Looking back on my newlywed days, I can hardly remember what meals we had in that first little apartment. Though it might have been slim pickings, there were attempts at cooking for the hubs. Making that first big dinner as a new wife was a bit iffy for me. Cutting into crispy fried chicken to find it raw kind of makes you want to throw in the towel. If you have a cooking failure, please keep going. I’m so thankful I did. I slowly learned that just because my mom was a great cook, didn’t mean I suddenly knew all that she knew. That old saying, you learn by doing, is the gospel truth. When there’s a flop, figure out what went wrong, give your pride time to heal, and try it again. Don’t allow a food fiasco to scare you out of the kitchen. I may have been over zealous trying to tackle my mom’s homemade fried chicken, but some of those tried and true comfort foods are simpler than you’d think. Trying to recreate them can often seem daunting, but I’m here to help simplify one of the most sacred. Roast beef, queen of the comfort foods! I know preparing a roast may seem crazy for a new wife to whip up, but believe me, it’s very doable. It just might blow the socks off of your new hubby (and in-laws), too! The only intimidating part of cooking a roast might be purchasing the meat itself. So let’s simplify. I always thought I had to purchase the exact cut of meat my mom did (arm roast), but often times that cut is hard to be found at some supermarkets. Did you know that different butchers in different areas often name their cuts differently? A simple chuck roast will give you consistent results no matter if it’s done in an oven or crock pot. The slow
cooking process a pot roast goes through is critical because it allows those fibers to relax into heavenly tenderness and the bits of fat melt into the meat making it perfectly juicy. I am NOT a fan of fat in meat and will pick every morsel of it off when eating, but it is most important in the cooking process, so, hang in there! A FEW TIPS Cuts of beef labeled top round and bottom round (i.e. rump roasts), come from the back end of the cow. These roasts can often be done successfully with the dry roasting method. However, since they are not heavily riddled with fat, collagen and connective tissue, they are often better cooked with moist heat as in stews and such. Chuck roast or arm roast cuts come from the other end of the cow, the area around the neck and shoulder. The cuts in this area tend to have more fat, connective tissue and collagen, which make them the best choice for cooking slowly, as in a pot roast. As the fat and tissue break down during cooking, they give the meat a wonderful texture that's more noticeable in a roast than it would be if the meat were cut up in a stew. Several cuts work well for pot roasts, the key is cooking them slowly until they are nice and tender. We all generally tend to cook what we grew up eating, so if your grandmother has mastered cooking a certain cut of beef, please, by all means, keep that tradition going. However, in my life experiences, we’ve always gone with an average size chuck roast and it serves our family of five consistently well. Cooking a roast can be done several ways. If you like the old school style roast with gravy and mashed potatoes on the side, cook the roast all by itself. It will easily cook in the oven for about 2 ½ - 3
hours, or 7-8 hours in a crock pot. If you prefer a one pot meal deal, pile in some chunks of potatoes and carrots. Keep in mind that the roast will take an hour or so longer to cook with veggies added.
another hour or so to the cooking time. Don’t forget to season those as well! 2. If using a crock pot, preheat on high, add meat and then change temperature to low if cooking overnight (6-8 hours). For speedier cooking, keep on high for 3-4 hours. Adding 4-6 cups of vegetables and beef broth to the roast will add another hour or so to the cooking time, plan accordingly. 3. The natural juices created from the cooking process will make a delicious light gravy for serving. When the roast is removed for slicing, you can thicken this broth by adding a mixture of 2-3 tablespoons of flour whisked into a cup of water.

broth and simmer until thickened. If mixture becomes too thick, thin with a bit of water. Check for seasoning and adjust if needed. CUTTING THE MEAT To check if the meat is done, remember WHAT YOU NEED:

