John and Katina Hansen have been open for seven years and are a full service bakery. They make custom cakes for any occasion, and serve coffee, pastries and cookies that they make fresh everyday. At lunch they have salads and sandwiches that are made to order or are pre-prepared if you are in a hurry.

Katina’s family is Greek, so naturally you can find fresh spanikopita, baklava and Greek cookies, and when asked to cater an event Katina likes to cook currys, Indian food and any sort of Middle Eastern cuisine. They host cooking classes every Tuesday night that range from simple bread and cookie baking classes to rustic Italian and basic Thai. They might teach you how to make pasta from scratch, or make a traditional Bolognese sauce. Everything John and Katina do is seasonal, and this fall they will again be making and serving soups. For fall desserts you’ll be able to find Hendersonville apple pie and fresh baked pumpkin pies. Some of their more popular items are their fudge brownies with marshmallow frosting. They usually run out every day.

Katina is very creative with her decorating and loves it when customers bring in pictures they want on a cake or have an unusual idea. For the 150th anniversary of Transylvania county she made an 800 pound cake. While it was challenging, she had a lot of fun doing it.

Bracken Mountain Bakery also has a strong commitment to its customers. It has become a popular place for the locals to gather for coffee, croissants and companionship, and many new friendships have been formed at its tables. Over the years, many tourists have become such regular customers that they are welcomed as locals, too. In fact, several have now become residents of Brevard and claim that the bakery was influential on their decision on where to relocate! Bill and Debbie Tellman first acquired a taste for good bread while traveling (and in Bill’s case living) in Europe in the ‘70s and ‘80s. Bill was a chef, and began experimenting with bread-making in a restaurant. Bracken Mountain Bakery’s ovens were first fired in March 1995, and Bill’s dream was that the children of Brevard would grow up loving the breads and pastries from the bakery in their little town. Debbie and Bill have enjoyed watching infants teething on their organic dog biscuits, toddlers munching on cookies and hard rolls, elementary school kids asking for Sunflower Oat Bread for their school lunches, high school kids stopping in for an herb flat bread or a pesto parmesan baguette after school, and returning college students saying that the bakery is their first stop back in town.

Brighter Day Coffee is back and better than ever. They are now featuring Dy-

namite Roasting Company, a local roaster located in Black Mountain. All of their coffee is organic and Fair Trade. Brighter Day is very proud of the “Brighter Day Blend” that was created just for them. They also offer a variety of other blends, plus all of the other coffee house options such as lattes, cappuccino, espresso, chai, frappes, smoothies, and hot and iced teas.

Brighter Day Coffee has also added breakfast, lunch, and dinner menus with bagels, wraps, paninis, soups, salads and much more. Not to mention the bakery case that is always full of fresh baked goodies, including Terry’s coffee-maple glazed cinnamon bun topped with candied bacon. It can only be described as amazing.

The new owner, Terry Knihnicki, cares very much about customers having a great experience at Brighter Day. He has worked hard on creating a comfortable and clean atmosphere, with great food and coffee for you to come in and enjoy. He is big on supporting the community and buying local when possible. Brighter Day Coffee gives discounts to seniors, Brevard College, Blue Ridge Community College, on-duty Police and Fire Department staff, and veterans. This coffee shop has been a dream of his for a very long time. Terry retired from the Army out of Fort Bragg, after 21 years of service. He is originally from Massachusetts, but has lived all over. After retirement he moved here to be near the town of Mills River. When the opportunity to own and recreate Brighter Day presented itself to him and his wife, Wendy, it seemed without a doubt to be the perfect business for them. They look forward to doing their best to make Brighter Day Coffee an excellent addition to the Brevard community.

The Sunrise

The Sunrise Cafe, locally known as the bagel shop, is well known as the place to meet and have breakfast. Saturday mornings are usually hectic in this small restaurant that's across from Brevard College, but it's bustling atmosphere is part of its charm. Locals can be found drinking coffee on the porch with their dogs, and the staff are more than happy to fill up water bowls. College students wander in and out all day, and if you're local, you're sure to know someone in there. Owner Marisa Gariglio has owned The Sunrise Cafe for almost 16 years, and has 40 years of experience in the restaurant business.

