WHAT ARE WE PORTRAYING?

I have recently noticed a disturbing trend in today’s advertisements. On more than one occasion, lately, I was pained to see heimishe store owners advertise their merchandise using goyish models (or children dressed up like goyim). Is this the image we aspire to reach? We cannot measure the impact this has on us, who are so impressionable to subtle messages and inflections. It definitely is worthwhile for business owners to extend the extra effort and investment needed to produce ads that project our true values with a heimishe look. Looking forward to a change

A LESSON FOR GENERATIONS

I applaud Libby Lichter for her article

titled My Chance (Issue #69, Page 122) for her description of the rationale that she used to hold it together and stay calm in the face of a freezer filled with her carefully prepared Yom Tov cooking which was rendered completely unusable because one of her children had mistakenly pulled the plug of the freezer when he plugged in his keyboard. It is important that both Libby and the rest of your readership understand just how far this (not so simple) act of heroism goes toward the investment in the most important future assets that Libby will ever have, namely her doiros. Libby’s story reminds me of the “onion story,” in my book Are Your Hands Full? Volume 1, (page 207), which occurred fifty years ago immediately after licht zinden on the first Seder night. My twin brothers-inlaw (then aged five) swung on the doors of a metal Pesach cabinet and knocked it over with all its contents, which included all the Pesach dishes and belongings that my in-laws owned at that time. The family still remembers how my shvigger a”h focused on one of the many onions that rolled out of the cabinet and across the floor in order to stay calm in the face of this last minute, pre-Yom Tov loss. Without realizing the connection, I also recounted the equally famous “hose

Volume 2, (page 102), that took place when my husband (age 17) was a learning Rebbe in camp and his teenage campers hosed down his cubby, clothes, mattress and bed late one night when he was out at a meeting. He was able to stay completely calm and not react to his campers at all, until after a few days, the campers could not contain themselves any longer and begged him to react (because unfortunately, that is what most children are used to). It was only when some of my readers pointed out to me that the “hose story” was the son of the “onion story” that I realized that the ability to withhold impulsive reaction in the face of undesirable events is probably half inherited and half learned (nature and nurture) but definitely can (and should) be passed down from generation to generation. Libby, although you may not see the immediate transmission of the lesson you taught your children during this difficult time, you have handed your children a gift of a lifetime. You have demonstrated to them that the people in your life are more important than the objects in your life, and that behavior far outweighs belongings. May the Ribono shel Olam continue to provide you with beautiful Yom Tov meals (albeit in the manner that He sees fit), and may you be zoche to teach this valuable parenting lesson for many generations to come. I was having a big dilemma. My business required me to use the internet. However, the company I was getting my computer services from made an error and I had unfiltered access to the internet. My Rebbe is extremely outspoken against the internet, so I knew I had to do something. I sent many messages to the company to put a filter on my computer but they did not respond. At that time, I was in the middle of negotiations with a potential customer. The problem was that to service this customer would require the internet. I was struggling between getting rid of the internet and the justifications for why I needed it. Finally, one morning, I decided I would no longer have the internet in my house and I disconnected my access. It soon became apparent to me that by doing the ratzon Hashem, I did not lose out. Within two minutes of the internet being sealed off, a new customer contacted me, one with an even more lucrative and exciting deal! Not only that, but his business came with the haskama of my own Rebbe. I felt as if Hashem had sent me a Heavenly message that He was proud of my actions!

With the proper preparation and Hashem’s help, you can ready your body for this very important day — allowing you to focus solely on the lofty nature of Yom Kippur. Here are some tips to help you fast both easily and meaningfully.

OWER UP GEAR UP FOR THE P The week before any fast — especially a long one like Yom Kippur — is the perfect time to get your body into optimal shape. The following tips should be started several days before the fast.

Kick the caffeine

If you are a coffee drinker, avoid the headache and lethargy associated with caffeine withdrawal on the day of Yom Kippur, when your body is at its weakest. Taper off slowly over the course of a week, and you’ll be able to handle the fast much more easily.

Fill ‘er up One of the main reasons that people feel excessive hunger is not for lack of food. It’s actually because their bodies are starved of nutrients. If you haven’t been taking vitamins and eating well-balanced meals, use this time to get yourself on track. Take a daily multi-vitamin and consider being tested for any deficiencies. And of course, up that vegetable intake!

Soak up the saturation Most people on these shores are at least somewhat dehydrated. Use this week to drink, drink, drink! And by “drink” we mean water! Aim for at least eight cups daily, and again, up that fruit and vegetable intake, since plants are composed of mostly water.

Shake it up Eat breakfast, lunch, and supper at set times each day? You’re likely to feel hunger pains kick in during those times during the fast. Unless, of course, you retrain your body to not expect food at a specific time. It might be worth it for you to vary your mealtimes throughout the preceding week to “trick” your body on the day of the fast.

ORE THE DAY BEF The day before Yom Kippur begins is the time to properly fuel up for the fast ahead. Here’s some great ways to do that:

Start off on the right foot

Have a well-balanced breakfast at the beginning of the day. It should include a healthy carbohydrate, a serving of protein, and fruits or vegetables. It’s simple math: the better you feel when beginning the fast, the better you’ll fast!

