Exclusive Interview with Keith Duffy Keith Duffy is singersongwriter, actor, radio and television presenter and drummer who began his professional music career as part of Irish boy band Boyzone alongside Ronan Keating, Mikey Graham, Shane Lynch and Stephen Gately in 1993. The band decided to focus on solo projects in 2000 since which Duffy has achieved critical acclaim for his acting roles, particularly in soap operas such as Coronation Street and Fair City. He has also presented The Box and You're a Star. Keith was born on 1 October 1974 in Donaghmede, Dublin. He has an older brother, Derek, and a younger brother, John. He was raised Roman Catholic. As a young child he contracted pneumonia. Between the ages of 7 and 18 he played hurling and Gaelic football, representing the Dublin under 16 hurling team for three years. At the age of 16 he bought a drum kit and played in bands called Toledo Moon and This Burning Effigy. Keith studied architecture for a year at college, before dropping out. Keith first became aware of Boyzone after hearing auditions to become a member were being held. He was unsuccessful in securing an audition but was later noticed by Louis Walsh (who became the band's manager) whilst dancing in Dublin's POD Nightclub and was invited to audition. Duffy sang Billy Joel's "Piano Man" and danced to Right Said Fred's "I'm Too Sexy". He was chosen as one of the original members of the band. He played a backing role in Boyzone, with Ronan Keating acting as the band's lead singer. In 1994 Duffy and fellow band member Keith has been an autism "awareness" campaigner since his daughter was diagnosed with the condition at age 18 months and acts as the patron for Irish Autism Action holding regular fundraising events and informational talks. Duffy was the winner on the British reality series The Door in 2010 and came third in the second series of Splash! in 2014. Terry Sullivan caught up with Keith ahead of his tour with Brian McFadden (of Westlife) Today we are talking to you from Ireland? Yes, from my home in Dublin, a very rare situation for me to be home in my own house, I am so busy at the moment, but it is a delight to be home.

4

You have a new band/project called Boyzlife, which is you and Brian McFadden, why did you create this band? Basically Boyzone were dormant at the time in 2016 and we were waiting on 2018 so we could celebrate 25 years together. I had just finished a theatre show in London called “A Handful of Stars” and I wanted to incorporate something in a theatre style venue and incorporating my acting and singing and I came up with this concept of putting on an autobiographical show, talking of 25 years in the business and singing a few songs throughout the show. I was all set to go and I went to see Brian McFadden at a solo night doing his own stuff in a rock joint in Dublin and he blew the roof off the place, he was fantastic, and of course Brian and myself go back a long way, so after a few drinks in Dublin, as you do, he asked me what I was up to next and I explained the project I was working on and he said I would love to work on something like that, he said why don’t you do it with me, we can do it together and we will have more fun together on the road, we can do Westlife songs and Boyzone song and tell stories and have some fun. So, we did it and it sold out and it has evolved, a couple of years later we do more music now and less talking. Between Westlife and Boyzone we have had over 20 number one hits, we do all the number one hits and fans of Westlife and Boyzone get to step back down memory lane and live that nostalgic moment of when they were 17 again and myself and Brian are unpredictable on the microphone, to say the least, so you never know what you are going to get but it is always a bloody good night! Do you sing together, or do you sing on the Westlife songs and Brian on the Boyzone songs? Yes, we mix it up. I sing a bit of Westlife, and he sings some Boyzone - it is great, it is singing and making people laugh. Brian and I stick it to each other every night in all sorts of ways then we hug and make up and walk off stage. How did you start off in the music business? That was back 25 years ago brother, when Boyzone started in Dublin in 1993, which is many moons ago, I was a drummer back then I was a marching drummer in a marching band and I played the drums in a little garage band at the time too and then I joined Boyzone and there was no room for the drums on stage with 5 of us.

