STATE SWIM UNLEY
Making a Splash! Right in the heart of Unley Shopping Centre, is a busy, bustling, vibrant swim school! So, whether it’s to teach the kids water confidence, learn to swim, or get yourself making a splash with aquarobics, there’s a whole world of water right on your doorstep. We caught up with the State Swim Unley team to find out more.
Paul Mason, State Swim Unley business partner, had the vision to build South Australia’s first swimming school in a shopping complex. He built and established State Swim Unley in January 1998 and continues to be the General Manger for several of the State Swim businesses that he has also built in South Australia. Paul is passionate about the swimming business and is proud of State Swim being SA owned and employing over 200 hundred South Australians. State Swim teaches thousands of South Australian kids and adults to swim each year. Paul explained: “Our aim is that all of our swimmers should be able to swim 400 metres before they leave primary school. We want them to be confident and safe in the water.
THE UNLEY MAG. / ISSUE 01 • 2021
Our small, structured classes involve water familiarisation, formal stroke development, survival skills and fun. State Swim’s system is designed for all skill levels; beginner to accomplished competitor. As each child moves through our program, we have colourful certificates and stickers to celebrate their progress at each level. This keeps our young swimmer excited, motivated and committed. Our program also caters for adults with various aquarobic activities, lap swimming and adult learn to swim. Our pools are heated to a warm 32 degrees for the comfort of our students and use the latest technology in pool disinfection and circulation. State Swim Unley has been a ‘hidden’ gem here in the Unley Shopping Centre for the last 22 years, servicing the Unley community. We would like to welcome any newcomers and thank all of our regular swimmers for their support and friendship.”

Can you believe you only need a car licence to drive a houseboat worth a million dollars???? Its true!! After a week of doing school runs and hearing poor feedback from lunch box packing, sometimes the last thing I feel like doing on a weekend is packing up the family and going away. But the thing about travelling is as stressful as it can be to get yourself to the destination, there is a moment that we all live for, and it happens every time you go away. It’s that moment when you arrive, the kids are all unpacked and everyone has settled in. You sit back in your deck chair and you have that AHHHHHH moment… You relax... And that moment erases all the bad memories of screaming kids and claims that the school lunch I packed during the week would only attract one star on Trip Advisor!! My husband Cosi has been at the helm of South Aussie with Cosi for ten years and we love it. There is no other show in the world that does as many kilometers around SA as South Aussie with Cosi, and that of course means the kids and I are quite often away. Top of the travel list for me personally is a houseboat holiday. We were lucky enough to do one just before Christmas with four other couples. It was so relaxing. The locals often talk about that “River Time” feeling. That AHHHHHHH moment you feel when you completely immerse yourself into the Riverland. I found myself knee deep in Rivertime within an hour of arriving in
Renmark, it was so peaceful and the weather was perfect. It felt like we could have been in another world. Beautiful sunsets and a few glasses of wine with a platter, sitting on the top deck of the boat, was magical. Cosi loves to tell anyone that will listen that there are over 1,000 houseboats on the SA stretch of the Murray and a vast majority are available for hire. There are so many different types of house boats! You can find some lovely ones which are really affordable, or if you are after luxury and you want to go all out, your options are endless. One question Cosi is always asked, “do you need a boat license?” Guess what? No. In fact you don’t need any knowledge at all. The houseboat operator will guide you through everything you need to know before you start your river adventure. So, what’s to love about a houseboat holiday? EVERYTHING. It’s essentially a floating hotel where you get to choose the location you sleep each night. You can cruise the river and stop off at some amazing destinations, or you can just stay put and still have a ball. As a Mum I see houseboat trips as two separate holidays. You can take the kids and buddy up with another one or two families, or get a group of friends together and leave the children behind. Both are different but both are equally amazing. It would also be a fantastic girls trip. Sadly, many mums, myself included, are so guilty of putting everyone else’s needs ahead of our own. Sometimes we need to claw back some time for ourselves, and a houseboat with a group of girls is a great way to do exactly that.
Enjoy the river and have a fantastic time.

