A WORD OF CAUTION I always look forward to the delicious recipes featured in The Monsey View. The December 27 issue showcased different milchig recipes using up the leftover challah from Shabbos. Readers should be aware: Challah that was used on a fleishig table cannot be eaten with milchigs. To quote Rabbi Binyomin Forst in The Kosher Kitchen: “Bread that was used in the course of a meat meal should not be eaten with dairy (or the reverse)... The leftover challah may not be used for a dairy [meal]... This refers only to sliced challah; the challah loaf itself has usually not been touched and may be used for a dairy meal. If children do, in fact, touch the loaf, it must be treated as sliced challah. If all in the family freely touch all the challah, it would be wise to keep the challah off the table and fill a bread basket as needed.” (Pages 144–145) R.S.
RE: THE DOWNSIDE OF FOAM INSULATION (ISSUE #130) I want to thank The Monsey View and last week’s letter-writer for featuring information on super-insulating a home. As I am currently building, this is a topic of great interest to me. I do not want mold in my home, but I do want a super-insulated house. I did some research on my own and then consulted my contractor regarding the issue and was led to the same answer both times: It is not the insulation that is causing the mold; it is the lack of a proper ventilation system. Older homes that are super-insulated are not equipped with the right ventilating methods for foam insulation and can run into trouble.

An experienced contractor always builds the right ventilating system into a new home, and can do this as well for an older one. Mold is not a must with foam insulation; hiring a good contractor is! B.F.
In response to the homeowner who is experiencing condensation on his windows, I too experienced wonderful results from my spray foam. When I started to notice condensation on my windows, my foam specialist suggested for me to crack open a window a very tiny bit every now and then in the room where the condensation was occuring in order to give the air that was causing the condensation a small escape route. This has been a solution to that issue. I hope this will help resolve your issue. A.F.
IN SEARCH OF A CURE I am writing this letter in the hope of finding a solution to something that the medical world has no cure for. My preteen child exhibits an entire array of nervous tics (a.k.a. Tourette’s Syndrome) in varying degrees of intensity, usually in direct relation to the level of stress the child is experiencing. Obviously, these tics are involuntary, and telling the child to stop (blinking, coughing, etc.) will only backfire and cause the tics to increase. If anyone has any experience in helping to alleviate this annoying and embarrassing condition, please share! (Perhaps The Monsey View can feature a comprehensive article on this topic.) Desperate for Relief

FOR MANY WEEKS I have used this column as somewhat of a confessional whereby I provided the inside scoop at Nutrition by Tanya. In the process, I shared details about my life, so I decided to take things one step further this week and asked our office staff members the following three questions: 1. What is your best dieting tip? 2. What is your dieting “confession”? 3. Can I use your name when I publish the article? I was only slightly surprised when out of forty staff members, four volunteered to answer these three questions. I guess some people appreciate their privacy…. So here it is, tips and confessions from our office staff:

Company Position: Lead receptionist Best Advice: I make sure to always have
a water bottle handy wherever I may find myself, whether at home, in my office or in my car. I also try to be creative with new foods and new flavors so I don’t get bored of eating the same thing over and over. Confessions: I often eat too little earlier in the day and then overeat later in the day, especially at night. It’s definitely because I am busy, but so is everyone! Also, I get hyped up on the latest fad diet or extreme diet in the hopes of speeding things up, and I don’t pace
myself. This ultimately leads to failure. Every. Single. Time. NAME: LIMOR Company Position: Brooklyn secretary Best Advice: I drink and drink and
drink! Water is my best friend and it keeps me thin! Confession: I add too much syrup to my coffee. Since my weight is under control I allow myself this one vice. • I drink eight cups of water daily, no matter what. • I plan my meals the night before and try to package them appealingly so that I feel treated when I
eat it. (Writer’s note: Yes, she does! I am jealous of her lunch!) • I recommend having a dieting buddy; the motivation and support really helps, and a little bit of competition never hurts! I also try to have a variety of foods throughout the week so I don’t get bored, but I don’t do that all the time. Confession: My biggest dieting challenge is Friday afternoon. I hang out in the kitchen and take little tastes of foods that aren’t good for me and are definitely not on my plan. Also, I don’t sleep enough, which sabotages my weight loss. So there you have it. I learned two things from this little project. Number one is that drinking enough water is one of the main keys to success across the board. Number two is that the struggle to maintain our weight is pretty much universal! While there will always be a tiny percentage of people who are naturally thin, the rest of us — myself and my coworkers included — are all fighting the good fight to maintain our health and weight! CHANANYA AND SRULY WERE SURPRISED, but happy, to run into each other after so many years. They had learned in Cheder Ateres Yonah together as boys, but had gone their separate ways afterward. Now they stood before each other, each the father of several children. They couldn’t wait to catch up. “What are you doing these days?” Chananya asked Sruly. “You’ll never believe it — I’m a rebbi in Ateres Yonah!” said Sruly. “What, you? But you were always the one who got into trouble the most in cheder!” laughed Chananya. “And that’s precisely why my talmidim can’t get away with any shtick with me,” quipped Sruly. “But seriously, I finally settled down to learning, and once I started I never stopped. Meanwhile, you were always the class tzaddik. It seems you never had any settling down to do. What are you doing lately?” “That’s nice of you to say, Sruly, but I don’t feel like such a tzaddik lately. I recently took over my alter-zeidy’s old shop, and I don’t think I can even come close to him. He was a true tzaddik in every sense of the word: unfailingly honest, kind to his employees, generous with the poor, a supporter of Torah. Basically, I feel overwhelmed even thinking of trying to fill his shoes.” “Chananya, I thought your alter-zeidy was niftar long before you were born. How is it you know him so well?” asked Sruly. “Well, I didn’t know him so well. Even the stories passed down in my family didn’t give me much insight into who he really was. It’s only now, when I go through the store and read through his records, that I’ve come to know who he truly was. He wrote out a set of rules for himself to live by, which he copied into the first page of each ledger: Never say no to a poor person who needs to borrow, always have an open hand for mosdos Torah, and never pay a worker late. The ledgers don’t lie. He never paid a worker late, even when the store

