NEW ZEALAND WINE VARIETIES Pinot Noir Pinot Noir is New Zealand’s second most planted grape variety. New Zealand Pinot Noirs are gaining traction on international markets as the vines become older and winemakers become smarter at growing and making it. The variety is well suited to the cooler, maritime influenced climate thriving in the warm days, cool nights and lower humidity of the South Island or Wairarapa. This is an early maturing grape variety which can grow as far south as Otago where it makes up about 70% of the grapes. Pinot Noir is a grape that does not naturally develop high levels of colour and tannin, and thus is likely to produce a wine of light to medium body. Pinot Noir wines do however, have rewarding taste sensations, an interesting array of primary and secondary fruit characters, and in the best wines, a mouth feel which rivals heavier wines made from Cabernet Sauvignon and Shiraz. Primary fruit flavours can range from strawberry to cherry and plum turning to mushroom and earthy characters with time. The best are rich, soft and mouth-filling with an appealing fruit sweetness. Because Pinot Noir is generally lighter and varies in intensity it is very versatile when matching with food. Often in summer, the French will very lightly chill a Pinot Noir for middle-of-the-day drinking.
There are more than 1400 different grape varieties available to the winemaker, but in New Zealand we concentrate on about 10 varieties. Merlot and Cabernet Sauvignon Merlot is New Zealand’s second most important red variety.The steady growth of Merlot, in contrast to Cabernet Sauvignon, has seen a large increase in the number of Merlot dominant red blends now available in the market. Merlot adds softness and charm to a blend and is often used to moderate the more dominating influences of Cabernet Sauvignon. Merlot ripens about two weeks earlier than Cabernet Sauvignon and is therefore better suited to New Zealand’s cooler maritime climate. The wine is usually full bodied and displays a complex mix of spice, licorice, tobacco, smoke and earthy flavours. Because Cabernet Sauvignon is a late maturing variety it is best grown in the warmer grape growing regions. Hawkes Bay is ideal and accounts for three quarters of all plantings in New Zealand.
Syrah or Shiraz
Chardonnay
Shiraz (called Syrah in France) only makes up a tiny fraction of New Zealand’s vineyards. However, the variety is commonly found in New Zealand, as it is the main red variety of Australia, source of most of the wine imported into New Zealand. Plantings are concentrated around Hawkes Bay with the best wines coming from the hottest part of Hawkes Bay, Gimblett Rd or the neighbouring Ngatarawa Triangle. New Zealand examples can be stunning with flavours with pepper, spice and berry fruit flavours, whereas the Australian counterparts from warm regions have more blackberry, mulberry, plum, spice and earthy flavours.
Chardonnay is often labelled as the King of grapes. The wine is a reflection of its growing region, but also shows off the skill of the winemaker. The most common option is to age in oak to deliver those woody and vanilla flavours, the alternative is stainless steel to keep it clean and crisp. Ageing on the yeast can further add flavours, as well as allowing the wine to undergo a malolactic fermentation, a way of allowing the harsh acids to transform into soft acids. Chardonnay is always dry and is usually medium to fullbodied, it is New Zealand’s third most planted grape variety and is the only grape grown in all wine regions across the country. Chardonnay is a versatile wine when paired with food because of its dryness, healthy acidity, savoury flavours and varying intensity.
This grape variety is New Zealand’s most planted, most consumed, and most exported. The wine shows a mix of ripe, tropical fruit flavours and greener, grassier herbaceous characters. Sauvignon Blanc typically has a pungent aroma and zesty acidity. They are dry and light to medium-bodied. This variety grows in most regions, but Marlborough produces more Sauvignon Blanc than any other region, with unrivalled flavour intensity. Some Sauvignon Blancs are being matured in oak and given buttery flavours from malolactic fermentation. To enjoy the lifted flavours, Sauvignon Blancs are best consumed within two years of harvest.
Pinot Gris Gris is the French word for grey, Grigio is the same word in Italian, and it describes the sheen on the ripe grapes at harvest. Pinot Gris is the fastest growing white wine variety in New Zealand and is currently our fourth largest grape variety. Planted in almost every region of the country it is performing well but we are seeing the different styles emerge as the vines gain maturity. It has special significance in Otago where it is the second most planted grape variety. The colour in the skin of the grape can often cause a fuller, almost rose gold hue in the final wine.
Méthode Traditionnelle Méthode traditionnelle is the same process as méthode champenoise which is that process used in France to make Champagne. The wine is fermented twice. The first fermentation takes place in a stainless steel tank or barrel, as with many other wines. What sets méthode traditionnelle apart from other styles is a second fermentation that takes place in the bottle. This fermentation produces the carbon dioxide or bubble in the wine. Because the yeast that conduct the fermentation are left in the bottle for a minimum of one year, yeasty, bready flavours are imparted into the wine adding complexity.
