OMEGA 6 AND HEALTHY FATS (ISSUES #33 AND 34)
Esty Weiss’s health column is one of my favorites, but I feel the latest article on Omega 6 oils has been misleading. Touting saturated fats as completely healthy while blaming omega 6 oils for all ills is becoming more fashionable today, but it is just as misleading as the old dogma which was the other way around - blaming saturated fats for all diseases and proclaiming so-called vegetable oils as completely healthy. The truth is somewhere in between. The key to healthy oils is twofold: balance, and unrefined! Balance: We NEED more omega 6 oils, especially the essential LA fatty acids, in quantities of a least double the amount of omega 3, and perhaps more. The problem with omega 6 oils today is that they have overtaken our diet, so most of us end up deficient in other healthy oils. The goal is not to stay away from “unhealthy” omega 6 oils point blank, but to work on a healthy balance between omega 3, 6, 9 and saturated fats. Too much saturated and monounsaturated fats, although not necessarily unhealthy per se, will overcrowd our bodies, causing omega 3 and 6 deficiencies. The problem of our omega 6 oils today is not in their fatty acid compositions (omega 6), but that they are processed

and refined oils, devoid of natural antioxidants, minerals and nutrients, and full of damaged molecules. That’s the real problem with potato chips made with corn or soybean oil! The bottom line may still be the same: avoid most omega 6 oils that are available, especially in commercially prepared products. But for accuracy’s sake, if you can find unrefined, natural oils that are high in omega 6, use them by all means - but make sure to include plenty of healthy omega 3s in your diet as well. As for the second article on Omega 6 oils, EPA and DHA are very healthy fats found in fish oil, but they are not ESSENTIAL to the diet, because the body can actually make them, given enough ALA from flaxseed and other plant sources. Downplaying flax oil as having “only” ALA is a grave error! ALA is an essential fatty acid that we MUST get from the diet, and popping hundreds of fish oil supplements won’t supply that lack! Most people today are severely deficient in ALA with grave consequences to their personal health. I personally have seen better results from supplementing with flax oil than with fish oil. While fish is a healthy food and supplemental fish oil absolutely plays a role in health, as numerous studies and personal experience indicates, we can get the same results by consuming enough

Thank you, dear reader, for bringing this up. Let me try to clarify. You say that we need to double the amount of omega 6, which is a source of LA. According to every research I’ve read so far, you are right on target with saying that a proper “balance” of all omegas is what your body needs, but part of that balance is the need to double the omega 3 levels, if anything. As you’ve stated, there is an overabundance of omega 6 nowadays, and it’s of utmost importance to counteract and balance that out with “more omega 3” from unrefined sources, of course. A good balance is to take a potent fish oil supplement of DHA and EFAs, in addition to flaxmeal/oil to get your ALA, which is also of crucial importance!! I hope I clarified your concern.

As I inched my car closer, I realized the reason why these spaces were unoccupied; each one had an abandoned shopping cart smack in the middle. Even more surprising, following these two spaces was one of the two sheltered spots that are designated for returning shopping carts! The tears flowed down my cheeks when the doctor informed me that my beloved sister Chaya Rivka only had hours to live. Her devastating illness was like a dark cloud hovering over our family as it rocked us to the core. She had been on a respirator for days; we along with our community had been davening feverishly. It was just before 5:15 pm on the very day that we heard the news from the doctors and the minutes passed as though they were hours. I maneuvered my car in between the two shopping carts, placing my car right in between the two spaces. I then got out of the car and steered the offending carts into the cart return. Now this left me in a precarious position; I couldn’t very well leave my car like that. I would look like the inconsiderate one for taking up two parking spaces when another driver could easily benefit from one of them. So I got back into my car and adjusted it to make sure that I was in between the white lines, leaving space for another car. I then proceeded into the building taking one of the shopping carts I had moved with me. This whole ordeal took less than 5 minutes, but the point I’m trying to make is that we are all leading busy, hectic lives, and everyone is in a hurry to get done with their errands and move onto the next thing. We all are thinking about all the things we have to do, but how about taking a minute to consider the next person? I can’t tell you how many times I’ve been in parking lots all around Monsey and had to get out of my car to move a cart before I could park in a space. I really feel that this is a major issue ben adam l’chavero. You don’t know the person that will be coming after you, but we are all part of Klal Yisroel and we are all one family. In light of all the tragedies that have taken place this past weekend over several communities, I would like to call upon everyone to take just one extra minute to do one small thing and return your shopping cart to designated areas. Even if you are in a rush, it only takes a minute; two at the most.

Think about what a Kiddush Hashem it will make for shoppers to easily be able to park their cars, and also to the workers who are constantly sent out to the parking lot to round up all the wayward carts left helterskelter here and there. In addition, returning carts to their spots can help prevent damage to vehicles. I once called a lady whose abandoned cart made its way into my front fender, after finding her receipt left in the cart (the time stamp confirmed she had been the last to use it) and her name and phone number were printed on it. I made an anonymous phone call, not asking for money for the damage, but just to let her know that her cart hit my car and that she should please be more careful about returning her cart in the future. You can even take it one step further and take an abandoned cart from the parking lot into the store with you to do your shopping. This will help keep the parking lots less cluttered. I hope by bringing this issue to light, we can all look forward to more smooth, uncomplicated and enjoyable shopping trips in the future, making a much more pleasant experience for all. Confused About Canola Oil? Since fats are an extremely important part of the human diet, without the right ones your body will not function properly. However, there is a lot of confusion out there regarding the health effects of different types of fats. Canola oil is one such example. Some manufactures market canola oil as “the world’s healthiest cooking oil,” although many experts disagree – and that’s where this article comes into play. The goal of this article is to take an in-depth look at canola oil so that you can make wise choices and decide whether you want to use it freely, consume it in moderation, or avoid it altogether.
CANOLA OIL: Back in the day, rapeseed oil was often used for industrial purposes. It was very cheap to produce, but people couldn’t eat it because it was bitter and contained substances that made the oil taste bad. A few Canadian scientists wanted to turn rapeseed oil into a more palatable option, so they used selective breeding techniques to create seeds that contained less of these

So, should you use canola oil? I certainly don’t think so, unless you buy a pure, organic option.

bitter substances – and this is how canola oil came to be. In fact, “canola” is not a unique type of plant; it’s just a name for rapeseed that had been bred to be lower in undesirable compounds. Initially, the Canola Council of Canada had a hard time obtaining GRAS (also known as “Generally Recognized as Safe”) status by the U.S. Food and Drug Administration, which they needed to market their oil in the U.S. In 1985, however, Canola oil was ultimately granted GRAS status, although long-term studies on the human consumption of canola oil have yet to be conducted. One major concern is that canola oil is geneticallymodified, or a GMO, which means that it’s a highly processed food. In addition, canola oil is highly refined. Like high fructose corn syrup, (which is no longer corn sugar once it is extracted and processed), canola oil goes through a similar transformation. The oil is removed through a combination of high-temperature mechanical pressing and solvent extraction, after which traces of the solvent – usually hexane, a dangerous chemical – remain in the oil. Canola oil also goes through the process of caustic refining, bleaching, and degumming, all of which involve high temperatures and chemicals of questionable safety. And because canola oil is high in omega-3 fatty acids (which are inher-

ently good), it doesn’t take much for it to become rancid and foulsmelling when exposed to high temperatures and large quantities of oxygen. Consequently, it absolutely must be deodorized. The standard deodorization process removes large portions of omega-3 fatty acids by turning them into trans fats. While the Canadian government only lists a small percentage of trans fats on the label, health experts speculate that canola oil actually has a much higher percentage of trans fats than it seems, due to the processed nature of the food.
HEATSENSITIVE: All oils that are healthy and contain a substantial amount of omega-3 fatty acids, or a good ratio of omega-3 to omega-6 fatty acids, have one thing in common: They are very sensitive to light and heat. Ironically, the smoke point of canola oil is pretty high, at roughly 400 degrees Fahrenheit – and this is because it’s so refined! You simply can’t heat up healthy,
unrefined fats without denaturing the oil. So, should you use canola oil? I certainly don’t think so, unless you buy a pure, organic option where the oil is expellerpressed and entirely lacking in GMOs. Besides, you are probably already consuming more canola oil than you think. You can find it hiding in restaurant dishes, takeout meals, processed items, and almost anywhere else. Again, this is why I highly recommend that you either use the organic version (which isn’t optimal for cooking, although you can still heat it slightly) or opt for organic extra virgin coconut oil or dairy butter, or even organic extra virgin olive oil in salads. These oils are the highest-rated options among doctors, nutritionists, and healthconscious people like you and me. Take a closer look at next week’s article “What Is GMO and Why Is It Bad for You.”