The walls in Sunrise are covered in local artists' work and pet pictures, and it's brightly painted. Their menu is perhaps the most varied in town, from everyday specials on their board, to waffles, to bean burgers, to smoothies. Patrons often order items that can't be found on the menu, and Gariglio is happy to accommodate most combinations or substitutions. There is a variety of fresh bagels, and even more cream cheese flavors to choose from, as well as the abundant selection of organic coffees and teas. Gariglio can be found in the kitchen every day through lunch time, leading her crew of cooks. The Spinach Melt is one of the most popular menu items, and The Sunrise Cafe uses fresh local produce in all of their offerings whenever possible.

Hawg Wild BBQ, located right at the entrance to Pisgah National Forest, has been serving some of the best BBQ around

since the late 1900s. Locally owned and operated by native Transylvanians Don and Sandy Brown, Hawg Wild serves pork BBQ with sweet red sauce, and mouth watering Eastern N.C. style BBQ with sweet vinegar. In addition to the signature BBQ options, Hawg Wild also offers smoked chicken, beef and pork ribs, and options such as a variety of salads, burgers, fish, chicken, and appetizers, as well as pizza for the kids.

It all began for Don in the 1980s. Don went into the Air Force, and every Friday he worked on a tobacco farm. Each of those Fridays, there was a man named Mr. Davis who cooked barbecue behind his house in Pikeville. So every Friday, everyone would go eat barbecue - in fact everybody would get all excited about it. Don says, "I didn't know what the big deal was," about his first experience with the lip smacking cuisine. "I didn't even eat the first day. I think I ate part of the chicken and threw the pork away. But the next Friday came around and we went back to Mr. Davis's house, and I ate a little bit more. In a couple of weeks, come 11:30, my mouth would began watering. I was like, ‘Boys, let's go early so we can get ahead of the line.' It was eastern North Carolina style barbecue. I loved it."

It started as a neighborhood gathering place for great barbecue, fun and life-long memories, and now Hawg Wild hosts dinner parties, banquets and catering for any type of event. Wild Indigo Catering specializes in local, seasonal, and organic foods. Anne Somich, owner and chef, has been cooking and catering for the last fifteen years from California to North Carolina. Along with her husband, Mike, they grow a modest garden that gets bigger with every season. They follow organic standards, free of pesticides and chemicals, to ensure only quality foods. Each year they plant it full of herbs, edible and ornamental flowers, greens, and many delicious vegetables. They have a small flock of chickens that provide eggs and help to produce the compost that feeds the garden. This all supplements ingredients for the catering business and what they cannot grow they source locally and organically. Wild Indigo is a huge supporter of using locally grown and produced foods, from trout and grass-fed beef, to pork and goat cheese. Anne incorporates her belief in organic, seasonal food and the importance of sustainability into everything Wild Indigo offers. Spring Dinner To Benefit Farmers Market

With an emphasis on eating local, organic, seasonal food, Wild Indigo Catering and the Haen Gallery Brevard are proud to present “Spring Fling,” a Farm to Fork Dinner, on Saturday, May 17, from 5:30 to 9:30 p.m. The seven course themed dinner, presented by Wild Indigo Catering and held at the Haen Gallery Brevard in the Brevard Lumberyard Arts District, is part of an ongoing series of dinners that have been wildly successful for the Brevard-based catering company. February’s dinner, themed “Allure of the Aphrodisiac,” was attended by 50 local food lovers and the evening included exquisite food in addition to music and intermission entertainment by fire spinners.

May’s dinner will be the ultimate experience of the gastronomical and visual arts intermixed with art, live music, and surprise entertainment. It will feature spring-inspired culinary creations by local chefs Anne Somich, Kate Renner, and Neal Mitchell. Dishes will showcase the bounty of local spring vegetables complemented by locally raised meats, including delights such as strawberries, ramps, early peas, rhubarb, radishes, spring greens, edible flowers, mushrooms, spring herbs like nettle, mint and chives, local trout and chicken, and so much more.

Seats are $75 each and a portion from each ticket sale will be donated to the Transylvania Farmers Market. Non-alcoholic beverages will be served at the dinner, and participants are encouraged to BYOB. There is limited seating so tickets must be purchased in advance. The Cardinal Drive In is a nostalgic landmark that transports you back in time to the 1950s, when waitresses brought your meal to you in your vehicle. This year marks the 37-year anniversary for Cardinal, which has been a landmark and frequented establishment for both locals and tourists. Especially well known for their delicious milkshakes and malts, Cardinal uses fresh fruit and ice cream. Becky Shelton bought Cardinal approximately four years ago, and had been an employee for over 20 years prior to that - and she's worked to maintain all of the great qualities that the drive-in has been known for. Cardinal runs specials frequently, so head on over and try a Cardinal Burger, Chili Cheese Coney, homemade onion rings (made with Vidalia onions), or their famous milkshakes. New menu items have been added, such as the Spicy Chicken Sandwich, and there are rotating new milkshake flavors that are added regularly. If you'd rather head inside than order from your car, then you can enjoy the interior that was remodeled two years ago. Through the remodel, Cardinal fortunately maintained their signature "telephones" that are used to place an order from the booth to the kitchen, and have often been a special treat for kids to use.

