Thanks for a weekly magazine that we enjoy so much! In regard to last week’s letter on appreciating our blue-collar workers, I can give my whole-hearted approval to every word that was written. Being in the line and having completed hundreds of jobs around town, I have picked up on a worrying trend among our heimishe oilem. There is an attitude that since the serviceman is not actually installing anything of value, his prices are negotiable and he can be nagged to lower his prices to a bare minimum. Do you realize that this yungerman has given you very valuable time and skill? I have done numerous jobs outside of the Yiddisher velt and can testify that this is a unique problem. There is tremendous beauty in the way we as a community will provide for struggling families especially when it comes to hachnosas kallah, etc., but this has brought about a blurring of wealthy and poor, necessities and luxuries, which many times leaves the hardworking serviceman shortchanged. Before you start bargaining with the handyman, think: He needs to provide for his own family too! In hope of raising awareness and building wonderful futures together. Your local handyman, E.M.
In regard to the letter from the handyman about being paid fairly, I fully understand and support his request. However, I think it is very fair to make a request in return. Handymen of all sorts: Our time is just as precious as yours. In no other profession are appointments scheduled, leaving the “patient” waiting… and waiting… and waiting… for the “doctor” to arrive — and then, he either never shows up or shows up much later. FOR EGG ALLERGIES TOO I would like to let your readers know that I made an egg-free version of the Gluten-Free Chocolate Chip Cookie recipe featured in Issue #121, and the results were delicious. I replaced each egg with one tablespoon flax seeds and three tablespoons water, which I beat together. R.F.

Last week, “A Working Mother” took issue with R.S. blaming two-working-parent households for the concept of hot, nutritious breakfasts falling at the wayside. Well, as a stay-at-home mother, I fully back her. I no longer rush out to work first thing in the morning (although I used to), and I am still not able to prepare hot breakfasts for my kids in time for them to eat before they rush off to catch the bus. Most families have many young kids trying to catch early buses to school, and it is hard enough getting them to squeeze in time to finish a bowl of cereal before the bus comes, let alone a stack of pancakes. My kids enjoy their hot breakfasts on Sundays, snow days and vacation days when they don’t have the stress of making their buses. And regarding R.S. defending school lunches, claiming that the french fries are baked and not fried, I believe that the mother’s problem with french fries had nothing to do with how they are prepared, but rather with the fact that they are being served as the lunch itself, and not just as a side dish alongside a more nutritious and filling lunch. I called a taxi from a doctor’s office to arrange a return medical trip and was told the car would arrive in about ten to twelve minutes. Several moments later I got a call from a dispatcher saying that the car was waiting outside. I found a small unmarked car outside with the driver claiming to be a taxi from the company I had called. reluctant to enter the car because I know that their cars are marked with large phone numbers. A debate ensued among the ladies in the waiting room about whether or not I should believe the driver. I called the taxi company again and was told that the car was on the way; they had not been the ones who called to tell me the car is outside, and yes, their cars are marked. I wanted to make your readers aware of something very important. Singlehanded faucets are unfortunately a cause of much chillul Shabbos as it is so easy to mistakenly turn on the hot water instead of the cold, as careful as one may be. When I moved in to a new home, I actually invested a pretty sum to change over my faucets to two handles to avoid this problem, and I find that placing a glass or even plastic cup over the knob for the hot water serves as a great reminder on Shabbos. If you do have a single-handled faucet, you can try to turn off the hot water before Shabbos so you can preserve the heiligkeit of this sacred day. A Concerned Reader
RE: IN SEARCH OF A CURE (ISSUE #131) I’m writing in response to the letter to the editor on how to deal with a child who responds to stress by having nervous tics. There’s a parenting program given by Mrs. Ruchel Weiss, where she teaches awareness of how your child will exhibit different behaviors in order to get the connection from the mother. This may be something you may want to look into. Lots of people have seen tremendous changes in their children’s behaviors after implementing these ideas.

AT TIMES I HAVE CLIENTS ask me a version of the following question: “I am not losing weight as well as I had hoped. I don’t keep a food log, but have been pretty much on plan for the last two weeks and haven’t lost a single pound. Would you recommend that I cut out one of my snacks? The Nugo bars that I have been eating, because they are recommended on your plan, have almost 200 calories in them!” My answer to them is almost always, “First keep a food log!” Without a food log, there are too many unknown details. We tend to only remember the basics. But if you are eating one extra slice of challah per Shabbos meal, or a few tablespoons of extra dip, or perhaps not measuring your dinner starch carefully, that would be enough to stall your weight loss. Rather than cutting out your snack, start by keeping a very specific food log with all the details and little bites. See if there are any extras that can be cut, and this will restart your weight loss without taking away your snack. I find that we have a tendency to point the finger in the wrong direction when dieting. For example, so many people go on carb-free diets when it was in fact basics like challah, kugel, cake and dips that made them gain the weight. Why, oh why, can’t we allow ourselves something as basic and healthy as a slice of whole-wheat bread?! The slice of bread is the least of our problems! I think we do this because change is so difficult. It is easier to ban things than to make lifestyle changes. The tendency to be black and white about dieting and go to extremes is always there, because it is easier than making certain lifestyle changes and sacrifices. It is easier to give up a Nugo bar than limit our challah and dips or our portion sizes by dinner. But the real answer
is not to cut food from a healthy plan in order to fit in unhealthy, undefined extras. So many diets encourage this extreme sort of thinking. They promote carb-free, or extremely low-calorie foods, which never allows for the gray area of slow and steady weight loss along with lifestyle changes that stick. The problem with never learning to live in the gray area is that the weight loss is, by design, temporary. We try to do things differently by creating a system that faces the reality of our daily eating habits honestly and objectively. So when sitting with your nutrition counselor and trying