5

When you auditioned for Boyzone, I heard you sang Billy Joel's "Piano Man" and danced to Right Said Fred's "I'm Too Sexy"? That is probably in and around correct. Since then the entertainment world has been amazing to you, you have done lots of TV work and of course Boyzone has taken you around the world, do you prefer acting or singing or do you still enjoy doing both? It depends really. I love the acting; Coronation Street gave me a great opportunity after having an amazing career with Boyzone when we decided to call it a day back in 2000. In 2003 Coronation Street picked me up and put me in 3 episodes of the show then brought me back for 6 months, then a year, 2 years - on and off I was in Corrie 10 years with a few years off in between. They gave me a whole new life, I went and did a lot of theatre work after that - a couple of movies and another soap opera here in Dublin and various different drama roles since then. A change is as good as a rest, so they say. Is there a role you would like to play? There are loads, you look at TV and Netflix today and we have gone into the boxset type of shows now whereas years ago it was BBC and ITV and the movies come out at the cinema; now we are spoilt for choice. You have the big Hollywood actors doing the TV, there are so many different things as an actor I would like to have a crack at but with Boyzone and Boyzlife, I will not get the time to do it in the immediate future. The great thing about acting is it is a timeless job, you can play a character at age 92 or at the age of 9, so who knows down the line what I might get in to and have a bit of success with it. You’re known as a bit of an action man figure, you did a triathlon for charity a little while ago? Well I am getting old now. I can’t lie I did enjoy it - I did 2 Ironman events, 7 marathons and 3 or 4 triathlons. I did a lot of that type of stuff but unfortunately my knees are crock now. I have had to have an ACL replacement in both my knees, so those days are over now, but you never know, watch this space - if I get some mobility back in my knees and legs you never know what might happen. Away from the music business what do you do to relax? I am no different to anyone else, I enjoy the finer things in life. When we are on tour, Brian and myself like to play golf, we would play golf every day if we could, we love golf, we love playing and watching golf too and we are fortunate to play some of the best golf courses in the UK. That’s my guilty pleasure really, last year I got down to a 9 handicap but I play off 11 now. Boyzlife brings together members of two of the biggest boybands in history, Boyzone and Westlife, to perform a whole host of their biggest chart hits. 6

Brian McFadden enjoyed 12 UK and Ireland number ones as a member of Westlife, including a record breaking seven top spots in a row. The band also boast four number 1 albums and over 30 million record sales in total. Since Westlife, Brian has enjoyed international solo success, including a UK number 1 with ‘Real to Me’. With Boyzone, Keith Duffy has enjoyed similar success, including 6 UK number one singles and 16 out of 17 of their first single releases making the Top 5. With 5 number one albums also to their credit, Boyzone achieved worldwide sales of over 25 million. The unmissable Boyzlife show has already been performed for over 20,000 adoring fans since the pair came together in 2016. With two completely sold out tours under their belts in partnership with Hilton Hotels, as well as their unforgettable 2017 December Christmas Tour, this is an evening that is certainly not to be missed. Hiring Managers May Be Warming Up to Tattoos While conventional wisdom holds that body art is unwelcome in the workplace — and there’s research to back that up — a few signs suggest a possible thawing. Researchers at the University of Western Australia and the University of Miami found that tattooed and non-tattooed applicants enjoyed similar levels of employment and income. And some employers in fields that are short on workers — like health care — are dialling back on their dress code and appearance restrictions. “We have all been fortunate to work in a number of sectors throughout our careers and have seen how views have changed over time with tattoos etc. Many companies today ask employees to cover them up with a shirt etc, but some companies now accept them and under the law employees are not protected by the Equality Act 2010 unless it is a religious tattoo. Employers need to ensure that their uniform policy is clear and legal if their business / sector wishes these to not be visible at all times” comments Matthew from Consensus HR. More than half of workers in the UK would like to see an end to the nine-to-five workday. According to a survey of 4,000 adults, 57% would prefer to start and finish work earlier while 48% would work longer hours in order to have a shorter working week. Two-thirds of those surveyed said they would be far more likely to stay in a job if it allowed them to work more flexible hours. A total of 63% said that having a sociable workplace was one of most important aspects in choosing a job, while 60% said they would be more likely to take a job that was in an accessible location. “Flexible working is something that seems to be becoming more popular in the workplace but the majority of employers do not, unfortunately, see the benefit with many believing that if they were to offer it the employee would work less. However, statistics have shown that working flexibly increases productivity but needs to be managed correctly” comments Matthew from Consensus HR. “This interesting report by Powwownow gives some interesting statistics.” British companies are struggling to fill vacant positions as EU workers avoid coming to the UK. A survey of over 2,000 companies found that applications for both skilled and unskilled jobs had dropped off, with an average of 20 applicants for the former category compared to 24 last summer. Applications for medium-skilled roles fell from 19 to 10. But despite the shortage, employers expect salaries to rise just 2% over the next year, half the typical increase prior to the financial crisis. Matthew of Consensus HR comments “Until we know exactly what has been agreed in relation to Brexit, I think many employers are going to find it hard in relation to recruitment of EU workers. I know when I worked within hospitalities and the opening of the boundaries for EU workers were widened it helped us tremendously within catering and retail where it was continually hard to recruit. We were able to employ hard working, accountable people with the right attitude and behaviours and hope the Government is able to address this asap to ensure it continues for the industries that need them.”