Subway Kevin Duval has owned the Subway franchise in the Forest Gate Shopping Center for 20 years. He has been in the hotel and restaurant business for 30 years and lived all across North Carolina. He settled in Brevard because he loved it and wanted to raise a family here. Duval wanted to know the parents of his son’s friends and loves that everywhere he goes he’ll bump into someone he knows. Chris and Stacy Gandolfo are the third owners of Hobnob. They bought it in 2008 from Marc of Marco Trattoria and hired long time chef friend John Strauss to revamp their menu. Strauss is from Baltimore, Md., a town well known for its seafood and his passion for it is evident in their new fall menu. Offering all you can eat mussels on Thursdays and dollar oysters fried, raw and Rockefeller on Fridays, Chef Strauss is trying to tone down the pricing on some of their entrees but will still be buying everything local. His fish is brought in fresh off the boat from Charleston, S.C. and he can be found every Saturday at the farmers market stocking up on produce and searching for new sellers. Strauss studied at the Western Culinary Institute, but started in the restaurant business at 15 and has worked his way from dishwasher to head chef. He also oversees the Gandolfo’s cafe venture at the Cradle of Forestry, the Hobnob Cafe. The cafe is open May 1 until the first of November.

Mayberry’s Soup and Sandwiches

What do you do when you lose your job in the middle of the Great Recession? You start a restaurant. Most people thought they were just a little bit crazy, but it worked. Jonathan and Kelli McLeod are the main chefs, and have had a passion for food their whole lives. They didn't have formal training, but have learned the hard way: through time, diligence, and a continuing sincere desire to make the best food they can. Mayberry's just celebrated their 4th birthday on April 10 and Kelli and Jonathan keep fine tuning existing recipes and creating new ones.

Mayberry's does serve dinner entrees, and although it may be short, the dinner menu is delicious. Primarily comfort food with a couple of surprise high-end entrees, they still keep everything under $15.

At Mayberry's, they make everything in-house - they are not a deli, and they roast everything on-site, chop up the potatoes for the soup, and make and sell their own sauces. They try their hardest to do what they do while still keeping their prices reasonable for high quality. Some of the best chefs in the world will tell you that simple food can be the best food; it should speak for itself, and this is the philosophy at Mayberry's.

At Mayberry's, all recipes are created in-house or inherited from family. Some of the family recipes are a century old, and are guarded secrets. They don't claim to be fancy, but their recipes are tried and true.

Marc Dambax began his career as a chef unexpectedly. Living in Charleston, S.C. in 1991, he had bought a sailboat, planning to sail back to his home country of France. He realized what an expense this was going to be and went to work in French restaurants in Charleston, where he quickly moved up from dishwasher to chef. During his tenure in Charleston, he became the owner of Market East Bistro, which was a top ten restaurant in Charleston for some time. After selling that restaurant, his wife Shellie’s classmate at the time owned the Hobnob. She lost her chef unexpectedly, and asked Dambax if he would work for her that summer. He did, and wound up buying the restaurant from her. Dambax and his wife ran the Hobnob for eight years, selling it in the end to the Hobnob’s current owners.

Dambax and his family then moved to France for one year to be close to his family. They wanted to move back to Brevard, and upon their arrival could not find work. The restaurant Maple was for sale, which they bought and transformed into Marco Trattoria.

Shellie has done the painting and art work in the restaurant, and Dambax is the head chef. Dambax loves braised food, from chicken to lamb. Some of his favorite dishes are Osso Bucco and sushi. In his kitchen are fresh pesto made daily and always homemade marinara. He caters parties and more, and will also cook for private clients.

Pisgah Fish Camp has been a family affair since 1967, when Dan

Hawkins affixed the name above the door of the old Brevard Country Club, and began serving his family-style, country-style meals. Two years later, Dan moved his growing restaurant four miles north, to the entrance to Pisgah National Forest. “People told me I was crazy,” he recalled later. “They said no one would drive that far out of Brevard to eat.”