THE REBBE’S GABBAI looked up to see who had entered. Yidel Rosenberg stood before him. The look of anguish on his face the previous week had been replaced by a look of joy. “Ah, Reb Yidel! How is your son doing?” asked the gabbai. “Baruch Hashem, baruch Hashem! I came to tell you the good news in person. He is expected to make a complete recovery! I have no doubt that it was the Rebbe’s bracha that made the difference. I have been singing the Rebbe’s praises to anyone and everyone!” The gabbai laughed, “You won’t be the first to do so. I have seen countless people helped by the Rebbe.” Yidel paused a moment, his eyes shining. Finally, he spoke again, this time more seriously. “I’ve come to a decision. I want to get close to the Rebbe. Really close. Is it possible you could arrange something for me? Maybe I could come every week to see the Rebbe privately?” The gabbai’s face turned more serious, and he rubbed his beard as he considered how to reply. “Listen, I understand how you feel, it’s very normal…” Yidel interrupted, “I’m really serious. Please don’t turn me away.” Yidel looked with pleading eyes at the gabbai. The gabbai sighed. “Okay, I see you mean business. Why don’t you come to the Rebbe’s minyan at neitz each morning?” Yidel’s look of longing quickly transformed to one of hope. “You mean he could meet with me after davening? It’ll be hard, but I can do it!” “No, that’s not at all what I meant. I meant that you should come to daven neitz with the Rebbe. The Rebbe does not meet with anyone after davening — he learns after davening.” “Oh, well, never mind. Is there anything else?” begged Yidel. “The Rebbe has his yesomim and other children in need. There are more such children than you can imagine. There is a special oneg Shabbos that he makes for them each week. Perhaps you might come and entertain? Everyone knows about your famous sense of humor.”

“Really? And the Rebbe will be there? He might see me before or after? Sure, I could prepare some good jokes every week.” The gabbai’s face darkened slightly as he responded, “It is not genuine closeness to the Rebbe you desire. If you truly wished to grow close to the Rebbe, then you would work on the projects that were dear to the Rebbe’s heart. Thank you for bringing the good news about your son. I will be sure to tell the Rebbe.” Yidel was dumbstruck. He knew that gabbai was dismissing him, but something inside him had begun to shift. Of course, the gabbai had been correct — Yidel understood this immediately. “You are 100 percent correct, and I have a new understanding now, and I thank you for teaching me. I will do both. I will daven neitz with the Rebbe, and I will do my best to help the yesomim.” The gabbai smiled. “Spoken like a true chasid! I’ll see you in the morning.” After kriyas yam suf, the Bnei Yisroel sang shirah. They yearned for closeness to Hashem, and they sang. Shortly afterwards, Hashem gave the first two mitzvos. I once heard in a shiur that Hashem was responding to the Bnei Yisroel’s desire for closeness by giving them the first few steps. The Bnei Yisroel could then grow closer to Hashem in two ways. For one, mitzvos help bring us nearer to Hashem. In the physical world, closeness is measured by distance, but in the spiritual world, closeness is measured by similarity. By doing Hashem’s mitzvos, we are making ourselves more similar to Hashem, and therefore closer to Hashem. Second, doing Hashem’s mitzvos demonstrates that we honor what is important to Hashem. The desire for closeness to Hashem, like so many feelings, can be fleeting. A person who feels inspired to grow close to Hashem should act upon that feeling immediately. Action concretizes our intentions. “Ner mitzvah v’Torah ohr — a mitzvah is a candle and the Torah is the light.” (Mishlei 6:23) Without a candle, there is no receptacle for light in this world. Likewise, without action, there is no receptacle for intention. May we all take action to carry out Hashem’s mitzvos, and in so doing, bring ourselves closer to Hashem.

Breaking Limiting Beliefs Making Dreams Reality Based on a lecture by Rabbi Ben Tzion Shafier

