Exclusive Interview with TV Chef Dean Edwards Dean Edwards was born and bred in Bristol, where he still lives with his wife and their daughter, Indie. His love of food was inspired by his father, who cooked beautifully but was a tradesman by profession.

Although he became a digger driver himself, Dean always cooked for the love of it and in 2005 was persuaded by his friends and family to enter MasterChef. He went all the way to the final but was pipped at the post – prompting thousands of viewers to flood the BBC's switchboard with complaints that he should have won.

Following a stint at the Michelinstarred Midsummer House in Cambridge, Dean worked on various television programmes, including Take on the Takeaway and This Morning. He is currently the resident chef on ITV's Lorraine and makes regular appearances on Saturday Cookbook You had a strange route in to cooking? Yes, I was a digger driver - lets be totally honest about it, and it is pretty unconventional the way I found myself in the world of food. Believe it or not I have a degree in photography which I studied for at university and like many other people come out of studying deep in debt, so I thought it might be a good idea to get myself a job just to get a bit of money together and 7 years later I was still doing it. So I was a digger driver for quite a while but that was not where my true passion really lay and I am glad I had the opportunity to enter MasterChef back in 2005. It seems so long ago, well it is 10 years ago, although the shows actually aired in 2006 and I did not expect to get anywhere as far as I did on the show but, fortunately for me, I got all the way to the final and I was just pipped at the post in the end but the experience was absolutely amazing and I knew from that minute I needed to work in the world of food.

A lot of people said you should have won it. Someone told me once that the BBC had over 10,000 complaints within an hour; it is crazy that a show can have that kind of effect on people. I think it is one of those things you get behind a character on TV probably someone you have never met and you follow their journey. I am the same now, I am a massive MasterChef fan, I am just proud to have had that background, and not many people get to cook on the show and to make it through.

I was really, really chuffed to experience all the things that had to offer me.

I am a big fan of cooking shows but baking is not one of my passions as far as what I like to cook myself. I find it too scientific; I am a bit more of a chuck it all in a pot and see what happens type of cook. I think some of the best recipes happen that way, a little bit by accident, just seeing what sort of stuff you have in the fridge.

With baking it is so critical and precise at every single stage and I don’t think I have quiet got the patience for that.

I am lucky enough to do a lot of food festivals up and down the country and I get to meet a lot of the other contestants from the shows, you know Masterchef, Bake Off etc. and they are all incredible people - and I am lucky enough to try some of their baking from time to time as well.

How did you decide you were going to enter MasterChef? I have always cooked; I had always loved cooking since I was a young kid. We were encouraged as a family to cook food, in fact my first memories of food as a child was being down my Nan’s house and she encouraged me to help her cook; my Nan was from South Africa, so she would cook these great big pots of South African stews and curries. All our family parties revolved around food and as kids all we talked about and wanted was to go eat Nan’s chicken curry and I think I always had that passion, also when I was at Uni. I was not interested in eating things like pot noodles and Fray Bentos pies, I still wanted to eat good food.

You were born and bred in Bristol,why do you live there? Bristol has great networks - it is easy to go north, south, east and west and we have Devon and Cornwall on our doorstep. I recently took my 5 year old daughter to Cornwall and she loved it, but Bristol as a whole is an up and coming city. On the down side we all sound like farmers but you get used to that living down here, it is a great place though and in the recent years the food scene in Bristol is really starting to rival a lot of other places.

What would you describe your food and cooking style? The best way I can describe it is I like to cook real food, it is food that is achievable, and it is food that anyone can make. I truly believe that following one of my recipes, even the most basic of cooks could get really good results and my cooking style totally changed when I had my daughter because I went from having loads of spare time on my hands to having zero time! But I still wanted to eat good food so it was about making good tasting food, making it accessible and I think before hand I use go to farmers markets, delis and butchers looking for amazing ingredients and more often than not now all I have time for is a trip to the supermarket, so my ethos on recipe writing is if I can’t find an ingredient in my local supermarket I don’t use it. I don’t believe that 5

food has to be complicated. When growing up some of the best food we had were the simple dishes like Shepherd’s pie, stew and stuff like that, you can put good food on the table and it does not have to cost the earth. I am a massive lover of cookbooks, I have got so many I don’t know where to put them and nothing annoys me more than when I look through a cookbook and I see something that I want to cook and eat and I look at half the ingredients and there is a little glossary at the back with a list of websites where you can get the special ingredients and I think I want to eat that now not in two weeks time when I can get them. I try to simplify things really and more recently I have got in to a healthier outlook on cooking.

