NEW ADDITION TO OUR MENU (Re: The Beauty of Borscht, Issue 139) Over the years, I’ve tried making borscht many times with varied results. Before Pesach, seeing an exact, detailed recipe, I decided to try Blimy Wassertheil’s method. The borscht was absolutely delicious, but there was one problem: I had to ration it! Family members who had never dared to taste borscht previously enjoyed this mold-free version. I even think it’s worthwhile to add this to my menu during the year as well. I also want to know if I can use this method to ferment other vegetables, or is this exclusively for beets? L. Stern BLIMY WASSERTHEIL REPLIES: I’m happy that your borscht-making worked out so well! For other vegetables, the ingredients and salt/water ratio can vary, but the fermentation method is generally the same across the board with the exception of sauerkraut. Good luck on your fermentation endeavors!

(Re: Why Didn’t I Think of That?, Issue 140) I had the grungiest, greasiest filters in the history of convection ovens until I used Gitty Luria’s method for cleaning them. I did not believe it would work, because I doubted the writer ever saw a filter like that; she for sure didn’t mean ours! RE: A MESSAGE FROM THE TRENCHES (Inbox, Issue 142) Thanks for an amazing publication! It’s great that we can share information and tips in a kosher forum. Before yom tov, someone wrote a letter regarding eating disorders. The last few years, I’ve been dealing with a someone who is struggling, l”a. She is a regular high school girl who is fighting with this horrible mental monster. Life has come to a crashing halt for her and for all around her. It’s terrible to watch a girl ruin herself, her body and everything that’s going good for her because of a voice inside of her screaming that she is “fat” and “yuck-looking.” We, as friends and relatives, don’t have the know-how and right words to help her in the best way possible. Begging and forcing her to eat won’t bring the right results. Many don’t realize how rampant this disorder is in the heimishe community. I would like to take this opportunity to publicly thank the wonderful organization, Magen Avrohom, that helps us day to day with this struggle. It is unbelievable how far they’ll go to help every individual struggling with anorexia. They provide and guide us with doctors, mentors, therapists and rabbanim. They speak to and help those who struggle, as well as parents, siblings, teachers and anyone involved on how to achieve recovery. What we at one point

RE: A WORD OF CAUTION (Inbox, Issue 142) I love The Monsey View and enjoy looking through its pages every week. Before Pesach, I especially enjoyed the recipes; they’re great for everyone, and especially for those of us who use very few ingredients on Pesach. I’d like to comment on a letter in which someone wrote against using goat’s milk for babies in favor of formula. I’d like to inform your readers that goat’s milk is very similar to mother’s milk. I have two children who grew up on goat’s milk, as did many babies years ago, and they are all perfectly healthy. If you get organic, raw goat’s milk, then it’s without a doubt much better than formula. It’s just more expensive and has a bit of a smell, but otherwise, it is most definitely the best choice for babies. A Reader

Dear Basya, I was so proud of myself that I didn’t go off plan on Pesach. I mean, I may have eaten more food than recommended, but it was all foods that were “on the plan.” That’s why I was so disappointed when I got on the scale and saw that I hadn’t lost any weight, and even gained weight, over Pesach. What’s going on? Dieting and Gaining CHAPTER 1
Dear Dieting and Gaining, First of all, keep in mind that sticking to your food plan over Pesach is a tremendous accomplishment and is really the goal for every yom tov and vacation. A bit of insight into why you “stuck to the plan” and still gained weight: Nutrition by Tanya is different from many other plans out there. Rather than “banning” foods, we consider ourselves a lifestyle and allow most foods in moderation. Therefore, if you aren’t practicing portion control, you really are not on the diet! For example, we recommend 10 to 20 almonds as a snack, depending on your specific plan. If you are nibbling on nuts mindlessly throughout the day, you are not on plan. This is a mindset shift for many dieters who are so used to being told that certain foods are bad and certain foods are good. We call this dieting baggage. But if you are strug-

