HELLO issue 2 of The Unley Mag. We are so grateful to our local community for showing so much love and appreciation for our launch magazine. It has been a whirlwind of activity ever since and the team here at Unley Shopping Centre can’t wait to share this new issue with you! I feel this issue is full of vibrancy and energy. The amount of collaborations and beautiful relationships that we have, not only here in the centre, but across our state, jump off the page. Highlights include introducing our new food editor, Kris Lloyd. We met up with MasterChef, Mandy Hall, in Kris’ kitchen as she shares some killer recipes and Top Tips. Alison found one of Adelaide’s most influential (Adelaide Gal) and initiated her with her first fashion shoot. We celebrate the community and culture we live in, and I am so ready to get immersed and experience Adelaide’s new winter festival, Illuminate. Our Centre, Our People MEET UNLEY’S HANDYMAN – SHAUN FROM MISTER MINIT  ‘Our Centre, Our People’ is a series of interviews featuring some of your favourite Unley retailers. We had the privilege of interviewing Unley’s best handyman, Shaun from Mister Minit. Tell us about yourself? Other than being the franchisee at Mister Minit here in the Unley Shopping Centre, I am married to a wonderful lady who is a teacher of Special Education, I have two Jack Russell dogs, Arnie and Max who are part of the family. I have two daughters both grown and doing well in their chosen careers. I am also a bit of a motor sport fanatic and often spend my weekends Flag Marshalling at Motor Sport events both local and interstate. Tell us about Mister Minit?  Mister Minit at Unley has been in the

shopping centre for 12 years and I took over this store about seven and a half years ago. What does Mister Minit offer? Mister Minit covers a wide range of products. We do everything from shoe repairs, key cutting, watch works to engraving and all those little jobs that you cannot find anyone else to do. On top of that, we have a range of giftware and can engrave your gifts on the spot. What is your favourite part about being in Unley Shopping Centre?

My favourite part about being in Unley Shopping Centre is the community. The people here are wonderful to work with and customers have now become lifelong friends. Their accolades speak for themselves over the years, which also include SA Hairdresser of the Year, and a finalist spot in the Australian Hair Fashion Awards (AHFA) creative colour category. And amidst the pandemic in 2020, Joe was a national finalist for the L’Oreal Colour Trophy award. Joe says it’s one of his proudest moments as both Zink owner and a L’Oreal Professional ambassador. “Being recognised by your peers and the local community was the biggest accolade and most humbling experience which says

Staycation Splendour

My husband, Cosi, came home all excited to declare he had booked us a night at EOS in the city.

Fast forward through the organisation of babysitters, lining up kids party drop offs and pick ups, laying out pet food and pets medication and before you can say, “this is all too hard”, the Uber pulls up and we are off.

Twenty years ago, I would have been over the moon with a night of upcoming relaxation and romance, yet now, with three children and a messy house, all I could think of was a thousand reasons why leaving the house is more work and effort than it’s worth.

We both stare at our phones during the ride as the thought of having a conversation with each other seems pointless, as it will probably end in an argument. Cosi’s worked 14 hour days for a week straight, and I’ve broken up more kids fights than a Hindley St bouncer.

Is there anything better than a “Staycation” in your own city?

Ten minutes later, we pull up and check into the hotel. It’s absolutely stunning. My “stay at home” Mum duties are a distant memory. That rare thing happens…. Where we both begin to unwind. It starts the moment you open the door of your accommodation on any holiday. That moment is filled with such excitement. Bags are dropped and the relaxation begins. It’s hard to believe we are only 10 minutes from home. All of a sudden, the mad panic to get out the door, all becomes worth it.

