UNAGI SUSHI ROLL Ingredients 4 cups cooked sushi rice 1 package of sheet nori 454g crab sticks, sliced into ½ inch thick strips 454g unagi (eel), sliced into 1 inch strips 1 ripe avocado, peeled, pitted and sliced Wasabi Soy sauce Gari (pickled ginger) 1. On a sheet of plastic wrap, set down one sheet of nori. 2. With wet hands, grab a handful of sushi rice and evenly spread across the top 3/5 of the nori sheet, pressing the rice down to ensure it sticks to the seaweed. 3. Flip the nori over so the rice faces down onto the plastic wrap. 4. At the non-rice end of the nori, lay out crab sticks and avocado, leaving a little room on either end. 5. Take care not to over¿ll the roll. Roll the ¿llings up from the non-rice end of the nori (like a carpet) and continue to roll tightly, but not too tightly until the rice encompasses the entire outer part of the roll. Heat the eel in an oven until very warm. Place a single layer of the eel and avocado on top of the roll and then cover with a plastic wrap and bamboo mat to press the eel to the roll.

6. Remove the bamboo mat. Slice through the plastic wrap with a very sharp knife dipped in water, to get 8 even pieces.

7. Serve with wasabi, gari (pickled ginger) and soy sauce. You shoul yield around 4 cut rolls.

THE PERFECT ROAST DINNER Serves 8 Ingredients 3kg ,rish rib of beef on the bone 1 tbsp mustard powder 30g duck fat or olive oil fresh thyme 2kg chopped mixed veg (onion, carrot, leeks, garlic) black pepper For the roast potatoes 8 medium-sized ,daho potatoes 5 garlic cloves 4 tbsp duck fat or olive oil fresh thyme Maldon salt, to taste For the carrot and parsnip mash 300g carrots, peeled and chopped 300g parsnips, peeled and chopped 50g butter 20ml double cream salt and freshly ground black pepper For the gravy roasting juices from the pan 350ml Merlot or beef stock 4 tsp plain Àour 1 For the beef, preheat the oven to 190C. Mix the mustard powder with a little water

and rub this paste into the beef. Heat the duck fat till smoking hot, then sear the beef on all sides. ,n a large roasting tin, place the chopped vegetables and thyme and set the beef on top. Roast for 65 minutes for rare, 80 for medium rare or 95 for well done. Remove from oven, cover with foil on the carving board and let rest for 30 minutes. 2 For the roast potatoes, peel them, cut into pieces and parboil then drain. Shake a little to rough up the outsides. Add duck fat into a small roasting tin and heat at 220oc for ¿ve minutes, then add the potatoes, garlic, thyme and salt, making sure potatoes are well coated. Roast for

30-35 minutes until golden. 3 For the carrot and parsnip mash, boil the vegetables until tender and drain. Mash till combined but still textured, then add the butter and cream and combine, then season. 4 For the gravy, discard the vegetables from the roasting pan and put pan over a medium heat. Deglaze with Àour and wine or stock, then let it simmer to thicken for ten minutes. Season. 5 To serve, carve the beef into slices and place on plates with the Yorkshire puddings, roast potatoes and the vegetable sides. Serve the gravy over the top.

PECAN PIE Ingredients: 3 cups pecans, ¿nely chopped, toasted and divided ½ cup butter or margarine, softened ½ cup shortening 2 cups sugar 5 large eggs, separated 1 tbsp vanilla extract 2 cups all-purpose Àour 1 tsp baking soda 1 cup buttermilk ¾ cup dark corn syrup 1 store bought pecan pie ¿lling

1 Sprinkle 2 cups of pecans evenly into 3 generously buttered round cake pans (9-inch) and shake to coat bottoms and sides of pans. 2 Beat ½ cup of butter and shortening at medium speed with an electric mixer until fluffy and gradually add sugar, while beating well. Add in the egg yolks (one at a time), then beat it until blended after each addition. Stir in the vanilla extract. 3 Add flour and baking soda to butter mixture alternatively with buttermilk, beginning and ending with flour. Beat at low speed until blended after each addition. Stir in remaining 1 cup of

finely chopped pecans. 4 Beat the egg whites at medium speed until stiff peaks form and fold one third of egg whites into batter. Fold in the remaining whites. Do not over mix. Pour batter into prepared pans. 5 Bake at 350C for 25 mins or until done. Cool in pans on wire racks for 10 mins. Invert layers onto wax paper-lined wire

racks. Brush tops and sides of layers with corn syrup and cool completely. 6 Spread half of pecan pie ¿lling on 1 layer, pecan side up. Place second layer, pecan side up, on ¿lling and spread with remaining ¿lling. Top with remaining layer, pecan side up. 7 Arrange pastry garnish on and around the whole pie, if desired.

