Exclusive Interview with Jonathan Vernon Smith

Welwyn Garden City born Jonathan Vernon-Smith is a radio presenter for BBC Three Counties Radio. He attended the Sir John Lawes School in Harpenden in Hertfordshire. At the University of Surrey, Roehampton, he studied English Language and Linguistics.He worked for a wine company in London. He started working at the BBC at Three Counties Radio as a Broadcast assistant. He then moved to BBC London in the 90s and TALKsport where he became one of Ian Collins 'Creatures of the Night'. In 2001 he returned to BBC Three Counties and worked as a researcher on the morning consumer show. He transferred the format of this programme over to Radio Northampton, hosting a consumer radio programme from July 2005 until 2008. The final hour of the three hour programme was a general free-for-all topical discussion on a given theme of the day. He took over the Three Counties radio consumer programme on 7 April 2008, which was on weekdays from 11am-2pm, this was very successful and has since been renamed "The JVS Show." From January 24, 2011, the programme moved to 9am-12midday schedule and includes a phonein on a topical subject, a guest interview with a local person that has a strong story to tell, and continuing in the last hour with consumer problems for which Jonathan's "No-Nonsense" approach has become well known. In 2011, Jonathan won the GOLD for 'Best Mid-Morning' radio show at the Gillard Awards.The Sticks Recently visited JVS at the BBC 3 counties radio studio to find out abit more about the man and his career in radio. How long have you been on 3 Counties? I started here as a 13 year old helping out and answering the phones, was a great experience but have not been here all that time. I came back in 2001 What have you done before? I worked at Talk sport, BBC Radio London where I learnt lots of new skills, whilst working in London I sent a tape to a small radio station in Kingston on Thames they liked the tape and offered me a Saturday night disco show and wanted to call me Johnny Gold, but they said I sounded too old so could I raise the pitch of my voice so I did and I sounded like a chipmunk as you can guess I said no thank you How did you get in to radio /Journalism? guess it was in my blood as my mother worked at the BBC as PA to newsreader Richard Baker, I did a weeks work experience whilst still at school in a hotel in Redbourne and ended up helping the chambermaids cleaning the bathrooms and knew -4-

that was not for me , in fact I hated it. I have always loved radio so ended up working with Ernie Almond here at 3 Counties.

Anything you would like to do i.e. dream job? I would love to do Jeremy Vine’s show on Radio 2 also I have an idea for a very different TV chat show but want to keep the details secret. You’re most successful case? I am proud of so many, even the smallest of cases. Although I got someone their £250,000 new house back and they were not even grateful. Every case is a story behind a person’s life. And unsuccessful cases? Well I have 2. The first one is a company called Tomorrow’s Traditions who claim to turn people’s ashes into diamonds and have taken thousands of pounds off one lady promising to convert her mums ashes in to a diamond, also there is the story of Maurice who 2 years ago started sending packages to the Ukraine, then one did not turn up so he contacted me and I then found out that he was 81 and he was posting expensive gifts to his 41 year old girlfriend who he had never met. He had put his flat up for sale and was planning to move out there to live with her. It turned out that he had spent his lifesavings and most of his pension buying and sending these gifts so I invited him into the studio and the listeners told him not to do it, but he would not be told. If you were in power what would you change? I would make it illegal to walk around topless during the summer, that is awful. What are your thoughts on health and safety and political correctness? I find H+S infuriating. For instance we need a contractor to change a light bulb here and it could take a week for him to do so. A lot of it is common sense, political correctness, as with H+S it is a need to protect yourself. Which DVD or TV series are you watching at the moment? I love Frasier and Keeping Up Appearances so I am always watching the boxed sets of them. What are your hobbies and interests? Like most people I enjoy a holiday and I go to Frigiliana in Spain. I have been there a lot over the years - it is so quiet with nobody there so I don’t have to even talk. Also I play the piano, like going to the gym and having meals out. What are you currently reading and what sorts of books do you like? I am currently reading Jeremy Vine’s autobiography. What are your favourite singers or bands? I have a wide taste in music from Michael Buble, 70’s band Odyssey, Maroon 5 and the Carpenters. Are you a gig goer, theatre goer or comedy show goer? Enjoy going to the theatre especially the West End. Saw Wicked the other week that was good but the best show ever is Billy Elliot.