was barely turning a profit. He allowed those who were not financially stable to buy on generous lines of credit that he frequently forgave. He wrote out checks to various mosdos in amounts that defy logic when you see the actual amount of money moving through his store.” “Wow, I never knew,” breathed Sruly in reply. “I can imagine the pressure you must feel in trying to live up to your alter-zeidy’s level. My advice would be to keep a large picture of him in the store. This could help you remember the standards you are trying to uphold.” It says in this week’s parsha, “…V’lakachti eschem li l’am… — …And I will take you to Me as a people, and I will be for you a G-d, and you shall know that I am Hashem your G-d” (Shemos 6:7). The Kedushas Levi comments on this posuk that Hashem fulfilled this promise to take us as His people, and that we will “know” that He is Hashem by His giving us the Torah. The Kedushas Levi explains that that no human being could possibly know or understand Hashem. However, Klal Yisroel can come to know Hashem through the Torah’s light and the mitzvos because “the Torah and Hakadosh Baruch Hu are One.” By learning and living Hashem’s Torah, we can come to know Hashem. Chananya had never met his alter-zeidy in person, but he came to truly know the essence of who his alter-zeidy was by learning the rules by which he operated his store and his life (his “mitzvos,” so to speak). By following Sruly’s advice to keep a picture of his alterzeidy where he can always see it, Chananya can remember the standards to which he should live. Similarly, Dovid Hamelech wrote, “Shevisi Hashem l’negdi tamid — I place Hashem before me always” (Tehillim 16:18). Hashem has given us a tremendous gift: His Torah. The Torah is itself precious beyond all measure, but it is also a means through which we can come to know Hashem. May we always treasure the Torah, and may we conduct our lives in its ways.

Seeing the Blessing Looking at Life with Love, Patience and Respect Based on a lecture by Rabbi Benzion Klatzko
W
When my wife and I decided to move from Yerushalayim to Boro Park, my father-inlaw agreed to give us his old brown station wagon to drive. After using his worn-out car for a while, I mentioned to my wife that maybe we should consider buying a newer and nicer car. Surprisingly, not too much later, I noticed an ad announcing that a car auction was being held in Queens, New York. It was a Police and Bank Reclamation auction where cars were being sold for pennies on the dollar. The ad mentioned that a down payment of a quarter the car’s price needed to be provided immediately, while the remaining amount was to be paid by the following week. At the time, I was learning in kollel and had just about $1,000 in savings. And so, off we headed to the auction to see what we could find. As we arrived and began imagining how just about every car would suit our family’s needs, my wife asked where I had put the money I brought along. “In my pocket,” I replied. “Don’t leave it there,” she cautioned. “Someone might pickpocket you!” Telling her not to worry, I explained that I had already taken preventive measures by crunching the money up and sticking it deep into my pocket. On top of the money, I had placed several paper towels. “If anyone tries to reach into my pocket,” I told her,

“by the time they get through all the paper towels, I will feel it.” But my wife wasn’t too thrilled. “I’m really not comfortable with that,” she said. “I think you should put the money in your shoe.” “My shoe? Walking around with a thousand dollars in my shoe will be very uncomfortable!” After a little back and forth, my wife relented and the money remained in my pocket beneath a stack of paper towels. Five minutes into the auction, as I excitedly stood in the front row, I felt a tap on my shoulder. “Excuse me, sir,” a man said, “but I think someone just went into your pocket.” Hearing those words, my stomach dropped. I put my hand in my pocket and began to feel paper towels, paper towels, paper towels… paper towels. That was it. Within five minutes, $1,000 was gone. Turning to my wife who had begged me to put the money in my shoe, I said, “I think we have to go home now; I was just pickpocketed.” Waiting for her to begin yelling and screaming, I was surprised to hear nothing. She didn’t say a word. As we headed back to our current, and now future, beat-up brown station wagon, I could only think, “Now, I’m really going to get it.” But then she inhaled and said, “Don’t feel bad; it’s from Hashem.” I was not expecting that reaction in the least. “Everybody can make a mistake. It’s okay.” The entire way home, my wife tried to calm me down and make me feel better.
When we finally pulled into the driveway, I turned to my wife and said, “I will never forget what you did today. I will always stand by you, and you can count on me. You had every right in the world to yell and scream at me, but you didn’t. Thank you so much.” For years, I always wished to somehow repay my wife for the understanding and care she had shown me that day. A short while before my younger sister was going to get married in Cleveland, I mentioned to my wife the thought of getting a new suit. She agreed to my idea, and so I began a quest to find the suit of my dreams. I went from one store to the next, yet struggled to find what I was looking for. Finally, though, I found it. It was even better than what I had imagined. The day before the wedding, my wife called me and said, “Please do me a favor. As soon as you come home tonight, let’s start driving to Cleveland. I think we should leave before it gets too late. I already packed your clothing, my clothing and the kids’ clothing.” “Sounds great,” I said. And so it was. Half an hour after returning home, we were on our way to Cleveland. The next day at noon, I received a phone call from my father. “All the children and grandchildren need to be in the wedding hall in an hour all dressed and ready for family pictures.” As soon as I hung up the phone, I stopped my wife and asked where she had packed my suit. Pulling out the luggage, she began looking. And looking, and looking, and looking. She then ran to the car and looked some more. But nothing. “I don’t know how to say this,” she said, “but I left your suit in New York.” As I started thinking about how I had spent a week searching for the suit and then paid a fortune for it, my mind flashed back to years earlier. And then it hit me. The auction moment had arrived. Immediately, I told my wife, “Listen, don’t feel bad. I actually drove here in another suit, and it will be fine.” I then quickly got ready and put myself together. On my way back from washing up, I noticed that the
door to the room my family was staying in was halfway open. Peeking inside, I saw my wife sitting on the bed with our children around her. “I need to tell you something about Tatty,” she gently whispered. “This is his sister’s wedding, and he bought a new suit for the occasion. It was so important to him, and he spent a lot of money and time to get it. But I made a mistake and I didn’t bring the suit. Do you know what many tatties would have done? They would have gotten angry and yelled. But not your Tatty; he didn’t get angry, yell or make me feel bad. Kinderlach, gather around me. I want to give each of you a bracha that you grow up to be just like your father.” And with that, as our children stood in a row, she placed her hands on their heads and gave each of them the blessing customarily given on Shabbos, “Yesimcha Elokim k’Ephraim u’k’Menashe — May Hashem make you like Ephraim and Menashe.” Every person has blessing in their life. Sometimes, however, we just have to open our eyes a little more and see it. If we want, we can choose to see the negative and yell at our spouse, children and friends. But we would be much wiser and happier if we would positively look upon all that happens and see the blessing. And in fact, that is the best way to model behavior for our children. When they see that we treat others with respect and patience, they will look to follow in our ways and do the same. And when they do so, that is the greatest blessing we can have as parents.