Everyday Style Tips: Hemlines to Flatter Straight hemlines can often cut you off at the wrong spot! We recommend you opt for asymmetric, uneven or scooped hemlines that add depth and interest, while flattering all shapes & sizes. When a garment has a straight hemline, you can break it up with a scarf ring, knot or side tuck to create this illusion. From Day to Night
Left to right Carolyn Dempster (Unley Store Manager) & Natalie Kiziridis (Serafina Area Manager)
Style your way through this season! Serafina is a South Australian family owned business that opened its first store in November 2010. It started as a costume jewelry business and has grown into a full fashion label that currently has 8 stores around Adelaide, stocking the in house SERAFINA clothing label along with a full range of accessories to finish off any outfit. The brand has evolved over the years by listening to the feedback and requests of customers and staff, to create a label that offers unique fashion that is fun, yet practical & comfortable for the everyday woman. They caught up with The Unley Mag. And shared their everyday top tips to keep us looking stylish and feeling fabulous through the Autumn/Winter Season.
Build your wardrobe with versatile pieces that can be transitioned from day to night, from the office to the restaurant. A wide leg pant is a key wardrobe staple – team with your favourite blouse or shirt & a pair of heels for a dressier occasion or pair them back with a basic tee, denim jacket & sneakers for a comfortable and fun weekend look! Accessorising your Kaftans Many of us have a statement kaftan – but their bold design and heavy beading can make it difficult to accessorise. Keep it simple by styling with a tonal earring or large silver/ gold hoops & let the kaftan be the focal point. Layering with Intent Transition items between seasons with layering techniques. Not only is layering practical as we head into the cooler months, it can also help to breathe new life into your wardrobe and repurpose summer styles. Long sleeve tees layered under any piece are an easy way to instantly add warmth to any outfit. We recommend using textured scarves & vests over blouses or lighter knits as the cooler weather hits, while layering a blazer or denim jacket over your favourite maxi dress can take it from summer to winter. The Lunch Club No one is expecting a Michelin Star establishment residing in your local shopping centre. What you do expect is a humble café with heart and soul and The Lunch Club has that in spades. An unassuming restaurant sitting in the centre of Unley Shopping Centre, The Lunch Club is all about producing a comforting atmosphere and a friendly environment. A business can’t survive on vibes alone though. To go along with this is a diverse menu that caters for breakfast, lunch, dessert and any kind of bite that you would like with your morning coffee. Here I have covered a couple of my favourite dishes and breakdown just what makes The Lunch Club great.

FO O D
The first thing you’ll notice about The Lunch Club menu is their range. From Salmon Florentine to Chicken Parmigiana and even Spinach and Mushroom Risotto, their selection goes beyond your ordinary café fare to provide a real experience with their breadth of options. So, whether you’re after a small snack or a long lunch, The Lunch Club has you covered but let’s get more into detail. What’s the best way to start the day? That’s right, breakfast. To start off things with a bang I went for The Lunch Club’s Egg Benedict. A breakfast staple but where this one comes into its own is with content. In fact, this is something you could say about all the dishes here and that is you always get a good feed. From the eggs, ham, sauce and everything in between the portions are generous. Which means you get more of what is, hands down, an amazing dish. Breakfast is the most important meal of the day so why skimp on it.
From those who know the establishment better than I do, I’ve been told their Vietnamese Chicken Salad is a local favourite and now I know why. Want something fresh, healthy and full of flavour? Then this is your go-to. With vermicelli noodles, grilled chicken, shredded carrot and cucumber, coriander and of course the Nuoc Cham dressing. This is the epitome of the salad that is both healthy and satisfying and again generous on the portions. This dish can be enjoyed anytime of the day and is suitable in any given situation. We always leave the sweetest to last so what else could it be other than dessert. The Lunch Club dessert bar is loaded with freshly made treats and cakes to tempt you. From cookies, to cheesecake and muffins and scones. You want it, they got it. The standout that comes to mind is the Mango Cheesecake. A distinctive mango flavour which is all kinds of sweet and tangy to get your tastebuds melting. This is the devilish dessert. For those of you wanting something a bit more muted their Banana Bread is still delightful without being nearly as sweet.

