Exclusive Interview with Singer Joe McElderry Joe McElderry is a 23 year old singer and songwriter who won the sixth series of the ITV show The X Factor in 2009. His first single, "The Climb" reached number one on the UK singles chart. He was also crowned the winner of the second series of Popstar to Operastar in 2011 and the TV series The Jump recently. To date he has released four top 20 albums - two of them reaching the UK top three. Joe has sold over two million records worldwide. The Sticks caught up with Joe for a chat a few weeks after his triumph on the TV show The Jump Reality shows seem to have been good for you; you have been on three and won all of them? I can’t quiet believe that last one (The Jump) really happened, it came about last minute, and they needed me to go out to do some training but it was an incredible experience. I absolutely loved it. I am a massive fan of skiing so to do a show like that was amazing. I stepped in as they had loads of other contestants including Sir Steve Redgrave who got injured. It was a dangerous show with high intensity sports. It was very nerve racking I have to say. I would like to do Strictly next but have not been asked yet. Tell us a little about yourself. I was born in South Shields and I still live there now, I have never really left. I went down to London to do X Factor but pretty much soon after I went back there. I got myself a place there and I use that as my base, I do a lot of travelling but it is home still and I go back if not every week, then every other week. So I am very luck in that sense that I can live where I want to live. How did you get into show business? I went to Newcastle College and did about 1 year to 18 months studying performing arts there and the audition for the X Factor came up and I had to leave college early, but I made sure I finished the qualification after the show -4-

ended. I took all my college work on the tour bus and I got a diploma as I felt it was important. You auditioned for X Factor in 2007 but you thought you were too young? Yes I did, I actually left the show in the boot camp stages because I felt very uncomfortable. I did not feel confident enough or that I was ready for it and I just freaked out basically and everybody at the time said you’re an idiot, why have you done that but it just did not feel right and I am always one to go on gut instinct and will not do anything if it does not feel right. What would you say to someone who was thinking about going on X Factor? You should always try, try and try again, never give up, never take no for an answer because there are a lot of nos in this industry and you have to get through them and not let it affect your performance and also just be passionate about what you do and the passion and the drive will carry you through. Also the talent and you just have to believe in yourself as it is a tough industry and there are a lot of knock backs and ups and downs but you just got to ride it and enjoy it for what it is, it is singing it is not heart surgery it is supposed to be fun and the day I don’t enjoy it is the day I stop doing it because it is the kind of job where you have to have a connection with the audience and that connection comes from the passion and the music. Why did you audition for the X Factor? Simply that I wanted to be a singer nothing more, nothing else. I just wanted to sing, wanted to perform to audiences and it was a good platform to be out there and to be seen by people. The year I won also taking part was Olly Murs, Stacey Solomon and Jedward - it was a really strong year and that’s the good thing about it, at least four people got a career break from it. It give people huge momentum to carry their career forward. It is a stepping stone with 20 million people watching the final. You sang at the audition ‘Dance With My Father’ is that a favourite song of yours? Yes, I grew up listening to Luther Vandross, I used to play him all the time. Luther just has an incredible voice and it is an incredible song and incredible soul in his music so I grew up with him, Michael Jackson, Celine Dion, Tina Turner and Whitney Houston, the big singers which were my musical influences. During the show I got given some great songs to perform even if some were hard to learn. “Somebody to love” was a hard one to

