Exclusive interview with Gold medallist Etienne Stott

Bedford’s Etienne Stott MBE is an slalom canoeist. At the 2012 Summer Olympics, Stott and partner Timothy Baillie qualified through the heats for the C-2 event on 30 July, and subsequently progressed to the semi-final. The semi-final consisted of one run each, with the six best competitors qualifying for the final. Stott and Baillie finished in sixth place, taking the final spot and consequently qualifying for the final. As a result of their sixth place finish, the slowest qualifying time out of the six remaining competitors, Stott and Baillie ran first in the final, securing a time of 106.41 seconds. The time was not beaten, with Stott and Baillie winning the gold medal in front of a 12,000 strong home crowd at the Lee Valley White Water Centre on 2 August. Stott and Baillie's success was described as "unexpected" and a "surprise",with the pair describing winning gold as "mad". The Sticks recently spoke to Etienne about London 2012 and what’s happened since How did you get the name Etienne? It is because my mum is French/Canadian and she met my Dad in Manchester and that how ended up with a french name. It is a version of Steven. How did you start in the sport of conoeing? I started in the scouts on camps and evenings during the summer but when I was 12 years old I joined my local kayaking club, Viking club in Bedford, that’s when I got seriously into it and beacame a budding young athelete. I now have the “Etienne Stott White Water Arena” which is where I use to train, named after me which I am very proud of and is a great honour to have something that directly effects our sport in the town. Tim Foster and Paula Radcliffe also both come from Bedford. You used to do K1 but you switched to C2, what’s the difference ? K stand for kayak, where you sit in the boat with your legs stretched out in front of you and use a double bladed paddle - strangely in this country when you talk about canoeing they have a picture of a kayaker in their mind, then in 2004 I switched to C2 which is a 2 man canoe and in a canoe you kneel and use a single bladed paddle. A kayak comes from the Eskimos and a canoe from the Red Indians. Canoeing must hurt your knees a bit ? My partner Tim suffers a bit and I am not saying it is comfortable for hours on end but we customise the interior with blocks of foam and make it a snug fit so really the boat is an extention of your body.

-4-

Have you had any nasty injuries? I am famous in the world of canoe slalom for having injuries, all sorts of little things you can get. One of the worst I got was about 18 months before the games, in training we crashed into a obstacle on the Lee Valley course and the force dislocated my shoulder. How long have Tim and you known each other ? We teamed as a crew in 2004 so this coming up now is our 9th season together, so before the Olympics it was 8 years of training but we knew each other since we were 15-16, we raced each other as juniors. For me it is important to keep a perspective on what I do. We have a mantra that we work every opportunity we get as they don’t come along to often What were your expectations going in to London 2012? We thought it was going to be a massive adventure and we thought at length about the best way to approach it to give us the least amount of pressure and the most potental to score a result worthy of our abilities. The Olympics in the home country, no-one knew what it was going to be like, the reaction of the crowd, how would the British public respond, would people get on board? For our part we know we put everything we can in to our training and just concentrate on the whitewater and the poles that we do hours a day, day in day out so it was something we know how to do. We just wanted to do the best we could with the time and resources we had, and just race flat out without fear. We knew if it went well we could get a medal and it turned out really well. Was it nailbiting watching all the others come down after you had gone first with your run? No, I think the spectators felt it more than us. We were proud with what we had done, it was one of the fastest and most aggressive runs we have ever done, we were very satified with our work but as it unfolded it got more and more exciting as the competion happened. What was the feeling like on the top of the podium? It is hard for me to remember it all from the time it was announced we were Olympic champions and that our lives had changed at that moment. I remember little snapshots of it but the best record for me was watching it later on TV. It was such a blurr so much emotion,so much excitement. One thing I do remember was the warmth of the sun on the side of my face. What was the hightlight for you of London 2012? It has to be the parade through London on the floats, to see so many people and the scenes like that, there were people almost as far as the eye could see. It was mind boggling, some places 100 deep, a unique experience. What are you future plans? We have not decided about Rio yet we are both 33 years old and it is a big commitment so we will have to see if we are still hungry for it. We are racing this season 2013 then we will have to see. Anne Ried – Life In A New Key