If you get the picture now you should see that The Lunch Club is the eatery that is well deserving of its place in the Unley Shopping Centre. It’s well supported, has plenty of fans and is looking to be around for many years to come. With that in mind if you’re still not fully convinced then you have plenty of time to head to The Lunch Club now and let the friendly staff there convince you themselves. Words Jonathan Tonkin

For the meatballs
For the sauce
• • • • • • • •
• 1/2 onion finely chopped • 2 cloves of garlic, minced • 2 tins crushed tomatoes (passata) • 3 tablespoons tomato paste • 1 teaspoon each of dried oregano (paprika and allspice) • 1 cup fresh basil leaves • 4 cups of vegetable stock • Salt & Pepper
1/2 onion 1 large carrot 1 large zucchini 500g mince of your choice 1 cup bread crumbs 1 egg (can implement vegan alternative) 1 teaspoon each of dried oregano, (paprika and allspice) Salt & Pepper
Step One In a food processor, blitz the onion, zucchini and carrot until finely chopped.
Step Six Pour in the vegetable stock and allow to come to the boil.
Step Two In a large mixing bowl, add in the onion, carrot and zucchini mixture along with the mince, oregano, paprika and allspice. Season well with salt and pepper then add in the breadcrumbs and egg if you are not using a vegan mince. Mix all the ingredients together well with your hands.
Step Seven Pour the stock over your meatballs and cover with foil. Cook in the middle shelf of your oven for 1-1.5 hours depending on the thickness of sauce you would prefer. Remove the foil at the half way point to allow the meatballs to crisp up slightly.
Step Three Roll the entire mixture into medium sized meatballs and place into a large baking tray ensuring you leave gaps between the meatballs. Step Four Pre-heat your oven to 180 degrees fan.
Step Eight Serve the baked meatballs with long subs and your favourite accompaniments. Step Nine These meatballs also pair perfectly with rice, pasta and couscous.
Step Five Meanwhile make the sauce by drizzling in a few tablespoons of olive oil into a large saucepan. Add in the onion and garlic and allow to soften whilst sautéing. Once softened add in passata and tomato paste. Season with salt and pepper then stir in the oregano, paprika and allspice. Place 5-6 large basil leaves into the pot, stir and cook for 3-5 minutes. All local produce, simple, easy and elegant with a glass of Champagne. 02 • I have recently had Chef Jake Kellie and Rose Adam make the Traditional Basque Cheese Cake with Goat Curd instead of sour cream, the taste is amazing, fresh and light! You can find this recipe on our website at Krislloyd.com.au or use any traditional Basque Cheese Cake recipe and swap out the sour cream. 03 • I am a big fan of serving one cheese on a cheese board. Choose a cheese that will be ripe when you want to serve it - determine this by feeling, smelling and if possible tasting the cheese. There is nothing more disappointing than serving THE UNLEY MAG. / ISSUE 01 • 2021
up a Brie or Camembert that is chalky and bland. Generally with a Brie or Camembert the closer the best before date the more likely you are to have a winner. If serving one cheese choose a generous portion. Cheeses that fly solo on a cheese plate well are Brie, Camembert, Comte, Triple Cream (superb with Champagne) and a good cloth wrapped Cheddar. Given your cheese offering will be simple splash out on some accompaniments such as chutneys, jellies, jams, pastes, nuts, baby vegetables and seasonal fresh fruit, which South Australia has an abundance of! 04 • Temperature can make or break your culinary experience. I set timers to remind me to take cheese out of the fridge to allow a generous rest in a cool pantry or room. The length to rest the cheese will depend on the size and thickness of the cheese. A typical Camembert around 40min on a 20C day, a wedge of Comte or Cheddar which is dense in texture around 400g 50 - 60min. I also like white wine served just off the chill, a 10 - 15 min period out of the fridge delivers a far more rounded full bouquet. Obviously take into account the weather and adjust your resting times accordingly.

