rowing up in the Midwest, the first signs of spring were always delightful. I recall the thrill of knowing that boots, mittens, and heavy coats would be stored soon, replaced by sneakers, swimsuits, and light, bright-colored clothing. When my mother’s garden burst with tulips, lilies, and azaleas, I knew spring had finally arrived. In Tokyo and Washington, D.C., cherry blossoms are the symbol of springtime, turning parks and parkways into pink and white wonderlands. In Chicago, hearty tulip bulbs (planted optimistically each fall along Lake Shore Drive and Michigan Avenue) confidently push their way through the ground, gloriously brightening the city’s busiest thoroughfares. Paris has its own way of signaling spring. In April, delicate rains coax nature into a change that happens nearly overnight — blossoms bursting with color and trees, planted in perfect rows, tentatively releasing more buds with each ray of sunshine until there is a staggering eruption of green. As a child, spring meant the beginning of four months spent outside. Biking, tennis, swimming, and golf, along with neighborhood games, kept us busy well into the evenings, while (as I now understand) our parents pursued other delights. As a parent, I planned activities for my own children and now, as a grandparent, my joys of springtime include making plans with my grandchildren that will make the most of the long days of summer. In this issue, from cover to close, our focus is on what there is to do. So, whatever you want to do and whomever you want to share your adventures with — your children or grandchildren, your partner, your entire extended family, even your furry friends — there is a destination and a hotel determined to help you fulfill all the promises of spring. From 72 hours in . . . featuring Paris, Montreal, and Chicago to extended journeys through Amsterdam and Zürich, and a look at the magic of seasonal hotels and resorts. I found gems to add to my list — even when I was already familiar with the destination. I’m sure you will, too. I wish you joy-filled planning and a long season of play.

12 PREFERRED TRAVEL – VOLUME 18 2022

BLACK YELLOW MAGENTA CYAN

Visitors to Venice quickly discover the local custom of enjoying a chilled glass of Prosecco, Italy’s signature sparkling wine, that is rivaling even Champagne as the world’s favorite bubbly. But few realize that this Venetian specialty – also one of the key ingredients of the famed Harry’s Bar Bellini cocktail – comes from grapes grown on idyllic vineyards lining bucolic, rolling hills that are just an hour’s drive from the Serenissima. A relaxed day trip ideally takes in cantina wine tastings and feasting off traditional Veneto cuisine in a wood-beamed “agriturismo” farmhouse osteria. While the official region producing Prosecco is vast, stretching from Lake Garda to Italy’s border with Slovenia, the historic heart of the vineyard, producing the highest-quality vintages, meanders for around 30 miles through picturesque country lanes from Valdobbiadene to Conegliano. Known as “The Prosecco Hills,” these spectacular landscapes were recently recognized as a UNESCO World Heritage Site.

Head straight for Valdobbiadene, the unofficial wine capital, to pick up the Strada del Prosecco, an easilymarked route of cantina, trattorie, and cultural sights. Just outside Valdobbiadene, the majestic Palladianstyle Villa Sandi produces an excellent range of Prosecco, while at nearby Santo Stefano, a tiny hamlet hidden amid a maze of vineyards, reserve a tasting at either Bisol, which offers a serious winery tour, or Casa Coste Piane, where Loris Follador, a rustic smallholder, makes outstanding naturally fermented frizzante, served at many of Italy’s Michelin-starred restaurants. For lunch, the cozy Osteria Al Castelletto serves local specialties like plump asparagus and porcini mushrooms and steaming spaghetti topped with a duck ragù. Carry on toward Conegliano and the road is lined with similar tempting stop-offs – the best discoveries are always the ones you make yourself rather than guidebook recommendations. By John Brunton

CREATING A GREEN SCENE Monaco’s high-rolling raison d’être is world renowned and glitters gold year-round. But these days, the tony enclave on the French Riviera shimmers green, too. Championed by the reigning monarch and his eponymous environmental charity, the Prince Albert II of Monaco Foundation, ambitious plans are afoot to cut carbon emissions by 55% before 2030 and turn Monaco carbon-neutral by 2050. This planet-first fierceness is evident around the 0.76-square-mile territory and is best explored via its expansive, efficient, and affordable public transportation network of hundreds of e-bikes and electric cars, hybrid buses, and a solar-powered shuttle boat. Close to 200 charging stations nudge drivers toward a 100% electric car future, and include the principality’s first super-charger, located at Monte-Carlo Bay Hotel & Resort, which replenishes batteries in less than 20 minutes. Human power remains a delightful way to visit Monaco’s tranquil gardens and parks, which make up more than a fifth of the sundrenched city-state, including the cliff-clinging Exotic Garden, reopening this summer after a nearly two-year closure. Urban gardening is soaring to new heights, with beehives, hen huts, and vegetable gardens installed on rooftops, including a 4,000-square-foot plot that feeds Michelin-starred restaurant, Blue Bay. “Monaco has proved that high standards and elegance can match with sustainability and environmental preservation,” said Prince Albert II of Monaco Foundation Vice President Olivier Wenden. “Visiting Monaco means experiencing a dynamic destination that knows how to meet the needs that the future requires.” By Kimberley Lovato

Swet’s signature gin cocktail SALTY DOG

CLIENT

This cocktail features Hendrick’s gin mixed with grapefruit juice and syrup. Swet also likes to add 1/2 ounce of Aquavit. “The caraway flavor plays well with the grapefruit.” Completed by a generous rubbing of salt around the glass, it is topped off with a distinctive, signature Johnny Swet grapefruit garnish.

Johnny Swet is founding partner of JIMMY at ModernHaus SoHo in New York City

S

et high above the trendy SoHo district, JIMMY is arguably one of New York City’s iconic rooftop experiences, but as legendary mixologist and founding partner Johnny Swet notes, “JIMMY is a bar on a roof, not a roof bar — what we have done here is to just create a really great bar.” A loyal crowd of regulars and guests of ModernHaus SoHo are treated to a stunning pool deck with panoramic views of Midtown, Wall Street, the Hudson River, and the bridges spanning the East River. Meanwhile, the bar’s sophisticated sun-filled interior channels Picasso’s Blue period, complete with blue velvet furniture and a showpiece 26-foot-long marble bar. JIMMY is giving the people what they want (with a twist). “Our vision is to provide a big, well-rounded menu,” says Swet. “We want to reflect how people want to drink — gins, mezcals, and tequilas such as Casamigos. Palomas are big right now — tequila mixed with grapefruit juice and lime — and while our Pineapple Mojito with caramelized pineapple and lime is meant to be seasonal, it is popular all year round.”

Louis Macpherson is the head bartender of Lyaness at Sea Containers London

PRODUCTION CLIENT

Lyaness, at Sea Containers London, takes its cocktails to new (and surprising) levels. “Lyaness is an amazing place to be right now,” says Louis Macpherson, the head bartender. This comfortable and fun cocktail bar welcomes guests with plush blue velvet sofas, radiant gold mirrors, supple leather stools, and the warm glow of a green marble bar. The extensive drinks list is tied closely to British culinary heritage. “London is the center point between old and new,” notes Macpherson, “so Lyaness is a product of our environment.” The aptly named “Lyaness British Cookbook” menu focuses on the ingredients, ensuring that each cocktail is totally distinctive. Mixologists spend months in their “lab” creating new cocktails built on five housemade ingredients you’ve probably never heard of: Oyster Honey, Blood Curaçao, Green Sauce Liqueur, Malt & Grass Amazake, and Fruit Furikake, which celebrates the rich history of Great Britain’s coastline with Scottish sugar kelp, dried and rehydrated with strawberry juice. Oyster Honey marries the salty richness of oysters with the floral and citrus notes of honey, and Blood Curaçao invokes the classic English dish of Black Pudding. For this signature ingredient, pig’s blood is cooked with American whiskey and vodka, and mixed with macerated orange and sugar. “It brings the body and richness of this by-product to the orange flavor of the liqueur,” Macpherson says. “It also reflects the nose-to-tail trend of not wasting any animal products being championed by restaurants such as St. John.” If you’re unsure what to try, you can sample each ingredient, and of course Macpherson won’t hesitate to point you toward his favorites. “People come here for something different,” he says. “Our guests trust us, and the second they try it — everyone likes it.”

