(Re: Cover, Issue 180) To the editor of a very successful publication that is awaited every week, The Monsey View is certainly a very tastefully presented publication that our family enjoys very much. More importantly, it covers, week after week, very important and useful subjects with loads of valuable information. Last but not least is that everything is scrutinized so that it is appropriate for our community. Last week’s topic was certainly no exception. Advice for the queens of our families — who are heroically raising the new generation of servants of Hashem, our wonderful children, with nonstop devotion and endless self-sacrifice — is surely of the most important topics to cover. But allow me to say that I would have preferred a different title than “Surviving the Younger Years [B’simcha].” Surviving something gives the connotation of some calamity that has befallen the person, which he has to survive. If he were to make an effort, he would do it b’simcha, and that would make it easier. But this is very far from what it is. Child-raising is in most cases the primary tafkid of the Jewish mother, her main life’s accomplishment, and is a holy avodah. In many cases it takes a major effort, but it’s the biggest fulfillment that there could be. It’s not something we have to survive so we can move on to the real things. In addition, it is not something that is relegated only to the younger years. It’s so big...” “Well, you wait for the children to get married and bring their families,” quipped Miriam. “You know what I mean,” Leah said. “I always dreamed of having a full table. Tzvi is amazing at the Shabbos table, from the way he quizzes the children on the parsha in such a fun way, to his singing, to his inspiring divrei Torah. Why should only my immediate family benefit from what he quite literally brings to the table?” “You forgot to mention your famous cooking, Leah,” added Miriam. “What you bring to the table is incredible as well! All the women in the neighborhood know to call you when they need an award-winning recipe.” “Thank you, Miriam.” Leah blushed at the compliment. “I do think our Shabbos table could benefit others, but nobody ever asked to join us. Take Mrs. Klein down the street. Mrs. Klein lives all alone, and at her age I’m sure she isn’t cooking much. But even if she does, doesn’t she get lonely? I bump into her all the time, but she never asks to come for a meal. I’ve always wondered about that.” Leah paused and then continued, “And then there’s Chavy. I admire so much Chavy’s mesiras nefesh as a giyores, and I know that she would enjoy a lively Shabbos seudah... If, as you say, my home is so well known, why doesn’t Chavy ever ask to come for Shabbos?” “It’s good that you asked me this today and not yesterday, because yesterday I would have been clueless about how to answer you. But thankfully, today I do have an answer,” said Miriam. “Great,” said Leah,“and what’s the answer?” “Well, I attended my weekly parsha shiur with Rebbetzin Miller this morning,” answered Miriam. “She said that in this week’s parsha, Hashem instructs Moshe to tell Bnei Yisroel that each household should take a lamb for the Korban Pesach, and they must eat the entire lamb. But if the household is too small to finish the entire

lamb, they should gather neighbors to join them in eating the lamb. You see, sometimes there are neighbors who are too poor to buy their own lamb, or they live alone and could not possibly eat the meat of an entire lamb all by themselves..” “Just like Mrs. Klein and Chavy, in my case,” nodded Leah. “So what does it mean for me?” Miriam continued, “Well, Rebbetzin Miller pointed out that the exact lashon here says that the neighbor who had the lamb invited the others to join, and not the other way around. The Torah did not command everyone to partake of the Korban Pesach and then say that those who cannot afford one or who are too few in number to eat one should find a neighbor whom they can join. No, the Torah commanded that everyone must partake of the Pesach lamb, and then the Torah instructs that those who have one must reach out to those who need one.” “So really I should be reaching out to Mrs. Klein and to Chavy, and not the other way around,” realized Leah. “Miriam, thank you so much for pointing this out. I don’t know why I never thought of this.” “Well, Leah, it’s just like Rebbetzin Miller said. I went to the shiur and I now had the knowledge, so I had to invite you, my neighbor, to share it with me,” joked Miriam. “Except that I did ask,” Leah joked back. “But seriously, I really want to thank you. Not only will my table hopefully be full thanks to you, but I will be filling it the right way, by reaching out to my neighbors in need rather than waiting for them to reach out to me.” “I am learning from you, too, Leah,” added Miriam. “I never thought my Shabbos table was all that amazing, but for someone who would otherwise be alone, or for someone who just wants to enjoy, it’s good enough. I will be reaching out to others, too.” “Well, look at us,” said Leah. “If this spreads around Klal Yisroel, soon we will be zoche to eat the Korban Pesach in Yerushalayim ir hakodesh!” “Amen, and may it be this year!”