Imagine you ask your son to go to the neighbor to pick up a package, and your son answers that he is “busy playing.” You tell him it is very important that he go now. He asks what is in the package that is so important that it must be picked up right away. You tell him that it is his suit for his upcoming Bar Mitzvah; the neighbor is a seamstress and she has finished the alterations. Suddenly, he jumps up and runs out the door to retrieve the package. Would you consider the child in this story to be one who accepts his parent’s authority over him? Is he a child who places his parent’s will before his own? Clearly not. If he were, he would have done what he was told without demanding an explanation and without needing to be convinced of the importance of the job. In truth, he bowed to his own will, and the parent merely persuaded him that his will lined up with theirs in this instance. In parshas Yisro, the b’nei Yisrael received the Torah. We know that they said “na’aseh v’nishma” when Hashem offered them the Torah. Much has been said on the topic of na’aseh v’nishma. On the most basic level, first committing to “do” and then to “hear/understand” demonstrates a clear acceptance of Hashem’s will over our own.

Taking this one level deeper, na’aseh is a step that leads a person to nishma; action leads to understanding. Cause and effect. Torah is compared to water. To be retained, water needs to be held in a vessel, such as a cup. If we want to be fit for the Torah, we must first change ourselves into vessels capable of holding the Torah. We do this through
the physical work of the mitzvos – the na’aseh. We find this idea in the Mishna in Avos (Perek 3, Mishna 12): “He [Rabbi Chanina ben Dosa] used to say: ‘Anyone whose deeds are greater than his knowledge, his knowledge will endure. And anyone whose knowledge is greater than his deeds, his knowledge will not endure.’” Rabbi Ephraim Wachsman, Rosh Yeshiva of Yeshivas Meor Yitzchak here in Monsey, explains as follows: if a person’s actions do not correspond to his level of learning, the knowledge will not stay with him, because he will ultimately follow after his physical nature. His body will pull him away. In order for wisdom and knowledge to take hold in a person, he must bring kedusha into his physical existence, and thus change his physical nature. Action has the power to change our nature. This is why na’aseh comes before nishma. Rabbi Wachsman goes on to give a beautiful mashul to explain this. A person can study the theory of violin in the world’s greatest conservatory of music under the most illustrious instructors for fifty years, but if he only then picks up a violin, he will not be able to produce anything even similar to music. But if he takes a violin and practices

Our tools for understanding anything - our intellect, our logic - are creations as well. How can a creation possibly perceive beyond creation? How can we expect our rational intellect, which is by nature limited, to fathom something that is above rational? To put it in plain English, if we could understand Hashem, how powerful and mighty could He be? The main thing is to know in your heart that Hashem created this world, He created us, and He commanded us with His Torah and mitzvos. We do not have to understand it. We have to do it. The good news is, understanding will follow. What a gift!

As long as the lid is still in one’s hand, it may be replaced on the pot. Once the lid is on the counter for a short while, it should be wiped well before being replaced. However, it does not need to be completely dry.

Small children may play with floor puzzles, if they dismantle them afterwards. Small children between the ages of 9 and 12 (depending on their level of maturity) may play with Lego, floor puzzles etc. that do not need too much strength to put together and are not meant to hold for a long time. A mother may guide and assist a small child with building etc., and position them to the correct spot, but not actually slot or click anything together. Over a cup of freshly brewed java (of course! What else?), we sat down to talk with the founder and owner of Hava Java in Monsey. Since its inception, Monsey has fallen in love with this cozy coffee shop, situated inside the Town Square Mall. Mr. Yoeli Mendlowitz talks about the heart of his shop: the coffee. Hava Java will celebrate its second anniversary in February. What’s Brewing at Hava Java? We have a new micro-roaster that brings our coffees to a whole new level. Our custom blend coffees are roasted just for us. I know it’s my store and perhaps I am a little biased, but I have to say- I believe it’s the best coffee I’ve ever had! When looking for the right roaster, I knew I needed a coffee blend that would stand on its own as a delicious cup of coffee, and also be able to hold up to the rich ingredients of our hot and cold blended drinks. When I found this roaster and sampled the excellent quality of his coffee beans, I knew it would do the job well! I could practically taste what a difference it would make in our new Drinks Menu. The Tiramisu Latte we were creating needed that extra depth of flavor that I wasn’t quite achieving in our taste tests with other coffees. It’s just a fresh and outstanding coffee that we are very proud of. So tell us a little about what makes this coffee so special. How do they get it tasting so good? Hava Java coffees are locally

roasted, small batch, and handcrafted. To give you an idea of what I mean...when you make a small batch of anything, even in your own home kitchen, you’ll find that you have better control over quality when it’s made in small volume. People often ask me why some coffees taste so watery. The answer lies in the difference between large and small batch coffee-making. When coffee is roasted, it needs to be cooled quickly before it begins to burn. Larger roasters need cold water to cool down the beans quickly. This causes the coffee to have a watery taste. Can you explain to The Monsey View readers what the difference is between your coffee and what they’d actually make at home? Hava Java’s customers can bring home the same coffee that we brew in our shop, by purchasing the beans which we grind on the spot. However, the main difference is the brewing equipment. Our commercial brewers are just superior to the residential Mr. Coffees that most people use. Our brewers pulse the hot water and maintain the proper
temperature to brew. This enables the aromas and essential oils to develop better, resulting in an all around better cup. We also grind our coffees on premises right before we brew to ensure that we have the freshest, most flavorful cup possible. Can you tell us a little about your history? Having worked in the food industry, I have spent a lot of time on the road and I felt the coffees out there were watery and lacking in depth. I really had to go out of my way to find a cup to my liking. When I decided to open a coffee shop, I needed to understand exactly what takes coffee from good to GREAT. After researching a bit, I realized I would only get the real answers from the experts. So I enrolled in a school to train as a barista; that’s the term used to describe expert coffee and espresso makers. People think that coffee is just a mixture of beans, sugar, water, and milk, but truthfully there are hundreds of secrets to making a drink superb. The term cupping refers to obtaining the perfect coffee blend. With espressobased drinks like cappuccinos and lattes, this happens through careful attention to every detail. After your custom blend of beans are ground, the next step is the tamping, which refers to the precise amount of pressure placed on the ground beans, the angle that the milk is steamed, and the ratio of hot milk to foam; every step affects the end result. It takes a lot of trial
and error to get it just right. Many of our customers like flavored specialty drinks. This makes our coffee choice even more complex. Adding all the other gourmet, rich flavors and ingredients that make up our Hava Java signature drinks, like our newly crafted Salted Caramel Sauce, meant I needed a specialized coffee blend to match up with those flavors. After testing the latte with several different blends, I finally got the perfect match for this rich and outstanding flavored drink. 6. How has coffee changed in the last few years? Today’s coffee has developed into an artisanal beverage. Consumers are much more particular about their coffee these days, and they are eager to let you know what their likes and dislikes are. The feedback is great for us, and we encourage our customers to keep it coming. While it’s hard to please everyone, we do our best to keep our customers happy and coming back for their daily brew! 7. Why are there so few true coffee shops that are kosher? Fortunately, coffee is kosher by definition because it is essentially considered a fruit, believe it or not. It is grown and picked like any other produce. But it’s all of the ancillary products, like flavored syrups and toppings, that make it very difficult to facilitate and keep 100% kosher. Sourcing all these products that have a