Macpherson’s signature cocktail MCMASTER FIZZ

Created in honor of zero-waste pioneer and friend of Lyaness, Doug McMaster of sustainable restaurant Silo in Hackney, the cocktail’s ingredients include Bombay Sapphire gin and Lyaness’ signature Blood Curaçao ingredient. Topped up with soda and Fierfield, an Irish whiskey with botanicals, it is garnished with a crisp milk biscuit. “Looking at food systems around the world, blood (from meat production) and whey (from milk production) are the two most wasted by-products,” explains Macpherson. “Using them in the McMaster Fizz highlights the importance of thinking about our food sustainably.”

MEET THE CONCIERGE

SUBS ART

Hotel concierges, and especially a Clef d’Or concierge, hold the key to a city. They pride themselves on making things happen for you. Alan Noone, Executive Head Concierge at The Stafford London, shares some insights on his city BY SARAH NOTTON

PRODUCTION

What is the concierge’s role?

CLIENT

We know every nook, every cranny, every detail, and every nuance of the city. Not only can I find you a table at London’s hottest restaurants, get you seats at Wimbledon, or entry to a soldout exhibit, I know which row to book to get the best view for the price of your ticket at all the West End shows.

Explain how the concierge service works

As soon as you’ve booked your trip, contact your hotel’s concierge team. If there’s something specific you have in mind, we can deal with any request (as long as it’s legal!). In 30 years, there’s rarely been an event or show I haven’t been able to get a guest into — thanks to the extensive network of contacts I’ve been crafting for decades. These contacts reach far beyond London’s city limits. So, let me know where you are headed next. I will reach out to a fellow concierge there, and they will take over and provide you with the best possible experience at your next destination.

Tell us some of your insider secrets

There’s an absolute gem just by The Stafford London — the elegant 18th-century Spencer House. It is one of the most magnificent mansions in the city, built for the first Earl of Spencer (yes, that Spencer family) as one of the most sumptuous private residences ever constructed in London. For antiques, Notting Hill’s Portobello Market on Saturdays is very well known, but serious buyers head to Bermondsey Market south of the River Thames. It’s much less touristy and goods can be a third of the price of Portobello. You need to get there early — around 5 a.m. on a Friday — but it is worth it.

What are your favorite spots in London?

A London pub, as they are completely unique to England. I have traveled to many European cities, the United States, and Australia and there is nowhere that does a pub as good as the U.K. and Ireland. Many are centuries old and brimming with history. You can be in a London pub having a drink with anyone from an

MP or a Lord, to the local postman — everybody mixes. Within walking distance of The Stafford London, I like The Red Lion, The Blue Posts, and Ye Grapes. For a dining treat, I try to visit Wiltons restaurant once a year. I’ve been very fortunate to have dined at the vast majority of London restaurants over the years, but I’ve found nothing that can beat a Dover sole and some fresh oysters at its Oyster Bar.

London will be buzzing this summer with The Queen’s Platinum Jubilee. Where will you be going to enjoy the city without all the crowds?

I step into some of the lovely churches we have in London — or Mount Street Gardens in the heart of Mayfair is a little gem and very quiet. Of course, there will be plenty of exciting things to do in London outside of the Queen’s Jubilee! Other unique London experiences are open-air live theater in Louis’ signature Regent’s Park, a performance at gin cocktail Shakespeare’s Globe, and swimming in The Serpentine in Hyde Park.

The Stafford London Executive Head Concierge Alan Noone

CLEFS D’OR – A MARK OF EXCELLENCE

A concierge wearing two crossed golden keys is an elite concierge, a member of Les Clefs d’Or (Keys of Gold). The society was named because the holder of this set of keys can open any door. These are highly trained professionals with valuable skills and contacts, and a passion for making every guest’s visit exceptional. To be admitted to Les Clefs d’Or, a concierge must have worked for five years in a hotel. For three of these years, they must have been a concierge. Membership requires recommendations by peers, as well as past and present employers, and letters from active society members. Some chapters administer a written exam that test an applicant’s knowledge of everything and anything a guest might desire. It can be a rigorous selection process. In Paris, for example, only 25% of all applicants are successful.

The picturesque Paradise Beach on the Greek island of Mykonos

Dreaming of the Aegean From its exquisite islands and turquoise seas to the ancient majesty of the Acropolis in Athens, Greece holds a place in many people’s hearts as the perfect summer destination BY JOHN MALATHRONAS

any of my fondest childhood memories involve island-hopping and swimming in the translucent waters of distant, wind-carved solitary coves, and Greece’s numerous attractive resorts still evoke my recollection of laid-back fishing harbors and enchanting mountain villages with panoramic views. What I still relish is that even in a megalopolis like Athens, it’s as easy to make friends now as it was in my youth. Just sit at a café in suburban Kypseli or Petralona, turn your head to the next table and smile: the inevitable resulting chitchat about your work, your family, or your vacation will strike you as genuine concern rather than mere small talk — and if that’s not vestiges of the ▷

centuries-long innate Greek hospitality, I don’t know what is. Visitors to Greece today can expect some of the most lavish accommodations in the Mediterranean, the best local and international chefs serving high-end cuisine in balmy alfresco restaurants, and entertainment for the young and young at heart. As for island-hopping, with new fast catamarans, it’s become easier and more comfortable, and those distant coves can now be reached swiftly via well-paved roads. But what hasn’t changed is Greece’s “island rhythm,” and it’s surprising how quickly you surrender to it. It’s a heady cocktail of long languid days on the beach from noon to sunset, followed by a rejuvenating nap, dining at 10 p.m., and then around midnight it’s time to drink, dance, or even shop, as the upscale boutiques never seem to close. And yes, it’s still possible to seek out a friendly family taverna on an uncrowded shore offering traditional Greek fare with smiling service. I find no experience more exhilarating than sitting by the seaside, the heady scent of the daily catch on my plate, a glass of local Assyrtiko or Malagouzia wine in my hand, gazing at the irrepressible beauty of the turquoise sea, the toffee-hued sand, and the radiant sky that surrounds me.

AMAZING ATHENS

Every time I arrive in Athens, my hometown, I wonder how my trip will unfold, for this centuries-old cultural giant of the Mediterranean has sprung many surprises on me over the decades. To get an overview of this city’s extraordinary history, stroll the Grand Promenade, which links key archaeological sites: the marble amphitheater of Herod Atticus is still used as an open-air venue for concerts; the stony hill of Pnyx, where past orators — from Demosthenes to St. Paul — showed their mettle; the picturepostcard elegance of Thission, one of the most graceful Doric temples in Greece; and the ancient cemetery of Kerameikos, the best place in Athens to reflect on its glorious past. Then there’s the incomparable Acropolis, an enduring symbol of a civilization that flourished 2,500 years ago bequeathing us philosophy, mathematics, history, theater, poetry, and more. Most prominent among the structures upon “the Sacred Rock” is the Parthenon, a temple to

goddess Athena and a Western architectural icon that feels familiar, even on your first visit. Old Athens is a walker’s heaven. By day, I love ambling around the photogenic district of Plaka with its narrow, cobbled streets overseen by fin-de-siècle bougainvillea-draped neoclassical mansions with brightly painted wooden shutters, Juliet balconies, and lush inner courtyards. After dark, I join my friends at Monastiraki metro station, where the whole city seems to rendezvous at midnight, and wander off in the warren of side streets to revel in bars and delicious outdoors dining. I always make time for a signature cocktail at Couleur Locale, a rooftop bar with the Acropolis as a backdrop, for one of the best views in the city. If you’re more romantically inclined, walk north from Syntagma Square through the residential lanes of Kolonaki — its mansions trumpet settled wealth and its boutiques boast the best designer fashions — to board the charming cable car up Mount Lycabettus. During the day, looking down on the bustling capital becomes an unforgettable experience; at night, it turns into a sensual one, as the flickering city lights and the monumental lighting of the archaeological sites merge into a sultry whole.