The Gemara (Yoma 35b) states that when a person who was poor during his lifetime on earth stands before the Heavenly tribunal, he will be asked, “Why didn’t you engage in Torah study?” If the person replies, “I was very poor and just barely had enough time to eke out a living; I didn’t have time to learn Torah…” Hashem will respond, “Were you poorer than Hillel, who earned so little, yet used half of his income to pay the doorman to enter the synagogue to study and the other half to support his family?” And if, on the other hand, the person was wealthy and replies, “I was so rich that I didn’t have any time to study Torah…” Hashem will respond, “Were you wealthier than R’ Elazar bar Charsom, who inherited his father’s vast estate and was arguably the wealthiest man alive during his time, yet still pored over Torah study day and night?” From here, derives the Gemara, Hillel obligates the poor to learn Torah despite their poverty and R’ Elazar bar Charsom obligates the rich. This Gemara is perplexing on two accounts. First, why does Hashem need to use Hillel and R’ Elazar bar Charsom as bases of comparison? He knows what each individual did or did not do and if their excuse is legitimate or not. What does incorporating these great sages into the equation accomplish? Moreover, the measure of whether a person accomplished his or her life’s purpose and potential is not

gauged by anyone else’s life other than their own. It is incorrect to rate one’s success or lack thereof based upon anyone else. What then do our Sages mean? IT WAS CONSIDERED an unbeatable and unbreakable record for hundreds of years. Athlete after athlete tried, yet no one succeeded. The feat of running the mile in under four minutes seemed impossible. By the turn of 20th century, Thomas Conneff held the record at 4:15. It decreased from there, and in 1923, Finnish runner Paavo Nurmi ran it in 4:10. By the end of the ‘30s, the record was set at 4:06, and in 1945, Gundar Hagg of Sweden lowered the record to just over four minutes (4:01). Australian runner John Landy had also gotten close to the four-minute mark, running 4:02 six times from 1952 to 1954. That was as best as it seemed it could get. At one point, Landy remarked, “It’s like a brick wall. I’m not going to attempt it again.” It was considered fact that no human being could break the limit and shatter the myth. However, on May 6, 1954, Englishman Roger Bannister broke the four-minute mark barrier, running the mile in 3:59. The impossible had been made possible. But that is not the most surprising part of all. Fortysix days later, on June 21, John Landy, who had previously called the four-minute record a “brick wall,” ran the mile in 3:58. The four-minute mile and the impossible were no longer synonymous. Bannister and now Landy had both broken it. Yet it only gets more interesting. To date, since this
sub-four record had been set by Bannister and Landy, 1,034 runners have run the mile in under four minutes. What was once absolutely impossible and beyond human capacity is today doable and almost expected from any decent professional runner. What happened? How was something that for years had been so unequivocally understood to be impossible rendered possible? The answer is simple: Once Roger Bannister showed the world that it could be done, he broke through an impenetrable mental barrier. He changed the perception of competing runners, and thereby the attitude that prevented so many of them from achieving what was within their grasp. This phenomenon of breaking imaginative limits is not limited to competitive sports, however. Consider another example. In 1977, a woman was preparing dinner in her house in Tallahassee, Florida. All of a sudden, she heard a scream. Frightened and wondering what the cause of such shrieking could be, she ran outside. And then she saw. Pinned underneath a wheel of her Buick was a young boy’s arm. Panicking at such a startling sight, the woman immediately rushed over to the car. And then she did something that was perhaps even more startling… She lifted up the car by its bumper, enabling the child to release his arm from underneath. The boy was then rushed to the hospital, where he healed to recovery. At the time, this story became a media sensation. Almost every newspaper ran it as a headline story. highlighting the unbelievable display of superhuman strength. Yet why was that so? What in specific caught the attention of the media? One simple reason: The onlooker was not some burly firemen or trained medical technician. The onlooker was Laura Shultz, the boy’s 63-year-old grandmother. When Dr. Charles Garfield, Clinical Professor of Psychology in California and author of the bestselling book Peak Performers, heard about this, he knew there was a
story behind the story. Having spent years studying and examining impossible feats performed by athletes who pushed beyond the limits of human capacity, he saw another potential candidate here. Calling the 63-yearold grandmother, he asked if he could interview her to learn more about her incredible act of strength. Yet Laura Shultz was hesitant to talk about what she called the “event.” Discussing how she saved her grandson was something she shied away from, because, in her words, “it makes me nervous.” Oddly surprised, Dr. Garfield didn’t know what to make of it. Here was a woman who did something heroic and admirable. She saved her grandson. Why wouldn’t she want to share her story with the world? “If this,” Laura Shultz told Dr. Garfield, “which I knew was impossible, was something I could do, what does it say about the rest of my life?” Laura had come to terms with an unsettling reality. “I always dreamed about teaching,” she explained, “yet I never got anything more than a high school education. If I had only realized that if I would push myself I could accomplish my dreams, who knows where I would be today?” Dr. Garfield now understood what was so frightening about thinking of the “event.” It was something that reminded her of a life she could have lived, potential she could have actualized and accomplishments she could have attained. Yet she hadn’t. And that pained her more than anything. “What is your passion?” Dr. Garfield asked. Laura Shultz went on to say that she had always loved geology. She immensely enjoyed collecting rocks and reading about the earth. “Well,” said Dr. Garfield, “you’ve already proven that with a little effort you can achieve what seems impossible, right?” Laura Shultz smiled. As they finished their interview, Laura began to think about what they’d discussed. And then she got to work. Or, more accurately, schoolwork. She enrolled in