gling to lose weight despite being “on plan,” reread your plan and take a look at your portion sizes. They may have inadvertently grown, and the extra calories are likely holding you back. Additionally, we emphasize eating on a schedule and not eating late meals in order to maximize your metabolism. Therefore, even if you didn’t eat anything extra (aside from extra matzah and wine at the Seders), the late meals likely impacted your weight as well. The good news is that since you are already refraining from a lot of calorie-laden foods, cutting back won’t necessarily take much more of your self-control. I HAVE A FRIEND BAILA* who became a baalas teshuvah when she was twelve years old. She is now in her thirties and a mother of a growing family in Lakewood. I once asked her how people respond to the fact that she became frum by choice. One response that she has heard countless times, but which never fails to shock her, is the question why someone would choose to become frum. I asked Baila why she did choose to become frum, and her answer came from a high place: She wanted to grow close to Hashem and live a life of kedusha. Having concluded that she wanted to live a life of kedusha, she realized that she would have to find out what it was that Hashem wanted from her, and then do it. She has been doing it ever since. Knowing Baila for as long as I have, I was not surprised that she had been thinking these thoughts at such a young age or that she followed through for over twenty years. What did surprise me was that there are people who grew up frum, yet do not understand why a person would give up a secular life to choose a life dedicated to Torah. It means that there are people who do not recognize the vast treasure in their own hands: that we can all become kedoshim! It says in this week’s parsha, “Ki Ani Hashem hama’aleh eschem mei’eretz Mitzrayim… vih’yisem kedoshim ki kadosh Ani — For I am Hashem Who brought you up from the land of Mitzrayim to be your G-d. Therefore, be kedoshim, for I am kadosh” (Vayikra 11:45). What does it mean to be kedoshim? We may have images of a kadosh as being someone who davens with great kavanah and who refrains from speaking lashon hara. These are wonderful qualities, but are these two qualities necessary — and if so, are they enough? If a person truly wants to be kadosh, she must look to the Torah to find out how. Baila wanted to be kadosh, and she understood that she must look to the Torah to find the way. In the above pasuk, what is the Torah teaching us regarding how to become kedoshim? To explain the word “hama’aleh” in this pasuk, Rashi cites the Tanna Dvei Rabbi Yishmael in the Gemara Bava

Metziah (61b) that it would have been sufficient for Hashem to “bring us up” from Mitzrayim even only so that we should no longer eat insects. Think how astounding this is: If Hashem would have brought us out of Mitzrayim and not given us the Torah, chas v’shalom, and if we’d have no mitzvos other than refraining from eating sheratzim — this alone would have been enough of a zechus for Hashem to have redeemed us! We all know that it is important to avoid eating insects, but how many of us are aware of just how important it is? Indeed, the previous pasuk points us in the same direction: “Ki Ani Hashem Elokeichem… — For I am Hashem your G-d, and you shall sanctify yourselves and be kedoshim, for I am kadosh, and you shall not defile yourselves through any sheretz that crawls on the ground” (Vayikra 11:44). The Ohr Hachaim Hakadosh states that this is a promise from Hashem that if we do our part to be kedoshim by avoiding such contaminants, then Hashem will make us kedoshim by ensuring that we do not consume them even by accident. The Ohr Hachaim then cites the Gemara in Chulin 4 that Hashem ensures that even the animals of a tzaddik do not eat anything that the tzaddik himself would not eat. Before Pesach, my family carefully washed and checked every single leaf of lettuce for the Seder. Insects are tricky, however, and may jump from the unchecked pile of leaves to the checked pile. Therefore, we each held up our lettuce to the overhead lights and rechecked them at the table right before Maror — and one of my daughters found an insect on one of her leaves! Imagine if we had not checked and rechecked our lettuce — then she might have eaten the infested leaf, chas v’shalom, at the very meal that commemorates our having been raised up out of a life of eating such contaminants to our neshamos! When you consider how much is asked of us in becoming kedoshim, it can seem like an impossible task. Thankfully, Hashem does not ask more of us than that we do everything in our power to be kadosh — and He will make sure that we are.

All Public Restrooms to Feature Diaper Changing Stations in New Construction Under Recently Passed State Mandate DEALING WITH THOSE inevitable smelly moments is about to become easier with Governor Andrew Cuomo including legislation in the 2019 budget that will require diaper changing tables to be installed in public restrooms throughout New York State. The state’s Uniform Building Code will require the diaper changing stations in both men’s and women’s restrooms in all-new or substantially renovated buildings. Signs must be posted directing visitors to the nearest changing table, with at least one available per gender on every publicly accessible floor. The governor’s new policy applies to businesses, such as stores and restaurants, and state facilities, including parks and Department of Motor Vehicles offices.
State Senator Brad Hoylman, who introduced the bill, praised Cuomo for his support and noted that often it is fathers who step up when it comes to messy parental duties. With no changing tables available in men’s rooms, fathers can be forced to diaper their baby on the bathroom floor, said Hoylman. Lieutenant Governor Kathy Hochul said that the legislation will ensure the health and safety of children statewide. “As a mother, I’ll never forget the stress of being out in public and in desperate need of a changing area for my children when they were babies,” said Hochul. “This is an area where state government can play a role in alleviating some of the everyday burdens faced by parents.”
Long-Awaited Bond Provides Greater Safety for Spring Valley Firefighters and Residents AFTER YEARS OF WORKING with outdated and dilapidated equipment, Spring Valley firefighters are heaving a sigh of relief with the purchase of a new fire truck and all-new turnout gear and radios for all 70 members of the volunteer brigade. The sorry state of affairs at the Spring Valley Fire Department caught media attention two years ago, reported NBC News. Funding for the much-needed improvements had gotten caught up in the village’s internal politics, leaving firefighters in the county’s busiest department facing growing dangers on every call.
With a $1.3 billion bond approved by the village, all of the department’s vehicles are now equipped with technology that provides GPS and hydro locations as well as emergency information and building maps. Firefighters were also outfitted with new bailout systems that would allow them to escape dangerous situations in taller buildings. “This new equipment helps us stay safer, helps the village people be safe and it helps us better serve them,” said Fire Department Spokesman Aaron Lerer.