It’s funny how when you stay in the city you notice so many more things. I mean, most of us spend so much of our time driving through or working in the city, but most of our interactions with this square mile of buildings and bitumen is rushed. And when you are not rushed you suddenly notice more. The street art, the trees, the architecture, the smells…

After a night of good food, we wake up to no alarms, no kids fighting, no pets on our bed, and we feel completely recharged. We spend the morning going out for breakfast then jumping on a couple of

scooters for a Torrens ride. After parking the scooters, we walk through the Botanical gardens. We both comment that it’s amazing we only see about a hundred people in the gardens when really it should be thousands… It’s beautiful, it’s breathtaking, it’s spectacular and it’s FREE… I think it’s one of those things we never really go to because its always there, maybe we take it for granted? If they fenced it off and hung some fairy lights and sold over-priced cocktails we’d probably all flock there and pay $20 to get in? Crazy when you think of it like that.

moments before we check out, so maybe I’m a little too relaxed, BUT, I think it’s important for us all to make time to explore our own city and fall back in love with our partners and our city. I don’t think it matters if you’re staying at the lovely new EOS or even a cheaper option, but there is something just so special about walking around and waking up in your own city. We are blessed to be able to call Adelaide our home so why not pop in and spend a night with her. You honestly won’t regret it.

We get back to the hotel room and comment how it “feels like we’ve been away for ages”, we start felling sad that our babysitting credits are running out by the minute. I’m writing this from the hotel room

After winning the title of Miss World South Australia at the age of 17, she pursued a career in modelling and acting. She spent years working hard and learning to speak Hindi, which in conjunction with her talent and exotic looks caught the attention of prominent casting agents and helped her land various roles. Lucinda began doing small gigs at first, such as TV commercials, before eventually going on to star in Bollywood productions like ‘Guest in London’. She also had a stint on India’s answer to Big Brother — Bigg Boss. Lucinda is of Middle Eastern and European heritage and has played characters with English, South Indian and Austrian backgrounds. At times, she has worn brown contact lenses to appear “more Indian”, but she explains:

Meet Adelaide’s Bollywood Star Down the road, just 10 minutes away from Unley Shopping centre, lives an inspiring, empathetic, fiercely successful, and well-travelled lady. The Unley Mag. caught up with her over a recent photo shoot at Grill’d. We talked about the differences between Aussie and Indian culture and how she landed Bollywood roles… Former Miss World South Australia, Lucinda Nicholas, moved to India in 2013 and spent six years living in Mumbai, where she launched her acting career, but she never imagined she would make it in the industry.

“A lot of foreigners become successful in Bollywood by really taking on the language and Indian culture. People think India is so different to Australia, but once you live there and you’re a part of the culture you realise how similar we all are as humans no matter what race or religion”. Needless to say, Lucinda has been devastated by how the COVID-19 pandemic has hit her ‘second home’. Cases and deaths are soaring, leaving hospitals running out of oxygen. Daily death rates in India are currently over 300,000, the world’s highest-ever daily infection rate. “I’m deeply saddened by the situation in India,” Lucinda said. “I still have lots of friends over there so I feel for the people. India is like a second home.” Timing is everything. And Lucinda’s instinct told her it was time to move back home to Adelaide, and months later, the pandemic hit. Lucinda holds a degree in Law besides being a model and is also a yoga instructor. After spending the afternoon with her, we can vouch for her friendly, approachable and down to earth personality. She is really enjoying being back in South Australia, and we are sure she will make it big in Hollywood or Bollywood (again) when the time is right.All available from TerryWhite Chemmart Unley Shopping Centre.

Meet Lady Ba-Ba Meet Melissa, a 33-year-old sheep farmer from rural South Australia. Along with husband Ryan, the mother-of-three had survived four years of drought — before 70 per cent of their Cambrai farm was razed by the 2020 bushfires. We caught up with Mel to find out more about life of an outback mum…

Where did you grow up? I grew up in the Adelaide Hills near Birdwood. My parents owned a 100acre property and trained racehorses How did you get into farming? I met my partner at age 19 and he had a farm 30 minutes from my house so when we moved in together, I started living on the farm and we started a Lamb Feedlot together. What made you apply for BB? We’d been through 2 years of drought and I was scared that if we ended up with a 3rd year of drought that our business and farm would be under a lot

of financial pressure. So, I was hoping to win the $250k to secure our future. Who do you want to see win BB? I would love Tilly to win. Tilly is the best at the social game and an absolute beast in the challenges. For her, the money would be life changing. What advice would you give to South Aussies wanting to apply for the next series? Be completely unique in every way. They don’t want to pick someone who is ‘relatable’. Be vulnerable in your application but also be happy to laugh at yourself and have fun with your application video.

