MAKE GOOD FOOD CHOICES: My nondairy cashew milk recipe is super easy to make and delicious. Cashews have high-nutrient density, vital minerals, plant-based protein, dietary fiber, minerals like copper, zinc and magnesium, plus antioxidants. It’s a filling, high-protein and high (good)fat food choice that also heals various ailments, including poor heart health and diabetes. 1 cup raw cashews 4 cups water Soak cashews for 4 hours Rinse nuts in cold water Throw out old water Put nuts in a Vitamix blender with 4 cups of filtered, fresh water Blend (If you don't have a Vitamix, blend in any blender then pour mixture through a sieve to separate any remaining particles, or pour whole mixture in a silk nut bag and squeeze milk through, starting at top and squeezing down).

Getting kids to eat healthy is tough, especially in a society where “people are fed by a food industry which pays no attention to health. And people are treated by a health industry which pays no attention to food,” as American author and poet Wendell Berry wrote. This non-industrial food thinking should be our way of life, but instead we are nowhere near it. My son is so tired of me talking about the importance of whole foods and how bad processed foods are, he actually asked me to take him to McDonald’s—a torturous stab to my healthy gut, indeed. What was I to do with that? I turned to a kid-friendly medium to get the re-education process in motion: movies. I decided to create a series of summer movie nights showcasing my favorite documentaries— like Food Inc., Cowspiracy: The Sustainability Secret, Sugar Coated, Hungry for Change, Food Matters: Let Thy Food Be Thy Medicine, King Corn, Forks Over Knives, and GMO OMG. The first time I saw Food Inc. in 2008, I was not completely lost to the forces of modernization and industrial agriculture, I was just naive. It took this one movie to ignite my need to learn more—I stopped eating any beef if I didn’t know exactly where it came from or what it ate, and I haven’t been able to eat corn or anything with corn syrup as an ingredient ever again. There is also a moral significance of being connected to the living land—and this local dining guide featuring Purist’s favored healthy and tasty dish at each of the eateries will help you navigate where to go so you can, at the very least, lead by example. With farm-fresh ingredients from Greenport (Bruce & Son or Port Waterfront Bar & Grill) and Shelter Island (Salt, Vine Street Café) and back home to Southampton (Tutto il Giorno, Red Bar, Little Red, Le Charlot) there is no shortage of delectable, healthful offerings in this, our second annual Portable Purist Healthy Dining Guide. MY TOP 5 GREEK WINES: 1. Domaine Costa Lazaridi: a bright and light rosĂŠ made from 100 percent merlot, boasting a nose of strawberry and cherry with a hint of lemon verbena. 2. Theopetra Estate, Malagouzia-Assyrtiko: organic grapes are used to produce this amazing white wine of lemon-green color. Fresh aromas of pineapple, mango, tangerine and peach, with hints of fresh mint. 3. Kir-Yianni, Diaporos, Xinomavro: nose is dominated by oaky and spicy aromas, and opens up to strawberry and roses with a lingering spicy aftertaste. 4. What are you most excited about in this endeavor? To create a menu representing the classic tradition of Baron’s Cove, and to explore all the new fresh and available ingredients—and the longer growing season! You’ve been called a “farm-to-table pioneer.” What are your thoughts on sustainable food practices? Being “farm to table” is essential. We are living in a time when we are losing our food identities—losing foods that are local and historic. We need to support farmers and organizations before some of our foods become completely altered or extinct. We also need to be aware of the practices used by our food producers. What food or agricultural organizations are you currently part of ? Currently, I am working with Slow Foods, in particular their Chef ’s Alliance and Ark of Taste programs. I also work with Seed Shed and Hudson Valley Seed Company. Previously, I was working with groups to reduce food waste, and am looking forward to finding like-minded organizations here on the East End. What are your favorite local ingredients to use? One of my favorite local ingredients is the Long Island Cheese Pumpkin, a local vegetable that was almost lost
to us and is truly versatile. Of course, the abundance produced by one of the richest fisheries on the planet surrounding our location is an incredible local resource. What kind of changes are you bringing to the menu? The new menu is going to reflect the fresh and quintessentially coastal tradition of Baron’s Cove, and will focus on sustainability and continuing to interpret classic Long Island dishes. Is there a dish you’re particularly enthusiastic about making? That’s like choosing my favorite child. You were formerly working at Crabtree’s Kittle House in Chappaqua. Is this your first time living on the East End? This is my first time living out here. I am in Sag Harbor, which has a great small-town feel and everyone I have met has been really welcoming and genuine. How do you like to spend your time during summer when you’re not in the kitchen? BEHIND THE SCENES WITH LYNN’S HULA HUT IN MONTAUK AND ITS MINDFUL MIXOLOGY
By Julia Szabo You’ll never see a maraschino cherry at Lynn’s Hula Hut, the bamboo boîte that’s a Montauk mainstay. “Fresh is best and less is more, that’s always been my philosophy,” says owner and “bar chef ” Lynn Calvo, author of the intoxicating tropical-cocktail recipe book Tiki With a Twist (Sterling Epicure, 2016). Concocting exquisite elixirs (“Hula Juice” is Hendrick’s Gin infused with secret ingredients) and shunning refined sugar in favor of syrups made from scratch with “indigenous, local Hamptons honey” or agave, Calvo insists on organic, house-pureed produce and herbs clipped from the Hut’s own backyard. With garden-fresh garnishes (pineapple wedges, rosemary sprigs, edible flowers), libations resemble sexy smoothies, enabling drinkers to detox and intox simultaneously. The Spa Cocktail combines Tito’s Handmade Vodka with an array of antioxidants: lemon water and cucumber puree (to help flush the liver), plus watermelon puree, fresh mint, cilantro, and Thai basil (an adaptogen). Just remember to pace yourself: “Our drinks are so well-balanced and smooth, they can go down kind of quickly,” Calvo cautions. If you enjoy one too many (easy to do at Hula Hut’s weekend make-your-own bloody mary bar, which opens in July with condiments that include an addictive Bangkok peanut sauce), take coconut water—neat—for some healthy hair-of-the98 THE PORTABLE PURIST
