Why use yardley Bulls
1. Yardley bulls have eye appeal and conformation to sire calves that will top the market, and performance and growth to push down the scales. Feeders want Yardley sired calves because of their eye appeal and gainability 2. Their heifer calves will be the best cows that you have ever owned. 3. These bulls are grown in big lots where they get plenty of exercise. Wintered mostly on hay so they can live on grass, many buyers tell us they like our bulls because they, “don’t have to pamper them.” Performance comes from their ability to convert forage, not from an excess of grain. 4. Our focus has always been on our maternal traits and cow families. We have AI’d for 53 years selecting the best bulls we can find. Selection emphasis is placed on fleshing ability and performance to excel on the range, in the pasture and feedlot, with eye appeal to be competitive in the show ring. 5. Our cattle have natural fleshing ability to stay fat on grass. Our cows take care of themselves wintering on desert winter range without any hay and calve unassisted on their own.

Age: 15 Species and Breeds that you show: I enjoy showing steers and heifers. Although my favorite breed is Shorthorns, I also love showing Herefords, Charolais and Simmentals. Favorite Show & why: My favorite show is the Houston Livestock Show! I love hanging out with family and friends. (Plus, the air conditioning is pretty nice too!) Favorite Show Memory: Winning the 2019 Denton County Fair with my steer, “Spade.” Favorite Show Animal: My Black Cross steer, named “Spade.” Showmanship has always been one of my favorite events to participate in, and Spade was hands down the best showmanship steer I have ever raised.

Counting Blessings
As we approach the season of counting our blessings, I find myself counting my blessings twice.
My family and I traveled across South Dakota to support our family friends as they dispersed their purebred Angus cattle herd. Hugh Ingalls owned registered Angus cattle for nearly eighty years. Hugh, and his wife Eleanor, holds the record with the American Angus Association for the longest continual history of registered cattle, and their cow herd is the oldest cow herd in South Dakota.
During the recent dispersal, I had the chance to visit with Hugh while going through the cattle, pen by pen. When I made the comment that I wasn’t sure why my husband and I studied the catalog so thoroughly before getting to the sale, because you truly couldn’t go wrong with a single cow, bred heifer or calf on the sale- he simply smiled. In true Hugh

fashion, he didn’t add to my complement or give some sort of sales pitch. He simply said, “these cows think they’ve died and gone to heaven,” followed by a small chuckle. The cows had all the hay they could eat, and were belly deep in straw bedding. As buyers made their way to the sale ring, family members were greeted with handshakes, hugs and tips of their cowboy hats as the buyers showed their respect to a family who has made history in the Angus breed. The sale was a success as the cattle were headed to pursue their next chapter with other great ranchers, and the weather cooperated so all families were able to travel home safely.
As members of the livestock industry, we all have goals for our operations. Whether that’s to load up the trailer and haul this year’s show string to as many shows as possible, or to take home more banners than last year. Maybe your goal is to add to your operation, build a new barn, or to raise the best crop of bulls you have ever raised to offer to your buyers. No matter what your goals are, they all take hard work, which I think has escalated into the term, “hustle.” We have become a society that jams as many things as we can into one day, and go to bed thinking about all the things we still need to get done. Yet when you ask someone as successful as Hugh how he built this empire within the Angus breed, he will tell
you, “we just took care of things one day at a time.” So as we count our blessings this holiday season. I’ll be counting my blessings of my family staying healthy, the roof over our heads, and being able to look out into our barnyard to see a few special orange tags and rafter 61 brands in our cow herd. What are you most thankful for this year?! If it’s someone special, have you reminded them how thankful you are for them?! AppalachiaN Agriculture 80 year-old West Virginia ham, bacon & egg program teaches real-world production experiences Written by Stephanie Sindel, SC Staff
Tucked into the heart of the Eastern Panhandle of West Virginia lies an agricultural program that has been around since the 1940s. Thinking back to a time that seems vastly different than now, the similarities between then and now are more strikingly aligned than we may think. Nevertheless, the one thing that holds true through the decades is the necessity of production agriculture to provide the safest, plentiful and wholesome food supply to consumers, in the world. The state of West Virginia’s agricultural education programs have taken their approach to teach real-life animal sciences through FFA’s Supervised Agriculture Experiences (SAEs) to the next level. One of the only states to offer such a program, they host the opportunity for students to raise hogs and chickens and then cure the hams and bacon and then have their products judged and sold through a local auction. The program was founded by what was then referred to as the Future Farmers of America through their SAE and agricultural educational curriculum. Fast forward 80 years and the program still thrives today through FFA and modern day SAEs.
