PARTY season has arrived and this year, we don’t need any excuse to get merry and push the boat out. In our third issue of The Unley Mag. we celebrate the art of entertaining, bask in the glory of summer fashion and fresh looks, get some expert advice on how to survive the silly season and look after our health, and watch out for 2022 trends. Our Fashion Editor, Alison, shares bright and breezy looks in a funfilled photoshoot with local legends, Sam Costello and Rebecca Morse, using key pieces and the latest fashion, all found here at Unley Shopping Centre. So, once we know what to wear, what are we serving up at the table? Fear not… Food Editor, Kris Lloyd, takes us on a culinary journey with Callum Hann and Themis Chryssidis and they share their favourite recipes for Christmas Day. So, with that sorted, it’s time to take care of the most important aspect of any celebration: the booze. Learn how to make no fail cocktails. Christmas Special with Tom & Sarah Siedlaczek from Bakers Delight Unley ‘Our Centre, Our People’ is a series of interviews featuring some of your favourite Unley Shopping Centre retailers. In this issue, we find out how the owners of Bakers Delight Unley, Tom & Sarah Siedlaczek celebrate Christmas!

Do you do a 1st of December or Christmas Eve Box? We do better! At Bakers Delight Unley, we do a wrapped Christmas cake and tart combo for all of the festive season. These are great gifts for everyone or can go in your Christmas Eve Box. When do you set up your tree? Straight after the Christmas pageant every year. My wife and the kids love Christmas, so they are always keen to put the decorations up as early as possible! What treats do you leave for Santa on Christmas Eve? Santa gets a fruit mince tart and a glass of milk (or a beer if he’s been good!) What’s your favourite Christmas movie? I love watching ‘The Grinch’ with my kids. What’s your all-time fave Christmas

carol/song? Good old Jingle bells and its many variations Do you have any secret Christmas recipes? The Lemon Cheers-Cake is going to be the star of Christmas dinner this year! (Recipe can be found to the right) What’s on the menu for Christmas Lunch? We are quite traditional with fish for Christmas eve and turkey/ham for Christmas day. Both of course served with some fresh Bakers Delight Dinner Rolls and this year we will be making Lemon Cheers-Cake (recipe found on bakersdelight.com.au) for dessert. What do you love the most about Christmas? Family time. Without a doubt, spending time with the family is the best part of the festive season.

How do you plan out your Christmas food shop? My wife plans everything down to a tee… I just do the jobs I get delegated! What does your Christmas tree look like? The kids decorated it… so it’s a bit haphazard but created with love. Tips on setting up the perfect Christmas Lunch? Prepare as much as possible the day before. This leads to a much easier day on Christmas and means you get to enjoy the day too! Do you dec your house out with Christmas decorations, or is it more simplistic? We definitely dec the house out! As previously mentioned, my wife and kids LOVE Christmas so our decorations can end up a little over the top!

My Studio Pilates Journey In 2017, I suffered a life-changing hamstring injury, my hamstring muscle tendon completely tore away from the bone, this injury is known as a Hamstring Avulsion. This resulted in a very long rehabilitation journey where I had to learn to walk again. My rehabilitation included daily physiotherapy sessions which brought me back to a point where I could comfortably walk again.

I am a dancer, I started as a young child, so exercise was always part of who I am, but after my injury, I was left terrified to exercise. I feared that I would reinjure myself or do even more damage to my body.

I gave myself a goal of 20 classes in 30 days, which equates to 5 classes per week! To challenge myself even further I booked 5.45 am classes to set myself up for the day. I am excited and proud to say I absolutely smashed the challenge! Reformer Pilates has not only changed my physical life, but it has also changed the way I now feel about exercising! The 30 Day Challenge was a great way for me to set goals for myself, before the challenge I was attending two or three classes a week. My goals were gaining fitness, strength, weight loss, and creating a positive attitude around exercise. One of my favourite parts of the challenge was putting myself first. Being a mum of three and wife to a man that

never stops means I wasn’t really putting myself first. Having that 45 minutes in the morning to focus on my mental and physical health felt amazing. I loved heading into the studio each morning to smiling, supportive faces who started to feel like friends.

