Every couple of months my friends and I always pick up the latest copy of The Wedded Bliss and pass it around the table like a family style wedding buffet! We love looking at all the current trends, the various vendors, and most of all, seeing people we know on one of the happiest days of their lives! Long before the days of Pinterest, and even before I met my husband, Jeff, I was reading The Wedded Bliss. I was never one of those “dreaming about my wedding day since I was little” type girls, but as a young adult and after witnessing my sister and many close friends on their special days, I couldn’t help but be excited for my own event so someday. Being part of others’ weddings, I’d tromped through my fair share of wedding extravaganzas, untangled my way in and out of bridal boutiques and bustled a few dresses (some more successfully than others) and can honestly say I’ve truly loved every minute of each adventure. I guess that’s why The Lindsay Steele Photography Wedded Bliss magazine has always held a special pl place in my heart over any other bridal magazine or publication. When you flip through the vivid and striking photographs of people you know, you feel their happiness and joy, too. Fast forward to December 2015, when my amazing photographer Lindsay Steele called to tell me the cover of The Wedded Bliss was available. Excitement was an understatement, it really made my day and Jeff was just as elated! Jeff and I were truly blessed with lots of love (and lots of hard work) from our friends and family and talented vendors that made our wedding day even more special than we could have ever imagined. I couldn’t wait to show off the remarkable work our vendors put in to making our day spectacular! When the Jan/Feb issue of the Wedded Bliss came out, my dad was the first one in our family to go out and grab a copy. He was so proud! Being featured in The Wedded Bliss is not only a treasure to Jeff and me, but also to our families. I want to thank Sandra and The Wedded Bliss staff for creating such a stunning way to preserve loving memories, and also for providing the brides of East Texas with a tangible way to see all of the talented vendors in our area. Even though our wedding festivities are over, we’ll always be able to relive our perfect day in the most magnificent way, thanks to this magazine!

TIFFANY PETTY AND SETH GILLIAM Tiffany called Seth “Cowboy” because he grew up calf-roping. Tiffany grew up going to shows, listening to music and being an artist. Both Tiffany and Seth were from Tyler but they were complete opposites. Though Tiffany and Seth grew up in the same town with tons of mutual friends, they never met. They even went to the same youth group at Grace Community Church; in 2006, they went on a mission trip to Mexico together and sat one row apart on the charter bus! Even when their worlds were so connected, The Lord just sat back, smiled, and waited for the right time. In 2012 Seth had graduated from Texas A&M University and was the last 4 years in downtown Nashville, TN as a Tattoo Artist. She decided to move back home, too. They were introduced in Brady's coffee shop in 2013. They used to sit alone, at two different tables but after their introduction, they sat together at one table talking for hours each morning. They had the Lord in common, and after a few months, decided to give Him some room to move in their lives and hearts. They began dating late in 2013, and were engaged on November 20, 2015. In November 2015, Tiffany went on a long tour with her friends. Seth spent the time while she was away trying to find the perfect

back in Tyler doing his best to find a career. Tiffany had spent
spot to propose in downtown Tyler. Since they had met downtown 19 and both had affection for the history of the area, downtown was special. As luck would have it, Jack Ryan's Steakhouse was opening very soon at the Petroleum Building. Once he saw the beautiful 1930's Art Deco building and the amazing rooftop view of downtown Tyler, Seth knew Tiffany would love it as much as he did. Their friends, Lorie and Newt Farrar, had an office on the 13th floor of the Petroleum Building in the 1980s.
When Tiffany got
back from tour, Lorie told her they had been invited to a soft opening of the new restaurant, but they would be unable to attend. Newt's pilot job requires him to travel frequently and so it was not suspicious at all that they were extending the invitation to the cocktail event to Seth and Tiffany instead. Lorie told Tiffany it was a cocktail event with drinks and hors d'oeuvres, and that she and Seth were welcome. Little did Tiffany know, the entire event was made up. The steak house was open, but there was no event, no soft opening. On November 20, 2015, Tiffany spent the day with her best friend Hope Simpson, who happens to be a hairstylist in Tyler. Hope has been giving Tiffany haircuts and fixing her hair for years, so when she spent the day with Hope getting a trim and a blowout, it was nothing out of the ordinary. Then Hope urged her to wear a cocktail dress rather than jeans and flats because well, "It's a cocktail party Tiff, wear a cocktail dress!"