Eyeing Growth Opportunities, Cuomo Proposes New Name and Major Expansion at Stewart Airport IT MAY BE A LITTLE AIRPORT that you’ve never even heard of, but if Governor Andrew Cuomo has his way, Newburgh’s Stewart International Airport may finally be getting its day in the spotlight. Located an hour north of Monsey in Orange County, Stewart was first built in the 1930s as a military base, serving cadets at the United States Military Academy in nearby West Point. Stewart was closed in the 1970s and then reopened in 2000 as a commercial airport. It was later acquired by the Port Authority of New York and New Jersey in 2007, who took over a 99-year-lease held by the United Kingdom’s National Express. But in his State of the State address, Governor Cuomo announced more ambitious plans for Stewart, asking the Port Authority to invest $34 million in the airport, which would include modernizing and expanding the
2,400-acre facility. Currently Stewart has just seven passenger gates and two runways, but Cuomo hopes that a new name, New York International at Stewart Field, and the addition of regularly scheduled transAtlantic flights, will draw passengers to the airport. “By transforming Stewart Airport into a state-of-the-art transportation destination, we are providing an inviting gateway to the region and supercharging an economic engine for the entire Mid-Hudson Valley,” said the governor. ”This international transportation hub will provide a world-class passenger experience, attract new visitors and businesses and continue to move the Mid-Hudson Valley forward.” If Cuomo’s plans are approved,
Stewart could see a 20,000-squarefoot expansion of its terminal and an upgraded capacity of up to 400 international passengers per hour. Other improvements include enhancing the existing Stewart Airport Express, which runs from Manhattan’s Port Authority to the airport, and installing solar panels over certain sections of the parking lot to provide power to the main terminal building.
Local Girls’ Schools Step Up to Fill Void at Respite Program with Student Volunteers WHILE FOR SOME, legal holidays mean a day off, and for others they are business as usual, for respite programs serving individuals with special needs, legal holidays can create serious staffing problems. Legal holidays pose major concerns as the schools that serve the specialneeds population are often closed while for the teenage volunteers who normally staff the programs during non-school hours, it is a regular school day. Hoping to alleviate what was becoming a stressful situation for parents, Suri Sofer of Rayim reached

out to several local area high schools asking them to provide groups of volunteers on legal holidays to help the program run smoothly. The response from the schools, which included Bais Yaakov D’Rav Hirsch, Bais Yaakov of Monsey, Bais Yaakov of Ramapo, Chabad, Klausenberg, Pupa, Satmar and Skver, was overwhelming. “Most of the schools agreed to give us one or two days a year,” said Miss Sofer. “Some sent us a whole class, while others sent a few from each class. It is a real education for the girls, not about math and history, but on what real life is all about.”
Volunteers who participated on January 1 said that they were thrilled to have been given the opportunity to spend their day in such a meaningful way, while parents of those in the program were relieved to know that the legal holidays will no longer be a source of worry for them. “We are so grateful to the schools for the kindness and grace they have shown by working with us on this program,” said Miss Sofer. “Their actions have demonstrated a real sense of community, and we truly appreciate their efforts.”

Playing with the
Veggetti The Veggetti is a fun gadget that turns out spiralized spaghetti-like strands of vegetables. I find that although it’s more of a toy than a serious kitchen tool, it comes in handy, especially when watching one’s weight. It creates flavorful, eye-appealing dishes as well as versatile garnishes. There are a variety of spiralizers available. The commercial-grade ones are more costly, but easier to use and work better with firm vegetables such as beets or kohlrabi. The standard models work great with zucchini, potatoes and daikon, and quite well with carrots, but feel free to experiment with other vegetables as well. This week’s recipes are all gluten-free.

LOW MEIN This lo mein is a fantastic dish that leaves no dieter feeling deprived! You can mix in some regular spaghetti for children before serving to turn it into a full meal. Cutlets need half an hour’s marinating time. Start with this step to minimize prep time.
CHICKEN 4–6 chicken cutlets, cut in strips
MARINADE: 2 tsp. cornstarch 1 T. water
STIR FRY 1 large onion, halved and sliced
1 T. oil 1 T. vinegar ½ tsp. brown sugar
3 T. oil 1 carrot, cut into matchsticks 1 red pepper, sliced 1 green pepper, sliced 3 stalks checked celery, sliced 18-ounce can of mushrooms
2 garlic cloves, crushed ½ tsp. paprika ½ tsp. white pepper 1 tsp. salt
DIRECTIONS:
1 can baby corn nuggets
SPAGHETTI 7 cups spiralized zucchini
DIRECTIONS:
DIRECTIONS: 1. Saute onion in large frying pan with 3 tablespoons oil.
1. Cook zucchini in a large frying pan with 2 tablespoons water, 1 tablespoon oil and 2 tablespoons salt for ten minutes.
2. Add the rest of the vegetables and continue to cook for 15 minutes, until vegetables are still mostly firm, but a bit limp.
2. Drain excess water and transfer to a 9x13 pan.
3. Place vegetables over the zucchini in the pan.

1. Combine cornstarch with water, and then mix with the rest of the marinade ingredients. 2. Marinate cutlets for approximately 30 minutes. 3. Heat oiled frying pan, add chicken strips and cook for 8–10 minutes, stirring occasionally. 4. Mix with the rest of the ingredients.
SPAGHETTI WITH MARINARA
This serves as a side dish, but it can easily be turned into a full milchig or fleishig meal: Add cheese for a ziti-type dish, or cook meatballs in the marinara sauce for a nutritious fleishig meal. This homemade marinara works great as a substitute for any pizza or pasta sauce.
MARINARA SAUCE
ZUCCHINI SPAGHETTI 4–5 zucchini
DIRECTIONS: 1. Spiralize zucchini on thickstrand setting.
1 large onion, finely diced 3 cloves garlic, crushed 1 vine ripe tomato, finely diced
2. Bring a large pot of salted water to a boil. 3. Add vegetable pasta to pot carefully.
¼ cup olive oil
½ tsp. basil
6 ounces tomato paste
½ tsp. oregano
1 cup water
¼–½ tsp. black pepper
1½ tsp. brown sugar
1 T. salt
1½ tsp. sugar
Dash cumin
DIRECTIONS: 1. Heat pot and add oil.
4. Cook for 3–4 minutes, stirring occasionally.
2. Saute vegetables in oil for 15 minutes.
5. Strain and serve with sauce.