YOUR LOCAL SOLICITORS NO FAULT DIVORCE – could it finally become a reality? The legal profession (especially those of us dealing with Family Law) have welcomed the Government’s recent announcement that there will be a public consultation on introducing ‘no-fault’ divorce. The aim is to reform and modernise our divorce legislation that is nearly half a century old. Many of us have long since recognised that our existing divorce process is not fit for our times. Separating couples should not be spending time, money and efforts on arguing why they are getting divorced and which of them is to blame. If the marriage has irretrievably broken down, which is always the requirement for any divorce application, then why complicate matters. Many couples currently negotiate back and forth over who will be the “unreasonable party” and exactly what grounds of alleged unreasonable behaviour can be cited in the petition. This is simply to comply with the current rules and regulations and rarely because one party feels like “venting” to the court. Parting couples need to be able to save their energy and resources for resolving the more important issues arising from the end of their marriage - the living and visiting arrangements for any dependent children, and the matrimonial finances – in particular the conundrum of rehousing everyone. There has already been resistance voiced from some corners to the suggestion of any change to the existing law – mainly arguing that it could make obtaining a divorce too easy. However, I would argue such a concern is a bit late given that the Government has already made it possible to apply for a divorce online (since July 2018). Further, most people would not want to spend the £550 court fee on seeking a divorce unless there is good reason, and there are still basic requirements to meet before making an application to the court – such as having been married for one year, and for the marriage to have irretrievably broken down. It is unclear precisely how long the Government consultation will take – but as a Family Lawyer, the desperately needed modernisation of our current divorce law cannot happen too quickly. Russell Grant's Monthly Horoscopes October

ARIES (March21st-April20th CANCER (June22nd-July23rd)

The New Moon on the 9th puts strain on a close relationship. Just when you thought you were making a breakthrough with a romantic or business partner, an argument breaks out. You've been spending too much time on your career. Until you change your priorities, it will be impossible to gain your friend's trust. When you really care about someone, you'll find a way to spend quality time together. On the 24th, the Full Moon could bring an influx of income. Use this money to treat yourself to something you've set your heart on and wanted for a long time. When you reward yourself for working hard, your job stops seeming so burdensome. If you have enough money saved, you might decide to undergo a career change. Launching your own business, running for political office or moving into another industry are among the possibilities. Use your financial cushion as a launch pad for bigger and better things.

The New Moon on the 9th warns against confiding in an untrustworthy person. A relative who pretends to have your best interests at heart is really jealous. After sharing sensitive information with them, you could be betrayed. It's better to write in a private diary that is kept in a secured place. The last thing you want is your personal business to be revealed in a public forum. Some people use shaming as a way to control others. Don't let this happen to you. The Full Moon on the 24th brings a group project to its successful conclusion. Much to your surprise, you'll be named most valuable player. The other members of the group appreciate your leadership ability. Instead of barking out orders, you learned how to best motivate each person. As a result, everybody felt valued and appreciated. It's no wonder your work was so impressive; people are motivated to do their best when they're happy.