Since leaving the BB house, has your life changed? Yes! I have random people stop me in the street and in shops. I need to add an extra 30 minutes to my trips because I’m always answering questions about my time on the show. How do you feel now about securing your children’s future? We met online, after Cosi put a post out asking for someone to look after 1000 sheep. I replied to his post and Cosi came out to look at the farm the

Come join me on this journey for a taste of my recent visit to this beloved Croatian influenced cafe, tucked in the heart of Unley Shopping Centre. Impressa was short of nothing but impressive. It is not surprising that they won the Pride of Workmanship Award in 2019 by the Rotary Club of Unley. Offering both a Breakfast and Lunch Menu, they will likely have you spoilt for choice where the challenge is deciding on just one dish. This casual cafe has such a lovely laid back vibe, you can even tell that most of the locals here have become regulars. Impressa is led by the dynamic duo of husband and wife Anthony and Adriana. Immigrated from Croatia, it’s a no brainer that their passion for their cultural culinary delights have created something truly delicious and satisfying. Literally, they have eight types of soup on their menu and while they don’t do this (yet? as I think this is such a great idea) they gave us little samples of all their soups in tiny bowls to try. I can tell you genuinely, every single one was delicious in their own way and a perfect winter warmer for these cooler months. They are simple, delicate, tasty and just the best home cooked soups that would surely remind you of your own parents cooking.

Their Pea and Ham soup is a must have, but so is their Pumpkin Soup, Beef & Barley soup and the list goes on. Also, shout out to their Chicken and Vegetables soup, the distinctive broth taste left me wanting more. Tender texture with chunks of meat and vegetables that you can see, now this is comfort, and if I may suggest, best enjoyed in the good company of friends. Also I better not forget to mention that they will have a few more wintery soup options for a limited time only.

My first time trying out their Cevapi. We had the pork meat and their accompanying cabbage salad with roasted capsicum dip was a winning combination. I could eat this for days and would still feel content. I will definitely come back for this again. Needing a Cevapi fix? Impressa is the place to go.

Chicken Goulash. It came with basmati rice. A take on meat and vegetable stew. I found this to be so tasty and every bite just got better and better.

Vegan? Lactose Intolerant? No problem, they cater to all dietary requirements. We also got to try some of their Croatian Cuisine, the Sarma or Cabbage Rolls which is perfect for any type of weather but I can see a spike of popularity in this dish around this time of year. I couldn’t get enough of it. their toasted bread was also something that needed praise.

They really do think of everything and everyone. Can’t stay and need takeaway for tonight’s dinner? It’s already taken care of for you, all packed ready to go. It’s the hospitality that gets me and you don’t get that very often nowadays. Not only do they serve coffee or teas they also offer fresh juices. From savoury to sweets they’ve got you covered. Choose from muffins or cake slices (and yes, some are gluten free), you will find what your sweet tooth is craving for. I tried the Vanilla Slice and the Baked Lemon Curd Cheesecake. Order it with a side of Cappuccino or Earl Grey tea and that my reader friends is how you conclude an epic visit at Impressa. Words Dee Pene

Every now and then people float into your life and you say “I just love this person” and “I wish I had met them eons ago”. Mandy Hall is one of those people. We met around five years ago, and we instantly became great friends. We have many similar interests mostly involving food; we learn from each other and have great respect for each other. Mother of two, Mandy also hails from MasterChef Australia, where she appeared in 2019.

“My time on MasterChef will, without doubt, go down as one of my most treasured and valued times. Appearing on the show gave me a platform to be able to stand up and showcase what food means to me, all the glorious things we can do with ingredients, all the amazing growers and producers we can highlight, that profile has enabled me to take my message to the people and shout it loudly, proudly and with such enormous joy” said Mandy.

Mandy’s love of food, particularly fermented food and her focus on zero waste would bring us together sharing a passion for both. Her menu curation and hosting of food events brought her to CheeseFest & Ferment Festival where she appeared on stage and managed the famous cooking demo stage where over 15 celebrity chefs cooked in 2020 at CheeseFest Gather & Graze. Mandy is no stranger to great food, is an excellent cook, she loves making everything from scratch and has an extensive kitchen garden. She has gone on to do recipe development, write for several publication across Australia, conducts cooking classes, fermenting classes, and she is also an Ambassador for Foodbank. I have asked Mandy to share her Top 12 Tips for everything she loves doing in the kitchen and to share with us two amazing recipes, I know you will love and enjoy making.