college and earned a degree in geology. At the age of 63, she pursued her lifelong passion and put her mind to the task. She went on to teach geology at a local community college. Many of us stay constricted in our beliefs. It is not normal for a person to run a mile in under four minutes, and it is not expected of a grandmother to lift a car and save her grandson. But then again, such standards are often the product of our own self-imposed limitations. Once we see that it can be done, all bets are off. When our motivation and mindset transcend these limits, we will often discover that we have untapped inner reservoirs of strength and aptitude, and we can in fact achieve the so-called impossible. This is the answer to the above difficulty with the Gemara. Why does Hashem hold the poor by the barometer of Hillel and the rich by the standard of R’ Elazar bar Charsom? What do they have to do with each poor and rich individual? The answer is this very point. Hillel is not being used as a source of comparison, but as an example. Hillel shattered the limiting belief that someone so poor is unable to learn Torah, and R’ Elazar bar Charsom showed that despite affluence, one can devote his time to the study of Torah as well. Hashem’s question to the poor or rich person is, “Why didn’t you place the examples of Hillel and R’ Elazar on a pedestal and use them as models of inspiration and motivation? Why didn’t you look at them as your role models and heroes and realize that they walked the same planet and breathed the same air as you and accomplished extraordinary feats? If you wish to, you can become great.” We all have dreams and aspirations. There are many things we wish to accomplish, yet we become discouraged and despondent. It seems too difficult and beyond our reach. But then again, ask yourself: Is it really? Can you muster every ounce of strength you have and achieve that dream of yours? Look at those who faced seeming insurmountable challenges and proved to themselves and everyone else that it wasn’t quite impossible. Your dreams are awaiting you. Stretch your mind and commit yourself to your goal, and before long, you will see that those dreams of yours have no longer remained dreams. They will have become reality. Amnesty for Cashless Tolling Now in Effect AFTER BEING SLAMMED repeatedly for an automatic toll collection program on the new Governor Mario M. Cuomo Bridge that had drivers facing huge fines and other consequences because of a faulty cashless tolling system, a state-run amnesty program began this week, giving drivers the opportunity to pay their outstanding tolls without being responsible for any violations or fines. Numerous drivers had complained of toll bills that never arrived, leaving them facing astronomical fines and, in some cases, suspension of their registrations. Attempts to resolve the matter on the phone have proven unsuccessful, said drivers, who also found that bills that were supposed to be available online were posted weeks later than promised. According to The Journal News, the amnesty program, which will run online from January 22 through February 26, was announced by Matthew Driscoll, acting executive director of the New York State Thruway Authority. The program will affect only violations received on the Cuomo bridge between April 24 through January 31 of this year, reported CBS News. The cashless tolling system was designed to speed the flow of traffic by collecting tolls either via EZ Pass or by Tolls by Mail, which takes a picture of a car’s license plate and then sends a bill to the registered owner of the car. Driscoll said that currently there is $8 million in outstanding tolls on the Cuomo bridge, with $5.2 million owed by drivers of passenger cars and the remaining $2.8 million due from commercial vehicles. He also announced a plan to encourage drivers to sign up for EZ
Pass, saying that new applicants who take ten trips over the bridge within the next six months will receive a $10 credit to their account. Despite the snafu created by cashless tolling, Governor Andrew Cuomo continues to support the system, saying that it will be in place all across the New York State Thruway by the year 2020 and encouraging the Metropolitan Transportation Authority to adopt cashless tolling as well. While the Thruway Authority appears confident that the cashless tolling problem will soon be resolved, at least one other problem continues to plague the newly completed bridge, with area residents vowing to have the Cuomo name removed and the Tappan Zee Bridge moniker reinstated. A petition to restore the bridge’s original name has already gathered more than 100,000 signatures.

Dough yields enough for two pies. 1½ stick margarine ⅓ cup sugar 1 egg
8 ounces whip 1. Beat the whip until stiff. Spread or pipe over the grated halva.
CHOCOLATE MOUSSE
½ tsp. vanilla extract
¼ cup boiling water
2 packed cups flour
2 T. sugar
1. In a bowl, mix everything together by hand. 2. Divide dough in two. One part can be frozen for another time or used for a second pie, and the other half should be refrigerated for at least an hour. 3. Preheat oven to 350°. Remove dough from fridge and press firmly into your pie pan, trying to make the edges as neat as possible. 4. Bake for 25 minutes. Remove from oven and allow to cool.
CHOCOLATE GANACHE 5 ounces Noblesse chocolate 3 ounce whip 1. Place chocolate and whip in a microwave-safe bowl. Microwave, stirring frequently, until chocolate is completely melted and combined with the whip. 2. Pour mixture over crust. Proceed to the next step immediately.
GRATED HALVA 4 ounces halva
6 ounces Noblesse chocolate 10 ounces whip, beaten ½ tsp. vanilla extract 1. Stir together the sugar and boiling water until the sugar is completely dissolved. Set aside. 2. Melt the chocolate in a double boiler. Remove from flame. Stir the sugar water into the chocolate until it’s completely smooth. 3. In a mixer, beat the whip until stiff. Add the vanilla extract. 4. Gently fold 1 cup of whip into the chocolate mixture so that it becomes a bit lighter, and then pour the chocolate mixture into the remaining whip and gently mix together. Pipe or spread the mousse on top of the whip.
TOPPING 1. Garnish with additional chopped halva. (I used the seven-layer halva.) 2. Refrigerate until ready to serve (or freeze and defrost completely prior to serving).