THAI GREEN CHICKEN CURRY

SERVES 4 Ingredients 150g chicken, sliced 250ml coconut milk 100g eggplant 40g green curry paste

3 pcs kaf¿er lime leaves 3 pcs red chilli 8g sweet basil 20g sugar 15ml ¿sh sauce 1 Heat the coconut milk until it boils. Add the

green curry paste and simmer for ¿ve minutes. 2 Add chicken and eggplant and mix well. Then add the kaiffer lime leaves and season with sugar and ¿sh sauce to taste. 3 Add the chilli, sweet basil and remove from heat. Serve with white jasmine rice.

PAN FRIED HALIBUT FILLET IN BUTTER WITH GRAIN Ingredients mustard sauce 200g halibut 80g mustard grain 40g garlic 80g veal jus 40g carrots 20g shallots 5g fresh thyme 60g zucchini 1kg potato 200g fresh cream 100g milk 20g butter 10g chives Sakura for garnish 1 Debone halibut ¿sh and remove the skin. Cut into 180g per portion. 2 Season the ¿llet with salt and pepper and fry in butter with fresh thyme and garlic until it’s done. Do not overcook. 3 Boil the potato in salted water and mesh by using the potato mesher. Then cook with cream and milk into smooth consistency. TUNA FOIE GRAS CARPACCIO Serves 6 Ingredients 500g saku tuna loin 50g tuna, diced 50g avocado, diced For the marinade 200g white sugar 100g sea salt 50g fresh dill leaves, chopped 50g fennel seeds 50g black peppercorns, crushed 1 tsp lemon and orange zest For the foie gras terrine 1kg duck liver, cartilage removed 20g salt 20g white pepper 10g ¿ve spice powder For the orange dressing 2 tbsp orange juice 1 tsp Dijon mustard 1 tsp honey 1 tsp olive oil salt and pepper to taste 1 Combine all the ingredients for the marinade. Add the tuna and set aside for three hours in the chiller. Spread the tuna on a sheet of butter paper to make a

5mm thick layer. 2 Sprinkle salt and spices evenly on the duck liver. Place in a baking dish, covered with parchment paper. Put the baking dish in a deep roasting pan with simmering hot water and bake for 45 minutes at 120°C. Remove from the oven and allow the terrine to cool completely, for about one hour. Place a sheet of butter paper on a Àat surface. Spread the terrine evenly to make a layer of about 5mm thickness. Place in the chiller.

3 Roll the foie gras terrine and tuna layers together, wrap in a cling ¿lm and let rest in the freezer for about one hour. Remove cling ¿lm and make 5mm thick slices. 4 Whisk all the ingredients for the orange dressing until the desired consistency is achieved. Combine diced avocado and tuna, then use a small ring to make a round tartare. 5 Brush the plate with the orange dressing, arrange the carrpaccio and assemble the tuna-avocado tartare on the side. Serve.

INSALATA DI MARE (SEAFOOD SALAD) SERVES 1 Ingredients 250g squid tube 70g large octopus 16-20 pcs shrimps 50g fresh mussels 50g clams 20g celery, julienne 20g carrot, julienne 40g red cherry tomato, quartered 20g fresh parsley, chopped 20g lemon 5g garlic, peeled and chopped 40ml extra virgin olive oil 5g salt 1 Blanch the seafood items in water with some salt for about 6 mins or until the squid turns white in colour and the prawns turn red. Make sure that the octopus cooks for at least 30 mins (to see if it’s ready the skin should be easy to remove). Once everything is ready, place items on a tray of ice. 2 Open the mussels and the clams in a pan with extra virgin olive oil and place on low heat for approximately 5-10 mins. BARBEQUED ATLANTIC PRAWNS SERVES 4 Ingredients 1.2kg Atlantic prawns, head on and shell off (3-4 per person) 250g unsalted butter (softened to room temp. Take out of fridge and leave for 20 mins) 100g garlic, peeled and very ¿nely chopped 100g fresh parsley, chopped Zest of 1 lemon Salt and pepper for tasting Olive oil for cooking and drizzling 1 Place the Atlantic prawns in a bowl and drizzle olive oil all over, add a squeeze of lemon and a pinch of salt and pepper. Cover and leave in the fridge to marinate for a minimum of 20 mins to 4 hrs. 2 To make the garlic butter, take the softened unsalted butter and gently mix in the ¿nely chopped garlic, parsley, the lemon zest and a pinch of salt and pepper. 3 Lay out a sheet of cling ¿lm on a Àat surface and slowly place the garlic butter using a spoon, onto the cling ¿lm in a long tube shape. Then roll the cling ¿lm up so that you have a contained tube, tied at the ends. Place this in the fridge until hard. This can be kept in the fridge and used for other recipes too.