Anne Reid, is a BAFTA Award-wining English stage, film and television actress from Newcastle upon Tyne, best known for her roles as Valerie Barlow in Coronation Street and Jean in Dinnerladies and most recently appeared as Celia alongside Derek Jacobi as Alan in a six-part BBC romantic comedy-drama series, Last Tango in Halifax The Sticks had a chat with her just before she started filming the second series of Last Tango in Halifax You are coming to the Stables to do a show called “In a New Key” which is so different to what you have done before. Yes it is exciting, I am really excited about it, it’s my new adventure in life, I decided that when the phone stops ringing and people don’t want me anymore I want to have something to do and I have always wanted to do cabaret. So that’s what I have started to do, I did it first in the south of France. I have with me a Sony Award winning pianist called Stuart Hutchinson who sings as well, he has a really nice singing voice. We have been friends for about 30 years and all that time I have been on about doing the cabaret and about 3 years ago he said to me “Are you ever going to do that show?” so I thought I had better do it now. In the show I sing some of my favourite songs also I tell stories about the disastrous things that have happened in my career and the people I have worked with and try and make people laugh. How did you first get in to acting? It was a bit of a fluke really, I just found out I could act at school (I was at a girls boarding school in Redcar) and then took an audition for RADA and got in and did it that way, then just got jobs in rep. I could not do anything else as I was no good at maths or anything like that and my grandma was a bit of an entertainer. Can you remember what your first professional role was? It was dancing in a pantomime chorus that was the first time I was on the stage when I was paid, and then I was in Bromley rep in the “7 Year Itch” where I played one of the dream girls.

Looking at your CV you have worked with loads of amazing people. I have been lucky and just drifted where the work has taken me. A long time ago I worked with Benny Hill which was my first TV. He was mad, he used to tease me so much because he knew I was so innocent. I also worked with Tony Hancock, I had tiny parts in 5 of his shows also with Patricia Routledge in “Hetty Wainthrop Investigates” - she is a wonderful actress. I have been lucky enough to have worked with so many interesting people, Ian Carmichael, Tony Britten and in the film “Hot Fuzz” we had Timothy Dalton, Edward Woodward and Simon Pegg who was just heaven to work with. You have been in Doctor Who as well. Yes, twice, in 1989 in The Curse of Fenric with Sylvester McCoy when I played Nurse Crane and again in 2007 in “Smith and Jones". In that episode I played Florence Finnegan, a blood-sucking alien known as a Plasmavore, but who took on the guise of a normal human with David Tennant as the Doctor. You have been in so many shows can you tell us about a few? I was in Peak Practice for a year, and then in Midsummer Murders, I have been in Miss Marple and I am in the very last Poirot which has not gone out yet. That was bizarre because that was one of my all time favourite programmes and actually being in something you have admired for so long you feel weird. Most people remember you from the Dinnerladies where you played Jean. Yes that was a hoot, it was a fun 2 years with Victoria Wood and Thelma Barlow. Thelma is a friend and this year we are spending 2 days going round antique shops for Children in Need. Things went wrong often during Dinnerladies but comedy is much harder than drama, people believe all you do is lay around in the rehearsal room, it is not like that at all, it is much harder to get laughs than it is to make people cry, it never gets the recognition it deserves. I guess it is because Victoria makes it look easy. In 2003 you made a Film called “The Mother” with Daniel Craig. I don’t know what happened to him he seems to have slipped off the radar, don’t think he has done much since then! It was quite a controversial film in which he played my daughter’s boyfriend and I seduce him and get him in to bed.

You had great success late last year with “Last Tango in Halifax” and recently it won a Bafta. We start recording series 2 early June. It is a superb series, what my mother would had called a good yarn, but a lot of the credit goes to Sally Wainwright and her fabulous scripts mixing comedy and tragedy.

Your Local Solicitors Who Owns Your House Part 2

Are You A Common Law Spouse?