It’s so exciting to take out all the gleaming bakeware after Pesach and get back into the baking once again. I’m sure you all have your tried-and-true Shabbos cakes, but something new adds to the freshness. April 11, 2018 / THE MONSEY VIEW / 63 www.themonseyview.com / 845.600.8484
Yields 3 medium loaf pans When I was first introduced to this cake, I was told that it’s the closest thing to kokosh cake. I don’t agree with that one, but a meltaway does make a deliciously rich and heavy cake. The extra steps it requires are worthwhile.
BATTER 6 cups flour
1½ cups orange juice
3 cups sugar
2 T. flour
1¾ cups oil
4 tsp. baking powder
3 T. vanilla sugar
½ tsp. cinnamon
6 eggs
CHOCOLATE MIXTURE ¾ cup oil
1 cup cocoa
¾ cup hot water
1¼ cup confectioners’ sugar
DIRECTIONS 1. Using a beater, combine first four ingredients until crumbly. Set aside 2¼ cups of crumbs. 2. Add rest of ingredients to remaining crumbs. Mix until well-combined. 3. In a separate bowl, mix chocolate mixture. Remove 1 cup and set aside. 4. Pour remaining chocolate into batter, forming two circles around the batter. Allow to stand for 10 minutes. Gently run a knife around the chocolate to push the chocolate mixture into the batter a bit. 5. Work with one pan at a time. Place it lengthwise in front of you, and pour in a third of the batter, while moving it back and forth. This will result in a beautifully striped marble effect. 6. Sprinkle reserved crumbs over each cake. 7. Bake on 350° for 50 minutes to an hour. 8. Remove from oven and sprinkle with a heavy coating of confectioners’ sugar. 9. Put reserved chocolate mixture into a bag, snip off a tiny corner and drizzle cakes with chocolate.

This is a light and fluffy cake that does not require a snow.
BATTER 12 eggs
2. T. vanilla sugar
¾ cup orange juice
3½ cups sugar
1 cup oil
4 cups flour
4 tsp. baking powder
CINNAMON MIXTURE ½ cup brown sugar
⅓ cup flour
3 T. cinnamon
3 T. oil
1 T. coffee granules
DIRECTIONS 1. Preheat oven to 350°. 2. Beat eggs with sugars until batter is light-colored and volume increases. 3. Lower speed and slowly add oil. 4. Add flour/baking powder and juice, alternating between dry and wet ingredients and finishing with the flour mixture.
5. Place half of the batter into a lined deep 10”x16” pan.
8. Sprinkle half of the cinnamon mixture on top of batter.
6. Mix first four ingredients of the cinnamon mixture in a separate bowl.
9. Gently pour remaining batter on top of cinnamon.
7. Break coffee granules by rubbing with hands, and mix with the rest of the cinnamon mixture ingredients.
10. Sprinkle the remaining cinnamon mixture on top of batter. 11. Bake for 1 hour and 15 minutes.

This cake is half the work and double the presentation. One quick batter gives you two different cakes. They are both dense, cookie-bar style, and are the perfect yeshivah fare as they do well without a freezer.
BATTER 1¾ cups oil
2 T. vanilla sugar
2 cups sugar
5 cups flour
1¼ cups brown sugar
1 tsp. baking powder
4 eggs
1 tsp. baking soda
FOR BLONDIE Mini chocolate chips
FOR BROWNIE 1 cup dark cocoa White glaze 1 cup confectioners’ sugar 1 T. oil
2 T. hot water
DIRECTIONS 1. Preheat oven to 350°. 2. Mix oil with sugars. Add eggs and then rest of ingredients. Do not overmix. 3. Pour half of the batter into half of a cookie sheet. 4. Mix cocoa into rest of the batter and place into other half of the cookie sheet. Batters should be side by side. 5. Sprinkle mini chocolate chips over the light batter, and bake for 35-40 minutes. 6. Remove from oven and allow to cool. 7. Mix ingredients for the white glaze until smooth. Add a bit more water if necessary. 8. Pour glaze into a sandwich bag. Snip off corner and drizzle over brownie. 9. Cut blondie into bars and brownie into squares.