I loved the accountability that is also involved in the challenge. You get this sense of accomplishment when you go and mark your name off the board after attending a class during the challenge. I have always found it so difficult to stay engaged with exercise classes, I would find them repetitive and start to get bored. That is one of the reasons I love Studio Pilates, there are so many different exercises and programs, it feels like no class is the same. I never thought I would be going into a class

hoping for feet in straps, I love the challenge it gives me, and who would have thought I’d be chasing that inner thigh burn! During the challenge, you also have access to amazing resources including recipes, nutrition guides, meal planners, and workout trackers. The team really does have your best interest at heart and are setting you up for success. After a class, I love to treat myself with a delicious cappuccino to kickstart my day from The Lunch Club in the Unley Shopping Centre, or if I am planning on sneaking in for a quick lunchtime class, I will head to The Lunch Club and have one of their scrumptious salads, my go-to is the Vietnamese chicken noodle salad! I like to think of myself as having effortless style and love my sunglasses to add drama to an outfit but not overtake my look, Cosi on the other hand needs practical polarisation that takes the glare off the road for his outback adventures. Something that also has enough style that the girls won’t complain about is also a plus. Cosi and I are also lucky enough to not need prescription sunglasses but for all of our friends that do it’s as easy as bringing your prescription in and the team can review and get you the perfect pair of sunnies to suit your needs. After an amazing session with the team I walked out with a new pair of stylish Celine black sunglasses that are going to be my summer staple, while Cosi picked up a pair of Maui Jim Castles that are sure to keep the kids happy!

You can never get enough of burger joints here in Adelaide or anywhere else for that matter. When Grill’d Burgers recently opened up their restaurant at Unley Shopping Centre, we knew we had to give them a try. They are all about top notch service and amazing high quality burgers made for all. The best part is they love taking care of their local community but we will get back to this in a second. While it’s still fresh in my head, I’d like to introduce you to some of the burgers I have had here. First of all, they cater to everyone’s need. Whether it’s a Chicken burger, Beef burger, Lamb burger or Vegan burger. You name it. You’re on a low carb lifestyle? No problem, they have low cal buns for your burger and trust me when I say, they are so moreish and delicious. You don’t even need to wonder if they provide gluten free option, of course they do! Let us start with a personal favourite. The Wagyu ‘Sir Truffle’.

Who’s a sucker for truffle here? I know I am. So, when I saw this on their menu, I knew I needed to get it. Using aged cheddar, cos lettuce, fresh basil and truffle mayo, this was an easy choice for us. We love truffle and definitely love wagyu. Simple burger with big truffle flavour. How many times did I say truffle here? That’s how much I love it and encourage you to get one for yourself. We also tried the ‘Hot Bird’ from the Chicken section. When it says hot, they really mean it. Bursting with jalapeño flavours and chilli relish that really kicks it up a notch, definitely not for the faint hearted! We love the addition of the Spanish onion, sour cream and roasted peppers. Topped with tasty cheese and cos lettuce. We picked the traditional bun for this one. We don’t often see a burger place with the option of lamb patties so when we saw this on the menu, we were quite intrigued. There were only 2 choices for the lamb and it was tough to pick. However, because we love our pickles and our lovely hostess suggested the ‘Mary’s Kebab’ we went along with it and were so impressed. Presentation wise, taste

wise and price wise! Mary’s Kebab came with cucumber, dill pickles, cos lettuce, tomato, Spanish onion, chilli relish and tahini mayo. We’re absolutely in love with this lamb based burger. Something different and it works. Our palates thank us for this treat. Juicy and tender, we are all for it. Now to be even more adventurous, we decided to try the plant based burger. We saw the new advertisement for Grill’d featuring “Fable” created by the one and only Heston Blumenthal. We have got to try this. Fable Burger patties are 100% plant based and made from real Shiitake mushrooms which naturally taste meaty. The three new Fable Burger at Grill’d are: Fable Southern BBQ, Fable Spicy Cheeseburger and Fable Truffle. We thought to go back to an original cheeseburger but this time with a vegan twist and since we are doing a healthier version of this burger, well why not pick the low cal buns to go with it. Honestly, we didn’t expect this to be a memorable one but boy we’ve never been so wrong! This was actually my favourite. Don’t be deceived by the look of their low cal buns. In fact, I think the two combined together are the best combination ever. You don’t feel bloated afterward and the ‘meaty’ mushrooms was out of this world, amazing! Tender, juicy and a hint of sweetness from the natural mushroom flavour when cooked right. Can’t leave without trying some sides. We got so excited when we saw that they do Zucchini chips. Even better when they do a mix share plate of their Grill’d potato fries, sweet potato and the zucchini chips. The kids were loving it.