Remove dough from fridge and press firmly into your pie pan, trying to make the edges as neat as possible. 4. Bake for 25 minutes. Remove from oven and allow to cool.

CRUST
STRAWBERRY MOUSSE
Dough yields enough for two pies. 3 cups flour
2 tsp. unflavored gelatin (you can find this in any grocery near the jello) 3 T. cold water
¼ tsp. salt 3 sticks margarine at room temperature
10 oz. frozen strawberries, completely blended ¼ cup sugar
¾ cup confectioners sugar
12 ounces whip
1½ tsp. vanilla extract 1. Sift together the flour and salt.
1. Sprinkle gelatin over the cold water and let stand for five minutes.
2. In the bowl of a mixer, cream the margarine and confectioners sugar until light and fluffy.
2. In a small saucepan, combine the blended strawberries with the sugar and bring to a slight boil over medium heat.
3. Mix in vanilla. Lower speed and beat in the flour mixture until just incorporated.
3. Remove from heat and stir in the gelatin mixture, continuing to stir until well-combined.
4. Divide dough in two. One part can be frozen for another time or used for a second pie, and the other half should be refrigerated for about 30 minutes. 5. Preheat oven to 350°. Spray your pie pan lightly with oil spray. 6. Remove dough from fridge, press into pie pan and trim the edges neatly (you will have some extra dough). With a fork, gently prick the top of the dough randomly 5 times. 7. Bake for 25 minutes. Allow to cool completely. 8. This crust is rather fragile, so handle with care. I recommend that you freeze the crust before removing from the pan.
4. Strain the mixture through a fine sieve (to get the juice through the sieve faster, I put on a plastic glove and pushed the mixture through the sieve with my hand). The strawberry juice should now look smooth. 5. Refrigerate the juice for about 30 minutes. 6. Beat the whip in your mixer until stiff. Fold a third of the whip into the cooled strawberry mixture and then lightly mix the strawberry mixture with the rest of the whip. 7. Pipe or spread the strawberry mousse over the chocolate and strawberries.
GARNISH 6 ounces chocolate, melted

Cover with the second piece of parchment, and gently but tightly roll up the layered parchment papers, taking care not to squeeze too hard. 2. Refrigerate for 2 hours. Remove from the fridge and unroll quickly so that the chocolate cracks. Place the shards decoratively on top of the strawberry mousse. 3. Refrigerate until ready to serve (or freeze and defrost completely prior to serving).

The Gemara Yerushalmi tells us that a person will have to give din v’cheshbon for the fruits he saw and did not eat. The Mishnah Berurah explains that it is a mitzvah to eat a little bit of all the new fruits each year to show that Hashem’s creations are beloved to us. It is well-known that Rav Avigdor Miller zt”l would reach great levels of simcha and kirvas Elokim through contemplating and appreciating the nuances of different fruits. Each fruit has a unique combination of vitamins and health benefits. For example, apples are high in fiber and pectin and are therefore very cleansing. Bananas are packed with potassium and are a real brain stimulant. Oranges and lemons and other citrus fruits have loads of vitamin C. The unique packaging, size, color, texture and shape of each fruit invite us to experience Hashem’s bountiful chesed with these gifts. Fruits get digested, absorbed and utilized easily. Unlike other sugars that turn into glucose in our body and need insulin to unlock their cells, fructose (the sweetener in fruits) does not operate with insulin so it is much less taxing on our body. It has “free pass” in the body and can feed cells very efficiently. Because raw fruit is a live food, it has loads of vitamins, minerals and enzymes that provide energy and vitality. Fruit is also a great pick-meup and brain booster so it is an ideal breakfast or snack. It is best to eat fruit before eating other foods since it gets digested very quickly. Eating fruits after a heavy meal causes the fruit to putrefy and rot the body, with the exception of apples.

As with all food, fresh is always best. However, dried fruit still provides us with many benefits and has the added perk of being preserved for a longer period of time. Dry food has a lower moisture content, which slows bacterial growth and curtails spoilage. It also adds variety and choice to food consumption.
Drying fruits yourself is exciting and a lot cheaper then buying them. Dehydrating food at or below 115° avoids enzyme-loss and is therefore ideal. This is possible either with a dehydrator or on top of a warm place like a freezer. You can also use a conventional oven as an alternative. Always use the lowest setting possible and use the convection feature if you have that option. It allows the air to circulate and the moisture to escape, shortening the drying time. If you opt for the store-bought variety, they fall into two basic categories: those that have sulfur dioxide and those that don’t. Since sulfur is a chemical that is extremely difficult to eliminate, choosing unsulfured fruits is wise. Most groceries carry a few of such options (Sungood is one such brand, and many stores carry their own unsulfured brands). Health food stores typically carry a greater selection of unsulfured dried fruits.
To dehydrate your own fruits, first select the fruits you wish to use. Some fruits that dehydrate well are apples, bananas, pears, mango, papaya, berries, apricots and peaches. Use different flavorings, such as vanilla, cinnamon, orange, mint, etc., as an optional upgrade. Place fruit slices on a dehydrator tray or lined cookie sheet and dehydrate or bake on the lowest setting, as mentioned above, until it is crunchy or chewy, whichever you desire. Because dried fruit lacks the water content of fresh foods, the enzymes are dormant. Soaking the fruit first or pairing it with moist foods is ideal for the digestive system. However, it is still a great option for a healthy snack as long as you maintain adequate hydration. Dehydrated fruits are also very concentrated in fructose, so it is important to consume them in moderate amounts.
Store dehydrated items that have been completely dried in airtight bags, jars or containers, and keep them at room temperature. If you plan on keeping the fruits for more than one month, keep them in a very cool place or refrigerate to prevent rancidity. Always refrigerate partially dehydrated items.

