The group’s main focus is the west side of the trail. Colle was impressed with the turnout and the group’s enthusiasm towards the cause.

The east portion of the trail already has its own “friends” and has seen major changes to its side because of it. The group watching over the east side pushed the City of Toronto in 2012 to create a report outlining upgrades needed to further improve the trail that stretches from Allen Road through Mount Pleasant

Whey to go! International Cheese Co. named a finalist in Grand Prix of Cheese

ucked away on a narrow street off St. Clair West, lies a small cheese-making factory. International Cheese Company does it all in that location: it packages, cools and ages all the cheese made. As you walk through the entrance the smell of warm cheese curds wafts in the air. Past the horizontal refrigerators of provolone, goat cheese and hanging caciocavallo is where the three finalists for the Canadian Cheese Grand Prix 2013 were made. “We were really excited to hear the news,” said Michael Salvador, one of the three owners of International Cheese Co. “We always like to think our cheese is different and special.” International Cheese entered six categories in this year’s Cheese Grand Prix and became finalists in two: their ricotta made it to the top three in the fresh cheese category as did two of their cheeses in the mozzarella category. In the last competition its provolone was a category champion. And

business picked up after customers got wind of the win. “People get intrigued,” said Salvador. “When you win or even if you’re a finalist people are like, OK, let’s see what its all about, and they’re willing to try it.”

More than 25 cheeses are made in the modest York factory, which sees thousands of pounds of cheese shipped out across Canada from Quebec to Vancouver and whose cheeses can be found in retail stores like Costco, Fortinos and Loblaws.

For some of the 40 or so workers at International Cheese, dressed in lab coats and hair nets, their day starts at 2 a.m. As the hours pass, layers of water, soap and bits of cheese curds coat the blue floor of the factory. It takes about four hours to make

cheese from start to finish. a pair of steel 26-foot vats cradle at least 800 kilos of cheese, according to Salvador. So how difficult is it to make cheese? Salvador said it’s second nature to him because he’s been making cheese since he was 17. “It’s my calling to make cheese, my father and my grandfather have been doing it. It goes way back,” he said. “Making cheese is a very simple process.” Mario Pelosi, another co-owner of International Cheese, has been making cheese just as long. “It’s all I know. I started working as a part-timer (in a different cheese factory) as a kid and grew to love it,” said Pelosi. Because the business is regulated by the Canadian federal government, the milk that is used to make the cheese is 100 per cent Canadian milk, which is one of the main requirements to be eligible to enter the Canadian Cheese Grand Prix in the first place. It must also be produced in Canada and be commercially available. It took eight judges, many of them cheese shop owners and chefs, two

days to taste 225 cheeses from across Canada. The cheeses were evaluated on flavour, texture, body, colour, appearance and salt content. One of the judges, Michael Howell, who is a chef at Tempestuous Culinary in Nova Scotia, participated for the second time this year and thought there was some stiff competition this year, which made it harder to judge the cheeses. “Its one of the hardest things I ever had to do,” said Howell. “You’re really looking for one that rises above the rest,” he said. “That means nuance, that means pungency. It means aroma and finally flavour.” Overall, Howell was impressed with the quality of the cheeses submitted this year. “We make great cheeses in this country that can equally rival any of the cheeses made around the world today.”

What is in the teacher deal? R

eaching a tentative agreement with Ontario high school teachers has sparked calls for the Kathleen Wynne Liberals to reveal exactly what the two parties agreed to on March 29. For the moment, thanks to a media blackout, that information doesn’t look likely to come until after members of the Ontario Secondary School Teachers’ Federation (OSSTF) vote on those changes Thursday. To say this dispute should never have gone this far is an understatement; however, it has and Ontarians deserve to know exactly what was discussed, and what we “may” be on the hook for. Changes to contract conditions the Liberal government imposed on teachers early this year seem to have made a difference, with the labour dispute possibly coming to an end this week. Issues surrounding sick leave, maternity leave, unpaid days and local bargaining appear to have been our view resolved with OSSTF. However, this does little for a provincial school system that Provincial needs serious rethinking – espesystem needs cially in the City of Toronto. In what seemed to be a whisper re-thinking in the wind, teachers with the Toronto District School Board face layoffs come 2013-2014 as the city’s public schools face another budgetary shortfall. On the chopping block are nearly 250 secondary school teachers, cuts to guidance teachers, clerical staff and even schoolbased safety monitors. These cuts will only slice in half an estimated budget deficit of $50 million. This should raise concerns, and some serious discussions as to where the education system in Toronto, and the province, is heading. That our new premier is from Toronto and a former TDSB trustee raises concerns as well; she should be extremely aware of the ills surrounding the city’s school system. The problems facing the TDSB – low enrollment being the biggest issue – demand attention. That infrastructure and capital repairs are in dire need of attention also demand some focus. Cutting a deal with teachers before these issues are at least discussed is, in some ways, shortsighted. Perhaps it’s time to bring back the controversial Accommodation Review Committees, that began in fall 2009 to address declining enrolment, better utilize school facilities, and create a better learning environment, but with a provincial mandate. That way, we can get education back on track.