TAURUS (April21st-May21st)

LEO (July24th-August23rd)

Despite your best efforts, it will be difficult to get organised on the 9th. That's when a tense New Moon keeps calling you away from your duties. A demanding manager or expert will keep asking you to make small changes on a project. If you're working on a commission basis, you'll have to put an end to these incessant calls. It's better to lose their business than be at the beck and call of their whims. If you have a health setback during the first half of the month, scale back your schedule. You're trying to do too much in too narrow a window of time. The Full Moon on the 24th invites you to enjoy some self-pampering. Instead of pouring all your energy into a close relationship, do something nice for yourself. Take a few days off work, get a massage and visit your favourite nature spot. The sight of birds, flowers and trees has a therapeutic effect.

Acquiring a skill will be more difficult than expected on the 9th. That's when the New Moon puts you in the path of a relentless critic. It will be hard to study with their disdainful voice in your ear. Stay as far away from this cynic as possible. If you're having difficulty mastering complicated concepts, be patient. Hire a tutor who is able to isolate the source of your trouble. With their help, you'll be able to push past this stubborn block and achieve mastery. On the 24th, the Full Moon marks an impressive turning point in your career. You'll be given a promotion or high profile position. This will come as a total surprise. It's been hard to know where you stand with an impassive employer. Finally, you'll discover just how much your boss really appreciates your contributions. Have fun at a party that is thrown in your honour.

GEMINI (May22nd-June21st)

VIRGO (August24th-September23rd)

On the 9th, the New Moon puts you in the path of romance. Although the lure of a creative person is powerful, you should hesitate before getting involved in a serious relationship. While it's true you have many interests in common, there is a big difference between you. You're not especially materialistic, while the object of your affection is obsessed with money. This rift will cause real problems. Take the time to get to know each other; you will have second thoughts. If you're already in relationship, your partner will reveal some upsetting financial information during the first half of October. Put your heads together to craft a plan for paying off a sizable debt. On the 24th,the Full Moon will bring a welcome chance to rest and recharge your batteries. If an appointment or trip is cancelled at the last minute, don't complain. Instead, treat it as a chance to relax.

The New Moon attracts a moneymaking opportunity on the 9th. Taking this job will limit your personal life. You'll spend virtually all your time at the office, trying to satisfy a demanding client or supervisor. If you really need the money, it's worth accepting this job. If you have other options, it would be best to pursue them, even if they pay less. You can't put a price on your mental health. The Full Moon on the 24th finds you returning from a trip, finishing an ongoing project or collecting a diploma. There will be a surprise bonus for your hard work. You might get a chance to lead a group or write a column. Being able to share your insight with an enthusiastic audience will be the answer to a prayer. You love being paid for exploring ideas. Someone with your brain power needs a job that engages the intellect.

10

CAPRICORN (Dec 22nd-January20th)

LIBRA (September24th-October23rd)

A professional opportunity will beckon on the 9th, but think carefully before accepting it. A conflicted New Moon will force you to choose between having a wildly successful career and a comfortable home life. If you don't want to spend every spare moment at the office, pass up this offer and wait for a better one. If you're happy with your current position, you might be forced to take a leave of absence. Attending to a personal matter won't wait a minute longer. Getting treatment for an addition, undergoing a surgical procedure or taking time away to reassess your priorities are among the possibilities. The Full Moon on the 24th marks an exciting turning point in your personal life. You might decide to get engaged or married on the spur of the moment. There's also a chance you'll get word of an unexpected pregnancy. Whatever the nature of this surprise, it will be a happy one.