hechsher and still meet our quality standards is close to impossible. Therefore, many of our signature syrups and sauces are painstakingly created from scratch, to ensure our customers the highest level of flavor and quality. Also most coffee shops, including the big, brand-name chains, carry other food products, as we do, and the utensils used are washed in hot dishwashers with all their coffee equipment which is very questionable in terms of kashrus. 8. What are the biggest challenges in running a coffee cafe? The balance between quality and profitability! It’s a fine line that must never be crossed. My success B”H is based on my reputation for selling quality products, and this means always buying the best and freshest ingredients available. We have to stay on top of food trends and keep changing our menu to reflect customers’ evolving tastes, maintaining the high standards in quality that our customers have come to depend on. Doing that while still keeping our menu fairly priced, plus having employees on shift so that our customers don’t have a long wait, and yet still turning a profit is an ongoing effort. And it isn’t an easy one. 9. What is one thing you wish our readers would know? That everything we do is with them in mind. Our goal is to have every customer walk away satisfied. That takes a lot of work, but bezras Hashem, we will never stop trying. Every drink on our menu has been tested and tweaked multiple times; from choosing the origin and quality of the beans, to matching it them with our unsurpassed signature sauces and flavorings; even frothing the milk to just the right temperature to achieve that smooth velvety feel. We can’t wait to use the new brew in our spring and summer Frozen Drinks menu. I strongly suspect it will hold up beautifully and complement our new surprise drinks. Every menu item is done and redone, until we feel we are giving you the best quality and taste for your money. 10. What is in store for Hava Java in the near future? We’re launching a couple of new winter drinks like the Salted Caramel Latte and Tiramisu Latte. Our slogan is, “Fresh coffee, fresher thinking.” In our language it means: there is always something new brewing, so stayed tuned for something even fresher than our coffee.

Everyone’s words created ice balloons that hovered in the gray white afternoon that day. Sara Binet jumped out of her Chrysler, kicking the hinged fender with the short rubber heel of her shoe. Too bad it wasn’t fixed. Too bad each trip to the garage cost an entire week’s wage, money she would much rather put aside for Tehilla’s social skills mentor, if she had to spend it. The ice bit at her earlobes, creeping into the wool collar of her coat, slithering downward until she shuddered. In her ungloved hands, Sara held the files of today’s client workload. She should have left it at the office. There was no way she would find the privacy and peace of mind to look over the paperwork, when Chaim Elazar would be coming home right after the dentist appointment she had better rush over to. Her hands steadily becoming less dexterous the longer she was outside, she inserted the key into the keyhole. Sometimes, especially now, she considered just twisting the knob all the way forward and three shucks back, so it would slid open on its own. But how could she do what she exhorted the kids not to? Telling them that it broke the door, that half the doorpost was carved out, that even when they finally wanted to fix the lock, it would be irreparable. Unless an emergency dictated otherwise, of course. This felt like an emergency. She had to put down those papers if she were to unlock the door and get in, but gusts were carrying icicles from rooftop to shrubs, and she couldn’t let her files get soggy. She shook her hands out, redirected her attention, hoisted the files close to her, and turned the knob. At last. The door swung open and the familiar scent — a mix of vinyl and carpet, onion and lemon soap, as much a part of these walls as she was — rushed to greet her. Flinging her coat onto a chair and setting her files down on the dining room table, Sara lifted the crockpot cover and sniffed appreciatively. Chicken, potatoes, and carrots were nicely solidifying. Organization had become her partner, her pride, h e r t a s k m a s t e r,

She had naturally lined up toothpicks in small Tupperwares long before a tableware company came up with the idea of selling them in dispensers, rather than the cardboard boxes that always got wet if left on the counter. Yet Tehilla made her even more organized. All children thrived on repetitive security. Some demanded it. They were unforgiving of the smallest slight to the sovereignty of schedule. They deserved this security just as surely as we each expect breath after breath, heartbeat, heartbeat, heartbeat. The driver of the Cadillac most certainly had one, and could easily observe her in her car, fuming as she checked several times, and slowly pulled out. Or maybe not. He seemed to be emerging from his car, one expensive loafer at a time. His head jutted forward, and she could sense his wallet as it influenced his tailored shirt, the wool coat he threw over it, and his entire demeanor — the way he stood, the roundness of his eyes, his purposeful steps up to her front porch. Who was he and why had he come? But she needed to go, couldn’t wait to indulge her curiosity. West Central was blessedly not strewn with school buses, and Sara pressed down on the gas as her car puttered up the curves of the hill. Why would he knock on her door? He hadn’t come for her dry goods store, had he? Everyone knew to go to the basement door on the side of the house. If that’s what he came for, he’d hopefully find the right place. Parnassah was from Hashem.

And just to create the vessel, her husband had created a foolproof system, where, if a person came after hours, they could always fill out an order form, left between the screen door and the wood door, and slip it through a mail slot. The Binets would fill the order and deliver it to the customer, that same day. It was that arrangement that kept the easy relationship between herself and her clients. If she was home, she’d wait on them. If not, she’d help them later. If they passed by, they could always stop in. The same way good relationships work, worked for businesses as well. No expectations. Mutual participation. But it wasn’t the type of business this platinum glasses guy would drive over to Herrick for. But then again, Dr. Hossami was waiting. And for that matter, Chaim Elazar. REMINDER OF A MIRACLE It was a long, exhausting evening until I was finally able to call it a night. My husband, a Hatzalah member, had gone out on a long-distance call, and by the time I was able to bed down — I hit the sack and was out faster than I can recall. Suddenly, I bolted awake to the piercing sounds of gunshots and the shattering of glass. I pulled the covers over my head,

t o o afraid to breathe, as w e proceeded down the hallway, reviewing some martial art moves we’d practiced in the past. “Ready or not; here we come,” we whispered as we stealthily crept to the front of the apartment. Nearly there, we both tried inching backwards, hiding behind each other in

I pointed out to my friend the $75-a-cup Vera Wang stemware that I had received from Brother Number 6 as a wedding gift. Looking closely among the shards, I also recognized my faithful Shabbos chargers — a set I was gifted with at my vort from a close friend who is no longer with us. Those glasses had a
very special place in my heart, and I’d felt good that there was something from her gracing my Shabbos table, week after week, but now that too, was history. After an hour of cleaning up and sentimentalizing, all the broken pieces were put into one box and the few unbroken objects were lined up for my inspection. All in all, there were six whole drinking cups that survived the crystal war. Four were simple glass ones from the local dollar store, 1 crystal charger from my sorely-missed friend, and 1 from my students. I looked at my guest and said, “This glassware could’ve been my children... It could’ve also happened in a time when they were up, and they could have been seriously injured. Instead, they are boruch Hashem, all
sleeping safely and soundly.” I repeated to her what my husband had told me when he first joined Hatzalah and the nights were long, scary, and lonely. I remember complaining to him how afraid I was, and he had told me that “shluchei mitzvah einan nezikin…,” that the chesed/mitzvah he is doing will guard my family. And guard it, it did. With the floor all vacuumed and the remaining pieces disposed of, I turned on some music at that past-midnight hour, and my friend and I just danced and sang to Hashem expressing our gratitude for letting my break-

Whether it’s a family get-together, a Melaveh Malka at home, or a dairy supper night— food always sets the mood. These three milchig recipes are fantastic buffet dishes that are real crowd pleasers. With no complicated ingredients or hours of prep time, they are no-brainers when it comes to choosing recipes that will please all.

