Some Pennies Matter More It makes little sense to trip over the proverbial dollar in search of the odd penny that can be saved. It’s just as defeating to ignore pools of copper that can be had for the investment of a few dollars. “Future efficiencies and profits will not be mutually exclusive efforts to controlling costs and increasing revenues. Instead, success will come from optimizing expenses and performance by building a production system that will yield the lowest unit cost of production for the most valuable calf that can be produced in the operational environment.” Clay Mathis, director of the King Ranch Institute of Ranch Management made that statement at the annual Beef Improvement Federation (BIF) meeting in 2016. His presentation was entitled, “Making the cowherd more efficient and profitable by 2036: Where do we focus our efforts for the biggest impact?”

It came to mind listening to Ryan Noble of Noble Ranch, LLC at Yuma, CO, who was a speaker at this year’s Cattlemen’s College sponsored by Zoetis. “You need to ask yourself, in this day and age that we operate in, is it really feasible to spend large amounts of capital, real dollars and cents on an inferior production system that will take you 1,000 days to analyze whether or not is effective?” Noble asked. The production system Nobel refers to is a replacement heifer and the approximate length of time between her selection and when her first calf is marketed at harvest. “That’s a considerable amount of time to invest in an animal without having any idea of how it’s going to perform,” Noble explained. Then he illustrated the exponential value of time.

If you keep the heifer until she’s 5 years old, she’s spent about 1,825 days at your place; 2,555 days if she stays until she’s 7. She’ll log approximately 3,650 days in your ownership if she sticks around until she’s 10. Figure she celebrates a decade in your herd, and assume she’s in a herd of 275 with a similar productive life. That’s 1 million cow days, Noble says. He started pondering all of that harder in 2014 when just about any steer calf breathing was bringing $1,500 right off the cow; about $100 back for heifer mates. “By keeping a heifer calf and breeding her, we were signing up for $2,475 in expenses before we sold her first calf,” Noble explains. “We had never in our lives spent so much money on commercial cows.” With so many dollars at stake in selecting heifers that could return

Young Beef Donor Development Maximize Genetic Potential: Producing embryos from young heifers gives you the opportunity to maximize genetic gain and capture value on your genetics sooner. Young Donor Expectations:
• Age of first OPU is dependent on the size (weight and height) of the young donor. Most young donors can start embryo production as early as 10-13-months of age. Increased results tend to come with age. • Trans Ova data would indicate that there is little difference seen in young donor conception rates after IVF procedures compared to conception rates in young donors that have not had an IVF procedure prior to breeding age. Young Donor Management Practices for Success Donor selection, appropriate starting age, & husbandry management is critical for the success of your young donor program.
Nutrition Management: Oocyte quality is maximized with a good nutrition program. It is recommended to
have a simple, balanced diet containing high roughage sources. If possible, avoid distiller’s by-products. Rations should supply adequate protein and energy for growth. Excessive levels of protein and concentrates can be limiting to embryo production success. Additionally, the young donor should always have access to high quality mineral program.
Management of Environment: Heifers should be
managed in groups of similar body condition and size, with adequate pen space with access to fresh water and dry bedding. Young heifers seem to be more sensitive to stressors and environmental changes than mature cows.

Feeding Heifers—The Perils of Over-conditioning
F
or this month, I put a request for article suggestions out at many show exhibitors at a couple of the major stock shows in Texas. By far, the request for an opinion on the feeding, development and supplementation of breeding cattle was far ahead of any other information request. Naturally, feed is the No. 1 cost behind the original investment in the animal, and feeding management can be the largest impediment to the development of a successful program — whether developing a show heifer/bull, steer or even bucking bull. First, cattle are ruminants, a unique species, as their gastrointestinal makeup allows them to survive and often thrive on feed stuffs most other animals could not survive on. When allowed, cattle will naturally select those forage types best suited for them in the production scheme which they are associated with. Unfortunately, in all of man’s infinite wisdom, cattle are most often not allowed the choice of what is best for them. As we consider production schemes — breeding, show, market steer, even athletes such as bucking bulls — we have to look at different feeds that will provide growth, fat or performance.

So with that, let’s consider breeding cattle and their development. Unfortunately for the cow, current thinking in the show ring dictates an animal with a lot of body condition (fat), which is not always in the animal’s best interest. It has been my observation over the years that breeding heifers are usually way over conditioned, which may lead to difficulties with conception at breeding. It can also lead to a reduction in lactation due to excessive fat accumulation in the udder and hoof and leg problems. It can also cause (formerly overfed show heifers) difficulty in transitioning to a total forage diet and maintaining themselves. Many times, excessively over-conditioned females will be at increased risk of calving difficulty because of fat deposition in the area of the pelvis and the pelvic canal. I’m not saying every show heifer may experience these problems – but observation over 40 years has shown evidence of increased risk when heifers are heavily conditioned. It is a culture that is rich in change; from large-frame , massively muscled individuals to moderate-framed cattle with large middles and poor leg structure. One thing never really changes, fat sells and is viewed as much more attractive in the show ring.
Supplements Another question asked during our survey of stock show participants regarded the use of supplements. There seems to be a product for any condition you desire; products to improve structure, products to improve feminine appearance, products to burn or mobilize fat, etc. I won’t speak of the function of these products in other species, but I will speak to them in cattle. All results used in advertising seem to be anecdotal, there are no trials or testing to verify the performance of the products except for what other users have experienced. A concern should be are these products even properly absorbed in the gastrointestinal tract; many should be broken down by the rumen bacteria and protozoa before proper absorption can even take place. Most of the supplements have too large of a molecular weight to be absorbed by the lining of the mouth or upper digestive tract, therefore utilization by the animal can be questionable. Ruminal degradation of many products, particularly those made of complex sugars, lead us to believe many supplements lack efficacy in their representation.