4 To barbeque the prawns, take the marinated prawns out of the fridge when the barbeque is ready to cook on. Place the prawns on the grid, and cook for 2 mins on each side. 5 To plate, remove from the heat, and place

on a plate. Slice a 1cm slab of garlic butter from the tube in the fridge, place on top of the prawns on each plate, so it melts. Serve with a mixed leaf green salad, dressed with olive oil, a drizzle of balsamic vinegar and salt and pepper.

ASIAN BRAISED BEEF SHORT RIBS SERVES 4 Ingredients 5 pounds beef short ribs, cut into 4 ounce portions 1 cup soy sauce 1/4 cup rice wine vinegar 3 cloves garlic, peeled and smashed 1 (5-inch) stalk lemongrass, halved and smashed 1 tbsp ginger, peeled and minced 1/2 cup light brown sugar 1 quart water 1/2 cup sliced spring onions, white part only 3/4 tsp red pepper, crushed 1/4 cup fresh orange juice 1/4 cup hoi sin sauce 2 tbsp fresh lemon juice Jasmine rice, for serving 2 tsp orange rind, ¿nely grated, for serving Sliced green onion tops, for garnish 1 Preheat the oven to 175C. In a wide stockpot or Dutch oven, combine the short ribs, soy sauce, vinegar, garlic, lemongrass, ginger, brown sugar, water, spring onions, crushed red pepper, and 2 tbsp of the orange juice. Make sure that the stockpot is deep enough so that the short ribs are submerged in the liquid.

2 Bake the short ribs, covered, for about 3 hrs, or until the meat is tender and falling off the bones. 3 Remove the short ribs from the braising liquid and cover to keep warm. Increase the oven temperature to 220C. 4 Drain the fat off of the cooking liquid and discard. Place the remaining braising juices in a medium saucepan with the hoi sin sauce and bring to a boil over mediumhigh heat. 5 Reduce the liquid until only about 1 1/4

cups remain. Strain through a ¿ne-meshed strainer, discarding the solids. Stir in the remaining 2 tbsp of orange juice and the lemon juice. 6 Return the short ribs and the reduced sauce to the stockpot or Dutch oven, coating the short ribs well with the sauce. 7 Bake for 10 mins, until the short ribs are heated through and slightly glazed. Serve hot over jasmine rice. Season each portion with the orange zest and garnish with the green onions if desired.

SUSHI/ NIGIRI Ingredients 25g sushi rice 10g salmon (or any ¿sh) Wasabi For the sushi rice 1kg raw rice 1600ml water 500ml sushi vinegar For the sushi vinegar 1.25l Japanese vinegar 1kl sugar 280g salt Method 1 Wash the rice changing the water for few minutes until it appears clear. 2 Drain and leave for 1-2 hrs and cook the rice. Once cooked, leave for another 10-15 mins and rest before using. 3 Transfer the cooked rice to a large mixing bowl. Mix all the sushi vinegar ingredients, and add to mixed rice using a spatula. Mix the rice evenly, in a slanted chopping motion, for 3 mins and make sure not to stir it. Set aside. 4 Slice the salmon. Place the slice of ¿sh in your palm and place a little wasabi on it. 5 Place the rice into the ¿sh and close your palm to make a mould and fold it off. Serve.

BRAISED VEAL CHEEKS SERVES 8 Ingredients 2kg veal cheeks trimmed 50ml olive oil 50g Àour 1 carrot, peeled and chopped 2 stalks celery - chopped 1 onion - chopped 2 garlic cloves - chopped 250ml red wine 250ml veal stock 5g whole pepper corns 3 bay leaves 2 sprigs of thyme Salt and pepper Baby vegetables of your choice 1 Season the meat well with salt and pepper. Preheat the oven to 140°C. 2 Dust in seasoned Àour, then remove any excess Àour. 3 In a frying pan add olive oil and when at a medium heat add the veal cheeks (this will need to be done in 2-3 batches) Slightly brown the meat. 4 Remove meat and place in an ovenware dish. 5 Add vegetables and sauté the vegetables until they reach a golden brown colour Add them to the veal cheeks. 6 Deglaze with the wine, add the veal stock

and bring to the boil. Add to the veal cheeks and include the herbs. 7 Top up with water so the meat is just covered with the liquid. 8 Cover the dish with foil and transfer to the oven and braise for 3 to 4 hours until the meat is tender.

