מיט א פרייליכע און שמחה'דיגע שטימונג ביי חתונות און אנדערע שמחות ווי אין א חלום‪ ,‬און גלייכצייטיג‬ ‫די שטארקע סטרונעס וואס ווערן בארירט ביזן טיפענישן פון די האקעלע נשמה זיצנדיג מיטן גיטאר אין א‬ ‫דביקות'דיגער קומזיץ‪ ,‬וואס האט גענצליך איבערגענומען דער אידישער מוזיק וועלט‪ ,‬און געשלאגן טיפע‬ ‫ווארצלען איבעראל‪.‬‬ ‫אט די אלע פאקטארן האבן געברענגט צום גרויסן 'חלום' וועלכע ארומיגע האבן כסדר געבעטן און געמוטיגט‬ ‫דאס צו פארווירקליכן‪ ,‬דאס איז ארויסגעבן אן אלבום‪ ,‬כאטש איך האב אליינס נישט גע'חלומ'ט וועלכע‬ ‫שווערע עבודה דאס וועט זיין‪ ,‬און וויפיל כוחות דאס וועט קאסטן‪.‬‬ ‫דריי לאנגע יארן וואס מיר ארבעטן שוין אויף דעם גראנדיעזן 'מיין חלום' אלבום‪ ,‬זוכן און קלויבן די ריכטיגע‬ ‫ניגונים‪ ,‬אראנזשירן אזא רייכע מוזיקאלישע פילהארמאנישע באגלייטונג‪ ,‬און דאס רעקארדירן אזוי‬ ‫מייסטערהאפטיג און פראפעסיאנאל‪ ,‬איז נישט אזא לייכטע זאך‪ .‬מער ווי איין שוועריקייט איז אדורך אויפן‬ ‫לאנגן וועג‪ ,‬וואס האט געמאכט אויסקוקן ווי דער פראיעקט וועט זיך ענדיגן ווי א שיינער חלום‪ .‬אבער‪...‬‬ ‫אצינד ווען מיין חלום איז פארווירקליכט געווארן‪ ,‬וועט איר זיך שפירן ווי אין א חלום הערנדיג דעם אלבום‬ ‫מיט אירע רייכע און אויטענטישע אוצר פון חסידישע ניגונים‪ ,‬וואס צו פארווירקליכן מיין חלום איז ב"ה‬ ‫געלונגען אהערצושטעלן א ריין חסידישער אלבום מיט בלויז אויסגעהאלטענע ניגונים פאר די היימישע‬ ‫שטיבער‪ ,‬אן די איבלען פון גאס‪ ,‬אז עס זאל זיין פאסיג אריינצוגיין אין יעדע אידישער שטוב‪ ,‬איר זיכער הנאה‬ ‫האבן פון דעם הויעכן קוואליטעט‪ ,‬זעענדיג ווי יעדער ניגון איז א חלום פאר זיך‪ ,‬פול מיט חידושים און‬ ‫פרישקייט‪...‬‬ ‫איר וועט זיכער הנאה האבן פון מיין חלום‪ ,‬וואס וועט‬ ‫אי"ה ווערן אויך אייער אייגענעם חלום‪ ,‬וואס איר וועט‬ ‫איבערשפילן מיט פארגעניגן איינמאל און נאכאמאל‪...‬‬

‫פון מיר צו זאגן‪.‬‬ ‫געווען איז דאס איינמאל‪ ,‬נאך א מעשה קונדוס אין בית‪-‬המדרש‪,‬‬ ‫ווען א יונגערמאן רופט מיר צו אין די זייט און הויבט אן צו רעדן צו‬ ‫מיר‪ .‬יענער יונגערמאן איז נישט קיין מחנך‪ ,‬נישט קיין גרויסער מויל‪-‬‬ ‫מאכער‪ ,‬א פשוט'ער באלעבאס מיט א גאלדן הארץ‪ ,‬און ער הויבט אן‬ ‫צו רעדן צו מיר‪ ,‬אזוי ווי א פריינט רעדט צו א פריינט‪:‬‬ ‫"דו ווייסט" זאגט ער מיר‪" ,‬עס שטייט נישט אין ערגעץ אז יעדער‬ ‫איינער מוז קענען לערנען! – דו ווייסט אז מען קען זיין אן ערליכער‬ ‫איידעלער איד אהן צו זיין א בארימטער תלמיד‪-‬חכם?!"‬ ‫איך האב אויפגעהויבן א פאר אויגן אויף יענעם‪ .‬איך האב פון‬ ‫אנהויב נישט פארשטאנען וואס יענער וויל פון מיר און ווער עס‬ ‫האט אים בכלל געשיקט‪ ,‬אבער איך האב געפילט אין זיינע ווערטער‬ ‫א שטראל פון האפענונג‪.‬‬ ‫אין אמת'ן אריין‪ ,‬האב איך טאקע נישט געוויסט אז מען קען זיין אן‬ ‫ערליכער איד אן קענען לערנען‪ .‬דען מיין גאנצע ירידה איז געקומען‬ ‫נאר צוליב דעם וואס איך האב נישט מיטגעהאלטן די שיעורים אין‬ ‫חדר‪ ,‬און פון דא און ווייטער בין איך שוין געווארן אפגעסטעמפלט‬ ‫אלס ליידיגייער‪.‬‬

