Summer is here and so is camp season for the kids. Whether it is day camp or sleep-away camp, parents can have fun too by sneaking fun-filled snacks into lunchboxes or care packages. For day camp, consider adding fruit to the lunchbox rather than high-calorie cookies or candy bars. Fruits are more refreshing during hot days and will give your kids the nutrients they need to stay active. Both green and gold kiwifruit each have twice the vitamin C as an orange, as much potassium as
a banana and as much fiber as many whole grain cereals. Since packing lunches for a sleep-away camp isn’t possible, care packages can be a nice surprise for kids while away from home. When creating these packages, make sure to include items like hand-written notes, a favorite book, a photo or something that will comfort them while at camp. Remember to also include snacks that are convenient to eat on-the-go and might not be available at
camp. Kiwifruit’s bright colors and fuzzy skin will get the attention of other campers. Kiwifruit is easier for kids to eat than one might think. There’s no need to peel, just cut it in half and scoop out the fruit with a spoon. Kiwifruit adds color and flavor to whole grain or pasta salads – perfect for a family picnic. Kiwifruit Cheesecake Ginger Bites Prep time: 10 minutes Makes: 15 servings (two Bites per serving)
3 Zespri green or gold kiwifruit 1 package (8 ounces) reduced fat* or regular cream cheese 6 tablespoons sugar 1 teaspoon lime or lemon zest 1/2 teaspoon vanilla extract 30 ginger snap cookies
1 Hormel Always Tender boneless pork loin (about 3 pounds) 1 red onion, cut into thin rings 1 large red bell pepper, cut into thin rings 8 sesame seed Kaiser rolls, split and toasted 6 (1-ounce) slices sharp Cheddar cheese Prepare grill for smoking. Smoke pork 1½ to 3 hours or until internal temperature reaches 160°F. Meanwhile, in large nonstick skillet, sauté onion and red pepper 8 minutes or until softened and the onion is slightly golden. Slice pork into 1/4-inch slices. Top bottom half of rolls with cheese, sliced pork, onion and red pepper. Cover with roll tops.

Other wood chips to experiment with include pecan, alder, oak and cherry. 2. Rid water: Drain wood chips and shake off excess water. 3. Get in position: Arrange charcoal briquettes on either side of a heavy foil plan. Do not use “instant-start” charcoal briquettes during the cooking process. Fill pan with water. The water prevents flare-ups that occur when fat and meat liquid drip on coals. 4. Go time: When the charcoal is covered in ash, add the drained wood chips. 5. Add food: Place food on grill rack over foil pan. 6. Smokin’: Cover the grill to allow heat and smoke to slowly penetrate the food. 7. Review and replace: Add 5 to 7 briquettes to each side every hour. Replenish water as needed. 8. Check in: Check food, temperature and water