9 Cool it down after taking out the meat from the liquid. 10 Strain the liquid and reduce to a sauce consistency and check for seasoning. 11 Warm up veal cheeks and add the sauce. Serve with baby vegetables of your choice.

PEKING DUCK SERVES 4 Ingredients 1 duck whole 8 cups water 1 slice ginger 50g leeks 200ml hoisin sauce 3 tbsp white sugar 1 tbsp white vinegar 1 tbsp ¿ve spices Chinese powder 100g cucumber 24 duck pancake sheet 1 Clean duck, wipe dry and tie string around neck. Hang in a cool, windy place for 4 hours. Meanwhile, ¿ll large wok with water and bring to boil. 2 Add ginger, leek, sugar, vinegar, and Chinese powder spices, bring to boil, stirring constantly. 3 Place duck in a large strainer above larger bowl. Scoop boiling mixture all over duck for about 10 mins. Once done, hang duck again in a cool, windy place for 6 hrs until thoroughly dry. 4 Set a pan filled with 2 inches of water in bottom of oven (This is for drippings), Place duck, breast side up on a greased rack in the oven preheated to 350 C for 30 mins. 5 Turn duck and roast 30 minutes more.

Then turn breast side up again. Roast for 10 mins more. 6 Use sharp knife to cut off crispy skin and serve meat and skin immediately on a

prewarmed dish. Eat the duck hot with hoisin sauce and rolled in duck pancake sheet. Garnish with leeks and cucumbers and serve.

STICKY DATE PUDDING Ingredients 450ml water 250g dates (dry) 17g baking soda 80g butter 250g sugar 250g Àour 11g baking powder 3g ground ginger 3 eggs, at room temperature For the toffee sauce 336g butter 588g brown sugar 450ml heavy cream 10ml vanilla 1 Bring dates and water to the boil and simmer for 5 mins, remove from heat and add baking soda. The mix will foam. Allow it to stand and ferment for 30 mins. 2 Cream the butter and sugar together, and add eggs one by one. 3 Sift remaining dry ingredients together and fold into the egg mixture. 4 Fold in the date mixture and mix until well blended (the mix will be quite runny). 5 Line a 9”x 9” cake pan with parchment paper, spray the paper slightly with a cooking spray and ¿ll with the mixture. Wrap tightly with plastic wrap and bake

in a water bath for about 1 hr or until the middle of the pudding is set, at 175C. 6 To make the toffee sauce, place the butter and brown sugar in a saucepan. Heat over a low heat until the butter melts and

TRADITIONAL ROASTED LAMB Serves 4 Ingredients 250g lamb rack 1 whole artichoke 80g mashed potato 10g demiglace powder 40g breadcrumbs 5g of mint, rosemary, thyme, each Salt and pepper Olive oil Method 1 Take a cleaned rack of lamb and cut in half. Heat some olive oil in a pan (on a relatively high heat) and sear the lamb on all sides until it has a nice and roasted colour. Leave it few minutes cool down in a baking tray. 2 Take a food processor or mixer and add mint , thyme and rosemary leafs with the breadcrumbs, until everything is nicely integrated. Roll the cooled lamb in this mixture until fully covered and put in the oven at 200C until cooked (time will vary depending on how you like your meat). Cook at 65C for a medium lamb – with a touch of pink. 3 While the lamb is cooking, boil the recommended amount of water in a small pot and add 10g of demiglace

powder, leave it to boil until it has a thick consistency and set aside. 4 Clean 1 artichoke, cut in half and boil for 15 mins in salted water. Drain and sauté in a pan with olive oil, set aside.

5 To plate, warm the mashed potato and place them in the centre of a large plate, add the cooked lamb, place the sautéed artichokes around the potatoes and lamb rack.