Many unmarried couples are under a dangerous misapprehension about how English law protects cohabitees. They believe that after a certain number of years of cohabiting they are “common law husband and wife” and therefore on separation they would be entitled to a shared in the property they live in – even if it is not held in their name. Whilst there have been consultations to decide if the law should protect unmarried partners in some form, no decision has been made to date. We are therefore left with a very unsatisfactory situation. If you live in a home which is registered at HM Land Registry in your partner’s sole name it could be very difficult for you to prove you have any right to remain living in that property if the relationship ended and/or that you have any financial interest in that property. If you split from your partner, you would not be entitled to any ongoing financial support (e.g. maintenance payments) from them, even if they have supported you financially for years during your relationship. If you have children together, there would be financial claims you could make on behalf of the children to ensure they have a secure home and your partner pays child maintenance. However, this may be temporary housing so that once the children become independent you use the use of it. Of course one option is to persuade your partner to marry you, but there is an alternative. You could agree terms for a simple Deed of Trust or Cohabitation Agreement - which could set out now what would happen if you ever separated and clarify what would happen to the “home” you share. Such documents can save a lot of money and heartache at a later date if unfortunately the relationship comes to an end. If you would like any more information on this, or any other, area of law please contact me: pany.vassiliou@curwens.co.uk. Curwens have offices in Royston, Hoddesdon and Enfield.

My Journey from Civil Servant to Founding Manager of Tropic Pure Plant Beauty By Caron Brooks

My name is Caron and I work as an Ambassador for Tropic Pure Plant Beauty which is Lord Sugar’s and 2011 Apprentice finalist Susan Ma’s beauty business. This hasn’t always been my job. In 2009 I was diagnosed with breast cancer – at the time working as a Civil Servant in Cambridge. It came as quite a blow – I had always been very healthy, exercised regularly and had a healthy diet. I had surgery, chemotherapy and radiotherapy. And this gave me plenty of ‘thinking’ time. After over 23 years in the Civil Service I decided enough was enough and applied for Early Voluntary Retirement. I was lucky enough to get it but knew I didn’t want to just be ‘retired’. I’d always had a passion for skin care and cosmetics. So, I pursued a career in the skin care business through direct selling which led me to Tropic. I loved the products, and Susan’s passion. So much so that when Susan decided, in January this year, to take Tropic down the direct selling route I knew I wanted to be part of it. In the four months leading up to its national launch on 4th May in Hatfield, I have built a Team of over 15 Ambassadors. I received recognition for my achievement as a Founding Manager on stage with Lord Sugar and Susan at the launch event. I was also invited to deliver a speech, to them and 400 of my peers. A very proud day in my life - I feel I’ve come a long way since October 2009! Because of my experience going through cancer treatment I also volunteer at a local Hospice. Here I can give a little bit back, using the products to make some of the ladies feel a little bit better about themselves when they are at a low point in their lives. They love their hand massage treatments and facials. And I’ve just started using our make-up range there which is going down fantastically. All the products are chemical, perfume and alcohol free so I know they are safe to use. I’m always looking for new people try the products or to join my Team and would love to hear from anyone interested in learning more about Tropic. 07941 872955 caron.brooks@btinternet.com www.facebook.com/caronTropic @caronSKINCARE

Seared breast of Gressingham duck, butternut squash purée, shallots, charred spring onions, red wine jus

In recent years, duck has become more and more popular as a healthier and leaner alternative to some of the more staple sources of meat. Gressingham Duck® is widely considered to be one of the premier breeds of duck in the UK, renowned for its superior taste and higher percentage of breast meat. The Gressingham duck is actually a cross breed of wild mallard and the Pekin duck and is now bred by 70 or more farms across Norfolk and Suffolk, providing over 5 million birds a year to the major supermarkets, restaurants and independent retailers. Not surprisingly, duck breast is also very popular here at Kippings regardless of how we serve it. This current recipe in particular is proving an overwhelming customer favourite at the moment and until the weather improves will no doubt continue to do so!!

Cooking the perfect duck breast is very simple …….

-12-

1) Preheat your oven to 220ºC, Fan 200ºC, Gas Mark 7

2) Score the skin and season all over with salt and pepper.