-5-

master, it was a lot of lyrics and turns to learn in a short space of time but it was one of my favourite performances once I had actually done it. You have recorded 4 Albums in the last 4 years. Yes they have all been top 20 albums and I have sold over 2 million records. People say it is not luck but I suppose I have been lucky in the sense that I have had an incredibly loyal and supportive fan base and I work hard. If I am doing something I commit 120% and I give it my absolute all. You do a lot of work for charities. I did the Great North Run last year for The Teenage Cancer Trust (TCT) and the Coast to Coast bike ride - me and a few family members, did about 170 mile bike ride over 3 days, it was tough but we raised over £12,500 but I think the important thing is if you have some profile in the media if you can use it in a positive way where as sometimes all the silly things get mentioned like who you are going out with or this happened, that happened. If you can use it in a positive way to raise money for important charities then I am more than happy to do it, it is a way of giving back I suppose for the privilege I have from my job. I was asked to be a regional patron by TCT a few years ago and I have just been doing work for them as cancer effects all sorts of people, especially at a young age it is a horrible time to go through it and I feel like, because I am around a similar age, so they can relate to me in some way. I go in and visit them and sometimes perform in the units although I have not done one for a while. I am always looking for ways to give them some entertainment while they are in hospital. In 2011 you took part in “Popstar to Operastar”? Yes, it was another incredible experience for me. It was so much fun and to be able to learn things off professionals like Katherine Jenkins, it was just a once in a lifetime experience, you could not even pay for that kind of training and the fact I got to do that and then release a classical album. I just loved it, also the support from the public - never in a hundred years did I expect to win, so a real surprise and it rolled into this kind of snowball of lots of opportunities. I then released a classical album which in a way educated fans that were not necessarily fans of the opera. Now when I am doing a show I can get to do both sides of the music (pop and opera). Would you like to do like to do musical theatre? Definitely, if the right show came along and it was the right time I would 100% do it. Working with a cast and having them around you is a great feeling. It feels like a support network. It is something I want to do in the future. I did panto in 2013 for the first time which I really enjoyed.

Actress Lesley Joseph tells The Sticks about her new show ‘Hot Flush!’ What appealed you about starring in the touring production of Hot Flush!? I’ve done it twice before, and I just couldn’t resist doing it again. It has gone down so well with audiences. It’s the only show I’ve ever done where on the first night we overran by 15 minutes because there were so many laughs. Of course, that could have just been me overplaying it! It’s a hybrid show - it’s got music, drama, stand-up and revue. But the main thing is that it’s very, very funny. Why do you think audiences respond so well to this show? It strikes a chord because it’s about menopausal women, and a lot of women identify with that. The Vagina Monologues started a trend for bringing in an audience who might not have been to the theatre before and Hot Flush! is merely continuing that. What do you think the show offers to an audience? Its sense of humour is very near the knuckle and that really appeals. One of the characters has a moment with a Rampant Rabbit and you don’t get much more near the knuckle than that! It’s part of a genre of theatre that connects with hormonal housewives and hen parties. They are people who want to leave their troubles behind and come out for a real laugh. Hot Flush! speaks directly to that audience, and that’s why it works so brilliantly. You play Myra in Hot Flush! Can you describe her to us? Myra is middle-aged and frustrated. Her husband has gone off with a bimbo, and so, like a lot of women her age, she’s trying to find a new life for herself. She’s wisecracking, but also vulnerable. You have to let the audience see different layers to a character. Myra is in this gang of four women who are going through everything together. By the end, you see them singing and dancing together. It’s like ‘One Singular Sensation’ at the end of A Chorus Line. They’ve all been on a journey together and they want to celebrate that. All the characters have a degree of pathos. It’s not a facile show – it’s aimed at making people laugh and think at the same time. What do you think the characters learn during the course of Hot Flush!? Myra learns to be herself and that she is worth something. She’s not just defined by a man. It’s a tremendous journey that all of the characters go through. The show demonstrates the strength they all have when they’re together. Hot Flush! is a musical comedy – how did you find the musical part of Hot Flush!? I’ve loved it. I may not be the greatest singer in the world, but I can sell a song. I’ve previously starred in The Boyfriend and Thoroughly Modern Millie, so I know my way round a musical. I also job shared the role of Miss Hannigan with Paul O’Grady for two and a half years in a production of Annie. It was brilliant to dip in and out of it. Sometimes I get very possessive about a role, and I was far happier that a man was playing my part than a woman on that occasion. I knew I couldn’t compete with Paul, but it was great as we had very different interpretations.