Can I get that in unwriting, please?

o Jamie, are you going to finally cave in and write about you-know-who and the you-know-what this week?” I’ve been asked that question a lot lately and I’ve been ducking it, I have to admit. But I can’t any longer. The queries are getting way too close together. I can’t seem to walk down the hall or the street these days without at least two or three people coming up to me and trying to find out where I stand. So, after carefully avoiding it for as long as I could, yes, grudgingly, I have decided to weigh in on the topic. For those of you who aren’t hockey fans and don’t know what the heck I’m talking about, the youknow-who are the Toronto Maple Leafs and the youknow-what are the Stanley Cup playoffs, which are slated to begin at the end of the month. The reason why fans are

jamie wayne BUT SERIOUSLY referring to the Leafs as the you-know-who and not the Leafs and the playoffs as the you-know-what and not the playoffs is that at this time of season, with playoff fortunes still very much in doubt, there is supposed to be a cone of silence surrounding the matter. There is an unwritten rule in the National Hockey League that you don’t bring up the playoffs until a club has officially qualified. And the NHL takes its unwritten rules very seriously. In fact, by me merely mentioning the word “playoffs” I am technically in violation of that unwritten rule. There is an unwritten addendum to the unwritten rule that clearly states that playoffs aren’t allowed to even be called playoffs

at that this time. They are to be addressed only as the “p-word.” You can look that up. If you can figure out where to look up an unwritten rule, that is. You’ve got to feel for the non-fans. It’s impossible for them to follow the goingson at the best of times with all the slang in hockey and now you add this deliberately deceptive lingo on top of it? That’s cruel and unusual punishment. Meanwhile, I feel for the true blue fans as well and I feel even more for the true blue and white ones, aka, the Leaf fans. It’s been nine, count ’em nine years since the Leafs have been in the post-season. And now their beloved team is not just in the playoff hunt, they’re smack dab in the middle of it they’re supposed to keep quiet? Come on. Are you kidding me? They should be enjoying every second of the chase,

not giving the playoffs the silent treatment by not mentioning them or calling them the p-word. I say it’s time to put an end to this charade. If rules are made to be broken, then the same must hold true for unwritten rules. So break that unwritten rule, Leafs fans. Break it to your hearts content. Worry not about any repercussions. The socalled hockey gods will not object. Quite the contrary, heaven knows you’ve earned the right to soak it all in after all you’ve been through. And if it turns out this unwritten rule wasn’t made to be broken, I wouldn’t worry about that either. It just means it isn’t worth the paper it isn’t written on. The TTC’s board of commissioners approved the purchase of 126 more articulated buses to run on high ridership routes, at its meeting last week. The 60-foot vehicles, which are also known as artics, have separate sections divided by a pivoting middle hinge and can hold up to 112 riders total. The high-passenger capacity makes them ideal for rush hour service, says the TTC. Bike share program rates rise The popular bike share program Bixi is raising membership rates for 2013. Beginning this week, it will cost $97 plus tax to purchase a one-year membership, $41 for a monthly pass, to access Bixi’s 80 stations and 1,000 bicycles available year-round