05 • If you have bought a large wheel of cheese and it is unlikely you will use the whole wheel, cut a wedge and return the remainder to the fridge rather than have the whole wheel sitting out for hours. You can always top up if it has all gone. It is safer and the cheese will maintain its integrity. Avoid cheeses sitting out for hours and hours and then returning them to the fridge especially if it’s hot. 06 • Salads play a major role in our diet these days. Try baby beetroot which has been boiled with a little vinegar and sugar until tender, cool and thinly slice. Arrange on a platter wlanuts and crumbe soft goat milk chevre - the more the better! Finish with baby herbs, such as basil or flat leaf parsley, sea salt to taste and a generous amount of olive oil. Looks smart, tastes great. 07 • Try goat curd with your roast potatoes and maybe infused it with organic garlic and pepper. Goat curd the sophisticated sour cream. 08 • When cutting cheese wedges from larger wheels I like to scald the knife with boiling water. This prevents any contamination occurring and makes cutting super easy, watch it glide through! 09 • If you are buying a few wheels of cheese
always try and retain the original wrapper the cheese was bought in - cheese paper is designed especially for cheese and allows the cheese to breathe and not become sweaty. If the cheese paper is not available wax paper can be used. Store cheese in drawer compartments, which are the warmest and most humid part of the fridge, to avoid the cheese drying out. Depending on your fridge you may also need to put the cheese in a plastic container. 10 • Cheese is a great food to share, it can be as simple or as complicated as you want it to be. Try some of these and mix and match the different styles. My Aussie picks are Adele Blue, Alexandrina Aged Cheddar, Milawa Gold washed rind, La Casa del Formaggio fresh Burrata, Woodside Edith, Heidi Farm Raclette, Paris Creek Farm Camembert and Pyengana Cloth Bound cheddar. 11 • I recommend buying smaller quantities more often to avoid drying out. The various Farmers Markets around South Australia are the perfect place to buy cheese and other local produce for the entertaining table. Make sure you talk to your cheesemonger to buy the perfect cheese for your occasion, letting them know when you will be using the cheese. 12 • Cheese works with beverages other than wine: try Champagne, beer, cider, single malt whiskey and even Grappa. Have fun with the wonderful selection of cheeses available to us here is South Australia, experiment with some you may not have tried before, share them and enjoy them.

HOME
It’s the place we feel safe, the place where we can relax and the place that some of us have come to know all too well in the past year. The pandemic has taught us to appreciate the one thing that most people have taken for granted over the years … HOME! Design is something that is personable and open to one’s interpretation. We have seen a slight shift in trends over the last couple of years, however, this year I have found there to be a carry-over in trends from 2020, with reference to the use of raw and organic materials and textures providing slight rustic charm and elegance when in its presence.
In 2020 we saw a very strong trend with the use of natural timbers which will remain for 2021, paired with soft grey tones, rich tans, shades of mustard and terracotta. This colour palette when complimented with materials such as concrete, calcutta marble, terrazzo and subtle hints of brass and copper are only going to further elevate the rustic charm and elegant design style that I am expecting to see this year. Wallpaper has made a huge comeback over the last number of years and I feel that it will continue into 2021. Leafy prints and patterns are going to make a grand statement in any room they are used in with the addition of greenery; helping to create life and ambience yet also providing that seamless connection between the indoors and outdoors. This “seamless” transition is an absolute must have for homeowners and has become one of the core design fundamentals of a home.

ASK THE EXPERT
To wax or not to wax “To wax or not to wax?! And which wax to get? Don’t worry, Sarah Hajar from Essential Beauty Unley is here to answer our questions and keep us silky and smooth as the seasons change.”
What’s the difference between strip wax and hot wax? What is hot wax? At Essential Beauty, we’ve developed a unique hot wax formula made to be gentle on the skin – our Sensitive Hot Wax. It applies in a thin film (which is different to traditional hot wax), adhering to hairs you can see, and fine vellus hairs you can’t see! It has the grip on hair of strip wax but is made to be gentle on the skin and can help reduce redness and skin breakouts. What is strip wax? Strip wax is a very fast and effective method of waxing. Strip wax can remove short and stubborn hairs quickly and effectively, it is much faster when compared to hot wax. Our strip wax also contains minerals to help soothe and calm the skin, to assist in rapid recovery. As strip wax is so fast, it is more effective on large areas of the body such as legs, arms and back.
If strip wax is so fast and effective, why choose sensitive hot wax? If you usually break out after a wax. If you go quite red and spotty after a wax. If you have sensitive skin. If you are prone to skin lift. If you prefer a gentler bikini, Brazilian, face, underarm or eyebrow waxing experience. What hurts more strip wax or hot wax? Hot wax is good for strong hair in sensitive areas, such as the bikini, as the wax only grips the hairs and not the skin underneath. Many of our clients choose Sensitive Hot Wax for bikini or Brazilian waxing as they find it gentler. Sensitive Hot Wax is also popular for underarms and areas of the face and eyebrows.
Next time you’re booking a waxing appointment, book with Sensitive Hot Wax at Essential Beauty. Photographed Sarah Hajar THE UNLEY MAG. / ISSUE 01 • 2021