They say the difference between a cook and a chef is butter and cream and we do go over the top making that really rich flavour. People love to eat out and I am exactly the same and I believe everything in moderation. I think we have to be a little more concerned about what we are putting on the table at home. If we are going to go out and enjoy food and a take away now and then it is important that we stop and look at the sort of things we are using at home to cook with. I made a conscious decision a few years ago that I really need to look at what I was eating as I have always been the sort of person who would eat and drink what ever I wanted, luckily enough I am a skinny bloke but it is easy to put bad weight on so I thought there is a time in my life I need to start looking at it for longevity and also looking at what I was feeding my daughter, so it was all about looking at different ways to cook and ingredients and just be not clever about things just trying to make food taste incredible without feeling you are missing out.

I think food is about memories and if you can remember something you loved growing up and I was a big fan of school dinners and it is great to see some of the dishes back on menus. At my school they did cheese scotch eggs which were just incredible and I have never seen or heard of them since and that a food memory for me. Schools had to be quiet thrifty, they had to be sensible with the ingredients your using so that did tend to lend it self to classic recipes like cottage pie and bolognaise, stuff that was economical and would go a long way and I love that sort of food.

What would you say your favourite food to eat is? I am a fan of all different types of foods, I absolutely love food from India and the Far East and I think that comes from growing up eating quite spicy foods. I think it has always been in my system to love that sort of flavour pairings and the balance of flavours the hot, sweet, salty and the sour you have an incredible balance, that’s my one go to thing if I am craving something extra special.

What would you say your signature dish is? It does change but at the moment is a bit of a West Country inspired one, I do a beautiful belly of pork which is slow braised in cider and stock and some great vegetables, cook that for around 5-6 hours and then press it overnight, you rend all the fat out of it that way and the following day cook that up again to get it crispy, it is so tender and beautiful inside with no fat in it and the sauce you have cooked the pork in, you reduce that down, that is literally the most amazing sauce ever. It has that pork flavour running through and also that sweetness and acidity from the cider as well. That is an absolute winner. Belly of pork is so cheap too. It is all 6

about finding the forgotten cuts of meat, scrag end of Lamb is one that my Nan used to use all of the time and it is great value for money.

Who would you say you looked up to in the cookery world? Probably Jamie Oliver, he made food accessible to a lot of people. He brought food to the masses and if it was not for him I definitely would not be doing what I am doing now.

Away from the cooking and TV work what do you do to relax? I do a lot of boxing, I am one of the lightest guys in the club so don’t pack too much of a punch. I started it for fitness really, again I had a bit of a eureka moment in my life where I wanted to give myself the best chance to be fit and healthy and I had always played sports like football and rugby but it always took up too much of my time and a chance trip to a local gym and I just caught the bug, it is the best fitness I have done in my life and going and knocking lumps out of a punch bag is good for working out all the problems of the day.

Have you every cooked for anyone famous? Yes through my work with Lorraine I have cooked for a few but the one that sticks in my mind was David Jason. That was fantastic because I grew up watching Only Fools and Horses and of course they used to film some of it in Bristol.

Summer Recipes from Dean Edwards Fruity Cinnamon Granola 
 200g whole rolled oats 150g mixed nuts, seed and berries (I have used pumpkin seeds, sunflower seeds, pine nuts, dried cranberries and goji berries) 50g almonds, crushed 2 tbsp chia seeds 40g dried apricots, finely chopped 2 tbsp Groovy Food Virgin Coconut Oil 1 tsp ground cinnamon 40g Groovy Food Agave Nectar Light and Mild Method: 1. In a small pan gently warm the coconut oil until melted. Meanwhile combine the dry ingredients in a bowl then add the agave nectar and oil then stir until fully combined.

