EDITOR’S LETTER The tranquil sunny haze, the clinging smoke, the vapor, Spiritual, airy insects, humming on gossamer wings, Shimmer of waters, with fish in them—the cerulean above... From Walt Whitman’s poem “Warble for Lilac-Time” Most celebrations of nature evoke a literary punctuation—a poem, an expression of art, a great work of literature—and of course, an appetite. Literature and food often go hand in hand, the way a succulent oyster inspired Lewis Carroll in Through the Looking-Glass, and What Alice Found There: “‘O Oysters, come and walk with us!’ The Walrus did beseech. ‘A pleasant walk, a pleasant talk, Along the briny beach.’” We write and eat to exalt the best things in life—to feed different kinds of hunger: in the belly, the heart, the soul. So, at PURIST we created our Portable Purist Food & Drink guide as a nod to this idyllic place where so much has been sown and reaped, where appetites are sated and memories created. A bright-blue beach cruiser bicycle pulls up in front of Pierre’s Market on Sagg Main, about halfway to the beach in what some would call the epicenter of the Hamptons. It’s Pierre, who has ridden over from his eponymous restaurant, a local favorite, on Bridgehampton’s Main Street. A small crowd gathers on the comfy park benches outside the market and Sagaponack’s colloquial post office. Shouting out “Hello” and “How are you,” and stopping to chat with regular customers, Pierre knows every one of them. From the affluent weekenders to the locals, they come to this market because there is something for all (at every price point). Authentic, fresh, French-inspired food is no longer only accessible at white-tablecloth restaurants. Pierre’s Market has it all wrapped up. FOR THE HOSTS AND HOSTESSES: Guests decide to stay the weekend? Why not bring home a fresh, succulent roast chicken, with sides to spare? Pierre’s famous flourless chocolate cake is perfect for dessert. Don’t forget Sunday breakfast—pick up a loaf of Bao’s Dream (named for Pierre’s beloved dog) in addition to the best croissants in town. FOR THE BEACH-BOUND GANG: Sandwiches, sure, are all packed up and ready, but also try the delightful tartines (Parisienne, Provençale, Tomato Basil or Smoked Salmon) or the delectable new 24 THE PORTABLE PURIST

meal-in-a-jar: the Quinoa Jar (quinoa, dried apricots, onion, feta cheese, spinach) or Chicken Curry (with almonds, shredded coconut, cherry tomatoes, grapes apple kale and corn). Perfect for picnics. FOR THE HEALTH-CONSCIOUS: There are lots of healthy choices, but the organic smoothies are a favorite among the body-conscious, as are the delicious yogurt, fruit and granola parfaits. FOR POST-SURF: Après beach, surfers who work up an appetite find hearty hot food in back (think classics like quiche and ratatouille plus madeto-order omelets and sandwiches) or pick up the hanger steak and tomato tartine with Moroccan dressing. And splurge on a bag of cookies (chocolate chip, vanilla and chocolate sables, palmier and oatmeal)—you’ve earned it. FOR THE KIDS: Pastries are a hallmark of Pierre’s and little ones love the array of choices from almond toast and chocolate twists to pineapple muffins. IL MULINO NEW YORK IN WAINSCOTT HAS ADDED OUTDOOR DINING AND CATERING TO ITS LIST OF OFFERINGS. HERE, THEY SHARE THEIR RECIPE FOR CLAMS POSILLIPO.

1 tsp. dried oregano, crumbled 36 littleneck clams, scrubbed 1 Tbsp. chopped fresh parsley (more as needed for garnish) 1 small dried pepperoncini pepper (optional) FOR TOASTED GARLIC BREAD: 3 Tbsp. extra-virgin olive oil 6 garlic cloves, chopped ¼ cup chopped fresh oregano leaves 1 loaf of Italian bread CLAMS POSILLIPO PREPARATION: Heat oil in a large heavy skillet over medium heat. Add garlic and sauté for 1 minute. Add chopped tomatoes, clam stock and oregano. Bring to a boil. Add clams, cover and cook until clams open (about 7 minutes). Discard any clams that do not open. Reduce the sauce for 2 minutes then add parsley. Divide the clams and sauce among the four bowls. Sprinkle with parsley and serve immediately. Add the dried pepperoncini pepper for a bit of spice.

GARLIC BREAD PREPARATION: Preheat oven to 450°. Heat oil in a small saucepan over medium heat. Add garlic and oregano and sauté. Slice loaf of bread into 8 pieces then place on a baking sheet. Brush each slice with the garlic mixture. Bake 10-15 minutes. Serve each dish with 2 slices of toasted garlic bread.
