eatery in Kingscliff, headed up by celebrity chef and entrepreneur Steven Snow and his wife, Morgan Snow, also the restaurant’s sommelier and manager. The Snow’s philosophy is centred on a commitment to using organic produce and the very best local, linecaught fish and seafood. FINS heroes fresh whole fish and has delivered nearly 30 years of sustainable seafood dining with over two decades of consecutive Chefs Hats. Styled and elegant with seamless service, fresh creative cuisine and a tempting wine list, FINS’ flagship restaurant is partnered with FINS Plantation House in Duranbah, a stunning wedding and event venue set on a 65 acre fruit plantation with inland views of Wollumbin (Mount Warning) and coastal views to the east.

How does FINS use locally sourced ingredients, food and flavours? FINS has been showcasing local produce since its inception 29 years ago. We only serve local line-caught fish. Our home garden supplies FINS with many aromats including bay, lemon myrtle, curry and kaffir lime leaves as well as numerous herbs like lemon verbena, sage etc. Our famous Chilli as Anything is made utilising chillies, turmeric and ginger plus other flavourings from our garden.

Can you share with us a simple recipe that showcases what FINS is all about?

What’s your most ordered dish and why do you think this is? Snowy’s Fish – it is our most simply presented fish where every ingredient and cooking technique must be perfect to arrive at the correct texture and flavour. It’s also our owner Snowy’s dinner most nights.

Slice fish across the grain into ½ cm thick slices (approx. 8 slices per person). Season fish with sea salt and stand for 5 minutes.

Where do you eat out when not at your own restaurant? Home. Hastings Point headland or at friends’ houses. What do you love most about living in the Tweed? Produce, surf, people and the fact it has not (and hopefully never will) achieved the cool and concurrent crowds of our nearby neighbours.

600g firm white sashimi grade fish fillet (Spanish Mackerel, Mahi Mahi, Snapper, Blue Eye, Cobia) Fine sea salt 1 small sweet potato, steamed and cut into 2cm cubes 1 corn cob, steamed, kernels removed 1 Spanish onion, sliced finely into rings, steeped in ice water for 10 mins 1 large avocado, cubed 1 long red chilli, finely sliced ½ small bunch coriander leaves, finely sliced (optional) Tigers Milk 360ml fresh lime juice juice of one fresh orange 25ml fish sauce 80ml coconut water 40ml coconut milk 1tsp chilli paste (adjust heat to taste) 1tbsp palm sugar Place and blend all the ingredients in the bar blender

Chilli Paste makes approx. 30ml 3 long red chillies 4cm ginger, sliced finely 1 large clove organic garlic 30ml Brookfarm macadamia nut oil or vegetable oil Blend all ingredients until smooth. Add more oil if needed. To Serve:

Cover fish with Tigers Milk. It should not be swimming in Tigers Milk – just well moistened. Reserve a little for final dressing. If you have made too much it will keep for 3 – 5 days in the fridge. Leave fish to marinate for 3 minutes, ensuring it is well coated. Add sweet potato, corn, onion, coriander and sliced chilli. Mix to combine. Serve and finish with avocado and a drizzle of Tigers Milk

MEET A LOCAL Nestled at the base of the majestic Wollumbin (Mount Warning), MAVIS’S KITCHEN is a 25-acre former dairy farm that’s now home to a relaxed country-style restaurant, organic kitchen garden, eco-friendly B&B cabin accommodation and a popular wedding and events venue. Owners of Mavis’s Kitchen and Cabins, Peter and Charlie, bring a strong focus on family to the business, naming it after Charlie’s ‘legendary Mum’ Mavis, who taught him a love of food and the joy of sharing. The beautiful old Queenslander that houses the restaurant in Uki was actually Peter’s childhood home on the Gold Coast and then a restaurant that the guys ran there called Harley Street Brasserie. Opting for a tree change, they brought the building with them (in three pieces on board three trucks to be pieced back together where it currently sits!) and Mavis’s has now been in operation for over 10 years.