2. Spread onto a greased baking tray and bake in a pre-heated oven set at 180°C/gas mark 4 for 10-15 minutes.

3. Remove from the oven and leave to cool before crumbling into an airtight container.

4. Serve with some fresh berries, Greek yoghurt and another drizzle of agave if you like.

Aromatic Pork and Peanut Thai Curry (serves 4) 1 pork tenderloin sliced thinly approx. 400g 1 tbsp Groovy Food Virgin Coconut Oil 1 onion, diced 4 cloves garlic, crushed 1 red chilli, diced Thumb sized piece ginger, peeled and grated 1 stick lemongrass bruised 2 tbsp red Thai curry paste 2 tbsp unsweetened peanut butter 400ml chicken stock 400g tin coconut milk 1 tbsp soy sauce 2 tbsp Groovy Food Agave Nectar Light and Mild 150g fine green beans Juice of 1-2 limes Small bunch fresh coriander

Method: 1. Pop a tablespoon of coconut oil into a pan then fry the onion, garlic, lemongrass and ginger until softened around 5 minutes then add the curry paste and peanut butter then continue to cook for a couple of minutes.

2. Pour in the coconut milk, stock and soy sauce and bring up to a gentle simmer.

3. Add the pork into the pan and cook for 10 minutes, add the beans and continue to cook for a further 5 minutes.

4. Balance the flavours in the dish by adding a good squeeze of lime juice and agave to taste.

5. Stir through some fresh coriander before serving with a side of rice.

Tandoori Roast Chicken with Coconut Sambal (serves 4) 1 free range chicken 1.5 - 2 kg Tandoori Marinade: 1 tbsp garam masala 1 tsp ground coriander 1 tsp chilli powder 1 tsp paprika ½ tsp turmeric ½ tsp ground cinnamon 3 cloves garlic crushed Small piece fresh ginger, grated 100ml natural yoghurt Juice ½ lemon 1 tbsp Groovy Food High Five Oil 700kg maris piper potatoes peeled 2 tbsp Groovy Food Virgin Coconut Oil Coconut sambal: 100g Fresh coconut, grated 1 green chilli, deseeded ½ clove garlic 1 tsp Groovy Food Agave Nectar Light and Mild 1 tsp Groovy Food High Five Oil Small handful fresh coriander Juice 1 lime Method: 1. Mix the dry tandoori spices in a large bowl along then remove a teaspoon full and set this aside for the roast potatoes.

2. Combine the rest of the spices with the natural yoghurt, ginger, oil, lemon juice and garlic then set aside.

3. Place the chicken on a baking tray, slash the thighs with a sharp knife then rub with the tandoori paste. Cover and refrigerate for at least two hours but 9

overnight if you can.

4. Par boil the potatoes, which have been cut into chunks for 4-5 minutes, drain and leave for 5 minutes, give a quick toss to knock off the edges and set aside.

5. Before cooking, stuff some coriander and the lemon halves inside of the chicken cavity.

6. Roast in a pre heated oven set at 190°C/gas mark 5 for 45 minutes per kilo plus 20 minutes.

7. Baste occasionally until the chicken is completely cooked and the juices run clear when a skewer is inserted into the thickest part.

8. One hour before the end of the cooking time add the coconut oil into the baking tray, add in the par boiled potatoes making sure they get a good coating of oil then season with salt and pepper and the reserved spices. Roast for around 1 hour, turning a couple of times until crispy and golden.

9. To make the sambal, place all of the ingredients into a mini blender along with some water and blitz until a paste but still retaining some texture.

10. Season with salt and leave to stand for at least 10 minutes before serving.

Lemon Chicken with Omega Cool Pesto (serves 4) Lemon chicken: 4 free-range chicken breasts Juice and zest of 1 lemon 2 tbsp Groovy Food Omega Cool Oil 1 tbsp Groovy Food Agave Nectar Light and Mild Sauce: 200g baby plum tomatoes halved 2 cloves garlic crushed 1 tsp Groovy Food Agave Nectar Light and Mild 1 tbsp Groovy Food Omega Cool Oil 240g dried linguine Omega Pesto: Large bunch of fresh basil ½ clove garlic 50g almonds 30g Parmesan Lemon juice to taste 60ml Groovy Food Omega Cool Oil Fresh basil for serving Method: 1. Place the halved tomatoes onto a baking tray then scatter over the garlic then drizzle with the oil and agave, season with salt and pepper then roast in a pre heated oven set at 150°C/gas mark 2 for around 30 minutes. Remove and set aside.