Bixi says the price hike is due to inflation and increased operating costs. She wants to do the best she can to make sure my brother and I are happy.” Le has also overcome bullying by his peers for not having the latest brand name items. “I only had one pair of shoes for like five years and I used them for everything, winter, gym classes, walking, and it started to wear out and get holes in them,” said Le. “I guess I was that outcast kid because I didn’t have the cool stuff.” But now, Le is somewhat of a “iconic figure” in his high school for his work on the volleyball team, as well as with the athletic council by getting students involved in events during their lunch hour and participating in the reading of morning announcements. “I just want to make my mom proud,” said Le. “I don’t want to be a burden, so I made sure I went to school every day and try to maintain my marks and, more importantly, she wanted me to be happy, so she encouraged me to play sports at

school, too.” When Le told his mother about the news she couldn’t believe it. He said she joked about how that could even be possible since he is busy with school, work and extra curriculars. Both he and his brother have been accepted into York University. Le plans to major in kinesiology and minor in human resources. “I want to become a phys. ed. teacher,” said Le. He still plans on applying for a student loan, but has caught the bursary bug. He’s currently applying for the Merit Award bursary program and plans to seek out more funding sources before he enrolls at York U. in the fall. “I just want to let everybody know that there is money out there and always look at the positive side,” said Le. “The worst that they can say is no.”

But that’s not to say that Del Grande, a longtime opponent of plans to tear down the Gardiner Expressway, has changed his tune. Del Grande said the

environmental assessment, which was halted earlier this term, should be completed as a way to take some of the partisan bite out of the debate on the Gardiner’s future. “I’m all for a fair and reasonable review and an environmental assessment – I am,” said Del Grande, at Tuesday’s budget committee meeting to finish off the city’s 2013 budget before sending it to executive committee.

CEO Bruce McCuaig of 11 funding tools it will consider for inclusion in a forthcoming report due in June on paying for the Big Move transit plans for the Greater Toronto and Hamilton Area (GTHA). While she declined to comment specifically on the recommendations, Stintz said she was dismayed to hear Metrolinx is considering transit fare increases as

a portion of the $2 billion needed in yearly capital costs to pay off the $50 billion Big Move. “I would not advocate for that to be the solution for increased capital improvements,” said Stintz following the announcement. She said the TTC, which relies on fares to fund around 80 per cent of its operating budget, the largest such

percentage among North American transit agencies, would never consider using such revenues to pay for capital projects – not even a proposed downtown relief subway line which Metrolinx has highlighted as a priority for Toronto. A spokesperson for the TTCriders advocacy group called the idea of raising transit fares “ridiculous”.

“People who take public transit already pay a huge amount of money around the GTA,” said Jessica Bell, a member of the group’s steering committee. Despite comments from McCuaig that consideration was given to people’s ability to pay more for better transit, Bell said she would wait to see Metrolinx’s specific revenue projections.

“There’s no doubt fare increases would hurt people who are already struggling to get around,” she said. A representative from environmental research group Pembina Institute said she wasn’t surprised by the shortlisted recommendations.

Toronto lacks maturity on transit file When Toronto council shut down Mayor Rob Ford’s move to build a single subway along Sheppard Avenue, it may have seemed to some that this was a modal war: that council simply didn’t want to build subways, preferred light rail transit and didn’t love the former municipality of Scarborough as much as Ford did. What it really was about, though, was money. The Scarborough subway plan Ford put forward came with a promise of unrealistic levels of private sector financing and without a sense of how the city would actually pay to operate the new line. It was really in answer to this, that in the months following the defeat of the mayor’s plan, councillors tried to discuss financing options. It didn’t get very far. Councillors came forward with ideas and their colleagues

That’s why it’s a lucky thing, in retrospect, that former premier Dalton McGuinty thought to take responsibility for transit planning and financing away from Toronto politicians, and hand it off to Metrolinx. On Tuesday, Metrolinx released the initial foray into what will be a major, and necessary, public debate into how it might fund transit expansion in the Greater Toronto Area, in the form of taxes, fees and other revenue tools. They are all politically risky.

They are also, necessarily, regional in scope, recognizing the fundamental truth that the subway along Yonge Street in Toronto serves people who live outside Toronto as much as it does Torontonians. If subsidy comes from anyone, it should come from everyone. It takes a large and mature government to extract that subsidy. Could Toronto do it? Well, we’re certainly big, but mature? Ford provided an eloquent demonstration Tuesday, when asked what he thought of the short list of revenue tools. He made a retching sound. Then he started talking about casinos again. Hopefully Metrolinx and the minority Liberal government will prove themselves better up to the job.
