A county fair like atmosphere of games, booths, and antiques entertained honored guests until dusk. A candlelight dinner under a chandelier lit tent followed, with dancing under the moon and stars lasting well into the ante meridiem. What a beautiful time of year this is - just pure beauty. Trees showing off their colors and the temperatures begging us to get outside and enjoy it all. Whether you are planning a fall wedding

or planning for the holidays, the countdown is officially on. The seasons change and the holidays begin. Want to venture out with an impressive dessert that is simply luscious? Have you ever thought Crème Brûlée would be the answer? It is easier than you think. Oh my heavens. Not only could we just stop right there but, we’re gonna kick it up a notch and make Pumpkin Crème Brûlée. I mean, come on ya’ll, it’s fall! Crème Brûlée, or ‘burnt cream,’ dates back to the late 1600’s as we know it today. If you’ve never tried this delicacy, it is a dessert made of a rich custard base and topped with a layer of crunchy caramel. That crunchy, sugary, caramel top that makes Crème Brûlée a Crème Brûlée is done at the last minute under a broiler or right at the table by sprinkling sugar on top and ‘burning’ it. Traditionally it is made in individual shallow porcelain dishes called ramekins. This allows them to be placed under the broiler/torch to melt the sugary topping and porcelain can handle those ‘fridge to broiler’ temps. If you decide to torch yours at the table, small kitchen torches are available at most kitchen shops or superstores for twenty dollars and up. Wouldn’t it be great fun for your guests to have a torch at the table? It’s not hard, I promise. Just be smart and all will be well. If you don’t have a kitchen torch readily available, you can try the redneck version of this by using your husband’s propane torch – which is quite possibly the category we fall into. (The guests will never know if you do that little trick in the kitchen). But, you will go the classy route, I am sure, and use a small, much more attractive kitchen torch or use the super safe route, your broiler. Contrary to popular belief, Crème Brûlée is truly very easy to make. Even the first time I attempted this, no 911 calls were made and the desserts turned out beautifully. You will seriously be looking for other recipes you can torch next.

A Thousand Word Productions started in 2006 when owner Nathan Browning and his wife Shelley were planning their own wedding and realized the options for a videographer were very limited. The rest, they say, is history! They have done over 400 weddings and strive to "preserve magical events where vows are exchanged and lives are changed forever." We sat down with owner Nathan Browning to hear about how he started his business, the current trends in videography and his personal experiences with weddings.

Q: A:

What is the history of your business?

My wife, Shelley and I met while both working for the local NBC station. When we were planning our wedding, we wanted

a professional video. Looking around we realized that we didn’t have many options and the one guy who did offer wedding videos, wanted $3,000! We used the camera crew from the TV station and we put the video together ourselves. From that point on, friends and family had us doing their weddings. It became too much, doing both jobs so I had to choose. The choice was between shooting news stories of car wrecks and murders or shooting weddings. Shooting weddings seemed like work that would last for decades, even centuries in some cases, capturing people's happiest day. It wasn’t a hard decision!

Q:

What are some key questions brides and grooms should ask when shopping for a videographer?

A:

(1.) How do you record sound? If the answer is, the camera has a microphone, do not hire them! They must use a lapel microphone on the preacher otherwise you will hear a child screaming or other outside noises in the audience above the wedding vows. (2.) How many cameras do you use at the ceremony? Never hire a person using one camera. You will not be able to enjoy watching the ceremony when the camera is zooming in and out.

Q:

What new trends do you see in the industry that brides should incorporate into their wedding?


A:

The bride and groom sending each other gift's with a note or love letter before the ceremony. We also see fun dances with groups and/or parents. It makes for a less emotional reception and more of a party atmosphere.

Q:

It seems that the video industry has boomed over the past 10 years. Highspeed internet, Youtube, and technological advances in camera equipment have made video more accessible than ever before. What is your take on how the industry has changed in the last 10 years, both generally and specifically in the wedding videography industry? How has this impacted your business? Have you seen a shift in perception when it comes to photography vs videography within the past 10 years?

Every wedding has 30-50 hours of editing time. We use 3-5 cameras at the ceremony and just the ceremony takes 1-2 days to put together.

Do you ever find brides worrying about the videographer getting in the way of the party? If so, how to you calm those fears?

We were at Elmwood Gardens shooting our first ever live streaming video of the ceremony. The Bride’s family was from Australia and the Father of the Bride, who was 6'5" says to me, “Nathan this better work! It’s 2:00 am in Australia and everyone is awake ready to watch!” My response was "There are no guarantees, sir, but we will do our best!" After the ceremony, the family was posting on Facebook and they couldn’t believe they were sitting on the couch watching a wedding 10 thousand miles away. One family was watching from England, so we had 3 continents watching live!