Perfect for sharing and everybody gets their favourite chips! This platter also comes with 3 types of dips. Herbed mayo, sweet chilli mayo and Chipotle mayo. We also got some HFC chicken bites (Healthy Fried Chicken) they have 3 flavours and because they were for the kids we opted for the Natural bites and the Sticky Honey Soy bites. Next time we will make sure to come back for the Hot Bites! They come in a 6 or 9 pack. And for extra convenience each pack include a skewer for easy eating. Now going back to what I first mentioned in the beginning, Grill’d has always been about giving back to their community. So basically, after you’ve ordered 8 burgers, you have the chance to take a free burger or donate a meal to someone doing it tough in our communities. I just love that! Did you know that they are also liquor licensed? Beer, wine, cider and many more! See them at the bar to experience the full range. I just had the most delicious combo of the ‘Sir Truffle’ burger with Rekorderlig for the first time and can I just say that I can definitely get used to that. Kris is a self-taught South Australian Cheese Maker who has headed up Woodside Cheese Wrights in the Adelaide Hills for over 20 years. She is a familiar face around Unley Shopping Centre, and a wide selection of her cheese can be found in our stores. Whilst Kris’ career as a cheese maker may have started as an accident, she is now completely passionate about all things cheese, food, and wine. Each issue, The Unley Mag. invites you into Kris’ kitchen as she cooks up a storm with a guest chef, and they share mouth-watering recipes and top tips. I had the great pleasure of meeting Callum Hann and Themis Chryssidis many years ago. I can remember when Callum finished on MasterChef in 2010, he needed to borrow a cheese board and maybe some cheese too! He arrived on my doorstep with Adam Liaw (who won MasterChef in 2010). Needless to say, we took lots of photos with them and were in awe of both of them! I met Themis not long after that at CheeseFest where he generously graced our cooking demo stage entertaining the masses and has done so ever since. We have gone on to forge an excellent friendship enjoying many afternoons or evenings sharing lunches and dinners or working on projects together over the years. The talents these two have individually is nothing short of outstanding. What I love is that their teamwork and collaboration complement each other so well, and what

they have created in SPROUT is exceptional. Through their differences they can discover an exciting mix of ideas, recipes, and a richness of flavour that can only be explained by: Two heads are better than one! Callum has also gone on to create his own brand as a TV personality and presenter and has several books (I have them all). Themis is a qualified Nutritionist and Dietician, and his flair for presenting on stage and is a key part of the Sprout Cooking School experience that they have built together. Plus, both Cal and Themis are proud dads with two amazing ladies in their lives – and they make it all work! Callum and Themis have endless support for Local South Australian producers (myself included - thanks boys!) The care they take when choosing local ingredients for their recipes contributes to their food that is equal parts tasty, healthy, and accessible for all to enjoy. I have asked Callum and Themis to share their top 4 Christmas recipes with us and I am very excited to prepare these recipes in my kitchen this Christmas.

Method

Ingredients

PROSCIUTTO, PLUM AND BASIL BRUSCHETTA

(Serves 4 as a canapé) 100g goats curd 2 plums, cut into thin wedges 1 zucchini, finely shaved with a peeler or mandoline 1 tablespoon white balsamic vinegar (or lemon juice) 1 tablespoon olive oil, plus 1 tablespoon extra Pinch of salt 4 slices sourdough 1 garlic clove

Combine plums, zucchini, vinegar, one tablespoon oil and a pinch of salt in a large bowl. Set aside for flavours to develop.

8 slices of prosciutto ¼ bunch basil, leaves picked

Heat a griddle pan over high heat. Brush sourdough with remaining one tablespoon oil. Toast sourdough for 1-2 minutes each side or until lightly charred. Rub with garlic clove.

Arrange sourdough on a serving platter. Top with goats curd, plum, prosciutto and fresh basil.

BAKED SUMAC SALMON WITH TOMATO & CHICKPEA SALAD (Serves 4) 1.2kg side of salmon, skin off Pinch of salt 1 Bunch thyme, leaves picked Finely grated zest and juice of a lemon 300g heirloom tomatoes, sliced into assorted shapes and sizes 400g tin of chickpeas, drained and rinsed ½ red onion, thinly sliced

Preheat oven to 160°C(fanforced). Place the salmon on a lined baking tray and season with salt, thyme leaves and lemon zest. Bake salmon for 10-12 minutes or until the flesh flakes away easily.