Delightfully different and refreshing, this salad pairs great with any meat or fish dish. You can cut the oil for a reducedcalorie version.
INGREDIENTS
DIRECTIONS:
2 zucchini
¼ cup water
1 large carrot
¼ cup oil
1. Spiralize zucchini and carrots using the thick strand blade.
1 small purple onion
¼ cup sugar or sweetener
2. Thinly slice onion and add to spiralized pasta.
Dressing:
2 tsp. salt
¼ cup vinegar
1–2 tsp. basil

IT IS HARD TO KEEP UP with the number of new “diets” that come along each year or to tell the difference between the ones that work and the ones that don’t (a given is that they all will work for you, specifically.) With certain regularity, the latest diet crazes swoop in like a storm, with a tidal wave of new products and ideas — from foods and fitness gear to gurus touting the next “miracle cure” of weight loss. Some focus on reducing your appetite while others focus on restricting calories, carbs or fat. Since all of them claim to be “the best” and typically promise health benefits, yet often have no scientific evidence supporting their use, some programs are nutritionally unbalanced or are unsustainable over the long-term. It started with the grapefruit diet in the 1930s, and in 1963, Weight Watchers joined in. Then came the low-fat liquid diet in the ‘80s (remember those cans?), followed by the Atkin’s diet in the ‘90s. Today, diets with some complex carbs such as whole grains seem to be somewhat in vogue. That’s partly because of a resurgence of low-carb eating, which includes protein diets such as described in the updated No. 1 best-seller, The New Atkins Made Easy; South Beach; and low-carb/ high-protein diets like Dukan, Paleo, the balls diet and the HCG diet. Here’s another monkey wrench added to the weight-loss-fad conundrum. What if you have a preexisting condition or health issue and you need to eat or not eat certain foods or even food groups as well during different time periods in your life? Let’s take diabetes for example. Not even fitness pros receive immunity from poor eating habits or metabolic consequences including type 2 diabetes, which affects nearly 347 million people worldwide, as reported by the World Health Organization (WHO). I always say weight loss is 80% food. What most people don’t consider is that if they have a history of diabetes and/or thyroid disorder in their family’s genetics, it may affect their glucose tolerance and sensitivity without their even feeling it or it showing up glaringly in bloodwork. Some athletes live with type 2 diabetes. For these folks, low-carb eating is non-negotiable. The truth is that no one diet is best for everyone, and what works for you may not work for someone else (even in the same family). Here I review a few of the more popular weight-loss diets and the science behind them (aka: do they work?). THE ATKINS DIET is arguably the most famous “low-carb” weight-loss diet in the world. Created by cardiologist Robert Atkins in the 70s, the Atkin’s diet claims to produce rapid weight loss without hunger

WITH CERTAIN REGULARITY, THE LATEST DIET CRAZES SWOOP IN LIKE A STORM WITH A TIDAL WAVE OF NEW PRODUCTS AND IDEAS — FROM FOODS AND FITNESS GEAR TO GURUS TOUTING THE NEXT “MIRACLE CURE” OF WEIGHT LOSS. and without thinking about portions. Consisting of four stages, the initial stage is the one that restricts carbs to 20 grams per day for two weeks while allowing unlimited amounts of fat and protein. It is during this phase that your body begins converting fat into ketones and using them as a main fuel source. After the initial phase, you gradually add back the carbs in 5-gram increments in order to determine their “critical carbohydrate levels” for losing weight and maintaining the loss. Studies such as the famous A-to-Z study showed that women who followed the Atkins diet for one year, versus the low-fat Ornish diet, the Learn diet or the Zone diet, lost more weight than any other group. Other studies showed that low-carb diets such as Atkins may reduce many risk factors for disease such as high cholesterol, high blood sugar, high blood pressure and high triglycerides. The downside is possible kidney issues from the high protein intake, constipation from little or no fruits and veggies, acidic internal environment and high urea in the urine. THE HCG DIET is an extreme diet claiming 1 to 2 pounds of weight

loss per day, and involves introducing the hormone Human Chorionic Gonadotropin into your body. Phase one of three entails two days’ worth of HCG hormone supplements. The second phase consists of a 500-calorie-per-day diet along with HCG supplements, drops, pellets, injections or sprays. Phase three is when you stop taking HCG and increase your food intake. While many have lost weight quickly, I find that once you go back to eating a regular meal or two the weight yo-yos back on. Such severe calorie restriction further reduces the number of calories the body burns metabolically. This is because the body thinks it’s starving and therefore attempts to preserve energy (exercise is not allowed either). Other studies have shown that the weight loss is due to muscle loss from the ultra-low calorie intake alone. Additionally, men don’t produce HCG naturally, and this diet may cause problems for their lymph nodes that now need to filter this foreign substance. It is reported that most HCG products on the market are a scam and don’t even contain HCG. Moreover, the diet has many noted side-effects including headache, fatigue, depression and even occasional blood clots. The FDA does

