Tea
The quality of the tea you use cannot be understated. The better the tea, the better the cup. Use the very best tea you can afford
Temperature
An important step in the tea steeping process is the water and its temperature. Water that is too cool or too hot can dramatically impact the finished cup. Make sure to check at which temperature your tea needs to be steeped
Time
Different teas require different steeping times. Not allowing enough time for the leaves to imbue the flavor into the water or steeping too long may result in a bitter cup. Always follow the directions provided by your tea supplier

Lung Ching Tea also known as Dragonwell is produced by hand through a 10-part process. The side of West Lake in Zhejiang Province grows the tea used to produce Dragonwell Dragonwell is distinguished by its beautiful shape, emerald colour, scented smell and tending sweet floral character
The Story of Dragonwell Tea
In the People's Republic of China, mists and fog often compensate of insufficient rainfall, at the same time cloaking the gardens in secrecy. Here tea is produced according to ancient time tested methods and workers perform all tasks by hand, just like their ancestors.
The tealeaves that become Dragonwell (a.k.a. Lung Ching) are plucked before the Clear Light Festival or at the least before the spring rains have fallen. The choicest come from a part of the mountain called Lion's Peak, where plucking takes place before each tender shoot has more than one leaf.
Legend has it that in 250 AD a Taoist monk affirmed that there must be a dragon lurking in a certain spring not far from Hangchow. The monk implored the well dragon to come to the rescue of the poor farmers suffering a crippling drought. Instantly, the clouds came rushing in from every side and poured forth a timely rain. One account of this, an old temple adjoining the spring is known as Dragon's Well Monastery, and this tea derives its name from the same legend.

Dating back to 14th century China, this ceremony uses tea pets to bring good luck to the tea drinker These tiny creatures are made mainly of Zisha (Yixing purple clay). This clay is porous and absorbs the natural oils from tea.
It is important to care for and feed your tea pet. During the Gong Fu tea ceremony, the pets are nourished by pouring leftover tea over them. This can be the hot water used to warm up the teaware, the water used to rinse the tea leaves, or any leftover steeped tea

In the work bowl of a food processor, pulse together flour, granulated sugar, baking powder, salt, and cardamom until combined Add cold butter, and pulse until mixture resembles coarse crumbs. Transfer mixture to a large bowl. Add roasted pears and 1 cup half and half, folding in until mixture is combined and evenly moist. (If dough seems dry, add more half and half, 1 tablespoon at a time )

Turn out dough onto a lightly floured surface, and gently knead 4 to 5 times. Using a rolling pin, roll out dough to a 1 inch thickness. Using a 2 inch fluted square cutter, cut 12 scones from dough, rerolling scraps once. Place scones ½ inch apart on remaining prepared baking sheet.

In a mixing bowl, beat butter and confectioners sugar. Mix in eggs, vanilla, and salt until combined.Flour

Using a blender, finely grind slivered almonds and add to butter mixture.
Add flour and mix until thoroughly combined.

Divide dough into 2 discs and wrap in plastic. Place in refrigerator until firm, approximately 4 hours or overnight.
STEP 5
Roll dough. Using medium size and mini size cookie cutters, snowflakes for example. Cut out 2 medium size snowflake cookies.
STEP 6
Tip: Transfer cutouts to baking sheet before cutting out the center and make sure to dip cutter into flour before pressing into dough.
STEP 7
One cookie will be the base for the linzer sandwich. The other cookie will have the center cutout.
STEP 8
Use one mini cutter, snowflakes for example, and cuttout 1 center. Repeat this, creating sandwich sets with a variety of cookie cutters.
STEP 9
Place the mini cutouts on a separate baking sheet as they will bake faster. Bake at 350° for 8-10 minutes. Set cookies on a wire rack to cool.
STEP 10
Spread jam on each cookie base. Set all the top cookies on a sheet and dust evenly with confectioners sugar.

Spread jam on each cookie base.

Place tops onto preserve covered bases. These are your linzer sandwich cookies.

Store in a air-tight container for up to a week. If they last that long!

Using a stand mixer fitted with the paddle attachment, beat the butter and sugar together until light and fluffy Add in egg, almond extract, and vanilla extract until well combined.

In a medium mixing bowl, sift together flour, salt and baking powder. Slowly add to the wet ingredients, mixing until well combined

Roll dough in a ball and set aside Place in the fridge for 10 minutes (optional) Preheat oven to 350 degrees

Preheat oven to 400° Spray 30 wells of 2 (20 well) mini muffin pans* with cooking spray
Using a mandoline, cut 30 thin slices from short end of potato. Arrange slices over wells of prepared muffin pans.
Bake until potato slices are pliable, approximately 15 minutes. Press potato slices into wells so they conform to well shapes. Bake until crisp, approximately 15 minutes more. Let cool completely in muffin pans before removing.

Add 6 large eggs to a pot of cool water, then place them on the stove and boil them over MEDIUM heat for 20 minutes (that’s 20 minutes from when you turn the heat on to turning it off) Once boiled, place them in a bowl of cold water for 5 10 minutes.

Once the eggs are cool, remove the shells by carefully tapping around the center and peeling. Crack and peel very carefully so the egg is pristine and free of tears and dents.

Slice the eggs in half Carefully remove the yolks and place them in a mesh strainer above a bowl Push them through the strainer with a spoon This will break up the yolks and ensure that your filling is perfectly smooth when you mix in your other ingredients

In a mixing bowl, mix egg yolks, 1 tbsp mayonnaise, 1½ tsp spicy brown mustard, 1 tsp sour cream and a sprinkle of salt & pepper You want the texture of your filling to be like creamy hummus, so if it appears on the dry side, give it a taste, and see if it could use a little more mayo or mustard to make it more creamy
STEP 5
Use a pastry piping bag to fill the egg halves. Garnish with 2 3 pink peppercorns and 1 parsley leaf, each Make sure NOT to use real holly berries for your deviled eggs. Real holly berries are not edible like pink peppercorns.
