veryone’s heard of peanut butter brittle. But have you ever had soft peanut butter brittle? It’s a bit of an oxymoron, agrees M e l i s s a Diedricks, who personally makes every batch of soft peanut butter brittle for her company, Ambrosia Candies, using her great-grandmother’s recipe. Diedricks said the best way she can describe the gourmet candy is that it has more of a flaky consistency. Diedricks learned the recipe from her grandmother, who used to sell it at craft shows on the West Coast. For years, though, Deidricks made the candy just for family and friends and holiday events. The smell wafting through her kitchen would remind her of her grandmother, she said. People always told her she should sell it, and
in October 2010 “we took a leap of faith and really jumped into it.” At first Diedricks operated a kiosk at a mall in Florida where she lives, but the response was so good that she had a hard time keeping up as a one-woman operation, with occasional help from her sister. She and her husband decided to scale back and only sell at craft shows so that she could maintain quality, she said. This will be her first year at the Flowertown Festival, which she learned about from a good friend who also sells at shows. “I’m super excited to actually be part of it this year,” she said. In addition to the original soft peanut butter brittle, Diedricks makes variations that are dipped in chocolate, M&Ms, and various nuts. She also has a black and white version that’s dipped in white chocolate and milk chocolate. Diedricks said the black and whites sell singly for $1.