SPECTACULAR SANTORINI REPRO OP

The prospect of one of the best views I’ve ever seen is why I prefer taking the ferry from Piraeus, Athens’ harbor, to Santorini (four to eight hours, depending on ferry class). As the ship sails in, you are greeted by the most fantastical panorama as this crescent-shaped island arises from the flooded crater, the caldera. Looking up, necks are strained, eyes are enraptured, and jaws drop, as the red, pink, and gray cliffside geological strata topped by an icing of blindingly white houses appears like an aquatic version of the Grand Canyon dreamed up by a playful Norse god. The accompanying cable-car ride from the port up a precipitous abyss just adds to the wonderment of the occasion. Its seismic geological history is what makes Santorini so photogenic. Around 1600 BCE, an underwater volcano blew off most of the island’s center, which disappeared into the sea, generating a massive tsunami that wiped out Crete’s Minoan civilization 125 miles south. Akrotiri, Santorini’s sunken port, was probably the source of the Atlantis legend. Now excavated, it provides an astonishing glimpse of an ancient settlement consisting of alleys, squares, and twostory houses with still-discernible windows and jar-stocked cellars. The clash of the cobalt-blue sea with the whitewashed Cycladic houses and the pastelcolored cliffsides is best experienced in Oia, a bewitching village draped across the northern tip of the island with dramatic ocean views. People congregate every evening to watch the Mediterranean’s most celebrated sunset, when the twilight bathes the surroundings in shades of burnt orange and magenta. Even better, avoid the throngs and experience the magic from the sanctuary of your own hotel balcony. Between Oia in the north and Akrotiri in the south, a gentle hill leads down to a final exotic display: the black sand beaches of Kamari, Perissa, and Perivolos, as well as the ashen-gray lunar landscape of Vlychada.

MAGICAL MYKONOS

Mykonos is the mythical vacation spot that spearheaded Greek tourism in the 1960s thanks to VIPs including Jackie O., Brigitte Bardot, and The Rolling Stones. The international jet set followed in their wake, thus creating the legend of an island where anything goes. What made Mykonos such a magnet is the pearl-white elegance of the island’s capital with its sun-drenched maze of chalky cuboid houses — today framed by the curved arm of the harbor promenade sporting a string of chic bars and taverns. Mykonos Town looks like a movie set: at the southern end, four perfectly conical windmills imposingly overlook the Aegean, while in the west, the houses of Little Venice seem to pop up from the sea, their wooden, surf-licking balconies offering magnificent sunset views. Those first visitors returned home with tales of wide stretches of demerara-golden beaches

like Elia, Paradise, or Ornos, swanky jewelry stores such as the legendary Minas on Agia Kyriaki square, and lively nights that never seemed to end at places such as the open-air club Cavo Paradiso. For a cultural fix, a short boat trip takes you across to Delos, Greece’s largest archaeological site, spanning 2.3 square miles. Nowhere else in Greece have I encountered such an ancient cityscape untouched by modern features. The birthplace of Apollo and Artemis and the holiest place in the Aegean, it was the biggest port in the Ancient Greek world until it was sacked and abandoned in the first century CE. I also love to swim in the crystalline waters of nearby Rhenia, an island below Delos, inhabited only by grazing goats and sheep. Here I can find my own cove and play Robinson Crusoe to my heart’s content, before I head off back to the lively Mykonos, because, yes, it is indeed irresistible.

ANDRONIS ARCADIA, SANTORINI

The newest addition to the Andronis collection – an all-suite island resort with spa – lives up to its namesake as a place of natural harmony and pastoral enchantment. The suites and villas are intimate, secluded spaces with airy interiors, private pools, and stunning views over the Santorini caldera. INCREDIBLE ISTANBUL

“If one had but a single glance to give the world, one should gaze on Istanbul,” the French poet Alphonse de Lamartine wrote in the 19th century. Straddling Europe and Asia, Istanbul is undeniably one of the world’s great cities. The crowning glory of the mighty Ottoman Empire, which once stretched from the Persian Gulf to the Crimea, Istanbul is haunted by traces of its glorious past. Mosques and monuments, fortresses and palaces, fountains and aqueducts are all woven into the urban fabric. Overlaid on this rich tapestry of history is a modern city with a population of almost 16 million, a microcosm of vast and varied Turkey. Navigating such a teeming metropolis might seem challenging at first. But dig deeper and you’ll discover “an archipelago of neighborhoods in which everyone knows each other,” as Orhan Pamuk, the Nobel laureate and chronicler of Istanbul, once wrote. (Don’t miss Pamuk’s enchanting Museum of Innocence, a nostalgic tribute to a bygone Istanbul in bohemian Çukurcuma.) From the bazaars and hammams of Sultanahmet to the jazz bars and meyhanes (taverns) of Beyoğlu, the fabulous food and flea markets of Kadıköy to the fanciful mansions and fishing ports along the Bosphorus, Istanbul packs in an extraordinary array of experiences. Young Turks have transformed the old docks and machine stores of Karaköy into a haven of hipness, peppered with all-time classics like Karaköy Güllüoğlu baklava emporium and Namlı Gurme delicatessen next door, purveyor of the ultimate Turkish breakfast — a generous spread of cheeses, charcuterie, olives, salads, pastries, preserves, and spicy scrambled eggs. Food glorious food is everywhere in Istanbul: grilled sardine sandwiches cooked on floating boats, deep-purple heaps of sumac and rosehip in the spice markets, flaky borek pies sold by street vendors from bright-red carts, and everywhere you go tiny glasses of strong black tea. On the chugging ferries that ply the Bosphorus straits — transporting you between Asia and Europe for less than a dollar — passengers are fortified with fresh orange juice and simit (sesame bagels), a snack equally popular with the seagulls that swoop in every ship’s wake. Combined with the sea breeze and that unmistakable skyline of silver domes and hazy minarets, this humble snack has the transportive power of a Proustian madeleine.