This is a terrific milchig side dish. It can be served hot, warm, or at room temperature. I usually make it in a 9-inch deep dish pie shell. (The raw dough version, not the graham cracker crust). If you want to serve a lot of people, you can double the recipe and bake it in a 9x13 pan.
1 9-inch deep dish pie shell ¾ cup shredded cheese 2 tablespoons oil 1 onion, diced 1 can mushrooms 1 lb. broccoli florets
1 cup soy milk 2 eggs 1 ½ teaspoons salt ½ teaspoon pepper 1 teaspoon paprika
Preheat oven to 350. Sauté diced onion in oil until golden. Add the canned mushrooms. Meanwhile in a separate pot, cook the broccoli florets in water until tender, about 20 minutes. Drain the water and set broccoli aside. Place the shredded cheese on the bottom of the pie shell. Place the onion and mushroom mixture on top of the shredded cheese. Place the cooked broccoli on top of the onion and mushroom mixture. In a small bowl, combine soy milk, eggs, salt and pepper. Pour over broccoli and sprinkle paprika on top. Bake for about 45 minutes, or until quiche is set and not runny.

Chock full of roasted vegetables and cheesy goodness in every bite.
1 bag penne pasta 2 tomatoes, chunked 10 ounces fresh mushrooms, peeled and chunked 1 cup frozen spinach
½ eggplant, peeled and chunked 1 teaspoon salt 2 tablespoons oil ½ cup heavy cream ½ stick butter 1 cup shredded cheese 8 ounces whip cream cheese 1 teaspoon garlic
Preheat oven to 425. Place tomatoes, mushrooms, spinach and eggplant on a cookie sheet. Drizzle with oil and bake for 25 minutes. Meanwhile cook penne pasta. Before draining, reserve 1 cup water. Set pasta aside. In a separate pot, melt butter. Add whipped cream cheese, garlic and salt. Stir until cheese melts and there are no more lumps. Add reserved 1 cup water and ½ cup heavy cream. Mix well and add shredded cheese. Stir until melted. In a 9x13 combine pasta, roasted vegetables and cream sauce. Serve immediately.

In a separate pot, combine heavy cream and grated parmesan cheese. When it bubbles, add frozen garlic cubes, salt and pepper. In a 9x13 pan, combine fettuccini, mushrooms and cream sauce. Serve immediately.

Take it All Into Account Building a Business From the Bottom Up

Choosing a Business Structure One of your first decisions when starting a business will be the selection of the right business structure. This will have important legal and tax implications. From how you pay your taxes, how you raise capital, the complexity of the formalities — and most importantly, your legal responsibility — all will depend on the type of business that you start. It is important to seek expert advice before taking this initial step of building your dream business. Among the different forms of business entities are sole proprietorship, partnership, corporation, S-corporation, and LLC (limited liability company). No one type is better than the other one; the choice really depends on the objectives, circumstances, and needs of each individual business owner. Sole Proprietorship
As they say, the way to get started is to “quit talking and begin doing.”
The simplest of all business structures is the sole proprietorship. As they say, the way to get started is to “quit talking and begin doing.” A sole proprietorship is nothing more than a business that is owned and run by one individual without any legal form of business structure. You control it all — and you are responsible for all; you and your business are essentially one. Once you have a product or service to offer, all you have to do is get a business license, register a name, open a bank account, and you are “in business.”

The advantage of a sole proprietorship is that it is easy and inexpensive to form. Legal and organizational costs are minimal. In fact, in many states, you don’t have to do anything to be considered sole proprietorship. As soon as you start any business activity, such as making a sale or providing a service, you automatically achieve the status of a sole proprietor. Another appealing aspect of a sole proprietorship is that since you are the sole owner of your business, you are fully in control and the exclusive decision maker. From a tax perspective, the IRS sees you and the sole proprietorship as one and the same. The business itself does not pay any taxes. You report the profits and losses on your individual form 1040. All you have to do is keep proper accounting records of your income
and expenses to monitor profitability (and in case of an IRS audit). No other business tax filings are necessary. So if you plan to work alone, rely on your own capital, and your business involves low risk, this may be the way for you to start. Notice how I mentioned “low risk.” Sole proprietorships are not ideal for high-risk businesses. That is what corporations are made for. Keep in mind that you can always change your sole proprietorship to another business structure

So why not let’s just stop here and call it a day instead of considering complex partnerships or corporations? The reasons to incorporate a business, instead of running solo, are many. A sole proprietorship is personally liable for any debts of the business. If your business goes broke, creditors such as vendors and banks can come after your personal property and savings for payment of your obligations. Likewise, in the case that a lawsuit is brought against the business, you will be personally liable. It is crucial to understand the nature of a business’s potential risks before choosing a sole proprietorship. Also think of the limitations of a private business. A company’s growth is limited to an individual’s skills, time, and energy. It is unlikely that one person will have all the different skills that may be required in running a complex business. This is a time when you may think of bringing in a partner. General Partnership
This will help resolve potential disagreements, spell out “who brought what” into the partnership, and the way it will be distributed in case of partnership dissolution. A good partnership will benefit of being able to utilize the strengths, skills, and joint efforts of each partner. It offers the flexibility of allocating income and expenses among the partners. You will have better chances to secure business loans with the combined resources and credit standing of the partners. There are also legal and tax advantages to a partnership. It is relatively easy to form. It enjoys favorable tax treatment compared to a corporation. A general partnership is a passthrough entity, which means that the partners, not the partnership, pay taxes. The partnership files an annual tax return for informational purposes only, to report its income and losses, but it does not pay income tax. Instead, it passes through any profits or losses to the partners. The partners include their share of the partnership’s income or
loss on their personal tax return. The advantages of a partnership are plentiful, but so are the disadvantages. A partnership, by definition, means “joint and individual liability.” Each partner acts on behalf of the partnership as a whole. When a partner takes out a loan or buys inventory in the line of the business, it affects and binds all other partners. So not only are you liable for your part of the business debt, but you are also liable for the debt incurred and actions taken by either of the partners. It is therefore crucial that you only enter into a partnership with someone whom you truly trust. Partnerships also lack the stability of a corporation. A general partnership automatically dissolves when a partner dies or resigns from the partnership. All of the above are reasons why so many U.S. businesses operate as corporations. In our next column we will explore the advantages of the different types of corporations, how they are formed, and how they are taxed.

Recently, the fall of night signaled the rise of tension. There’d been a spate of nightly robberies and no one felt immune. Families would double- and triple-check their locks, praying that they’d be spared. But no matter how vigilant the homeowners were, the robberies just continued, night after night. Although the police tried to catch the burglars, they slipped repeatedly through the grasp of law enforcement—and so the emboldened thieves continued. In and out of homes and cars the burglars went, afraid of no one; never imagining that they’d be caught. Chaverim however, davened for siyata d’Shmaya, and set up a surveillance net to trip them up. The devoted members of Chaverim bundled into their cars one night and parked around the area that had recently been hit hardest by the burglaries. Turning off motors, they waited, patiently watching the street as the hours ticked by. Eventually, one Chaverim member noticed three suspicious characters walking around the Ellish area, site of the most recent break-ins. They passed house after house (and Chaverim member after Chaverim member), until finally they began choosing their targets… one of which was the car of a hidden Chaverim member! The police department had already been notified by Chaverim, and the suspects were caught red-handed, with stolen items found in their possession. Due to the involvement of the Chaverim team—that particular spate of robberies was squelched.
Suspicious activity; it’s that feeling of unease, of knowing that something is just not quite right. It’s the bad vibes given off by unsavory characters; the nervousness felt when intuition whispers in one’s ear that someone is up to no good. It’s a hunch, a guess, and a suspicion— one that our local Chaverim will always take seriously. Many newcomers to Monsey