The goals of the ham, bacon & eggs program are straightforward. First and foremost, education understanding where food comes from and how it gets to a table. Another goal is to teach students and their community about the financial responsibility of livestock and producing livestock. And lastly, for students to use this experience when considering careers through an understanding that the world needs everyone from farmers to food scientists to keep the wheels turning for agriculture. West Virginia has 24 chapters participate in chapter Ham and Bacon programs and hosts a statewide competition held annually at the state’s capitol in March. Contestants earn their chance to compete with their cured products by meeting a list of state requirements. Traveling back in time, the industry standards have progressed over the years - and so has the food science technology through scientific research and product development. The ham, bacon and eggs project emcompasses live-animal evaluation, facilities, feeding and nutrition to the harvest, curing, packaging and marketing. January/February 2021 • theshowcircuit.com

Mineral County FFA has provided this opportunity for countless students that have passed through the halls of their school and ag-ed program. Currently, the agricultural education program at Mineral County Technical Center (MCTC) program is led by Carol Webb, Julie Sions and Brenton Ebert, all who came up through the Ham, Bacon & Eggs program in their younger years. Each year, 30-40 students that are interested in participating in the program go to an educational meeting. Notably, all students can participate - Freshman through Seniors. Depending on whether or not the student comes from a livestock background, their experience can vary greatly. The generational gaps between producer to consumer seem to be exponentially increasing and our job to educate never ends. Each year the students set out and put their livestock evaluation skills to the test when they pick out their projects for their SAE. Each student covers the cost of their projects. Next, comes the facility preparation. The exhibitors prepare an appropriate facility to raise the hog projects. Only the students who raise chickens are eligible to enter and sell eggs. An understanding of feeding and the merits of good nutrition are also up to each of the participating FFA members. MCTC staff said that for a vast majority of the students, this is their first time raising any species of livestock. The projects are finished at approximately 275 pounds and are harvested at a local inspected facility. After processing, the halves are delivered to MCTC where they are hung in the lab for the completion of their carcass breakdown, cutting and curing, all in preparation for the sale. The remaining carcasses must also be cut, packaged and labeled for the students to take home.

As you can imagine, the meat processing lab at MCTC is state of the art and their continuous improvements are made possible by a grant program through the state of West Virginia and the devoted individuals that submit the applications for funding. MCTC’s cooler has rail space for 30 hogs. Complete with digitization, closure notifications and programming for curing and smoking. Once the carcass halves arrive, the students dive back into the 3-week process of country curing their products for the competition A 3-phase process, country curing includes the curing stage where hams and bacon are cured at 36-40 degrees Fahrenheit for a length of 2 days per pound. Next, comes the salt equalization stage and finally the drying period. Drying is a 10 day period where the products are stored at 90 degrees Fahrenheit. During these phases, there is an 18 percent shrink on the product Upon completion of the three processes, the product is then smoked in MCTC’s commercial smokehouse for the final phase of of the process. Quality control and inspection are administered through the West Virginia Department of Agriculture’s Meat and Poultry Division to ensure product safety. One of the most invaluable learning opportunities throughout the SAE is the product judging. Normally a public event including critiques by the evaluators, the Grand and Reserve champions in each division of the ham, bacon and eggs are named and assigned quality grading, respectively. For those unfamiliar with the judging process of a ham or bacon, the products are checked for spoilage. A meat probe is inserted in each ham, removed and checked for spoilage indicators. Next, the lean to fat ratio is assessed and then the entries are placed. The process looks a little different for the eggs with appearance, uniformity and shell quality being externally assessed. Each egg lot is candled for interior quality, the air cell and freshness of the egg. Genetics, feeding, quality control and trimming are all factors into how the products place.