Clockwise from left: Sultan Ahmed Mosque in Istanbul is more commonly known as the Blue Mosque; Istanbul’s Grand Bazaar is one of the word’s oldest and largest covered markets

EATING OUT, TURKISH STYLE Wiggling its toes into Europe – but with the remainder of its foot planted firmly in Asia – with the culinary heritage of an empire that once stretched from Hungary to Persia and Cairo to the Crimea, contemporary Turkish cuisine effortlessly fuses the finest flavors of the Middle East and Europe. Urban Turks dine out regularly and eateries of all types abound. For a modestly priced lunch, an Esnaf Lokantası (tradesman’s restaurant), serving up delicious vegetable, pulse, and meat stews from steam trays, is

often the go-to. Pideci, based around a wood-fired oven, specializes in pide, a tasty semi-leavened flatbread topped with meat or cheese. For a more leisurely evening meal, meyhane (taverns) are very popular for their vast array of meze, succulent grilled fish, and rakı, the aniseed-flavored spirit whose potency and propensity to cloud when mixed with water explains its Turkish name, Aslan Sütü, translated as Lion’s Milk. Devout meat-eaters head for Ocakbşı, where kebabs and other cuts are cooked to perfection on charcoal grills. By Terry Richardson

According to Pamuk: “To be able to see the Bosphorus, even from afar — for Istanbullus this is a matter of spiritual import.” Being close to the sea is a matter of course in Bodrum, the summer retreat of Istanbul’s tastemakers. In high season, this lively little resort on Turkey’s Turquoise Coast swells with A-listers and high rollers, lured by swanky hotels, glamorous beach clubs, and three yacht-filled marinas. Herodotus, the “Father of History,” penned The Histories here around 425 BCE, but Bodrum was still an unassuming sponge-diving port until it was first put on the map by Cevat Şakir Kabaağaçlı, a beatnik author from Istanbul, who was exiled here in 1925. He stayed for decades, drifting around the glittering Bodrum peninsula in a ramshackle fishing boat — a pastime that is still hard to beat, though most visitors today travel in stylish gulets (traditional wooden sailboats). Using the pseudonym “the fisherman of Halicarnassus” (the ancient name for Bodrum), Şakir wrote about the area’s submerged cities, Greek and Roman ruins, crusaders’ castles, and sea caves. Of these sites, the 15th-century St. Peter’s is one of the Mediterranean’s finest castles and remains the town’s most prominent landmark. An ardent ecologist as well, Şakir ordered seeds from all over the world and scattered them around Bodrum — bougainvillea, oleander, fragrant bergamot, and swaying palms provide a photogenic backdrop for lazy days and heady nights by the sea. Much of the area’s jagged coastline is only accessible from the water — a dreamy mix of

In particular, I enjoy how small quarters of this compact city preserve their distinct identities. The modulation in tone as you walk from one to another is like a subtle change of tune in a musical medley: the bustle among the boutiques and specialty shops of the Negen Straatjes (the “Nine Little Streets” that crisscross between the grand canals); the art galleries of the Jordaan, west of the center, where a farmers’ market draws healthy eaters every Saturday; the aroma of hot honey from griddled waffles that wafts through the Albert Cuyp market in De Pijp, to the south; and the streets of cafés, restaurants, and delis that surround it.

SUMMER IN THE CITY

I love the way summer spills people out onto café terraces: small lines of chairs hugging the wall on a narrow sidewalk, clusters of tables that colonize canalboats, terraces that confidently cross the road and expand over broad bridges, or quiet spots like the terrace under wingnut trees on Amstelveld square, looking out over a canal. Flowers are everywhere, in hanging baskets, tumbling from window boxes, for sale in luscious bunches from corner kiosks. City parks become sociable outdoor salons. Crowds of people picnic and party in Amsterdam’s “green lung,” the Vondelpark, though the more sedate Amstelpark, south of the center, with its lakeside café, thickets of rhododendrons, and views of the river Amstel is my preferred spot. rom a deep pool of childhood memories, I can conjure up a scene — from a movie or evoked in a novel — of a spy who identifies herself to a contact by subtly folding back a corner of her overcoat to reveal a flash of crimson lining. That moment fixed in me a love of the quietly unexpected, the sudden intimacy of knowledge that feels all your own. Discovering places that produce this feeling is one of the greatest delights of exploring a city, and Amsterdam — my hometown now for nearly 30 years — has some that I cherish. The cut and fabric of Amsterdam’s coat are what first caught my eye. Who can resist the charm of its spider’s web network of canals festooned with gabled houses, its treasure troves of great art, and its exuberance? Amsterdam is a city that flaunts its history yet is fired by a youthful spirit. I love the way people light their rooms with the careful balance of a Rembrandt painting and leave curtains open at night so that the gabled buildings seem like strings of lanterns; and the way that houseboats lining the canals have sprouted potted plants like barnacles. I love the flocks of bicycles, a mode of transport the author Angela Carter called: “pure reason applied to motion,” which perfectly encapsulates Amsterdam’s combination of good sense with freedom. I relish those moments spent contemplating the perfect poise of a painting by Vermeer and sharing Van Gogh’s startled delight at the colors and light of southern France.

DESTINATION AMSTERDAM Who can resist the charm of its spider’s web network of canals festooned with gabled houses, its treasure troves of great art, and its exuberance? Montesquieu said when he passed through in 1729: “I prefer Amsterdam to Venice, for in Amsterdam you have water without being deprived of land.” Amsterdam is Venice with trees. All of this is part of Amsterdam’s fine outer garment. What really draws me to the city are those flashes of crimson lining — such as the secrets many grand canal-side houses conceal. Many have beautiful gardens, often quite as large as the house itself, yet invisible from the street. For three days at the end of June, a few owners open their front doors and allow people to traipse through for a look at bee-buzzing flowerbeds, banks of ferns, and tree-shaded nooks for afternoon tea. Should you miss Open Tuin Dagen, all is not lost. The elegant 18th-century garden of Museum Willet-Holthuysen and Museum Van Loon’s formal 17th-century greenery are paragons of the horticultural grandeur tucked away behind Amsterdam’s patrician mansions. The Van Loon house itself is a particular favorite of mine as, network of canals. Below: Griddled waffles make a tasty treat for breakfast

PULITZER AMSTERDAM: A NEIGHBORHOOD HONORING A CITY’S HERITAGE Amsterdam’s three grand canals, the Herengracht, Keizersgracht, and Prinsengracht (Gentlemen’s, Emperor’s, and Prince’s canals), were laid out in the economic boom time of the 17th century. The Dutch East India Company (the world’s first multinational trading company) was pouring gold into merchants’ coffers from trade around the globe; New Amsterdam (now known as New York) was established on Manhattan Island, and Rembrandt and his fellows were filling homes with fine paintings. The new canal network arose to accommodate a burgeoning population. Grand merchants’ houses went up along the Herengracht and Keizersgracht; their warehouses spread along outlying Prinsengracht. Shopkeepers and artisans set up trade in the smaller streets that crisscrossed the concentric rings of canals.

The stunning Pulitzer Amsterdam hotel stretches, dips, and climbs between 25 historic buildings here, from Keizersgracht mansions to converted Prinsengracht warehouses and including some of those artisans’ houses in between. The historic fabric and façades of the buildings are carefully preserved, from magnificent Keizersgracht stuccoed gables to the more modest frontages on the Prinsengracht. Inside, the character of individual buildings remains: here a marbled corridor, there a narrow stairway, a baronial fireplace, or cluster of Delft tiles. Art, part of Amsterdam’s very essence, plays a central role, from the Old Masters’ palette of deep blues, rich greens, and pinky plums that inspires a fresh new design to the countless works from the hotel’s extraordinary modern art collection that adorns the walls.

At times, houses themselves contain secrets. Ons’ Lieve Heer op Solder, a canal house in the heart of the red-light district (one of oldest parts of town), gives a real sense of 17th-century merchant life, from its cupboard beds to its Vermeer-like black-andwhite tiled parlor floor. Dutch speakers may already have an idea about the jaw-dropping surprise that awaits in the attic — a three-story church that stretches through two, possibly three, adjoining houses. The house name translates as Our Lord in the Attic, and this schuilkerk (hidden church) dates from when Roman Catholicism was tolerated, but Catholics were able to worship only if their churches were not visible from the street outside.