Do you cook? Yes enjoy cooking when I get the chance. What’s your signature dish? Delia Smith’s Chicken Basque. Who would be you 3 favourite dinner guests dead or alive? Well it would have to be Kenneth Williams, John McCririck and art critic Brian Sewell. If I can add a fourth guest, a female, Janet Street Porter just to add a bit of extra spice. INTRODUCING LOCAL ARTIST AND MODEL S.J. SCALES In school I was the girl who sat at the front of the classroom, always listening to the torrent of knowledge pouring from the teachers. I was often alienated by my fellow classmates because of my alternative lifestyle, as I was not exactly the most fashionable person - to be honest, I didn’t have a clue. I got though my years at school – yes, I may have been bullied but I believe it’s an experience that’s made me stronger and improved who I am. Needless to say, that’s not the case for every child or teenager and bullying should always be discussed with a parent or teacher. I took drama at school and I have to say it was my two drama teachers that have made me who I am. Mrs Jan Palmer Sayer and Miss Louise Hows of Sandringham school, plus my love of performing. The three made a winning combination. I left school with a string of qualifications and went on to further study which had nothing to do with the arts, I would later work for Morrisons, where I met Scarlet Monahan, which whom I became friends and would later work with. It was during these years of the friendship that I would send Scarlet pictures of myself doing random activities. One of them intrigued Scarlet and she encouraged me to do my own photographic artwork. From that spark, the artist S.J. Scales was born and I modelled in much of my own work. www.artwanted.com/s.j.scales I now model for other artists, too. I love being in front of the camera, it gives me such a rush of emotions. The very fact that you’re doing something you enjoy rather than something you must gives everything such a different spin. Maybe I am a bit of an exhibitionist - I just love doing what I was born to do. My mother entered me into a portrait competition when I was a toddler and it came as no surprise to her I was in the top three. She told me that the camera loves me. She wasn’t wrong: it really does and, to be fair, I love it. Being both an artist and model can be hard but it can be done - I’m living proof of that. When you model for other artists you have to listen to what they want; after all it’s their work, even if you don’t agree with the path they are taking. Fortunately, I often share the same artistic headspace as the photographer and when that happens, you make some truly awesome work together. I am known for my one off shots, but on those odd days when nothing seems to go your way it’s painstaking beyond belief. When I get that shot, my job is done. The finished article is what it’s all about and it gives you such a warm feeling knowing that you have done it and people will get to enjoy the overall outcome.

When you think of a model, you probably think tall, thin and glamorous. When you see me in front of the camera, yes, I am glamorous, as that’s what we want you to see. What you don’t get to see is the girl behind the model. I'm an everyday kind of person and I’m not the slimmest girl in my field. I like to call myself a real girl and I want to show that young girls don’t have to be skinny like women you see every day in fashion magazines. You know that size zero in the USA is equivalent to a UK size 4? You've got to be kidding - I would starve! I'm shorter than the average model, with real curves and natural flair, all of it built on good diet and good exercise. My hobbies are slightly different to what you'd normally get up to on a weekend: I am a member of The Sealed Knot, which is an English civil war re-enactment society. I fire real black powder muskets, get dirty in muddy battle fields and love riding my motorbike - I don’t own a car. It's all very un-model-like but it's what makes me Me. I'm told by friends that I have a good personality combined with a great sense of humour. My motto is "Dream It, Believe It, Achieve It".