We all grow up with our own mesorah from our parents. Nonetheless, today people are always looking for ways to improve the chinuch of their children beyond what they themselves learned. As much as they value and follow their mesorah, people recognize the importance of remaining cognizant of the changes in society and the changes of the generation, and they adapt their chinuch accordingly. The Nesivos Shalom writes in the name of Reb Elimelech of Lizhensk, zt”l, that the pasuk in Parshas Noach, “Yeish tzaddik hoyah b’dorosav,” can be interpreted to mean that in every generation there is a root of a certain mitzvah that must be fixed more than other mitzvos. “For example,” writes Reb Elimelech, “in our generation we need to fix the mitzvah of tzitzis more than other mitzvos.” The Nesivos Shalom then explains that today we no longer have tzaddikim like Reb Elimelech, zt”l, who clearly instructed his generation in the mitzvah that required special rectification. However, we can still look for signs that will point us in the right direction. Our Sages teach us that when trying to figure out which is the specific mitzvah of the generation, people should look to see for which mitzvah there seems to be an awakening during their generation and for which one people merit siyata d’Shmaya in a very special way so that whoever works for it sees success. This would be the specific mitzvah of the generation, the one we need to concentrate on and the one that will fill our avodas Hashem with kedushah. Looking around today and seeing all the nisyonos we are having in our generation, it is clear that Yiddishe chinuch requires special focus and attention. At the same time, in today’s fast-changing and quick-paced society,
even when parents try their best, the dust that is raised by the speed with which we move seems to affect us all very much. As such, the challenges demand a constant awareness of the different types of “dust,” many of which did not even exist in previous generations and now require new chinuch tools and methods. Only through an awareness of these challenges can we prevent our generation from falling. After World War II, many Yidden lived in DP camps as they waited for someone to help them find their place on earth. In all these camps, shuls were erected for those who
spection, they could see the words written on the shmatte: Mi laHashem eilai! Just like Moshe Rabbeinu had called out after the Chet Ha’egel, the Rebbe was now calling out to his fellow survivors. Realizing what the Rebbe was representing, a group of Yidden ran toward him. They spontaneously formed a circle around him and began dancing and singing joyously. There were always different winds with “dust” blowing in different directions. As confusing as this dust can be, we parents must remember that, no matter in which direction the wind is blowing, we must act as leaders — the leaders of our children. Many times, when Hashem wanted to count Klal Yisroel, the Torah lists all the names of the families. This reminds us of our roles as parents and leaders, urging us to always remember our great responsibility to carry on the mesorah — not just as a generation of our family, but also as a generation of Klal Yisroel. About 25 years ago, on Motzei Simchas Torah, I was zoche to be in the house of the Bobover Rebbe, zt”l. When he heard that I came all the way from Lvov, Ukraine, he said, “You are the nekamah for Stalin and Hitler, yimach shemam.” I wondered what his words meant. After all, we were not the only family that survived the war. I then came to understand his words to be a mission statement. The Rebbe wanted to point out the

Then there was a group of Americans carrying their flag of freedom, which promised that anyone willing to work hard could have all their dreams fulfilled. “Build your life with your own hands!” they urged. “Become an American!” Finally, there was the Zionist group, promising freedom through the fulfillment of the dream of “Medinat Yisroel.” They promised relief from exile, a sanctuary where everyone can still be Jewish, even if they didn’t observe Shabbos or keep the Torah. All that was needed to be Jewish was a commitment to live in

There was a group of Russians promoting their version of freedom under the flag of communism. They promised a world where everything belongs to everyone and everyone can have all their needs filled, without the need to believe in anything or even know who you are. After all, everything belongs to the commu-

great responsibility each of us carries to ensure the future of our generation. Though we may stumble at times, this should be the goal we strive to achieve. In Parshas Vayeira, the Torah describes how the three malachim came to Avraham Avinu as guests and how he served them. On the pasuk that describes how Avraham sent his son Yishmael to shecht the ox, Rashi Hakadosh explains that Avraham wanted to be mechanech Yishmael in the great mitzvah of hachnosas orchim. The Gemara Bava Metzia (86b) discusses this incident and explains that Hashem repaid Avraham Avinu for each act that he did on his own by giving something to Klal Yisroel without a shliach. This Gemara teaches us an important lesson. If Avraham Avinu would shecht the ox himself, it would not only help Klal Yisroel gain another hashpa’ah directly from Hashem, but would still be considered a great chinuch moment as well. From here we see what a great responsibility we carry to teach our children by our own example. This is the most important part of Yiddishkeit. As it says in Avos: “On three things the world stands: on Torah, avodah and gemilas chasadim.” Every Yid is the world that needs to stand on those things. Every child is watching his parents closely and seeing how they behave in each of these three areas. By devoting ourselves to these mitzvos and setting an example for our children, we can influence them to also stand firmly in these areas and continue the powerful chain of mesorah. All of us need chizuk. The next few articles in this series will discuss other key factors and practical advice so that we have the tools to be mechanech our children, and with Hashem’s help, build strong Yiddishe homes.