Of course, Amsterdam’s most famous secret attic is the one Anne Frank and her family hid in for two years during World War II. More than a million visitors make a pilgrimage to the Anne Frank House each year, but few visit the home where the family lived before being driven into hiding (their hideaway was above Anne’s father’s offices). Their apartment, at Merwedeplein 37-2, a short walk south of De Pijp, is unmarked (it serves as accommodation for a writer-in-residence), though a slim, sad statue of Anne stands on the square outside, with flowers at her feet. I like to follow the route she took each day to school; down Biesboschstraat, past the site of the Oasis ice cream parlor (now Harmony restaurant), where she laughed with friends on Geleenstraat, to the school on Niersstraat that now bears her name. For me, that simple walk means even more than a visit to the hideout attic itself. It is just such a glimpse of the overcoat’s lining that I feel brings me closer to the heart of Amsterdam.

verything I love about summer in Switzerland is encapsulated by one photograph. My partner and I are standing on a trail high above the Oeschinensee, a popular lake in the Jungfrau region. Behind us, mountains rise up, snow speckling their peaks despite the heat. Far below, the glacial water of the lake is such an intense turquoise it looks painted on. We are grinning with delight at the glorious view — a memorable example of one of many exceptional panoramas in Switzerland, whether you’re walking in the mountains, cruising the lakes, or sitting in a picturesque town square, basking in the sun and gazing at the Alpine vistas.

TOP-NOTCH TRANSPORT

For me, part of the delight of exploring Switzerland is discovering the “civilized” approach the Swiss have taken to accessing their wild landscape. In the 19th century, numerous cogwheel trains and funicular railways were constructed that are still in use today. While in winter, these extraordinary feats of engineering precipitously climbing up steep mountainsides open up these glorious peaks for ski enthusiasts, it is in the summer that they truly come into their own and allow these landscapes to be enjoyed by all. With no need for multiple layers against the elements and options for all levels of walkers, the flower-strewn hills (and mountains) really do come alive for those wishing to breathe in the mountain air and those world-beating views.

Clockwise from left: The breathtaking UNESCO site of Oeschinensee; Wildhaus ski lifts still operate during summer; Dorfstrasse street in Grindelwald

Indeed, Swiss transport infrastructure is so impressive, you don’t even need to hire a car. Seamlessly integrated, even if your journey involves four disparate modes of vehicle across lakes and up mountains, you can be sure of timeliness and not having to wait long between each connection. Despite the popularity of the most scenic spots (hiking is the national pastime, after all), it’s easy to get away from the crowds, find a solitary spot for a picnic, and quietly revel in your panorama of choice. Classic excursions include taking the cog train from Montreux up to Rochers-de-Naye

Meanwhile, chic mountain villages such as Gstaad and Zermatt are sensational summer destinations: a morning of high-end shopping neatly segues into a luxuriously long, alfresco lunch, complete with serious people-watching and sensational Alpine views to match. Lake swimming is another popular Swiss pastime. You’ll find lakeside pools — or badis, as they are known in Swiss German parts — in most Swiss cities. Popular meeting spots, they are perfect for a welcome respite from summer heat or to watch the sun go down. One of the joys of lake swimming is the unique perspective you get on the landscape as you look back toward land. In Switzerland you can ski even in the height of summer. The Theodul Glacier above Zermatt has year-round wintry conditions, and with up to 13 miles of pistes, it is suitable for skiing, snowboarding, and freestyling up to midday.

TOBOGGANING ON MOUNT PILATUS 2SUMMER

For action-packed family fun, try a summer toboggan run – a blobsled-style sled that runs down a metal track on the side of a mountain. At 4,430 feet, Switzerland’s longest is the Fräkigaudi on Mount Pilatus high above Lucerne with sensational views to match.

5VIEW THE AWESOME ALETSCH GLACIER

View its snake-like rock and ice contours from the Aletsch Arena, where you can hike along the ridge above the glacier, or take the highest mountain railway in Europe from Grindelwald up to the Jungfraujoch at 11,332 feet (where you can, of course, have a very civilized lunch at the top).

But you’ll be rewarded for your efforts with probably the most wonderful scenery you’ve ever encountered, friendly people to share a bottle of wine with, and delicious food in even the remotest of mountain cabins. Just don’t tell anyone — it’s our little secret.

Take a road trip through Ireland, allowing plenty of time to soak up the glorious landscapes and equally impressive local hospitality BY JOHN O’CEALLAIGH

s one of the country’s many émigrés, I always feel a certain nostalgia when I take a road trip home along the winding country roads of Ireland, but for first-time visitors the serene landscapes are often a complete revelation. Stretching from the conviviality and clamor of the capital to the wilds of Cork, Kerry, and Clare, this driving itinerary traverses ancient ruins and the most momentous castles, alongside honeyed sweeps of beach and pretty pastelcolored villages. Given the slow pace of life in the west of Ireland, it’s appropriate to do this tour at a leisurely pace — set aside at least 10 days to take in all this grandeur, and conviviality of the locals, properly.

In Dublin, conversation flows as smoothly as the city’s gentle River Liffey. It’s something that always stands out to me when I return from the anonymity of my life in London to my homeland’s capital. I delight in patter with fellow passengers when I take a top-deck perch on bus journeys through the low-rise inner city, and there is genuine quick wit to be enjoyed if you tune in to buskers’ banter. Nursing a pint in any number of the city’s generations-old pubs, I’ve been subsumed into so many punters’ gregarious oratories. One of the world’s original UNESCO Cities of Literature, this is a place where social clout is predicated on your ability to tell stories. Beyond offering all the cosmopolitan niceties you’d expect from a major European city, it’s another reason why the capital is an edifying, inspiring place to begin any Ireland itinerary. The country’s well-documented reverence for fables, folklore, academia, scripture, and theology is beautifully distilled in Trinity College, where its Long Room library is home to 200,000 or so tomes, and the 1,200-year-old

The Book of Kells stands on display as one of the world’s most precious literary treasures. The medieval religious manuscript is intricately detailed and its ancient folios still glimmer inexplicably from the indigo, orpiment, and red lead artists used to enliven those pages so many centuries ago. With Dublin’s center small in scale and most of its attractions accessible by foot, it’s just an amble from Trinity to the National Gallery of Ireland, home to an unrivaled collection of Irish art and standout works by European masters such as Caravaggio, and onward to most of the disparate buildings that collectively form the National Museum of Ireland. Here, macabre, millennia-old bog bodies, well-preserved cadavers discovered in peaty marshlands, are juxtaposed with magnificent Bronze Age bracelets and neck-spools in deep, shimmering golds. The displays provide an ancient allegory for a land that has a long history interfused with brutality and beauty.

While Dublin’s cultural attractions put meat onto a visitor’s bare-bones understanding of Ireland, heading west gives you full sense of the life-affirming spirit of the country. If you have all the time in the world, consider spending as much as six weeks exploring the Wild Atlantic Way. The world’s longest-defined coastal driving route, it follows a rugged, awe-inspiring trail from Cork along the southern tip of Ireland on to the northernmost reaches of Donegal in the northwest. Stretching some 1,600 miles, it’s an extraordinary overland odyssey that’s best enjoyed at a slow pace — most travelers tend to explore different sections over consecutive vacations. For first-timers and those with much less time (say, a week to 10 days), commence the route in Cork, easily reached in about three hours from Dublin, and roving on to Clare, from there, it’s a straightforward drive to Shannon or Dublin Airport for the flight home. Colorful, friendly, and compact, Cork city is a charmer — and increasingly developing a reputation as one of Ireland’s culinary epicenters. Much of this agriculturally minded nation’s best produce is for sale at the longstanding, enclosed English Market. I ordinarily order a warming seafood chowder with buttery soda bread from the upper-level Farmgate Café here and idly observe as the shoppers pick up fish and cheese from the stalls below. Pretty and prosperous, the nearby towns of Kinsale and Cobh also draw gourmets, though the culinary offering becomes more rustic farther along the winding roads that extend far west and onward to the remote Beara Peninsula. Somehow still off the regular tourist map, this is one of Ireland’s most beautiful and mournful landscapes, a ragged, romantic spread of wind-battered mountains and enclosed valleys. A curiosity awaits at Ballaghboy on the peninsula’s westernmost tip: Ireland’s only cable car. Linked to Dursey Island and dating from the 1960s, its inauguration provided a novel means for farmers to convey sheep between mainland and island. Roaming farther north, along the Beara Peninsula, leads to Kenmare, one of the many pretty towns that

