MAKE GOOD FOOD CHOICES: My nondairy cashew milk recipe is super easy to make and delicious. Cashews have high-nutrient density, vital minerals, plant-based protein, dietary fiber, minerals like copper, zinc and magnesium, plus antioxidants. It’s a filling, high-protein and high (good)fat food choice that also heals various ailments, including poor heart health and diabetes. 1 cup raw cashews 4 cups water Soak cashews for 4 hours Rinse nuts in cold water Throw out old water Put nuts in a Vitamix blender with 4 cups of filtered, fresh water Blend (If you don't have a Vitamix, blend in any blender then pour mixture through a sieve to separate any remaining particles, or pour whole mixture in a silk nut bag and squeeze milk through, starting at top and squeezing down).

10 THE PORTABLE PURIST

Getting kids to eat healthy is tough, especially in a society where “people are fed by a food industry which pays no attention to health. And people are treated by a health industry which pays no attention to food,” as American author and poet Wendell Berry wrote. This non-industrial food thinking should be our way of life, but instead we are nowhere near it. My son is so tired of me talking about the importance of whole foods and how bad processed foods are, he actually asked me to take him to McDonald’s—a torturous stab to my healthy gut, indeed. What was I to do with that? I turned to a kid-friendly medium to get the re-education process in motion: movies. I decided to create a series of summer movie nights showcasing my favorite documentaries— like Food Inc., Cowspiracy: The Sustainability Secret, Sugar Coated, Hungry for Change, Food Matters: Let Thy Food Be Thy Medicine, King Corn, Forks Over Knives, and GMO OMG. The first time I saw Food Inc. in 2008, I was not completely lost to the forces of modernization and industrial agriculture, I was just naive. It took this one movie to ignite my need to learn more—I stopped eating any beef if I didn’t know exactly where it came from or what it ate, and I haven’t been able to eat corn or anything with corn syrup as an ingredient ever again. There is also a moral significance of being connected to the living land—and this local dining guide featuring Purist’s favored healthy and tasty dish at each of the eateries will help you navigate where to go so you can, at the very least, lead by example. With farm-fresh ingredients from Greenport (Bruce & Son or Port Waterfront Bar & Grill) and Shelter Island (Salt, Vine Street Café) and back home to Southampton (Tutto il Giorno, Red Bar, Little Red, Le Charlot) there is no shortage of delectable, healthful offerings in this, our second annual Portable Purist Healthy Dining Guide. Eat well, be well,

DINING OUT BEFORE PADDLING OUT? HERE, PURIST’S MORNING-TO-MIDNIGHT ROUNDUP OF THE TOP HAMPTONS WELLNESS FUEL-UPS FOR OPTIMAL PERFORMANCE, ON AND OFF THE WATER.

By Julia Szabo

THE SQUEEZERY “We believe in balance” is the motto of The Squeezery, and balance it delivers, with organic farm-fresh fruit, pressed and/or smoothified. Boost any juice with a selection of superfood supplements (matcha, Four Sigmatic mushroom powder, camu camu). All menu items here get the blessings of a chef and registered dietitian. For a post-workout reward, try the fruit-topped Freezery Bowl, a coconut shell filled with dairy-free, superfood gelato crafted from house-made cashew and coconut milks. 195 Main St., Amagansett, 631.527.7180; thesqueezery.com SIMPLY SUBLIME Plant power reigns here—even the straws are plant-made and compostable. Fuel your morning or afternoon workout with the Dr. Oz, a wonderful emerald juice blend of kale, spinach, parsley, cucumber, apple, lemon and ginger. To rev your recovery, try the popular protein balls, made of nut butters, plus pea or brown rice protein powder. “They’re a great way to get a quick shot of protein