2 tablespoons cranberries ½ bunch of oregano, leaves picked 2 tablespoons olive oil 2 tablespoons fish sauce ½ teaspoon caster sugar

Meanwhile, combine tomatoes, chickpeas, red onion, cranberries and oregano leaves in a large bowl. Stir together olive oil, fish sauce, caster sugar and the lemon juice in a small bowl. Pour dressing over salad and toss to coat.

GRILLED PRAWNS WITH SHAVED FENNEL SALAD & SALSA VERDE (Serves 4) 1 fennel bulb, shaved 4 radishes, thinly sliced 2 Shallots, thinly sliced Juice of 1 lemon 1 tablespoon olive oil, plus 2 tablespoons extra 12 large whole prawns 2 teaspoons smoked paprika pinch of salt

Method

To make the salsa verde, roughly chop parsley, anchovies, capers and garlic on a board. Transfer to a small bowl and stir through olive oil and vinegar. Set aside. Alternatively, blitz all ingredients in a food processor until well combined.

Combine fennel, radishes and shallots in a large bowl. Toss with one tablespoon oil and juice of half a lemon.

To butterfly the prawns, use a serrated knife to carefully cut the belly and head of the prawn

For the salsa verde: 1 bunch of parsley 4 good-quality anchovy fillets 2 tablespoons capers 1 garlic clove 2 tablespoons olive oil 1 tablespoon red wine vinegar

ensuring not to cut through all the way to the back and leaving the tail intact. With a small knife remove the intestinal tract. Press down on the prawn slightly to keep it flat and open. 4

Preheat a grill to high heat. Stir together remaining two tablespoons oil, paprika and a pinch of salt in a large bowl. Toss prawns through marinade. Place onto a baking tray and cook under the grill, shell side up, for 2-3 minutes or until golden and just cooked through. Transfer to a serving platter and top with fennel salad, salsa verde and some extra parsley leaves.


PINEAPPLE, COCONUT & LIME TRIFLE Ingredients (Serves 4) sponge cake: 8 eggs, separated 240g caster sugar 2 teaspoon vanilla bean extract 120g self-raising flour, sifted 120g desiccated coconut coconut yoghurt cream: 600ml thickened cream ¼ cup brown sugar 300g coconut yoghurt kefir lime meringues: 225ml eggwhite (about 6 eggs) 1½ cups caster sugar 1 tablespoon cornflour

1½ teaspoons white vinegar Finely grated zest of 2 kaffir limes passionfruit curd: 3 eggs, lightly beaten 2 egg yolks, extra, lightly beaten 1 cup caster sugar ½ cup passionfruit pulp (about 6 passionfruit) 2 tablespoons lemon juice 150g unsalted butter, softened 1 pineapple, skin removed, cut into wedges

¼ cup shredded coconut, toasted ½ bunch of mint, leaves picked

Method Preheat oven to 180°C (fan-forced). Grease and line two baking trays. To make the sponge cake, whisk egg whites in a large bowl until soft peaks form. Gradually add sugar, continuously whisking until stiff peaks form. Gently fold in egg yolks and vanilla, followed by flour and desiccated coconut. Transfer mixture to the prepared baking trays. Bake for 15-20 minutes or until lightly golden and centre springs back when pressed. Allow sponge to cool on trays for 10 minutes before turning out onto a wire rack to cool completely. Once cool, cut sponge into 4 rounds using a large trifle dish as a guide. Reduce oven to 120°C (fan-forced)

for the meringues. Place the eggwhites in the bowl of an electric mixer and whisk on high speed until soft peaks form. Add the sugar, one tablespoon at a time, whisking until each addition is dissolved before adding the next. Scrape down the sides of the bowl and whisk for a further 10-15 minutes or until the mixture is thick and glossy. Place the cornflour and vinegar in a small bowl and mix until smooth. Add the cornflour mixture and lime zest to the eggwhite mixture and whisk for 30 seconds or until well combined. Transfer meringue mixture to a piping bag. Pipe meringues onto two lined baking trays. Bake for 25 minutes, turn off the oven and allow meringues to cool completely before removing.