-8-

Which part of the show do you enjoy most? There’s a section in the middle which feels almost like stand-up. I talk to the audience and pick on someone in the front row. I would never want to be a straight stand-up, but I love doing it within the parameters of the show. Hot Flush! ticks all the boxes for me. It gives me my stand-up and my musical fix for the year. You obviously have a real love of theatre? Absolutely. I’m a theatre girl – I grew up loving it. I love standing in the wings waiting to go on and seeing the scenery change. I used to do very serious, kosher acting, but then I went down the comedy route. That’s top of the tree for me now. I just love working with an audience. I’m a pure theatre animal. What other theatre productions have you enjoyed appearing in? Every sort of theatre is valid, and I love doing it all. I once did Harold Pinter’s Home directed by Sir Peter Hall. The play is magical. The original production starred Sir John Gielgud and Sir Ralph Richardson, and I worshipped the ground they walked on. To be able to do that and then shows such as Hot Flush! or The Gingerbread Lady about a recovering alcoholic or Titania in A Midsummer Night’s Dream is truly wonderful. I’ve never done The National Theatre or the Royal Shakespeare Company, but I’ve done so many other marvellous things on stage. I’ve entertained thousands of people in the theatre and put smiles on their faces and that’s a great feeling. You’ve recently returned to our TV screens on ITV1 as Dorien in Birds of a Feather, which is probably your best known role. Did you have any doubts about reviving it? There will always be people who say, “For God’s sake, why did you bring it back?” You’ll always have lovers and haters. But you can’t spend your life worrying about what other people think. Some people won’t like my work, but many people will. All I know is that every day I walk down the street and someone stops me to say, “Thank you for making me laugh.” Those people are delighted that Birds of a Feather is back. How would you describe Dorien, the man-eating neighbour in Birds of a Feather? She’s a comic creation born with high heels and long nails. Laurence [Marks] and Maurice [Gran] based her on someone they knew who used to go and put petrol in her car wearing the white mink coat. She used to get a nice young man to do it for her, and then she would disappear with him for the afternoon. The high heels gave her that distinctive trot, and the nails meant that everyone else had to do everything for her. She had a very vacuous life, but there was still a huge vulnerability about Dorien. I think that’s why people related to her. Why else do audiences identify with Dorien? People simply love her. Yes, she’s a nasty piece of work, but people really like her because she is also vulnerable. There’s a real pathos to her. She can never be too successful. We would never make her a big fish in a big pond. She has to be still stuck in Chigwell. She makes people laugh, but she also makes them cry because you see her vulnerability. She’s the wrong side of forty and refuses to grow old gracefully. She takes life by the balls and just goes for it. She’s a true life force. -9-