4 apples, cored Fresh lemon juice, as needed 1 tsp. ground cinnamon (optional) • Wash, core and peel apples. • Slice apples thinly and toss with lemon juice in a bowl. • Arrange the apples on a baking paper and sprinkle them evenly with cinnamon if desired. • Dry, using one of the methods mentioned above. • If using a dehydrator, dehydrate overnight until desired texture is achieved. • If drying on top of a freezer, apples should be sliced extremely thin. Dry between 12 and 24 hours, depending on thickness of apple slices. • If using an oven, bake on the lowest setting (150 to 170°) for 2 to 5 hours or until dry. • Store in an airtight container and enjoy!
First choose a fruit or combination of fruits to use. Some examples are banana, strawberry, peach, nectarine, cranberries, mango, papaya, kiwi, apple, pear, cherry, blueberry, plum, starfruit or pineapple. Using the food processor fitted with the S blade, blend the fruit into a puree. For every one cup of fruit puree, add 1 teaspoon of ground flaxseed, fiber or psyllium powder and blend well. This will cause the puree to become very thick and gooey. Allow the blended puree to stand and thicken for 30 minutes. Blend again and then pour onto a tray or cookie sheet covered with parchment paper. Spread to create a thin, even layer. Dehydrate on a piece of baking paper, uncovered, on top of the freezer overnight, or bake on the lowest setting for 4 to 6 hours until desired chewiness is achieved. It is best to flip the fruit leather midway through 1 tsp. lemon juice so that it will dry evenly. Store fruit leather in a sealed bag ¼ cup sugar/honey or roll it up with plastic wrap to prevent sticking. 1¼ cup cranberries Tips: 1¼ cup pears • You can also use applesauce for an easier alternative. WHILE STROLLING ON EDWIN LANE TO OR FROM THE MONSEY Boulevard shortcut, you will pass what looks like a dwarf tree right next to a mailbox. Very few people know the history of the tree, but I do. Now, dear reader, you will know it too. One a beautiful spring morning, a few months after our multi-unit house was built and its inhabitants took up residency, two men were found planting a tree in the front of the condo. Since my husband was president of the condo association, I received a call asking what was going on. I went outside and was told they were from the town and had come to plant two trees, one in front and one by the mailbox. The builder later told my husband he had to pay for them to put in the trees since he removed some during construction. The trees were young and were wired to pole supports on either side to keep them in place and protected while they grew. About three years later, our landscaper told my husband he could remove the supports. The trees were now on their own. Unfortunately, not too long afterward, a family that lived in the condo had a guest whose son was playing outside while the rest of the family remained indoors. Being a boy, the tree attracted him, and he thought it would be fun to swing on the tree. Not realizing the fragility of the tree or his own strength, the boy snapped the tree trunk, severing 90 percent of the tree. My husband went ahead and replaced it with a non-fruit-bearing cherry blossom tree. But history repeated itself. Not wanting a third tree to get destroyed, we left the trunk in the ground and discarded the detached part. Time passed. What looked like a stick coming out of the ground was really a broken tree that was using its latent potential to still become something. I didn’t pay any attention to it until one day, while getting my mail, I noticed two small green shoots sprouting out of the side of the tree. I ran to get my camera to capture it, and over the next while, I kept an eye on the tree. I had been so sure that it was dead once the top had snapped off, but I’d been wrong. The tree still held the potential for growth! Soon, some leaves emerged, and with them blossoms. Even when pouring rain and a strong wind ripped them away from their base, they grew back not long after. Soon thereafter I moved away, but I would still return every so often. As the years went by, the stick in the ground grew branches. It grew leaves. It grew blossoms. It kept growing! It didn’t grow very tall, but its branches spread out in the width. This tree did not become a tall tree; it became a dwarf tree, but a beautiful one at that. It produces white and bright pink blossoms. It brings beauty to the area. It gives out all the health benefits trees are known for. But most of all, it gives me chizuk. The Torah compares a person to a tree. The lessons I have so far taken out of this tree are many:
• Do not give up hope. • Don’t stop trying, and don’t let setbacks set you back. • When one way doesn’t work out, look for alternatives. • There is potential in everyone waiting to come out. • Sometimes it looks like nothing more can be done, but possibilities might show up with time. • It might take a while for beauty to be exposed. • Just because something looks bad, doesn’t mean it is. • Be careful after supports are removed and still take things slowly. • One can never underestimate the power of life. • Hashem has different ways to make things happen. Now you know the history of this tree and the chizuk I get when I see it. Next time you pass 9 Edwin Lane, take a moment to look at the tree and gain your own chizuk from it.