Have another nosh! Eating throughout the day before the fast is a mitzvah, but you’ll want to do it right. Cut up melons and other fruits for easy snacking, and munch on them throughout the day. Fruits are great prefast, because they slowly release the water inside, helping you to stay hydrated longer.

Consume the right stuff You’ll want to eat and drink things that hydrate

you and don’t stimulate thirst. Salt, chocolate, tea, soda, coffee, and alcohol are all pre-fast no-nos. Focus on the complex carbohydrates at the Seudah Hamafsekes. They’ll keep you satiated, and actually saturated, too! Complex carbs bond with water and keep it in your system as it slowly digests. Healthy fats like avocado and olive oil should be included in your meal, as they prolong digestion, helping you to feel satisfied longer. Add a little protein to make you full, and of course…

Camel up Now’s the time to drink, drink, drink! Keep filling up those cups and fill up your reservoirs to help you through the fast. Drink only water, or make your own electrolyte drink to keep up you super-saturated. Just throw the following ingredients into the blender until the honey is well-incorporated and then drink up! -1/4 cup of freshly squeezed lime juice -1/4 cup freshly squeezed lemon juice -2 cups fresh water -1/8 teaspoon of sea salt -2 tablespoons honey

FAST DURING THE Even while the fast is in full swing, there are steps you can take to keep you going.

Mind over matter

This one may seem obvious, but when your energy begins to fade, it might be hard to think of anything else. Try to keep your focus on the spirituality of the day if possible, and if not, stock up

on inspiring reading material that is fit for Yom Kippur to distract yourself. Caring for children is also a great way to keep your mind busy. Don’t just care for them by rote; live in the moment and use the time to really focus on them and their needs. They’ll feel great, and you’ll feel better as well!

Take a whiff Many people prepare besamim before a fast to revive their spirits when weak and to help them reach 100 brachos. Cloves stuck into a lemon is a great pick-me-up to be used throughout the fast.

Take a nap Schedule a nap into your day. Not only will it break up the day, but you’ll also wake up feeling less hungry due to chemical changes in the body.

Break the fast correctly Don’t run for the cake, tempting as it may be. Go for the water, juice, and electrolyte drink if you still have any left. After hydrating, ease into the fruits, and then slowly into the heavier foods, like carbs and proteins. Your body will thank you!

Suppose that the Rosenfeld family did not attend the chasunah of their cousin, and suppose that the cousin was angry at them for the apparent snub. There are two types of forgiveness that the Rosenfelds can attain: forgiveness as individuals, and forgiveness as a family. One way they can be forgiven is if Mr. Rosenfeld delivers a generous gift to the cousin along with a heartfelt apology on behalf of the family. It is safe to assume that the cousin will not harbor resentment against any individual member of the family after that. Another way to make amends is for each member of the Rosenfeld family to apologize and be forgiven, one by one. If all of them would do this, the family as a whole would be forgiven. If only one of the Rosenfelds would apologize, the cousin might forgive that individual, but not the family. There are two types of kapparah that can be attained on Yom Kippur: kapparas yachid (the atonement of an individual), and kapparas tzibbur (the atonement of Klal Yisroel as a whole). Klal Yisroel is “k’ish echad b’lev echad” — like one person with one heart (Rashi on Shemos 19:2). Klal Yisroel is an entity unto itself. Klal Yisroel received the Torah as one entity, and Klal Yisroel requires kapparah as one entity, separate from the kapparah of each individual. When the Bais Hamikdash was standing, the avodah of the Kohen Gadol achieved kapparas tzibbur. The Rambam says

that when the Kohen Gadol sent the sair hamishtaleach over the cliff, he was bringing a korban tzibbur. The avodah of the sair hamishtaleach brought atonement for Klal Yisroel as a whole as well as for every individual Jew for all his sins except those that incur kares — even if the sin was intentional, and even if that Jew failed to do teshuvah. (Rambam, Teshuvah 1:2) The limitation for this powerful, sweeping kapparah was that the sin not be one that cuts the individual off from Klal Yisroel — kares. As long as the Jew maintained his connection to Klal Yisroel, his individual sins were forgiven through the collective kapparah. If the individual chose to do a sin that incurred the penalty of kares, then he cut himself off from Klal Yisroel and was no longer included in the kapparas tzibbur. In order to attain kapparah for himself, he would need to do teshuvah on his own. We do not have a Bais Hamikdash today. We do not have a Kohen Gadol. We do not have a sair hamishtaleach. In order to achieve kapparah as individuals, we must do teshuvah as individuals. Each and every person must take full and complete responsibility for his or her own actions and do teshuvah accordingly. Yes, it is far more difficult to achieve kapparas yachid without the Bais Hamikdash — but it is still possible. But what about Klal Yisroel? How can we attain kapparas tzibbur without a Bais Hamikdash, without a Kohen Gadol,