DUTCH BABY PANCAKE

Ingredients

Artisan Buffalo Curd, Mushrooms & Thyme

DUTCH BABY PANCAKE 1 cup plain flour 3/4 cup milk 1/2 cup Kris Lloyd Artisan Buffalo Curd + extra to serve 4 eggs 2 teaspoons salt ground black pepper to taste 1 tbsp fresh thyme leaves – optional

FILLING 2 tbsp unsalted butter grated parmesan for serving 2-3 tbsp chopped parsley for serving 500g mushrooms of choice 2 tbsp olive oil 2 tbsp butter 4 sprigs of fresh thyme 1 clove garlic - crushed ground black pepper to taste

Preheat oven to 200°C and place an overproof pan inside to heat. Chop mushrooms to size and set aside. Peel garlic clove ready for crushing. Using a whisk, mix together all Dutch baby ingredients until there are no lumps, do this quickly to avoid over mixing, set batter aside.

Meantime, heat a pan over a medium heat, add olive oil then butter, add mushrooms, thyme, toss to coat, stirring occasionally and cook until mushrooms are golden brown. When ready, add crushed garlic and cook for an additional minute, turn off heat and set aside (can reheat to serve or leave slightly warm).

Once pan is very hot remove from oven and add 2 tbsp of butter straight away. Swirl around the pan to make sure it is well coated then place pan back into oven for 30 seconds, remove and carefully pour in the batter. Place back into oven and bake until golden and crisp (approx 15 mins).

When puffed and very golden, remove pancake from the oven, keep in pan & top with filling mix, grated parmesan, chopped parsley and additional large scoop of buffalo curd. Serve immediately.

Ingredients

We always start by reminding you to make sure that all the utensils, jars, lids etc that you use have been washed in super-hot soapy water and rinsed in boiling water or sanitised (not chemically) using the dishwasher cycle. 1 medium to large green cabbage and one small red cabbage both finely shredded (keep the outer leaves wash and save, don’t throw out) 2 cups of grated carrot 2-3 red onions finely sliced 6 cloves of garlic crushed or finely chopped

2 TB dried oregano 2 -3 red chillies finely sliced or 2- 3 teaspoons – (heat levels totally up to you) of red chilli flakes Sea salt - for this super quick ferment, we are using 1.5% salt

Weigh all your ingredient to calculate salt %, this is the safest way to ferment and ensures that there’s enough salt to preserve things and keep you safe but so much that it won’t ferment properly and all you are left with is a tonne of over salted veggies!

Pack all ingredients into a clean fermenting vessel, leaving at least 2 inches of headroom at the top (pack over a few vessels if you have smaller ones), use folded outer cabbage leaves as a wedge to force content down under the brine and cover with the lid so it’s airtight. If you have an airlock, fantastic, if not, keep an eye out for activity and gently “burp” the jar on day 2 to release any gas. Leave to ferment at room temperature (19-23 degrees) and out of direct sunlight, 3 or 4 days will be enough, this is a quick ferment, like spicy slaw. After 3 or 4 days, decant into clean lidded jars and pop into the fridge to enjoy with love! Keeps for up to 4 weeks.

Place shredded cabbage & salt into a very large bowl, massage well until the cabbage is releasing a lot of its own juices, walk away and come back after a while if your hands are feeling it. When you lift the cabbage up, it should be dripping with brine. Add all other ingredients to the bowl and mix thoroughly.

Season, season and more season – so much taste is lost when we forget to season whilst cooking. Just remember the job of seasoning is to emphasise the existing flavour within your ingredients. Don’t skip it. You’ll be amazed at the difference it makes.

Wherever possible, bring meat / poultry closer to room temp before you cook, really cold proteins take longer and change the taste outcome, this makes a huge difference to your dish.

Taste as you go, this stops from over or under seasoning and gives you the opportunity to make your dish divine!

Chopping garlic finely can be annoyingly time consuming, to short cut the process, sprinkle finely sliced garlic with salt, then chop – the salt is abrasive and makes the breaking down of the garlic much easier.

Always use the stalks (not just the leaves) of fresh soft herbs (coriander, parsley, chervil etc) they hold a good lot of flavour, just chop them very finely.