It’s Panto Time By Lucy Gray

Following the successes of last year’s Pantomime ‘Snow White’ St Albans eagerly anticipate this year’s ‘Aladdin’ at The Alban Arena. With some returning cast members and an original script The Sticks got the chance to meet those involved with the show ahead of its run in December. We were lucky enough to meet with the characters in their costumes and straight away it’s easy to see that it will be a fun, colourful show. Jemma Carlisle was a beautiful Pantomime princess, and Bob Golding wore huge glasses and a fake moustache. Widow Twanky’s costume was undoubtedly the best- with Sam Rabone struggling to fit through the door in the washing powder headdress! If the costumes alone are anything to go by- the show is going to be simply hilarious. Playing the villainous character ‘Abanazar’ in the show is returning cast member Shaun Williamson. Shaun is best known on screen for playing ‘Barry Evans’ in Eastenders for nine years, but also starred alongside Ricky Gervais in the BBC’s Extras, and starred in other shows including The Bill, Holby and Inspector Morse. Despite being most famous for his on screen appearances, Shaun’s passion for singing and Cabaret performance has stuck with him, leading him to West End productions and of course, Pantomime. Shaun left Eastenders to give him more opportunity to perform on the stage, and has since been in a stageshow every year - with pantomimes being a personal highlight! His favourite shows are ‘Fiddler on the Roof’ and ‘The Producers’. Shaun’s describes his character in Aladdin as a ‘frustrated actor’. Abanazar is constantly quoting Shakespeare and thinks he is the greatest actor that has ever lived. He is of course a very evil villain but has his soft side and is guaranteed to make you laugh. Jemma Carlisle will be playing ‘Princess Jasmine’ in the show. Having been a performer since the age of seven, Jemma has been in fourteen Pantos. She has played the title role in Annie for its 2002 National Tour, as well as being critically acclaimed for her performance of Alice in Wonderland in 2003- a show she told us was a particular highlight. More recently Jemma has been working as a singer mainly for professional recordings. Her favourite West End musical is ‘Wicked’. Jemma loved playing the lead role in last year’s Snow White. She said her favourite part of pantomime is getting involved with the audience. This year you can look forward to a really fun show, with plenty of participation from the audience! The lead role of ‘Aladdin’ will be played by Phil Gallagher. Phil started working in children’s television at Disney fourteen years ago and has been doing production work, writing, acting and presenting since. Phil is most famous for presenting hit CBeebies show ‘Mister Maker’ which now plays in over 100 countries, and was nominated for Best - 10 -

Presenter at the British Academy Children’s Awards in 2009. ‘Mister Maker’ has also kept Phil involved in live theatre- performing in the CBeebies UK tour, and taking a live show to South Africa and Asia. A celebrity in the world of children, your kids are bound to love Phil, especially as Aladdin- the hero of the show. He said the panto will be a huge, funfilled, family show and looks forward to the magic carpet…

Bob Golding will also be starring in the show as ‘PC Pongo’. Bob is an experienced theatre actor, as well as being heavily involved in voiceover work from both Milo and Max in ‘Tweenies’ to the voice of Plod in ‘Noddy in Toyland’. Bob is probably most famous for his performance in last year’s West End one man play ‘Morecambe’ where he was nominated for best actor and won the Olivier award for Best Entertainment. He is looking forward to going back to his roots and performing in local St Albans, and explained of the additional pressure of directing this year’s Panto. With Bob taking inspiration from classic comedy (like Eric Morecambe’s) Aladdin will be sure to include a lot fun and a huge dollop of slapstick! So look forward to funny chase scenes - and a lot of falling over. Bob said the script has been written specifically with the cast in mind, so you can count on great acting and funny characters! He made the claim that with the cast and the writing, this year’s show will be ‘one of the best Panto’s ever!’ Aladdin runs from 14th Dec to 6th Jan at The Alban Arena www.alban-arena.co.uk

Restaurant Review

Many of you may know that the Hermitage Rd. restaurant in Hitchin, Herts. started of life in the 1930’s as the Hermitage ballroom or “the Herm” as it was affectionately known as. In its’ time it has hosted the crème of jazz, rock, pop and cabaret acts ranging from Johnny Kidd and the Pirates to the Real Thing, Bob Monkhouse to Roy Castle, Acker Bilk, Kenny Ball and many more but closed in the summer of 2010 to reopen after a £600,000 refit under the supervision of now manager Howard Nye as the Hermitage Rd. It has been transformed - with stripped back New York style décor, wonderful mood lighting and subtle music it is the in place to go. The restaurant has been open less than 12 months and along with its sister establishments The Fox at Willian and The White Horse at Brancaster Staithe, Norfolk is listed in The Good Food Guide 2013 - probably the UK’s most objective and independent food and hospitality review book. So The Sticks could not resist paying a visit! The first thing you notice as you walk up the stairs are the quirky items placed around the bar area and then the open plan kitchen, where you can see your food being prepared, and the wonderful aroma emanating from there adding to the ambiance of the whole place.

My guest and I both took time to look through the extensive menu, which changes quarterly, and then both selected our lunch from the daily specials board! I chose - 12 -

Salmon wih Crab Croquets with beetroot - the salmon was very moist and the croquets were amazing. My colleague had a dressed crab with chilli mayonnaise which they said was a wonderful combination of flavours. For dessert I had a fresh summer berry Eton Mess, the fruit was just right not too sweet or too tart and my guest had a lemon posset with an intriguing lavender shortbread. From our experience it is easy to see why The Hermitage is in the 2013 Good Food Guide. This is a must go to place with five star food.