and without the sair hamishtaleach? Whereas previously the individual received kapparas yachid through the kapparas tzibbur of Klal Yisroel, today it is the reverse. Only if each individual does teshuvah can Klal Yisroel attain kapparah. Rav Soloveitchik, in his work “Al HaTeshuvah,” notes that this is why we recite Viduy twice during each tefillah on Yom Kippur — once for each individual, and once for the tzibbur. First, each individual recites Viduy during his private Shemonah Esrei. Then, the shaliach tzibbur recites Viduy during chazaras hashatz. Rav Soloveitchik points out that only after we do teshuvah as individuals do we hand it over to the shaliach tzibbur to do teshuvah on behalf of the tzibbur. Even without a Bais Hamikdash, and even without the avodah of the Kohen Gadol, it is still possible to attain kapparas tzibbur, but there is a condition: each of the individual components of that tzibbur must first do teshuvah. That means me — and you — and every one of us. Our own personal kapparah is on the line on Yom Kippur, but so is that of Klal Yisroel. Klal Yisroel needs each and every one of us. Klal Yisroel needs you. May we all appreciate the significance of our teshuvah on Yom Kippur, and may we all merit the gift of kapparah. May we attain kapparah for ourselves as individuals and for all of Klal Yisroel this Yom Kippur, and be zocheh to the coming of Moshiach tzidkeinu, bimheira v’yameinu.

EREV YOM KIPPUR • It is a mitzvah to eat on Erev Yom Kippur. • It is an accepted minhag to eat two Yom-Tov’diga seudos on Erev Yom Kippur. • Fish should be eaten at the first seudah. • At the Seudas Hamafsekes, it is preferable not to eat thirstinducing foods. • If one ate the Seudah Hamafsekes, and still wishes to eat or drink more after the seudah, one should have this in mind before benching. • One should stop eating before shkiah. • One should daven Mincha of Erev Yom Kippur with Viduy before the Seudos Hamafsekes. • One should tzind licht as on Shabbos and say the bracha of “Lehadlik ner shel Yom Hakippurim.” Women who make a Shehechiyanu when benching licht should not repeat it at Maariv in shul. • Tables should be covered as on Shabbos with white tablecloths.

In addition to all forms of work that are forbidden on Shabbos, there are additional prohibitions, listed below.

EATING AND DRINKING • It is forbidden to eat or drink even the smallest amount. • Chazal rule that children who are not bar or bas mitzvah, should not fast for a full day. • Healthy children from the age of nine should preferably fast at night and a couple of hours at the beginning of the day. Below this age, children should eat as usual. • Since children are exempt from fasting, there is no restriction to the quantity of food that they may eat. They may eat Yom Tov meals. The following circumstances may obligate a person to eat on Yom Kippur In any of these situations a competent Rav and a doctor must be consulted: • If a person is ill and the doctor is of the opinion that fasting poses even the slightest

danger to life, then the person should both eat and drink. A person with an existing condition (of a nature that is known that one should not fast in such a condition) may not fast. In such situations, it is necessary to consult a doctor. A person who has an existing condition where dehydration could pose a danger to life, should not fast. (This applies to many elderly people with existing medical conditions.) Healthy women in extenuating circumstances are mechuyav to fast (unless advised otherwise by their Rav). If a doctor is of the opinion that fasting may be detrimental, chas vesholom, and the doctor gives a valid reason why it is dangerous for “this particular” woman to fast, she may eat or drink less than the shiur. A doctor and a Rav must be consulted under such circumstances. Women in special situations who have other medical conditions, for example, diabetes, thyroid problems, severe headaches, or any other

symptoms of dehydration etc., may not fast. A woman is forbidden to fast for the first 72 hours after birth. If a woman feels that she does not need to eat, she should eat less than the shiur (specified below). If, during the fast, she feels that she needs to eat normally, she may do so. Between three and seven full days following birth, the halacha is slightly stricter. In any situation where eating is permitted, she may eat only small quantities, less than the shiur, unless there are complications. If she has a need to eat, she may do so even if her doctor says the opposite. After seven full days, she is mechuyav to fast like everyone else, unless complications arise. A woman whose newborn relies on her sustenance is mechuyav to fast. Baruch Hashem, in today’s days, baby formula, which can be used as a substitute for a short period, is available. It is advisable to accustom the baby to formula a few days beforehand to avoid complications arising on Yom Kippur. In extremely unusual circumstances when a sensitive baby cannot tolerate anything else, it may be possible to allow the mother to drink small quantities. Such serious matters should be determined only after consulting with a Rav.

In all the above conditions, if a person needs to eat, one should start with the following shiur of food and drink: • The maximum quantity of food that may be eaten at one session is 30ml (one fluid ounce). This measurement is a volume and not a weight,

and is the same for all types of food. A person who knows (or suspects) that he will need to eat, is advised to prepare in advance accurately measured quantities of food. The liquid quantity is a cheekfull. For an average person, this is approximately 35ml (just over one fluid ounce) and for a smaller person this could be 30ml. The food and drink should be plain, since in this situation, the amount of pleasure must be minimized. One who must eat should eat only as often as is necessary. Furthermore, one must wait nine minutes after one has finished eating, before eating again. If a doctor advises that this interval is too long, or the person eating feels it is too long, the interval may be may be reduced to five minutes. In some situations it may even be permitted to reduce the interval to two minutes. One is not mechuyav to eat and drink separately. Therefore, it is muttar to eat food of the allowed shiur, and also to drink liquid of the allowed shiur at the same time. If a doctor advises full eating and drinking, one must comply. Refusal to eat and drink in all the above situations is issur d’Oreisa.