don’t realize it, but Chaverim is much more than a group of tirechangers and do-gooders;this organization also acts in a capacity similar to the Shomrim of the city. Chaverim is that extra set of eyes and ears when you need them most, and serve as the liaison between the local police force and our community. The calls that come in range from concerns regarding suspicious characters to drunkards,
or wild teens terrorizing the neighborhood. No matter what your safety concern is, Chaverim stands ready to investigate. Many times, those calls come in right after someone who’s had cleaning help discovers that their jewelry has been swiped. Panicking, they call 371-NEED. By then, however, it’s oftentimes too late. “I caution everyone to check their valuables before the help
Chaverim Tip: If you see anything that makes you feel uneasy and suspicious, just call 371-NEED and Chaverim will check it out! leaves the house,” a board member tells me. “Then, if anything is found to be missing, we’ll call down the police who can check the suspect, and often she’ll be found with the missing items.” In general, being one step ahead of the thieves is always a great idea when it comes to stolen goods. Once a year, Chaverim holds a safety fair where free bike helmets are given out to young riders, and bicycles are engraved with ID numbers. These numbers come in handy should a thief happen upon a bike, and decide to take it for himself. Lest you think that it could never happen to you, think again. This past year a Chaverim member who drives an early morning bus route found himself behind a truck that was systematically checking each driveway for wheeled toys. Finding one after another, the truck driver heaved each object into his trunk and moved on. The Chaverim member promptly called the police and the truck driver was apprehended. Unfortunately, these things happen quite regularly in fact, and registering your bike can mean the difference between having your bike immediately returned or going through the lengthy process of heading down to the police station and proving that the toy in question is, in fact, yours. Preempting the whole situation is an even more praisewor-
thy step. All it takes is a little extra effort to discourage a thief. “If a neighborhood is known to be lax with locking up their possessions, local gangs take note, and begin frequenting the area,” the board member tells me, strongly emphasizing the importance of taking proper care of our possessions. Sometimes, the additional time and effort involved can provide a significant net of protection for our community. The same rings true in regards to police reports. Due to time constraints or language barriers, many people are reluctant to file police reports when property has been stolen or people harassed by local low-lives. Chaverim however, insists that even the smallest incident be reported to discourage the feeling that one can escape without punishment; thereby inviting further inci-

dents. My own neighbor had her stroller stolen; the thief brazen enough to walk down the street balancing it upon his head! Lucky for her, there are several security cameras in the area, and Chaverim was able to pinpoint exactly where he lived. As soon as they arrived on the scene, the police were contacted— Chaverim firmly insisting that they are not there to replace law enforcement, only to complement, cautioning witnesses to refrain from handing evidence. It was quite the scene, replete with bearded men, uniformed officers, and squawking radios. Although the suspect wasn’t approached by law enforcement right away, fear was struck into his heart. It was noted that early the next morn, the thief loaded up a moving truck with hundreds of wheeled objects and disappeared, realizing that our street takes security seriously. The aforementioned security cameras actually come very much in handy when it comes to these types of things. Recently, Chaverim was able to trace the thieves from the much-spokenof Shabbos burglaries through footage taken from security cameras. After an arrest was made, thousands of dollars worth of stolen goods were returned to the rightful owners. Even better than digital eyes however, are the eyes of the community members. “If a person is seen going in and out of driveways along one street, that’s suspicious behavior,” I’m told, “and Chaverim will keep an eye on that guy, and
give over the information to the police.” Chaverim’s goal is to integrate the entire community into a neighborhood watch system, with the lay person providing the basic information feed. Like the MTA slogan goes, “If you see something, say something.” By using the strength of numerous eyes and brains to outwit unsavory characters before they engage in bad behavior, crime can be prevented before it’s even begun. There are times, however, when the community experiences natural down times, leaving obvious surveillance gaps needing to be filled. Since Rosh HaShanah of this year, nearly every yom tov and Shabbos saw multiple home and car burglaries take place. In order to provide eyes and ears around town when the heimishe ones are typically celebrating with family, Chaverim has recently launched a new Shabbos Safety Patrol. Hired guards are paid to drive the entire breadth and length of the Jewish community, eyes attuned to any questionable activity. In addition, these non-tribal friends of ours will be able to perform functions forbidden to our brethren on Shabbos, such as turning on a nebulizer for an asthmatic person, or raising the temperature in a house with a sick person. Chaverim will soon be publishing details for the community on how to avail themselves of this service in the coming weeks. It’s a wonderful feeling knowing that our Chaverim brethren are overseeing our community safety, with tremendous help from Heaven. With that thought in mind, I’m sure you’ll sleep just a little sounder knowing that help is but a phone call away, at 371-NEED.

by Monsey View Readers “Let us not look back in regret or forward in fear, but around in awareness.” S.R. says: I have seen children as young as two years old playing at the curb on a busy road or on driveways without adult supervision. That is very dangerous!
R.G. and N.G. say: When “big” kids are responsible for their little siblings outside or are unsupervised, it’s hard to know what really is going on, be it bullying, bossing, or chutzpah. In R.G.s words, she advises mothers to bake less, and be present where their kids are.
Mrs. K. once observed an 18-month-old walking down the street on his own. He had come from a different area where his high school sister who was supervising him got carried away in a conversation and forgot her responsibilities.
Mrs. B. feels that when sending children out, make sure the one in charge is responsible enough to take care of the rest of the group. And Mrs. P. adds that mothers perceive their six-year-olds as old enough, but most of the time, he or she is incapable of responsibility caring for their younger siblings.
R. F. and C.H. and Family E. say: It’s very important to be outside with your children, even when you consider them “old enough.” The same goes for trusting kids who you feel are all grown up to cross the streets on their own. Mrs. M. cautions that older children should be taught to cross properly, especially when riding a bike. And Mrs. T. says she has witnessed parents allowing their kids to cross, coming out of a car, without ascertaining that the road was clear. B.F. specifies that children should be taught to cross at corners, and that dodging between two parked cars is very, very dangerous! And E.S.’s eyes hurt watching children doing that.
C.H., C.G., Mrs. G., Mrs. S., Mrs. T., S.H., and the B. family urge that pedestrians should wear reflectors whenever they walk at night, and that includes Shabbos. Monsey has many neighborhoods that are not properly lit up at night. Mrs. M. feels it’s an area that needs a lot of chizuk.

G, Mrs. C., Mrs. S., and Mrs. Y. say: Never leave toddlers outside alone without supervision (and assume that the women outside will keep an eye on them, without stating so clearly), as it takes no time for the little ones to get close to the road. L.W. cautions that this can happen even when the mother is there, but she gets busy shmoozing with the neighbors. I.N. adds another facet to safety when we tend to be outside a lot. She cautions that when 2-3 siblings, as well as the neighbor, is fed out of the same plate with the same spoon or fork, there is a great chance of spreading germs and infections, especially the ones you are not yet aware of their presence.
Mrs. F., Mrs. K., and Mrs. B. urge you not to trust your little ones to go to the bus alone, and wait outside to take them off the bus when they come home. Besides for safety, there’s nothing for a child like being lovingly welcomed by a parent after a long day away. Bus drivers, too, should never drop off a child if there isn’t someone awaiting the child. E.S. is pained by the phenomena, especially when a child needs to cross the street to get home and cautions drivers to slow down in the proximity of school buses.
Mrs. F. and Mrs. Z. say: Buses and cars should be careful about driving slowly in areas where children play, and drivers should notify pedestrians with their blinkers before making a turn. It is so easy to ch”v hit someone in this manner. The T.s feel that certain streets need more speed bumps and speed limit signs.
E.M. reminds cars that they must stop when a bus stop sign is displayed.
G. asks: Kids flying off with their bikes on the road... do their mothers know where they are and with whom they’re playing? This concern is echoed by C.M.