Preheat your oven before using it, allow an additional 5-10 minutes to get the oven up to temperature, it makes a big difference to your cooking time.

Put a wet/damp chux cloth under your chopping board, this stops the board from moving – finger saving hack!

Stick your half cut (skin still on) avocado or apple cut side down in a shallow container of water, this will stop the browning as the oxygen cannot get in!

Shop, cook and eat seasonally and locally – there is a reason why ingredients that are in season or haven’t travelled very far taste so yum, seasonal eating is good for us and the flavours are the bomb.

Everything in life to do with cooking and eating lifts to the highest levels when you are surrounded by friends, family and music – a glass of wine is also nice…

Don’t throw out your cauliflower leaves, toss them in some olive oil, salt and chilli flakes, roast, in a hot oven for 10-15 mins until nice and golden, they make a super side dish.

Don’t take your tops off! When you head to the Fruit & Veg shop and buy your bunch of carrots, don’t have the tops taken off, carrot greens make an amazing pesto or a chimichurri or salsa. They are also great to add to casseroles for added flavour.

Whenever I think about styling for a client, I have my five go to design rules that I apply with every application and find it works for almost every space – no matter what the style, size or budget. STYLE IN THREE’S When styling pieces individually, they tend to lack that statement element one aims for. To get that real impact, my go to rule is to style pieces in three’s. I’m an odd numbers man, so for me, I aim to make a statement by grouping similar objects together, so that they become a stronger design element as a whole, as opposed to what they would be individually. When styling in clusters, try playing with differing heights as this creates interest and creates a sense of fun. This simple arrangement on the dining table features three very different vases – both in shape and size – yet when paired together creates a beautiful and minimalistic centerpiece.

NO. 1

SCALE When it comes to selecting furniture or choosing art, oversized pieces will always make a grand statement. If you can, invest in a piece that you absolutely love and makes you go “I need that in my life”! Think about where you see that piece in your space, then plan every other element required for the space around that. This gorgeous cockatoo print has hues of golds and blues which allowed me to come up with the overall look of this living room – incorporating a simple colour palette but remembering the artwork is the hero.

TEXTURE There is a real sense of relationship when we think about textures and patterns. Without even realizing, we are drawn to objects that entice you to want to touch and feel them – creating an element of interest. A great way of introducing patterns and textures into a space is through the process of layering with the aid of cushions, throws and rugs. These work really well together or independently, creating warmth and ambience.

PLANTS NO. 5 One of the most common trends and accessories to date is the addition of greenery to any room. It’s one of my personal favourites and you don’t need to be a green thumb to keep your plants green either. Go real or go faux - but if you go faux – invest in quality. There is nothing worse than a fake plant looking exactly just that. Indoor plants are a style piece within their own right and the selection process doesn’t need to be stressful at all. If you want to take it further, you can enhance the appearance by placing them in a stylish basket or pot, chosen to work with the existing style of your interior.

LESS IS MORE Without fail – The term “less is more” is my number one design rule for any project I am working on. Having less of something makes a more impactful and more enjoyable statement. Overwhelming the senses with too much all at once can create an uncomfortable feeling – something you do not want to do. Bold colours and patterns, though amazing in their own right, create a better impact when used sparingly in interior design. The same rule applies when mixing styles of furniture. Clean lines and neutral tones allows you to be able to incorporate feature pieces but make sure to keep it that way – you don’t want different elements competing with one another.

Halloween Hacks Is it just me, or has Halloween suddenly become a big deal in Adelaide?! Last year, I honestly spent a small fortune and bought every spooky decoration and scary accessory in sight. I hosted a Halloween Party at home, where 10 kids and 8 parents went crazy running around the house, playing gruesome games, like ‘Dress the Mummy’ and ‘Halloween Bingo’, drinking ‘Dracula’s Margaritas’ and loading up on sugar… way, too much sugar! Honestly, if I saw a skeleton, a spider, a witch, or a goul… I grabbed it. It took 2 days to decorate the house, and about 3 days to clean it all up after the party. But I wouldn’t have it any other way. I love opening my home to our friends and surprising the kids and adults alike with the latest terrifying tricks and tasty treats! - Anna-Louise, an Adelaide mum.