MEDICATIONS • A person who needs meds may swallow bitter medicines in tablet or capsule form, but not if they are pleasant tasting or tasteless. • If one cannot swallow the capsule or tablet without any liquid, and it is vital to take the medication, one should take it together with a bitter tasting liquid.

• One who takes daily medications for existing conditions (blood pressure, thyroid, etc.) should not, chas v’shalom, omit taking it on Yom Kippur.

WASHING • It is forbidden to wash oneself or any part of one’s body. • It is permitted to wash one’s hand until the knuckles under the following circumstances: • After using the bathroom • After touching a body part that is generally covered • After scratching one’s scalp • After touching one’s shoes • Negel vasser should be only until the knuckles.

ADDITIONAL PROHIBITIONS • One may not use perfume, makeup, or any other forms of creams. • Wearing leather or leathercovered shoes is assur. • It is a minhag not to wear gold jewelry.

TESHUVA • It’s a chiyuv to do teshuva and to say Viduy. The main part of Viduy is to say .‫אבל אנחנו ואבותינו‬ ‫חטאנו‬ • There is a mitzvah to ask mechila. • Sins against people require mechila from the offended party in addition to forgiveness from Hashem. •

MOTZEI YOM KIPPUR • After Yom Kippur, one makes Havdala on a fire that was on all Yom Kippur. • It is a minhag to eat a YomTov’diga seudah after Yom Kippur.

Spring Valley Train Crash Kills 1 Injures 114 in Hoboken Rush hour turned into chaos in Hoboken on September 29th as the 7:23 New Jersey Transit train out of Spring Valley crashed through a wall at Hoboken Terminal, a busy station where many commuters switch to Manhattan-bound PATH trains. Train 1614, which runs on the Pascack Valley Line, was carrying about 250 people at the time of the accident. After going through a bumper stop at the end of the track, the train continued for approximately 40 feet, becoming temporarily airborne and hitting the wall of an adjacent waiting room. While there were dozens of injuries, there was only one fatality, 34 year-old Fabiola Bittar Da Koon, who was standing on the platform when

the train came barreling through the station at 8:45 AM. Structural damage to the historic station has been hampering investigations and work began one day after the crash to shore up the collapsed roof which fell onto the train. Asbestos in the building is another concern that slowed early recovery efforts. “We’re unable to access any of the three cars because the canopy [of the building] is lying on top,” said Bella Dinnh-Zarr, vice chairman of the National Transportation Safety Board. Both the Federal Railroad Administration and the National Transportation Safety Board are investigating. (The Journal News)

IRS Warns of Fake Email Scam After having received numerous reports of fraudulent emails containing bogus tax bills, the Internal Revenue Service is warning the public to be on the alert. The emails contain a notice label CP2000 for the 2015 tax year and instruct recipients to mail a check to the Austin Processing Center with a post office box address. Genuine CP2000 notices from the IRS would arrive only via regular postal mail and never through email.

Other tips that the email is a scam include references to the Affordable Care Act which request information about 2014 coverage and letter number 105C listed on the payment voucher. Anyone receiving emails of this nature should forward them to phishing@irs.gov and then delete them without opening any attachments or clicking on any links. (Rockland Daily Voice)

Rockland-Born Fire Chief Dies in Bronx Building Explosion More than 10,000 firefighters flew to the Hudson Valley to honor FDNY Deputy Fire Chief Michael Fahy who died in a house explosion in the Bronx on September 27th. Fahy, who grew up in North Rockland, was directing operations at the site of a suspected gas leak when the building exploded. The 44-year-

But her rehearsed speech isn’t even listened to, as people just throw her a bill and close the door. Two houses were well lit, but soundless. A closed door on a lifeless house guards it differently than a house in which people reside. Malka’la could feel it, after walking up the stairs, knocking, waiting, listening soundlessly for movement, giving up, retreating. She shrugged. She now had $7. Walking down the stairs, her insides shivering, her skin on fire, the brunt of desperation hit her. Seven dollars? When she needed, had dreamed of, had hoped for, at least $10,000? She was so, so tired. A half hour had long come and gone. Trudging in the snow, from one wide lawn to the other, was taking so much time. She felt weak, as if the screaming winds could whip her up and fling her from one end of the world to another. If only it could. Deliver her home, back home, where she should have warned herself not to come here, but she hadn’t, because she couldn’t, because it was too important for her to survive. She should go back to her lodg-

