MOJITO MADNESS

THESE COOL AND REFRESHING COCKTAILS TAKE THE SIZZLE OUT OF ANY SUMMER WEDDING

|  THE WEDDED BLISS  JUL-AUG 2013

Some escape the heat waves of summer for higher altitudes and cooler temps. I, on the other hand, must be part lizard, because I enjoy the heat a bit too much. There’s just

12

something about the warmth and the fresh fruits of summer that make me wish it would stay forever. One of my favorite summer-y citrus fruits is lime. For summer parties and gatherings in our hot and humid region, finding the right balance of something that’s not overly sweet, that will also appeal to the whole crowd can be a bit tricky. If you’re looking for something that is light and slightly fruity, Mojito’s are the answer. Whether you make them traditional style, with alcohol, or without – the flavor is phenomenal. What could be more fun and festive than setting up a Mojito bar for your next gathering or even at your wedding reception? Let’s start with the basics of Mojitomaking. Mojito’s have only a few basic ingredients – making them all the better. Start with the traditional mint and lime version or build on that to make any custom flavor you’d like. Strawberry, Mango, Watermelon, Raspberry, Blackberry, well, you get the idea. What better time to take advantage of all of those fresh ripe fruits of summer. Now, there is a little bit of rhyme and reason to preparing a Mojito (quite similar to a Spritzer or Limeade, by the way). Rule number one is to place the sugar, lime and mint in the bottom of the glass and “muddle” it. Muddling helps dissolve the sugar, juices the lime and releases some oil from the mint. Some recipes out there suggest using simple syrup instead of granulated sugar for your Mojito, either is perfectly fine. Rule number two is, too much muddling and you have fruit pulp in your straw and/or the mind has turned into what feels like lawn clippings in your mouth- not so delicious! Remember, to ‘muddle,’ you just want to bruise the fruit and mint a bit, not destroy. You can certainly strain out the mint and/or fruit after you muddle, but generally people don’t. This full fruit, rustic style is preferred by most Mojito lovers. Don’t be intimidated by the steps, it really is fool-proof.

INGREDIENTS FOR 1 CLASSIC MOJITO:

TO PREPARE A STRAWBERRY, MANGO,

• 1 12 oz. glass

WATERMELON OR BLACKBERRY MOJITO:

• Club Soda

Use the classic Mojito recipe, but add in your favorite fruit, along with the lime, in the muddling process and continue the steps from above – add another slice of fruit for garnishing if desired. Remember, to ‘muddle,’ you just want to bruise the fruit and mint a bit, not destroy. When using a more delicate fruit, you might add these in after muddling for a prettier drink.

• White Rum, generally 1.5–3 oz. • 2 teaspoons granulated sugar (or 1–2 oz. simple syrup, recipe below) • 5–6 mint leaves • ½ of a lime (more to garnish, optional) • Ice (crushed is great but any will work) • Straw, optional HOW TO MAKE A SIMPLE SYRUP (OPTIONAL) • 1 cup granulated sugar

TO PREPARE A VIRGIN MOJITO:

• 1 cup water

Use the same ingredients/steps as a traditional Mojito, without the rum and add an extra squeeze of lime. Garnish with mint leaves and a lime wedge. (For another treat, omit the mint, add a few maraschino cherries and you will have a cherry limeade!)

Combine sugar and water by bringing to a boil in a small saucepan or by using lukewarm water and shaking together in a sealed container/jar until the sugar is completely dissolved. This can be made up ahead of time and kept in the fridge for up to 6 months.

Enjoy the lazy days of summer, indoors or out, and please drink responsibly.

TO PREPARE A CLASSIC MOJITO:

Put the lime, mint, and sugar in a glass and muddle, using an actual muddler OR the end of a wooden spoon. If you are adding any other fruits for a flavored Mojito, add these in at this time as well. Fill cup 3/4 full with ice, add the rum and top off with Club Soda (Sprite or 7UP works too). Garnish with mint leaves and a lime wedge.

Q

VON’S VICE | BY VON CRISWELL

Dear Von,

A BEAUTY ADDICT’S INPUT ON MAKE UP, STYLE & WELLNESS

I just got back some of my engagement pictures, I’m disappointed in how my tan looks. I seem to be too orange and my face is a different color from my body. I’ve even spray tanned my face hoping for an even tan. Even my fiancé says I look different in the pictures than I did in real life- how is this happening? Magda - Name has been changed to protect the guilty ;)