Living a life where you are racing against the clock so you can get your “to do list” done before you collapse into bed only to start another day costs you way more in the long run than taking out 6-10 hours a week so you can live a healthy life. I get it. Life is stressful. Going to work so you can provide for your family is a full time job. Even if you did have time, which you don’t, who has patience to go to the gym? And let us not forget running a household, getting meals on the table and making sure the kids are safe and alive is a full time job within itself. There simply isn't any time for yourself. These are all valid points but let me ask you this: How effective do you think you could be as a person, a mother/father, husband/wife when you aren't giving your body the essentials it needs to function well? Living off a couple of hours of sleep only to wake up to ride the roller coaster of stress, which we call life; while being on a diet that consist of 3-7 cups of coffee with a side of cake. It’s amazing we are able to function as well as we are! Unfortunately that may be a problem. A lot of people have caught themselves thinking, “Look at me, I only get a couple of hours of sleep. I don't eat much and it has been working out for 20 years of my life. Why on earth should I start now?” Some of us have even started to feel like we are invincible.. Just because you are functioning at the moment doesn't mean you are doing your best.

With your calendar booked up with meetings it may seem like there is no way you can live more healthily. You should know there are a couple of strategies you can do to help slide in health without disrupting your day. Those tools and more will be much of what we will be discussing in future articles. In today’s article I want to discuss with you the foundation to time management. The foundation that is needed in order to make time management strategies work. A coupe of weeks back we discussed a concept that stated, “the problem is rarely the problem the problem is the way we view the problem”. You remember that? Anyway, I would like to bring that concept up and apply it to the problem of time. The problem is not that we don't have time. The problem is the way we view time. Most of us look at time as something that is fleeting by. We are watching the clock, counting the minutes until we finally get to relax. Then there are other people who believe that you only get one shot. You better make every moment count. Both look at the clock as something that is fleeting by us and there is nothing we can do about it. We are literally racing against the clock. What if time is more than just a fleeting moment? What if time is more than something we just watch as everything around us changes? The paradox that is time is that it isn't something that needs to be managed. Time is something that manages you.

can recharge your batteries. Our to do list could easily rack up to 30+ hours per day but the problem is that we only have 24 hours in the day. How do you fit 30+ hours of work in a 24 hour day? You don’t. You prioritize. You allocate time to the things that are most important to you and whatever else doesn't fit into your day either you delegate it to someone else, it goes on the next day (if it takes a high priority then), or you simply say “no” to the project. The problem is that most people don't schedule their day. They let their day schedule them. From the moment we wake up till the moment we go to sleep we let our meetings and other people dictate where and what we should be doing. No matter what stage of life you are in, your time is something that only you have control over. The reason why it seems like you have no time in the world for anything is because you haven't made time for anything in the world. Hey, I understand. I get the appeal to feeling busy. You’re important. It feels good. It feels nice. Some even convince themselves that they are being proactive (this is for another day). Of all the stories you hear about people on their death bed. How many have said “Oh I wish I spend another hour at work?” Unfortunately we as humans always wait till the last minute to do something. Remember, time is the most valuable thing we as humans have. Don't wait until there is nothing you can do to take control over your life. Start to take control over your time today. As soon as people take control over their time they notice things fall into place with more efficiently than just being “busy”.

From taking care of the family, to bringing in an income so we can pay the bills, to putting in the time to become a better Yid.

The first step in gaining control over your time is recognizing that time is not something that needs to be managed. It is something that manages you and your priorities.

One day, Rabbi Dovid Aron Frankl pulled up in front of his home to a sight that piqued his curiosity. A young boy from the neighborhood, just 10 years old, sat hunched over a scrap piece of wood, hammer in hand, intently banging into it nail after nail. His face was set in a scowl, part intense concentration, part distress. Attuned to children, Rabbi Frankl bent down to the boy’s level and inquired what it was that he was doing. Was he working on some project? The boys lifted his eyes, a storm brewing in their depths. “My rebbi sent me to the menahel today, because… I did something,” he blurted out, and continued to share what a miserable day he’d had, and that he was now letting out his frustration with the materials in his hand. And what if he would be left, not with a useless scrap of wood, but a shtender on which to learn? Rabbi Frankl wondered as he parted from the child with a few encouraging words. And there, on the stoop in front of his home, an idea was born.

A PLACE TO RECHARGE A mechanech with years of experience working with teens in local yeshivos, Rabbi Frankl envisioned setting up a sanctuary for children, a place flowing with positive energy where they could recharge and acquire skills in productive recreation. Rabbi Frankl wanted the chance to instill in children success and build their confidence, all while gently guiding them, stroke by loving stroke. “Many children don’t know what success is, how success feels,” Rabbi Frankl says, explaining that most children who struggle simply have not been taught another way. “And when a child tastes success, knows how good it feels, suddenly he wants to know success in a blatt Gemara, too.”