and healthy fat, pre- or post-workout,” says co-owner Alison Burke. For lunch, sample the Sublime Hummus Salad; check Instagram @simplysublimehamptons for specials. Visit Simply Sublime’s summer pop-up at Bridgehampton’s Wampum Skate Shop for Baked Tofu Banh Mi wraps and other goodies (2487 Main St., 10AM-4PM daily). 85 Springs Fireplace Rd., East Hampton, 631.604.1566; 28080 Main Rd., Cutchogue, 631.735.9161; simplysublimehamptons.com PROVISIONS This is smoothie central, with blends to entice even finicky kids. The PB&J combines peanut butter, strawberries, blueberries, raspberries and rice milk for blended bliss, while the Hempster mixes up hemp milk, of course, with hemp seeds (providing essential fatty acids, and more digestible protein than any other high-protein food). Bring reusable bags: Provisions stocks necessities from Hope Hummus to Solid Gold premium pet food. 7 Main St., Sag Harbor, 631.725.3636; provisionsnaturalfoods.com THE PORTABLE PURIST

WÖLFFER KITCHEN Renowned Hamptons vintner Wölffer Estate now operates two eateries, but mindful surfers won’t weigh themselves down with the wood-fired pizzetta, and opt instead for gluten-free gourmet fare that’s just right, pre or post riding waves: zucchini “noodles” with lemon, mint and tomato; Green Goddess Kale Salad with apple, avocado and cranberries; or Quinoa Avocado Salad with radish, marcona almond and blood orange. 4 Amagansett Square Drive, Amagansett, 631.267.2764; 29 Main St., Sag Harbor, 631.725.0101; wolfferkitchen.com SUKI ZUKI Widely considered the Hamptons’ best Japanese, Suki Zuki prides itself on house-made sauces containing no sugar or artificial ingredients. Sample the tempeh rolls, agedashi tofu, and shiitake or Japanese eggplant brushed with house teriyaki and grilled on the robata. The miso kenchin

VEGAN FOOD

L&W MARKET AT ALMOND Jason Weiner’s beloved Almond, a popular destination on Meatless Mondays, is winning legions more fans with its just-opened L&W Market, conveniently located next door to the restaurant. “I’d like to be the acai-bowl king of New York,” says Almond’s co-owner Eric Lemonides, so the Market focuses on antioxidant-amped acai, alongside “crazy pastries,” like olive oil loaf cakes, “killer sandwiches and amazing salads,” says Lemonides, plus options for après-surf supper. Don’t leave without an immune-boosting jar of Almond’s house-label probiotic, Kimchi Jews, showcasing Chef de Cuisine Jeremy Blutstein’s brined Brussels sprouts, beetcarrot kimchi and more. 1 Ocean Rd., Bridgehampton, 631.537.5665; almondrestaurant.com

soup, a summery broth, is simmered with enoki mushrooms, zucchini, yellow squash, napa cabbage, string beans and scallions. Suki Zuki does not take reservations, so arrive early. 688 NY-27, Water Mill, 631.726.4600 SAAZ Curry offers a powerful boost to the brain (thank the curcumin in turmeric), and Saaz serves authentic curries from regions across the globe, including its own Saag Curry with spinach gravy. However hot you like it, Saaz accommodates all tastes on the Scoville scale from mild (Plain) to mind-blowing (Vindalu). These and many more mouthwatering, vegan-suitable delicacies, including a refreshing chilled tomato-cucumber soup with roast pepper sorbet, are marked with a V on the menu. 1746 County Rd. 39, Southampton, 631.259.2222; saazsouthampton.com NATURALLY GOOD Very V-considerate, this Montauk mecca will gladly veganize menu items by ditching the dairy component, adding, say, vegan cheese (in lieu of the dairy kind) to its popular quesadilla with brown rice, pinto beans, and carrots. They’ll even substitute scrambled tofu for eggs upon request. Where possible, they’ll use Japanese sweet potatoes, and that loving attention to detail carries all the way through the bill of fare: only organic ketchup graces the vegan burger (its ingredients vary daily). 779 Montauk Hwy., Montauk, 631.668.9030; naturallygoodcafe.com