ASK THE EXPERT
How to boost your immune health... How often do we only think to give our immune system the attention it deserves once we are already run down or catch a virus we cannot shake? Our immune system has an important job in helping our body fight infection (microbes), and is made up of white blood cells, antibodies, bone marrow, the lymphatic system and more*. By caring for our immune health year-round, we may find it rewards us with overall better health, stronger defence against sickness, and quicker recovery if we do become unwell. We popped into TerryWhite Chemmart Unley, and caught up with pharmacist, Bich Huyen Vu, who shares her tips for helping to boost your immunity:
Wash your hands Washing thoroughly and frequently helps prevent the spread of germs. Get vaccinated Vaccinations help reduce the risk of catching a virus by allowing the body to create the antibodies needed to recognise and attack a virus if exposed to it. Different immunisations may be recommended based on age, health, lifestyle, and other factors. Speak to your TerryWhite Chemmart pharmacist about what may be right for you. Prioritise sleep Aiming for 7-9 hours of sleep each night may help maintain optimum health and boost mood. Nourishment As part of our immune system is in the digestive track, it’s important to look after it by eating a healthy, balanced diet including a variety of fresh fruit and vegetables, full of different immune-boosting vitamins and minerals. A good rule of thumb is to eat a rainbow of different coloured fruit and veggies, as your body may benefit from the variety of vitamins and nutrients contained in each.
Sunshine While some sunshine is important in helping us produce vitamin D, most people can absorb sufficient vitamin D with just a few minutes of sun exposure daily. If heading out, always remember to cover up, wear broadspectrum, water-resistant sunscreen, and avoid exposure when UV levels are 3 or higher. There are free apps you can download to check daily UV levels. Stress less Stress has a significant impact on the immune system and can affect body function if experienced chronically over time. Find healthy ways to deal with or reduce stress such as meditation, yoga, exercise, massage, reading, or art therapy. Finding ways to manage your stress may help to look after your mind, body, and soul.
It is no surprise that boosting our immune health comes down to making healthy lifestyle decisions, and we are here to support you with that. Your local TerryWhite Chemmart pharmacist is always on hand to chat about what you can be doing to better care for your immune and overall health. Pharmacist photographed Bich Huyen Vu

As we wave goodbye to summer, and its heat and humidity slowly turns to earlier sunsets and cooler, drier air, the seasonal change in weather has a larger impact on our skin than you may think. But, fear not, we sat down with Dr Ania Kritzinger (MBChB MMed HAK FRACGP) to talk about Skin Health and get her top tips.

Luminiq now open on King William Road, Unely is a modern, independently owned and run clinic with a team of fully accredited and experienced doctors, offering a range of services from GP and skin health, to aesthetic medicine and cosmeceuticals. Founded by female doctors, Dr Ania Kritzinger and Dr Shirley Clark, their vision is to provide quality holistic healthcare that is accessible to all with their state-of-the-art medical facilities and equipment. Dr Ania has extensive medical experience from her career in South Africa moved to Australia in 2008. Ania then became a Fellow of the Royal Australian College of General Practice in 2010 and has completed additional education in aesthetic medicine and skin cancer medication to follow her passion for Skin Care.
Do you need to spend a lot of money on skin health?
What is your best anti-aging tip? I often get asked this question and it actually is a really simple answer, you need to have a healthy diet, drink at least two litres of water a day and be sure to wear sunscreen, even when it might not look sunny outside!
No not at all, we can tailor a skin care regime to suit all budgets, starting from education on dietary changes, supplements and hydration or commencing a cosmeceutical skin care regime through to having a personalized treatment package.
What is the biggest skincare complaint your clients have?
How often should I have my skin checked for sun spots/ skin cancer?
We see clients that have a wide range of skin conditions, however the most prominent concerns are acne, dermatitis and sun damage.
This depends on each individual’s risk factors, sun exposure, skin type and age however usually an annual skin check is sufficient. If you have any changes to a pre-existing mole you should call your doctor and make an appointment to have it checked.
If you could recommend one treatment/ tip you should adopt now what would it be? I would again recommend the use of sunscreen and cosmeceuticals daily to nurture and nourish your skin.
How often should I exfoliate? Completely up to the individual! How often you choose to exfoliate is a personal preference. You can do a light exfoliation daily or a thorough exfoliation once a week. Exfoliating is beneficial for the removal of dead skin cells and reducing the accumulation of sebum helping to minimize acne and reveal fresh glowing skin.
Luminiq stocks two ranges of cosmeceuticals, ASAP and Dermaceuticals. Luminiq has experienced Dermal therapists, nurses and doctors who provide complimentary skin consultations to discuss which cosmeceuticals will benefit your skin type.
What are the biggest misconceptions around anti-ageing treatments?
What products should everyone have in their skin care routine?
co

THE UNLEY MAG. / ISSUE 01 • 2021
Everyone should use a cleanser, exfoliator, and a SPF50+ sunscreen with added minerals for extra protection. I also highly recommend using a vitamin B and C serum in the morning and a Vitamin A serum in the evenings, all can be purchased from Luminiq.

