Add gin, vodka, simple syrup, and milk to a shaker. Add egg white last, then seal the shaker tightly and shake vigorously for about 5 seconds.

Add several ice cubes to the shaker, seal tightly, then shake vigorously again. Once the shaker has iced on the outside, keep shaking for a few more seconds to ensure you get a really creamy egg white froth.

Add the rooibos tea bag to a large mug. Fill it about halfway with hot water and let steep for 5 to 8 minutes or just as long as it takes to prepare the rest of the ingredients.

STEP 2

While the tea steeps, warm the almond milk in a saucepan over low heat. Transfer the warm almond milk to a blender and add the almond butter and coconut sugar. Blitz until smooth and frothy.

STEP 3

Remove the tea bag from the mug and pour the rich almond milk mixture over the top. Garnish with a sprinkle of your favorite warm spice.

Preheat oven to 400°. Grease a 12-well mini muffin pan with cooking spray.

STEP 2

Line a rimmed baking sheet with paper towels. Place potatoes on pre-pared baking sheet and let thaw. Press all excess moisture out of potatoes.

STEP 3 In a medium bowl, stir together thawed potatoes, Parmesan cheese, green onion, olive oil, ½ teaspoon salt, and pepper. Spoon 1½ tablespoons potato mixture into wells of prepared pan. Press potato mixture into bottom and up sides of wells.

STEP 4

Bake for 20 minutes. Add a Brie piece to each potato cup. Bake until Brie melts and potato cups are crispy and golden brown, approximately 5 minutes more.

STEP 5

Meanwhile, in a medium skillet, cook bacon over medium heat until crisp. Drain on paper towels. Crumble when cool. Reserve ½ teaspoon bacon grease in skillet. Add apple, fennel, red onion, brown sugar, vinegar, and remaining ¼ teaspoon salt. Sauté until soft and fragrant, 3 to 5 minutes.

STEP 6

Gently remove potato cups from pan. Top each potato cup with crumbled bacon and apple mixture.

Garnish with fennel fronds, if desired. Serve immediately.

Directions STEP 1

Preheat oven to 350°. Spray 21 wells of 2 (12-well) mini fluted cake pans with baking spray with flour.

STEP 2

In a large bowl, beat together butter and sugars with a mixer at medium speed until fluffy, 3 to 4 minutes, stopping to scrape sides of bowl. Add eggs, one at a time, beating well after each addition. Beat in vanilla extract.

STEP 3

Using a mortar and pestle or an electric spice grinder, grind tea leaves to a fine powder.

STEP 4

In a medium bowl, whisk together ground tea, flour, anise, salt, and baking soda. With mixer on low speed, gradually add flour mixture to butter mixture alternately with buttermilk, beginning and ending with flour mixture, beating just until combined after each addition.

Using a 3-tablespoon levered scoop, drop batter into prepared wells of muffin pan. Tap pan on counter to release any air bubbles.

Bake until edges are golden brown and a wooden pick inserted near centers comes out clean, 11 to 13 minutes. Let cool in pan for 10 minutes. Turn out cakes onto wire racks, and let cool completely.

STEP 8 Place Sweetened Whipped Cream in a piping bag fitted with a large open-star tip (Wilton #1M), and pipe a large rosette onto tops of cakes. Serve immediately.

CHESTNUT CAKE WITH CHOCOLATE CHIPS Directions STEP 1

Preheat the oven to 180°C (350°F) (without fan).

STEP 2

Grease a small bundt pan with non-stick baking spray, and then dust generously with flour. Tap the pan over the kitchen sink to remove the excess flour. (Note: I used a bundt pan with 1 litre / 4 cup capacity).

STEP 3

Whisk the eggwhites until stiff peaks form.

STEP 4

In a separate bowl, beat together the egg yolks, sweetened chestnut purée, and butter until you have a smooth mixture.

STEP 5

Fold through the flour, baking powder and salt. Gently fold through the eggwhites, one third at a time at a time, through the cake batter. Take care not to lose too much air.

Once all of the eggwhites have been added to the cake batter, gently fold through the chocolate chips.

STEP 7

Pour the batter into the prepared cake pan. Make sure there is at least 2 cm/1 inch space from the rim of the cake pan.

STEP 8

Bake for 40-50 minutes, or until a skewer inserted in the middle comes out clean.

STEP 9

Leave the the cake to cool on a wire rack for about 15 minutes before gently unmoulding the cake from the pan.

Leave the cake to cool completely on a wire rack. After the cake cools, dust with icing sugar (powdered sugar) before serving.