Seth and Tiffany plan to celebrate their marriage on June 1 at Stone Oak Ranch in Murchison, Texas. They absolutely cannot wait to tell the story of God's goodness, love, and provision over their lives and their relationship. They are thrilled to get the chance to proclaim who Jesus is, how He has loved them, and the power and truth of the Gospel.

It has been said that chicken is the universal food, a symbol of plenty and a symbol of poverty at the same time. Chicken seems to have always been the underdog, but over the years it has risen to the top and is now getting the attention that it deserves. Chefs all across the globe have turned the whole roasted chicken thing into an indulgence. They like to get all fancy with their foie gras and black truffle stuffing and such. Did you know a whole roasted bird in NYC can easily fetch $75 or more? It has indeed become a grand bird and proudly competes for that prime time menu space. For us home cooks, let’s just say goodbye to the cooking bags and seasoning mixes we grew up on, and embrace the wonderful, new and easy ways to roast a chicken in the comfort of our own home. With all confidence and zero guilt, roasted chicken can easily be served at your next gathering.
and flavorful meat. Forget about fancy pans, weird ingredients, or fussy brines. Go with what you know, or have fun experimenting. It is truly difficult to get tired of roasted chicken. FOR THIS RECIPE YOU'LL NEED: · 1 whole chicken (appx 4 lbs), thawed, rinsed and insides removed · 1 medium onion, peeled, cut into 1/2 inch slices · 1 whole lemon, pierced a few times with a fork · 1 stick butter, softened · 2-3 garlic cloves, diced · 3 teaspoons salt · 3 teaspoons black pepper

It’s not only delicious, it’s a food that is meant to be shared, enjoyed around a table with friends or family, which is so good for the soul! Offering both dark and white meat, a whole chicken gives us two pieces of everything. Thank you, dear feathered friend. What more could we ask for? So, whether your bird is smothered with butter or mayonnaise, baked in a brown paper bag, a clay Schlemmertopf or baked on a beer can, your options these days are just about limitless. You can even make a 2-in-1 meal by roasting it on top of a bed of vegetables. Every cook may have their own tried and true method, but the goal is always the same. Ideally, you want crispy, crackly skin, with juicy
WHAT TO DO: 1. I regularly roast chicken one of three ways: • In a Schlemmertopf clay pot (Google it - it’s my favorite!) • Sitting on top of a Bundt pan that’s been placed inside of a 9x13 pan (to collect juices) • In an iron skillet 2. Other than the clay pot method, the pan preparation for the others will be the same. Begin by spraying the pan with non-stick spray and laying the sliced onion into the pan in a single layer. Set aside. 3. For the crispiest chicken, dry the bird inside and out very well before seasoning and roasting. If you have time, salt the skin and refrigerate it overnight (uncovered) for an even crispier chicken. With either method, allow it
to come to room temperature before roasting. 4. When ready to roast, slather the chicken with as much butter as is needed to cover the outside completely. Throw a little extra inside the bird for good measure. Next, season the chicken with salt and pepper inside and out. Toss diced garlic into the cavity and then stuff in the whole pierced lemon. For an extra treat, slide some fresh rosemary or thyme between the breast meat and skin. YUM. 5. Lastly, place chicken, breast side down, into a baking dish. Try and tuck the little wing tips under and you are good to go. No need to even tie the legs together. Bake for about 90 minutes at 400. *If your bird rests on a bed of vegetables or is full of stuffing, the time will need to be adjusted. As always, juices should run clear and once removed from the oven, all meat should be allowed to rest 10 minutes or so before slicing. Now, doesn’t your kitchen smell fantabulous. Chicken may have once been runner up in most restaurants, but when it is done well, there is really nothing that can surpass it. ENJOY!

Owned and operated by Jan McClung, The Belgium House was designed in 2001, built in 2007 and hosted its first wedding in December of 2007. But it wasn't the first time Jan had been involved in the wedding industry. “I was making prom, bridesmaid and wedding dresses through my early twenties and I designed both of my sisters' weddings nearly thirty years ago. When my daughters were married, I knew I wanted to devote more time to the wedding industry.” Jan's youngest daughter was married in Austin in early 2000 in a home with the owners serving as coordinators.