Baking the Cake Mocha Bundt Cake The cake featured here is simple to make and delicious, but feel free to substitute with any cake of your liking. Before you begin preparing your ingredients, spray your baking pans with baking oil spray (oil combined with flour) and stick the pans into the freezer until the batter is ready. This will ensure that your cakes slide right out of their pans after they are finished baking.

• Oiling the pan is a very important step when baking cakes that will later be iced. Besides for guaranteeing that your cake comes out of the pan intact, oiling the pan also seals in the crumbs on the outside of the cake, preventing crumbs from mixing with the icing and messing up your cake. • For a taller cake you may want to make double the recipe to get at least three cakes. The extra batter can be used for cupcakes.

Preparing the Icing Classic Buttercream Icing This will give you about 5 cups of icing.

Ingredients: • 2 cups shortening • 2 tsp. vanilla extract or other flavoring • 8–9 T. water • 2 lb. (2 boxes) confectioners’ sugar
Directions: 1. Beat the shortening, flavoring and water until combined. 2. Add confectioners’ sugar and mix until all ingredients have been thoroughly combined. Blend for another minute until the icing is creamy. This will result in a medium consistency that will be just right for creating the flowers on the cake. 3. Remove 2 cups of icing and put aside. Leave remaining 3 cups in the mixer. 4. Add 3 teaspoons of water to the icing in the mixer to create a smoother consistency. This part will be used to ice the cake. 5. Cover your bowls until the icing will be used to prevent a crust from forming on your icing.

Note: To check the consistency of your icing, stick a knife or straight-edged spatula into your bowl upright and let go. In mediumconsistency icing, your knife or spatula will remain standing, though it may move a little. In smooth consistency icing, your knife or spatula will slowly fall over to the side. If your icing is too stiff, add a teaspoon of water at a time until you reached the desired consistency. If it’s too smooth, add ¼ cup of confectioners’ sugar at a time and remix.

Layering the Cake I used Baker’s Choice Nougat Schmeer ‘N Bake cream between the cakes, but feel free to use any store-bought cream or your favorite homemade recipe.
Directions: 1. Place one of your cakes on the plate or board that you want your final cake to be displayed on. If one side is bumpy and the other side is flat, place the flat side up. If your cake is higher in the middle, trim it before layering. (For easier assembly, place your cake on a Lazy Susan covered in foil or saran wrap so that it remains clean. Putting your cake on a Lazy Susan will give you easy access to all sides of your cake while you stay in place.)

2. Fold over the first 2 to 3 inches of the top of the piping bag to create a cuff, fill it with the smoother buttercream, and trim the tip. You should have an opening that is about ½ inch wide. (If you will be using a reusable bag, put a tip 9 or 10 onto the bag, or just a coupler if you don’t have tip 9 or 10.) 3. Image 1 Pipe a ring of icing around the top edge of your cake. The icing should not extend over the edge. 4. Image 2 Using a spoon, spatula or knife, completely fill the inside of the ring of icing with the cream you’d like to use in between the layers of cake.

5. Image 3 Top the creamed cake with the second cake. Make sure to keep the flat side on top. 6. Images 4 and 5 If you will be adding a third cake, repeat steps 3-5. If not, simply set the cake aside until you’re ready to ice it.

Icing the Cake To achieve the monochromatic (same color in different shades) look this cake features, follow the instructions below. (If you prefer to use one color instead, follow the instructions up until step 7, and simply cover the entire cake and not just one-third. Then continue with steps 15–20.) This part is most likely the most difficult part of the entire project, so don’t become intimidated if you find it less thrilling than you’ve imagined; it’ll be a lot more fun soon! Some professionals ice their cakes twice purposely. While the first layer locks in all the crumbs and may have crumbs mixed into the cream, the second layer is the pretty, clean layer that guests will see. If you find yourself struggling to keep the crumbs away, know that you can always do one thin layer, in white icing, all around your cake, wait until it dries, and then continue with the second and final thick layer of icing. If you choose to ice your cake twice, prepare an additional half of the icing recipe above.

1. Refill the bag you used with the smoother cream (or just start another bag). If you used a disposable bag, cut the hole bigger so that you have a hole that is ¾ to 1 inch wide. (If you will be using a reusable bag, use the bag without any tip or coupler on it.) 2. Image 6 Pipe rings of icing on top of your cake starting from the outside in until the entire surface is 85 to 90 percent covered in icing. It is okay if there are some spaces between rings of icing.

3. Using a straight-edged spatula, or the straight edge of a butter knife if you don’t have a spatula, slowly flatten and smooth the icing on the surface of your cake. Be very gentle when you do this, and don’t flatten your cream all the way down to the cake. You should do this using a back-and-forth motion rather than big strokes across the entire cake. If you spot any crumb that got into the cream, remove it right away. The icing doesn’t have to look perfect yet, though; we will get back to perfecting it at a later point during the icing process. 4. If your bag needs a refill, fill it up with more cream now.