For the passionfruit curd, place the eggs, egg yolks, sugar, passionfruit and lemon juice in a medium saucepan over medium heat. Cook, stirring, for two minutes or until the sugar has dissolved. Gradually add butter, stirring continuously, until melted. Reduce the heat to low and cook for a further 6-8 minutes or until the curd has thickened. For the coconut yoghurt cream, whisk cream and sugar until firm peaks form, then fold in coconut yoghurt To serve, in a trifle serving dish layer sponge cake, coconut yoghurt cream, passionfruit curd, meringues, pineapple, toasted coconut and mint.

eleven adelaide Adelaide’s newest dining experience eleven, owned and operated by renowned South Australian Chefs Themis Chryssidis and Callum Hann, is a stunning restaurant and open air bar showcasing the very best of South Australia and the world in the heart of the Adelaide CBD.

eleven is Callum’s and Themis’ first fine dining experience, offering diners Contemporary Australian cuisine, inspired by French techniques. The menu has been thoughtfully designed to include precisely executed dishes, with a meticulously curated wine list. The kitchen, led by Dan Murphy also has a strong connection to local South Australian produce and suppliers.

In 2011 after meeting on the second season of MasterChef Australia in 2010, Callum and Themis co-founded Sprout, a 100% hands-on interactive cooking school, followed by Sprout Health Studio in 2015 and Sprout Training in 2017.

Offering an à la carte menu or eleven experience tasting menu, the venue is the perfect location for special occasions, business meetings or a night out with friends.

After the success of Sprout, in 2020, Callum and Themis co-founded Lou’s Place, a contemporary Mediterraneaninspired restaurant in the Barossa Valley, followed shortly by eleven, a sophisticated and refined open air bar and restaurant that opened its doors in August 2021.

Diners can expect delicious, mouthwatering dishes including King George Whiting ceviche with pink lady apple and wakame broth, and rib eye on the bone with pickled onion, jus, and eleven butter, or they can enjoy a lighter snack of freshly shucked Gazander oysters, with a blood lime vinaigrette.

VENETIAN PLASTER We have just completed Bec’s bathroom renovation and Marie convinced her to render the entire shower, instead of using tiles. It gives a sophisticated, Mediterranean feel to the space and best of all there is no grout to clean! It’s a look also proving popular in high end accommodation. Kingsford the Barossa has used it extensively from wall to ceiling in its recent extensive makeover. An affordable option to bring this look into your house is to invest in a rendered plinth or coffee table to display flowers, books and candles.

Check your shelf height and depth to make sure the containers will fit, and be sure to invest in airtight containers. Staying strong and getting through the silly season The Silly season is a fantastic time to unwind, connect with friends and family and let our hair down. It’s unfortunate that a by-product of this ‘holiday mode’ can also be a holiday from the habits and routines we’ve spent days/months/ years trying to implement. Here are a few tips to stay on the path, while chaos may be raining down around you. We asked Seb Guilhaus to share a few tips to help us survive the chaos…

Have a plan for your exercise routine. Exercise is key for physical and mental health. Team up with friends or new like-minded people and plan day by day to train through December and January. It’s much easier to battle temptation and stay motivated if you have a committed team around you. There are gym classes, sport programs or if you’re on the road or relatively shy, LIVE online programs (like mine available) which allow continued training all year round in a safe community environment.

The Unley Mag. caught up with the ladies to find out more, and ask their advice on how to make sure your makeup lasts through the hot summer days…

Which of your products are the most successful and why? The clear favourite is our Organic Gentle Cleansing Oil. Mandy - I have to say I can’t live without this product! I chose organic camellia seed oil as the base as it’s naturally abundant in vitamins A, B, C D and E, collagen and antioxidants. It also promotes lash health and is beautiful to use. Cleansing with natural oil is a game changer. If you have never cleansed with oil give it a go. You can start by using the coconut oil you have in your pantry!

In the Morning In the morning apply facial oil only if your skin needs it. If you are using a quality facial oil you will probably be able to skip this step. Apply a primer, and allow a few minutes for it to settle before applying your foundation.

After you have applied all your makeup set your foundation, bronzer and /or blush for the day using a Setting Powder. Pat all over your face gently as to not ‘move’ your other makeup products.

What new products are coming up in 2022? We are very excited to extend our hair care range to include products that love curly hair! Mandy is also working hard to transition some of our natural products to certified organic, including our natural tanning lotion and body lotion.

Making sure your makeup lasts the day: Creating the perfect base The Day Before Creating the perfect base starts the day before. If you have an important day coming up make sure you drink plenty of water the day prior, and get plenty of sleep. I talk in detail about the importance of sleep in my Beauty Sleep fact sheet.