ing. But she had to continue. Just one more house. No one answered. At the next house, she heard voices. And still, no one came to the door. Even as she knocked loudly, letting her frozen fingers fall and crash on the cold door, they did not stop what they were doing. The next house earned her a dollar. She now had eight. I can’t do this anymore. She had to go back to the Kahns’. If only to warm up those feet that now felt like two ice pillars, which took all of her coordination just to pick up and move in front of her body, in the high drifts of snow. Snow. They said it was magic, they said it was like manna, real stuff falling from the sky. A white carpet, a sprinkling of sparkles, of shapes, of a material in which you can play, revel, build, and which then melts away. “Whoever has not seen snow, has not seen transformation in their life,” they said. They neglected to talk about how evil, how bitterly cold, how stub-

born and thick and dangerous it was. Near the Kahn home, she fell and stumbled, snow clinging her, melting on her sweater and inside the weave. They had warned her about being buried. She fumbled her way up the side stairs, even as the enemy, the snow, kept clinging to her. Pulling her down, stalling her with its temperature. She had a hard time turning the knob on the door, fumbling with her frozen fingers. She tried turning it with her palm, but it wouldn’t go. “Open. Just open already,” she cried and the tears that spilled involuntarily froze on her cheeks. You were so brave. You were so good. You were so strong… but how could she tell herself these words when she made $8, not even enough to buy a bag of laundry soap. You did the right thing. But she hadn’t. The Kahns had warned her. That it was dangerous. That she might fall. That it was too cold. It might have been

She finally took all of her strength to force her cold fingers on the freezing doorknob, to bend them despite their stiffness, to turn that knob if her hands had to stay stuck to it. It was locked. She didn’t remember locking it. She stumbled back down and around to the main entrance. She

You nearly lost a limb out there.” Gella had her stand at the sink, her feet on a fluffy towel, the cold water running incessantly over her frozen fingers. It burned, the more they thawed, and the water shot arrows of fire up her arms. She stood there at the sink, burying her feet deeper

one side of her heart was an impatience, a clear realization that when she said yes to her cousin, she had gotten herself involved deeply and impossibly with a “case” she couldn’t handle, because it might pull her in more and more. Malka’la might require more than lodging and food — assistance, introductions, clothing, everything. And yet the connection she felt to this strong and frail woman. Here was a mother. A mother who willed herself into a snowstorm — in a sweater! — for her children. A mother who fought, who put her own dignity and her own comfort on the line. Gella remembered when she was first introduced to a mother’s love, and it wasn’t even to her own children. Her mother, a Holocaust survivor, suffered often from attacks of all sorts, gall

bladder, rage — it became necessary for someone to care for the young ones, and Gella, a girl of eight, would take their hands, walk them to school, take down her own savings can, and go buy them kipperlach, to eat for recess snack. A mother. Each child deserved one. “Malka’la, we’ll figure this out together. You will not go home empty-handed. But rushing into headlong confrontations with the problem doesn’t bring results. As you can see.” “Yes, $8.” Malka’la brought herself back to the present, to the burn in her arms and fingers, and saw how her skin was red and peeling, shedding itself in an effort to flee the scene, even as she moistened it with a continuous flow of water. “I’m not in a privileged position. I don’t have the luxury to wait.” “None of us do, when it comes to our children,” Gella said. As pitiful as this woman was, she was also, first and foremost, a woman. A mother. A person with disappointments and hopes. “But we have to think of something. A woman collecting door to door? I think we’ll need to come up with something else.” To be continued... I find that I usually end up making the same meat recipes Yom Tov after Yom Tov, which is not necessarily a bad thing; I know exactly how much to prepare of a certain dish, and whether it warms up nicely or notâ&#x20AC;Ś

But come Sukkos and I always like to have some new or interesting foods on the menu. I hope your family will enjoy the following three dishes, all of them easy to prepare and very delicious.

4- or 5-pound second-cut brisket 4 tablespoons oil, divided 2 large onions, sliced into rings 2 pounds fresh mushrooms, sliced 1 ¾ cup boiling water 2 teaspoons consommé mix 2 teaspoons coffee ¼ cup ketchup 2 tablespoons soy sauce 2 tablespoons brown sugar 1 tablespoon flour ½ teaspoon thyme

COFFEE AND MUSHROOM GLAZED BRISKET

1. Preheat oven to 350°. Heat two tablespoons oil over medium heat. Add sliced onions and sauté for about 6 minutes. Add sliced mushrooms and sauté an additional 10 minutes. When done, remove onions and mushrooms from pot. 2. In the same pot, add 2 tablespoons oil. When oil is heated, sear brisket until browned, about seven minutes on each side. 3. In a 9x13” pan, place half of the onion-mushroom mixture. Place brisket on top of onions and mushrooms. Pour the rest of the onion-mushroom mixture over brisket. Pair with: an elegant French wine, preferably from the Bordeaux region. Les Roches de Yon Figeac

4. In a small bowl, combine boiling water with consommé and coffee. When dissolved, add ketchup, soy sauce, flour, and thyme. Mix well and pour over brisket. 5. Bake for 2 ½ hours, covered, turning once in the middle. Wait until brisket is completely cool before slicing.

SEASONED CHEF: This brisket can be made way in advance and frozen. Before freezing, however, pour the sauce into a container and freeze the brisket separately in parchment paper that is then wrapped in silver foil. This way you can slice the roast easily when defrosted and then reheat together with the sauce.