Each student is responsible for doing their part to rally community interest in the auction. They get hands-on experience with engaging their community to promote a successful auction. Aside from first-year members, students can enter up to five lots into the sale, community support is essential to the success of the program. It is up to the students to educate buyers about the sale offering, create invitations and letters and distribute through the community both in-person and by mail. As you can imagine, some traditions with the ham, bacon and egg auction have changed; however, it has been a major community event since its inception. During a normal year, over 300 folks from the community would gather on an evening in March for a meal and then a live product auction. The auction typically grosses over $50,000 with prize winning hams fetching north of $55 per pound (2630 pounds), bacons (4-12 pounds) bringing over $1,000 and the sale price of a dozen eggs over $500. Students pay a sale commission to help cover the cost of the auction and the remaining proceeds go back to the students. Generally the students will utilize the proceeds for college and to invest in their ham, bacon and eggs project for the next year. It is each student’s responsibility to follow up with a thank you gift or note to their buyers. Buyers from the sale are family members
and local businesses. This year’s auction event will take place on SC Online Sales on March 11, 2021. As agriculturalists, the ever-present challenge of educating consumers about our methods of production agriculture seem to grow each day. Since the start of the pandemic, we hear the media talking about “food shortages”, which are completely false. In fact, we have learned of supply chain gaps that will make our industry even stronger as we emerge post-pandemic. “American agriculture can and will survive. We’ll do our part to invest in students who help agriculture survive, because we can’t afford to lose it.” The folks of West Virginia are passionate about their ham, bacon and egg program and know the role of importance that it plays in their communities. For generations, the program has instilled animal husbandry and food safety skills into their students. Mineral County FFA is proud to offer real-world experiences to their students through the support of their community. The character and youth development that are instilled through the program are invaluable to the state of West Virginia. To hear of a program lasting nearly a century is a testament to the integrity of experience and leadership. As times have changed, the vitality of agriculture and the education of where food comes from continues to be paramount in today’s society, and West Virginia is doing a tremendous job of teaching and communicating the story of agriculture.

Taking Care of Animal Health Products By Wes Ishmael
Squandered Potential Before you blame a particular animal health product for not working, consider whether you gave it a chance—not the cattle, but the product itself. “A vaccine can cost more than $3 per head, and if not stored properly the vaccine can be rendered ineffective,” according to Gant Mourer, when he was Extension beef value enhancement specialist at Oklahoma State University. “Producers cannot afford to overlook the importance of how they store vaccine and handle it prior to injection.” According to Mourer, biological products should be stored under refrigeration at 35° to 45°F unless the nature of the product makes storing at a different temperature advisable. If vaccines are not stored within this temperature range, efficacy to the calf can and will be reduced.
So, chute-side coolers make sense in hot weather, but still do no good if the product in the refrigerator was already compromised. Lots of Inefficient Refrigeration A study conducted by researchers at the University of Arkansas (UA) several years ago found that of the refrigerators used to store biologic products, only 26% recorded temperatures within 35° to 45°F greater than 95% of the time over a 48-hour period. On the other end of the spectrum, 24% recorded temperatures within 35° to 45°F less than 5% of the time over 48 hours. In one extreme example, the temperature never dropped below 50° F in a producer’s ice box that was kept closed with a strap. The study included 269 refrigerators of producers, retail stores and veterinary clinics. A data logger was used to monitor and record the refrigerator temperature every 10 minutes for 48 hours.