Take your setting powder with you so you can touch up any shine throughout the day and into the evening. My biggest tip for making sure your makeup lasts all day is to consciously make sure that you don’t touch your face. Megan X

Adelaide Property Market The year that was. The year to come. The Australian property market has never been hotter.

It is certainly no secret that property values have risen in almost every market around the country over the past year.

In the past 12 months, Adelaide in particular has seen a 20.1% increase in house prices, a 5.6% increase in the past 3 months and a 2% increase in the last 2 months alone, resulting in Adelaide having one of the most profitable capital city property markets in Australia (*Source: CoreLogic Pain & Gain Sep 2021 Report).

Lockdown to Luxury It’s not every day, you get the chance to take to the skies in a helicopter over the Mamanuca Islands, head out on a River Safari, learn to surf, and sit back and sip cocktails on a private island… all as part of your job! It’s what dream jobs are made of, right?! The Unley Mag. caught up with Brent Hill, the new CEO of Tourism Fiji to find out how he is coping with island life following his recent move from Adelaide. “Hi, I’m Brent Hill. I’m 44 and I live in Fiji with my wife Kellie Newstead. I’m the CEO of Tourism Fiji. I was born in Adelaide, and recently lived there before moving across to Fiji to take up the role, in the middle of 2021. In my career in Australia I worked across a few capital cities before heading back to Adelaide where I worked in a variety of roles, most recently as Executive Director of Marketing for SA Tourism Commission, a role I really loved with an wonderful team. It was a privilege

to work at SATC, and looking back now I think there were many highlights – we made an incredible piece of work called ‘Rewards Wonder’ that took us all over the State, the Great State Voucher scheme was a great success, but perhaps the work I’m most proud of was the ‘BookThemOut’ campaign that we ran in response to the 201920 bushfires in the Adelaide Hills and Kangaroo Island. Such a difficult campaign to achieve, but it meant so much and was such an emotive time

for everyone, but incredible to see the results that came from that campaign. Kel and I have always loved to travel, experiencing new things and taking on challenges. Moving to Fiji in the middle of a pandemic, at a time when COVID was still pretty prevalent was definitely a challenge! I’m sure you can imagine how difficult it was just to leave Australia – we left when SA was in lockdown, so that was really tough, and then we had to get settled


in Fiji which was also in lockdown, but it has been everything we wanted, and so rewarding, especially as things started to open up. There have been many surreal moments – going to Sydney International airport and it being completely empty bar our flight, meeting and being in quarantine at the same time as Fiji’s gold and bronze medal winning rugby players and hearing their singing every day, and then living in a resort (the beautiful Radisson Blu) where there were about 10 guests only! It has been surreal, but incredibly beautiful. We have been so welcomed, and the work of reopening Fiji has been so challenging, but exciting as well – given we now have a date – 1 December! What has been challenging is the sheer magnitude of the task. Fiji is made up of 330 islands, and many resorts are scattered far and wide. To work out the logistics of how we can welcome guests again safely, the testing regime and keeping everyone safe and moving around, while at the same time maintaining our famous Bula spirit has been a huge challenge. And, we’re doing it on limited staff as of course we’re still emerging from COVID, so don’t have the resources we once did! Adapting to Fijian life has been one of the things that we’ve enjoyed the most. They have a wonderful spirit of taking each day as it comes… as the saying goes – “sega na leqa” – no problem! They know that storm clouds will come but they’re followed by sunshine. It’s been a beautiful experience learning this culture – we have started learning the language too and playing our part in getting Fiji back on its feet again. There are things we miss like our friends and family, watching things live like sport, theatre

and music and the just how spoilt for choice you are in Adelaide, but here in Fiji we have incredible weather, the resort type lifestyle (we live in a beautiful community surrounded by a golf course and canals), and the world class tourism product. Literally on our doorstep is some of the most pristine water and reef systems I’ve ever seen, and some amazing accommodation options and private islands that we’ve been lucky enough to stay at. I think in 2022 the world will really open up further. I can see the travel boom happening in the Southern Hemisphere that happened in the Northern Hemisphere summer. Australians are desperate to have a real holiday overseas, I think. I didn’t realise how much I missed that until we got here. Yes, Australia is beautiful and holidaying in SA and Australia for the past 2 years has been really special, but there is nothing like experiencing a new country, taking it all in and truly relaxing for a few days before getting into some adventure and fun! I think also we all just want to feel joy and happiness again. To feel human. To experience the kindness of real service – the Fijian way. And I think travelling opens up the mind – it makes us appreciate