Dorien is an identifiable human being, isn’t she? Definitely. It would have been very, very easy to play her as a cliché. She’s glamorous and loves power dressing. She’s got big hair and short skirts. She’s a very iconic TV character and I’m really proud of her. It would have been very simple to come on, get some corking laughs and go off again. But we never did that. We wanted to make Dorien a more rounded character. Do you feel you have been typecast as Dorien? I suppose to an extent I have been, but I don’t mind at all because she’s opened so many doors for me. Thanks to her, I have been able to really diversify. I did a BBC Radio London show for two and a half years interviewing everyone from comedians to Cabinet Ministers. I’ve also travelled the world presenting Wish You Were Here. I’ve always thought outside the box. That’s given me longevity. A lot of people say the older you get, the harder work gets, but touch wood, it’s been very good for me because I have ducked and dived. If you only do one thing, it’s more difficult. But I love that diversity – it means I never get bored. If someone asked me, “What role put you on the map?” of course I’d say Dorien. I’m very proud of her. But my career has never just been about Dorien. In real life, are you more like like Dorien or Myra? I’m not like either. I haven’t got any thing in common with them – apart from my age! You are also a regular in Panto aren’t you….? Yes, I love doing panto. All comedy timing is about hearing the rhythm in your head, and that’s crucial in panto. Ian Hislop wrote an article saying, “I always thought panto was for performers at the tail end of their careers. But having seen Dick Whittington in Wimbledon, I now realise it’s something you should do at the peak of your career.” When I read that, I thought, “Thank you.” Some people don’t get panto, but it’s great because you learn the skill of working with an audience. I hate it when people put panto down. It’s so important to get panto right. If children don’t have a good time at panto, they won’t go again and theatre will die. How do you relax? I’m a very good knitter. I recently knitted myself a dress, and it was only meant to be a jumper! I also love walking – I walk everywhere. I love doing the great London walks, learning about Charles Dickens or Jack the Ripper. I also love shopping. So I’m especially happy at Christmas when there’s an excuse to spend money! Every single job I do, I buy myself a present. When I finish a job, I think, “Right, now I’ve earned myself a pair of shoes!” Finally, will men feel excluded if they come to see Hot Flush!? Not at all. There is a very funny moment where Myra goes speed-dating. One actor plays all the men, and he ends up wearing a leather pouch and a mask. At that point, the audience goes berserk, and the roof comes off the theatre. That sums up the evening. People might be snobby about Hot Flush! but it’s great entertainment, and it sends audiences out with a smile on their faces. They’ve left their troubles behind and had a wonderful night out. It’s a “let your hair down” show, and above all, it’s laugh out loud funny. When you watch it, it blows your head off. Watching Hot Flush! is like having a Hot Flush! You can see Lesley in Hot Flush! DO I NEED TO GET MARRIED? Many couples in today’s modern society live together without getting married or entering into a civil partnership. There is no stigma attached to such an arrangement and everyone should have freedom of choice. However, what happens if that couple split up? Who gets to stay in the home they shared, who has to pay to maintain the children, and how are jointly held assets divided between them? Unfortunately, English law is very old fashioned and currently there is no specific legislation protecting unmarried couples. Instead, they have to work out which bits of a myriad of legislation covering trusts and children can assist them. Property If this was held in joint names, then both parties have a right to remain living in the property as well as potentially receiving a percentage of any net sale proceeds. If it is only registered in one person’s name, the other party can be in a very precarious situation. Other Assets These will usually be retained by whoever purchased the item and can prove ownership of the same. Maintenance Often in a relationship one person is the main breadwinner, and financially supports the other person – particularly if there are children to care for. Upon separation, if the parties were married or in a civil partnership, the lower earner would often continue to be supported by the other party. However, if they simply cohabited, there is no ongoing obligation for one party to support another over and above any basic child maintenance payments. The Solution? Of course one option is to get married or enter into a civil partnership. However, there is an alternative. You and your partner could agree terms now for a simple Deed of Trust or Cohabitation Agreement - which could set out what would happen to the home (and any other joint assets) if you ever separated. Such documents needn’t cost huge sums to prepare, and they can save a lot of money and heartache at a later date if unfortunately the relationship comes to an end. If you would like any more information on this, or any other, area of law please contact: amanda.thurston@curwens.co.uk Curwens have offices in Royston, Hoddesdon and Enfield. -12-

I WANT THAT JOB Recruitment is a two way process - it is as much about employee choosing who they want to work for as it is about employer selecting the right individual to work for them; and as economy ebbs and flows, the power of choice lays first in one camp and then in other as there are fluctuations in job shortages and skills shortages.