The company says it will work with its supply chains and restaurants to be more efficient and “elevating and supporting sustainable agricultural practices. In collaboration with thousands of franchisees, suppliers and producers, McDonald’s will prioritize action on the

Water Trough Level May be Key to Spread of E. Coli in Cattle According to Science Daily, research at Cornell has shown water troughs are a conduit for the spread of E. Coli in cattle, which can also spread to humans. The study was just published in the journal Plos One. “Water troughs appeared in our mathematical model as a place where water can get contaminated and a potential place where we could break the cycle,” said Renata Ivanek, associate professor of epidemiology and the paper’s senior author. The hypothesis was then tested in the field -- with surprising results. A vaccine to reduce bacterial shedding in cows exists, but the beef industry has little incentive to use it, partly due to cost, and the industry does not benefit from labeling beef as “E. coli safe,” Ivanek said. So Ivanek and a research team of 20 co-authors conducted a study to identify other ways to reduce the bacteria’s prevalence in cattle, which can vary over the year from zero to 100 percent of cows in a feedlot car-
rying the bacteria, with rates generally rising in the summer. The group ran control trials in a feedlot over two summers. This involved reducing the water volume in troughs in randomly selected treatment pens and leaving the volume unchanged in control pens. They expected that reducing the water levels in troughs would prevent the spread of E. coli. Instead they found that it increased spread; in the treatment pens, the odds of finding shiga toxin-producing E. coli in cows was about 30 percent higher than in the control pens.
why more water in troughs reduced E. coli in cows, but Ivanek questions whether the lower volume made it easier for cows to swallow debris at the bottom of tanks, or whether a fuller tank reduced E. coli concentrations. Next steps include repeating the results in other feedlots, evaluating the effectiveness and cost benefit of using more water to reduce E. coli, investigating how seasons and temperatures play a role in prevalence of E. coli, and understanding the actual mechanisms that led to the results.
“Our modeling studies did pick up the right parts of the system,” Ivanek said, “but the mechanism that we postulated is the opposite from what we thought.” More research is needed to determine

Species and breeds of livestock you show: Boer Goats What is your favorite show and why? My favorite show was the Illinois State Fair in 2011. This was one of my first years showing goats and the entire year I had been excited to show here. Going into the show I didn’t know what to expect, and I was hoping to place in the top few in my class. I ended up winning my class, and then going on to win the middleweight division, so this in itself was unbelievable. In the grand drive I worked hard to make sure my animal looked the part and couldn’t have been more surprised and excited when the judge shook my hand for Grand overall! What is your favorite show memory and why: My favorite show memory was also at the Illinois State Fair in 2011. Before the Sale of Champions about a week after the show, exhibitors in the sale showcase their animals in a tent where everyone that visits the fair can stop in to ask questions and interact with them. It was a great experience to spend the week with family and making friends with others in the industry. Tell us about your all-time favorite show animal: My favorite show animal was my wether that I had over 2015 into January 2016 for Denver. I ended up placing reserve in the mediumweight division which was a huge accomplishment at a national show. Overall, he was a well-balanced, strong profiling wether combined with a good deal of power. What was most notable was his unique coloration as he had a unique combination of black and white. Do you have anything you keep in your show box for good luck or any good luck rituals on show day? On show day I generally would always set my goat up immediately before going into the show ring. No matter how much you’ve worked with them it always feels good to make sure the animal is going to cooperate, and it gives them the queue that it’s time to focus.

Least favorite show-day or show-barn activity: For the most part it’s always nice to work with your animals and see the day to day progress that your work is doing. One of the things that proved to be a difficult task each time was feeding and bedding our outdoor shelters in subzero temperatures. It was one of those things that isn’t always enjoyable but has to be done.
What are your college or career goals: As a freshman in college I am still trying to figure out what I’d like to major in specifically, although I am confident I’d like to be involved in business. I’m hoping to try a couple different internships over the next few summers to explore some of the various career paths, but eventually I am interested in running my own business of some sort.
What do you like to do outside of the barn/ show ring: Outside of the showing and raising livestock I was passionate about baseball and motocross. When I was younger I had always wanted to get involved in racing dirt bikes, and around nine or ten years old I got a bike and would ride around makeshift tracks with my cousin, Kade, and my dad. Eventually, my grandpa helped to build a motocross track on the corner of our property which we got years of practice and enjoyment out of, and almost every time we went out he would be watching and timing us from his car. I raced at local tracks until I was about fourteen with a few broken bones and other injuries along the way and decided that with other commitments I would continue to ride as a just a hobby. Over weekends I often watch Supercross and Motocross on TV and can still appreciate just how much work and sacrifice it takes for athletes to race and be consistently successful at that level of competition.