Who doesn't love a family outing where there is
something for everyone?
Add in colorful, glowing, special-shaped, huge balloons and you have Longview's Great Texas Balloon Race. Those who came out to the East Texas Regional Airport found excitement and fun everywhere. Highly skilled, world-class, competitive hot-air balloon pilots from across the United States and the world came to participate in the money races and to share their beautiful balloons with the crowds. The sight and thrill of air-born multi-colored, hot air balloons was breathtaking. To add even more fun to the event were venders exhibiting their creative wares along the midway, games and prizes in the Kids Land station, concerts by nationally-known artists, and lots of great food. This family oriented fun and competitive excitement has made Longview's annual Great Texas Balloon Race one of the most anticipated community and area events for years. To say the least, sponsors of the event are much appreciated by all. This year, Traditions Restaurant and Catering, one of East Texas’ finest food establishments, was asked to cater a meal for the VIP race sponsors. The owners of the Tyler based restaurant accepted and generously donated their services and food. Traditions Restaurant and Catering staff went all out with their presentation. Bacon wrapped Chicken Breast with Basil Cream Sauce (a Traditions signature dish) and USDA Choice Carved Roast Beef with Au jus and sides including Oven Roasted New Potatoes and White Chocolate Bread Pudding (another signature dish), made their full service presentation a stellar experience. The sponsors truly enjoyed their meal. East Texas Balloon Race Director, Michelle Ford says, “Imagine the surprise of those in attendance when after entering the Sponsor Tent
they realized a fabulous dinner including a roast beef carving station was awaiting them. Everything about the meal was phenomenal and the White Chocolate Bread Pudding completely put the meal over the top. If you are in need of a caterer for any size function you should call on Traditions first, as they are without a doubt, the best!" Jason Bush, Traditions' general manager says, “We enjoyed honoring the sponsors of the East Texas Great Balloon Race. We provide our food and time, and the event provides a bit of advertisement for us. It’s also our way of giving back to the community." Traditions is no stranger to “giving back” to the community. It holds contracts with organizations such as the East Texas Crisis Center and the United Way to serve their meals at discounted prices and they donate to golf tournaments that benefit our veterans. On August 18, the restaurant will be donating 10% of their total sales to TASCA, an organization that provides programs for senior citizens. The list goes on and on. “We are always willing to give when asked, even if it is just a cobbler for a church fundraiser,” Bush notes. Established in 2000, this family-owned, family-operated restaurant’s primary objective is to provide upscale family dining options for the people of East Texas. At its inception, the restaurant’s owner, Robert Owens, a former thirty-year Luby’s Cafeteria employee, set out to
catered a church event in Bullard, a business dinner in Longview and a Shriners’ event in Tyler. Traditions has catered as many as twelve events at a time in the past. They normally have around 700 catering jobs a year and will go as far south as Lufkin, north to Sulphur

Often Jason Bush or Kathie Reed, Traditions catering coordinators, go out of their way to help customers by suggesting specific menus in order to keep the prices appropriate for that individual customer. Another obvious factor that accounts for Traditions excellent reputation and popularity, is its staff. “Our staff is probably one of our greatest assets. That, combined with quality food made from scratch every day, sets us apart from many other restaurants." The 100 plus part or full time employees of this establishment are dedicated and always looking for ways to do better. “We appreciate our employees and treat them well. That keeps them happy and, in turn, keeps the customers happy. That is really the only way to be 35 successful in the food industry,” Bush notes. Many of their employees started young as they worked at Traditions through high school, college, and on summer vacations. Several now work permanently for the establishment. The 2014 East Texas Balloon Race sponsors received some of East Texas’ best when Traditions Restaurant and Catering served them. The owners and staff are exceptionally giving and dedicated to their customers' satisfaction.

establish a similar concept. The Tyler restaurant is cafeteria style. It even offers a drive through window where customers can zip through and pick up pre-ordered individual meals or casseroles. Robert Owens takes pride in giving Traditions customers a total dining experience when they choose his restaurant. Customers will find the building itself and décor beautiful, the atmosphere warm and inviting, and the staff friendly and professional. The catering side of the business offers an endless variety of food themed possibilities. All the catered food is expressly made and prepared for the individual catering event. “We are able to provide any theme menu,

Traditions is truly a community service provider in that it caters city functions, special events at area schools, plants, and corporations. It holds contracts with the Jacksonville, Longview, Canton, and Tyler Chambers of Commerce and numerous doctors’ offices. Recently, the staff simultaneously

When customers schedule incorrectly or change the day of an event and accidentally forget to inform Traditions, no problem! Stand-by employees are called out and within minutes, the food and equipment are collected and loaded and the event is rescued!