|  THE WEDDED BLISS  JUL-AUG 2013

Dear Magda,

18

There are a couple of reasons your pictures weren’t so perfect. Let’s start with the dreaded tanning topic. I’ve got so many thoughts on this I wonder if I can fit them into one article! Despite blatant and regular warnings from doctors, it’s a trend that just won’t quit among some Caucasian women. The quest for the perfect glow is a trend that can lead to disaster! I recently had a nightmare (eh, tan-mare) situation when a brideto-be client removed her terry cloth bathrobe to reveal arms that were badly streaked from a spray tanner. Dark, spotty patches had crept between every tiny fold in her skin. And her photographer was capturing every uneven moment of it. My heartfelt advice to clients is to discover their own skin-tone muse. Finding a celebrity who shares your same skin tone, coloring and hair can help you appreciate your own beauty. I remind clients of Julianne Moore whose signature freckles seem to enhance her natural glamour or Gwen Stefani whose fair complexion is a virtual trade mark. Perhaps the ageless Tilda Swinton is the best example of how avoiding the sun altogether can keep one scarcely looking a day over 30, although she’s actually well into her 50s. For those of you still convinced that the key to beauty lies exclusively under the bronzed banner, here are my “Golden Guidelines”.

VON’S GOLDEN GUIDELINES

TANNING BEDS Tanning is bad for you. You’ve heard all the reasons why before. Often client’s respond to my chastising with an explanation that they, “cover their face with a towel” as though this is helpful in some way. Creating more contrast between your covered face and exposed shoulders means it will take significantly more foundation to even out your skin tone. Furthermore, increased melanin isn’t exclusive to giving you a tan appearance. Tanning makes freckles look darker, cherry angiomas and hypo pigmentation appear brighter giving your shoulders and décolletage an uneven appearance. Local photographer, Brandi Burkett recently touched on another downside of tanning when she said, “If you won’t listen to your doctor, listen to a photographer who has spent the last eight years photoshopping wrinkles off of 22 year old women. TANNING IS BAD FOR YOU!”

SPRAY TANS From an esthetician’s perspective, spray tans are superior to UV exposure. From a make up artist’s perspective, it’s a entirely different obstacle course. Spray tan’s can be unpredictable, so put the odds in your favor by always seeing the same technician, in the same salon. Next, learn how your skin will react to your spray tan. Take note of the details such as: If your spray tan leaves you with an orange-ish tone for a day or two and then settles into the bronze glow you were hoping for, plan accordingly.

VON’S VICE:

Take photographs of yourself in natural daylight using a 35 mm camera or better (not your smart phone). This will give you a more

realistic prediction of how your skin will fare on your wedding day.

WAXING, SHAVING AND TANNING Are you planning on receiving facials or chemical peels before your big day? If so, schedule it properly and coordinate your dates under the advisement of your professionals. Knowing the exact answer to all of these questions is the difference between a subtle, even glow and a Lindsey Lohan-ish-dirty-palm- disaster.

ENLIST A PROFESSIONAL MAKE UP ARTIST WITH PHOTOGRAPHY EXPERIENCE This is the last step in ensuring your most perfect skin tone. Tell them your skin type and that you want to achieve a bronzing glow. A trustworthy make up artist can give you real feedback and advise you on your best look. Whatever skin journey you happen to be on, arm yourself with a skilled team of professional make up artists, estheticians, tanning professionals and photographers, then trust their advice! We have only the most beautiful you in mind!

OTIS With the METRO BAND

The man with the

GOLDEN VOICE

When the multi-dimensional group Otis with The Metro Band takes the stage, it doesn't take long for their music to get people onto the floor dancing, jumping and swaying. The group's tunes span the genres from R&B to country to hop-hop and inspire positivity, excitement and elevated spirits in their audiences. The East Texas based, six-member band has been performing hits for three decades and they’re stronger than they’ve ever been. With acts ranging from Nat King Cole’s

“Unforgettable” to Prince’s “Kiss,” the team of musicians has what it takes to play any wedding, anytime and anyplace. But Prince wasn’t always on front man Otis Webster’s set list. In fact, Prince would have been forbidden from his childhood radio. “I started in the music business when I was only 10-years-old,” he recalled during a recent telephone interview. “My stepfather had a little gospel group and I would sing tenor on the mike.” Otis always loved music, but secular music

is what he craved – songs of Nat Cole, Tony Bennett and big band tunes. “I had to sneak around just to listen to the good stuff,” he laughed. Decades later, Otis has come a long way. He has had an exciting career in performing arts. The lead singer and musical inspiration of Otis with The Metro Band, Otis has been in show business for more than 40 years. His range in vocals and musicality is obvious as he talks about his travels and diverse musical past, ranging from jazz to country/western to

are all excellent crooners. What sets them apart from other live bands, you ask? Versatility. “There are lots of great live bands around if you are looking for genre-specific music, but I do believe that we play it all well, jazz, country, rock, R&B, even hip-hop,” Otis said. “I don't know any group who can do those all really well, but we do and we all sing. We have some world class harmony.” The band specializes in music for all occasions be it conventions, festivals, private clubs, colleges, universities, fraternities, corporate parties, political rallies and reunions. But what they love most is weddings. “When a bride books us,” Otis said, “she can expect a first-class performing band and first-class looking band on a night that she will never forget!” The band plays about 200 gigs a year. They stay booked 3-6 months in advance, so Otis suggests contacting his wife, Bennie, as soon as you know you’d like them to play at your reception.