CHABLIS BY THE SEA HOW OYSTERS AND CHABLIS MAKE THE PERFECT PAIR

By Anne Marie O’Connor

Right after you decide whether to order Blue Points, Peconic Golds or Montauk Pearls to celebrate National Oyster Day on August 5 (or really, any day, because shouldn’t every day be National Oyster Day?), you’ll need to pick the wine that best compliments them. “People ask me for the best wine to pair with oysters, and I always say, Chablis, Chablis, Chablis,” says Rowan Jacobsen, author of The Essential Oyster: A Salty Appreciation of Taste and Temptation. And no wonder—millions of years ago, the Chablis region, which is located in the northernmost corner of Burgundy, was at the bottom of a shallow sea teeming with oysters. “If you dig down, you’ll unearth fossilized oyster shells,” Jacobsen explains. “The vines are drawing all of that marine minerality out of the ground.” Chablis’ cool climate means its wines are less fruity than other Chardonnays (and limited aging in only neutral oak means they’re less “oaky”). The new William Fèvre Chablis Champs Royaux Limited Edition SEA 2017 was specially created to pair with seafood. Bonus points: It’s made from organically farmed grapes, so it’s a perfect way to say “à votre santé!” the next time you order oysters. williamfevre.fr/en

VISIONARY CATERERS NEUMAN’S KITCHEN DELIVERS INNOVATIVE, FARM-FRESH, QUALITY CATERING

By Charlotte DeFazio

Whether organizing a corporate affair for a tech company, planning a wedding or simply throwing a big summer bash, Neuman’s Kitchen delivers fresh, flavorful and healthy options for any event under the sun. Longtime industry vet Paul Neuman, co-founder and president of the company, built an empire with a steadfast mission to “delight, inspire and be inspired.” Each menu is designed with care and creativity, as Neuman’s is continuously coming up with new flavor pairings and inventive presentations, including customized interactive food stations—think chefs shucking oysters or manning a sushi bar of assorted maki rolls. Neuman’s Kitchen focuses on sustainability, sourcing from various local green market farms on the East Coast, including Satur Farms in Cutchogue. Neuman’s also uses biodiesel in all vehicles and composts all kitchen waste. The 2018 summer menu, helmed by executive chef Robb Garceau, features a bounty of healthy, tasty bites accommodating all diet preferences—Montauk lobster rolls; Korean beef satay with cucumber kimchi; summer squash and leek tart with carrot puree; baby beet and forbidden rice crisp; and more. neumanskitchen.com

FRESH, THE FRENCH WAY UP YOUR SUMMER PICNIC GAME AT PIERRE’S MARKET IN SAGAPONACK

By Ray Rogers

Add a soupçon of French glamour to your Hamptons beach outings. Pierre’s Market in Sagaponack offers a one-stop shop for the perfect gourmet picnic, easy home entertaining or just breakfast or lunch on the go. “Refreshing, organic, simple, convenient and fresh,” says Pierre Weber, describing the “Euro vibe” he’s cultivated at the market since taking over the historic Sagg General Store in 2016. It’s an extension of the sophisticated, St. Barts-meets-the South of France aesthetic of his namesake restaurant, a mainstay on Main Street in Bridgehampton for 16 years now. New this year at the Market, a Sagg Main Organics stand for farm-fresh produce, and a greater variety of made-to-order organic drinks at the smoothie and juice station. While picking up lunch (everything from three-salmon paninis on toasted cranberry bread to vegan kebabs and grilled veggie salads), stock up on an expertly curated mix of goods from local providers (Plain-T teas, cookie mixes from Kerber’s Farm), specialty condiments like Vidalia Onion Fig Glaze from Stonewall Kitchen, and Pierre’s own spice blends. Best of all, the lettering on the front door says: “Ouvert tous les jours”—open every day, from 7AM. 542 Sagg Main St., Sagaponack, 631.296.8400, pierresbridgehampton.com