Well I had no interest in magic till one day I was out with some mates and I had a pack of cards in my pocket and I happened to go in to a bookshop and on the shelf the wrong way round was â&#x20AC;&#x2DC;101 Card Tricksâ&#x20AC;&#x2122; so could say it was fate or chance. What was first trick you did? When I was a small boy I was given a Paul Daniels coin in the pot trick When and where was your first professional performance? I was about 17 and it was at RAF Wittering, my dad is a professional drummer and he pushed me in to performing.

What’s your favourite trick? I don’t really have a favourite but the most requested is the one where I give the person my mobile phone to hold on to then get them to choose a card and sign it and put it back in the pack. I then make it come to top of the pack then it disappears to reappear in the mobile folded up behind the battery. Do you have a Magic hero? No but I respect Derren Brown, he is amazing in all things he does Best place you have performed? Have two the 02 arena for Sky and also the Orient Express And worst place? Pubs when I started out, but it is the best place to learn your trade and do you apprenticeship. Has a trick gone wrong? Yes, once that I can remember. It was during a trick and I dropped the park of cards and they all landed face down except one and that just happened to be the card chosen by the lady. Do you have any ambitions? My ambition was to be a full time magician which I have achieved. Anyone you would like to work with? Love to work in someway with Bear Grylls. I have worked with gardener David Domoney at the Chelsea Flower Show creating an illusion for his garden.

Spotlight on Pilates

You’ve probably heard of Pilates; know someone that’s doing it or indeed doing it yourself (hopefully!) but it’s a massive misconception that Pilates is a trend! This popular form of exercise was originally developed by Joseph Pilates (yes a man!) in the early 1920s, and was popularised in the US in the 1970s. As an exercise method Pilates has long been popular with dancers and other professional sportspeople. In more recent years its profile has been raised further thanks to associations with many A list celebrities such as Madonna and Gwyneth Paltrow as well as the huge support and backing from most medical professionals. But what actually is it?! Essentially, Pilates is an exercise that strengthens the core muscles that help to support the spine and the skeleton. By strengthening these inner muscles, your body is more balanced and correctly aligned so there is less stress on other parts of the body which can otherwise cause weakness, discomfort and in some cases, pain. Issues of poor alignment and lack of strength can manifest themselves as muscular issues, or skeletal issues, but due to the important role the spine plays in the body’s central nervous system there are also many nerve related issues that Pilates can help with. Everyone moves so everyone should be doing Pilates! Since Pilates is all about movements and muscles based around and supporting your spine, that means anyone who moves (i.e. uses your spine!) should work on these deep inner support muscles to make sure you stay strong, mobile, and healthy Pilates can benefit anyone. It is a low-impact form of exercise, which means that it is suitable for young and old, the very fit and those in need of rehabilitation. We are forever bombarded with statistics about absenteeism at work due to back pain, which often is down to poor posture as a result of using the computer. Bad posture is very often as a result of lack of core strength, which in turn puts pressure on the lower back and can result in a range of issues. Once the basic exercises have been learned correctly with the help of a qualified instructor, it is relatively straightforward to practise at home, and does not have to involve expensive equipment, and does not require a great deal of space. But at The Pilates Pod in Hitchin, we also have what’s called a Reformer. It’s a highly specialised Pilates machine that was developed by Joseph Pilates from the start, when as a nurse in the war camps, he adapted a hospital bed and added resistance ropes, straps and pulleys to help patients gain strength rather than wilting away! It worked; they didn’t die of the flu epidemic! We use this machine to help customise personal 1:1 Pilates training for our clients who a) might need injury rehab and corrective work, b) serious athletes who use it to improve their sport and speed along muscle imbalances that their sport gave them c) pre natal clients who are limited by mat floor work and d) those that just like to zoop up their Pilates and work smarter and harder! - 20 -