You yearn to break out of your shell on the 9th, when the New Moon prompts a personal change. Your family won't be supportive of your desire to pursue a particular career, move to a different neighbourhood or take up another belief system. Instead of asking their approval, go ahead and follow your heart's desire. It may be necessary to cut yourself off from financial support as a means to become more independent. You will have to scrape and save for a while, but that's better than remaining under a relative's thumb. The Full Moon on the 24th brings a cheque and bonus that is much bigger than you expected. An appreciative client, customer or patient will throw in a bonus for your hard work. Use this windfall to upgrade some technical equipment. Getting a better car, computer or smartphone will make daily life much easier. Take advantage of a last-minute sale.

AQUARIUS (Jan 21st-Feb19th) The New Moon on the 9th will bring an enticing opportunity to travel, study or write. Unfortunately, you won't be able to make the most of this chance. An expired passport or tight enrolment window will force you to postpone plans for another time. Instead of dwelling on your disappointment, try making the best of a bad situation. Studying a foreign language will make a future trip much easier. If you want to take an advanced course, this would be a good time to brush up on basics you haven't studied for years. On the 24th, there will be unexpected changes at home. You might have to relocate for work. Alternatively, your household could expand to include a child or older relative. Any newcomers will give your home life a cosy, comfortable feeling that is grounding. Instead of wanting to go out every night, you'll prefer spending time with your nearest and dearest.

SCORPIO (Oct24th-Novr22nd) The New Moon on the 9th makes you yearn for privacy. Unfortunately, a relative or neighbour keeps trying to pry into your personal business. It would be wise to invest in some security equipment. Lock up your personal belongings when you're at work, increase your password protection and don't leave your smartphone where it can be easily accessed. Some people cannot be trusted. If embarrassing information does come to light, think about filing a police report. The perpetrator is counting on you to be too embarrassed to alert the authorities. Call their bluff. On the 24th, your romantic or business partner will have some surprising news. A big promotion or hefty raise will increase your standard of living. If you're single, you won't be for long. Meeting someone special at a gourmet restaurant, garden show or luxury boutique is a strong possibility. You'll fight hard and fast for the object of your affection.

PISCES (February20th-March20th) A physical relationship forces you to make a decision on the 9th. That's when the New Moon causes someone very close to you to question your feelings towards them. Spending all your time with friends makes them feel neglected. It's time to change your priorities. If you're single, resist the temptation to steer a platonic relationship into passionate waters. Although your loved one is very attractive, you aren't suited to each other as a couple. Surprising news will reach your ears on the 24th, when the Full Moon brings hidden information to light. It will be such a relief to know that a community matter has been successful resolved. You've always been a pioneer for justice. Now resources are more evenly allocated among your neighbours, you can turn your attention to more fulfilling pursuits. Take an art class, go to a concert or read for pleasure. Avoid getting caught in a rut during the 2nd half of October.

SAGITTARIUS (Nov 23rd-Dec21st) On the 9th, the New Moon will spark a group project. This venture will not pay very well. To add insult to injury, you'll find your indecisive colleagues highly unpleasant. You're perfectly willing to collaborate, but at some point, someone will have to assume leadership. If you take the helm, you'll have to deal with a great deal of anger and resentment. It may be better to steer clear of this assignment altogether. If you can't, don't waste a lot of time and energy on this work. Some situations aren't worth the trouble; this is one of them. The Full Moon on the 24th is perfect for getting organised. Getting rid of clutter will make space for new energy in your life. Make three piles: Donate, discard and sell. If you've been hanging on to items that evoke unhappy memories, give them to somebody who appreciates them. Out with the old and in with the new.