Keep puff pastry frozen until ready to use, as it’s easier to work with when solid.

Tu B’Shvat, the “new year” of the trees, is an appropriate time to discuss the laws of kelayim, the mixing of species. Many people assume that the halachic definition of the mitzvah of kelayim is the crossbreeding of different species of plants or animals, but as we will soon see, most of the laws of kelayim have little to do with what a farmer or a scientist would call crossbreeding or hybridization. CROSSBREEDING OF PLANTS Crossbreeding of plants, or, as it is usually called, cross-fertilization or cross-pollination, is when one pollinates the flower of one species with pollen from a different species to produce offspring with some characteristics of each. Many fruits have been developed this way, though I want to share that a

nectarine is not a crossbreed of a peach and a plum, as is often mistakenly thought. A nectarine is an ancient variety of peach (Prunus persica) that has a smooth skin. Botanists consider it to be the same species as peaches. What is interesting is that in the
discussions about kelayim in the Torah, the Mishnah and the writings of Chazal, nowhere does it say that it is prohibited to cross-pollinate from one plant species to another. This does not mean that there is no prohibition of kelayim germane to trees or plants. Quite the contrary, there are three such prohibitions min haTorah. They are referred to as kil’ei zera’im, kelayim in plants; kil’ei hakerem, kelayim in vineyards; and kelayim in trees, usually referred to as harkavas ilan. But as we will soon see, none of these three prohibitions have to do with crossbreeding.

KIL’EI ZERA’IM, KELAYIM IN PLANTS Kil’ei zera’im is planting two or more different species of grains, vegetables or other edible herbaceous plants in close proximity. Exactly what defines “close proximity” is a very complicated halachic topic and depends on factors such as the shape and size of the vegetable patch and what variety of produce one is planting. We should note that from a botanical point of view, planting two species in close proximity will not cause hybridization because it does not affect genetic makeup. This mitzvah applies only in Eretz Yisroel. Thus, someone in chutz la’aretz may plant his backyard garden with a wide variety of vegetables without any halachic concern, whereas in Eretz Yisroel someone planting a garden patch must be very careful to keep the different species separate. KIL’EI HAKEREM, KELAYIM IN A VINEYARD Kil’ei hakerem is the prohibition against planting grains or vegetables in or near a vineyard. Again, this forbidden planting will not affect the genetic makeup of any of the plants involved. It is also quite clear that this was not the concern in halacha as we see from many of the halachic details. Here is one example that demonstrates this fact: Although it is prohibited to plant grains or vegetables near a vineyard, there is a way to permit it by separating the vegetable patch from the vineyard by making them into different “areas” by placing a halachic wall between them. For example, it is permitted to place two poles and a wire across the top, a tzuras hapesach, between the vegetable
to plant the grain, and without the tzuras hapesach, it is a Torah prohibition to do so! This certainly cannot be explained on a scientific basis. Planting grains or vegetables in a vineyard applies in chutz la’aretz but only miderabbanan (Kiddushin 39a). Unlike other forms of kelayim, the produce of kil’ei hakerem is forbidden to use. HARKAVAS ILAN, GRAFTING TREES The laws of kelayim also prohibit grafting one species of tree or plant onto the wood stock, or lower trunk, of another species. Although a town dweller may feel that this is a rare occurrence, contemporary plant nurseries and tree farmers in fact usually graft branches of a species that produces delicious fruit onto the hardier stock of a different species. For example, most peach and nectarine trees are produced by grafting a peach or nectarine branch onto the stock of a hardier tree, such as an almond. Someone who performs this, either in Eretz Yisroel or in chutz la’aretz, violates a Torah prohibition whether he is Jewish or not (Rambam, Hilchos Melachim 10:6). Most authorities rule that one may not own, water or prune a kelayim tree, whether or not it is in Eretz Yisroel or in chutz la’aretz (Shulchan Aruch Yoreh Deah 295:7 and Piskei Teshuvah). However, many observant Jews have purchased agricultural properties that contained kelayim trees and did not cut down those trees. Was there any justification for their actions? Many halachic responsa discuss what was apparently a widespread practice in the eighteenth and nineteenth centuries. Whereas most poskim rule that

these Jews violated the halacha, some authorities justify the practice of owning these trees, at least in chutz la’aretz (Shu”t Chasam Sofer, Yoreh Deah #288; Aruch Hashulchan, Yoreh Deah 295:17–18). Because so many trees are grafted nowadays, someone who owns a fruit tree should have a horticultural expert check whether its stock is from the same species or not. Often, even a non-expert can detect if a tree was grafted onto a different species by simply scrutinizing the tree. If the bark somewhere near the bottom of the tree looks different from the upper part of the tree, this indicates that the upper part of the tree was grafted. Often one can see a line separating the graft from the rootstock or a difference in thickness between the top and bottom of the tree. Before purchasing a new tree at a nursery, examine the trunk carefully for signs of grafting. Although planting and caring for a kelayim tree is forbidden, eating the fruit of such a tree is permitted. Thus, one may purchase fruit without any concern over whether it is the produce of a graft. Planting vegetables and other edible crops together applies only in Eretz Yisroel, whereas grafting trees applies equally in chutz la’aretz and in Eretz Yisroel min haTorah.
Before purchasing a new tree at a nursery, examine the trunk carefully for signs of grafting.
ESROGIM Although space does not allow us to discuss this fascinating topic, there is a huge amount of halachic literature discussing the very common instance of using an esrog from a tree that was grafted onto a non-esrog tree. Most authorities rule that this esrog may not be used to fulfill the mitzvah on Sukkos. CONCLUSION Rav Hirsch (Vayikra 19:19) explains that the root word ke’le means to keep or hold something back, and that the plural form kelayim is similar to yadayim or raglayim and means a pair. Therefore, the word kelayim means to pair together two items that should be kept apart. This is to teach us that although we are given the world to develop, we must follow the rules that Hashem established for us to do so.