not approve this diet, labeling it as dangerous, illegal and fraudulent. THE VEGAN DIET was created by vegetarians who also choose not to eat dairy, eggs or fish. The vegan way of life attempts to exclude all forms of animal exploitation and cruelty for ethical, environmental or health reasons. Included in the nos are animal derivatives such as honey, gelatin, albumin, whey, casein and some forms of vitamin D3. Importantly, vegan diets can be healthy or unhealthy, depending on the types of food they contain. It’s unlikely that you can lose weight while eating large amounts of processed foods and beverages, even though they may be certified vegan. That being said, studies have shown that plant-based vegan diets reduce several heart risk factors as well as promote weight loss. Just a tip: Be cautious to get your nutrients, iron and protein, which essentially is hard to do, as otherwise you will wind up hungry and eating more filling and less weightfriendly carbs. Vegans often suffer from a vitamin B12 deficiency, as well. AN ULTRA-LOW-FAT DIET restricts the consumption of fat to under 10 percent of consumed calories. Typically, a diet allows approximately 30 percent of its calories as fat. Many studies have shown that an ultralow fat diet is ineffective for weight loss in the long term. Generally, this diet is high in carbs (80 percent), low in protein (10 percent) and has a limited intake of animal products. While you may lose weight and improve heart health, the fat-restriction may cause long-term problems since fat has many important roles in the body, including helping build cell membranes, and aiding proper hormonal function, as well as helping the body absorb fat-soluble vitamins. Moreover, an ultra-low-fat diet limits the intake of many healthy foods (i.e., avocado, nuts), lacks variety and is extremely hard to stick to. THE ZONE DIET is a low-glycemic-load diet on which you limit carbs to 35 to 45 percent of daily calories (low-glycemic load) and protein and fat to 30 percent each. The GL, or glycemic load, is an estimate of how much a food will raise your blood glucose levels after eating it. It takes into account how many carbs are in the food and how much that amount will raise your blood glucose levels. So each meal consists of one-third protein, two-thirds colorful fruits and veggies (limiting bananas, rice and potatoes) and a dash of monounsaturated fat, preferably in the form of olive oil, avocado or almonds. Studies on this diet are inconsistent in terms of weight loss. Some say the diet promotes weight loss and reduces appetite, while others only show a small weight loss. Heart risk factors may be reduced, and it is beneficial if type 2 diabetics can follow it and not binge if their sugar drops too low. In general, it is very hard to maintain this eating lifestyle to reach these benefits. So what is the take-home message? The best diet is the one that you can stick to and see lasting results. What are some benefits of juicing? To understand the benefits of juicing, one needs to know what juicing is all about. Juicing gathers all phytonutrients and phytochemicals that naturally occur in fruits and vegetables in one health-giving drink. That’s essentially why juicing is different from taking a multivitamin: Whereas a multivitamin is made up of isolated individual nutrients that are combined, juicing provides one with all natural vitamins, minerals and hundreds of healthy phytochemicals that can be isolated as individual nutrients.
What are the needs of most people who purchase or prepare their own juices regularly? While there’s no scientific evidence that there is an issue with mixing juices, some different combinations may cause digestive discomfort for certain individuals.
Which juicer do you recommend for home juicing? The best juicer is a cold-pressed juicer, which first crushes the fruits and vegetables under no heat, and then extracts the juice via a hydraulic cold-pressed process. SINCE 2007 I HAVE BEEN COUNSELING CLIENTS PRE- AND POST-BARIATRIC SURGERY. What I have found in my experience is that having the most information and knowledge prior to surgery decreases anxiety and increases success rates. What I have not found is any one significant quality in a motivated person that proves them to be a good or bad candidate. I am often surprised when I hesitantly approve a client and they become unbelievably successful versus a client I believed to be a perfect candidate who ends up struggling. My clients often want me to answer what I call “the unanswerable question� and that is if this surgery will be another failure for them or the answer to their chronic battle with obesity. Although no one can promise success, I know that with proper education and counseling both before and after surgery, you can feel comfortable that your chances of long-term success are higher than a person who thinks that the surgery is the total cure. My standard line is that obesity is never cured, but it can be effectively managed.

ARE YOU A CANDIDATE? The following are the qualifications for bariatric surgery in most areas according to the American Society for Metabolic and Bariatric Surgery (ASMBS): 1. A BMI greater or equal to 40 or being more than 100 pounds overweight 2. A BMI greater than 35 and having at least one obesity-related condition, such as type 2 diabetes, hypertension, sleep apnea, respiratory disease,
Even if you do qualify for bariatric surgery, all candidates must be evaluated by other medical professionals to ensure that they are medically stable for surgery. Each bariatric surgeon has a list of specialists they usually refer patients to. Be prepared for the possibility of having to make appointments with a psychologist, gastroenterologist, dietitian, pulmonologist and cardiologist — as well as your primary-care doctor. Each specialist must write a letter on your behalf stating that you are eligible for the surgery. Most bariatric surgeons have office staff who guide you through this process. It is also important at this time to check with your insurance company to make sure the surgery and all of the visits to the referred specialists will be covered by your health care plan. Many people often have to pay out of pocket for the psychologist. In addition to the medical appointments, many doctors require that you attend pre-operative group meetings where most of your bariatric education will be conducted prior to surgical approval. While becoming a candidate for bariatric surgery can be exciting, it is also a very time-consuming process. CHOOSING THE PROCEDURE RIGHT FOR YOU The three most popular bariatric procedures are the Gastric Roux-en-Y, the Sleeve Gastrectomy and the Adjustable Gastric Band.

GASTRIC ROUX-EN-Y The Gastric Roux-en-Y procedure, known as the gastric bypass, is the most invasive of all of the surgeries. It involves surgical removal of 80 percent of the stomach as well as bypassing the part of the small intestine that is involved in absorbing calories. Weight loss usually occurs mostly because stomach size is drastically reduced. Advantages: 1. Weight loss of up to 60 to 80 percent of excess body weight. 2. Hormonal changes throughout the body that decrease or eliminate type 2 diabetes as well as other obesity-related medical issues. 3. Regulation of appetite and satiety signals. 4. Stomach size is reduced to one ounce, limiting the amount of food that can be consumed at a meal. Disadvantages: 1. Because it is the most invasive of the three procedures, there is a potential for more surgical complications as well as a longer hospital stay. 2. There’s a higher risk of deficiency of vitamins and minerals such as vitamin B12, calcium, iron and folate. Clients choosing this surgery will need to remain on vitamin supplementation for the rest of their lives. 3. A strict dietary regimen needs to be followed for life due to the altered intestinal system. Many times clients report gastrointestinal issues when they do not adhere to a low-sugar, low-fat diet. 4. This procedure is not reversible.
SLEEVE GASTRECTOMY The most popular of all of the procedures today is the Sleeve Gastrectomy, or the gastric sleeve for short. The procedure involves removing 80 percent of the stomach laparoscopically, leaving the remaining stomach looking like the shape of a sleeve. Advantages: 1. Weight loss of up to 60 to 80 percent of excess body weight 2. Weight loss occurs strictly due to the limited stomach size (which gets reduced to about one ounce) without the malabsorption that occurs with the Roux-en-Y procedure. 3. The surgery is less invasive and usually involves only a two-day hospital stay. 4. Studies show that the percentage of weight loss is no different than the Roux-en-Y procedure. 5. Regulates appetite and satiety levels. 6. Hormonal changes that minimize or eliminate type 2 diabetes, as well as other obesity-related conditions. Disadvantages: 1. Vitamin and mineral supplementation is necessary as there is a risk for deficiencies. 2. This surgery has a lower risk of complications compared to the Roux-en-Y, but a higher risk in comparison to the gastric band. 3. Many clients complain of heartburn. 4. This procedure is not reversible.