ANSWERING THE CALL Rabbi Frankl posed the idea to rabbanim and mechanchim, and the response was passionate. Not only did he get heartfelt haskamos, but each Torah leader and mechanech urged him to launch this much-needed endeavor. Giving them a productive outlet changes children — and Mein Platz can attest to that every day. From the start and throughout its operation, Rabbi Frankl has been discussing every step with

Village of Kaser Mourns the Passing of Mayor Berel Rosenfeld The streets of Kaser were packed with men, women and schoolchildren last week as hundreds turned out to give kavod acharon to R’ Berel Rosenfeld, who served as the village’s mayor since it was established in 1990. R’ Rosenfeld, who had been suffering from cancer, was niftar on December 30 in Cleveland, where he had gone for treatment. The Ramapo Police Department was on hand to ensure that traffic proceeded smoothly during the levayah, which was routed through the village and stopped at three yeshivos before heading north on Route 306 to the Viznitz beis olam. R’ Rosenfeld was remembered warmly by community leaders and elected officials. “He was a very, very genuine, honest, good person,” said Mayor Israel Spitzer of New Square. “His whole life was community work, giving of himself to others.” County Executive Ed Day offered his sympathies in a written statement that read, “I found Mayor Rosen-

feld to be a fully engaged leader who cared deeply about the needs of his community. Since first becoming mayor he worked tirelessly in the service of the people of Kaser. I extend my deepest condolences to his friends and family and to the residents of Kaser who knew him best." A statement released by Town of Ramapo Supervisor Michael Specht described R’ Rosenfeld, who moved to Monsey in 1965, as a leader, an educator and a dedicated public servant. Legislator Aron Wieder spoke of R’ Rosenfeld’s many years with the Viznitz school system, starting as a teacher before moving on to become the principal and then the administrator. “He was a smart, refined and genuinely nice person,” said Wieder. The next mayor of Kaser will be chosen during the upcoming elections to be held in March.

Third Stage of Staggered Statewide Minimum Wage Hike Now in Effect The next stage of Governor Andrew Cuomo’s minimum wage rate schedule went into effect as of December 31, part of a multi-year plan to raise base salaries to $15 per hour across the state. The pay hike is the third in a plan enacted by the governor in 2016, with each increase going into effect on the last day of the calendar year. While New York City businesses that employ 11 or more workers will now be paying a $15 per hour minimum wage, smaller businesses in the five boroughs have another year until they hit the $15 mark. The minimum wage in Westchester and on Long Island has risen to $12 an hour, and will continue going up $1 each year until it hits $15 in 2021. In all other counties in New York State, including Rockland, minimum wage is now at $11.10 per hour and will rise incrementally by 70 cents per year through December 31, 2020, when it will hit $12.50 per hour. As of 2021, further increases will be scheduled by the Director of the Division of Budget in consultation with the Department of Labor and will be based on economic factors, including the

Consumer Price Index, until minimum wage reaches the $15 per hour mark. The new minimum wage standards represent economic justice, said Cuomo. “We will always stand with the working women and men of New York, and with this historic minimum wage increase, we have taken another step forward in the fight for the dignity and respect of hardworking families,” announced Cuomo.

This recipe freezes beautifully. Defrost and rewarm on a low flame or in the microwave.

MEATBALLS

Chicken Meatballs

DIRECTIONS

2 lb. ground white chicken

1. In a large bowl combine the eggs, salt, pepper and sugar.

2. Place the rice and water in a microwave-safe bowl. Cover almost completely and microwave on high for 3 minutes. Remove from microwave and let stand for about 2 more minutes. Drain any water that wasn't absorbed in the rice, and add the rice to the egg mixture.

½ tsp. salt ¼ tsp. black pepper ½ cup sugar ½ cup Carolina rice 1½ cups water Small-medium onion, finely diced

SAUCE 2 bottles (64 oz.) B'gan tomato juice 1–1¼ cups sugar ½ tsp. salt ¼ –½ tsp. black pepper

3. Add the onion and then the ground chicken. Mix until everything is combined. 4. Refrigerate the mixture for a few hours or overnight. (This step is important because ground chicken is a lot looser than ground beef or other meats. Refrigerating the mixture makes it firm so you can form neater balls. If upon removal from the fridge you realize that the mixture is still too loose to form balls, just add ¼ cup breadcrumbs and refrigerate for another 30 minutes to an hour.) 5. To make the sauce, in a 6- or 8-quart pot, combine the tomato juice, sugar, salt and pepper. Bring to a boil. 6. Take a scoop of the chicken mixture into slightly wet hands and form into a ball. Drop it into the boiling tomato juice. (I use the size 20 scoop. It holds about 2–2½ tablespoons of the mixture and forms beautifully sized meatballs.) 7. When all of the balls are in the pot, reduce the flame to low-medium and cook, covered, for 1½ hours.



These burgers are one of the easiest suppers to serve. They are delicious fresh out of the pan and also at room temperature, making it a fabulous food for when on the go. This recipe is best frozen before it is fried. Defrost and remix before frying. Ready burgers will stay fresh in the fridge up to a week.