This flanken is extremely easy to prepare, and yet, has a delicious, gourmet taste.

2 packs flanken Salt and pepper ½ cup soy sauce 3 frozen garlic cubes ¼ cup ketchup ¼ cup honey

1. Preheat oven to 350°. Place the flanken into a 9x13” pan lined with parchment paper. Season flanken with salt and pepper. Bake, covered, for 2 hours. 2. Combine soy sauce, garlic cubes, ketchup, and honey. Pour over flanken and bake, uncovered, for 30 minutes.

SAVORY TURKEY ROLL

I love making this with a pickled dark turkey roll. I do know some people who dislike dark turkey, so if you fall under that category, you can use pickled light turkey instead; just decrease the cooking time by about 15 minutes. The best part about this recipe is that it is delicious at room temperature and also from the fridge. You don’t necessarily have to warm it up.

1 pickled dark turkey roll 2/3 cup brown sugar 4 frozen garlic cubes ½ cup soy sauce 2 teaspoons dry mustard powder ¾ cup water

A Rhone Valley wine like, Gigondas

1. In a large pot, combine all ingredients except for the turkey roll. When the sugar and garlic are completely dissolved and the ingredients are just starting to boil, place the turkey roll into the pot and partially cover. Cook for exactly 1 ½ hours, turning the roll every half hour. The sauce should be slightly boiling the entire time. Wait until the roll is completely cold, and then remove the net and slice into thick slices. Serve with sauce over turkey.

This method uses straps in place of beams, and a pulley system to enable easy and neat rolling of the shlock. The are two options to choose from when doing certain steps; the easier way, and the more sturdy way. SUPPLIES

ASSEMBLING THE TARP

Gather the 10-foot-long 2x3”, the tarp, and the pipe.

2. Spread the tarp on the floor, and on the ten-foot side, staple the 2x3” at one end of the tarp.

• To make this sturdier, you can make a “sandwich” by placing the 2x3 on the ground (3-inch side on the ground), meeting the 10-foot edge of the tarp to cover the 2x3, and end together with it, and then placing a 10-foot 1x2 on the top (2-inch side on the tarp), and using screws, drilling through this “sandwich” of wood, tarp, wood.

6. On these upright 2x4s, 2 ½ feet above the roof (and one foot from the top of the 2x4s), attach the 2x3 that is attached to the tarp (assembled in #2) with screws and nuts. (Make sure to do this to the inside of the Sukkah.) The 2-inch side should be attached to the 2x4s. 7. At the top of the upright 2x4s, at the very end, insert a hook and hang a pulley on the hook. You can then use a plier to close the hook, so that the pulley should stay there permanently.

5. Take two 8-foot 2x4s and attach it to the wall of the sukkah vertically, about 3 ½ feet from the ground. These 2x4s should be attached where the second panel starts on either side of this specific wall (which means 2 feet in from the edge). These 2x4s will extend 3 ½ feet above the roof of the sukkah.

3. Now move to across the tarp to the other 10-foot edge of the tarp.

• To make it even sturdier, you can lay the pipe on the floor, and put a 1x2 through it (as the plastic of the pipe melts from the hot screw), lay the edge of the tarp on top of it and the metal floor trim on top of the tarp and screw through these four things.

8. Now, move to the wall across the one with the vertical 2x4s, and place a 10-foot 2x3 vertically that it should extend a half inch above the sukkah so that the tarp shouldn’t tear from the rough edges of the panels.

4. Lay the pipe on the floor and place the second 10-foot edge over it. Using a washer on top of the holes in the tarp, screw the tarp to the pole.

SHORT ON TIME? Put up this canopy shlock in under an hour. Easy, simple, and requires no handyman skills. This shlock also works for the Leiter’s Sukkahs. Supplies: • Canopy (10’x10’ for an 8’x8’ sukkah) • 4 8-foot 2x4s • 3 2x4”s that are just a bit longer than the width of your sukkah • Shrink wrap • 4 wheels • 4 8-foot ropes • 2 hooks

9. On the same wall as #8, on the outside, screw eye bolts in the vertical center, at the edge of each panel every two feet. (You can add a fifth one in the center for added support.) Then, screw eye bolts aligned with the below at the bottom of the the 2x3 that was attached to the Sukkah in #6.

1. According to the height of your canopy, cut the four 8-foot 2x4s so that when it is placed under the legs of the canopy, the canopy will be the same height as the sukkah. (In the shlock pictured, the 2x4 was cut to 2 feet.) 2. Attach a wheel to each of the 2x4s. 3. Using the remainder of each of these 2x4s, (in the image, that would be 6 feet) position the 2-foot 2x4 under the pole of the canopy, and line up the 6-foot 2x4 at the bottom, running ¾ up to the top of the pole. 4. Wrap shrink wrap around the two 2x4s and the pole tightly. 5. Repeat for each pole. 6. Using the three 2x4s, attach them to three sides of the canopy, midway, to create a frame for the canopy. (This will keep the the shlock sturdy, and also give you something to hold onto while you wheel the shlock.) 7. Attach hooks to the center of the exterior of the front and back walls of the sukkah. 8. Tie an 8-foot rope on the top of each poll. These ropes can be twirled around the hooks to keep the canopy in place over or near the sukkah.