Bundle up with multiple layers! Start with your lightest layer on bottom and build up to your heavy outer layer for the most control, as you can always remove them as the day warms up. Wear a warm hat. Since up to 70% of your body heat can escape from your head, it is important that you wear a hat, preferably one that covers your ears. Wool, fleece, or a combination thereof will keep your head toasty and help you maintain a proper body temperature while snow tubing. Add a waterproof layer while tubing. There is a high probability of being covered in snow while tubing, and wetness will make you highly susceptible to the cold. Also, stay away from wearing cotton clothing next to your skin, because it may absorb snow or sweat which will make you cold. Although you may have put your swim paraphernalia away for way warmer weather, you’ll have to dig them out for your snow tubing trip, as sunlight reflects off the snow. Protect your skin by applying a good sunscreen or sunblock and protect your eyes with sunglasses or goggles. Make sure your gloves are warm, waterproof, and properly sized – if they’re too loose you might get snow inside, but too tight and you might have a hard time holding the tube! Fingers, like other extremities, are very susceptible to frostbite and will be one of the first areas you’ll feel the cold creeping in. Keep your feet and ankles warm with long, thick socks. Like with fingers, protecting your extremities is your first line of defense against the cold.

Once upon a time, if you were thirsty in a public place, you took a drink at a public water barrel, well, or pump, with a...public cup! Ordinarily, there would be a tin cup or dipper near the drinking source, made of metal with a handle and a hook at the end for hanging (looking similar to a ladle), and anyone who was thirsty would use the same dipper for drinking. If these unsanitary conditions weren’t bad enough, the liquid that stayed over in the dipper was often poured back into the barrel.
FINALLY...AN INDIVIDUAL, SANITARY CUP! When Hugh Moore and Lawrence Luellen first brought the idea of using an individual cup for public drinking in 1907, they had in mind to sell water! They were marketing a vending machine that for one penny would dispense a cup of cold water in a individual, disposable paper cup. And it took just a little time to realize that their cups had much greater marketing potential than the water. They promoted awareness that sharing cups spreads germs and diseases, until the disposable paper cup, called the Health Kup, became a popular commercial success. They were later renamed Dixie Cups, and in case you’re wondering, this led to the popular ice cream’s name, sold in custom-sized Dixie cups.

ARE THE OTHER OPTIONS ANY BETTER? • Styrofoam cups (and other styrofoam food-holding products) were banned from the food industry in NYC this past July (as well as other places in the U.S.), due to a decision by the city’s Department of Sanitation that determined polystyrene foam cannot be recycled and is clogging the landfills. (In addition, they are dangerous for young children and very unhealthy.) The ban was overturned since - and is still being argued out by opposing parties. Many say that the wax-coated waterproof paper cups are no better for the environment and can’t either be recycled. That leaves us leisurely sipping our coffees with no definite solution. • Plastic cups are the cheapest to produce and can get recycled, but BPA found on plastic makes them an unhealthy choice for hot beverages. Ironically though, with all the BPA protection we’re giving ourselves by using paper cups, why are we drinking through plastic lids and straws?
WHAT A WASTE! 58 billion paper cups are tossed out annually in the United States alone, draining the following resources: • 20 million trees are cut down to make paper cups every year. • 12 billion gallons of water are annually used in the making of paper cups. • 53,000 homes could be powered every year by energy that’s used to make and dispose of paper cups. In addition to this, is the waste of billions of plastic and styrofoam cups. How many cups do you waste a day? A year? If you use just four cups each day, it amounts to over 1,000 cups each year - for just one person!
CONE-SHAPED CUPS If you ever came across those, you were probably wondering, like I was, Why would someone buy something so impractical? I can’t even put it down between sips. Well that exactly is the point. Coneshaped cups force a person to finish and dispose of their cups, as they can’t just leave them, lying partially-full around someplace. Besides for keeping surfaces free of garbage, they are also money savers, being that they are a lot cheaper to manufacture, hold less liquid, and most people won’t grab a pile to take home.
DRINKING STRAWS • Dentists love straws. They lower the incidence of tooth decay and staining, as they channel drinks - and their acid - directly to the throat, bypassing the teeth. • However, environmentalists do not. Around 500 million drinking straws are used in America daily. That number of straws can fill up 127 school buses! Multiple Jobs And Mortgage Approvals by Ann Zeilingold When approving a borrower for a mortgage loan, the mortgage lenders are not just looking to see if the current income is sufficient to be able to support the mortgage payment, but also if there is a two-year work history that supports the current income and position. Additionally, even if there is a two-year work history, mortgage loans are underwritten by human underwriters who are trained to look for any inconsistencies or “red flags” that will contribute to a “layer of risk,” and if the underwriters feel that there is too much “risk” in the file, they will issue a denial. Not all underwriters are the same. One underwriter may feel that a file is too risky and recommend a denial and another underwriter may feel comfortable and approve the same file. An example is a file that we recently closed. Yossi and Rivka went into contract on a home. Yossi was making $68,000, and he was a foreman for a construction company. Rivka had just gotten a new job as a teacher’s assistant in a school. Yossi had been on the same job for two years, but Rivka had been in college part of the last two years, and even though she had been working consistently, she had multiple jobs in different schools and daycare facilities. The first problem that came up was Yossi’s job. His w-2 for 2014 was only for $18,000. When we requested a letter from Yossi’s employer to explain why his income was now substantially higher, they

said that he was promoted to a foreman because his manager saw immense potential in him. This prompted the first underwriter who reviewed this file to deny the loan because his current income was not consistent and she was uncomfortable with his raise in income. The second underwriter to review the file denied the file, not because of Yossi’s income but because of Rivka’s. Even though she was in college off and on for the past few years, going for a special education degree, the underwriter was uncomfortable with her numerous jobs and felt in general, that the file had “too many layers of risk.” The underwriter said it wasn’t just one thing, but it was many small things, that individually were okay, but together were problematic. The third underwriter who reviewed the file, approved it and the file closed. Go figure… W h e n thinking about pur-

א ר ויס אויף א נסיעה מיטן מגיד- ישיבה :שער אפרים ש י עור הרה"ג ר' בערל שנעעבאלג ש ל יט"א ,וואס מיטן זיין זיסער נתיסדה :על-ידי הרה”ג רבי אפרים אשרי זצ”ל שפראך און פה מפיק מרגליות ,לייגט אדרעס5 Acer Court : ע ר אריין אין די תלמידים יראת- שמים וחסידות. ראש ישיבה :הרה”ג ר’ אשר זעליג גרינבערג שליט”א כ מ עשהו בראשונה כך מעשהו בשניה .אויך אין ישיבה גדולה חזר'ן די בחורים אויף דעם זעלבן סיסטעם, א ז וי אז מען קומט ארויס מיט א אבער מער פון אלעמען איז צו באוואנדערן דעם סיסטעם אין ישיבה ,וואו מען מאכט זיכער אז די ש ל ימות אין די לימודים .די תלמידים פון שער בחורים זאלן געדענקען זייערע לימודים און עס אפרים זענען מעיד אויף זיך ,אז די לימודים וואס זאל ליגן ביי זיי כמונח בקופסה ,אויך נאך וואס זיי זיי האבן געלערנט אין ישיבה ,געדענקען זיי א גאנץ לעבן און זיי האלטן דאס אין איין איבער'חזר'ן .דאס פארלאזן די ווענט פון די ישיבה. א ו יף דעם צוועק איז אוועקגעשטעלט איז גירסא דיונקותא וואס בלייבט אויף שטענדיג ד ע ר "קנין תורה" אין שפיץ פון הרה"ג ר' בערל אייגעקריצט אין זכרון. עס מוז צוגעלייגט ווערן צו די מעלות פון די שנעעבאלג שליט"א ,מיט א ספעציעלן סדר וואו די בחורים לערנען ביי נאכט סדר .דעם ערשטן יאר י ש יבה ,אז יעדער מגיד-שיעור פארמאגט זיין א י ז געווידמעט אויף איבערצו'חזר'ן די לימודים ,מסכתא וואס דאס לערנט ער מיט די תלמידים ,און ב ש עת אין שיעור ב' חזר'ט מען איבער אויך די עס ווערט נישט ארומגעטוישט פון איין יאר צום לימודים פון פאראיאר ,און אין שיעור ג' חזר'ט מען צווייטן .אין שיעור א' לערנט מען שטענדיג מסכת א י בער די לימודים פון אלע פארגאנגענע יארן .נדרים ,בשעת אין שיעור ב' לערנט מען קידושין און סוף יאר פארהערן זיך די בחורים אויף די לימודים ,אין שיעור ג' לערנט מען מסכת בבא-קמא. א גרויסער מסיבה ווערט אפגעראכטן פאר די בחורים ,און די דאזיגע תלמידים וואס פארהערן זיך סדר היום דער סדר היום אין ישיבה הויבט זיך אן אום אויף אלע זייערע לימודים ,באקומען פון די ישיבה א זילבערנע בעכער .יעדע יאר פארן די בחורים ז י בן-אזייגער ,מיט דער פארטאגס סדר פארן
עס האט נישט גענומען לאנג און דער גוטער נאמען פון די ישיבה האט זיך פארשפרייט אויף אלע עקן ,בחורים האבן זיך גענומען איינרייסן אנצוגענומען ווערן אין די ישיבה.

