(OK, Central Oregon still doesn’t have a dedicated Korean food spot, but we’ll keep hoping…) Not only does this guide include hundreds of listings for Central Oregon lunch and dinner spots, but it’s also the space we reserve each year to highlight the area’s Restaurant of the Year, Food Cart of the Year and the Rookie of the Year. Who gets the honors? You’ll have to read on to find out. In addition, keep your foodie game on point by reading about the Food Trends for 2018, and then get up on the history of this region (here’s lookin’ at you, newcomer) with our story about eating in vintage Bend. FOOD TRENDS for 2018
Bubble waffles explode on the scene, meat promises to go vegan, bubbles won’t stop bubbling BY LISA SIPE
Get out your napkins, Central Oregon, because these food trends for 2018 are going to make you want to eat—lots.
PLANT - BASED FOOD IS RAGING Veggies are taking over! With 58 percent of adults drinking nondairy milk and searches for “vegan” on Google at an all-time high, we’re going to see a lot more vegan products on store shelves and local menus. This is good news for local businesses such as Red Plate Foods, which offers vegan cookies, granola and muffins, and Bend Pizza Kitchen, offering vegan pizza. By the end of the year, vegans may put meat back on the menu. JUST expects to have their first “clean meat” product, made from cells instead of live animals, on the market.
Seltzer Stays Cool—Spiked or Not Millennials want to pair LaCroix with their avocado toast. The seltzer trend isn’t going away; it just gets bigger as Americans drink less sugary soda. Earlier this month Pepsi launched Bubly, their own line of caloriefree, sugar free, sodium free carbonated water to try to break into the market. If you’re too lazy to dump your own booze into your bubbly water you can find spiked seltzer brands Spindrift, White Claw and SpikedSeltzer where you usually buy your beer and cider in town.
Regular Waffles are Square, Bubble Waffles are Hip If a waffle got it on with bubble wrap the baby would be a bubble waffle. Traditionally a street snack in Hong Kong, “egg waffles” are made with a sweet, egg-rich batter that rises when cooked in a waffle pan with semi-spherical chambers. The crispy bubble waffles are pliable, filled with sweet ingredients and folded like a taco. Common fillings include ice cream, Nutella, whipped cream and honey. Many places take the bubble waffle over the top by adding chocolate sauce, caramel, fruit, candies, sprinkles and Japanese Pocky, thin chocolate-coated biscuit sticks. You can get your bubble waffle fix at TeaCupfuls in Bend.
Avocado Toast is Here to Stay Our love of buttery avocado on bread can’t be quenched. Even fashion brands, including Emi Jay, carry boyfriend tees with the phrase, “you’re the avocado to my toast.” This year expect to see the soft flesh of avocado smashed, fanned, cut out in all different shapes and artfully arranged in an attempt to keep the dish from becoming banal. To satisfy your craving for avocado toast locally visit Dakine Café, Jackson’s Corner, Companion Coffeehouse or Thump Coffee on York.
How Local Can You Go? If you had to eat food grown in your neighborhood, or within walking distance of your house, what would you eat? If you’re lucky, there’s a community garden nearby. The trend to go hyperlocal pushes restaurants and consumers to produce, process and eat their own food in an attempt to save money and be more environmentally friendly. If this trend really catches on in Central Oregon expect to see more than a backyard or rooftop garden; we’ll need greenhouses to accommodate our short growing season. One local restaurant with a small garden on its property is French Market. In the summer they harvest ingredients from the garden to inspire their menu and use fresh picked flowers in their cocktails.

Before we go any further, here’s some important advice: save room for dessert at Scoutpost. If you’ve eaten at the cart, located in the Spoken Moto food pod, chances are you’re already drooling at the mention of its name. The food is so craveable, it had to be the Source’s 2018 food cart of the year. I waited until my second visit to try their donut holes and I should have eaten them sooner. The donuts are light and fluffy, coated with sugar and served with two dipping sauces: Metolius chai cream and caramel. They’re divine and shouldn’t be missed. You can’t go wrong with anything you order at Scoutpost. Even the simple fried new potatoes with spicy aioli, smoked paprika, garlic and parmesan will leave you thinking about that hint of sweetness in the potatoes and the crispy edges all day. A family of chefs, Will Forbes, his sister Brittaney MacFarland and her husband Doug MacFarland—also the Executive Chef at Brasada Ranch— opened Scoutpost in September 2016. Scoutpost started, “after a year of backyard conversations. It just seemed to make sense to open a food business when you have so many chefs in a family,” said Brittaney. “We also wanted the freedom that comes when you work for yourself. Will wanted to be able to cook the food he wanted, and I wanted to be able to do the same.