I think one of the biggest misconceptions around anti-ageing treatments would be that they are only for women or vain people. Skin care treatments are suitable and recommended for all ages and genders for a variety of skin conditions. Everyone can experience great benefits from a good skin care regime!

MEET TONY & MARK’S
Unley Business Insider
For over 40 years, the family-owned business, Tony and Mark’s has been providing South Australians with the finest produce, gourmet treats and beautiful flower arrangements. Unley Shopping Centre gave them a warm welcome as they opened their sixth store in January. We got up close and personal with Michael Capobianco, who manages the business with brothers, Frank and Paul.
1. What sets Tony and Mark’s apart from the rest of Adelaide’s independent fruit and veg industry? At Tony and Mark’s you buy directly from growers! We have a genuine passion for the industry with a team that prides themselves on superior quality and service. We have also diversified our offering to our customers to include floral, meat, seafood, baked goods, gourmet cheese and even in-house eateries. We also offer event floral & corporate catering.

2. Why did you choose Unley Shopping Centre as the next location for your sixth store? Unley is such a friendly place to work and live. The locals who shop in this centre have already made us feel right at home. Unley Shopping Centre has a great vibe and we have been made to feel so welcome already by other retailers and customers.
THE UNLEY MAG. / ISSUE 01 • 2021
3. How important is being part of a family business and what does working with family mean to you? Family business is everything to me. As with any business there are always ups and downs but the level of commitment and stability in our family business cannot be compared to other businesses. Our business is quite unique in that we have had many team members who have been with us for 10, 20 and even some for 30 plus years, and we consider these people as a part of our family.
4. What have you learnt being in the greengrocer industry? Fresh is everything. We must have our finger on the pulse every hour of every day to ensure we are buying the absolute freshest produce that we can offer to our customers at the best possible price. Efficiency is key. Working with fruit and vegetables has made us adopt the mindset to be more efficient in the other departments we have added onto the business.

5. How does it feel to see how you’ve expanded as a business and what are your plans for the business in the future? It is the greatest feeling to see your family business grow & knowing that the whole family benefits from everyone working together. As a family we have great plans for the future. We want to continue growing to execute our goal of offering the freshest quality produce at a fair price & offering the best possible service, all over South Australia.

6. For all of our lovely readers, what is the best produce to buy this Autumn?
7. With such a busy work life, what do you do to wind down and relax?
New season, freshly picked in March, Adelaide Hills apples and pears. They are so tasty and juicy!
When I’m not at work, I love just spending time with my two young kids. We can often be found hanging out and having fun at the playgrounds, on the tennis court and by the beach.
Also, Riverland grapes have the best varieties in Autumn.