the the the the

As a candidate looking for a job, the CV is your strongest tool. Ensuring that it is easy to read, concise and details the impact you have had in your roles, is essential to making it stand out against the competition – when there are job shortages, there can be up to 300 applicants per job and recruiters may only look at your CV for 10 seconds before deciding to reject your application and therefore, right up the top, it needs to give them a reason to read it for longer. Don’t have a standard CV which you send to hundreds of employers. Think about the job you are applying for and tailor your CV and cover letter so that the recruiter knows you really want the job – don’t sound desperate or fake, it will end up in the ‘no’ pile before it is properly read. Make it professional, tailor it to the job and ensure that although accurate, it illustrates why you are the best person for the role given your previous experience. Read the advert carefully, what key phrases are used. Assuming you are one of the lucky ones and get an invitation to attend an interview, preparation is essential. When preparing for interview – do your research, find out about the company, the role, the sector and the person interviewing you – name and position are sufficient; you don’t need to stalk them on Facebook or LinkedIn. Use social media to help in your research. Prepare your questions about the role and the company using researched information – it is a subtle way of demonstrating that you have done your homework, this is not just another interview and you are genuinely interested in the position. If possible, find out the dress code in advance, so you can dress appropriately, but if in doubt, suited and booted will always stand you in good stead. Ensure you know how to get there, where to park, where to get of the bus etc. and allow plenty of time for roadworks, diversions, delayed trains etc. Your stress levels will go up if you are worried about being late. At the end of the interview, ask what the recruitment process will be, will there be a second stage and when can you expect to hear back from the business? Be confident, demonstrate your ability to perform the job and ensure the interviewer knows the value you will bring to the business – but don’t be cocky, interviewers don’t like it! The Complex World of Relationship Problems Explained by Jo Coker, Clinical Director of LCC Every year at Local Counselling Centre we see couples, both heterosexual and same sex, who are at the end of their tether and who have been tipped into a relationship crisis. It maybe be so serious that they are considering separating or divorce. The impact of this on the couple and wider family is huge, and can be devastating. So what does relationship therapy have to offer such couples? How does it work? Here is an insight that might help you make the choice. •

A couples therapist tries to help the couple be more objective about their relationship. Couples are encouraged to stop blaming each other and to become aware how their actions affect each other. Once they have this awareness, they can then be encouraged to make changes in behaviour that will alter existing unhelpful patterns of behaviour, and help the relationship improve.

As couple therapists we will also look at what works in the relationship. Most couples have some strength in their relationship, which often they are unaware of, especially when they are in crisis. This will be identified, affirmed and used to build further on.

Communication is vital for a successful relationship and for ongoing intimacy. Often this communication can be poor or unhelpful i.e. by using anger and rows. A couples therapists will know how to help couples improve this and will teach them how to become more sensitive and empathetic to each other, so that they get the best of their relationship in a healthy way. The therapist will also look at what the couple say to each other. If you think of your own relationship, you will probably find that you say what is wrong with your partner quite easily. However, we rarely pay compliments to our partners on the positive traits they have, even though often we do appreciate them. This does not help the individual’s selfesteem and in turn the relationship functioning. Communication is also very important for a healthy intimate life. It is very hard to feel sexually attracted to your partner if you are angry, disappointed or not sensitive to each other’s needs. Indeed for many of the couples we see with sexual problems, communication is at the root, not lack of desire.

Often couples have emotional avoidance issues and find it difficult to express emotionally to their partner. This may be because of attachment issues from childhood, where we first learn about attachment to another human. A skilled therapist will help the couple to become more skilled emotionally and able to communicate their needs more productively.

If you recognise the problems you are having in the above, then it may well be helpful to see a qualified relationship therapist. As a service LCC are skilled at helping couples re-engage and work through these complex issues. We have a team of specialists ready to help you. Consult our website for lots of helpful information and if you want to see a therapist remember help is just a phone call away. Sessions are available from just £15.00 (subject to status)