5. Image 7 Pipe a ring of icing around the sides of your cake. The ring should be a bit below the top of the cake. If your cake is a tall one, you should pipe a second ring of icing a bit below the first ring of icing. 6. Image 8 Holding your spatula at a 90-degree angle (straight up), flatten the icing around the sides of your cake. Move your spatula in gentle back-andforth strokes and make sure to cover the area all around your cake. There is no need to flatten the

cream because only the top third needs to be covered at this point, though it’s okay if a little more gets covered. 7. Image 9 After you finish step 6 you may notice an extra crown of icing adorning the top of your cake. Use your spatula to flatten that crown, and re-smooth the top a final time if you find it necessary. 8. Divide the remaining smooth icing into two parts; one part should have slightly more than the other part. 9. Tint the larger part peach. To get the peach color in the featured cake, color the icing pink first, and then add yellow, a bit at a time, until you’re happy with the color. 10. Take a bit of the peach icing you just prepared and mix it with the other part of white icing. You should now have icing in two shades of peach. 11. Put one part icing into one piping bag and the other part into another piping bag. 12. Image 10 Starting with the lighter shade, pipe rings of icing around the cake to cover the second third of the sides of your cake. 13. Image 11 Using your spatula in a back-and-forth motion, flatten and smooth the icing all around your cake. 14. Take the darker shade of icing and repeat steps 12 and 13. 15. Image 12 Take a spatula, preferably one that is as tall as or taller than your cake, and smooth the icing around your cake until you see one flat layer. You should do this with gentle back-and-forth strokes. You may need to apply pressure to flatten bumps and the divisions between colors, but remember that being gentle is the key here. 16. Let your cake set until it is clean to the touch, which means that your finger won’t get cream on it (though grease is fine) when you touch it. 17. Images 13 and 14 Once the cake has set, cut a piece of parchment paper that is slightly larger than

the top of your cake. Gently place the parchment paper on top of your cake, and using your spatula, lightly press the cream down all over. Don’t apply too much pressure, but do press down to smooth the bumps on the cake. The top of your cake might be ready before the sides so you can do the top and wait before doing the rest. 18. Carefully peel off the parchment paper. 19. Cut another piece of parchment paper that is a bit taller than the height of your cake. Place this piece around your cake. It should hug the walls of your cake, though it doesn’t need to go all the way around. 20. Image 15 Take your spatula, and hold the thin side against your cake. Smooth the icing all around your cake, pressing gently, and then peel off the parchment paper. Repeat until the icing all around your cake has been smoothed.

Decorating the Cake Now that your cake is completely iced, you’re ready for the really fun part! This cake features a variety of drop flowers and stars. Drop flowers are created by using a specially designed drop flower tip. All you need to do is squeeze cream once to get a flower. You may choose to copy the cake featured or play around with your own tips to create your own design. You definitely do not need the variety of tips that have been used in the pictured cake to achieve pretty results. If you’ve never created drop flowers before, practice making some flowers on a different surface before you begin piping flowers onto your cake.
Directions: 1. Start by dividing the 2 cups of medium-consistency cream that you’ve prepared earlier into as many bowls as colors you’d like to use. 2. Color the icing in each bowl. 3. Tips 2D and 2F will create bigger flowers and should be placed directly into the bag without a coupler. Once the tip is in the bag, trim the tip of the bag to expose about a third of the tip. 4. Create a cuff and fill the bags with the colors you’d like the big flowers to be. 5. Images 16 and 17 Start by piping flowers in random places in an imaginary moon shape framing your cake. 6. Image 18 To create the flowers pictured in the
first, third and fifth row, simply squeeze cream out of the bag, release the pressure, and lift the bag. 7. To create the flowers pictured in the second, fourth and sixth row, squeeze cream out of the bag while simultaneously turning the bag clockwise from an imaginary 12:00 to 3:00. 8. For the remaining smaller tips, you may use a coupler if you have one, or simply put the tip into the bag and trim the tip of the bag to expose a third of the tip. 9. Image 19 Fill each bag with the color you’d like to use, and pipe smaller flowers and stars onto the top of your cake to fill in the imaginary moon shape framing your cake. 10. Using tip 2 or 3, pipe dots in the center of each flower to complete the cake.
Now step back to admire your beautiful creation and share the delicious results with some privileged individuals! You will notice the colors of your icing darkening as time passes; even a day will make a difference. Therefore, be sure to use the cake within a day or two. Store the cake at room temperature in an airtight container. Do not freeze.