ADJUSTABLE GASTRIC BAND When I first started counseling bariatric clients in 2007, the Adjustable Gastric Band was the most popular of all bariatric procedures. The surgery involves placement of a silicon band at the upper portion of the stomach that gets filled with a sterile saline solution via a port that is placed under the skin in the stomach area. The amount of fluid in the band determines how much food one will be able to consume during a meal or snack. Advantages: 1. The ability to control appetite and satiety by adjusting the amount of saline filling the band. 2. The least invasive of all three bariatric procedures. 3. Requires less than a 24hour hospital stay most of the time. 4. Procedure is reversible. 5. Lowest risk of vitamin and mineral deficiencies. Disadvantages: 1. It is difficult to adjust the fluid in the band to find the correct amount that allows you to eat a variety of food at a meal. 2. Many foods often get stuck at the top of the pouch leading to episodes of purging. 3. The band does not regulate hormones affecting your appetite and satiety center. 4. The band can slip or erode, requiring surgery to remove it. 5. There may be dilation of the esophagus if you continually overeat. 6. Weight-loss goals are not always reached.
THE SURGERY In most cases, one to two weeks prior to surgery there is a pre-operative meal plan that you will be asked to follow in order to prepare for surgery. The meal plan usually consists of 4 to 5 high-protein shakes daily, or three shakes per day with one low-calorie meal. One to two days prior to surgery, a mandatory clear-liquid diet is required. In my opinion, the purpose of this meal plan is to minimize the inflammation in the body and get the body ready for weight loss. The menu following surgery starts with clear liquids in the hospital, followed by three weeks of solely high-protein shakes or a combination of shakes and puréed or blended foods. This is an extremely important step to adhere to as each procedure requires stitches to heal. Liquid and puréed foods have the lowest risk of tearing the stitches. After about three weeks, most doctors allow their patients to gradually increase their diet to soft foods and then to their life-long bariatric menu. Activity begins to resume as normal, and your journey has now begun. MOST OF MY CLIENTS continue with nutrition therapy following surgery to learn about their previous and new relationship with food. Food is often used as a drug to alleviate many of life’s emotions. It is the nutrition therapist’s job to help clients become more mindful eaters who can trust and listen to their body’s new natural hunger and satiety cues. Surgery is not for everyone. My recommendation is to do a lot of homework before you do it. Your relationship with food, your body and your friends and family may change. Hope for the positive, and be sure you are ready for it.

TZIPORAH What type of procedure did you undergo, and why did you choose it over the other options? After conducting much research, I opted for the sleeve gastrectomy as it seemed to be the safest and most effective option for me. I wanted to stay away from the risks associated with bypass surgery, and the band is known to be less effective and present unpleasant side effects like nausea and vomiting. The option of loosening the band was also something that didn’t appeal to me. Was the entire process easier or harder than what you were anticipating? The preparation for surgery and the actual procedure were exactly as I had anticipated them, but the post-operative period came with difficulties that I had not expected. I hadn’t been aware as to how constricted I would feel while recovering, and since even liquid intake was not something I was able to handle well, I was admitted to the hospital several times due to dehydration. How is your life different after the procedure? I lost 90 pounds in about four months, and it has greatly enhanced my quality of life. Shopping is so much more enjoyable; there’s so much lovely clothing available in my size. My thyroid levels, which were always very high, stabilized. I also feel so much better about myself since losing the weight.
Is there anything you wish you’d have known beforehand? I wish I would’ve known how long it would take me to recover from the surgery and that such rapid weight loss can cause gallstones, which require another surgery. Another important piece of information I was unaware of is that I should have started to exercise as soon as I got the clearance from my doctor, as it aids with the weight loss and with extra loose skin. Is there anything that made the post-surgery period easier for you that you’d like to share with others? • To maximize comfort on the ride home from the hospital, a pillow placed between yourself and the seat belt is very helpful. • As soon as you are able to get up from bed post-surgery, start walking around as much as possible. • Have Crystal Light, or a similar drink, around for when you can only drink water and want something sweet. • Most importantly, it makes things so much easier to have a spouse who helped me as much as my husband did. Would you recommend others to go ahead with the surgery? Definitely yes. Even though I, personally, experienced a number of difficulties postsurgery, I know that is not the typical patient’s experience. The benefits of losing the weight, which alleviates health issues caused by obesity, by far outweigh the discomfort of surgery.
MALKY What type of procedure did you undergo, and why did you choose it over the other options?

I opted for the gastric sleeve, since from speaking to and knowing of others who have undergone different bariatric procedures, it seemed to me like the ones taking this route had the best experience long-term, and my doctor agreed with the plan.
It was a lot more pleasant and so much less frightening than I had expected it to be. For years I’d been afraid to jump in, but by the time I received the approval to go ahead, I was dancing in the streets — quite literally. I received the call while on a side street with a friend, and I couldn’t contain my excitement.