Laughter is on the Agenda with Stephen K Amos It has been a manic 12 months for Comic Stephen K Amos, following a fantastic, sell-out run at this year’s Edinburgh Festival, the maestro of feel-good comedy Stephen K Amos is back in the UK and back on the road, charming his audiences as he goes. With a soldout tour of Australia and New Zealand behind him, shows in Montreal and New York under his belt and with his new book ‘I Used to Say My Mother Was Shirley Bassey’ now out, Amos can’t wait to perform, once again, to his British audiences. Performing with a live audience is what Amos does best. No one can match his warmth and affability with a crowd, plus his ability to make each show an uplifting and memorable occasion. Amos is at the top of his game right now. Following a successful debut his Radio 4 series An Idiot’s Guide has been commissioned for a second series starting in January 2013. Stephen is delighted. He also currently has a sitcom in development with Jonathan Harvey and a new show in October on Sky Atlantic. Three original vocalists, bothers Chris & Eddy Amoo and Dave Smith, who had three million selling hit singles in the 70s, “You to Me Are Everything”, “Can’t Get by Without You” and “Feel The Force”, plus other top ten successes, such as “You’ll Never Know What You’re Missing” and “Whenever You Want My Love”. In 1986 “You to Me Are Everything”, “Can’t Get by Without You” and “Can You Feel the Force” were all remixed and became huge hits again, thanks to their large club following. With their own fantastic 5 piece band The Real Thing play festivals and clubs worldwide. Their performance includes all their top ten hits, plus a medley of classics from the seventies including tracks such as “Celebration”, “Ladies Night” and “Aint No Stopping Us Now” The Real Thing are Britain’s top Soul & R n B group. The Sticks spoke to Eddy Amoo at his home in Liverpool ahead of their show How did you get started in the music business? I was a member of an acappella vocal group called "The Chants". A chance meeting with Paul McCartney at a Little Richard / Beatles concert at the Tower Ballroom in Birkenhead, led to the "Chants" being invited to audition for the Beatles at Liverpool's Cavern Club. The Chants showed up at one of the clubs’ lunch time sessions featuring the Beatles and sang for them after the session. The Beatles were so knocked out with the group that they invited them to appear with them that same night and even rehearsed 4 songs with them so they could provide the "backing". Brian Epstein (the Beatles Manager) did try to prevent the lads appearing with his group (he didn't like the idea of the Beatles backing anyone) but he was persuaded by John and the lads to let it happen, and so the "Chants" debut live performance in front of a packed house full of screaming girls went on, and it was a resounding success and so started our career. Brian Epstein took the "Chants" under his wing and it was all looking good, sadly though the group grew impatient waiting for Brian to formally sign them and decided to accept one of the many offers coming their way, a big mistake as they found to their cost because, even though they were signed for Pie records by Legendary producer Tony Hatch, it simply wasn't the "right time for black groups in the UK" so the group were unable to achieve the success of their "Mersey beat" peers! That said, the chants toured for 13 years till we changed our name to The Real Thing in 1975 - 24 -

The 104bhp 1.6 petrol isn’t fast but is just about adequate for the job. The engine isn’t the most refined around, but it only gets noisy when you really rev it hard, and it stays reasonably smooth.

It doesn’t cause undue noise on the motorway, either, and because wind and road noise are well contained, the 3 is a decent cruiser. The 3’s low-speed ride is firm, and verges on being uncomfortable. As speed increases, things smooth out only slightly, but there is excellent body control, as well as bags of grip. The steering has virtually no feedback, but it is very responsive and overly light at speed, a combination which makes the car feel twitchy in a bend. The 3 is very aggressively priced compared with most rivals, especially considering the amount of standard kit you get. This 1.6 model is moderately efficient, returning almost 45mpg, but with CO2 emissions of 149g/km, it commands quite high company car tax bills. The cabin isn't as appealing as a VW Golf's, with hard dashboard plastics letting things down. Still, everything you touch feels sturdy, and there's reasonable reassurance in the fact that the 3 was rated as average for its mechanical reliability by owners in the 2012 JD Power Customer Satisfaction survey. As standard, the 3 comes with active front headrests, which minimise whiplash injuries, as well as twin front, side and curtain airbags. Stability and traction control systems are also present and correct, while an alarm and deadlocks help to deter thieves. It's easy to make yourself comfortable, thanks to a steering wheel that adjusts for reach and rake, and a driver's seat that can be cranked up and down. You also get chunky controls for the stereo and heater, both of which come with cool flashing lights. Shame there are so many buttons on the dash and steering wheel. The 3 is roomy enough, seating four six-footers in comfort. Access to the rear can be a little tricky, though – the gap at the bottom of the doors makes it a bit tight for getting your feet inside, and shoulder space is rather tight, too. The good-sized boot is well shaped, though, and the 60/40 split rear seats fold to make an almost flat extended load floor. In TS2 trim, in addition to the basic remote locking, four electric front windows, alloys and climate control, it adds niceties such as Bluetooth, cruise control and automatic lights and wipers. Food Ideas from Pearce’s Farmshop & Café