MONSEY – Seven years ago, Harvard psychologist David H. Rosmarin, Ph.D., arrived in Manhattan to provide a haven of evidence-based treatment based on spirituality. ALL GOOD THINGS TAKE TIME Watching your little mischievous toddlers turn into mature, successful people, designing your much longed-for dream kitchen — and baking bread. Yup, baking bread. A really good batch can take up to ten days! Before you officially delegate me to the shlimazel and dysfunctional balebuste category, let me clarify: Sourdough bread, unlike its standard counterpart, needs time to cultivate and grow before it can be baked into those heavenly, scrumptious loaves. WHAT’S THE BIG DEAL? Let’s contrast modern bread-baking with traditional sourdough bread. In standard bread-baking, people purchase a laboratory-produced, selected strain of yeast, called baker’s yeast, or active dry yeast. This yeast isn’t the greatest option for bread-making. First, bread made from commercial yeast easily becomes stale. More importantly, it has to work quickly or it gets overtaken by wild organisms. Also, it is pretty picky about its environment, and will only work well in one

that’s optimal; the temperature must be just right and it can’t abide acidity, so you won’t have the presence of lactobacilli. Consequently, bread made with baker’s yeast won’t offer the neutralization of phytic acid or enzyme inhibitors, because that job is performed by the lactobacilli. On the other hand, consider the yeasts (and accompanying bacteria) that produce sourdough bread. It is an ecosystem of wild yeasts and beneficial bacteria that work together to add B vitamins to grains, break down gluten for better digestion, and neutralize phytic acid and enzyme inhibitors. The sourdough starter’s organisms are much more versatile with regard to temperature or other conditions, and the bread doesn’t get stale as quickly. The bottom line? The fermentation process pre-digests the flour, releases vitamins, minerals and other nutrients, and adds enzymes and probiotic bacteria into the finished product. Baked goods made out of sourdough is easy to digests for babies, the elderly and often, even for people who are intolerant to gluten.
STARTING YOUR STARTER All sourdough foods begin with a sourdough starter: an active colony of wild yeasts and lactobacilli suspended in a batter of flour and water. Begin by gathering your materials. For your sourdough adventure, you will need: 1. Water. To begin a starter, I encourage you to use mineral-rich, filtered, chlorine-free water. You might be able to make it work with tap water, but it’s always wise to give the starter the very best environment in which to grow. 2. Flour. Organic, whole flour is always a better option, but not necessary. The best results for a sourdough starter are attained with rye flour, but really any type of flour can be used. 3. Container. Initially, you will be working with small amounts of flour and water. Using a small glass jar allows for easier stirring and provides the perfect window for bubble-watching! Later on you will need to transfer it to a gallon-sized jar or bowl. 4. Utensils. You will be doing a lot of stirring, so get out that vintage wooden spoon. Technically, you can use any spoon from your silverware, but I do recommend that you stay away from reactive metals such as copper, brass, aluminum, iron and lead.
Ready, set, go! Take ¼ cup water and 3/8 cup (¼ cup + 1/8 cup) flour and mix them well in the small jar. Cover the jar loosely with a thin cloth, and put it in a warm place, between 65

and 85 degrees Fahrenheit. After 12 hours, you might be able to see a few bubbles in the mixture, as the yeasts and bacteria have multiplied. This is all happening at a microscopic level, and there are so many yeasts we couldn’t possibly count them! But it’s not nearly enough for a strong culture, so we must feed our starter to keep the yeasts multiplying. Do so by adding ¼ cup water and mixing it in well. Then, add 3/8 cup flour and mix vigorously. Loosely cover the mixture and put it in a warm place for another 12 hours. At the end of this second 12-hour shift, there will be more than sixty times the amount of yeasts and bacteria as before! Still, we need a higher concentration of yeasts. To keep the starter from overtaking the house, discard half of the mixture before feeding it for this third shift. Add the previous amount of water and flour, stirring well. After another 12-hour period, there will be more than 15 million organisms in the starter! Once again, discard half, add water and flour, and stir. After the fourth feeding, it will have over 850 million live organisms. Continue with this routine every 12 hours until your starter consistently shows signs of frothy, bubbly life, grows double in size between each feeding, and is at least one week old. Your sourdough starter is now ready to use! Your starter will become, in a way, like a special member of the family. You feed it, watch it grow, and this living, thriving, bubbling pot of goodness can bring much delight. Note: If, after day three or more, your starter does not show much activity by 12 hours after its discard/feeding, try giving it a good stir without discarding and feeding. Sometimes this pause gives the organisms a chance to catch up and the starter an opportunity to take off.