I called my siblings and the people who care about me right away to share the great news. Of course it was surgery, and that comes along with challenges, but overall, the experience was so much easier than I had feared it would be. How is your life different after the procedure? I had never realized before my surgery how awkward and clumsy I had been feeling when overweight. I walked into a room and my presence was just there. It was a horrible feeling. Shopping was also something I dreaded. And now, it’s so amazing to just feel like a regular human being — to just be. And shopping is so normal. I go through the aisles and can enjoy the experience. Some things fit, others don’t, and there’s a variety to choose from. And when I see someone wearing something nice, I can actually ask where she picked it up because it pertains to me. It’s no longer off the radar like it was several years ago. Is there anything you wish you’d have known beforehand? In the years before I chose to go ahead with the surgery, I wish I’d known how it would improve my quality of life on so many fronts and how less frightening it is in reality
than it was in my mind. I wish I’d had the confidence to go for it at an earlier point. Is there anything that made the post-surgery period easier for you that you’d like to share with others? I prepared myself very well beforehand. I knew I’d have to rest and prepared to nurture myself post-surgery. I stocked up on knitting supplies (with which I knitted a beautiful blanket for my baby). I bought a new linen set and comfortable slippers. I shopped not much differently than I would shop for a kimpeturin. And by the time surgery was over, I was all set up to sit and relax on the couch while I recuperated. The great support system I had also contributed a great deal to my recovery. I had family and friends cheering me on and bringing cards and gifts, perfumes and lotions. Friends would come by to eat lunch together, and although I’d stick to my shakes and teas, the camaraderie and company was the best thing at that point. Would you recommend others to go ahead with the surgery? Yes , I’d do so in an eyeblink!
MIRIAM What type of procedure did you undergo, and why did you choose it over the other options? Based on my weight, the recommendation was the sleeve or the band. I chose the sleeve over the band, because I wanted something permanent with no way out; I didn’t want to have the option of making it looser or tighter. Was the entire process easier or harder than what you were anticipating? The actual process up until the procedure was something I found pretty easy, baruch Hashem. Especially since I like protein shakes, the two-week liquid diet was not a big deal for me. But the pain and discomfort I experienced when waking up after surgery and throughout the recovery period was difficult. Many people don’t tell you about the actual effects of going under the knife; they just emphasize how wonderful it is to lose all that weight. Some have it harder and others find it easier. In my case, I had requested that my doctor make the sleeve tight, so that made going back onto a diet with solid foods more painful. How is your life different after the procedure?

I lost over 100 pounds and feel so much healthier. Is there anything you wish you’d have known beforehand? I wish I would have been told that coming out of surgery, I’d feel as if I were hit by a truck with every body organ feeling the impact. I was sore from all the stomach muscles I had lost. Going into it, I knew that surgery was no picnic, but I was not aware of the extent to which I’d be affected. Had I been prepared, I’d have an easier time dealing with the hardships that cropped up. Is there anything that made the post-surgery period easier for you that you’d like to share with others? I had a great support system, which helped a lot. It is also very crucial to follow all post-op instructions, like no drinking and eating together to avoid complications. Working out is important for dealing with the excess skin. Would you recommend others to go ahead with the surgery? Definitely. Like they say: no pain, no gain. This is not brain surgery and it’s doable. Although you still want to eat and still have to make the right choices, this surgery is a very helpful tool in reaching your weight-loss goals.

ON A DAILY BASIS, I SEE MANY CLIENTS WHO want or have to lose weight for many reasons. While I know that one-on-one guidance and personalization of the plan is critical to weight-loss success, there are other factors that can help. In this article I will focus on a weekly weight-loss support group, because I feel that for certain individuals, attending these group meetings and enlisting the help of others to support their efforts, result in more success at keeping the excess pounds off. Just so you know, these results are supported by the American Psychological Association as well. Why, do you ask, does a group setting help in shedding those unwanted pounds? Well, for one thing: validation. The people in your group are in the same boat as you are and can provide additional insight, perspective and real-world experiences. I think that another equally important plus to the group experience is motivation to continue and even track your new friends’ progress as well. Aside from a fun social outing, groups are a place to find people that provide you with understanding, compassion and encouragement. It also then follows that a group setting can be a place of celebration. As the pounds come off, a natural reaction is to share the joy of success with as many people as possible, to have that “moment in the sun.” Terms of encouragement and applause give you a proud push to continue on this path. Sometimes it is this same encouragement that is needed to stay on track or even get back on track. This type of setting can boost accountability and provide opportunity to reconnect and rededicate yourself to your once-ascribed-to long-term goals. I have to mention that realistic weight-loss goals often mean the difference between success and failure. For example, short-term goals provide immediate challenges and benefits. You achieve your longterm weight-loss goals as a result of your short-term successes. Discussing and sharing personal challenges as well as selecting a feasible target weight helps in the development of strategies for restaurant and party scenarios. I remember one client telling me she enjoyed laughing and even crying after listening to some stories people told the group. She even started using a program, based on another group member’s suggestion, to aid in food journaling! Another client learned not to be embarrassed to order her food prepared to her dietary specifications since other members said they did it all the time. This was real progress for her since she would almost always sidestep her eating plan when she went out to eat, and she went out often for the social experience! Many clients tell me about the great recipes they got or shared and

how they helped them be excited to try new foods or make yummy-tasting meals that week; then, they’d discuss how the food came out the following week with the group. I also found that people shared their experiences as to what meals worked for their kids as well as their diet, and shared light recipes for yomim tovim with ease. In my practice I always share recipes, and people like to try them. It is the power of suggestion that keeps it exciting to continuously try new things. Additionally, being an exercise and fitness expert, I have found that it is easier to maintain weight loss when you share successful exercise strategies. And if everyone in your group is exercising, then the odds are that so will you! Many people find it hard just to work out or even get to the gym. Having a support system from your group while you are trying to stick to your regimen will give you that extra determination and inspiration to continue, especially when things get hard or frustrating. I find that many group members meet up during the week and work out together. This keeps the fitness factor more fun and consistent. Finally, from a purely psychological perspective, losing weight is largely about changing behaviors, including what you eat and how active you are. Trying to change a behavior that you have had for a long time can be challenging at best. Belonging to a group geared toward weight loss will provide the support system for when things get difficult, and you’re more likely to reach out to a friend than a professional during those sticky times because you don’t want to “bother” the nutritionist all the time. I take this into account in my professional capacity and always like it when my clients contact me with questions or options of food they want to try. I try to answer right away so they know I am there for them. All in all, when you have the right support, especially with weight loss, your goals are more than within reach! Rachael E. THE BRIEFCASE TECHNIQUE “I HAVE AN INTERVIEW tomorrow. Are you available to talk for a few minutes?” was the urgent message I received from a client one night. I called her back and we set up a time to meet first thing the next morning. Preparation for an interview is just as smart as creating an awesome resume. It’s a one-time opportunity where walking in unprepared is preparing to fail. You may have seen sometimes that people who are less qualified get chosen over a better candidate when their natural charisma and witty remarks get them hired. Crying “It’s not fair!” makes you look silly at best, because nobody ever got hired in the name of fairness. Fact is, humans are hiring, and humans are…. uh, human. They are emotional beings who make subconscious decisions which they then