Sydney Standridge Receives First AJCA Award Stock Trailer It is a cold rainy day here in Arkansas, but don’t worry – just like any other day, you will find Sydney Standridge and her sister Shelby and brother Sam working away in the barn! In life, everyone has a purpose. Now you may argue, but I think that young Sydney Standridge has a purpose in this life and she is finding it through showing stellar livestock! The 13-year-old daughter of Jared and Lacey Standridge of Dennard, Ark., in Van Buren County, has started her career out in the show cattle industry as nothing short of amazing. With only three years under her belt, this Arkansas girl has received the champion slap time and time again. She is a third-generation cattleman who has exhibited 10 head in her short, three-year livestock showing career!

Being on the Right Side of History (Science) Historically, agriculture organizations and their opinion influencers have prided themselves in basing their policies on “sound science.” And, for the most part they have, though from time to time agriculture associations have let popular opinion and, in a few cases, traditional thought dictate policy. In order to help the cattle industry avoid the latter I write this article – because words do have meaning and I want the cattle industry on the right side of science this time. Have you heard the phrases fake meat, clean meat, alternative meat, cultured meat, plant-based protein or alternative protein? These terms have been used to describe meat (beef) that does not come directly from cattle. Alternative protein and plant-based protein have replaced the old term soybean burger. Fake meat, clean meat, alternative meat and cultured meat have been used to describe meat produced in a laboratory. Therefore, I propose to call it what it is. It is not fake. It is not cleaner than any other meat. It is cultured meat and not everyone knows what that is, but everyone knows what laboratory meat is. At the recent NCBA convention, fake meat (a term we really should not use because it is not fake) was a hot topic of discussion. As an outcome of the convention, one of the Top 5 Public Policy Priorities of the NCBA for 2018 is to protect our industry from fake (laboratory) meat and misleading labels that do not contain real (natural) beef. If ever there was a time to use the word natural, this is it. Beef produced on the hoof is natural beef. At the moment, NCBA is on the right side of science. The NCBA is correct

to request the USDA/FDA to define laboratory meat (beef) and to distinguish it from natural beef. Defining these terms, which may or may not imply re-defining the technical definition of natural, will help the consumer know what they are purchasing. What is laboratory meat? Laboratory or cultured meat is developed from animal cells fed serum made from animal blood. This is an expensive process that can produce a product that looks like ground beef. The process is not close to being able to produce a steak – not yet anyway. To many people, this is a process that sounds a lot like a genetically modified organism (GMO). That phrase, GMO, has turned a lot of people off of certain foods – just like laboratory meat will. That is okay with me, but before we criticize laboratory meat too much, let us look at some facts.
“Laboratory or cultured meat is developed from animal cells fed serum made from animal blood.” The world expects 9 billion people by 2050. Consequently, food production must rise by 70%. Agriculture production has kept up with food demand by adopting the latest science and technology. Laboratory meat is not bad. It is the latest science and technology. And, in an
attempt to feed the world, this is good. Bill Gates and Richard Branson have invested in Memphis Meats (a developer of laboratory meat) and in Beyond Meat (developer of a plant-based meat alternative). Tyson Foods and Cargill, looking to the future, have invested in Memphis Meats and in Beyond Meat. Laboratory meat is not a whole lot different than injecting pig or sheep embryos with human cells to grow “human-like organs” for medical transplant. Every hour, six people are added to the national waiting list for an organ transplant. Each day, 22 people on that list die. In the United States, more than 100,000 people need a heart transplant and each year only 2,000 people receive one. Part of the problem is that science proceeds faster than society can form ethical policy or adapt moral values. Nevertheless, laboratory meat may help us feed the future world, just like growing organs in animals will help us save lives. Though laboratory meat will never replace natural meat. We should embrace this science, not condemn it. Again, the facts. In the U.S. only 17% of people eat predominately plant-based diets and 60% claim to be reducing meat-based products in their diets. The rest of us eat meat and relish a great steak. According to Rabobank, obtaining 5.9% of total U.S. meat sales would make laboratory meat economically viable. And that is okay, if it helps American agriculture feed the world. Just like GMO, laboratory meat will be a turnoff for a lot of folks and okay for others. Regardless, sound science will result in laboratory meat. It is coming.

Let us just be sure the cattle industry is on the right side of science. Laboratory meat is sound science. I will never be a fan of laboratory beef; it is natural steak for me. But, as a scientist and a cattle producer, I do believe the beef industry
should accept laboratory meat for what it is, and what it could be, and not condemn it because we are afraid laboratory beef will replace natural beef. It will not replace natural beef; it will be a supplement to natural beef.
