Candy Canes: Sweet facts

A traditional favorite.

Candy canes are very popular holiday treats and are often used to decorate Christmas trees. That hooked shape certainly makes them whimsical and able to hang on tree boughs. But candy canes weren't always the curved and colorful treats they are today. In the 1700s, candy canes were nothing more than straight white sticks of sugar candy used to decorate Christmas trees. A choirmaster at Cologne Cathedral decided that having the ends bent to depict a shepherd's crook and passing them out dur-

ing church services would help keep children quiet. It was not until roughly the 20th century that candy canes acquired their red stripes. Some surmise that the candy cane is shaped like a shepherd's crook to represent Jesus Christ, who tended to his flock of supporters. Others say that it's a "J" for Jesus. Regardless of their shape, hundreds of thousands of candy canes are now manufactured and shipped for the holiday season each year. Metro Creative

Apple Crumble Pie "In my house it's not Christmas without a warm apple pie, this apple pie to be specific! This recipe is a great spin on the traditional apple pie…try is with a scoop of vanilla ice cream on top."

1 Honey Maid Graham Cracker Pie Crust 6 oz. 1 egg white, lightly beaten 1 21 oz can of apple pie filling 1/2 cup of flour 1/4 cup granulated sugar 1 1/2 tsp ground cinnamon 1/4 stick of butter 3/4 cup Planters chopped pecans 1 Tbsp powdered sugar

Preheat oven to 375 degrees. Brush pie crust with lightly beaten egg white. Bake 5 min and cool. Spoon pie filling into crust. Mix flour, granulated sugar and cinnamon in a medium bowl. Cut in butter until mixture resembles coarse crumbs, stir in pecans, sprinkle over pie filling. Bake 25 to 30 minutes or until topping is golden brown. Cool slightly on wire rack. Sprinkle pie with powdered sugar.

Dissolve jello in 1 cup boiled water. Drain pineapple and add 1 cup juice to jello. Chill until just starting to thicken and set. Crush cranberries in food processor. Add sugar to cranberries, mix well. Add cranberry mixture, pineapple, walnuts and celery (after chopping in food processor). Chill until firm and serve.

Spray bottom of casserole dish lightly with no-stick spray; roll dough into the bottom and push together perforations to make a seamless piece. Cook sausage, breaking it up so it is crumbly. Sprinkle the cooked sausage evenly over the dough. Beat eggs, milk, salt and pepper together. Pour over sausage. Sprinkle cheese over top. Cook at 350 for about 45 minutes. When center rises it should be done.

Homemade Peppermint Oreos “This is a fun recipe to send to school with the kids!”

2 boxes Devil's food cake mix 4 eggs 2/3 C vegetable oil Frosting: 1 (8 ounce) package cream cheese, softened 1/2 C (1 stick) butter, softened 4 C powdered sugar 1 tsp peppermint extract sprinkles or crushed candy cane for decorating green or red food coloring (optional)

Preheat oven to 350 degrees. Line cookie sheets with parchment paper. In a large bowl combine the cake mix, eggs, and oil with a mixer. The batter will be very stiff. Pinch pieces of batter and roll into 1 inch balls. Place 1 inch apart on prepared cookie sheets and flatten slightly with fingertips. Bake for 8 to 10 minutes. Remove immediately from the cookie sheets with a spatula and cool on a wire rack. In a small glass bowl, combine the cream cheese and butter until completely blended. Gradually add in the powdered sugar and peppermint extract and mix until the icing is smooth. Color frosting green or red if desired. Spread half of the cookies with icing and top with remaining cookies. Roll in sprinkles, crushed candy canes, or just leave them plain. Store in the refrigerator in an airtight containers or resealable plastic bags. Makes 2 dozen cookies.

In a large bowl, combine all ingredients and mix thoroughly. Store in a sealed jar. To use, mix 3-4 teaspoons with a cup of hot water and enjoy!

About 8 Sweet Potatoes from Mr. K’s (recipe calls for 3 C mashed, but I don’t think that is enough) 1 C of Sugar 2 eggs well beaten 1/2 tsp of salt 1/3 C of milk 2/3 C melted butter 1 tsp of vanilla

Boil the sweet potatoes and remove the skins when they begin to cool. My mother in law strains the sweet potatoes, but if you mix well, there won’t be any strings. Combine the above ingredients until well mixed. Consistency should be smooth and not too soupy. Spread in a rectangular casserole dish and set aside.

Layer 1/2 of cut biscuits in bottom of well greased bundt pan. Pour 1/2 of sauce mixture over biscuits. Layer other 1/2 of biscuits and then rest of sauce. Bake at 300 degrees for 40-45 minutes.

Topping 1/3 C self-rising flour 1 C brown sugar 2/3 C butter 1 C chopped pecans or walnuts Cream the butter and sugar. Add flour and nuts and set aside. Bake the casserole for about 1/2 hour at 350 degrees until heated through. Add the topping and continue to bake about 10-15 minutes more until potatoes are bubbly and topping is slightly melted.