“Hire us and you’ll get more than what you pay for, that’s for sure,” he said. “We put the quality of our product ahead of the quantity of our profit. Nothing pleases me more than to see a bride happy on her big day. Music is a tool that we use to add value to the lives of people. If we can make someone happy with what we do, then it’s worth all the time and effort."

disco and rock. Aside from appearing with such greats as Glen Campbell, Johnny Mathis and Lou Rawls, Otis has performed in Las Vegas, New Orleans, Dallas and many other cities throughout the country. And with the Metro Band band, he has enjoyed many new places and faces, as well. While the band has traveled far and wide since their inception in 1979, they have largely stuck to a tri-state area: Texas, Louisiana and Arkansas. “However, our motto is Have Card, Will Travel,” mused Otis. “You name it, we’ll be there. It’s fun to get out of town. It’s good for the soul from time to time.” The band consists of Otis on vocals with his smoky, smooth voice, George Faber (admiringly referred to as "King George") also on vocals and key board, Joey Monk who rocks the drums and vocals, Crawford Davis on bass guitar and vocals, Kyle Stroud (not pictured) on saxophone and vocals and Tony Marsh on lead guitar. The kicker is that they all get a time or two on vocals and they

“ ” I wanted to thank you again for the wonderful job you all did at our wedding. Not only was it incredibly easy and stress free to work with you guys, but the band themselves made people want to stay on the dance floor. That says a whole lot about the band considering there was no alcohol at the wedding. I will be highly recommending you to anyone that asks for a great band. Thanks again and God bless. – Chad Freije

CHELSIE LOFTIN AND LUKE SPENCER Luke Spencer and Chelsie Loftin met two years ago while they were both were attending the University of Miami School of Law. One of Chelsie’s friends had asked her to play ultimate Frisbee in the Dean’s Cup, an annual event between the law and medical students. At the Frisbee game, Chelsie noticed a tall, handsome third year law student; however, he was playing in a different Frisbee game than she was and the two did not speak. After her game ended, Chelsie went home and looked at the names of individuals playing Frisbee that day to see if she could locate her mystery man. Little did she know that while she was busy noticing him, Luke was busy noticing her! He was also trying to track her down by sending out a mass email inviting all of the Frisbee players at the game to join a local Frisbee league. About the time Chelsie received the email

from Luke, she found and sent him a friend request on Facebook and agreed to join the league. The two began talking and Luke soon asked if he could take Chelsie on a date. For their first date, Luke arranged an eventful day that included picking strawberries, hand feeding giraffes, and dinner at an ocean front restaurant. During dinner, Luke revealed that the only reason he sent out the mass email was because he had hoped that she would respond. Chelsie quickly revealed that the only reason she joined the Frisbee league upon his invitation was to meet him in person. Now that the pair had finally found each other and met, they soon became a couple. Luke was known to plan adventures for Chelsie. The two had gone shark diving in the Bahamas, lobstering in the Florida Keys, night diving with manta rays in Hawaii,

among other things. So, Chelsie had no suspicions when Luke suggested that they take a trip to Bend, Oregon to visit his grandparents and to go skiing, snow shoe trekking, cave exploring, hiking, and dog sledding. On the first night in Oregon, Luke told Chelsie that they would be taking a moonlight snowshoe tour through the Deschutes National Forest. When they arrived at the location to meet the guide, no one else was there and Luke expressed surprise that no one else had booked the tour. The pair set off with the guide and drove up Mount Bachelor. The weather was perfect and it was an absolutely clear night. Every star in the night sky was visible and the mountain was covered in fifteen to twenty feet of snow. About thirty minutes into the trek, Luke asked the guide to stop for a photograph of the pair

and suggested that Chelsie stand on a snow mound surrounded by fragrant, snow covered evergreen trees. At the top of the mound, 6500 feet up Mount Bachelor in 24 degree weather, Luke got down on one knee and asked Chelsie to be his wife. Later, it was revealed to Chelsie that Luke had actually bought the entire snowshoe trek out and the tour guide was in on his plan! Chelsie, of course, said yes. She is a bit spoiled because she actually gets two engagement rings! Luke proposed to her with a diamond ring, but he also let her customize her own ring and band. The two plan to wed in Texas, Chelsie’s home state. They cannot wait to start a lifetime of adventures together, starting with a honeymoon in Bora Bora! Luke and Chelsie are both attorneys in Miami, Florida, and will be residing there after their nuptials.