‫ותפתח את ספר הזכרונות‬ ‫איך האב דעמאלס געכאפט א לענגערע שמועס מיט דעם‬ ‫יונגערמאן‪ ,‬און ער האט מיר געעפנט די אויגן‪ ,‬גערעדט צו מיר‬ ‫דברים כדברונות‪ ,‬מה חובת האדם בעולמו‪ ,‬וואס דער אויבערשטער‬ ‫פארלאנגט פון א איד‪ .‬ער האט מיר ארויסגעברענגט פון איין זייט‬ ‫זייער שארפע רייד‪ ,‬אז יעדער איד איז מחויב צו טון דעם רצון‪-‬השם –‬ ‫אפגעזען אין וועלכן מצב ער געפינט זיך‪ .‬ווידער פון די אנדערע זייט‬ ‫האט ער מיר געשטארקט זאגנדיג‪ ,‬אז עס איז נישט פארהאן אזא זאך‬ ‫אז א איד זאל נישט קענען אנקומען בדרך העולה בית‪-‬קל און זיין אן‬ ‫עובד‪-‬השם‪.‬‬ ‫ער האט מיר דעמאלס דערציילט איבער דער בעל‪-‬שם‪-‬טוב און‬ ‫זיינע תלמידים‪ ,‬ווי אזוי זיי האבן אריינגעשיינט אין אידישע הערצער‬ ‫און ווי אזוי זיי האבן מקרב געווען פשוט'ע אידן‪ ,‬זאגנדיג אז יעדער‬ ‫איד קען ווערן דערהויבן ביז צו די העכסטע מדריגות‪ .‬ער האט‬ ‫דערציילט פארשידענע סיפורים און חסידי'שע ווערטער וואס עס‬ ‫ווערט געברענגט אין ספרים אויף דעם ענין‪.‬‬ ‫נאך דעמאלס האב איך אפגעשמועסט מיט אים א חברותא‪ ,‬א‬ ‫האלבע שעה א טאג‪ .‬וואס קלערט איר האט מען געלערנט ביי יענע‬ ‫חברותא? – ער איז איבערגעגאנגען מיט מיר דעם ספר הזכרונות פון‬ ‫דער מהריי"ץ פון ליובאוויטש‪ .‬עס ליגט מיר נאך ביז היינט אין די‬ ‫ביינער די מעשיות פון דאבראמיסל און ליובאוויטש‪ ,‬פון די ערליכע‬ ‫תמימות'דיגע אידן וואס האבן געמיינט נאר דעם אויבערשטן מיט‬ ‫זייערע מעשים‪.‬‬ ‫די דאזיגע חברותא האט מיר אריינגעגעבן א שטיק חיות אין מיין‬ ‫הארץ און מיר גענצליך געטוישט אויף שטענדיג‪ .‬דער יונגערמאן‬ ‫האט מיר מסביר געווען‪ ,‬אז איך זאל זיך נישט זארגן אויף מיין שטאנד‬

‫צווישן די חברים‪ ,‬איך זאל נישט נתפעל ווערן פון די שפאטישע בליקן‬ ‫וואס קומען אין מיין ריכטונג און אפילו יעדער סטעמפלט מיר אפ‬ ‫אלס שוואכער קאפ און אלס איינער וואס איז גארנישט ווערד צוליב‬ ‫דעם וואס ער קען נישט לערנען‪ ,‬זאל איך זיך נאכאלס האלטן חשוב‬ ‫ביי זיך‪ ,‬זיין אן ערליכער חסידי'שער בחור‪ ,‬נישט נאכגעשלעפט ווערן‬ ‫מיט די שטראם פון די גאס און זיך האלטן שטארק‪.‬‬ ‫למען האמת איז דאס מיר געווען זייער שווער‪ .‬פון ערגעץ דארף‬ ‫דאך א מענטש שעפן חיות און די בחורים פון ישיבה האבן נישט‬ ‫געקוקט אויף מיר מיט רעספעקט‪ ,‬דאס וואלט געווען א גראדע וויזע‬ ‫צום שאול‪-‬תחתית‪ ,‬זיך מיטצוכאפן מיט אנדערע סארט בחורים‪.‬‬ ‫דער יונגערמאן האט מיר אבער כסדר מחזק געווען זאגנדיג‪ ,‬אז‬ ‫די שוועריגקייטן איז נאר יעצט‪ .‬איינמאל איך וועל חתונה האבן‪,‬‬ ‫וועט מען מיר שטארק רעספעקטירן פאר וואס איך בין‪ ,‬אפילו איך‬ ‫פארמאג נישט די כשרונות אויף צו זיצן און לערנען‪.‬‬