THE IVY SHRIMP COCKTAIL SERVES 4 Ingredients 16 fresh prawns peeled 175g iceberg lettuce, shredded 150g cucumber, peeled and julienne 25g spring onion, thinly sliced ½ tsp of dill, chopped For the Marie Rose dressing 200g mayonnaise 125g tomato ketchup 2ml hot sauce 3ml worcestershire sauce 1/2 lemon, juice only Cayenne pepper 1 Refrigerate the prawns. 2 Prepare the sauce by whisking all the ingredients together and adjusting the seasoning to your taste, and add the chopped dill. 3 To serve, place a spoon full of the sauce at the bottom of a chilled wine glass, add some of the shredded salad then add 2 prawns per serving. SALMON TARTARE Ingredients 200g Tasmanian salmon 50g avocado 5g black wild rice 10ml lemon juice 10ml olive oil Pinch of pink salt 40g crème fraiche Coriander, to taste 200ml vegetable oil 1 To make the avocado puree, remove skin from avocado and place into a food processor and blend with half the olive oil until smooth. Season with salt and set aside. 2 To make the puffed rice, heat vegetable oil in pan to 190 C. As oil begins to smoke, gently pour dried rice into oil. Once puffed strain and place onto paper towel and set aside. 3 Dice salmon into 5mm and place into a stainless steel bowl. 4 Toss salmon with remaining olive oil and lemon juice, chopped coriander and salt and stir until evenly mixed. 5 Place the above ingredients into a small bowl. Garnish with the avocado puree, crème fraiche and finish with a sprig of coriander and sprinkle on the puffed rice for texture.

Ingredients 1.6 kg Australian beef (Quantity of mustard) 750ml red wine 250ml port wine 150g shallots, ¿nely chopped 600ml veal stock 150g butter, cold in Àakes Salt and pepper for seasoning For the Yorkshire pudding 400g strong Àour 6 whole organic eggs 330ml milk 25ml vegetable oil for the batter 50ml vegetable oil for the mould Salt & pepper for seasoning Pinch of nutmeg 1 Rub the beef with mustard and place in the oven at 180C for approximately 25 to 35 minutes. CLASSIC AMERICAN CHEESECAKE SERVES 5 Ingredients For the crust 50g butter, salted and melted 300g digestive crackers, ¿nely crushed For the cheesecake crust process 300g digestive crackers Melted butter, as needed For the cheesecake batter 850g cream cheese, at room temperature 200g sugar, granulated ½ tbsp vanilla extract 8 whole eggs, remove from the shell For the topping 100g sour cream 1/3 tsp vanilla extract 20g sugar 1 To make the crust, melt butter in microwave and set aside. Add digestive crackers to the mixing bowl and mix well to incorporate butter. Crumbs should then clump together. 2 Place mini spring form pans on a lined sheet tray and smear each pan with melted butter. Measure out 75g crumb mix and place into each pan. 3 Press the crumbs into the bottom of the

pan and all the way up the sides. The crust should be about 1/2 cm thick all over the pan. Refrigerate for 30 mins. 4 Using a paddle attachment, beat cream cheese, until smooth, for 5 mins. Stop mixer at 2.5 mins and scrape down sides. 5 Change to wire whip attachment. Add sugar and mix well with cheese on second speed for 4 mins. Scrape down sides, add vanilla and mix on second speed until blended for 2 mins. 6 With the mixer running on second speed, slowly add eggs until all eggs are

incorporated, mix for two minutes. (Note: batter must sit for 12 hrs before use) 7 Place chilled crust on a lined sheet tray. Fill each with a heaping scoop of cheesecake batter and level with the back of the spoon. Place in a preheated oven 135C and bake for 20 mins.(The cake should jiggle a bit in the centre when done). Remove and set aside for 1 hour. 8 For the topping, whip all ingredients together, until fully incorporated. Take one baked cheese cake and cover the full top with the topping.

FOIE GRAS POT AU FEU EN PAPILLOTTE

SERVES 4 Ingredients 8dl clear duck stock 4 pieces duck foie gras slice (50g) each 1cl sherry 30g spring onion, ¿nely sliced 40g fresh baby radish (navet) sliced 50g carrot cut in small diamonds

40g celery cut in small diamonds To taste Àeur de sel, pepper 1 Cartafa visible paper 1 Peel the vegetables and cut into small dice. Blanch and keep on the side. 2 Season the duck stock with salt and sherry to taste. Slice and season the foie gras and pan fry shortly to colour the

outside, it has to remain rare inside. 3 Cut a square out of the visible paper and place in a bowl. Place the cooked vegetables inside, add the foie gras on top and ¿nish with the fresh sliced radish. 4 Season with Àeur de sel. Fill up with duck stock and close the paper with a string to form a small papillote. 5 Reheat everything for 5 min on slow heat.