As we say goodbye to the summer and days become shorter, colder and damper our thoughts turn to dusting down pie dishes and preparing for the slow cooking and braising season ahead with comforting winter-warming meals, meaty casseroles and game roasts. The Autumn produce in all its intriguing shapes and forms now adds a wealth of welcome tasty options for creative cooking. Pumpkins are the heavy-weight champions in their range of colours, sizes and shapes. A real super food as low in fat and sodium, high in vitamins A, C, E, potassium and fibre. They are a member of the gourd family, also called squash and are in fact a fruit though when cooking they are treated more as an extremely versatile vegetable from blending in a soup, baking, stuffed with rice and spices, cubed and added to risotto. They work well in puddings too from pumpkin pie and cheesecake or try roasting the seeds for a healthy snack or addition to flapjacks and biscuits. It’s worth looking out for salisfy and the similar scorzonera, what wonderful names for the root vegetable that look rather like grubby pencils. Salisfy is also known as an oyster plant because of its delicate taste of oysters. Delicious peeled and roasted with a little olive oil, crushed garlic cloves and a bay leaf or sautéed in butter and served with lemon juice and chopped parsley. Alternatively the roots can be boiled until just tender then mashed and pureed for use in soups or, chopped small and served cold with a simple vinaigrette. For an odd shaped veg, not much beats the nobbly celeriac, an un-sung hero that shouldn’t be overlooked. Tastes a bit like celery but has a nutty, milder sweeter taste. It’s beautiful in soups, roasted, thinly sliced into salads and makes a wonderful mash mixed with potato. Celeriac remoulade is one of the best ways to appreciate it – grate the celeriac and toss in juice of half a lemon. Mix 4 tbsp of good mayonnaise, 2 tbsp of Dijon mustard, 2 tbsp of double cream and chopped parsley. Serve with slices of ham. Wild mushrooms are in abundance in the autumn and if you keen to go out and forage from our fields and woods, you’ll find dozens of varieties and can gather chanterelles, field mushrooms, porcini or ceps, horn-of-plenty, fairy ring, chicken of the woods, hedgehog, puffballs, morels and even truffles if you're really lucky. Never eat a fungus though if you are not absolutely certain of its identity, don’t rely on pictures as the small differences can be difficult to spot. Wild mushrooms are best eaten as soon as they are picked, use a soft brush or cloth to wipe away debris and cut off tough stems. They have a much earthier delicious nutty flavour, no comparison to those white shop bought ones. Use in risottos, sauces, stuffings, or best of all just fried in butter with garlic on toast.

Wild Mushrooms on Toast Ingredients A few good handfuls of edible wild mushrooms, such as girolles, chanterelles, trompettes de morte Garlic Butter Hummus Sourdough bread or ciabatta Method Fry slices of sourdough or ciabatta for 1 -2 minutes each side until lightly browned. Spread with hummus Brush rather than wash the mushrooms, as they absorb a lot of water and slice. Lightly fry the mushrooms in butter and garlic until the excess water has evaporated and they turn a golden colour. Serve the mushrooms on the sourdough bread or ciabatta and serve immediately Pumpkin and Wild Mushroom Risotto Quarter of a pumpkin, peeled and diced 200 gm wild mushrooms, cleaned and sliced 1 bulb of garlic, cloves peeled and halved Small bunch of fresh thyme, leaves picked Truffle oil Parmesan cheese for grating Parsley, chopped for serving For the Risotto 400g aborio rice 1 pint hot vegetable stock 50g butter 2 shallots finely chopped Method Roast the pumpkin until just soft Fry the wild mushrooms with garlic, thyme in a splash of truffle oil until they begin to colour and season with salt and pepper. For the Risotto Sweat the shallots with the butter until transparent, add the rice and cook for 2-3 minutes stirring all the time. Keeping the heat low, start adding ladlefuls of the hot stock slowly, stirring all the time until each ladle has been absorbed by the rice (should take 13-15 minutes). Taste the rice to check if it is cooked. If not, carry on adding the stock until the rice is soft. If you run out of stock before the rice is cooked, add some boiling water. Season to taste. As you walk through our woods to the storytelling house, you might come across a ghoul or two or meet a witch inhabiting one of our buildings as you trick or treat!