INGREDIENTS 2 lb. ground white chicken 4 eggs ¼ cup oil 1 tsp. salt 1 tsp. paprika ½ tsp. black pepper ½ cup breadcrumbs Oil for frying

DIRECTIONS 1. Combine eggs, oil, salt, paprika and black pepper. Mix well. 2. Add breadcrumbs and mix well. 3. Add ground chicken and mix until combined. 4. Heat about ¼ inch of oil in a large frying pan or skillet. (I use a grill pan — it forms darker lines on the chicken burger, creating a gourmet effect.) 5. Drop scoops of chicken mixture into the hot oil. Fry on medium flame for about 4 minutes on each side, until golden brown. (I use the size 12 scoop.) 6. Place on paper towel–lined foil pan to cool.

Or are they rather benign foods that have been maligned for no good reason? If you’ve ever made a barbecue, you know there are certain staples that must be featured prominently at the meal. Steak. Cutlets. Hot dogs. A hefty amount of ketchup. But in recent years, the star of the barbecue — those all-American hot dogs — have come under heat, with word on the street being that this is one dog that just might bite back. But is it all hype? Or is there really cause for concern?

WHAT’S THE DEAL WITH THE DOG? Pick up any package of hot dogs or cold cuts and read through the ingredient list. The words “sodium nitrite” are found pretty much on all of them. But what is sodium nitrite? Simply put, sodium nitrite (and it’s cousin, sodium nitrate, which converts to sodium nitrite inside the body) is a form of salt, and a useful one at that. For thousands of years, before the invention of refrigeration, mankind used salts to preserve meat and prevent spoilage. In recent years, both sodium nitrite and sodium nitrate have been used as preservatives due to their ability to prevent meat from becoming infected with Clostridium botulinum, an extremely dangerous bacterium that causes paralysis. Additionally, sodium nitrate occurs naturally within many vegetables, the top qualifiers being beets, spinach, carrots, radishes and cabbage. The truth is, for many people, these naturally-occurring nitrates are extremely healthy. That’s because sodium nitrate converts in the body to sodium nitrite, which then is absorbed and produces nitric oxide. Nitric oxide is a gas that is important for certain functions of the body, including proper blood vessel action. It is a vasodilator, meaning it causes the blood vessels to relax and blood flow to increase. For this

reason, vegetables high in nitrates are recommended to be consumed frequently by those with hypertension. So what’s the concern? There are two issues with nitrates: nitrate toxicity and nitrosamines. Let’s break it down.

NITRATE TOXICITY An overabundance of consumed nitrates/nitrites can be lethal if not treated in time. The most common form of nitrate poisoning is known as Blue Baby Syndrome, in which an infant develops cyanosis (a blue or gray tinge to the skin) due to the concentration of nitrates affecting the ability of red blood cells to effectively carry oxygen. Infants under six months are most at risk of developing nitrate poisoning, and this usually occurs when an infant is fed formula mixed with water that is high in nitrates. According to a water report issued by Suez in May of 2017, Monsey and Spring Valley water is considered medium-high to high in concentration of nitrates. However, water supplied to the public undergoes treatment that lowers the the nitrate contamination levels. Private well water, though, may have higher concentrations of nitrates and other contaminants and should be frequently tested and treated by those who source their water privately. um nitrate been used. But is that bad? Assuming toxic nitrate levels are avoided, nitrates themselves appear to be little cause for fear. It’s actually nitrosamines that are the culprit in cured meats. What are those, you ask? Nitrosamines are chemical compounds formed under specific conditions when nitrates and amino acids (which are found inside proteins, such as meat) are present. Highly acidic environments and high heat are one of the best ways to nurture the presence of nitrosamines. Not that you want to. Nitrosamines are carcinogenic, meaning they are known to cause cancer. In fact, because of nitrosamines, the International Agency for Research on Cancer classifies processed meats as a class 1 carcinogen, right up there with asbestos and tobacco. But hold it! Does that mean one hot dog will send a person to the hospital? Or two? Or ten? Not necessarily. Also on the list of class 1 carcinogens are outdoor air pollution, diesel exhaust, Epstein-Barr virus, wood dust, being a painter and working in Coke production. At the end of the day, studies have revealed what seem to be minor increases for the risk of developing various cancers when cured meats are consumed on a frequent (as in daily) basis. Inclusion on the list of carcinogens reveals little about the various factors that set a person up for developing a dreaded disease, such as frequency of exposure, type of exposure, genetic traits that make one more or less susceptible to contracting cancer, and so on. Limited data exists on how much, or if any, increased risk of cancer the infrequent consumer of cured meats has. What we do know is that we can take measures to decrease risk factors, such as limiting consumption of cured meats to an infrequent basis, cooking “low and slow� rather than over high heat (i.e., boiling instead of pan frying or barbecuing) and eating something that contains vitamin C together with our meat, as vitamin C reduces the formation of nitrosamines.