A case study conducted at the University of Idaho (UI) in 2013 found much the same. About a third of the 176 refrigerators—producer and retailer—maintained the recommended temperature range, while about a third did so <5% of the time. Only 44.0% of retailers in the study had thermometers to monitor refrigerator temperatures, and 41.0% didn’t monitor their refrigerators.
The University of Idaho’s Cattle Vaccine Handling and Management Guidelines suggests placing maximum/ minimum thermometers in refrigerators and recording the temperature at least weekly.
Impacts of Too Warm and Cold
And, no product can be expected to work if it’s expired. At one operation, UA researchers found 28 of 31 animal health products in a producer’s refrigerator to be expired. Across the UA study, of the 5,016 animal health products stored in the test refrigerators, 4% were expired and 10% were opened.
According to the UA researchers, “Storing animal health products at < 35°F can be more damaging than storing animal health products at > 45°F because the antigen can separate from the adjuvant.” “Killed vaccines are especially susceptible to freezing temperatures,” Mourer said. “Freezing a killed vaccine will alter its delivery system. In turn, this negatively affects the immune response to the antigen in the vaccine.” Further, Mourer pointed to a UI study showing that modified live viruses (MLV) are more stable but can be inactivated if they are repeatedly cycled above or below the required temperature range. Once activated by mixing, he explains the effective life on an MLV will be reduced to an hour or two, during which the 35° to 45°F range should be maintained. “This can be accomplished by only mixing the doses a producer will use at the time and using a cooler to maintain the proper temperature range while working cattle,” Mourer said. Monitoring Your Temperature Monitoring the temperature of the refrigerator you use for storing animal health products is as simple as installing a thermometer and checking it on a routine basis. Tom Troxel, a UA emeritus professor was one of the Arkansas researchers; associate department head of the university’s animal science department at the time. He recommended checking the temperature at various times of the day. After you know the temperature range is correct, he suggested checking it at least once every week, especially if you’re storing lots of product.
If you find that products have been stored at temperatures outside of the recommended range, Troxel said, “When in doubt, it’s probably wise to replace the product.”
Refrigerator Checklist Troxel authored the UA factsheet, BQA: Storing Vaccines Properly. In it, he offers advice on helping refrigerators accomplish their task. Location—Ambient temperature affects refrigerator performance. “Do not position them in direct contact with hot appliances, as this will make the compressor work harder,” Troxel said. Gasket—That seal around the inside of the door should last a lifetime with proper care. Troxel suggested keeping it clean with soapy water and using the paper test. “You should not be able to slide a piece of paper between the rubber seal and the wall of the refrigerator,” Troxel explained. “If the piece of paper slips between the seal and the wall, the seal is not tight enough and the gasket requires replacement.” Maintenance—Keep the refrigerator coils and drip pan clean. “Dusty coils have to work harder to cool down the interior and contents of the refrigerator,” Troxel explained. “In automatic defrost models, the water from the defrost process flows out a drain in the floor of the refrigerator and into a pan where it sits until evaporating. Food particles can be carried along and clog the drain or be left behind to rot.” He also recommended defrosting manual-defrost freezers, never allowing frost to build up more than 0.25 in. ollowing the cancellation of the Iowa State Fair, a select group of Iowa’s show cattle industry supporters wanted to ensure that the juniors in their state got to show and that COVID-19 did not tarnish the end of their season. This group of leaders worked together toward the goal of giving the opportunity to show to the kids in Iowa. With the leadership of Wade Rodgers, Brad Smith and Tracy Goretska, Brad Otto, Travis Shanks, Brent Lowry and Kevin Brooks this core group of chose the challenge of raising funds in support this year Iowa State Special Edition. This group solicited donor support from around the State of Iowa and the Midwest. Equally important as the donor support for this cause was those individuals who were active buyers of the 86 lots of goods and services offered thru the ISF Beef Champion Supporters July 2020 online auction. The one
evening auction raised over $90,000 for beef youth support.