10. Hook a strap onto each eye bolt on the 2x3 and pull it over the roof of the Sukkah, over the opposite wall and down until the eye bolts on it, where it should be tightened and then fastened to the second set of eye bolts. Tighten it well, but not too strongly, as you don’t want to break the Sukkah. Make sure that the beams that hold the schach are running in the same direction as the straps, because otherwise the tightened straps can cause the sukkah to collapse.

11. At the two middle eye bolts on the 2x3, which are aligned with the pulleys, attach a rope on each and knot them well. Bring the ropes down under the tarp, and then around the bottom (pipe) of the shlock and then up again over the tarp until the pulleys. • Water pooling, which can be very dangerous. • Wind ripping the ropes and fabric and throwing the awning around. • Awning thrown onto the roof. • When the wind thrusts the awning up and down on the frame, it causes abrasions to the fabric, creating holes and rips.

LONG LIVE YOUR ROLL-UP ROOF • When rolled down, keep the ropes tied down as instructed and make sure the ropes are drumtight. • Keep the awning rolled up throughout the winter, but whenever the weather is warm (above 60 and sunshine) roll it down, leaving it for as little as five minutes, to make sure that any nesting animals will roll off to prevent damage to the fabric.

Most damage happens when the awnings are not tied down as instructed, causing the following problems:

Leaving the awning rolled down in the winter, without a winterized frame, may damage your awning. Accumulated snow, aside from being very dangerous, will also damage the frame.

• Periodic cleaning of awning fabric is necessary.

Another mistake is to leave the awning down in high winds, when there is no sukkah or other walls present, creating the “Parachute Effect.”

In an age before air conditioning and tinted glass, awnings provided climate control. By blocking out the sun’s rays while admitting daylight and allowing air to circulate between interior and exterior, they were remarkably efficient and cost effective. Awnings permitted window-shopping on rainy days; they protected show window displays from fading due to sunlight. The oldest continually operating aquarium in the US, the New York Aquarium is also the most popular one in our part of the US. The aquarium boasts over 350 species of aquatic wildlife, including walruses, sea otters, sea lions, sharks, black-footed penguins, and numerous colorful fish. The most fascinating spot in the aquarium is at the Sea Cliffs where the sea lions (and sea lion shows), walruses, and penguins are. Much of the aquarium was ruined during Hurricane Sandy and some of the exhibits and part of the building are under construction, so thereâ&#x20AC;&#x2122;s less to do now until they upgrade.

DO ACCOUNTANTS HAVE PERSONALITY? PCS speaks to the alumnae of the PCS/ FDU M.S. in Accounting Program to learn more about the field.

Q: Tell us about your current position. How did the PCS accounting course prepare you? Tzvi Zicherman: The PCS course is tailor-made to be exactly what we need in terms of education for the CPA exam as well as the skills we need to get our first job and to be successful in the workplace. All of this was within a framework and schedule that worked perfectly with our religious requirements. I am forever grateful to PCS for giving me the foundation I needed to B’H be successful through the accounting positions that I’ve held in small (Kanarek & co.), mid-size (Withum Smith & Brown) and large accounting firms (PWC). I currently love my position as Director of Finance of a rapidly growing local consulting firm, LTC Consulting services. Jonathan Gesserman: I work in the tax department at RSM US, LLP and primarily serve in the private equity and investment space. The investment groups purchase companies or shares in companies with the intention of selling them for a profit at a later date. We prepare tax returns to reflect the profit and

losses. I enjoy what I do. I get to see how investments play a large role in our global economy and how the investments play out over time. Q: Tell us about the current job market. How did PCS help you find your first job? Tzvi Zicherman: The current market is very strong both nationally and locally in Lakewood. A recent US News report projects 11% job growth in accounting over the next 10 years. In Lakewood we are also seeing an increased demand for qualified accountants, controllers and CFO’s as the local businesses continue to grow. Jonathan Gesserman: Right now, the job market in accounting is very employee friendly because there is a real need for good accountants. PCS helped me academically by providing me with a strong foundation in accounting. They also enabled me to tap into a very strong network of accountants. Q: For whom would you recommend the field of accounting? Do accountants have personality?

Tzvi Zicherman: The many routes that someone with an accounting degree can take make it a strong choice for more than one personality type. Some typical characteristics of a good accountant include, diligence, organization, comfortable with numbers, good communication skills and someone looking for a stable and secure career. Since accounting can provide opportunities to branch off into so many different directions in the world of business, there really are so many different personality types that have had tremendous success using accounting as their foundation. Jonathan Gesserman: A good accountant is someone who is motivated and has good attention to detail. And yes, accountants do have personality! An accountant is someone who wants to understand business, the global economy, and what is behind the numbers. Working in accounting leads to a deeper understanding of business and enables an individual to take his career in many different directions.