OTHER CONCERNS Despite the lack of evidence proving that cured meats should be completely removed from the diet and not just limited, a new study from Johns Hopkins alludes to nitrates having a far vaster reach on our bodies than

previously thought. Analyzing the data of ten years’ worth of patients hospitalized for mania, there was notable occurrence of patient consumption of cured meats prior to the onset of a bout of mania. Details such as when and how much of the meat was consumed were not available, leading to a significant lack of study conclusions, but a whole slew of questions. To delve into the topic more deeply, researchers at Johns Hopkins followed up with a study on rats and nitrate consumption. Healthy rats were divided into two groups, one which received typical rat chow, and the other which received both rat chow and a stick of nitrate-prepared beef jerky every other day. Significantly, the ratio of nitrates ingested by the rats was scaled to their level to be comparable to that of which a human might eat as a snack, such as in a stick of jerky or in one hot dog. “We tried to make sure the amount of nitrate used in the experiment was in the range of what people might reasonably be eating,” Robert Yolken, M.D., and researcher said. Interestingly, within two weeks, the rats receiving the every-other-day snack of nitrate-prepared jerky began to show irregular sleep patterns and hyperactivity, similar to the patterns seen in patients during manic episodes. Results were then replicated in two other studies in which the groups were fed either nitrate-prepared jerky or nitrate-free jerky, and either regular rat chow or nitrate-laced rat chow. The bacteria in the rats gut’s were also examined, and notably, the rats fed nitrates had different patterns of bacteria than rats who’d never had nitrates. The same group of researchers conducted a separate study in which people with bipolar disorder were given probiotics following a manic episode, and found that they were less likely to be rehospitalized within a six-month period than those who were not given probiotics, leading to the suggestion that the brain-gut connection in various psychological disorders is perhaps more important than ever realized, and that nitrates may somehow affect that balance. Or course, these studies were but small-scale and limited, leading to more questions than conclusions, but they suggest that perhaps nitrates, specifically those from cured meats, may affect the bacteria in one’s gut, and if other parts of the equation are right, one’s chances of running into a manic situation. “It’s clear that mania is a complex neuropsychiatric state, and that both genetic vulnerabilities and environmental factors are likely involved in the emergence and severity of bipolar disorder and associated manic episodes,” said Khambadkone, one of the researchers. Migraines, too, seem to be affected by nitrates, this time in direct relation to the vasodilating effect caused by the production of nitric oxide, which can increase blood flow to the brain, thereby exacerbating migraines.

TAKE-HOME MESSAGE While it seems safe to say that cured meats can be consumed as a oncein-a-while snack (together with an orange or other vitamin C-laden food), certain populations, such as those who suffer from manic spells or migraines, might do well to even further limit consumption until more studies are done on the connection between nitrates and various conditions.

Packed with protein and boasting an impressive shelf life, beef jerky is a classic snack that’s great to have on hand. Though it’s thought to be a highly complicated process, making jerky on your own is really simpler than you’d think, and it’s a process worth mastering. THE MONSEY VIEW / 105


CHOOSING THE MEAT: You want to start with a lean cut of meat that has as little fat as possible. Fat spoils jerky — so the less fat, the longer the shelf life. You may want to ask your butcher to cut the meat for you — along the grain for chewier, tougher jerky or against the grain for more brittle, tender jerky. I used Chinese pepper steak as recommended by my butcher. If you plan to cut the meat yourself, partially freezing it beforehand makes it easier to get thinner, more even slices.

PREPARING THE MEAT: 1. Trim away as much fat as possible.

DRYING PROCESS: 1. Line the

lower rack with aluminum foil or an oven liner to catch drippings during the drying process.

Using a meat mallet, gently pound the meat. (Optional)

Remove rack from oven and preheat oven to 300°.

Remove meat from marinade and dry very well with paper towel. Either lay the slices across the rack or use skewers to hang them (as pictured).

Prepare the marinade in a Ziploc bag or glass container and add meat slices. Ensure that every slice is covered in marinade. Marinate the meat overnight in the refrigerator.

Lower oven to 170° and carefully slide the rack into the oven.

5. Drying will take between 3 and 6 hours, depending

on the oven and meat thickness. Jerky is ready when the outer fibers crack when bending, but the piece itself doesn’t break in half. Note that jerky will dry some more once cooled, so test a piece by leaving it out to cool for a few minutes. Also, not all pieces will require the same amount of drying time; you may need to remove them in batches.

STORING JERKY AND JERKY SHELF LIFE: Allow to cool for several hours before packaging, or store for a day in a paper bag to expel any moisture in order to prolong shelf life.