Let’s Bake! Patience is key when baking sourdough bread. You wait for the starter to mature. You wait for the dough to rise. Sometimes you have to wait longer than the recipe says and daven a little. The end result, though, is well worth it.
Honey Whole Wheat Bread Yields two loaves Ingredients • 1½ cups sourdough starter (any starter works for this recipe; rye, whole wheat, spelt, etc.) • 2 cups water • ¼ cup honey • 2 large eggs • 6 T. coconut or palm oil (or oil of choice) • 6 cups (divided) whole wheat flour, plus extra for kneading (this recipe is very versatile; any flour can be used, even combinations of different types of flours) • 2 tsp. sea salt Directions 1. The night before you plan to bake, make a sponge by mixing the starter with the water and 3 cups of flour. Cover and leave at room temperature overnight. 2. The next morning, stir the sponge before beginning. Then add in the honey and eggs, stirring until incorporated. 3. Add the remaining flour, salt and oil, and use a stand mixer with a dough hook to fully mix the ingredients. 4. Allow the mixer to knead the dough for 7–10 minutes, adding more flour as necessary. The dough should still be sticky and pourable, nothing like conventional bread dough. 5. Cover the dough with a towel and set it aside to rise. Sourdough takes longer to rise than commercial yeast, so expect it to take anywhere from 2 to 6 hours, depending on the strength of the starter and the heat in your kitchen. Have patience! 6. Oil two small loaf pans (8”x4” is best, but 9”x5” also works; the narrower, the better). 7. Once the dough has doubled in size, pour it into the loaf pans. Cover the pans and put them in a warm place to rise again. 8. When the dough has risen at least to the top of the pans (it takes 1½ to 3 hours), position a rack in the middle of the oven and preheat to 375°. 9. With a sharp knife, slash the top of the loaves down the center, then bake until they are honey brown, 35–40 minutes. Be careful not to overbake this bread or it will be dry. 10. Carefully remove the loaves from the pans and let cool completely on wire racks before slicing. Storage: To keep the crust crunchy, just store the entire loaf out in the air. Once cut, you can stand it on the cut end to keep it fresh, or just give up on crunchy crusts and put it all in a bag or other airtight storage. The loaves last one to two weeks at room temperature, depending on the heat and humidity in your house. It also freezes well.

It wasn’t exactly a cause for celebration, but what was probably the most infamous presidential scandal actually has a cake named for it. The Watergate Cake, which was introduced during the Watergate scandal, is full of pistachio nuts with a “cover-up” icing and was all the rage while Nixon was getting dragged through the mud.
The world’s tallest cake stood 108 feet and 3 inches high. It was made in Indonesia by the students of HakasimaNilasari Culinary School.
The Bundt cake has its origins in Yiddish communities in Eastern Europe. In Germany it is traditionally known as bundkuchen (a ring of cake) and is referred to as bund in most JewishAmerican cookbooks of the 20th Century. That’s where Nordic Ware derived the name they gave their pan — Bundt — which became popular in the U.S. in the 1960s.
Due to rising obesity rates, about 29% of U.S. school districts have banned bake sales.
The world’s most expensive cake was baked by Debbie Wingham for a wealthy Arab family. At six feet long, handcrafted with minute edible details and studded with 4,000 diamonds, it was valued at $75 million! (Interestingly enough, the cake’s maker also holds the record for the most expensive dress made, at $5.7 million.)
When President Trump unveiled his inauguration cake, Americans had what to talk about for days, as it was nearly identical to the cake presented at former President Obama’s inaugural event. The owner of Washington’s Buttercream Bakeshop admitted that she was the one to create the cake, and that she had been commissioned to recreate Obama’s cake. TRUMP’S CAKE

The cupcake got its name from its ingredients, which were originally measured by the cupful: 1 cup butter, 2 cups sugar, 3 cups flour and 4 eggs. They were also known as “number cakes” or “1-2-3-4 cakes” for this reason. FUN FICTION
What you learned in history class unfortunately seems to be a legend with no basis, according to historians. During the French Revolution, when told that her subjects had no bread, Queen Marie Antoinette is known to have said, “Qu’ils mangent de la brioche” (Let them eat cake). Besides for there being no evidence of her saying this, its improbably is further reinforced by the facts that this quote was around years before her time, and brioche is translated, not as cake, but as a sweet French breakfast bread. “Piece of cake” This idiom, used to express that something is easy or effortless to accomplish, originated in the 1870s when cakes were the reward for winning competitions.
“You can’t have your cake and eat it (too)” A variation of this idiomatic proverb dates back to 1583, when the Duke of Norfolk wrote in a letter that “a man can’t have his cake and eat his cake.” This is used to express the unrealistic expectation of desiring two incompatible things or getting more than is deserved or reasonable, just like you can’t keep your cake and eat it, because once eaten, it is gone.
“Take the cake” While this idiom most definitely has a negative, sarcastic connotation, as in, “That flop just takes the cake,” depicting something outrageously bad, originally, to “take the cake” meant to win a prize.
“Icing/frosting on the cake” This idiom is used when a great enhancement is added to a situation or thing that was already awesome, and is as old as the concept of frosting cakes is.