To us it’s a great community, neighbourly event. Walking our local streets is lots of fun, seeing many kids and families from the neighbourhood and local school. We walk around in groups of friends often with a glass of bubbles in hand! Our neighbourhood has many beautifully and scarily decorated houses with lots of delicious (and COVID-safe) treats and all the kids get dressed up in their scariest outfits. They all look so good! Your Gut Health Matters We all know gut health is important these days, so we asked one of Adelaide’s leading Clinical Nutritionists to help us learn more. Clinical Nutritionist, Jan Macfarlane, specialises in gastrointestinal disorders IBS, SIBO, Leaky Gut Syndrome, along with Autoimmunity.

Is our gut health linked to our overall health? Yes, having a good gut health greatly influences our immune system, digestive function, metabolism, absorption of nutrients, elimination of waste and even our mental health. What are the signs and symptoms of bad gut heath? Signs of poor gut health can result in several undesirable conditions such as bloating, abdominal pain, constipation, diarrhoea, nutritional deficiencies, fatigue, join pain. It is now proven that gut health it is linked to various health concerns such as autoimmunity, allergies, inflammatory conditions, diabetes and even affects the reproductive system. The most common gastrointestinal disorder is irritable bowel syndrome (IBS). What is IBS? IBS is a banner term for gastrointestinal symptoms including reflux, excess gas/bloating, excess burping, pains, nausea, constipation or diarrhoea. Worldwide, is it estimated that 10-15% of the population has IBS. What causes IBS? 60%-80% of IBS causes are from a migration of our bacteria from the large intestine up into the small intestine. Our bacteria feed to survive, digest and expel out gases just as

we do, however if this is happening in the wrong part of the gastrointestinal tract, this onsets varying IBS symptoms. There may also be parasitic infections that need to be ruled out, along with a small percentage of more serious illnesses such as bowel diseases including Crohn’s or Ulcerative Colitis. How do you test for IBS? After patients have been cleared by a Gastroenterologist ruling out bowel disease, then breath testing for bacterial overgrowth in the small intestine is best via SIBO lactulose breath testing. This can be done via a SIBO trained Clinical Nutritionist. What is leaky gut? Leaky gut syndrome is a digestive condition that affects the lining of the intestines. In leaky gut syndrome, gaps in the intestinal walls allow bacteria and other toxins to pass into the bloodstream. Evidence based testing methods are the only true way to diagnose the permeability in the gut; Faecal Zonulin or IP mannitol testing via Clinical Nutritionist trained in these functional testing methods. Adelaide’s Tammy Bishop and Hayley Norman are the women behind hand bag brand, Willow Bay Australia. What started as a curious idea over a few cocktails back in 2017 has seen the brand catapult into international recognition and as the official bag sponsor of the 2021 Miss Universe Australia program. With their focus on being a slow fashion brand, Willow Bay’s bag designs offer a functional yet fashionable purpose in a woman’s wardrobe. Where did the idea for Willow Bay start? Hayley - Technically over cocktails. We were discussing how we loved the idea of neoprene fabric in fashion and the rest is history. Tammy – Yes, that’s exactly what happened. It’s the best way to brainstorm any fantastic idea.

As the bag designers, what is your design process? H&T - We have very extensive brainstorming sessions on what we love, what we see a need for in the market, what features are practical... We also listen to our customers which is super important. We love suggestions, feedback and ideas. Market research is very important to us.

What made you gravitate to being a handbag brand? H - Handbags are one item that will always fit; jeans not so much. On a more serious note, handbags are a great way to show your personality and they are a wardrobe essential, so something I have always loved. T - Handbags are such a fabulous fashion item that can make everyone feel great at any time. Also, they are a perfect way to add personality or a splash of colour to anyone’s wardrobe.

What are your favourite bags in your collection and why? H - I love our Metro Tote because it not only looks great, it’s so practical. My handbags are a lot like Mary Poppins so I need lots of space and lots of pockets and the Metro has both. I also love our Audrey Bag. I often struggle with evening bags and not having as much space as I need, but the Audrey has lots of space and is such a cool looking bag with a classic design that won’t date.