SHORT-TERM PACKAGING: Jerky can be stored in airtight containers or freezer Ziploc bags for up to one month, but are best when consumed within one week when stored in a cool, dark place, or within two weeks when stored in the refrigerator. Just make sure jerky has completely cooled before bagging. Bagging jerky while warm may lead jerky to sweat, causing spoilage.

LONG-TERM PACKAGING: Vacuum-sealed bags are a great choice for jerky, but you can use jars you already have at home to properly store jerky as well. Dry canning is fairly simple:

1. Preheat oven to 350°. 2. Remove lids from Mason

jars and stick jars in the oven for about 10 minutes.

3. Using oven mitts,

remove jars from oven and quickly insert jerky, then tightly screw on the lids.

4.

As the jars cool, they will create a vacuum seal. You’ll know they’ve been sealed when the lids make that popping sound.

5. Store in a cool, dry place,

such as the pantry, or in the refrigerator. Properly sealed, they can last for a few months. Jerky can also be frozen for up to a year. Once there’s a noticeable change in color, texture or smell, it’s time to toss.

Drop desiccant bags into your bags/containers to trap excess moisture and prolong shelf life.

A warm glow shines from the kitchen window into the dark winter afternoon. The smell of supper wafts to the front door as my children walk in, one by one. I greet them happily and direct them to the warm, steamy kitchen, where over a light snack, they tell me about their day.

The Reality

My daughter deftly punches in the numbers and the door eases open to a dark and silent home. She switches on the light, draws the shades still open from the morning when we all left the house together. She helps herself to a snack, the rustling bag being the only noise in the house until her siblings will join her. I walk in some time later, rushing into a home already alight and filled with human beings and head to the fridge to pull together a quick supper. I smile to my kids, yes. I’ll even ask them about their day soon, over a hastily-prepared supper. But what a cold welcome my kids get after a long day of school.

1. Gather recipes that are quick and easy and can be prepared the night before. 2. Use ovens with timers, pressure cookers, Crock-Pots, and sous vide cooking (the latest rage) so that your children unlock the door to your empty house and are greeted by the smell of a delicious, warm meal. Don’t worry if one of your children has no intention of eating the meal. The smell of the cooking communicates your warmth and caring. 3. You will arrive home to a ready supper. This will ensure that you can make eye contact with your children while you listen to what they have to say, without rushing around to prepare food for them. 4. Leave notes for your children around the house. This will show your kids that you love them and are thinking of them even if you must be away from home.

USING VERSUS NEEDING We mentioned in previous articles that when faced with a mixture of two different types of foods or items, or a mixture of ochel (food) with pesoles (garbage),1 one can avoid issues of borer by following three conditions: 1) taking what one wants to eat or use now from what one doesn’t; 2) taking it only immediately before eating or using; and 3) using one’s hands and not a kli that helps in the separation process.2 Now we’ll discuss the second condition of immediate use. First of all, what does use mean? How do we differentiate between use, which is mutar, and need, which is assur3? Let’s discuss a few common examples to crystallize this concept.

Warming, cooling and defrosting There are different foods in the fridge that are in close enough proximity to each other that they look to the eye as mixed, and Mrs. Cohen wants to take out the schnitzel (which is inside the mixture) on Shabbos morning to warm it up for the seudah in a few hours (this could also present shailos of chazarah; see footnote).5 Similar situations would be either a case where there are different foods mixed together in the freezer, and she wants to take out the challah from the mixture to defrost; or different kinds of drinks mixed together, and she wants to pick the seltzer to put it in the fridge so it should be cold in time for the seudah. All of these cases pose halachic problems and are assur to do on Shabbos, since one is not using them immediately after picking them out.6 In the cases of the schnitzel and the drink, Mrs. Cohen can have in mind before taking them from the mixture that she will eat/drink some immediately after taking them out of the mixture. Then after she partakes of some schnitzel and seltzer she can warm up the rest of the schnitzel and cool the rest of the seltzer, which are no longer in a mixture, for the seudah. Even though Mrs. Cohen is leaving the rest for later use, it is mutar because only one act of borer was done, and that act was needed for the immediate partaking of the schnitzel and drink. Unfortunately, this wouldn’t help us with the frozen challah, which is not really edible while it is frozen. Putting back seforim After a long afternoon of learning Torah, Tatty had a table full of different types of seforim that seem to the eye as being mixed with each other. It’s now time for shalosh seudos so Tatty has to clear away the seforim from the table by sorting them and putting away each one in its proper place on the bookshelf. But since putting them away would not be a use, it is assur to do so on Shabbos. So what should Tatty do? If before picking out each sefer from the table he has in mind to read a bit from each one after taking it and does so, he would be allowed because then the taking was done for the immediate use of reading from the sefer. After taking and reading each sefer, which is now no longer in a mixture, he can then place it in its proper place on the bookshelf. The rebbi is writing on the board and everyone is copying — that is, everyone except for Elchanan. That’s the way it is today. As it was yesterday. And last week. All because of a broken bone in his hand. It’s a neis that he has a good friend like Nosson. At recess, Nosson copies over everything they wrote in class, and doesn’t even hint that it’s hard for him or that he’d really prefer to go play. Nosson is a truly devoted friend. Now that his hand has finally healed, Elchanan wants to prepare a surprise for Nosson. He bought a crunchy chocolate bar, the kind Nosson likes, and now he’s trying to write a poem that will express the gratitude he feels. He writes, erases and tweaks. The minutes go by. He’s already exhausted from thinking, but at last, he can breathe a sigh of contentment. The poem is really a masterpiece!