GRANT WILCKENS, CEO
Discovery Parks
Grant Wilckens is the Chief Executive Officer and founder of Discovery Parks, Australia’s largest owner and operator of lifestyle, holiday and workforce accommodation parks. From a corporate finance background with Rothschild and 360 Capital Group, Grant has become a leading figure in the Australian accommodation park industry. There is no doubt the tourism industry is unrecognisable from this time last year. The Unley Mag. caught up with Grant over a coffee to find out how he has responded and navigated his company through COVID-19, and what this local Unley resident gets up to, away from the office and caravan! Words Grant Wilckens, CEO
60
B USI N E SS Q1. What inspired you to found Discovery Parks back in 2004? Our business began as a property investment business built on the model of buying properties to upgrade and then sell. I’m a numbers guy so the opportunity in this largely untapped and (at the time) non-corporatised industry was very appealing. Caravan parks were primarily independent ‘mum-and-dad’ operations and bringing them into a corporate portfolio was a clear gap. At the time I couldn’t have imagined that I’d be heading up a billion-dollar business by 2020 with over 60 owned properties and another 200+ licensed parks in our network, G’day Parks. Q2. Why did you choose Adelaide to start your business? I’m Adelaide born and bred and there’s no place I’d rather be. I’ve spent time interstate and overseas, but Adelaide is home. It’s unusual to have a tourism business of this scale based in Adelaide but that comes with its own set of benefits in attracting amazing local and interstate talent. We have properties all over the country and geographically it’s a convenient base to be able to travel from. We’re also so spoiled with the lifestyle and the pace of Adelaide - it’s a fantastic place to raise a family.
Q5. Are you concerned about the future of local tourism when international travel returns to a more ‘normal’, and how are you planning for that? COVID has been a springboard for a domestic tourism revival and people are discovering the wonders of our backyard more than ever before. We want to hold onto this momentum when international borders reopen. Enticing international visitors away from metro centres and out into the regions will be important as well as offering diverse experiences for different markets. We’ve been expanding our property portfolio to include more high-end experiential tourism offerings – from McCracken Country Club in SA to our latest acquisitions in Kings Canyon Resort in NT and El Questro in northern WA. Q6. What advice would you give to aspiring entrepreneurs? In business you have to take calculated risks and be ready to fail fast. My mantra is ‘aim, fire, adjust’, meaning set your aim high and go for it, but be ready to pivot when things don’t go to plan – and know that things won’t always go to plan. Over the years we’ve tried and failed a number of ventures, but you need the confidence to try new things and the grit to get back on track when things don’t work.
Q3. What impact has COVID-19 had on your business?
Q7. What’s the biggest risk you have taken?
It’s no secret that COVID hit the tourism industry hard. At the height of COVID we were forced to close to all but essential travellers in most of our properties which was stressful and had a lot of operational and financial implications.
During the GFC the business was still in its infancy and we came very close to going bankrupt. I took the risk to double down and pour my blood sweat and tears into building the portfolio and it paid off. However, it was a very close call and not one I’d ever want to re-live.
However, as Australia started to recover from COVID, we’ve seen a renewed interest in holidaying at home and road tripping. We’re very fortunate to be perfectly positioned to deliver experiences people are looking for right now. We offer self-contained accommodation in wide, open spaces and are incredibly COVID-safe. We’ve just had our busiest summer on record, and have used the rebound to make a number of exciting new acquisitions. In SA we bought McCracken Country Club and Hahndorf Resort prior to Christmas. Further afield we have just bought the iconic El Questro in WA along with Kings Canyon Resort in the NT along with a number of other properties along the east coast. It’s fair to say, we’re making hay while the sun shines. Q4. What lesson(s) has it taught you as a company leader? To be a great leader you need a great team and when crisis hits it’s about doing all you can for your people and the future of the business. I’m incredibly fortunate that we have built a strong leadership team in this business and that we take a proactive and agile approach to the everyday as well as crises. It’s meant we can weather one of our toughest storms and come out the other side stronger than ever. It’s also taught me about not putting all your eggs in one basket. Our resilience has been due to the diversity of our business; we’re not just tourism but a property acquisition and development company. We also run workforce accommodation for the resources sector and provide corporate accommodation. This mix protects our risk level in times of crisis.
Q8. 17 years ago, you transformed the holiday park sector, but what’s next for the caravan and camping industry? The great Aussie road trip is back on the agenda and camping is cool again! Australians are holidaying at home like never before and we expect regional travel and affordable holiday options to remain the holiday of choice. It’s going to be a very exciting 12 to 18 months as the industry rebounds, new markets try camping for the first time, and flexibility remains a priority. Q9. You’re an Unley local, what’s your favourite shop? SA Gourmet Meats in Unley Shopping Centre is a favourite. From snags for the barbie to beautiful Sunday roasts, a great butcher is an important part of any community shopping area. With Easter coming up I’d also have to say Baker’s Delight… who can go past the hot cross buns?! Q10. As a high profile and busy CEO, how do you find work/life balance? When you start a business from scratch and are still at the helm 17 years later, work/life balance is certainly tricky! It’s something I’ve got better at as the team around me has grown. Really, work/life balance for me is about family time, often at our parks. My family love going to the river to relax and ski – my son Seb is a talented barefoot skier. Q11. If you had to chose one… which is your favourite holiday park? It’s like choosing between children! My favourite SA park is Discovery Parks – Barossa Valley, nestled in the famous wine region with amazing camping, cabins and glamping facilities, plus a huge waterpark that my kids love. And I’m incredibly proud of award-winning Discovery Rottnest Island, our luxury glamping offering in WA, which we built in 2018.