2. Marinade the chicken breasts in the lemon juice; zest and oil then leave for a

couple of hours for the flavours to develop.

3. Season and seal skin side down in a hot pan for around 3 minutes until golden turn over then glaze with the agave, transfer to an oven set at 200°C/gas mark 6 for 12-14 minutes or until cooked through.

4. Place the basil into a mini blender along with the almonds, garlic and lemon juice and oil then blend until you have a loose consistency, add the parmesan cheese and season to taste with salt and pepper.

5. Cook the pasta according to the packets instructions, drain then stir through the pesto and serve with the sliced chicken, tomatoes. Finish with another grating of Parmesan cheese and some fresh basil.

Hot and Sweet Mango prawn salad (serves 4) 400g large raw tiger prawns 1 tbsp Groovy Food Virgin Coconut Oil 100g dried vermicelli rice noodles 1 red pepper, deseeded and sliced 1 green pepper, deseeded and sliced 1 red onion, sliced thinly 1 large carrot, julienned 100g sugar snap peas, sliced lengthways 1 slightly under ripe mango, peeled and julienned 1 red chilli, deseeded and sliced Fresh coriander to garnish Dressing: 1 tbsp Groovy Food Agave Nectar Rich and Dark 1 tbsp soy sauce 2 tbsp Groovy Food High Five Oil ½ clove garlic crushed Juice 1 lime Method: 1. Cook the noodles by placing into a bowl and pouring over boiling water, leave to stand for 5 minutes then drain and leave to cool. Meanwhile prepare the vegetables and set aside in a large bowl.

2. Pre-heat a frying pan then add in the coconut oil, fry the prawns for 2-3 minutes per side, until pink and cooked through.

3. Meanwhile whisk together the dressing for the salad. Finally dress the noodles, peppers, carrot, red onion, beansprouts, sugar snaps, mango and chilli serve up topped with the hot prawns then garnish with the coriander.

Moroccan Roasted Sweet Potato and Carrot salad (serves 4) 2 sweet potatoes, peeled and cubed into 1” pieces 400g baby carrots 1 heaped tsp harissa paste ½ tsp ground cumin 1 tbsp Groovy Food Omega Cool Oil 4 large handfuls of baby spinach 1 red onion, sliced Arils from ½ pomegranate 100g feta cheese, crumbled Small bunch fresh coriander Dressing: 2 tbs Groovy Food Omega Cool Oil Juice ½ lemon 1 tsp Groovy Food Agave Nectar Rich and Dark Method: 1. Place the cubed sweet potato and carrots in a bowl then drizzle on the omega oil and spoon in the harissa paste and cumin. Stir well to cover then bake in an oven set at 190°C/gas mark 5 for 45-50 minutes.

2. In a small bowl, whisk together the salad dressing then season with a pinch of salt and pepper.

3. Dress the spinach and onion with the dressing then portion onto plates, top with the sweet potato and carrots then scatter over the pomegranate seeds and feta cheese. Finally, scatter over some fresh coriander.

Light Blueberry cheesecake (serves 4) Base: 60g nuts (almonds, hazelnuts) 20g Groovy Food Virgin Coconut Oil, melted 1 tbsp Groovy Food Agave Nectar Light and Mild Filling: 150g light cream cheese 100g Greek yoghurt 30g Groovy Food Agave Nectar Light and Mild 100g fresh blueberries Blueberry sauce: 100g blueberries 1 tsp Groovy Food Agave Nectar Light and Mild 20ml water Small squeeze lemon juice 12

Method: 1. Using a food processor break down the nuts to fine crumb, place into a bowl and mix in the melted coconut oil and agave until fully incorporated. Place the mixture into ramekins or jars, press down to compact then place in the fridge to chill for 20 minutes to set.