T- My favourites, at the moment, are the crossbody bags because I love to be hands free. At the moment I’ve been giving our brand-new design a test run, which is made from our gorgeous leather-look neoprene so it can dress up everyday outfits but is also practical (and really cool). What is your favourite part about your job? H - I love being able to get creative whether that be during brainstorming sessions for new colours or styles or planning for photo shoots. T - Definitely designing handbags and choosing new season colours are the best, but seriously what women wouldn’t love being surrounded by handbags all day!? What trends are you following in fashion at the moment and loving? H - I am loving seeing all the 90’s fashion making a comeback. I have so many cool memories from the 90’s so it’s quite nostalgic seeing my daughter wearing items of clothing that I used to wear. Am I giving away my age, haha? T - I still really love the old-world style with a modern twist. It can be perfect to add a bit of class to any outfit. What have been each of your career highlights so far? H - I would say judging the Miss Universe Australia semi-final here in SA. It was such a great experience being able to get behind the scenes and see what was involved with the judging process and meeting some amazing people. T - My highlight has been purchasing our first warehouse which is due for completion in November. I am so proud of how far we have come in such a relatively short amount of time. How do you stay relevant in today’s fast paced, fast fashion society? H & T- We try to stick with designs that are classic, chic and always practical. We don’t consider our designs to be fast fashion - our pieces are designed to be used now and in years to come. On mum’s ‘night off’, what’s your go-to drink or cocktail? H - Classic Mojito T - I love a good Glass of Sauvignon Blanc or a cheeky Espresso Martini, but really it depends on my mood!

What’s your favourite shop in Unley Shopping Centre? Both - We love Tony and Marks! They always have fresh produce, so we definitely make an effort to go there when we are at Unley Shopping Centre. What is your best advice for those wanting to start a new business? H - Never give up! If you have a good idea and you are passionate about it then keep focused and stay determined. It will pay off in the end. T - The most important advice for anyone with a great idea that wants to get into business is to not rush the launch date and make sure you set up a sustainable business model. If it is time consuming, remember your time has value and work it into the price of your product/service, work out your market and sales channels and get advice from professionals (not friends or family) on setting up the new business. But also celebrate every small win and enjoy it, because as much as running your own business is hard work it is so worth it! What plans do you have for the future of Willow Bay? H - Our overseas presence has grown significantly in the past couple of years so we plan to grow it even further! We also have some very cool new designs in the works which we are so excited to launch. Stay tuned! T - Our plans are to continue to grow not only with our new designs but we also have some new exciting business opportunities in the works. It’s very exciting times here at Willow Bay. That was pretty amazing! Q. What’s the most rewarding part of being a restaurant manager at Grill’d? A. Connecting with the local community and being able to give back to the community that is supporting you through our Local Matters program. Q. What is your go-to burger and why? A. I have way too many. But the Summer Sunset is definitely one of my favourites - pineapple belongs on everything!! Q. Do you have any insider Grill’d tips or hacks? A. You have to be a Relish Member! Sally Hamilton in the driver’s seat. What inspired Hamilton MG? For over 33-years the name Hamilton has been synonymous with the automotive industry. With the announcement of the Holden brand retiring, steering the business through this uncertainty was a priority for us. We wanted to make sure the dealership remained sustainable, so when we looked at MG, it was a natural fit for the business. MG was relaunching the brand, it offered families and first car buyers’ affordability and great technology. So at the end of 2019 we took a significant leap and announced we’d be taking the MG brand. So, to answer the question, our

Progressive before its time, Hamilton, was, for over 25-years the only dealership in Australia with a female dealer principal. For over three decades Sally Hamilton has navigated the business through growth with the Holden brand enjoying market leadership for many years. Navigating the business through adaptation and change with the announcement of the Holden brand retiring, the priority was to ensure the dealership remained sustainable in the face of uncertainty.The Unley Mag. caught up with Sally to find out how she did it…

priority was to fill a void and find the right fit for Hamilton. From sales and feedback from our customers the MG brand has proven to be a winner. How do you differentiate yourselves in the market? We’re in the business of making sure families and first car buyers have the best quality vehicles that are affordable, look great and deliver peace of mind - and we aim to deliver this every single time to our customers. Our team of highly qualified technicians work in one of Adelaide’s largest service centres and our spare parts department is