Green Spring Cleaning It won’t be long before the sun comes out (I am forever hopeful) and we start thinking about spring cleaning but at least promise me you’ll do it the natural way Its far better to use natural products as conventional detergents contain so many potentially dangerous toxic chemicals, of course it’s no one bottle of washing up liquid that’s the issue, more the cumulative effect of so many different synthetic chemicals, If you choose well plant based detergents are just as effective as conventional detergents and often very little is needed, we all know about ‘old style cleaning’ too, using vinegar and newspaper to clean the windows, bi-carbonate of soda for surfaces cleaning the oven etc. Most cleaning products contain VOC’s (volatile organic compounds), they evaporate easily and build up in the air and can aggravate asthmatics and anyone with allergies or respiratory problems. Most laundry detergents have added phosphates which could improve their cleaning power but isn’t good for sensitive skin (or for the environment as they stimulate the growth of algae resulting in dead fish and the chemicals make their way back into the food chain!). Similarly many contain sodium laurel sulphate, a foaming agent which is known to be a skin irritant, some contain formaldehyde, propellants, alcohol and synthetic fragrances which can trigger asthma attacks and could be hormone disrupting. It’s important to remember that most conventional cleaning products are based on petrochemicals – many of which are classed as hazardous waste. Personally I’m anti the anti-bacterials – we know the problems with ‘superbugs!’ I’ve recently found an amazing probiotic cleaner, it puts back the ‘good bacteria’ it’s so ‘pure’ you can use it as a starter yoghurt! Most people want to get back to old style cleaning but the question I’m always asked is ‘How to clean the loo without bleach? Interestingly, brand new toilets come with a sticker saying Do Not Use Bleach! It’s all about the one forgotten ingredient – elbow grease, get your rubber gloves on and remove some of the water – and scrub – great for triceps too! You can use bicarb. mixed with a little eco washing up liquid or white vinegar or buy one of the natural loo cleaners such as Ecover, but it’s the regular cleaning that’s important. For loo seats or any area that requires a little more ‘anti bacterial’ help use a few drops of Tea tree oil. For cleaning the bath / shower any good multi surface cleaner will do, my current faves include the multi surface cleaner from www.myeco2life.com and the probiotic cleaner already mentioned ‘Libby Chan’ probiotic cleaner from www.mylivingwateruk.com You could also try the sustainable Soapnuts, check out www.greenfrogsoap.co.uk So go green with your Spring clean, you’ll burn some calories, save some money and avoid the headaches.

Stephan Winkelmann, President and CEO of Automobili Lamborghini told first4auto: "With the Huracán, Lamborghini is writing the next chapter in its great history”. With 14,022 units produced, the Gallardo is the most successful Lamborghini model ever made. During its ten-year production run, it took the brand into a completely new dimension. In true Lamborghini tradition, the successor to the Gallardo also takes its name from the world of bullfighting: Huracán was a fighting bull of the Spanish Conte de la Patilla breed who fought in August 1879 in Alicante. His unyielding character made him invincible. The design is bold and edgy. The starting point of the design process was the Huracán's silhouette. The objective was to define the car with a single line stretching from the front end over the passenger cell to the rear. The side windows take on a hexagonal form that says Lamborghini, looks like a gem set into the profile of the Huracán. At night, too, it is utterly unmistakable: all lights, including the main headlamps, beam in LED technology - an absolute first in the super sports car segment. An innovative configured in information in centre tunnel

cockpit dominates the interior. The 12.3-inch TFT display can be a number of different modes and provides the driver with all key a virtual format. The slender lines of the instrument mounts and the are indicative of the lightness of the interior design. Fine materials -18-