2. In a large bowl place the light cream cheese, yoghurt, agave then mix using a hand whisk until smooth, and then gently fold through the blueberries. Spoon this mixture into ramekins or jars. Chill in the fridge for 2 hours.

3. Place the blueberries, agave and water into a small pan then warm over a gentle heat for around 10 minutes until the blueberries begin to burst and release their juice. Add a small squeeze of lemon juice to balance the flavours.

4. Before serving pour on some of the blueberry sauce and enjoy.

Citrus Omega Cool Oil cake (serves 8-10) 1 orange 30ml Groovy Food Omega Cool Oil 110g unsalted butter, softened 100g Groovy Food Agave Nectar Light and Mild 2 free range organic eggs, beaten 140g self-raising flour 30g ground almonds Drizzle: Juice 1 lemon 2 tbsp Groovy Food Agave Nectar Light and Mild

Method: 1. Take the top and bottom from the orange then cut into smaller pieces, blitz up in a mini blender until you still have a little texture then add in the oil and blend until you have a puree then set aside.

2. Cream butter until light and fluffy then add the agave and eggs then fold in sifted flour and almonds, mix until fully combined, then fold through the puree.

3. Pour into a greased 2lb baking tin and bake in a pre-heated oven set at 180°C/gas mark 4 for 40–45 minutes.

4. Meanwhile mix lemon juice and agave and pour over cake as soon as it comes out of the oven. Leave to cool before slicing and serve with a spoonful of ice cream.

Workplace Pranks: Harmless Fun? Part 2 Humour is subjective. What one person finds funny… another simply doesn’t.

This is especially true when the other person is on the receiving end of a prank. When this happens within the workplace, it can have serious ramifications.

Last month we highlighted the first five cases reported by Personnel Today. Read on to find out about four more: Sabotage of heterosexual employee’s Facebook page to suggest he is gay was sexual orientation harassment 6. Otomewo v Carphone Warehouse Ltd (employment tribunal) This case is a good example of how a practical joke in the workplace can have a sinister discriminatory undertone. It is also a reminder that it is possible for a heterosexual employee to be subjected to sexual orientation discrimination, even if the harasser knows that the employee is not gay.

Two members of staff took a heterosexual manager’s phone without his permission and updated his Facebook status to saying: “Finally came out the closet. I am gay and proud.” His colleagues knew that he is not gay.

The employment tribunal upheld the manager’s sexual orientation discrimination claim, concluding that the employer could be liable for the entries made on the phone. The entries had been made by its employees in the course of their employment. The employees’ actions took place at work and during working hours, and involved dealings between staff and their manager.

Suggestion that toy helicopter be landed on employee’s turban was harassment 7. Bal v Secretary of State for Work and Pensions (Jobcentre Plus) (employment tribunal) It is possible for an employee’s threat of a prank, without the joke actually being carried out, to be sufficient to create problems for the employer.

The claimant in this case is Sikh, and wears a turban. A radio-controlled toy helicopter was being flown around the office and being landed on various flat surfaces. Someone suggested that the toy helicopter be landed on the claimant’s turban.

The claimant brought a claim for religion or belief discrimination for various alleged incidents, including the toy helicopter incident. The employment tribunal upheld the claim, considering that an individual’s wearing of a turban is inherently connected with religion and, regardless of the intentions of the alleged harasser, the actions were discriminatory.

“Full-blown moony” constituted sexual harassment 8. AM v GF and another (employment tribunal) As with so many discrimination cases, this decision involves a “joke” that went badly wrong.

In a workplace in which “banter” and joking were commonplace, a female employee complained of an incident in which a male colleague “dropped his trousers, bent over with his hands on his knees, and was shaking his bottom”.

The employment tribunal held that, although there was evidence of a history of joking and that mooning was a “way of life” in this workplace and was used as a morale booster, the claimant’s colleague’s actions were unwanted and of a sexual nature. The tribunal upheld her sexual harassment claim.

Age-related practical jokes among evidence of age bias against older worker 9. Nolan v CD Bramall Dealership Ltd t/a Evans Halshaw Motorhouse Worksop (employment tribunal) Sometimes, a series of practical jokes that would not by themselves be viewed as serious can be used as evidence that there is something more serious behind employees’ attitudes to a colleague.

