How it all began… In the 1980s a fishing village nestled on the tip of the Riviera Nayarit, called Punta De Mita, was about to be transformed into one of the world’s most desired destinations. Years later, a visionary group was formed to create The St. Regis Punta Mita Resort. Service is a monologue, we decide how we want to do things and set our own standards for service. Hospitality, on the other hand, is a dialogue. To be on a guest´s side requires listening to that person with every sense, and following up with a thoughtful, gracious appropriate response. “It takes both great service and great hospitality to rise to the top” is an expression that defines Carl Emberson, the distinguished and prodigious General Manager at The St. Regis Punta Mita Resort on the Pacific coast of Mexico. Although his journey has taken him far from his native home of Fiji and summers at his grandmother’s in Tonga, the distinctive traits and passions developed from spending his childhood in the South Pacific paradise remain deeply engrained.

Emberson now oversees and leads the luxury property where he is often encountered dressed in resort casual wear, moving about with a spring in his step. He could easily be mistaken for a guest. Interacting with countless people each day is something he obviously enjoys. Resort guests, as well as his team, attest to his unassuming, engaging manner and relaxed presence. Carl Emberson clearly loves what he does and does it well.

The experiences have provided an enlightening immersion into the world of management, imagination, interpretation and innovation at luxury retreats. General Manager Emberson sits at the pinnacle of the collective elite. Carl Emberson’s energy, visions and passion may be young, but his experience and insights reveal a breadth of wisdom, training, focus and a mastery of the art of hospitality. After an education at St. Ignatius College, a secondary school in Australia, and Les Roches School of Hotel Management in Switzerland, Carl embarked on a unique hospitality adventure with his wife Sabine, who had also been a student at Les Roches. Prior to accepting the position at St. Regis Punta Mita, Emberson had been meandering worldwide, pursuing his passion and honing skills as a specialist in the hospitality industry for more a quarter of a century. This global adventure, born from the desire to do it all, has been a unique

I’ve lived and worked in many countries, have owned or managed restaurants, ran catering and corporate hospitality companies, hosted a TV cooking show, been a restaurant consultant, ran a ski resort and also ran an events company,” shared Emberson. Carl is guided by three keys to success that he discovered along the way: honestly follow your passion, truly accept that failure is not fatal, and always give through selfless acts of kindness. Leadership and success have been part of his life since childhood, as captain and mate of rugby and cricket teams and as the 1988 valedictorian at Les Roches International School of Hotel Management. Time at Le Roches added precipitously to his character and was a place where he was “inspired by the spirit of teamwork, spirit of solidarity, spirit of service, new friends and memorable moments.”

Antes de aceptar su posición en el The St. Regis Punta Mita Resort, Emberson ha viajado por todo el mundo en busca de su pasión y afinando sus capacidades como especialista en la industria de la hospitalidad por más de un cuarto de siglo. Esta experiencia global, nacida del deseo de hacerlo todo, ha sido un viaje único para un hotelero que vivido y trabajado en México, Argentina, Brasil, Uruguay, Inglaterra, Bélgica, Suiza, las Islas Fiji y Australia. Pase quince años con Hyatt Internacional y ahora ya llevo cinco años con Starwood. He vivido y trabajado en mucho países, he sido propietario y gerente de restaurantes, manejé un servicio de alimentación y hospitalidad corporativa, fui presentador en un programa televisivo de cocina, he sido consultor de restaurantes, administre un desarrollo de esquí y maneje una compañía de eventos nos compartió Emberson. Emberson has an uncanny ability to draw from what he has learned and experienced and utilize it to implement quality improvements. Personally, I think he possesses a rare and special intuitiveness that is part creativity and part magic. Oliver Wendall Holmes wrote, “A moment’s insight is sometimes worth a life’s experience.” Whatever the inspiration is that enables vision, Carl has it and is able to blend ingredients accumulated over time to fashion something that is brilliant. It is what sets him apart with a gifted few. The St. Regis Punta Mita Resort has risen to new heights since Emberson’s arrival in 2010. Building a strong team, developing successful innovative events, inaugurating programs and offerings, and establishing new

I couldn’t help but send Carl a note this year to share my exuberance, “Another natural one in a progression of what has indeed become a classic. Build it and they will come has never been more true. You created an image of what it could be and it is evolving to be even more. It is an amazing, wonderful celebration, so glad to have experienced the evolution and be with you to share a most magnificent event loaded with talent, style, grace and energy.” The Punta Mita Beach Festival, another Emberson production, continues to grow by leaps and bounds. Changes at the Resort have gathered awards as word spread and more guests visited. Executive Chef Gabriel Kolofón arrived in 2014 with a resume befitting the important and prestigious position at The St. Regis Punta Mita, a luxury resort known for its innovative cuisine. Chef Kolofón was happy to share his story that brought him to the shores of Punta Mita as executive chef, but was also eager to get back to work. On a daily basis, he applies his skills and talents honed through the years. He has been described as “creating and presenting food with simple sophistication and utilizing local ingredients to create unique haute cuisine that blends the traditional with a contemporary Latin flare.”