punctuate Kerry. In Ireland, this immensely beautiful region is known as the Kingdom County, a fitting accolade for somewhere that radiates such unassailable majesty. That nickname also rightly suggests a landscape that is just a bit grander and more daring than perhaps anywhere else in the country. Potentially a treacherous ascent on one of the west’s many overcast, rainy days, Ireland’s highest mountain, Carrauntoohil, rewards clear-weather conquerors with the most mesmerizing views. In every direction, meadows of emerald green shine alongside grand, golden beaches and sparkling cobalt waters. Spooling north, narrow coastal paths overlook gargantuan splinters of ancient rock face. New arrivals to Ireland won’t believe the geographic diversity and haveit-all-to-yourself serenity still found in this small country. Join a cruise in the isolated village of Portmagee heading to the remote isle of Skellig Michael for a different perspective on this lonely, ruthless shoreline. After about seven-and-a-half rocky, windswept miles at sea, you’ll reach a pyramid-like island where a collection of stone huts built by monks (who somehow endured here in hardiness and piety from the 6th to 12th centuries) still stand. On nearby Little Skellig, where 70,000 gannets will roost in season, you may see the spectacular dance of these enormous sea birds as they dive into the surf searching for a meal.

The Ring of Kerry Beginning and ending in the lively town of Killarney, the Ring of Kerry is a 111-mile circuit that incorporates some of the Kingdom County’s most majestic landscapes. If time is short, circumnavigating this scenic showstealer should be a priority. Looping the Iveragh Peninsula, it veers past the Victorian splendor of stately Muckross House, through the elemental beauty of lake-and-mountain-laden Killarney National Park, and on to Portmagee, a speck of a village where travelers sail to the Skelligs.

For an indication of just how remote some of this region can be, consider that it is home to one of 19 dark-sky reserves to be found globally – on clear nights, the brilliant dazzle of uncompromised starlight can defy belief – but the crowds pick up again at the Gap of Dunloe. Should you find yourself behind a pony and trap on this narrow mountain pass, you can expect your journey to slow to a crawl, but that allows more time to admire the glacially formed byway in all its glory.

ew works of dance have achieved the transcendence and cultural resonance of Alvin Ailey’s Revelations. More than six decades after its creation, this 1960 work, set to spirituals like “Fix Me Jesus” and “Bosom of Abraham,” and rooted in the experiences, longings, and religious practices of African-American communities of the southern United States, continues to move audiences to tears and lift them out of their seats. Like all great works, it never stops growing and reverberating in our culture. As society evolves, so does Revelations. It feels just as relevant today as it did 62 years ago. Ailey created the work when he was just 29 years old, two years after founding his dance company in New York. He had been in the city a little over half a decade, dancing on Broadway and studying with many of the modern-dance greats: Martha Graham, Hanya Holm, Doris Humphrey, and Anna Sokolow. That company would grow into the large, bustling institution that is Alvin Ailey American Dance Theater and its related school — based just a few blocks from New York City Center, where the company performs each year. Most recently, his life and work has been documented in Ailey by filmmaker Jamila Wignot, whose love of dance was ignited while watching a performance by the Alvin Ailey American Dance Theater as a sophomore at Wellesley College. “I just remember my feeling of the evening,” she told The Guardian. “The kind of searching and reaching. And a kind of counternarrative, you know, that was important to me at that time.”

SOURCES OF INSPIRATION

Ailey was born in rural Texas, where his mother Lula Elizabeth Cooper was forced to do backbreaking work, first in the fields, and later cleaning homes. It was a beautiful but challenging landscape, a world of “harsh and arbitrary extremes,” Ailey’s biographer, Jennifer Dunning, has written. The young Ailey experienced community, the support of the Church, and friendship — but also saw the hard labor and injustice endemic in the lives of African Americans in the Jim Crow South. Ailey referred to these as his “blood memories,” recollections of family, music, and struggle. These were the memories that would later inform works like Blues Suite, Revelations, and Cry — the latter of which he dedicated to his mother, and to all Black women. Thinking of her son’s prospects, his mother decided that she and her only child should move to Los Angeles when Ailey was 12 years old. She continued working in people’s homes as Ailey attended school, played sports, and, most importantly, discovered the world of theater. His first experience seeing dance was on a school trip to a performance by the Ballets

Russes de Monte Carlo, a traveling ballet troupe. As Ailey said in an interview in Wignot’s documentary: “Here was a new world.” His eyes were further opened when he saw another company, led by the dancer, choreographer, and anthropologist, Katherine Dunham, who staged works based on Afro-Caribbean dances, music, and stories. Here was a model, a path for the young dancer and the choreographer he would become. “The day I saw Katherine Dunham,” Ailey said in an interview, “I couldn’t believe I was seeing Black people on a legitimate stage. I was taken into another realm.” Like Dunham before him, and other Black-American choreographers including Donald McKayle, Talley Beatty, and Geoffrey Holder, Ailey drew from his background to create works that expressed aspects of his experience, and that of the African diaspora. Unlike them, Ailey was a universalist, determined that his works reach beyond the experience of one man or one people. The Black experience, as he saw it, was a prism through which to see and feel the experience of all of humanity. His dances were concerned with the troubles of being a human in the world.

Ailey had many interests. He claimed for himself the freedom to make dances about whatever subject, using whatever music he pleased. As Wignot said: “He followed his curiosity wherever it led him, with total dedication and commitment to a vision.” But critics and audiences were not always receptive when they felt he strayed too far from his roots. Understandably, Ailey felt frustrated at being pigeonholed. “I’m also a 20thcentury American and I respond to Bach and Ellington and Benjamin Britten and Samuel Barber, and why shouldn’t I?” He explored the music of these composers, and more. The Lark Ascending, for example, set to Ralph Vaughan Williams’ orchestral piece of the same name, is a poetic and deeply lyrical work from 1972. Sadly, it is seldom performed. Ailey also created for other ballet companies, including the Paris Opéra Ballet, the Royal Danish Ballet, and American Ballet Theater. But the works audiences return to are always the same: Blues Suite, Masekela Language (which references apartheid), Cry, Night Creature, Memoria, and, especially, Revelations. Indeed, Ailey came to feel almost a resentment toward Revelations. “But,” as Alvin Ailey American Dance Theater member Sylvia Waters puts it in Wignot’s documentary, “He came to terms with it. I heard him say: ‘the audiences like it, the dancers like it, and I have to admit it was a good ballet.’” About that, there is no doubt. The company he founded and its associated school are the main repository of his works and the recipients of his legacy. But Ailey did not mean the company to be a monument to himself. When he died in 1989, at the relatively young age of 58, due to complications from AIDS, he had already begun diversifying the repertory. He opened the company

to a long list of mainly Black choreographers, including Talley Beatty, Louis Johnson, Geoffrey Holder, George Faison, Katherine Dunham, and, later on, the experimentalist Bill T. Jones. He was highly aware that his own great success gave him an opportunity — and even a responsibility — to open the doors to both those who preceded him, and to those who would follow. As a result, the Ailey repertory has shone a light on the excellence and diversity of African-American art. “Alvin was eclectic,” Waters says. “He wanted to celebrate the AfricanAmerican experience as well as the modern dance tradition. He wanted the company to be a reflection of his audience.” At the same time, Ailey was, in some ways, a man of his time. Though he was openly gay in the company of friends and colleagues, he kept his sexuality private. He never spoke publicly about his suffering from AIDS, nor were his struggles with mental health known outside of a small circle. His public persona was larger than life, formidable, and life-affirming. In many respects, he lived for others: his dancers, the students at the Ailey school, the audience, and the future of AfricanAmerican dance. Those who have followed in his footsteps, including his successor at the head of the company, Judith Jamison, and the company’s current artistic director, Robert Battle, are Ailey’s heirs. As are the choreographers whose work the company has commissioned and advanced, like Rennie Harris, Kyle Abraham, and the current choreographer-inresidence, Jamar Roberts. As Wignot expressed in a recent interview: “Ailey leveraged the space he had in order to allow others to come in.” Jamison and Battle have expanded that space farther. The spirit of Ailey lives on.