STURT FOOTBALL CLUB
Double Blues, Go Green! From the 1st March, South Australia banned single-use plastics, and we all joined the movement to replace the waste. Sturt is the first football Club in Australia to be designated a plastic free precinct (under the Boomerang Alliance Plastic Free Places scheme, in partnership with the State Government). So, The Unley Mag. ran down the road, to Sturt Football Club, and heard from Sue Dewing, CEO, on how The Double Blues have made changes to reduce Adelaide’s plastic footprint. “Sturt Football Club through its Double Blues Go Green initiative aims to minimise landfill, reduce carbon emissions and improve our environment” Sue explained. “We continue to develop the Club in a sustainable capacity and will work closely with suppliers, vendors, partners and the community regarding the on and off field operations of the Club. We aim to encourage our supporters to engage with and commit themselves to the Club’s environmental, sustainability goals. From our first home match of 2021, “Bin Buddies” will assist spectators in choosing the right stream for their waste. We will educate home and away supporters alike to help us keep Unley Oval green.”
What We Do
What You Can Do
· Glass and drink containers are collected/sorted separately for recycling following match days by the Third Goodwood Scouts
Reduce single-use plastic
· Our canteen uses compostable cutlery and food containers and does not use plastic straws
· Utilise reusable drinking bottles and coffee cups
· Match day vendors must agree to aim to achieve the highest level of sustainable practices to help reduce the environmental impact
· Say no to the supply of plastic straws and disposable cutlery
· Refuse plastic packaging on merchandise and apparel
Outside of the Club we urge our supporters to:
· Avoid excessive food packaging · Use tote bags instead of plastic bags.
· We recycle all possible materials, such as paper, cardboard, soft plastics, printer cartridges, batteries plastics, glass, metal etc.
Ride a bike, walk or take public transport We all have a responsibility to reduce our carbon footprint and as a sporting Club we are pro-bike. It’s cheaper, healthier and—most of all— environmentally friendly. Public transport is another great way to travel to Unley Oval and cut down on emissions. With only a short walk to Unley Oval Adelaide Metro‘s bus network stops on Unley Road and Duthy Street.

HYGGE HEROES
Kindness Blooms We want to keep shining the spotlight on those that continue to cultivate kindness throughout our local community. Each issue, we will share stories of people and businesses that are helping shape our culture. Making a difference in your local area doesn’t have to be a big, time-consuming job; sometimes small acts of kindness can be just as impactful to someone else’s life. Not only does helping others make the world a better place, but it makes us feel good, too. That’s why we’ve rounded up our local heroes and can’t wait to share their stories with a sense of belonging and community. In our first issue, we catch up with Hygge Heroes, a notfor-profit initiative by local events business Hygge Studio, aiming to repurpose waste whilst also creating a positive social impact and brightening someone’s day. Led by Adelaide locals Rachel Evans and Lucy Temme, Hygge Studio is a creative hub for all

things styling, planning and floristry, specialising in bespoke events from weddings, activations and parties. Based in the Hygge Atrium on King William Road, the team have the expertise to do everything in-house, from floristry to graphic design, even crafting bespoke feature pieces such as bars or arbours to bring a bespoke element so your event is unlike the one before. We asked Rachel and Lucy what inspired them to start ‘Hygge Heroes’? “We acknowledge and recognise the impact the events industry can have on our environment, especially in terms of waste. By identifying ways to reuse and recycle existing materials, we are able to reduce our impact on the environment whilst also giving back to those who need it. “The Hygge Studio team are spreading the love amongst the wider Adelaide community by repurposing
pre-loved flowers from our client’s events and donating bouquets to those who serve us. As our team of florists create magical arrangements, full of fresh seasonal blooms for weddings and other large scale events that only last a couple of hours, we are hoping to create a positive change by saving the florals and giving them a second life post event.” “Hygge Heroes gives us and our clients the opportunity to thank businesses and organisations that serve our community. With a particular focus on the essential workers who have assisted the community throughout the pandemic and those who have been adversely affected by COVID-19, we have chosen to target organisations including but not limited to hospitals, aged-care facilities, women’s shelters, and schools. “Not only do we hope that our beautiful floral arrangements brighten the souls of our clients and their guests, but also those that hold a special and deserving place in our community.”
What an inspiring and fantastic way to spread positivity! If you have any stories about our local community or would like to be featured, please contact The Unley Mag. team: hello@theunleymag.com.au
