Written by: Charlotte Jackson Last week was the debut of our “M!NT Reach Out Program”, a newly designed online activity program to ensure those with intellectual disabilities are engaged physically and socially during this time of COVID-19. Over the last two years, M!NT Charitable Trust has been s triving to improve communit y awareness and engagement for our kids with additional needs. Our aim is to develop life-skills and foster meaningful, sustainable community connections. We’ve created something quite exceptional here in Central Otago, and with outstanding local support, we are making things happen! During this COVID-19 alert the intellectually disabled community are particularly vulnerable. Even after the nationwide lockdown is lifted, this immunocompromised community is going to continue self-isolating as the health-risk remains extremely high. Our young people are highly dependent with less resilience, so we want to do our best to lift them up and show them a new way

of social connection. Given social distancing will be ongoing for them, we hope to continue with this program and believe it will have future benefits in other aspects of life. We are keen to connect with other similar national and international organisations so we are excited about the possibilities.

Our 6-day program entails a gym session, music and drama action, yoga, facilitated buddy program and dance class. Thank you to our amazing teachers and trainers for volunteering their time, their incredible energy and drive keeps us all going. Let’s get through this together! It’s been a challenging time for everyone the last few weeks and we will as a community experience more challenges as we emerge from our bubbles and adjust to life’s changing landscape of uncertainty. We are a strong and resilient community, we’ve seen great examples of kindness, of courage and selflessness through this journey so far. So many people stepping up to help those that cannot leave their homes, to help their friends, neighbors, co-workers or strangers that need assistance, all in the efforts to protect them from the invisible enemy. We are all blessed to be a part of this community, to call this paradise our home. Our local businesses are greatly missed at the moment, they are the life blood of this once thriving and growing district. At this time of print - the lockdown continues at present, but stay the course as the alternative in other countries does not appear a good alternative. It has been lovely to see so many cyclists utilising the empty roadways for their exercise and the majority wearing helmets. Please ensure you do so, to save any additional burden on our medical staff. The week has brought the usual incidents for police to deal with. Monday saw a report to police of a dispute between flatmates and an incident of unlawfully on premises at a Wanaka business. A Police Covid-19 checkpoint at Makarora led to a local driver being apprehended for excess breath alcohol as well as breaching the Covid travel restrictions. Tuesday saw a young male and female being apprehended for travelling out from Wanaka to the Motutapu River. Another person was apprehended at a Covid checkpoint at Makarora for breaching the travel restrictions and excess breath alcohol, and another driver was apprehended in Wanaka for riding his motorcycle in breach of the Covid lockdown restrictions and whilst suspended from driving. The motorcycle is impounded for 28 days. Wednesday Police attended a family harm incident. Thursday Police attended two family harm incidents with one party charged for assault, and a drink driver was apprehended at over five times the legal limit. Friday dealt with a family harm incident, and a male was summonsed for a historical theft of bread whilst under the influence of alcohol. Clearly he missed – “the man does not live by bread alone” scripture lesson. Saturday saw Police deal with a motor vehicle collision. Sunday was a day of rest for the offenders. A large number of people have been warned about breaching the lockdown conditions. When we see the figures in NZ compared with other countries we know our Government has done the right thing. Many are struggling with some of the conditions and the economic affects. Be kind to one another and practice patience and tolerance, let’s get through this and forge a stronger community. CAULIFLOWER PUREE

Local Eats

With cauliflowers so big and cheap at the moment ($3-4 each) I wanted to share a really simple recipe that I use to add rich flavour and a little ‘fine dining’ touch to a home cooked meal. This is fantastic ‘pillowy base’ served under red meat, salmon or scallops. This particular recipe is not a ‘slimmers choice’ and you can swap the cream for more milk but the end result won’t be as divine.

1 medium head of cauliflower finely chopped

2 garlic cloves, sliced thin

•

1/2 cup cream

•

1/2 cup milk

•

2 tablespoons butter

•

1/2 teaspoon pink salt

INGREDIENTS 500g stewing beef (brisket, chuck) cut into 2cm chunks 2 large carrots roughly chopped 2 stalks celery (roughly chopped) 2 onions roughly chopped Sprig of thyme 1 bayleaf 8 button mushrooms 1 tbsp butter 8 small potatoes (Perla or similar, not floury potatoes). Peeled & whole 2 tbsp cooking oil 1 heaped tbsp tomato paste 1 tbsp flour 3/4 cup red wine 750ml good quality beef stock 2 tsp Worcestershire sauce (optional) 1 tsp red current jelly (optional)

Bring garlic, cream, milk and butter to a gentle boil and then reduce heat and add cauliflower.

2. Cover and simmer for 15 minutes or until the cauliflower is very soft. 3. Uncover and cook until liquid is reduced by half, about 5 minutes; season with salt.

4. Puree in blender until completely smooth. This will cool it down so add back to the pot and bring back up to serving temperature, being careful not to burn. 5. Using the back of a tablespoon make a nice swirl onto the plate and arrange your protein on top. Simple, sexy and delicious!

WARMING BEEF STEW SERVES 4: METHOD Season meat with salt and pepper. Heat oil in a heavy based casserole dish. Sear beef in hot oil until golden brown. Remove meat from dish and add in the carrots, celery and onions. Fry until vegetable start to colour, add in the tomato paste and cook for another 2 minutes. Add in flour and cook out. Deglaze pan with red wine. Slowly add in beef stock, stirring all the time and bring to the boil. Add in thyme, bay leaf and beef into

the pan. Add in potatoes and Worcestershire sauce and jelly if using. Meanwhile sauté whole mushrooms in a pan with the butter until golden brown. Add into stew. Simmer on a low heat for 2 hours approx. until beef is tender and potatoes are cooked. Served to a couple of well deserving kids and my longsuffering husband on a cold autumn evening!