THE WAKEUP CALL “You almost died, do you know that?” “Yes. I know.” “No. You really almost died,” the doctor enunciated. “We almost lost you there. You were just about gone.” I gulped, and nodded my head. Clearly the malach hamaves had been standing above me as the ambulance raced to the hospital. In fact, he’d been standing next to me for a few days already, waiting for just the right moment. Earlier that week I’d been heading home from the grocery store, blissfully pushing my baby up and over Maple Avenue’s hill. Somewhere near the top, though, I’d felt something roundish and oddly textured on the inside of my shoe and stopped to investigate. A bumble bee. His stinger embedded in the sole of my shoe. I shuddered, remembering my friend from school who’d had a bee allergy, and would break into a cold sweat at even the thought of one. I’d never been stung, baruch Hashem, but with severe allergies and the ability to hyper-react to nearly anything, I was terrified of the deadly potential within those fuzzy yellow-and-black beings. All that week I kept figuratively looking over my shoulder, sensing the presence of something sinister. It was Erev Yom Kippur when he struck, and I was smack in the middle of a cooking marathon. I’d just returned home from collecting the last few items we’d need for the Seudos Hamafsekes, and despite the minhag to eat more than usual before the fast day, I hadn’t had a minute to put anything in my mouth. While I’d been in the grocery store, I’d spotted a new item: delicious-looking chocolate covered pretzels from Eretz Yisroel. As soon as I arrived home, I treated myself to a piece. Unfortunately, though I’d remembered to check the hechsher, inspecting the dairy status of the item had strangely not crossed my mind. There, in big letters, on the bag, was the word “chalavi.”

Oh my. Too bad I hadn’t noticed it before I felt the tingle in my mouth… Choking down a Benadryl pill, I croaked out the plea for my husband to call Hatzolah, hearing the drastic change my vocal cords were undergoing. My throat was swelling shut. When Hatzolah first arrived, they didn’t see anything wrong with me, other than the fact that my voice had changed. But as we debated the course of action, I slipped suddenly into near-loss of consciousness. In an instant the malacha hamaves was at my throat, squeezing, squeezing, squeezing it. I couldn’t breathe! There was so little oxygen in my body that I had to be carried to the ambulance, and by the time I was there, 60% of the oxygen in my body had disappeared. I was purple, and the screams of the paramedics rang out through the airways, “She’s shutting down!” There, in the ambulance, only hours to Yom Kippur, I felt the sword at my neck, and I was terrified. Absolutely terrified. Baruch Hashem, after being pumped full of the maximum dosages of medication, calmed with morphine, and being hooked up to a bi-pap machine, I was finally stable. But I wasn’t out of the woods yet, and the doctor insisted that I spend Yom Kippur in the hospital. Of course, my husband — the one who hadn’t had a seudah hamafsekes (or breakfast even!) — stayed with me and fasted right there in Nyack. All that long day, I watched the medication drip down the IV line, and reviewed my year. I had slipped in so many different areas, as human beings do. And perhaps, even my teshuvah had been lacking. Had I really done all I could to draw close to my Creator? I felt as if right before the verdict was being sealed, I had been given one last wake-up call. And I heard it. I sat in my bed and wondered what kind

of mitzvos could be done there in the hospital on a fast day, when I didn’t even have the energy to daven. Only the next morning did I realize that Hashem had orchestrated events so that even though I could physically do so little, I could still do so much. “A good Yom Tov. You almost died, do you know that?” the doctor asked me. “Yes, I know,” I said, and then he reiterated that the doors had almost closed on my life. “Are you Jewish?” I asked, noticing the lack of head covering. Proudly nodding in the affirmative, the doctor spoke about my health and what I could expect in coming days. Before he left, I quickly looked around, and my eyes fell on the pile of reading material that someone had delivered right before the z’man. If it had been a regular Shabbos, I’d have asked my husband to make kiddush with the doctor; a weekday, perhaps he’d have been open to donning tefillin. But it was a fast day, and the only Jewish item I’d had was a publication full of Jewish wit and wisdom. “Hey, doctor, do you like to read?” Admitting that he did, I handed over my favorite magazine, the one I’d been looking forward to reading, and told him to enjoy it, hoping that maybe he’d find something that would awaken his neshama and strengthen the bond between him and the ancient rites we practice. I don’t know if he ever read that magazine, or if it even impacted him; I don’t know where that doctor is today. Perhaps he’s frum, perhaps not. One thing I do know, is that sometimes what looks like the very end can really be the chance for a beautiful beginning.

above normal underwriting guidelines. A bank who only knows their own product may deny a loan that does not fit their guidelines. An example that I have encountered in the last few months: One local bank does not do two-family homes. All two-family homes are denied. The problem is that the customer service guy in the branch took an application and shipped it up to processing. It took the bank two weeks to realize that this loan was not doable based on their overlays. Another example was a client who had excellent credit and received a W-2 and had another income from an S corporation. The lender that he applied with does not allow for S corporation income to be used in the mortgage qualification if there is another source of income. They had applied for a $400,000 and after two months, they received a counter approval for a loan of $236,000. The bank representative and the processing department did not know this or were just processing paperwork. It was only when the file went to the under-

Even if you think that there is nothing out of the ordinary, you would be surprised at the different things that can come up while processing a mortgage loan that can trigger a speedy denial.