what we have and gives us broader perspectives. I think Fiji is perfect for that first overseas holiday. Its close, convenient to get to, with incredibly good value packages on offer thanks to Government initiatives and airline pricing, and in Fiji you can do as much as you want or as little as you want. We have what the world needs emerging out of COVID – beautiful world class accommodation with stunning outlooks everywhere you go, something for everyone – from couples and families to solo travellers, adventurers or relaxers. And we’re safe. 90% of Fijians over 15 are fully vaccinated, and we’ve developed the CareFiji

Commitment which will ensure everyone is looked after as best we possibly can. And most of all, if Adelaideans come to Fiji they will be coming to a place that will value every tourist. Tourism means so much to Fiji, and you will be welcomed with open arms. In Fiji, we’re open for happiness! Home now is here in Fiji and we love it. But we will always love Adelaide and have a special spot in our hearts for South Australia. See you in Fiji!”

The enterprise is not-for-profit organisation and registered charity designed to be a beacon for creativity while maintaining a focus on the wellbeing of its people. It began with a significant injection of philanthropic capital from its founders and aims to be self-sustainable in perpetuity. Light’s vision is to provide a home for accessible excellence and innovation in creative expression, the arts, entertainment, hospitality, and related technologies. In late 2020, the 150-year-older multi-level building at 63 Light Adelaide was transformed. LIGHT is home to four venues including performance space, THE LAB and award-winning restaurant, AURORA. Revenue generated from these venues is folded directly back into supporting innovation, creativity,

and hospitality. An experience at Aurora Restaurant, is more than fabulous meal of proteins cooked over a custom-made braai or fresh South Australian seafood – it’s an opportunity to eat well and give back. Led by Chef Brendan Wessels, staff are paid properly and encouraged to learn on the job. Music SA Chair, Anne Wiberg curates The Lab – a multigenre immersive performance space that supports art and culture. The walls are LED screens, designed to transport guests. The space is dynamic, and interesting for performers and guests alike. Light Co-founders, Nick and Sophie Dunstone are humble. The couple have shown significant vision in establishing this project, particularly in the face of an ongoing global pandemic. Nectar Promises Great Coffee & Change For Women A new South Australian female-based coffee brand has launched and it’s here to #brewchange and The Unley Mag. couldn’t wait to find out more… The coffee industry is one of the largest industries facing gender inequality with only a small number of female-owned businesses and women in senior representation, despite 70% of labour in coffee production is provided by women. Nectar Coffee Roasters aims to help shift this gender gap and take the coffee world by storm with their equally delicious coffee blends that are guaranteed to become a pantry staple. Owned and operated by three young women, Coffee Technician, Mia Umeko, Marketing Guru, Georgia Lake, and the ultimate People’s Person, Alia Nazri, Nectar produces premium speciality coffee, while also supporting and raising money for female-aligned social causes, donating 5% of its profits annually to a women-focused charity chosen by its community.

Having worked in the hospitality industry for a number of years, Coffee Technician, Mia Umeko, developed a deep interest in coffee, roasting, flavour profiles, and the male dominancy in the industry. With a strong eye for design, Mia then decided to combine her two passions and wondered how she could contribute to Adelaide’s coffee scene with a difference. Mia then approached her two friends she met at co-working space WOTSO with the business idea and they were quick to jump on board. “The three of us have pretty similar values and we’re all very passionate about coffee and making a difference in society, which is why we work so well together,” Mia said. “We want to join the existing women in the industry and show others they can do this too. But most of all, we want to give everyone an opportunity to be an activist and support them through conscious consumer choices,” Georgia added. Nectar Coffee Roasters uses high-quality green beans that come from traceable and ethical suppliers who have a relationship and rapport with their farmers. Adelaide Italian Festival Ciao! On Friday, November 12, guests enjoyed an evening of good food, wine and entertainment at the Adelaide Italian Festival Opening Night in Adelaide’s East End, as it transformed into Little Italy for the night. Running from November 12 – 21, the 2021 Adelaide Italian Festival provides South Australians the opportunity to immerse themselves in Italian culture. With over 40 events that occurred across the city, from car rallies, to pasta making workshops and special tasting menus at some of Adelaide’s leading Italian restaurants, there was something for everyone to enjoy!