CONSCIENTIOUS COVE

THINGS ARE HEATING UP IN THE KITCHEN AT BARON’S COVE WITH NEW EXECUTIVE CHEF JAY LIPPIN, WHO PRIORITIZES MINDFUL, SUSTAINABLE FOOD PRACTICES

By Charlotte DeFazio

What are you most excited about in this endeavor? To create a menu representing the classic tradition of Baron’s Cove, and to explore all the new fresh and available ingredients—and the longer growing season! You’ve been called a “farm-to-table pioneer.” What are your thoughts on sustainable food practices? Being “farm to table” is essential. We are living in a time when we are losing our food identities—losing foods that are local and historic. We need to support farmers and organizations before some of our foods become completely altered or extinct. We also need to be aware of the practices used by our food producers. What food or agricultural organizations are you currently part of ? Currently, I am working with Slow Foods, in particular their Chef ’s Alliance and Ark of Taste programs. I also work with Seed Shed and Hudson Valley Seed Company. Previously, I was working with groups to reduce food waste, and am looking forward to finding like-minded organizations here on the East End. What are your favorite local ingredients to use? One of my favorite local ingredients is the Long Island Cheese Pumpkin, a local vegetable that was almost lost

to us and is truly versatile. Of course, the abundance produced by one of the richest fisheries on the planet surrounding our location is an incredible local resource. What kind of changes are you bringing to the menu? The new menu is going to reflect the fresh and quintessentially coastal tradition of Baron’s Cove, and will focus on sustainability and continuing to interpret classic Long Island dishes. Is there a dish you’re particularly enthusiastic about making? That’s like choosing my favorite child. You were formerly working at Crabtree’s Kittle House in Chappaqua. Is this your first time living on the East End? This is my first time living out here. I am in Sag Harbor, which has a great small-town feel and everyone I have met has been really welcoming and genuine. How do you like to spend your time during summer when you’re not in the kitchen? When I’m not working, I am exploring the area and relaxing on the beach, fishing. 31 W. Water St., Sag Harbor, 631.725.2101, baronscove.com THE PORTABLE PURIST

TIKI TIME

BEHIND THE SCENES WITH LYNN’S HULA HUT IN MONTAUK AND ITS MINDFUL MIXOLOGY

By Julia Szabo You’ll never see a maraschino cherry at Lynn’s Hula Hut, the bamboo boîte that’s a Montauk mainstay. “Fresh is best and less is more, that’s always been my philosophy,” says owner and “bar chef ” Lynn Calvo, author of the intoxicating tropical-cocktail recipe book Tiki With a Twist (Sterling Epicure, 2016). Concocting exquisite elixirs (“Hula Juice” is Hendrick’s Gin infused with secret ingredients) and shunning refined sugar in favor of syrups made from scratch with “indigenous, local Hamptons honey” or agave, Calvo insists on organic, house-pureed produce and herbs clipped from the Hut’s own backyard. With garden-fresh garnishes (pineapple wedges, rosemary sprigs, edible flowers), libations resemble sexy smoothies, enabling drinkers to detox and intox simultaneously. The Spa Cocktail combines Tito’s Handmade Vodka with an array of antioxidants: lemon water and cucumber puree (to help flush the liver), plus watermelon puree, fresh mint, cilantro, and Thai basil (an adaptogen). Just remember to pace yourself: “Our drinks are so well-balanced and smooth, they can go down kind of quickly,” Calvo cautions. If you enjoy one too many (easy to do at Hula Hut’s weekend make-your-own bloody mary bar, which opens in July with condiments that include an addictive Bangkok peanut sauce), take coconut water—neat—for some healthy hair-of-the98 THE PORTABLE PURIST

dog. Says Calvo, “We make a lot of cocktails with coconut water; it’s so hydrating and good for you.” And if you’re abstaining from alcohol (but don’t need everyone to know), the Hut’s happy to accommodate, with virgin drinks every bit as festive-looking as their spiked counterparts, down to the pretty paper umbrella. 426 W Lake Dr., Montauk; lynnshulahut.net