With oven rack positioned in center of oven, preheat oven to 350°F. Line small rimmed baking sheet with parchment paper. Arrange pecan halves in a single layer on the baking sheet. Toast the pecans in the preheated oven for about 7 minutes, flipping the pecans over once during the toasting process. Cool pecans slightly then transfer them to the bowl of a small food processor and grind the pecans to a very fine texture. In large bowl, combine the graham cracker crumbs or vanilla wafer crumbs or shortbread crumbs along with the icing sugar, ground pecans, and cocoa powder. Whisk the ingredients well to thoroughly combine. Transfer mixture to the bowl of a food processor. Add the rum, corn syrup, maple syrup, and vanilla. Pulse the food processor a few times, just until the wet ingredients are mixed in with the dry ingredients. Pinch off small bits of the mixture and form into balls, about ¾” – 1” in diameter. Place topping(s) of choice in small shallow bowl(s) and roll the balls in the topping(s). Place balls on waxed paper-lined rimmed baking sheet. Let rest at room temperature for about 30 minutes to allow the toppings to fully adhere to the balls then refrigerate until firm. If dipping the balls in melted chocolate, first refrigerate the balls for about 30-40 minutes. Melt half of the chocolate at a time in the top of a double boiler or heatproof bowl over a pot of simmering (not boiling) water. Using a teaspoon, or a spiral swirl candy dipper, dip the balls into the chocolate and swirl to coat. If using the spiral swirl dipper, gently tap the dipper tool on the side of the pot or bowl containing the melted chocolate to remove any excess chocolate from the dipped balls. Transfer dipped balls to a waxed paper-lined rimmed baking sheet. Melt remaining chocolate as needed to complete the dipping process for the remainder of the balls. Let balls rest at room temperature to set for approximately 30-40 minutes then refrigerate until firm. Store balls (both those rolled in toppings or dipped in chocolate) between layers of waxed paper in an airtight container. Keep refrigerated until needed, removing the balls from the refrigerator about 10 minutes before serving. May be frozen for longer storage.

In a large stockpot, bring 3 quarts water to a simmer over medium heat. Reduce heat to medium-low. Add chicken, tea leaves, and 2 teaspoons salt; cover and simmer until a meat thermometer inserted in thickest portion of chicken registers 165°, approximately 10 minutes. Remove chicken from liquid, and let cool completely. Strain tea leaves from liquid.

Using a sharp knife, chop and reserve 2 tablespoons steeped tea leaves.

In a large bowl, whisk together mayonnaise, parsley, 2 tablespoons reserved steeped tea leaves, and lemon juice.

STEP 4

Using a sharp knife, finely chop chicken. Add to mayonnaise mixture, stirring well. Add celery, grapes, onion, chives, pepper, and remaining 1 teaspoon salt, stirring well. Cover and refrigerate until ready to serve.

STEP 5

Spread a thick layer of chicken salad onto 5 bread slices. Top with remaining bread slices.

STEP 6

Using a serrated knife in a gentle sawing motion, trim and discard crusts from all sides of sandwiches. Cut each sandwich diagonally into 2 triangles. Serve immediately, or cover with damp paper towels, place in a covered container, and refrigerate until serving time.

Few companies have succeeded in producing such a wide variety of beautiful Christmas patterns. You would be forgiven if you thought this delightful pattern was a Flower of the Month December trio. It is, in fact, a pattern called Winter Garden. With the omission of the world December and the change of a backstamp, a whole “ new’ pattern was created in 1992. It was transformed from the Christmas Rose pattern forming one of the 12 in the Flower of the Month series . Since it was only produced that 1 year, distribution was far

less than some of the patterns manufactured over several years and therefore, much harder to come by.

Many collectors are familiar with Royal Albert’s Flower of the Month collection produced in the 1970s or even the series produced in the Hampton shape from the 1950s. In fact, there were 4 different iterations of the Flower of the Month series. This beautiful December cup comes from yet another series called Wildflowers of the Month. As another limited series, this set of 12 was only produced in 1987 and then

EGG SALAD IN PUFF PASTRY BASKETS Ingredients 4

Hard-cooked eggs, peeled

¼ tsp

Fine sea salt

3 tbsp

Mayonnaise

1 ½ tbsp Sour cream 1 ½ tbsp Dijon-style mustard 1 ½ tbsp Sweet pickle relish 1 (9.5-oz) Frozen puff pastry package cups, slightly thawed Garnish: minced fresh chives

Directions STEP 1 In the bowl of a food processor, combine eggs, salt, mayonnaise, sour cream, mustard, and pickle relish, pulsing until smooth. Cover, and refrigerate until cold, approximately 4 hours.

STEP 2

Preheat oven to 400°.

STEP 3

Line a rimmed baking sheet with parchment paper.

STEP 4

Place puff pastry cups 2 inches apart on prepared baking sheet.

STEP 5

Bake until golden brown, 10 to 15 minutes. Press center of cups down to create a cavity for the filling. Let cool completely.

STEP 6

Transfer egg mixture to a piping bag fitted with a medium open-star tip (Wilton #32). Pipe a decorative swirl into each puff pastry cup.

STEP 7

Garnish with chives, if desired. Serve immediately, or refrigerate, lightly covered, for up to 30 minutes before serving.