The Go Sober for October By Janey Lee Grace

As we head into October have you considered going sober for October? It’s much easier now to quit the drink or cut down as so many pubs and bars across Hertfordshire are stocking a good range of decent alcohol-free drinks - special mention must go to The Gate in Chorleywood for their range of Mocktails - and of course if you want to have an alcohol-free drink at home there are now excellent alcohol-free beers from Heineken, Budweiser et al and some cool botanical drinks too such as Borrago. Check out the online store https://wisebartender.co.uk/ The Go Sober for October campaign has been gaining momentum and charities such as Macmillan Cancer Charity have some great resources to encourage people to give up the booze and pop the money saved into their coffers. Macmillan Cancer support has some helpful tips for people wanting to give up for a month. They suggest telling yourself that you can do it, getting your friends on board and making your plan for alternatives. These tips can work when the triggers come, and you feel like reaching for the beer or your favourite tipple. But for change to be long lasting, it’s really about mindset and in the Janey Loves Platinum Awards recently one winner was leading coach Jo Da Rosa. She is the founder and author of Quantum Sobriety, and she is aiming to change the conversation around addiction. Jo has ‘been there done it and got the T shirt’, with her own journey; from hopeless alcohol and drug addict to total freedom. It’s a revolutionary approach which doesn’t rely on willpower. It’s underpinned by meditation and the rewiring of the brain, giving participants permission to fully take their power back. Via specific meditations to first ‘UN-learn’ the beliefs/trauma that has kept the addict trapped, the programme supports the ‘RElearning’ of who the individual authentically is. Through her online programme, her book and residential retreats Jo offers monthly themes, powerful mediations and daily blogs. Her teachings can lead people to balance harmony and happiness in all areas of life, she has seen some amazing success stories! If you are struggling with addiction or just want to cut down for a bit, check out Jo’s work. Quantum Sobriety can be experienced via a residential retreat, one-day workshop, global online programme and community. Jo’s book, while referencing quantum physics, is written in a ‘girl next door’ style so uses non-academic language. www.quantumsobriety.com

It's a working collaboration between the artist and the client or collector. The process of commissioning a private painting can both be a simple and enjoyable one. It's a dialogue about carefully selected subject matters, colour palettes, content material and styles. She works to agreed timings and budget, inviting the client to see work in progress with updates of drawings or sketches along the way. What Is Manchego Cheese?

Manchego is a delicious Spanish hard cheese made of sheep’s milk and everyone loves it! Manchego cheese is only made in the La Mancha region of Spain, it’s the only place in the world where real Manchego can be made. There are also a few other conditions that make up the unique fingerprint of real Manchego cheese. One of these specifics is the main ingredient, it’s not a cow’s milk like a lovely Brie de Meaux, or a goat’s milk cheese like the neighbouring Catalan Mató. Manchego is a sheep’s milk cheese. And it’s been like that for a long time; Manchego has been made for thousands of years, literally, on the Iberian Peninsula. You probably don’t want to purchase foodstuffs age that far! However, there cheeses depending on how long they’ve things you should consider when buying Plate.

a thousand-year-old cheese. Very few are significant differences in Manchego been aged for. This is just one of the a wheel of Manchego from The Cheese

The most important consideration, though, is your plan for a Manchego meal. Manchego is just one part of the meal, but when you’ve got a cheese this good, you really should shape the entire meal around it.

17

How should you serve Manchego cheese? There are many ways to eat a classic cheese like Manchego, and it depends a bit on how your cheese has been aged. It’s easy with a nice Manchego Curado. This smooth, easy-eating cheese gives an interesting spin to a sandwich or a salad or as a perk up for a soup which is lacking a bit in flavour. How about a hot-dog variant – spicy chorizo in a bun with grated Manchego cheese on top? Or a Manchego, tomato and olive pizza? Manchego on your beef burger? Endless options with this flexible cheese. On the other hand, if you’ve got a Manchego Viejo, the intensity of the taste requires more forethought and respect. This is a cheese to savour for cheese’s sake, rather than as an adjunct to a larger meal. Serve it on a large platter with other classic Spanish products like a Jamón with green olives and with dulce de membrillo – the sweetness of the quinces is a gorgeous counterpoint to the sharpness of the cheese. Crusty bread ties the whole platter together. And, of course, you’ll need wine. Something with body is best to give it a chance against the strong Manchego – a Rioja Tempranillo is the perfect companion. For a different yet still delicious experience, a sherry is great, or even a Manzanilla if your taste buds run to that delicate Spanish taste.