"זאגט די הייליגע גמרא ,אמר אביי ,אמר רבא"... היל ע כט דער אור-אלטע גמרא ניגון אפ צווישן די ווענט פון 5עסער קארט אין מאנסי ,דער קול התורה קלונגט אפ און דער קול הערט זיך אין די גאנצע וועלט ,דורך די צענדליגע תלמידים וואס זענען ארויסגעקומען פון ישיבה ,און דינען היינט אלס מורה-הוראה אין דער גרויסער וועלט. קומט אויס אז רש"י האלט אז א מיגו - להוציא איז יא חייב! דו ווילסט זאגן אז רש"י קריגט זיך מיט - די גמרא ,אדער אז ער האט נישט פארשטאנען די רייד פון די גמרא? – חס-ושלום אזוי צו זאגן. ו ו אספארא פארגלייך איז עס? – די - גמרא רעדט פון מיגו לחייב בשעת רש"י רעדט פון מיגו להוציא ...עס איז אן אנדערע סוגיא אינגאנצן, און ס'האט נישט קיין שום שייכות מיט די גמרא... אזו י זיצן הונדערטע בחורים און זענען זיך מפלפל בסוגיית התורה ,זיך אריינווארפנדיג ראשם ורובם און די סוגיית הש"ס ,נישט האבנדיג קיין שום שייכות מיט דער גשמיות'דיגער וועלט פון ארום. איר זענט אנגעקומען צו ישיבת שער-אפרים אין מאנסי – פון די חשוב'סטע מקומות התורה אין אונזער שטאט מאנסי ,א ישיבה וואס איז טאקע סטאנציאנירט ביי אונז אין שטאט ,אבער איר קול קלינגט אפ און הערט זיך אין די גאנצע וועלט.
התיסדות הישיבה אין יאר תשמ"ג ,זעקס יאר נאך וואס דער בארימטער כולל מכון-להוראה איז אויפגעשטעלט געווארן ביי אונז אין שטאט ,דורך דער בונה ומקים אהלה של תורה ,הרה"ג ר' עזריאל טויבער שליט"א ,און די פירות דערפון האבן זיך שוין גענומען שפראצן אין די גרויסער תורה וועלט, האט ר' עזריאל איינגעזען פאר וויכטיג צו פלעכטן נאך א רינגל אין דער קייט פון מוסדות-התורה