FROM THE GROUND UP SIMCHA WAKES UP AT 5:00 A.M. each morning, learns for an hour, davens and is in the office by 7:00 a.m. His is a management role in a large telecommunications company, which he had a part in building from the ground up. About 10 years ago, when the company was just starting out, Simcha was offered an entry-level position there. Newly married at the time, he was looking for his first job and grabbed the opportunity. Initially, he had no idea if the company would succeed, but he took the chance to learn as much as he could about the industry, taking on more and more tasks as time went on. His hesitations were proved wrong when a short two years later, the company had already hired over 20 additional employees and he found himself in a

in a second home upstate, where his family enjoyed spending summers and weekends throughout the year. Sounds wonderful so far, doesn’t it? This is what I think of as a “firstworld problem,” meaning a problem of the comfortable. As we know, once a person begins living comfortably, the sky (or the credit card company) is the limit. Paying two mortgages, tuition, everyday bills and a sporadic vacation is more than one man on a decent salary can typically afford. The second part of the issue was a healthy dose of market knowledge. Simcha knew that the same position
leadership role. He was involved in hiring, management and sales, as well as other areas, until eventually, Simcha himself took on the task of setting up departments and hiring or promoting people to lead different departments, leaving him to focus on growing the Simcha knew that the company further. After describing these issues, Simcha asked if I thought I could put together a resume that he could send around, just to feel things out. I suggested he first spend some time finding current job listings that interested him to get a better idea of how to position his resume. He spent some time doing that and found three job listings, in both similar and different fields, that he felt would put his abilities to good use. After putting together a resume that reflected his skills as well as matched up well to these positions, Simcha sent it out. He also sent a copy of his very first resume to some friends, mentioning that although not actively looking, he was open to opportunities. We’re waiting to see what the response will be. Simcha believes that going to a few interviews, learning his market value and keeping his eyes open will help him develop his career over time. Additionally, his own company may view him in a new light once they realize his market value in similar businesses. While his goal in interviewing with other companies is not to create a salary bid between his boss and a current competitor, this may very well happen. In that case, Simcha may be presented with a better opportunity within the company that otherwise would not have been available to him had he happily stayed put. Simcha is also keeping in mind that the reason he enjoyed the first few years at his current company was because he is an initiator, someone who enjoys starting new projects and building them up. Once the project was built, he began to feel bored. He is looking out for new companies that can afford his level of expertise, but who still need someone to help them through the initial growing stages. That would be rewarding in more ways than one!

LONGAN Grown in grape-like clusters, the longan resembles, and is oftentimes confused with, the lychee. The flavor of its translucent and succulent pulp is dry sweetness reminiscent of the tropical melon with a tease of mango. Fully ripened, its bark-like shell is thin and firm, making it fairly easy to crack open and pop out the edible interior. Like cherries, either slice and scoop out the pit, or eat in its whole form, spitting its pit.
SAPODILLA Fruit for dessert, anyone? Belied by its modest skin, the sapodilla’s unparalleled sweetness makes for a great guilt-free candy with its fragrant flavors of caramelized pear and rich, toasty undertones of toffee. This golden-toned fruit is a Mexican native typically grown in tropical climates. Sapodilla is normally eaten fresh by cutting the fruit in half and scooping out the flesh. TAMARILLO Also known as “tree tomato,� its pulpy flesh is intensely flavorful with a hint of sweetness. PERSIMMON Though the persimmon can easily pass as a beef tomato, and though tomatoes are in fact fruits, the persimmon boasts the looks of a tomato and the flavors of a fruit. As it ripens, its color takes on a deeper, fiery orange and its flavor intensifies its rich sweetness until it is almost reminiscent of dates. Of the many tropical fruits, the persimmon is of the simplest to enjoy. Slice it up or scoop it out, without the nuisance of pits to pull or shells to strip. DRAGON FRUIT A more familiar face in the tropical kingdom, dragon fruit is known for its statement splendor, like a rosebud with an explosion of brilliant pink. An offshoot of cactus species indigenous to Central America, this distinctively delectable fruit is supplied its moisture in the arid climates by its juicy stem. The flavor of its creamy texture is rather subtle, like a white kiwi with a splash of sweetness and a pinch of tartness. Its beautiful exterior is not edible, so either slice it in half and scoop out the flesh, or cut into slices and peel off the leathery skin.
