meringue pie
Serves 4 Prep time 20 minutes Plus 3 hours Syns per serving 4½
Bring a big slice of retro glamour to the table with this Slimming World take on a favourite English classic. The light meringue topping makes a gorgeous contrast to the tangy citrus filling.
Ingredients
• 1 level tbsp flour, for dusting • 250g ready made shortcrust pastry • 2 egg whites • 5 tbsp sweetener
For the filling
Method
• Make up the jelly according to the packet instructions and then set aside to cool. • Break up the sponge fingers and divide between 4 dessert glasses. Pour over the cooled jelly and put in the fridge for 2 hours, or until it’s set. • When set, top with the strawberries and spoon over the custard. Return to the fridge and chill for a further hour. • Spoon over the fromage frais and then melt the chocolate in a bowl over a pan of simmering water and drizzle over.

Roast Chicken, Potatoes & Thyme Serves 4. Ready in 1 hour 20 minutes
1kg potatoes, such as Maris Piper or King Edward, washed or peeled and cut into chunks 1 red onion, cut into wedges • 1 lemon, sliced • 2 bay leaves Large bunch of fresh thyme, broken into sprigs 1 tbsp tomato purée • 1 tbsp balsamic vinegar 120ml boiling chicken stock • 1.25kg chicken thighs and drumsticks, skinned Low-calorie cooking spray • Salt and freshly ground black pepper

• Put the potatoes into a large shallow ovenproof dish in a single layer. Scatter over the onion, lemon slices, bay leaves and most of the thyme sprigs. • Put the tomato puree into a bowl with the vinegar, stir in the stock and pour over the potatoes. Top with the chicken and coat it with low-calorie cooking spray. Season to taste. • Roast for 50 minutes or until the chicken is cooked through and the potatoes are tender. • You can skin the chicken using kitchen paper to
help you get a good grip (for the drumsticks, peel skin away from the thick end then pull it off over the bony part). Transfer the chicken to a plate and cover with foil to keep warm. Increase the oven temperature to 220C/Fan 200C/ Gas Mark 7 and roast everything else for 10 minutes or until the potatoes are turning golden. Put the chicken back on top, garnish with the remaining thyme and serve hot with salad or your favourite vegetables.

ike many mum’s Karen Pigott found that after each of her children were born the baby weight seemed harder and harder to shift. “After my first three children were born I was able to lose weight fairly quickly, unfortunately 18 months after my third child was born I was diagnosed with breast cancer.” Following aggressive, but successful treatment Karen was told she was unlikely to have any more children. To her delight she proved the doctors wrong by going on to have two more children. “I found that with my youngest two my eating habits had completely changed, I ate far more food, but probably not the food I should have been eating. I ended up putting on 6 stone with each pregnancy”. Over the next 10 years Karen tried everything to lose the weight and was always looking for the next quick fix. “My confidence was at an all time low and it left me feeling totally inadequate. It wasn’t until I saw a friend who looked great, that I heard about Slimming World.” At the time Karen was living in Austria and was delighted to discover that she could follow Slimming World online. “Finding a plan that my whole family could follow was key. I didn’t want to be cooking different meals for everyone. It was amazing to find that we could still enjoy family favourites like lasagne and chips. Serves 4 Cooking time - 2 hours 30 minutes Skill level - easy peasy lemon squeezy
Ingredients • low calorie cooking spray • 400g small shallots • 100g back bacon rashers, all visible fat removed, chopped • 700g stewing beef, all visible fat removed, cut into bite-size pieces • 3 garlic cloves, finely chopped • 150ml red wine • 425ml beef stock • 1 level tbsp tomato purée • sprig of fresh rosemary • sprig of fresh thyme • 700g swede, peeled and cut into large chunks • 50ml vegetable stock • 1 bay leaf • pinch of grated nutmeg • small handful fresh parsley, chopped, to garnish

• Preheat your oven to 180C, gas 4. Place a large frying pan sprayed with low calorie cooking spray over a medium heat. Add the bacon and shallots and fry for 3-4 minutes until starting to brown. Add the beef. Stir-fry for 5-7 minutes over a high heat until browned. • Stir in the garlic, red wine, stock, tomato purée and herbs. Season, bring to the boil and then transfer to a casserole dish. Cover and cook in the oven for 2 hours. • Meanwhile, boil the swede for 12-15 minutes until tender. Drain. • Add the stock and nutmeg, then season and mash. • Divide the bourguignon and mash between 4 plates, garnish with parsley and serve.

Here are some ways to keep your house clean and allergies under control: • Vacuum twice a week. Make sure your vacuum has a HEPA filter as some allergens are so small that they pass right through a regular vacuum filter. That means that every time you vacuum, you could be sucking them off the floor
and shooting them into the air, where you breathe them in. • Cut clutter. Piles of boxes or clothing can trap dust and hide allergens like dust mites and cockroaches. • Wear a mask when you clean and when you’re done with your housework, leave the house for a few hours. It will limit your exposure to allergens you kicked up into the air. • Keep the bathroom free of mold. Scrub tiles regularly. Don’t forget the shower curtain, too. You may be able to toss it in the washing machine. • Wash sheets weekly in hot water. Make sure it’s at least 50 degrees celsius. That’s hot enough to kill dust mites. If your child has allergies, do the same with any washable stuffed animals. • Don’t use scented cleaners or detergents. If you have allergies, the

Change bedlinen after dusting in the bedroom after two hours. • Clean outside entryways, sweep or vacuum. The cleaner your path or patio is, the less likely someone is to track dust or pollen into your house. • (A favourite of mine!). Ask another family member to take over some chores. It’s better if you avoid jobs like dusting or vacuuming if you are allergic to dust mites. • Take shoes off before you go in the house. That way pollens or other triggers won’t get tracked in. • Keep pets out of the bedroom. It’s a key way to protect yourself from dander. Don’t ever let pets sleep on the bed if you have pet allergies and of course sort out don’t overlook pet beds - give them a good seeing to regularly (and of course the dog!)