וואס ער האט געגרינדעט. ר' ע זריאל האט דעמאלס איינגעזען ,אז עס זענ ע ן פאראן בחורים מוכשרים ,בעלי-כשרונות ווא ס קענען פיל אויפטון און צוגעבן פאר די תור ה וועלט ,אין פאל מען זאל זיי אויסשלייפן און אויסארבעטן זייערע כשרונות ווי עס דארף צו זיין .ער האט דעמאלס מיסד געווען די ישיבה "מכ ו ן-להוראה" – אזוי ווי זי האט געטראגן איר נאמען אין די ערשטע יארן פון איר גרינדונג .אין די ישיבה האט מען נישט אנגענומען אבי ווער ,נאר אזעלכע וואס ר' עזריאל האט פארשטאנען אז זיי זענען מיועד לגדלות און עס קען ארויסוואקסן פון זיי כלים ,האט מען אנגענומען אין ישיבה מיט די מטרה זיי ארויפצוארבעטן על דרך הסלולה .פון די ד אזיגע בחורים האט מען נישט גענומען קיין שכר-לימוד. די י שיבה האט זיך געעפנט מיט א כיתה פון אכט בחורים ,אויף דער לענאר גאס אין מאנסי .ר' עזריאל האט לכתחילה נישט געוואלט אז עס זאל זיך געפינען מער פון אכט בחורים אין א כיתה .זיין מטרה איז געווען אז מען זאל קענען ארבעטן מיט יעדן תלמיד באזונדער ,אויסשלייפן זיינע כשרונות און אים ארויפברענגען על דרך התורה והמסורה, אויף א הויכער ניווא. א קורצע צייט נאך דער גרינדונג פון די ישיבה, האט ר' עזריאל איינגעלאדנט הגאון ר' אשר זעליג גרינבערג שליט"א ,וועלכער האט דאן געלערנט אין כולל מכון-להוראה ,אז ער זאל קומען דינען אלס ראש-ישיבה אין דער נייער ישיבה וואס ער האט געגרינדעט ,און מיט זיינע חינוך כשרונות אויפארבעטן די בחורים און ארויסברענגען זייערע כשרונות לאור עולם.
שמו הטוב הולך לפניו עס האט נישט גענומען לאנג און דער גוטער נאמ ע ן פון די ישיבה האט זיך פארשפרייט אויף
אלע עקן ,בחורים האבן זיך גענומען איינרייסן אנצוגענומען ווערן אין די ישיבה .אז די ישיבה האט געעפנט אירע טויערן און עס איז נתרבה געווארן ספסלי בית-המדרש ,האט ר' עזריאל איינגעזען אז עס פעלט אויס א פארגרעסערטער ארט צום באנוץ פון ישיבה .אין יאר תשמ"ז האט ער אפגעקויפט א בנין אויף עסער קארט – וואו די ישיבה געפינט זיך היינט ,און האט דארט סטאנציאנירט די ישיבה. ר' עזריאל איז געווען פארמישט אין די טעגליכע אקט י וויטעטן אין די ישיבה ,ער האט זיך כסדר אינ ט ערעסירט אין די בחורים ,ארומגעטוישט מגידי שיעורים כפי הצורך .יעדע מיטוואך איז ער געקומען דארט האלטן א שמועס פאר די בחורים, שטענדיג געדאוונט שחרית און מנחה אין ישיבה, ווי אויך פלעגט ער דאווענען שבת אין ישיבה .אין א מיטל מחזק צו זיין די בחורים זיך צו פארהערן בלע ט ער גמרא ,פלעגט ער באצאלן בולעטן קיין ארץ-ישראל ,פאר די בחורים וואס האבן זיך פארהערט גמרא רש"י ותוספות .ר' עזריאל פלעגט אויך אריינלייגן גרויסע כוחות אין דער חלק העיון, אוי פ נעמענדיג שטארקע מגידי-שיעור ,לומדים מפו ל גים וואס זענען באקאנט אין דער עולם התורה מיט זייער למדנות און כח התורה.
הבן יקיר לי "אפרים" ויהי כי ארכו הימים ,ווען די ישיבה איז געשטיגן און איז געווען א שטאלץ פאר דער עולם התורה, האט ר' עזריאל געבעטן פון ר' אשר זעליג ,אז ער זאל איבערנעמען דעם חלק הגשמי פון די ישיבה, אין צוגאב פון דער חלק הרוחני וואס ער האט געפירט ביז דאן .אין יענע תקופה ,אום פסח תש"נ לפ"ק ,איז אריינגעקומען אין ישיבה הרה"ח ר' יודל אשר י הי"ו ,וועלכער האט איבערגענומען דעם חלק הגשמי ,ווערנדיג דער מנכ"ל אין ישיבה. אין יאר תשנ"ב לפ"ק ,האט הגאון האדיר הרה"ג ר' אפרים אשרי זצ"ל ,בעמח"ס שו"ת ממעמקים,
דאווענען ,וואס איז געווידמעט אויף שיעור-עיון. ביז אכט-אזייגער לערנט מען און דאן שטעלט מען זיך דאווענען שחרית .אום צען אזייגער הויבט זיך ווידער אן דער סדר אין ישיבה ,ביז פערטל- צו-איינס ,וואס דעמאלס איז פאראן א שיעור ביז פערטל-צו-צוויי .א-פערטל-צו-דריי דאוונט מען מנחה און דערנאך איז שיעור פשוט .אום זעקס- פופצן איז נאכטמאל און שפעטער א-פערטל-צו- אכט איז נאכט-סדר אויף א שעה צייט .אום ניין- דרייסיג איז מעריב און דער זמן שינה איז א שעה דערנאך ,אום צען-דרייסיג. אין ישיבה איז פאראן א קפידה ,אז מען נעמט נישט אריין מער פון דרייסיג בחורים אין א כיתה. היינט צו טאגס זענען די כיתות איבערגעפילט אז עס איז פאראן ארום הונדערט בחורים אין ישיבה קטנה.
ישיבה גדולה אז עס איז געווען א הצלחה אין די ראמען פון ישיבה קטנה ,און די בחורים האבן קונה שלימות געווען צווישן די ווענט פון ישיבה ,איז געווארן א גרויסער פארלאנג פון די הורי התלמידים ,ווי אויך פון די תלמידים זעלבסט ,צו מיסד זיין א ישיבה- גדולה ,וואו די תלמידים זאלן קענען ממשיך זיין מיט זייערע לימודים און שטייגן מעלה מעלה. דען פארוואס זאל מען זיך אפשטעלן מיט ישיבה- קטנה און דערנאך זיך מוזן שיידן פון די ישיבה- ווע נ ט פון שער-אפרים?! – עלטערן האבן דאן געלייגט א גרויסער דרוק אויף די הנהלת-הישיבה, אז זיי זאלן אויסברייטערן אירע טויערן און עפענען אויך א ישיבה-גדולה. אין יאר תשס"ו לפ"ק ,איז דער ישיבה-גדולה שער – אפרים געעפנט געווארן .די ישיבה-גדולה האט זיך אנגעהויבן מיט א כיתה פון דריי-און- פער צ יג בחורים .מען האט דעמאלס געדינגען א ה ו יז ,אויסגעהאקט די הויז פון אינדערווייניג און דאס פארוואנדלט אין א בית-המדרש פאר א י ש יבה-גדולה .קומענדיגע יאר האט מען אנג ע פילט נאך א כיתה ,און אין א קורצע צייט אפש נ יט פון בלויז צוויי וואכן ,האט מען דאן צוגעבויעט צו דעם הויז נאך א שטיקל ,צו קענען אקאמענדירן א פארגרעסערטע צאל פון בחורים. א יאר שפעטער האט מען אנגעפילט אין ישיבה א דריטע כיתה. אזוי ווי אין ישיבה קטנה ,איז אויך אין ישיבה- גדולה פאראן א סיסטעם ווי אזוי די בחורים חזר'ן איבער זייערע לימודים וואס זיי לערנען אין ישיבה, אבער דא ווערט עס געטאן אין זייער אייגענע צייט.
די בחורים גייען ארויס פון די ישיבה יארן מיט אן אייגענעם קנין נצחי ,וואס וועט זיי באגלייטן אויף א גאנצן לעבן. עס דארף ארויסגעברענגט ווערן די שובבי"ם תקופה אין ישיבה ,בשעת עס דערקענט זיך דער קול התורה צווישן די בחורים ,וועלכע לערנען שעות רציפות און די טעג וואס איז מסוגל אויף התע ל ות רוחנית .סוף פון שובבי"ם מאכט מען א מסיבה ,וואו עס ווערט געגעבן פרסים פאר די בחורים וועלכע האבן געלערנט שעות רציפות. נאך א דערהויבענע זמן ווערט אפגעצייכנט אין ישיבה ,דאס איז אין די חדשים פון תמוז – אב .דוקא אין די צייט וואס אין די וועלט הערשט א שטיקל התרשלות ,וויבאלד עס איז שוין סוף זמן ,אבער צוו י שן די ווענט פון שער-אפרים לערנט מען פלייסיג .מען האלט אצינד פאר די גרויסע בחינה, ווען די בחורים פארהערן זיך אויף זייערע לימודים וואס מען האט געלערנט במשך דעם זמן און די פריעדיגע זמנים ,און די בחורים חזר'ן איבער ,אז זיי זאלן קענען גוט ביים פארהער.
תורה וחסידות משולבות אין ישיבת שער-אפרים איז מען מחנך די בחו ר ים נישט נאר צו לערנען .חינוך איז דער באד י יט ,אז מען ברענגט אויף דעם בחור צו א אידישע לעבן ,אז ער זאל וויסן און טון אלעס וואס עס פארלאנגט זיך פון א איד ,א בחינה פון 'והעמידו תלמ י דים הרבה' – "אוועקצושטעלן" תלמידים אויפן דרך הסלולה .דאס נעמט אריין אין זיך אויך ירא ת -שמים ,מידות טובות וחסידות און אלעס וואס א איד דארף האבן. די ש בתים אין ישיבת שער-אפרים זענען דור כ געפלאכטן מיט ווארעמקייט ,חסידות ויר א ת-שמים .שוין אנגעהויבן פון ליל-שישי, בשע ת עס קומען פאר חבורות פאר די בחורים, אינאיינעם מיט די ראשי-חבורות ,וואו עס ווערט איבערגעגעבן שמועסן אין חסידות. ווער רעדט נאך פון די שבתים אין שער אפרים, ווא ו עס הערשט א דערהויבנקייט צווישן די בחורים .יעדע וואך ווערט אראפגערופן איינע פון די רמ"י הישיבה אדער אנדערע אנשים חשובים, וואס פירן דעם שבת פאר די בחורים ,די תפילות וסעודות שבת ,אינאיינעם מיט א באטע ושלש- סעודות .מוצאי שבת איז פאראן א מלוה-מלכה, אינאיינעם מיט סיפורי צדיקים ,דורך הרה"ג בנש"ק הרב בערל שנעעבלאג שליט"א. און צו תורה וחסידות דארף אויך מיטקומען גמילת-חסדים ,זענען די בחורים אויפן ארט אויך
עוס ק אין גמילת-חסדים ,וואס גייט אינאיינעם, האנט ביי האנט מיט תורה וחסידות .אין ישיבה איז פאראן א קרן חתנים ,וואו מען שטעלט צוזאמען געלט פאר בחורים נצרכים ,וואס דארפן צוקומען צו שטיצע ביים חתונה האבן .די בחורים שטעלן כסד ר צוזאמען געלט .יעדע מוצאי שבת נחמו ווערט געפראוועט א מלוה-מלכה פאר די בחורים, מעורר צו זיין דעם ענין פון צוזאמענשטעלן געלט פאר החזקת חתנים ,ווי אויך איז פאראן דורכן יאר א גרויסער ראפל ,וואו מען ראפלט אויס ווערטפולע זאכן ,און די געלט גייט פאר די החזקת חתנים. היינט צו טאגס געפינען זיך אין ישיבה-גדולה צווישן הונדערט-און-פופציג און הונדערט-און- אכציג בחורים .די הצלחה פון די ישיבה איז באקאנט איב ע ר די גאנצע וועלט ,אלס אויסגערופענער מקום תורה וחינוך ,בשעת די פירות וואס קומען ארויס פון ישיבה זענען באקאנט אין דער גאנצער עולם התורה ,אלס חשוב'ע יונגעלייט און מורה- הוראה בישראל.