In this case, the employment tribunal held that the employer discriminated against the claimant on the ground of age by making him redundant because he was close to retirement.

The tribunal drew an inference of age bias against the claimant from this workplace’s frequent age-related practical jokes, such as changing the number plate on his car from “OAB” to “OAP”.

“When dealing with misconduct issues in the workplace, employers must ensure that the Acas Code of Practice is followed correctly,” explains Matthew from Consensus HR. “A clear, written invitation to an investigation concerning the allegations and any further investigations must be provided, with employees mentioned as being able to help in the overall investigation.”

“Only when this has been completed correctly, should the investigating manager decide whether to carry out a disciplinary or take no further action. The employee concerned must be kept fully updated. Adequate time should also be given to allow the employee the opportunity to gather their facts and information needed at the meeting so that a fair and reasonable decision can be made” If you want to progress to a disciplinary, professional HR advice is suggested.

YOUR LOCAL SOLICITORS WHAT IS FAMILY MEDIATION? There is now a requirement that you must attend a MIAMS before starting most court proceedings regarding children or finances. So what is a MIAMS? Mediation Information and Assessment Meeting (MIAMS) You meet with a specially qualified Family Mediator who explains all the alternative routes available to you to try and resolve the dispute without starting court proceedings.

The aim is to ensure you are informed about all the options and understand what route would work best for your situation.

This initial meeting is usually between just you and the Mediator, and usually lasts around 45 minutes.

If you and the Mediator feel mediation could work for your situation, the Mediator will then contact the other party involved (ie your ex-partner) and invite them to a MIAMS. How does Mediation Work?

If you both agree to try out Mediation, the Mediator will set up meetings for you and the other party to attend. You will get the chance to raise the issues you have, but will also be expected to listen to each others views (even if you do not necessarily agree with them). If discussing finances, the Mediator will help you agree on what information and documentation you each need to provide to assist with the negotiations.

If terms can be agreed between you, the Mediator will provide a written Memorandum of Understanding. This is not yet legally binding on you – but is evidence of what you have discussed and agreed, and you can then take it to family solicitors to be made legally binding if you wish.

Mediation is entirely voluntary so at any stage, you or your ex-partner, or even the Mediator, may decide that Mediation is not suitable. In this situation, the Mediator signs a court form to confirm that Mediation was not successful, and you can then start court proceedings Who is the Family Mediator ?

Some solicitors train and qualify as Family Mediators. However, often they are people from a non-legal background. They all have to attain specialist qualifications. They remain independent in the process and therefore cannot provide either of you with legal advice.

You should therefore have your own Family Solicitor to advise you.

Caring Advice I first met Anne three years ago. She was a very fit 70-year-old woman who lived alone and told me that she was totally exhausted. For 7 years she had been looking after her Daughter, Gemma, and 17-year-old Granddaughter, Lucy, following Gemma’s diagnosis with aggressive breast cancer. Sadly, her son-in-law found the whole process of the diagnosis and treatment too much to bear, and following a very severe depression had left the family. This meant that much of the burden of care and finance had fallen on Anne.

Increasingly Lucy, as she got older, was helping with her Mother’s care and was classified as a young carer.

With Gemma terminally ill, Anne struggled with her emotions as she faced losing her muchloved daughter, supporting Lucy and the sheer physical aspects of Gemma’s illness and care. She told me that the nights were the worst as it was the only time she could think and that sometimes these thoughts were very bleak. In particular she worried about the future and her physical and mental ability to care for her Lucy as she got older. Anne said that Lucy was wonderful in helping care for Gemma, but she was concerned about the impact that this role would have on her in the future.

Anne and young Lucy are part of the army of carers in the UK. It is estimated that 10% of the population are carers, though typically it takes two years for people to recognize that they are in the role of being a carer. Carers come from all walks of life, cultures and can be any age, they provide unpaid support to family members, neighbours or friends who otherwise would not be able to manage alone. Their unselfish actions save the country a massive amount of money so it is only right that in carers week we celebrate their selfless actions and offer some helpful tips on how to cope.