y passion for alfresco concerts began nearly 30 years ago at Kenwood House, a heritage villa beside London’s Hampstead Heath. Lazing with a group of friends on the grass, passing a hodgepodge of picnic items up and down our line, it was an evening of happy chatter, floral frocks, popping corks, and shared anticipation of the entertainment to come. As the orchestral music swelled, so did our collective hearts. From that day forward, summer became about being a part of something larger — experiencing the clapping, singing, dancing, and euphoria of emotion that can only come with being part of a mass musical experience.

Summer music festivals, 1

MUSIC SUMMER FESTIVALS Around the world, summer music events promise spellbinding locations, irresistible melodies, and bounteous bonhomie. Choose carefully and you can experience wildly different settings and ambiances: from black tie, Champagne, and heartrending arias on a manicured country house lawn to sunset over mountains, lakes, or oceans as evocative rhythms carry you away. You can even soak up sublime harmonies in an ancient amphitheater. What’s more, many events culminate in a glittering fireworks display. This, says Fiona Maddocks, classical music critic of British newspaper The Observer, is the appeal of these summer concerts. “They give people a chance to do things they can’t do for the rest of the year. Boundaries are much more open, there’s a singular atmosphere and a sense of pleasure, with dinner or a picnic part of the enjoyment. Even if the weather isn’t perfect, there’s a good spirit about these events. “Some of the opera festivals, such as Glyndebourne, have become more inclusive and accessible,” she continues. “Holland Park offers a lively urban informality. The Proms mixes the formal and informal, taking place in the popular, unusual setting of London’s Albert Hall. It can seat more than 5,000 concertgoers, which is far more than most venues. Out-oftown opera festivals like Grange Park and Longborough are in beautiful locations and offer incredible performers.”

Planning ahead is crucial, advises Maddocks. “If you’re really determined to attend a particular event, you need to get in early. The Edinburgh International Festival, for example, takes some organizing and accommodation gets booked up. Country house opera festivals sell out early, but you can often get return tickets at short notice.”

SENSATIONAL SETTINGS

The setting plays an important role. Lakes provide mesmerizing venues, with Austria’s Bregenz Festival standing out. The water provides perfect reflections of the action, and the floating stage on Lake Constance plays host to monumental operas, each providing scene-stealing opportunities for set designers. Past productions have taken place around giant tables and chairs (La Bohème), a colossal Statue of Liberty (Aida), and beneath the gaze of a towering skeleton, thigh-deep in water (Un Ballo in Maschera). Meanwhile, the Ravello Festival, on Italy’s Amalfi Coast, is staged with sublime backdrops very much in mind. The highlight is the dawn concert. The audience take its seats facing the Villa Rufolo outdoor stage at 5 a.m., many having stayed up all night sipping strong Italian coffee in the main square. The reward is a symphonic crescendo as the sun rises over the coast, revealing mountains and sea in captivating glory. Festival Director Alessio Vlad says: “It’s hard to describe the atmosphere, you have to experience it for yourself. The transition from dark night to sunrise in front of such an imposing view, while listening to music, is truly unique.” If a mountain setting appeals, Aspen Music Festival and School fits the bill. Notable for its

t could be argued that Brits measure their lives in puddings. The jellies and ice creams of childhood birthday parties. The steaming treacle sponges of school lunches, doused in (often lumpy) custard. Brandy-soaked Christmas pudding followed by Boxing Day trifle. The first rhubarb crumbles of spring and the last apple pies of fall. Most loved of all are the puddings associated with the summer months. Glorious trifles, messes, and fools loaded with ripe fruits. Come late spring, these desserts herald better weather and better times. Eton Mess is a wedding staple, strawberries and cream is synonymous with tennis at Wimbledon, and the arrival of its signature summer pudding at one of London’s best restaurants, The River Café, is a much-anticipated event. They may have strange names, but the greatest puddings of the summer season are simple affairs, where the ingredients speak for themselves. They chart a delicious course through the warmer months, from the rhubarb of spring through to September’s fools of blackberry and plums. “Classic summer puddings play a huge part in our culinary culture,” says chef Adam Handling, who puts these seasonal favorites on the menu at The Loch & the Tyne, a gastropub

in Windsor. “It’s about keeping the love for classic British dishes and reminding everyone that we can do more than just fish and chips.” Chef Paul Ainsworth agrees. “Trifles, syllabubs, possets, and mess celebrate the things we do so well in the U.K. — beautiful soft fruits, including the best strawberries, raspberries, and cherries in the world, and cream from our amazing dairy farming.”

DEVELOPING DESSERTS OVER TIME

Discussing today’s fanciful confections requires a look back. These days, Brits use the word “pudding” interchangeably with almost any sweet dessert, but originally, a pudding was a savory dish, wrapped in animal skins (think sausages or haggis) and steamed in cloth or encased in pastry. In her book, Pride and Pudding, writer Regula Ysewijn looks at the history of British “puds.” The first pudding recipes date back to Roman times, but pudding’s use as a catch-all for dessert came later. “The term ‘pudding’ has only been connected to this last part of the meal since the 20th century,” Ysewijn writes. Individual sweet dishes date back longer. Take trifle. This show-off is best served proudly in a large, clear, glass bowl, all the better to display its layers. A trifle typically includes cake or ladyfingers soaked in sherry, then fruits — fresh or entombed in jelly (think Jell-O, not jam) — and custard with

a pillowy topping of whipped cream or syllabub (cream whipped with sweet wine). Both the construction and social status of the trifle have evolved over time. Pen Vogler, author of Scoff: A History of Food and Class in Britain, explains: “The earliest recipe for ‘trifle’ (Thomas Dawson, 1596) is just cream with added sugar, ginger, and rosewater; these expensive ingredients tell us it was a dish for the wealthy.” By the late 1700s, trifle was popular with the middle classes, and by the late 20th century it had become “easy and affordable, with tinned fruit and packet jelly and was seen as something for children’s parties,” says Vogler. “It is having a Renaissance as cooks rediscover that it can be glorious made with good ingredients.”

THE TRIFLE: A TRUE CULINARY CLASSIC ART PRODUCTION CLIENT

Chef Lisa Goodwin-Allen has spent 20 years working at Northcote in the beautiful Ribble Valley, north of Manchester, where she has been Executive Chef since 2015. She is a big proponent of traditional puddings including trifle and apple pie. “I’ve always massively taken inspiration from traditional dishes, those family favorites that people have memories connected with.” For Goodwin-Allen, it’s about putting her skills and originality as a chef on the table. “Our take on a strawberry trifle is a ball of vanilla custard with a strawberry and cream center frozen with liquid nitrogen. Once served, the diner smashes it open and those delicious, familiar flavors come through.” She admits it may not look like a traditional trifle, “but when you taste it, the dish sparks a conversation of childhood memories about strawberry picking or the trifle your grandma used to make. For me, it’s always about telling a story for a customer — and how they connect with a dish.” Food writer Felicity Cloake (One More Croissant for the Road) says, “Trifle is infinitely adaptable to circumstance and utterly above fashion — a true culinary classic.” Try The Loch & The Tyne or The Cadogan Arms in London for a traditional trifle.