hours and was open to options other than just web design. After sending her resume out, Shifra heard from a friend of hers that their company was looking to hire a part-time senior account manager. It was in a similar field, but would be more of a management role. She applied and then had a basic phone interview with the director one week before we met. He had been impressed with her background, resume and knowledge, but worried that she had never done this specific job before. After all, it was not an entrylevel position, and although they expected to provide basic training, he wanted to be sure that it would
back up with logic. The good news is that even if you weren’t born with a golden tongue, there is an amazing technique that anyone can learn that makes them dazzle the best interviewer. I kept this is mind when mentally preparing for this meeting, thinking that this strategy might work well in this case. forewarned her that the two main concerns the company had in regard to hiring her were her salary expectations as well as lack of specific experience. The reasons they were seriously considering her were her personality and background, which would both be very helpful in this position. Shifra was afraid that she had sabotaged the chance by asking for too much. In reality, she would be glad taking a large pay cut, as long as she got the job. She was also concerned that her lack of experience was a legitimate problem and worried that maybe she would not perform as expected. This opportunity called for the “Briefcase Technique.” The Briefcase Technique (a term coined by financial advisor Ramit Sethi) is used when an interviewer asks the big question: “How do you feel that you will be able to succeed in this role?” Your answer, instead of fumbling around for the right words, is to dig into your “briefcase” with a flourish, and with a beatific smile, present two copies of your plan. Keep one in your hands, and pass the other one to the interviewer to follow along. First, though, watch them smile as they scan the page, realizing that you’ve come prepared, you know what you’re talking about and you are the candidate they’ve been dreaming of. Shifra and I analyzed what her strengths were, what the job responsibilities were and how they matched up for this role. I also advised her not to be too flexible with salary, as offering to go too low would also show lack of confidence. She prepared to go in ready to work with the budget, while staying aware of her value as an employee. She completed her proposal, typed it up and placed it in a new folder. Later that day, I received a call from Shifra. “You wouldn’t believe how well it went!” she said. “After explaining all the responsibilities of the position, the business owner asked me, ‘Do you think you can do all this?’ “I was so confident, I whipped out my paper, and you should have seen the look on his face! He had never seen someone come to an interview so prepared. It was brilliant. He followed me through, line by line, and without saying so explicitly, I saw that any doubt they had about me disappeared.” Breathless, she hung up the phone to call her parents and share the good news. Nutrition label appears on more than 6.5 billion food packages.
Burkey Belser designed the format of the nutrition label, often referred to as “the most frequently reproduced graphic in the world.” He was actually awarded for it by President Bill Clinton in 1997.
The FDA does not require a specific typeface to be used, but they do say that the font should be an “easy-to-read type style.” Most often it is set in Franklin Gothic Heavy or Helvetica Black.
Foods that are less than five calories are considered “calorie-free.”
Fats of less than half a gram will be expressed as “0 g of fat.”
If you are watching your weight, always compare your portion size (the amount you actually eat) to the serving size listed on the panel. If the serving size is half a cup and you eat one cup, you are getting twice the calories, sugar, fat and other content listed on the label.
Sulfites are insignificant ingredients and do not need to be listed among the label’s ingredients. However the eight major food allergens — milk, eggs, fish, shellfish, tree nuts, wheat, peanuts and soybeans — are required to be listed on the label, no matter how little is included. HISTORY Up until the 20th century, few laws regulating the contents of food and medicine were in effect. With credit to progressive muckrakers, this changed in the early 1900s. President Theodore Roosevelt signed the Food and Drug Act in 1906, which prohibited the misbranding of foods and drugs. Later this evolved into the Food and Drug Administration, commonly referred to by its acronym FDA.

The FDA is responsible for assuring that foods sold in the U.S. are safe, wholesome and properly labeled. They passed the Nutrition Labeling and Education Act in 1990, which requires all foods to bear a nutrition label specifying the amount of nutrients found in any given product. Additionally, all ingredients must be listed from highest to lowest quantity in regard to weight.
CHANGES IN EFFECT Since Americans are eating and drinking about one-third of their calories away from home, food establishments that are part of a chain of 20 or more locations are being required to add calorie information on menus and menu boards by May 7, 2018. Operators of 20 or more vending machines will have the information on a small placard, sticker, poster or as a digital display near the food item or selection button.
PERCENT DAILY VALUE (DV)
The percent daily value is a guide of how much a person should consume in nutrients on any given day, based on a 2,000-calorie diet. A healthy person eating 2,000 calories a day diet will consume less than 65 grams of total fat, less than 20 grams of saturated fat, less than 300 milligrams of cholesterol, less than 2,400 milligrams of sodium, 300 grams of total carbohydrate and 25 grams of dietary fiber.
You will not find the percent daily value for sugar. But according to the American Heart Association (AHA), the maximum amount of added sugar that should be eaten in a day is 150 calories (37.5 grams or 9 teaspoons) for men and 100 calories (25 grams or 6 teaspoons) for women. The sugar present in whole fruits do not count as added sugars. The new label will actually reflect a percent daily value of 50 grams, or 12 teaspoons, which equals 10 percent of the daily 2,000 calories recommended for adults. Considering that a 20-ounce bottle of Coca-Cola has 65 grams of added sugar, the new nutrition label would show a percent daily value of 130 percent.
The percent DV of trans fat is also not specified, probably because the recommended amount of consumption is very limited. One should eat less than 2 grams of trans fat per day. This equals approximately 20 calories, 2 potato chips or one-eighth of a chocolate chip cookie.
The nutrition label has its standard format, but a new design was finalized on May 20, 2016. Initially, companies were given until July 26, 2018, to put them into effect, but the FDA intends to extend it to January 1, 2020. Some of the changes that will be made include: 1. Increasing the font size for calories, servings per container and serving size declaration. 2. The current label informs consumers of the vitamin A, vitamin C, calcium and iron content of a food. The new label will include the vitamin D and potassium content. Manufacturers can decide on including other vitamins on a voluntary basis. 3. “Calories from fat� is being removed from the label. Trans fat and saturated fat will still remain listed. 4. Added sugar will be included. Scientific data shows that added sugars equaling to more than 10 percent of your total daily calories make it difficult to meet nutrient needs within calorie limits. 5. The serving size indicated on the label is the amount of food that is usually consumed by a person four years of age or older. But the serving size has changed since 1993 when the labels were first introduced. For example, the serving size for ice cream was half a cup but will change to two-thirds of a cup on the new label. The serving size of soda is also being changed from 8 ounces to 12 ounces. The theory is that these changes will help consumers make better, and more informed, food purchases.