Most counties offer local countywide carers support information websites, which have useful information and guidance on benefits, respite care and support groups. As well as social events targeted specifically for those who are caring and who are young carers. There is also psychological support available, so contact them and get some much-needed help.

Tell your GP. Very often GP’s do not know a person is a carer. Telling them will enable them to also offer support and practical help.

Do not rebuff offers of help. Many people like to help and support carers in their role, so if someone offers to sit while you go out for a few well-earned hours, take them up on it.

Think about what you need in life, failing to take care of your needs can lead to resentment, so if a daily walk or swim makes you a happier better carer investigate how you can accomplish this.

Keep healthy yourself! Watch your diet and lifestyle it is easy to seek comfort through food or drink, have treats but do not become reliant on them.

Look after your psychological health. If you need some counselling then seek it out.

There are many low cost services, some of which will provide home visits or online help.

Reach out to others in a similar position. They will have tips and be able to offer support also. Joining a forum can be really helpful and can be done from home.

Anne and Lucy received much needed support and respite from their local carers group and also Macmillan Nurses, which enabled them to care for Gemma until her death. Both were provided with ongoing psychological support and are coping well a year on. Lucy has just started her second year studying Medicine at University and wants to be an Oncologist. It would seem her role as a carer did have a lasting effect, but a positive one!

Artist Profile - Mike Stock: Mixed-Media Artist Mike grew up in Essex and returned to painting when he retired from teaching. Now based in Hertfordshire the majority of his work has been in acrylics or other forms of mixed media.

Mike Stock’s vibrant, contemporary style reflects various influences, especially his passion for the great outdoors. Many of his large mixed-media canvases incorporate water, landscapes, mountains and sunsets.

He continues to experiment and develop fresh ideas using colour to present striking and dynamic interpretations of nature in coastal and rural settings. His work has been selected and published in Cancer Research Charity calendars.

Mike has completed large-scale corporate commissions, including several major pieces for Stirling Court, St John's Street, London EC1. He frequently exhibits at various venues in and around Hertfordshire, Bedfordshire and Essex and his ever expanding portfolio continues to be regularly represented at local Art Shows, Art Exhibitions and Art Festivals.

Healthy Pets The UK press recently reported that over 10,000 dogs each year are poisoned at home after eating food or household items that can be seemingly harmless. The kennel club is urging owners to be alert. Most dog owners are aware of the dangers of chocolate and dried fruit for dogs but apparently painkillers are the most common cause followed by rat and mouse bait. The popularity of E cigarettes hasn’t helped, dogs are very curious but the concentrated nicotine can damage the heart, chewing gum containing Xylitol can be fatal for dogs and laundry detergent can harm the lungs.

Vince the Vet is an expert holistic Vet also alerting pet owners to the hidden danger of chemicals in the home. He says “There are three very important, yet often underestimated ways to significantly improve the quality of many pets lives, while at the same time minimising the risk of certain health problems appearing in the future”. They are: 1. To provide a really good, healthy, nutritionally balanced diet made from the finest quality, fresh, raw, wholesome, natural ingredients 2. To use Nutritional Therapy to stimulate, support and promote health in specific parts of a pet’s body, such as the joints, bones, skin, brain, digestive system and immune system for example.

3. To eliminate regular exposure to all potentially harmful chemicals.

Vince says that in addition to the chemicals, there are hidden dangers of chemicals in pet food and other sources such a synthetic vitamins and amino acids, additives, artificial colourings, flavourings and gelling agents, there is even a risk that food can be contaminated with toxic industrial chemicals.

Where possible, use natural, hypoallergenic alternatives instead. I’d say that goes for humans too – let’s choose the natural options and we will all be healthier!

It’s also important to remember that in addition to steering away from the hidden dangers, there are vital changes that we can make to our pets' lifestyle to ensure good health. SsangYong Tivoli - on sale now for £12,950 Would-be owners are able to put the Nissan Juke-rivalling SsangYong Tivoli onto their forecourt from as little as £3,000 deposit and £159 per month thereafter using a Personal Contract Purchase (PCP) scheme. The company says this represents “superb value for money”. Andrew Merritt-Morling, managing editor of our motoring media partner, first4auto, gives it the once-over on our behalf.