distinguish the interior, which can be extensively individualised, while the extremely detailed craftsmanship delivers a highly refined sense of quality. The newly conceived hybrid chassis forms the basis for the vehicle's low dry weight of 1,422 kilograms guarantees the handling precision of a racing car. The new V10 engine in the Huracán generates its phenomenal propulsion from a displacement of 5.2 litres. It produces a power output of 448 kW / 610 hp at 8,250 rpm and a maximum torque of 560 Nm at 6,500 rpm. The new "Iniezione Diretta Stratificata" combines direct and indirect injection - achieving an increase in power and torque compared with the Gallardo and a decrease in fuel consumption and emissions. With its power-to-weight ratio of just 2.33 kilograms per hp, the Lamborghini Huracán achieves absolutely breath-taking performance. The top speed of more than 200mph or 325 km/h and the acceleration figures - zero to 60mph or 100 km/h in 3.2 seconds, zero to 120mph or 200 km/h in 9.9 seconds - offer an indication of its dynamics. Thanks in part to the Stop & Start technology, ECE average fuel consumption has dropped to 12.5 litres per 100 km or 2.75 gallons per 60 miles (290 g CO2 per km). The power generated by the ten-cylinder is delivered to the road via the new 7-speed dual-clutch transmission "Lamborghini Doppia Frizione" (LDF) and an all-wheel drive that also features a new hydraulic multi-plate clutch. Three different driving modes, spanning from road to race track, can be selected using a drive select switch in the steering wheel. The system is called ANIMA (Italian for Soul) - "Adaptive Network Intelligent Management", and impacts the engine, the transmission, the all-wheel drive and the ESC handling system as well as other dynamic systems. The wheels of the Lamborghini Huracán measure 20 inches in diameter, with the standard-fit carbonceramic brake system delivering exceptional stopping power. As an option, Lamborghini offers its new luxury super sports car with the Lamborghini Dynamic Steering variable steering system and MagneRide electromagnetic damper control. Both of these features are also integrated into ANIMA.

Customer deliveries are scheduled to start in spring 2014. The Huracán is priced at €169,500.00, excluding taxes (£139,713).

Milk, a Marketing Tool for Irresponsible Supermarkets; Sign the Petition for RAW Milk Here! Tesco say they have cut the price of milk to help people save on everyday items and that they will not pay farmers less. This a PR stunt not real customer care and thoroughly irresponsible. Read on for more or sign the RAW milk petition here. Tesco have now put pressure on milk prices as other retailers join the price war. Will Tesco profits drop by the amount they are dropping prices? No, because they will mark up other products to give shareholders the return they want. The net result is that more small dairy farmers will go out of business and mega dairies will be set up around the country. For more on mega dairies and raw milk click here.

Happy cows eating a natural feed and producing a great product Here is why we should all sign the petition: Nearly all the milk available is pasteurised and homogenised to give long shelf life, ‘protect’ us from bugs and stop the cream rising to the top. Very few people know that these processes do many people more harm than good and that Raw milk straight from the cow is much better for us and if made available could keep thousands of dairy farmers in business. Unfortunately the Food Standards Agency (probably backed by supermarkets) has ruled that only dairy farmers producing their own raw milk are allowed to sell it from the farm, very difficult for understaffed, underfunded, farmers. If the rules changed farmers could sell their milk through local shops, and vending machines, you could even get a raw milk cappuccino! These local shops supplying great produce to local people is not what the supermarkets want and the story of milk over that last 20 years is a classic example or how the ‘food

-20-

industry’, and over regulation, can ruin a product, and in this case, many of those producing it. The number of dairy farmers in the UK has gone from 45,000 in the 80s to 14,500 in 2012, and the threat of mega dairies like the USA, where 32,000 cows rarely taste fresh grass, and only live for 3 years, looms. Cheap, standard, fresh milk, that lasts for weeks in the fridge, from mega dairies, is what supermarkets, and many people think they, want. Others who understand the whole story and want to see cows in fields and be able to consume the milk, butter or cheese from those cows should be allowed to buy those products from local independent shops. Your comments are welcome.

The Posh Bacon Sarnie If you like bacon you must have noticed the wide selection of bacon on offer. From cheap imports, to organic free range slow cured. You may even notice a label on Supermarket finest brands saying ‘No added water’. Water in bacon, why? Demand for ‘cheap’ means the worst bacon is from intensively reared pigs that are then quick cured by pumping salty water in to the meat to also increase the weight. Demand for quality coupled with producers who care about their animals, and the quality of their product, means that there is some really great bacon available. And the best way to find out about good bacon, is ask. Bacon Connoisseurs Week is designed to help producers shout about their bacon and encourage you to ask questions about the bacon on sale. So please use the local food map to find your local bacon, find more information and recipes here or browse Local Food MarketPlace to buy online.