He promises to be careful and return everything to its place. “Okay,” Estie agrees, “but only in my room. I don’t want the markers to get scattered in the boys room.”


Elchanan moves to the girls room with his scrap of paper. Here are Estie’s new markers and her stationery collection. Which should he choose? After wavering between the brown page with pink flowers and the lavender page with hearts, he picks the one with hearts. It’s just right for Nosson, who helped so wholeheartedly! He copies the words over clearly and neatly. One line, and another, and — there! The beautiful poem is ready. He’ll give it to Nosson tomorrow together with the wrapped chocolate bar. Elchanan collects the markers and the stationery and returns everything to its place, just as he’d promised Estie. ***** Estie enters her room late that evening. She is exhausted and is feeling a little low. Just before she goes to sleep, she notices something interesting on her desk: a warm thank-you letter from Elchanan. True, she does help him sometimes, and today, too, she let him use her markers. But she didn’t expect such a nice gesture of appreciation. She reads the words over and over and her heart suddenly fills with a new feeling. Wow! Someone appreciates me and went to the trouble of expressing it! In the empty space at the bottom of the page, Estie adds a few good words to Elchanan, who’s already gone to sleep. She puts it on the chair next to his bed, so that he’ll see it when he wakes up. ***** Early in the morning, Elchanan opens his eyes, and what does he see next to his shirt? The rough draft of the poem he wrote yesterday for Nosson. But, wait! There are a few more lines that weren’t there before… Elchanan starts reading and, when he understands what happened, he breaks into a wide smile. A little mistake, because of the scrap paper he’d forgotten on Estie’s desk — and what a fantastic outcome! A little mistake that taught him something it’s so important to remember: Good words have tremendous power! They can build worlds, build hearts!

Question In eighth grade (and not only then), it’s common for girls to write “memories” in each other’s autograph books. I wanted to ask if we’re allowed to include in this “memory” a sentence that the teacher used to say a lot, if the girls add their own “commentary.”

Answer The question does not specify what types of sentences are involved. We’ll try to guess (after inquiring among students of this age): Some teachers regularly use a particular sentence to impose discipline on the class, such as: “Girls, I’m waiting,” “Whose voice do I hear?!” or “Girls, attention, please!” Other teachers tend to use the same phrases when speaking and explaining, such as: “I mean to say,” “Remember this rule,” “Okay, girls” and so on. Many students enjoy imitating the teacher and her expressions, and the questioner apparently wants to know if these phrases can be written in autograph books. In terms of the prohibition of lashon hara, it would seem uncommon that there should be a problem with such comments, since even those who like to joke about these sentences don’t regard it as a flaw in the teacher. Besides, it’s a known thing that people get into the habit of using certain phrases and frequently repeating them. But in practice, it appears that this kind of behavior would not be looked upon positively by the chachamim, both as part of conversation among the girls, and all the more so, when written in autograph books. In many cases, it may also be a violation of the mitzvah in the Torah to “love your fellow as yourself,” as the Chofetz Chaim explained at length (mitzvas aseh 2) — anything you wouldn’t want done to you, you may not do to others. Generally, a person doesn’t want others to imitate his manner of speech, especially when it’s done to mock or be humorous. On the whole, in the matter of autograph books, it’s not fair to “eternalize” the teacher’s memory with nonsense; instead, we can write something that alludes to the mussar and life wisdom learned in class from this teacher or another, and then it will go with us iy”H for our entire life.

THROUGH A LENS OF ZECHUS Once There Was a Sukkah We went to Bubby for Shabbos and lent our apartment to our neighbors, the Goldbergs, who were hosting their cousins from a different town. We cleaned and straightened up the house in their honor and even left drinks and cake in the kitchen. On Motzei Shabbos, we came home late. But even though I was so tired, the minute I walked into my room, I noticed that something was awry. I’d had a beautiful “sukkah,” which I’d painstakingly built from pop sticks and other materials through hours of work. It was really special; anyone who saw it oohed and aahed. And — would

you believe it? They’d simply demolished it! Just like that! A few scattered sticks remained on the shelf. They hadn’t even bothered to leave a note of apology… I was furious — at the Goldbergs’ cousins (whom I didn’t even know), and at the Goldbergs themselves, for bringing in such irresponsible guests. I was even angry at the walls of the house; I don’t even know why. I was like a volcano about to erupt. It’s a miracle that it was so late, and so I didn’t run right over to knock at the Goldbergs’ door and spill out what was on my mind. A miracle, because when my sister