The SsangYong measures 4,195mm in length, 1,795mm in width and 1,590mm in height. This makes it marginally larger than the Nissan and also the Citroën C4 Cactus, but slightly smaller than the Vauxhall Mokka.

Thanks to a 2,600mm wheelbase, the Tivoli boasts of a boot capacity that is 423litres, beaten only by the Mokka but much more than the Citroën and Nissan, with 358 and 354-litres respectively. However, the Tivoli beats all on price – starting from just £12,950.

Paul Williams, CEO of SsangYong Motor UK, told first4auto: “In the highly competitive compact SUV sector, Tivoli is a car that’s really going to cause a stir.

With its contemporary design and well-styled and finished interior, this is a modern, safe, well-built and comprehensively equipped car, and at a price and warranty level no other brand can match.”

Power is provided by a 124bhp 1.6-litre four-cylinder Euro6-compliant petrol engine that is capable of producing peak pulling power of 115lb ft at 4,600rpm. Peak power is delivered at 6,000rpm. With the six-speed manual gearbox, it can complete the 0-62mph sprint in 12.0-seconds before going on to a top speed of 106mph. The automatic manages the same feat in 11.0-seconds and 99mph. The

manual is capable of returning 44.1mpg whilst emitting 149g/km of CO2, whilst the six-speed automatic (available on mid- and top trim levels) compromises efficiency with 39.2mpg and 167g/km of CO2.

A 1.6-litre diesel engine will become available in August, but running costs remain unconfirmed. What we do know is that the CO2 is around 113g/km – suggesting a fuel consumption figure in the mid-50’s.

The entry-level SE model sits on 16-inch alloy wheels and also features a six-speaker stereo with MP3, Bluetooth and USB connectivity, steering wheel mounted audio controls, cruise control, engine stop/start, grey cloth trim, manual air conditioning, seven airbags and three steering models (normal, comfort and sport).

Mid-level EX models (costing from £14,600) add larger 18-inch Spiral alloy wheels, dual zone climate control, a seven-inch touchscreen smart audio system with rearview camera, heated front seats, front fog lights and a choice of grey or beige leather upholstery.

The range-topping ELX (from £16,000) features a Diamond-cut alloy wheels, a smart instrument cluster, keyless start, parking sensors at both ends, privacy glass, a rear spoiler, automatic lights and wipers, a TomTom navigation system with seven-inch touchscreen and a rear view camera.

As is common with the sector, the SsangYong Tivoli is highly customisable with the My Tivoli programme. A £400 styling pack is available on ELX models offering the option of five two-tone colour roof combinations.

Despite undercutting its main rivals in terms of the on-the-road price, the nature of the badge snobbery prevalent in the UK car market means that the unfamiliar badge has resulted in poor residual values. For company buyers this has pushed up the leasing rates beyond the competition. However, SsangYong believe the Tivoli will really put SsangYong on the map and change brand perceptions.

Hero Cheese of the Month: Monte Enebro Made in Avila, Spain, by legendary cheesemaker Rafael Baez and his daughter Paloma, Monte Enebro is a goat's milk cheese made in a large 2lb. log shape from pasteurized milk. Monte Enebro was the first of a wave of new cheeses to be produced in Spain and it has gained a considerable international reputation.

The Baezes produce Monte Enebro using penicilium roqueforti, the same mould used to make Roquefort. However, rather than piercing the cheese, which would allow blue veins to develop throughout, the blue mould develops on the rind of the cheese, adding to Monte Enebro's complex flavours and distinctive appearance.

When young, the interior paste of the cheese is pure white and slightly chalky and brittle in texture. With age, the paste tends to break down and become runny and almost translucent just under the rind.

Flavours in the younger cheeses are mild, bright and tangy, with distinct citrus notes combined with a cellar-like aroma and flavour imparted by the blue rind. As the cheeses mature, the aromas become more pungent and the flavours evolve and strengthen, becoming quite assertive, tasting of barnyard and goat.

Monte Enebro pairs well with Sauternes or a Spanish dessert wine.