3) Cook skin-side down in a non-stick pan, on medium heat, without oil, for 6 to 8 minutes or until golden brown. Seal the other side for 30 seconds.

4) Place skin-side down on a roasting tray in the middle of the oven and cook for 10 to 20 minutes, depending on how well done you like it. – at Kippings we always recommend it pink

We wanted to keep the dish as light as possible (easy on the carbohydrates) but we were also keen to try some new flavours and textures that we hadn’t used before with duck. As the meat itself has a fairly subtle flavour, we decided not to use any ingredients that would introduce any overpowering flavours and take the attention from what is a high quality and relatively expensive ingredient. Duck is very well known for the countless recipes where it is matched with sweet flavours (such as the classic duck a la orange) and although we wanted to keep a certain element of sweetness to the dish, we wanted to make sure we didn’t overdo it. Instead of fruit, we introduced puree of butternut squash with its natural sweetness and to complement, we also added shallots braised in red wine and maple syrup along with garlic, thyme and star anise. The addition of charred spring onions which bring a charred/barbecued flavour to the dish helps to counteract the sweetness. The dish is finished with a classic red wine sauce.

by Donna Obstfeld I’ve been busy interviewing this week and although some of the candidates were local, some of them have and would continue to have significant daily commutes. This got me thinking, why are employees willing to travel so far to work? Are people commuting further because there are less jobs available, or are people choosing to live further out of London? If they are choosing to live further out, is it because property is cheaper, or is it a lifestyle decision? Is the cost of commuting off-set against cheaper housing outside of London and higher salaries within London? Whatever the reasons, the reality is that most people no longer live within walking distance of work and this has implications for both the employers and the employees. What do commuting employees do during their journey? I guess that depends on how they are commuting. If it is by car, the time could be used for thinking, planning and organising. Handsfree technology also means that phone calls can be made and taken. Conference calls with a number of colleagues or with International colleagues who are in a different time zone. The time can be used, but it is important that drivers are safe doing so. Some companies are increasingly worried about employees using phones in the car, even if hands-free. The risk of corporate manslaughter charges being brought against Company Directors if an employee is on a business call and has an accident is increasingly real. More and more of our clients are asking for policies which ban the use of phones while driving both personal and company cars. So what about the train? Proving a seat is available, employees could make extensive use of a two hour journey in each direction. A great time for catching up on reading – uninterrupted time for journals, legal documents, presentations and other work related documentation. The train journey may also provide peace and quiet for the drafting of documents, checking of emails and planning the day. Care must be taken and due respect given to privacy when working in a public space. Not only have commuters been known to leave laptops, top secret papers and important memos on the train, but they may not know who is sat next to them, who they work for and what value your papers have to them! Phone calls on a train or in a public place may also expose your business to risk. Very often, if the commuting employee is having a conversation down the phone, half the carriage can hear it and while lovers tiffs and stories of last night may be amusing, you don’t know who may benefit from the knowledge that company A is closing down and that the MD has been charged with fraud and that 50 employees are going to be laid off. How does the commuter know that one of the 50 employees is not on the train? While working on the train may be an advantage, care should be taken to plan what work will be undertaken and whether it is safe to do so. For an employer, recruiting someone who lives two hours away may also have implications. It could be an advantage if they are able to work on their journey, but travelling four hours a day may result in exhaustion and lack of social life as early mornings and late evenings take their toll. Living so far away may also result in employees being less flexible about working late. If there are two trains per hour, they may not want to stay back and finish something, missing their train and delaying them even longer. There are children who only see their father at the weekends. He is gone by the time they wake up and they are asleep by the time he comes home. Increasingly, this is not what families want, but many are prepared to accept it while securing jobs closer to home is increasingly difficult to do. Road Test - Toyota Auris 1.8 (136) Hybrid Excel Auto The new Auris is an important car for the UK economy and for British workers. But is the product any good? Andrew Merritt-Morling went to find out by testing the range-topping Excel Hybrid model, which is predicted to be the largest seller in this country thanks to its various tax advantages. It costs £1,750 more than the Icon trim and offers larger 17-inch alloy wheels, half-leather lined seats, heated front seats, climate and cruise controls, automatic lights and wipers, full parallel park assist with front and rear parking sensors, keyless entry, all-round electric windows, Bluetooth and a DAB radio. This new generation Auris Hybrid has a 1.8-litre petrol engine mated to an electric motor which it can use together or independently depending on the situation at the time. It can undertake short trips at town speeds on pure battery power alone, cruise using only the engine, and then combine both when stronger acceleration is required – such as when entering a motorway slip road. Combining the resources, the driver has 136bhp on tap and within that there is also some surprising grunt available, thanks in no small part to the torque characteristics of the electric motors. But, if you are in more of a hurry the revs soar suddenly and stay there until you’re up to your desired speed. Performance and fuel economy see marginal improvements. Handling is also tidier and Toyota’s engineers have managed to create a much tauter car that still retains its pleasant ride quality. The steering rack with electronic assistance has been stiffened, meaning that the steering feels more responsive than the previous generation and is probably the most notable improvement. It is a significant improvement compared with the old Auris. Well done, Toyota. Braking isn’t the Auris’s strongest card. The pedal lacks feedback, the initial bite is poor and the brakes grab which makes it hard to slow the car down progressively. The interior is all-new, including the seats – although the “Touch and Go” satellite navigation screen display has been carried over. Owners moving on from the existing model will notice the obvious improvements improved quality, ergonomics and cabin space. The Auris remains one of the smallest cars its class, however, so it isn’t as spacious as many of its rivals.