Cooking was something Chef Kolofón has enjoyed since he was a boy living in his parent’s home. After earning a degree as an Electrical Mechanical Technician and a short lived job with his father’s business making and supplying dental hardware, he embraced his older brother’s encouragement to explore and do what he really wanted. A culinary diploma in his home country of Argentina soon followed from The BUE Trainers Institute, as did the study of Classic Spanish Cuisine at Oviedo Restaurant and Classic French Cuisine at Park Hyatt in Buenos Aires. Waiter César Estrada‘s presence is immediately engaging. His easygoing demeanor revealed a genuinely sincere and gentle man whose relaxed manner and peaceful nature offered exceptional hospitality and good company. César demonstrated an in-depth knowledge of the menu offerings: their ingredients, preparation, and presentation. In addition he is well-versed on wines and liquors, particularly the many top-shelf tequila selections at Carolina. The 28 year old Tepic native enjoys learning, not only to be better at a job he loves but also to provide a memorable guest experience. César completed a five-year college program in tourism at the Autonomous University in Tepic, Mexico. His final year included cooking and food service internships in San Francisco, France, and San Miguel Allende.

The seaside casual eatery offers lunch, dinner and drinks at umbrella covered tables where you can nestle your feet in the sand. An open-sided old boat shaded by a thatched roof made of dried palm fronds, and colorfully decorated by area artist Marco Álvarez, serves as the kitchen and bar. Local fisherman deliver their fresh catch to the beach where resort chefs prepare a finger-licking seafood menu including grilled fish and lobster, shrimp and fish tacos, along with a variety of margaritas. Mary Mita is the newest addition to The St. Regis Punta Mita’s portfolio of dining experiences, bringing a unique and informal option to the luxury resort.

Geographically defined, Punta is a small, low portion of land that juts into the ocean like a point. For centuries local fisherman have gone to sea, beached their boats and brought in their catch at this place. The village of Punta de Mita was located along these shores until being moved to a nearby location on Banderas Bay in the 1970s. It has been suggested that Mita was the last name of one of the earliest families to live on this point. The historic importance of the area’s settlements dating back to 300 B.C and the folklore connected to it represent a profound essence of authenticity at The St. Regis Punta Mita Resort.

One such narrative tells the story of Jose, a renowned angler, who lived in a fishing community along these shores and went to sea from this same point where Mary Mita restaurant now stands. Jose’s young wife Maria prepared food and saw him off each day. Although squalls had been observed by people on the beach and fisherman reported high winds and heavy downpours offshore, no one saw Jose’s boat go down. He did not return that night, nor the next. worry. She walked the beach each morning and evening, determined to never give up hope or accept the fate of losing the one she loved, and resolved to be there when he returned. Cooking at night, preparing traditional Mexican recipes and bringing them to the beach each day to sell or trade for fresh caught seafood helped to pass the time and bring in money. The weeks turned to months. One morning she discovered a damaged boat that had washed ashore. It was similar to Jose’s boat, the Mary Mita, but was not her husband´s vessel. With the help of villagers she righted the boat. The partially buried hull, set above high tide line, was covered with a palm frond roof for protection from sun and rain. Maria set up shop on the beach to vend her home made menu. A barbecue and oven, fashioned with the help of neighbors carrying stones, enhanced what became a bustling business where Maria prepared and sold an assortment of dishes each day. Maria spent more time at the beach creating and serving what soon become known in the area as a delicious cuisine combining fresh local spices, vegetables, fruits and gifts from the sea. The story of her devotion and love spread far and wide.

Pronto agregó una parrilla casera y creció su negocio entre el pueblo que ya reconocía su amor por la cocina. La historia de su devoción y amor eterno se extendió y se convirtió en la leyenda de Mita Mary.

In 1934, Fernand Petiot became a bartender at the St. Regis Hotel, New York, bringing with him the “Bloody Mary”, a vodka and tomato juice drink he started making in Paris. It was in the St. Regis King Cole bar that Petiot perfected his original formula, adding salt, pepper, lemon, Tabasco and Worcestershire Sauce to create the drink that is beloved today.

Many key members are taking steps in furthering the altruistic spirit of the brand by providing daily healthdriven breakfast to students of the local alternative school ran and operated by PEACE Punta de Mita, and racing in our quarterly 5K Fun Runs, each with a different theme focus less on breaking records and more on becoming active and creating health and wellbeing awareness. PEACE and Fundación Punta de Mita are non-profit organizations centrally locatedin the Bay of Banderas, Mexico working to increase educational and economic opportunities through community development programs in the areas of education, environment, and animal health.

The Community House Program (Casa Comunidad) works with the public school system toprovide students with dynamic educational experiences; it also offers educational opportunities to youth and adults not enrolled in formal education. Initiatives include the following: • After-school programs and summer camps • In-school workshops in science and dance •Continuing education for adults • English and computer classes “Good travelers strive to educate themselves on the destinations they visit, and know they winwhen they contribute and engage in meaningful ways with local communities. Better yet, local populations win when the process of giving back is done carefully and thoughtfully.