For more information on Manchego or any other cheese, please contact Toby at The Cheese Plate or go to www.thecheeseplate.co.uk

Potato Potatoes are cheap, nutritious and naturally fat free. Great, versatile, food. A natural source of fibre and contribute to your recommended daily intake of several vitamins and minerals, including vitamin C and B6. Vitamin B6 has several important functions, including contributing to normal red blood cell formation, normal functioning of the nervous system and the reduction of tiredness and fatigue. So why is it then that over recent years the humble potato has had a bad rap? Which seems ridiculous considering it is a staple food for most of the world. From mash, baked, jacket, boiled and in salads, it is one food that never disappoints and is almost expected at every meal. Ten interesting Potato facts1. Potatoes were first eaten more than 6,000 years ago by indigenous people living in the Andes mountains of Peru. 2. The Incas measured time by how long it took for potatoes to cook. 3. Religious leaders denounced the potato because it wasn’t mentioned in the Bible. 4. Potatoes are the world’s fourth food staple – after wheat, corn and rice. 5. Potatoes are grown in more than 125 countries 6. Every year enough potatoes are grown worldwide to cover a four-lane motorway circling the world six times. 7. China is the world’s largest potato producer. 8. Namibians each eat an average of 110 kilograms of potatoes every year – not quite as much as the Germans consume. 9. In 1778 Prussia and Austria fought the Potato War in which each side tried to starve the other by consuming their potato crop. 10. During the Alaskan Klondike gold rush of the 1890’s, potatoes were so valued for their vitamin C content that miners traded them for gold. You can use our local food map or Marketplace offering produce from 530+ food producers and independent food stores, which can all be purchased online here. You can even join the food industry and grow your own the Crop for the Shop by selling excess produce to your local shop on the BigBarn map flagged with a rosette. All helping build a social, local, food industry to replace the ant-social national one.

Myths on Wine Over the years we have heard a lot of incorrect understandings on wine here and a few that need ironing out. 1. Sulphites causes headaches - People often say Red Wine causes more headaches than white wine due to higher sulphite content. This is not true. Sulphites, sulphur dioxide added to the wine to prevent oxidisation, can also be found as a preservative in many common daily foods. Contrary to popular beliefs, sulphites do not cause headaches. In fact, our bodies produce 1,000 mg of sulphites each day. However to those with asthmatic issues, sulphites can induce an allergic reaction. Red wines have less added sulphites than white wines as their grape skins have natural preservative ability. Cheaper, lower-alcohol white wines require more sulphites to prevent oxidation, but of course we do have a sulphite free wine from Bordeaux which so happens to be a natural wine at £17.50 from the stunning Suau vineyard. As for the headaches, dehydration is the main cause. To avoid a hangover and headache, drink in moderation! 2. Wine does not travel - You are on holiday with friends, by the pool, it is warm, the local salami tastes like nectar from the gods and in the glass is a white/red/rosé that was dispensed from a petrol pump at a Euro a litre. It tastes delicious, so you buy a few bottles, bring them home and open them at your next party. It tastes foul - the wine "has not travelled well". Wrong: it is you and your taste buds that have not travelled. Frankly, everything tastes good when you are relaxing on holiday. Context is everything when enjoying wine; mood and environment exert a powerful influence on how much pleasure you derive from a bottle. 3. Chill the White, room temperature for Red - Wine is a cocktail of aroma and flavour compounds, and temperature can have a big effect - chilling white wine to an icy temp can restrict its true character. As for red? Chill it if you want to, we tend to go by the colour of a wine, the lighter the colour on a red the more you can reduce the temperature, not too cold, just say 30-40 mins in a fridge. Grapes like pinot noir can be really refreshing chilled, and with a charcuterie platter on a hot day there’s nothing better. With Burgundy we start from £12.50, Domaine Charles Francois and fils, Passetoutgrain or stunning Are You Game, Fowles wines from Victoria, Australia at £15.50.