FRUITY FAVORITES

Despite sharing its name with the famous private school, Eton Mess is no longer just an upper-class confection. Unsurprising perhaps, given how easy it is to make: just whipped cream, broken meringues, and fresh strawberries. The first Eton Mess recipe appeared in 1893. One origin story is that a chef dropped the pudding at an Eton-Harrow cricket match. Rather than throw it away, he scooped the resulting “mess” into a bowl. Purists insist Eton Mess is made with strawberries, but the simple base lends itself to other flavors. At Yotam Ottolenghi’s restaurant, NOPI, the mess on the menu changes with the seasons. In fall and winter, that means quince and pomegranate. “In summer, we add rose petals and sumac syrup,” says Calvin Von Niebel, NOPI’s Executive Chef. “Eton Mess is the perfect pudding, and we’re always experimenting with flavor combinations, like a chai masala custard with fresh figs.”

ON THE MENU: FIVE CLASSIC BRITISH DESSERTS AND WHERE TO FIND THEM TRIFLE — THE MARINERS, CORNWALL

SUMMER PUDDING — RIVER CAFÉ, LONDON

“The River Cafe’s summer pudding is something people wait all year for. Served with a big dollop of mascarpone, it’s just sublime,” says Tom Rogers.

POSSET — THE FIVE BELLS INN, DEVON Trifle is a mainstay at Paul Ainsworth’s seaside inn. The fruit changes five times a year, in harmony with the seasons. Strawberries, raspberries, and cherries in the summer, blackberries in the fall, and mandarins and clementine in the winter.

FOOL — WATER LANE, KENT

Posset is a regular on the dessert menu at this award-winning country inn. Look for classic lemon, or the grapefruit posset with chocolate granola.

ETON MESS — NOPI, LONDON

This is mess with an Ottolenghi makeover. The fruity spice sumac and pomegranate molasses lend a Middle Eastern influence that pairs beautifully with ripe strawberries.

ALAMY

The chefs at this Victorian glasshouse restaurant pluck the fruits for their summer puds from their own berry bushes and fruit trees. Look out for the gooseberry and elderflower fool in June, served with almond biscuits.

Possets and fools also lend themselves to different flavors. Fools — pureed fruits folded into cream — have been around for centuries and are often made with rhubarb or tart green gooseberries. Posset is also made with sharp fruits, usually lemon. Originally a drink, it has evolved into a cold, set dessert of cream and citrus — you might consider it a British panna cotta. Easy to prep ahead and delicious, lemon posset is a regular on fine-dining menus: Tom Kerridge serves his with fennel biscotti at The Hand and Flowers, the U.K.’s only pub with two Michelin stars. Summer pudding is another eagerly anticipated favorite. It is usually made by lining a pudding basin with stale white bread, followed by red currants, raspberries, and blackberries that soak the bread and turn it a gorgeous fuchsia. The result, served with cream, is lighter than it sounds and is a glorious celebration of berries at their peak. At London’s famous River Café, the summer pudding is infused with an Italian twist. Currants, berries, and peaches are simmered with Valpolicella and encased in a dome of ciabatta. For regulars, it signifies the start of summer. “There is definitely a return to the classics on U.K. menus right now; people want to see the desserts of their childhood, but done properly and with seasonal ingredients,” says influencer Tom Rogers (@gourmet_guy). British summer puddings may have a long history, but that doesn’t mean they can’t move — gently — with the times.

INTRODUCING OUR CANINE COUNCIL

PRODUCTION

Bringing your pet can make any trip extra special. Preferred Hotels & Resorts launched Preferred Pets to highlight destinations that truly welcome your pets as a member of your family. We curated this collection with input from our “Canine Council” BY GAIL UEBERROTH

Here are some helpful hints to make air travel successful and low stress for you and your pet:

IN ADVANCE 1. VISIT YOUR VET Make sure your pet is

up to date with inoculations and that you have any necessary medications on hand.

2. CHECK WITH THE AIRLINE Make sure you are familiar with the rules and regulations of your airline. Airlines have varying regulations regarding the size of the pet and the carrier you bring aboard. 3. CHOOSE A PET CARRIER Go to a trusted pet supply store or doggie boutique for help selecting the best carrier for your pet.

4. BE PATIENT It will take time before

CLIENT

your pet is comfortable with travel, so give them plenty of time to adjust to the carrier by leaving it out at home with the door open (leaving a treat inside often helps!). A blanket, towel, or another piece of fabric that smells like you will also be comforting.

5. PACK ESSENTIALS IN ADVANCE

Your carry-on should include a chew toy or hard, chewy treats; collars, leashes, harnesses; and dry food, and a small, collapsible bowl.

TONY LATTIMORE PHOTOGRAPHY

About our team

These three Chinese Crested powder puffs — Jiggs, Teddy, and Piper — each began their travel adventures as soon as they left their litter, and they continue to travel by air, car, and boat. They love beaches, country walks, concerts, fancy restaurants, and even working in the office, where they greet guests, vet all delivery men, and hang out in meetings, looking for treats and cuddles. Jiggs (“the naughty one”) has the biggest personality and is always at the center of any mischief, but always looks the most innocent. He is one year-old and despite his puppy energy, he will happily settle down for a good cuddle. At three, Teddy (“the nice one”) is sweet, calm, and friendly with everyone. As the (unofficial) mayor of the local bark park, he greets everyone upon arrival. Our Piper (“the diva”) is nine. She is accustomed to luxury (prefers crystal glassware to a bowl on the floor), eats when and what she wants, and as the elder statespup of the council, has earned the respect she demands.

AT THE AIRPORT 6. FOOD AND WATER Keep your pet From top: Preferred Hotels & Resorts Canine Council: Jiggs, Teddy (left), and Piper (right)

When planning a trip with your best friend, it is crucial to find a hotel that will welcome you both. Many Preferred Hotels & Resorts go above and beyond to make four-legged guests feel as welcome as their two-legged companions.

hydrated, but not full. Just like you, a heavy meal before flight can make your pet uncomfortable, and limit water intake right before and during your flight.

7. FIND RELIEF AREAS Make sure

you give your pet plenty of time to eat, drink, poop, and play before you board.

8. ASK TO BOARD EARLY Getting yourself and your pet settled can take some time, so having a few extra minutes can keep you both calm.

IN FLIGHT 9. RELAX You’ve got this. Keep your cool and your pet will, too.

The lady of the lake LAKE COMO HAS LONG BEEN REGARDED THE MOST GLAMOROUS OF THE ITALIAN lakes. Como is a favorite destination of the rich and famous, who decamp here to enjoy la dolce vita, and it’s easy to see why. Surrounded by lush, tree-covered hills, the picturesque lake shores are peppered with charming hillside towns, sleepy fishing villages, exceptional hotels, and magical villas. Sister property of the iconic Grand Hotel Tremezzo, Passalacqua, built in the 18th century by Count Andrea Lucini-Passalacqua as the grandest, most envied villa on the lake, has hosted historic leaders from Napoleon Bonaparte to Winston Churchill. This magnificent mansion has been meticulously restored, showcasing original features including a secret underground entrance, terraced gardens leading down to the lake, and private hideaways. The stately, ultra-luxury mansion retreat will open in June with 24 stylish and unique suites built in the estate’s centuries-old stables, a 200-year-old glasshouse filled with exotic plants from around the world, an open-air gym set in the olive groves, and a lakeside swimming pool. Guests can choose from activities including vintage boat trips from the private dock and a variety of wellness and culinary experiences in the manicured gardens, such as spa treatments, yoga sessions, farm-to-fork dining, and movies under the stars.