But they did, and for 47 years the Fish Camp has been a Transylvania tradition for residents and visitors alike. From humble beginnings as a paper-plate, all-you-can-eat restaurant, the Fish Camp now offers a remarkable variety of choices, with grilled and broiled entrees, steaks, chicken and sandwiches, fresh salad and hot bars, fresh desserts and appetizers, and daily and weekly specials.

The Fish Camp's most popular items remain the same as in 1967, though, as flounder and Calabash-style shrimp represent over 50 percent of total orders. And understandably so - their skinless Alaskan flounder is a grade above the North Atlantic product served in other seafood restaurants, and their shrimp comes from domestic harvests, often from coastal North Carolina. And they serve a lot of it – in a typical week, the Fish Camp serves over a ton of seafood to their customers. Best of all, the restaurant has remained a family enterprise, though Dan Hawkins passed away two years ago. Over the years, each of Dan's four children - Dana, Mike, Jeanne, and Chris - have operated one or more of the company's restaurants, and you are likely to see one or more of them each time you stop in.

The Phoenix is Brevard’s only Farm to Table Restaurant. They are proud to support our local farmers, sourcing their food from Busy Bee Farm, Hickory Nut Gap Farm, East Fork Farm, Alfred Owen, and Morningside Farm. Kiwi Gelato has been making gelato in Brevard since 2007, and strives to produce gelato that is as close to Italian gelato as

you can get, in Brevard, given it is made by a New Zealander. To that end, the owners, Richard and Heather Layton, were trained by Italians, use Italian machines, and source some of their ingredients from Italy. Flavors that people understand sell best, such as chocolate, vanilla, strawberry, and cappuccino, but that does not stop Kiwi Gelato from trying out some slightly less traditional options as well. Avocado cilantro and lime, olive oil with sea salt, chipotle chili and blueberry.

While Gelato is what Kiwi Gelato is best known for, they also serve coffee with a very New Zealand taste to it, including Flat Whites. A Flat White is a coffee beverage developed in Australia and New Zealand in the 1980s. It is prepared by pouring micro foam steamed milk over a double shot of espresso. It is somewhat similar to the cappuccino or the latte, although smaller in volume, therefore having a higher proportion of coffee to milk, and the milk is more velvety in consistency – allowing the espresso to dominate the flavor, while being supported by the milk. Some frequently asked questions at Kiwi Gelato:

How exactly is gelato different from American style ice cream? There are three main differences - 1. We do not use heavy cream, or we use very little, thus there is much less butterfat in gelato than in ice cream, and there is more intense flavor (less cream flavor). 2. There is less “air” in gelato. It is smoother because of the process of churning and freezing at the same time, plus less butterfat allows for more room and less “buildup.” 3. It is kept at a different temperature than regular ice-cream. What is a Kiwi? Kiwis are nocturnal flightless birds endemic to New Zealand. Pescados

Pescados has been a staple in Brevard for 11 years, and they are especially known for their blackened fish burritos and guacamole that is made fresh daily. With more than 50 vendors in 2014, the market offers fresh produce, meat, poultry, trout, eggs, honey, goat cheese, breakfast items like biscuits, burritos and bagels, coffee, mushrooms, plants, herbs, cut flowers, baked goods (including gluten-free), jams and jellies, oils and vinegars, prepared foods, and a variety of handcrafted and artisan items.

Throughout the year, the Market will host special events, cooking demos by local chefs, educational and nutritional classes, activities for kids, and live music weekly. Educational classes and cooking demos will include how to break down a whole chicken, how to fillet a fish, how to use unique produce, and how to cook healthy dishes with local, seasonal produce that can be found at the market.

Other events include free massages and giveaways for moms on Mother’s Day weekend, a Health Fair on June 7 with health education and fitness classes, a morning of free local grilled meat samples for Father’s Day weekend, and much more.