Ten years ago if you wanted to share your wedding video you would need to invite your friends and family over to the house and pull out the VHS tape of your wedding. Now you are able to share and show off the biggest day of your life with everyone you know. But this has also created a very big problem for the wedding video industry. Many new wedding videographers do not shoot the documentary of the day but make a very nice highlight video. At some point Brides will wonder what was said during the

If you point a video camera at any person, chances are you will make them nervous. With our experience, one of the most important things we do is make people forget we are there. Little techniques like staying back but zooming in and never pointing a camera up close to a person’s face are very important.

Q:

What moments are "musts" for being caught on tape?

A:

(1.) Every Bride misses half of her own wedding. They pick out the flower girl and bridesmaids but never see them going down the aisle. The grandparents and parents coming down the aisle is seen by everyone but the bride. (2.) Making sure the vows are captured is important! Everything comes down to the promise you are making together. (3.) All speeches by the wedding party and parents and the traditional dances. My mom passed away 3 months after our wedding and I can say after losing a parent the videos you have of them are priceless.

BONUS: As a videographer you must attend so many weddings. What is the

When the Pilgrim Family needed a caterer for their daughter’s wedding they chose Lori’s Eats & Sweets in Gilmer. The wedding reception, a vintage southern outdoor party was held at the estate of Mr. and Mrs. Lonnie “Bo” Pilgrim. Before the buffet opened, guests enjoyed a Cold Beverage Table offering Southern Iced Tea, Sweet Peach Tea, Citrus Infused Water and Strawberry Lemonade. After the bridal party arrived the buffet opened. A Carving Station featured smoked turkey breast and pork tenderloin accompanied with Raspberry Chipotle, Horseradish Mayonnaise and Sweet BBQ Sauce served with several different varieties of homemade hearty rolls that guests could make sandwiches with or enjoy alone. The Fruit Table included an assortment of domestic imported cheeses, dried fruits and seasonal local fresh fruits, Blue Cheese Stuffed Grapes and fresh made Italian Bread Rounds. The Simply Southern table was highlighted by BO’s Chicken Bullets, a secret Pilgrim family recipe enjoyed by all. They were served alongside Caprese Skewers (juicy tomatoes, creamy fresh mozzarella, basil and olive oil), flaky Pastry Wrapped Asparagus, rich Artichoke Stuffed Mushrooms and spicy Fire Roasted Corn Salad.

Honey Smoked Salmon, Chipotle Lime Salmon and Cracked Black Pepper Salmon were served along with water crackers, grated boiled eggs, crème cheese, capers and diced purple onion. The Dessert Buffet included an elegant wedding cake, Homemade Peach Cobbler and the grooms’ grandmother’s Pear Crumble Pie.

Formal Classic Dinner and Dessert Buffet

says Lori Valenti, Event Coordinator at Perfect Catering in Longview. On May 25, Perfect Catering had the challenge and the opportunity to provide a seated dinner for the Longfellows 31st annual Debutante Ball held at Maude Cobb Convention and Activity Center. Lori says that Perfect Catering was asked to submit a bid for the event and won it. “The history of Longfellows in Longview is important. We appreciate that they chose a local caterer who understands our community and we were honored to be part of this historical event.” Since 1983, Longfellows has presented more than 200 debutants at the annual ball. Usually around six young women are presented each year and have all completed their freshman year of college. The debutants have been active throughout high school in organizations, volunteering extensive community service hours and continue this dedication into their college careers. Longfellows was formed when former attorney and Texas Senator Jack Strong wanted to do something to enhance the cultural environment of Longview. The social organization grew from there. The Longfellows coat-of-arms contains emblems that are representative of Longview, from which the organization derived its name. Longfellows today has a membership of about 180 people. The membership has maintained 29 families of the original 89 charter members. In addition, the Longfellows organization has six junior members under 30 years of age. The 2013 Longfellows Chair Margaret Dodson and her committee, chose to make the ball very modern, glamorous and luxurious featuring all white decor. Guests sat in acrylic ghost chairs, ordered cocktails from mirrored bars and the

debutants were presented on a stage with mirrored steps. “Honestly, the decor was not anything like Longview typically sees. The design team did a amazing job,” says Lori. The night consisted of glamour, a symphony, dancing, music, drinking and of course a delicious meal. Guests were passed hors d’ oeuvres of Lobster Shooters with Vodka Cocktail Sauce and Spanakopita. Such an event with 400 of Longview’s elite guests called for a seated, plated dinner that was handled expertly in less than 20 minutes from start to finish. Perfect Catering served a salad with fresh greens, Beef Tenderloin Medallions with Cognac Sauce, Chateaú Potatoes and Grilled Asparagus Spears. The sleek all white dessert buffet adorned with white hydrangeas featured White Chocolate Covered Strawberries, White Chocolate Pots de Crème served in footed containers with tiny dessert spoons, White Chocolate Fudge, White Chocolate Covered Malted Milk Balls, and a coffee bar. “This event was one of the largest seated dinners we have done and it certainly required a certain technique to make it a success. We wanted our food and service to compliment the stunning debutants, decor and guests and it did! Perfect Catering can create a luxurious and glamorous affair that your whole wedding party will be talking about for years to come!