Whatever is left over is made into chutneys, jams and pickled products. Mavis’s Kitchen retails locally made products and we prefer all Tweed products to be on the menu. Attending community events with food artisans keeps us up to date with what’s available. What’s your most ordered dish and why do you think this is? Lamb is our signature dish, we cook this low and slow for 6-7 hours and it’s been a staple here for so long that regulars will bring friends to try it. Where do you eat out when not at your own restaurant? We love to eat at home mostly, with Charlie being a chef we are spoiled for choice. A couple of our favourite restaurants are Paper Daisy in Cabarita and Pipit in Pottsville. What do you love most about living in the Tweed? Apart from the obvious – the views – we also have everything we need here and love the collaborative nature of the food industry.

Sea salt flakes Cracked pepper 220ml Vincotto or balsamic glaze The first step is to wash beetroot and place in tray of water so the water covers at least half the beetroots, cover with foil and bake for 1½ to 2 hours depending on the size. Let them cool down (it’s better to roast your beetroot a day before). When they are cold, peel and cut in wedges (4 to 8 pieces depending on sizes). Add the beetroot wedges in a baking tray, add garlic, orange, red chilli, salt and pepper, olive oil and mint. Bake for 10 mins at 180 degrees Celcius. Remove from oven and pour Vincotto or balsamic glaze over while the beetroot is still hot. When the beetroot is at room temperature, they are ready to go in a salad! Add toasted pecans from our trees, marinated goats feta from our local suppliers and a few chopped mint leaves from Jacky’s garden. Enjoy the freshness of this dish!

Strong coffee and delectable bites abound at Tweed Heads, with Baked at Ancora a must-do for its menu as much as its setting on the Tweed River. Nearby, there’s also Ground Control’s eclectic warehouse roastery, Hymn’s relaxed vibes and Bread Social’s artisan baked goods.

For a nourishing start, try fresh flavours at New Leaf Cafe, a big brekky at Bacaro, some 70s style at Keith or drink in the 1920s ambience at Austral Cafe.

Fuel your day at Uki’s warm and wonderful Bastion Lane Espresso, set in a 1909 heritagelisted Post Office that also hosts art exhibitions (Art Post Uki).

Visit the Tweed Regional Museum and Tweed Regional Gallery & Margaret Olley Art Centre before taking the Numinbah Road west towards Tyalgum. En route, don’t miss Buck’s Farm in Chillingham, home to native and exotic fruits.

Time your visit for the monthly Uki Buttery Bazaar Markets, browse eclectic shops or drive out to Clarrie Hall Dam for a walk, kayak or spot of fishing.

A little further along the Tweed River in Chinderah is the irresistible Cubby Bakehouse and on-trend coffee caravan, Chinny Brew. Coffee needs met, head to Farm & Co in Cudgen for a nutritious breakfast starring just-picked organic produce. Journey across the river to Terranora for an early lunch at award-winning fish and chippery, Inky Squid, or head inland to experience Potager – A Kitchen Garden, set on a lush 10 acre farm in Carool. Meander back to Tumbulgum for an afternoon tour and tasting of gin and rum at Husk Distillers or take a self-guided walk to discover Murwillumbah’s Art Deco heritage, with dinner and overnight lodgings at the majestic Imperial Hotel.

Vibrant Tyalgum at the foothills of Wollumbin (Mt Warning) has a big heart and equally big reputation for mouth-watering high teas at charming Flutterbies. There’s also a gin bar, wood-fired pizza, patisserie, coffee roastery and sweet boutiques. Get your fill then follow the winding Oxley River back towards Bray Park, turning south to Uki. Stretch your legs along the short but picturesque Lyrebird Track in Wollumbin National Park before checking in to Mavis’s Kitchen and Cabins for the night or rest up at a nearby rainforest villa or farmstay. The iconic Mount Warning Hotel in Uki is open every day for dinner too.

Head on to the small and serene town of Burringbar, where a fossick at Heath’s Old Wares and Collectables will ready you for the cosy welcome at Elwood Cafe, a few steps down the road. Next up is Tweed Valley Whey Farmhouse Cheeses, where you can taste and buy artisan cheeses, sip milkshakes and try gelato, all made with milk from their happily pastured herd. Returning along the Pacific Motorway, refresh the palate on a Tropical Fruit World plantation tour or quench your thirst at Red Earth Brewery in Cudgen. Round out your Tweed country tour with an evening at Bistro 16 (Tweed Heads Bowls Club), your pick of venues at Twin Towns or savour Sardinian cuisine at Gallura Italian.