one of the largest in the state. This is backed with the most efficient diagnostic equipment. Many of our customers have purchased vehicles with us for over 30-years, I think this is a reflection of our reputation, I like to think we are one of the best dealerships in the business. I’m really proud of what we’ve achieved. How has the car industry been affected and transitioned throughout COVID-19? Comparing the market now to the same time last year, we’re experiencing significant growth. With travel restrictions, people were homebound, and this has resulted in people upgrading their vehicle. MG offers affordability and it’s a great looking car, with all of the technology features of more expensive models so updating their car has been a priority for many people. The commute to work in your own car and avoiding public transport has also been a factor and we’ve seen a lot of customers come to us with safety as a key motivation. Let’s face it if you can’t travel on a plane, rewarding yourself with a new car is a pretty close second. What lesson(s) has it taught you as a company leader? I’ve been Dealer Principal at Hamilton for over 20-years many of our staff have been with us for decades. It’s like a second home - and when you work you often spend more time with your co-workers than with your family so ensuring the sustainability of the dealership was a major priority when Holden announced it was retiring the brand in Australia. The key lesson for me as a leader is to always be yourself and be as honest and transparent with your team about change and letting them know that we’re confident in the future, our second dealership is testament that Hamilton MG is serious about our growth and we’re committed to our people, our customers, our community and our suppliers.

As a busy woman in leadership, how do you find work/life balance? Any businesswoman, regardless of industry, will tell you that the scales tip and it’s often hard to strike a balance. Hamilton MG has most definitely become my baby, I’m always busy but I encourage the team to celebrate the wins, and everything in between. But I have to be honest the work/life balance has skewed more to work during the past 18-months - but it’s something I’m happy to do for the business, our customers, and the staff! What’s your favourite shop at Unley Shopping Centre? For me, it has to be Tony and Marks. In terms of fresh produce, they’re hard to match, their produce is so fresh and of the highest quality. It’s also a great SA family-owned business and where I can I’ll always go local and support small business so it’s Tony and Marks, for me, hands down. What is your current ride? (car that you’re driving) I’m spoiled for choice. Funnily enough, I still drive a Holden but I’m lucky - I’m also driving the MG HS PHEV the MG hybrid model - it’s phenomenal technology and presents a really nice compromise between petrol and electric, a great entry car for people looking for an electric vehicle. The new innovation that MG is investing in is ahead of the curve. My biggest problem is trying to stay in any make and model because, lol, everything is for sale, especially with current new car shortages!

What’s the biggest risk you have taken? I’d have to say opening a second showroom amid the chaos of COVID-19 was a huge risk at the time. But once we make a decision we don’t turn back so for us we remained committed, completely renovated and refurbished a new showroom in Morphett Vale and in December 2020 we opened the door. The success of the new location at Morphett Vale has paid off for us, we’ve hired more people and our team is growing. The Morphett Vale community have been really excited and with the second dealership we’re forecasting a very busy future - so the risk has paid off!

K I CK S TART FO R KI DS TO FI G H T PERI O D P OVERTY IN S O U T H AUSTRALI A KickStart For Kids has launched a new program, KickStart For Kids Against Period Poverty, to raise awareness, support, and funds for South Australian girls experiencing period poverty. Taking on the fight against period poverty, free free menstrual hygiene products will be available to over 350 South Australian schools currently participating in their breakfast program. Period poverty refers to girls unable to afford sanitary products and are forced to use alternatives such as rags, toilet paper, newspaper, or resort to using sanitary products for an extended and dangerous amount of time. A survey by the Commissioner for Children & Young People found that 26% of respondents had missed out on attending school due to not having access to sanitary products and 51% of respondents reported not having access to products

Founder of KickStart For Kids, Ian Steel, says that period poverty is not just an issue happening overseas, it is right here in our backyard. “There is still a long way to go in eliminating period poverty in South Australia. Getting involved can simply be raising awareness of the issue within the community or by making a donation on our website so we can provide sanitary products to schools,” Ian says. Ambassador Rebecca Morse said, “it is unacceptable that girls in South Australia are missing school because they cannot afford sanitary products. We need to remove any stigma around periods and make sure girls have free and easy access to sanitary products when they need them.” Other ambassadors getting behind the campaign include national TV and radio host, Ash London, Channel 7 presenter, Rosanna Mangiarelli, Sam Costello, TikTok star Brooke Styles and former House Rules contestant Michelle Fogden.