And the scattered sticks I’d seen? They were simply leftovers that I’d forgotten were there, on the shelf, behind the model sukkah…

THE TRAINING To become a shochet, one needs to receive kabbalah from a rav — though it is more typical to receive kabbalah from a few rabbanim. But before that can happen, one has to learn the following: relevant halachos; how to prepare a chalaf (or shochet’s knife), which is the most difficult part of the training; and how to perform the actual act of shechitah. Once a shochet-in-training is well-versed in each of these three areas, he receives hoda’ah from another shochet, which certifies that he is ready to receive kabbalah.

Depending on how much time and effort is invested in the training, and whether one is learning to shecht only poultry, both poultry and beef, or is learning to shecht poultry and beef in addition to learning how to be bodek the lung of beef, training can take anywhere between six months and a year.

THE TOOLS

SHECHITAH

A chalaf designed to shecht chickens is approximately 4 to 5 inches long. In a poultry plant, a shochet will inspect his chalaf every few minutes before continuing to shecht, and a bodek sakinim (one who inspects chalafim) also makes his rounds on the floor, inspecting the chalafim for all shochtim in turns.

POULTRY

A shochet, on average, can shecht about 750 chickens an hour, though individuals with fast hands can manage nearly double than that! After the chicken is shechted, a mashgiach inspects its intestines and leg tendons (and sometimes its lung, though some are makpid to always check the lung) to determine that it is indeed kosher. BEEF

It takes between a second and a half and several seconds to shecht beef. The number of steers shechted an hour depends very much on the size and equipment of the slaughterhouse.

A chalaf used to shecht full-size steers measures 16 to 18 inches in length, and is inspected after the shechitah of each steer.

A team of two shochtim, for instance, may shecht between 10 and 15 steers an hour. In larger slaughterhouses, on the other hand, there may be larger teams of shochtim, and they will shecht a far greater number of steers an hour. One example is a slaughterhouse that has five

shochtim on the floor at all times. Two shecht, one performs bedikas pnim (internal inspection, performed while the organs are still within the steer), one performs bedikas chutz (external inspection, performed after the lung, etc., are removed), and one makes his rounds on the floor, alternating between the other four to give each one a chance to rest. A team like that will usually shecht between 50 and 60 steers an hour.

BEDIKAH AND GLATT DESIGNATION OF BEEF While there are 18 types of treifos, bodkim will inspect only parts of the steer that present issues of treifos in what is called the “significant minority” of beef. Other kinds of treifos are noted if found, but are not searched for.

In America today, treifos appear most often in the lung and in the beis hakosos (the second, and relatively small, of the four stomachs of beef, called so for its lining’s resemblance to dozens of cups standing lined up), and so these parts of each steer are inspected.

What do bodkim search for in these two areas? In the lungs, bodkim are on the lookout for sirchos, or lesions. In the beis hakosos, bodkim look out for areas of inflammation or small growths.

The severity of the sirchos or growths found, or the lack thereof, determine a steer’s designation of glatt, Beis Yosef or chalak. A sirchah or area of inflammation that presents with a tiny hole or puncture renders the steer treif. As mentioned earlier, each steer gets inspected both internally and externally. The bodek pnim will perform his inspection primarily by touch, and then mark any irregularities on a card (see photo) that has on it a depiction of a steer’s lung. This card then gets handed to the bodek chutz to assist in his inspection, since he’ll now know where to look out for the sirchos or growths.

While this is not a rule, on average, about 35 to 40 percent of steers shechted turn out to be glatt. About 20 to 25 percent are usually Beis Yosef, and about 10 percent are chalak. Steers that turn out treif, and the parts of the steer that we don’t eat (namely the hindquarters), are sold in the non-kosher general market.

AT THE BUTCHER It takes approximately a day or more after shechitah until the meat is displayed at the butcher’s. This is due to a law that states that before hitting the shelves, fresh meat must be thoroughly chilled for 16 to 18 hours to prevent spoilage.

In the early 1900s, a shochet would stand at the market to shecht poultry as needed. He would visit a general slaughterhouse to shecht beef, perform bedikas pnim and bedikas chutz, and the forequarters were then sent, still in one piece, to the kosher butcher. The butcher would then be be the one to kasher the beef as well as perform nikkur (de-veining and removal of treif fat). Nowadays, the kashering of the beef and nikkur generally are done at the slaughterhouse, and butchers receive already-cut slabs of meat. One notable exception is Monsey Glatt, whose butchers still get the forequarters in one piece and perform the kashering and nikkur on their own.