“The idea was to have fun and keep the food evolving.” The food has indeed evolved. When they started, they served sandwiches made in a tandoor—a wood fired oven—but now they’ve mixed things up. During my last visit, the menu included a juicy burger, a cauliflower and chickpea sandwich, salad and soup. Their brunch has become so popular they added a few breakfast items to their daily menu, including a breakfast sandwich with a house-made English muffin. Will and Brittaney, who both worked in fine dining, bring the value of making everything from scratch to their food truck. Brittaney said, “we make 95 percent of everything we serve in house. Regardless of what is on the menu, you know it was made by us, from the heart with a lot of intention.” The future looks bright for Scoutpost. With a loyal following at Spoken Moto, the trio plans to expand this summer. Their second trailer will be Scout’s mobile refresher donut hole and ice creamery. “Ice cream making has been a passion of mine since I started in the pastry business and I’m really excited to share that with Bend,” Brittaney says. Modern American steakhouse Bos Taurus earns the Restaurant of the Year status for the service and cuisine—both impeccable. The intention Chef George Morris and his staff have put into the Bos Taurus experience is reminiscent of a carefully curated museum exhibition—but one you can sink your teeth into. Before opening a year ago, the Bos Taurus team spent time with the details, including blind-tasting steaks from 13 different ranches around the world and narrowing their choices down to five. When you order a steak, you’re enjoying the very best representation of that cut Morris could find. The preparation of those steaks was part of the research, too. Morris says, “the best way to prepare a steak is on cast iron over wood burning coals.” To mimic this method, the team installed a custom designed, cast-iron slab, built for their open-air
kitchen, in order to create a perfect sear on every steak. The wood essence is delivered with a sprinkling of special hickory-smoked salt. The menu has traditional steakhouse offerings, including a Caesar salad, mac & cheese with childhood flavors and creamed spinach. Each steak is served with a sauce, your choice of brown butter béarnaise, horseradish cream, a wine-forward bordelaise, chimichurri or Bos steak sauce. Chef Morris doesn’t mess with the classics unless he feels he can make an improvement. You can top your steak with Dungeness crab, get really decadent with French black truffle butter or rich, melt-in-yourmouth foie gras. While the cuisine is approachable for someone looking for an amazing steak and potato, foodies
will be excited by modernist preparations in the starters and salads. The kitchen isn’t the only department that got its fair share of prior research; so did the bar. The stirred, smoked Bos Manhattan looks like a science experiment. Served in a beaker that captures the cherry wood smoke, the cocktail took months to develop. Behind the theatrics is a solid, bourbon-forward classic Manhattan. The crystal-clear block of ice sitting in the bottom of the glass, keeping the Manhattan perfectly cold, is frozen at just the right temperature for the perfect amount of time to keep out any bubbles. Morris says winning restaurant of the year “is more about the staff. They are super dedicated and have worked really hard to create something great.”
He also says he’s never worked in a restaurant where “the service staff is just as passionate as the back of the house.” From the minute you walk into Bos Taurus you’re going to feel special. Someone asks to hang up your coat. If you have a handbag, a purse hanger is added to the edge of your table to hold it. I was there for a birthday dinner and a hand-written card was waiting in the center of our table. In addition, we were treated to a round of champagne. “It kind of started off in a delicatessen, local-sourced view,” James Fink recounts, as he presses a bison burger into the flat-top grill in the kitchen of Wild Oregon Foods. Seven months later, he says, “it’s kind of more steered towards a diner—nostalgic, classicstyle foods.” When you’re a rookie restaurant, shifting with the tastes of your clientele can be key in ensuring success. Peek at the regular menu and you’ll find a host of deli-style items, including Reuben and Rachel Sliders—sliders that Source resident foodie, Lisa Sipe, admitted she continued to crave days after eating them—as well as salt and vinegar chicken wings and the Wild Smashburger, a bison or Impossible Burger served with Tillamook Cheddar. Fink says items such as the Bison Mac & Cheese, the Wild Spaghetti O’s and Fried Chicken Fridays are keeping people coming back. In true Northwest fashion, these are refined takes on the classics: the Spaghetti O’s come with a house made spicy vodka tomato sauce and mini bison meatballs; the Bison Mac & Cheese includes a house-made four-cheese sauce, caramelized onions, ground bison and spinach. Fink, who opened the spot in September 2017 with his wife, Sarah, is a classically trained chef, with 25 years’ experience, as he puts it, “playing restaurant,” most recently serving as sous chef at Deschutes Brewery, as well as previous stints as Jackson’s Corner and

Brasada Ranch. Also on staff is Fink’s brother, Michael, who was on hand when they selected their location, in the same shopping center as the Bend Factory Outlet Stores along S. Hwy 97. A location in a shopping center might seem like a drawback, but the owners see it as a positive. “We walked in and it kind of just felt right,” Fink says, recalling how the spot reminded him of a deli in a strip mall in the Bay Area, to which he and his brother would drive 30 minutes to get a killer sandwich. “It’s new territory for Bend, away from downtown,” but that could be its strength, Fink says. “I decided to take a chance and
bring healthy home-cooked food to the south side of town. You’ve got KFC and McDonald’s and Shari’s, Subway, everything that’s down here. We decided to try and put out a little love into the food world. It was a big gamble, and still scary as can be,” Fink said. With an outdoor seating area, a full bar and a varied, inspired menu that puts a focus on sourcing ingredients from local farms, it might be time for you to give this south-side rookie a try. ESTABLISHED 1985 Arguably Bend’s best kept secret, Palmer’s Café is tucked into the parking lot of a small motel on Greenwood Ave. The main dining area of the restaurant was constructed by Palmer Discus in 1922, but it wasn’t until 63 years later that the home became a restaurant. Palmer’s Café has a down-home feel and serves comfort food for breakfast and lunch. They’re mostly known for breakfast, and some would even say it’s even the best in town.