Throughout the season there will be a bounty of produce for customers to taste test, including trying a green cucumber versus a yellow one, taste testing heirloom tomatoes, or tasting a dozen different types of apples that are grown in our own county. Whistlestop Market is a produce market that specializes in providing fresh local foods to their customers. Located in

Cedar Mountain, they have been family owned and operated since 2003. Charles and Jane Rhodes purchased the business in 2003, after moving here from Charleston, SC where they were formerly in the medical profession. Pisgah Fish Camp’s Mike Hawkins shares his recipe for a local specialty - fresh mountain trout: Grilled Trout with Lemon Parsley Butter

Directions Sautee butter, parsley and juice from the 1/2 a lemon, and hold while grilling trout. Place trout, inside down, on grill for 3 minutes, or until lightly brown. Then flip trout, add butter/parsley sautee, and salt and pepper to taste. Grill for another 3 minutes, or until lightly brown. Your trout is done when the meat resists flaking, but is firming. Be careful not to overcook, and remember that the trout continues to cook after you take it off the grill. This is a simple yet delicious preparation of a native mountain delicacy.

HOT CRAB DIP

The Proper Pot’s Beth Canady shares a favorite recipe that she and her husband, Larry, frequently serve at parties: Hot Crab Dip

Ingredients

1 10oz fresh mountain trout, butterfly fillet 1/2 fresh lemon 4 tablespoons chopped parsley (fine) 1/3 cup butter Salt Pepper

Ingredients 8 oz lump crab meat 8 oz cream cheese 3-4 Tbsp Rothschild Onion Blossom Horseradish (or to taste) 1/4 cup grated parmesan cheese

Directions Blend all ingredients and fill an oven safe casserole or bowl. Top with more grated parmesan. Bake at 350 for twenty minutes until hot and bubbly. Serve with crackers or toasted baguette slices.

PORK CHOP

The Square Root’s Chef Adam shares one of his favorite recipes: Grilled Bone-in Pork Chop over Sweet Potato Bacon Hash, topped with Vanilla Maple Bacon Butter

Directions Season and Grill Pork Chop to your liking. Sautee red onions over med-high heat until they are translucent. Add raw bacon and diced sweet potatoes. Brown sweet potatoes and cook until bacon is crispy. Finish with chopped scallions (This completes your Sweet Potato Bacon Hash). Place bacon fat in food processor with softened butter.

After processing, add a little maple syrup to the Compound Butter. Scrape the seeds from a vanilla bean into the butter and finish with parsley. Serve Pork Chop over the Sweet Potato Hash and top with Vanilla Maple Bacon Butter. Garnish with local micro greens, as we do from our garden.

1 Cup Tri-colored Quinoa 2 Cups Water 1 Cup Raw Sunflower Seeds 1/4 Cup Raw Flax Seeds 2 Organic Tomatoes, Diced 2 Large Organic Cucumbers, Chopped 1/2 Cup Chopped Fresh Cilantro 1 Organic Red Bell Pepper, Diced 1 Organic Green Bell Pepper, Diced 1/2 Cup Organic Snow Peas Approx. 1/4 Cup Organic Extra Virgin Olive Oil Fresh Squeezed Juice from 3 Organic Lemons Himalayan or Celtic Sea Salt Organic Black Pepper

Directions

Bring 2 cups of water to a boil, add 1 cup of quinoa. Reduce heat and simmer for approximately 20 minutes. Let quinoa chill before adding veggies. Steam snow peas and bell peppers until soft. To chilled quinoa, add steamed and fresh veggies. Mix together. In a separate bowl, combine olive oil, lemon juice, salt and pepper. Add dressing to Stella’s Quinoa Garden Salad to taste.

JAP CHAE

local chefs share their favorite recipes

Eden-Out Chef Chris Sharpe shares one of his favorite recipes for Jap Chae.

Ingredients

Jap Chae is a traditional meal served during family gatherings in Korea. Usually vegetables including shitake mushrooms and Asian greens are sautéed in garlic, oil and onion with mirin and tamari and finished with glass noodles made with a sweet potato starch and scallions. Eden-Out decided to remake this with noodles from a raw sweet potato. The noodles are cut from daikon, carrot, sweet potato, and zucchini. The first three are massaged with a mixture of sea salt, tamari and agave. We allow them to sit for a few hours to soften and marinate. The zucchini also is set to sweat for an hour or two with salt so the sauce isn’t too runny.

Cut trimmed shitake into thin, long strips. Mix mirin and agave and half of the tamari, sesame and miso and put in bowl with the shitake to marinate. Cut greens into long strips and salt and set to sweat. Cut sweet potato, daikon and carrot into long thin strips like a fettuccini noodle and mix with other tamari and salt to sweat. Add red pepper cut into long thin slices to the mix. Cut zucchini into similar noodles. Mix together and enjoy!