Our engagement story began when Shane and I were planning a trip to visit New York City and Boston. For months we discussed hotels, flights, and “must see” sights. We had planned our trip around a Texas Rangers vs Boston Red Sox game because Shane wanted to visit Fenway Park and I love baseball games and traveling. I was so excited to be going to New York City with Shane mostly because I had wanted to visit the Big Apple for so long and one of my best friends had recently moved there. Once in New York City we found ourselves getting lost on the subway system on our way to every site. We found this frustrating yet comical. On April 3, 2014 we set out to see the Statue of Liberty and the Empire State Building. It was overwhelming approaching the monuments because we were bombarded by people trying to sell us tickets to get into them. As we were walking closer to the Empire State Building, and after being lost underground for a good hour, we were again stopped and harassed by a sales guy. I looked at Shane for some guidance because I didn’t want to be the rude Texan and I was surprised to see Shane pull some papers out of his jacket. He told the guy we already had tickets. I was shocked! 1) I didn’t realize you had to have tickets to get in and 2) I didn’t realize Shane had already bought our tickets because he is not a planner. I was thankful he thought ahead because I had certainly dropped the ball not doing the research to know we needed tickets.

When we entered the building, it was very hot! Being from Texas and not accustomed to low 50 degree weather in April, I had layered my clothes that day. (Or perhaps it was also my body’s way of trying to tell me something big was about to happen.) We walked through a security check point and took our picture in front of their backdrop. But I was still hot and was taking off every layer I could as we hiked up six flights of stairs to get to the 86th floor and to the outdoor observation deck. Imagine the relief we felt when we got to the fresh air and the magnificent scene awaiting us, NYC in all its glory! It was beautiful! Shane and I walked around the east side and then the south side of the deck looking at the Statue of Liberty, which earlier had looked so small and remote from a distance. When we got to the west side, Shane asked a security guard if he would take our picture. He politely declined saying he was not allowed to take patron’s pictures. We shrugged it off and walked a little further, continuing to take in the view. Then we saw a lady and her daughter who didn’t look too deeply enthralled in conversation, so we asked the lady to take our picture. Knowing myself and how critical I am of my pictures I knew this was my one and only opportunity to take a picture with Shane at the top of the Empire State Building. I attempted to fix the beanie on my head and arranged my coat and scarf in my arm to look my best. As the lady was getting ready to point Shane’s iPhone at us and as I was getting ready to put my arm around Shane, I heard him say,
“I have something that will brighten up the picture.” Confused, I looked over at Shane. As I was watching him, he was getting shorter and shorter and my eyes slowly followed him down towards the ground. He pulled out a little black box and I realized what was happening. I immediately had tunnel vision and the next few minutes felt like slow motion. Shane was literally shaking at this point, and not because he was cold. I have never, in all the years I have known him, seen him in such a nervous state. His eyes were almost teary and red. I was actually becoming worried that he might pass out. As I listened to his words telling me he loved me and asking me to marry him, I felt a surge of emotions. I was so overwhelmed and could barely speak but managed to say, “Of course!” We embraced for what seemed an eternity. I finally realized I hadn’t seen my ring yet or put in on, so we put the ring on my finger and made it official. I said “We’re engaged!” in a happy, somewhat loud voice to the other visitors while holding up my ring. We got a few claps and cricket chirps...Tough crowd. The lady handed back his phone and said she took a lot of pictures which we were so thankful for. Capturing this breathtaking moment with pictures made it so much more special and perfect. I was in a state of euphoria for the rest of the day and the rest of the trip as a matter of fact! Shane regained his normal, calm composure and we made our way to the 102nd floor to finish our tour of the Empire State Building.