If you are looking for a sensible small family hatchback that appeals to both the head as well as the heart, then the Auris Hybrid might just well be the perfect car for you. In short, the new Auris is a huge improvement over its predecessor and the hybrid brings genuine economy benefits, but only if you are confined to an urban environment. Thank goodness for those tax inducements.

Janey tells us about a recent Holistic event that she attended

It was a rocking holistic event in Kings Langley recently; I was thrilled to be able to be asked to speak. The Rudolf Steiner school is known for its ‘whole person’ ethos and BBC Radio 3 counties radio reported live and commented on the atmosphere and the general ‘vibe’ Many visitors said it was ‘the friendliest festival they’ve ever attended’ It’s been heralded as Herts answer to the Mind Body Spirit Festival but organiser Dora Csendes says it’s hard to put a ‘label’ on the festival, ‘We know what its NOT – she said, its not merely a ‘pampering event’ It really is trying to be a celebration of all things connected to wellbeing which includes of course mind, body, spirit, but we are very ‘mainstream’ in our approach’ To that end alongside the stallholders offering Reiki and massage treatments, there were those offering bespoke silver jewellery, photographic cards, the world most expensive chair (yes a bespoke chair for posture that costs in excess of 5k!) and local Herts companies selling plants, organic skincare, essential oils and the yummiest healthiest cupcakes ever not to mention Libby Chan who sell the first ever Probiotic cleaning solution – yes they are ‘anti the bacterials’ and you could (literally) drink their cleaning product – at least you don’t need to worry about a lock on the door of the cleaning cupboard with kids around!

The speakers were a huge draw for the crowd, Hay House is an international publishing house and each of the four speakers are renowned internationally, Dr David Hamilton author of ‘Why Kindness is good for you’ and ‘How your mind can heal your body’ gave an entertaining talk on his new book – ‘I Heart Me – the science of self love’ It was indeed heart warming to see hundreds of men and women acknowledging the so-called ‘new age’ idea that we must love ourselves in order to be able to move forward, David in his very entertaining style impressed upon us that this is not about arrogance (x factor stylely!) it’s about acceptance, - he reminded us just how critical we are to ourselves, even to the basics of admonishing ourselves for forgetting our umbrella on a rainy day … how often do we pat ourselves on the back and say ‘well done you’ when we remember that umbrella! After the speakers Mel Bloch offered a ‘Tapping for world peace’ session

using EFT techniques tapping on the side of the head etc….(hot news in The Daily Mail recently) Becky Walsh offered a fascinating talk on how we use our intuition and reminded us that as per the title of her latest book, when we ‘tap in’ actually we ‘do know’ Often we spend too much time arguing with ourselves about what we really want – sometimes even allowing fear to come in to ‘sabotage’ our dreams. Becky says Trust your intuition, you do already know! In the workshop area people enjoyed an amazing Gong Bath (no need to get wet, just relax and enjoy the incredible healing sounds of the gongs), Nia Dance – a wonderful movement form suitable for all done to inspirational music, Laughter Yoga – ( it’s not possible to describe that you had to be there! ) And a host of other informative workshops such as David & Linda Serlin from Abundant Livinguk.com who offered a fast track for manifesting (something must have worked because they told me they won a high percentage of raffle prizes!) and Eleanor Hatherley from Living-lighter who offered a workshop on Meta Medicine which aims to offer an empowering model for health and fitness. In the calm environment of the Kindergarten – a beautiful octagonal building the treatments on offer included Vortex Divine energy healing with Jessica Davidson, Foundation for Inner Peace and a manicure with non toxic nail polishes from Katy Rixon, Organic and Vegan Nail Care and Anne Stevens who offered Craniosacral therapy, visitors really appreciated the tranquil environment – some said it was like stepping into Utopia for an hour or so! Back in the school’s dining room the organic vegetarian food was unanimously declared as ‘awesome’ (thanks to Steffi Cook and a mention to Infinity Foods and Riverford Home Delivery, St Albans) who supported the event, live music was provided by professional pianist Phil Curran and a host of teachers including Dan Maslen, a school band and an up and coming 13 year old Finn Doherty – watch this space – he is going to be the next big thing!! All in all what an amazing day to be part of, Facebook and Twitter messages expressed satisfaction at the day and the only downside was they could have used a few more attendees. Where were you ? Its an annual event that puts the school firmly on the map, (and raised money for their playground refurbishment) many visitors said – Wow I wish I could send my kids there’ For me, as a Hertfordshire girl, I celebrate anything truly ‘holistic’ this county offers and I’m thrilled when it all comes together - here’s my mantra to say thanks to the organisers… ‘All these ripples of healing will one day add up to a sea of health’ Janey Lee Grace is the UK’s Number One Natural Living Expert – author of ‘Look Great Naturally without ditching the lipstick’ www.janeyleegrace.com

Restaurant review By Terry Sullivan

Destinations Restaurant in the Holiday Inn, Stevenage is fast building a reputation as the must visit place for food in the area. My wife and I recently went along to try it out The menu certainly has a great selection of dishes from around the world, all freshly cooked using ingredients in season. For starters I chose the grilled asparagus with rocket and parmesan salad, dressed with vincotto - the asparagus was well cooked, not tough and overcooked and the dressing was a good tangy accompaniment.

My wife had the crispy duck salad with watercress and citrus fruits, dressed with hoisin sauce and topped with crispy noodles. The duck was perfectly cooked and the dish well balanced with a sharp citrus contrast. My main course, 8oz Rump steak (cooked medium rare) with peppercorn sauce served with grilled tomato and a loaded jacket potato filled with sour cream, was cooked just as I asked for it and the sauce was really zingy, just as I like! My wife chose the Goan fish curry; sword fish slowly cooked in a delicate spiced sauce, flavoured with mustard seeds, coconut milk and ginger, served with basmati rice and naan bread. This was spicy but all the flavours came through and did not mask the taste of the swordfish, the rice was fluffy not stodgy and the naan was light in texture.

-18-

Of course we could not resist the selection of wonderful desserts, served in generous portions. Chocolate bread and butter pudding with custard, made with croissants and a wonderful twist on the classic dish and the cherry and frangipane tart served with vanilla pod ice cream, this was loaded with cherries along with a light delicate sponge.

The restaurant offers efficient service by friendly staff and piping hot fresh food looking appetising and well presented. Destinations sumptuous, seasonal and exotic dishes delight and inspire the senses. Coupled with the stylish setting of this contemporary restaurant there is possibly no better dining experience in Stevenage. It is the ideal venue for private dining events, birthday celebrations, anniversary dinners, graduation dinners and any other celebrations or private dining events you have.
