Bermuda Moonlight Movie Series September 3, 4, 10, 18, 19, 7:00pm
The Bermuda Moonlight Movie Series features outdoor cinema events on a weekly basis in key locations throughout the island. In the west, events will be hosted in Dockyard where you can travel via ferry, car or bus to watch the sun set, enjoy movies and dine in any of the popular surrounding restaurants. On South Shore Road our patrons can sit back and relax in the courtyard at Bermuda College as well as enjoy a few weekends taking in the cool sea breeze on the island’s most breathtaking beach, Horseshoe Bay. In the central areas we welcome everyone to Front Street, the lush green acres and fantastic flora of the Botanical Gardens along with the natural ambience of the Arboretum and Barr’s Bay Park. The former casemate Barracks is a large building that, after the closure of the Royal Naval Dockyard, was turned into a prison. In recent years, however, the buildings were abandoned and allowed to become derelict. The move to incorporate these significant examples of military architecture in with that of the Bermuda Maritime Museum is important; they will also now be undergoing extensive restoration. Indeed this has already begun. Volunteers, under the supervision of the BMM administration, have been clearing out debris and cleaning up the area. The actual date these buildings will be exhibition ready and open to the public is, however, a long-range focus. Dr. Edward Harris, the director of the Bermuda National Museum, was hesitant to speculate on just when that would be, as it is dependent on funding, however, I have heard that it could be from three to five years. This expansion of the Bermuda Maritime Museum into other areas of interest is timely in that it will contribute to the better understanding of who we are as Bermudians, and will provide additional opportunities for our overseas visitors. As a leading Architect in Bermuda (Cooper Gardner), you mention that your architectural work is very public and your fine art work is private. Please tell us why this is the case? The forum for Architecture is inherently public as it is commission based and includes the regulatory scrutiny and teamwork required to realize it. My artwork is a contrast in that it is largely conceived and executed in a solitary manner and the act is driven by personal desire. I don’t mind the scrutiny of the former; I do welcome the relative freedom of the latter. Admittedly with larger work the end result is now migrating purposely to a more public setting. Included in the 2010 Biennial, you have created an installation called “After the Party”. The size is 12’x12’. This scale alone is cutting edge for Bermuda and has really opened the eyes of a number of local artists including myself. Elaborate for This Week on how this piece came to be? I made a Bermuda Stone cake over 20 years ago and exhibited it in an eclectic personal exhibition at the Bermuda Society of Arts. Artist of the month – Continued from page 24 the original cake. I reprised the idea a year ago as there were significant Birthdays in the family including, 50th, 21st and 18th Birthdays. So I made a few cakes. Bermuda also had a 400th Birthday that year so that led to the idea of acknowledging that occasion with a major numerical celebration. Originally, I was going to do 400 cakes but thankfully was talked out of it. Even at 100 cakes and 400 candles it needed this size to accommodate them. Mr. Hind visits Zimbabwe up to three times a year, personally helping to source, quarry and truck stone to the artists’ workshops where the sculptors set about making hard, beautiful Zimbabwean stone such as springstone, butter jade and serpentine, live and breathe. The Gallery teems with handsome tribal chiefs, elaborately braided women, prowling leopards, and intricate herds of antelopes and elephant. The pieces can weigh up to 400 lbs but the Gallery can ship pieces all over the world at reasonable cost. Each piece has already travelled more than 8,000 miles, packed in custom boxes, made by the Gallery’s experienced staff in Zimbabwe. The Gallery will repack, fully insure and ship within days of purchase. Renowned artists such as Georgia O’Keeffe, Winslow Homer and Albert Gleizes are part of the permanent collection, and there are continuously evolving shows of local artists on display. Masterworks Foundation was started 21 years ago with just a few paintings, and has grown to the collection we see today. In March 2008, after five years of construction, the new Masterworks Museum of Bermuda Art was opened to the public. The museum presents an impressive new facility for educational purposes for all Bermudians, as well as providing an exciting new destination for visitors to the island. Scott Hill sits down with owner Isabelle Brackstone The Bermuda Perfumery was founded in 1928 and was located in Bailey’s Bay. In 2004, the operation moved to Stewart Hall in St. George’s. The driving force behind the revitalized perfumery is its perfumer, Isabelle Brackstone. Isabelle’s passion and creativity has put The Bermuda Perfumery on the map once more with new perfumes & bath products. Please tell us what one can experience while visiting your historic shop in St. George’s? We are indeed passionate about our perfumes and our mission is to share this passion with our visitors. We offer a free 10-minute tour of our operations so visitors can learn how perfumers work and how we formulate and make our perfumes. We have also just opened an exhibit in our History Room on the Sense of Smell where our visitors are invited to learn about how we smell and about how we build perfumes. Of course, this learning experience then leads to the discovery of our original perfume collection: Coral, Pink, Somers, Fresh Water and many others. Is Rain a Pain in Your Golf Game? Golf Travel Society members recently traveled to the Home of Golf and enjoyed several days of links golf and Scottish weather. Anyone planning a golf excursion to Scotland needs to plan on playing in the elements that can range from sunshine to cool temperatures, wind and of course the annoying rain. As part of our pre-excursion planning, we try to educate golfers with information on the proper apparel needed for their days on the links. While most of our group is prepared for inclement weather, there are always a few who just can’t handle playing in the rain. I have to admit that playing in the rain was never one of my strengths. That is until I first travelled to Scotland in the early 90s. While playing at North Berwick I was fortunate enough to engage the services of a caddie named Monty. Monty was a local who spent most of his years toting bags and spending evenings in the pub. He had a lot of experience and was not afraid to share it with anyone who would listen. The day started with light breezes and overcast skies but as we progressed, the rain began to move in. I grabbed the golf bag and quickly struggled to put on my rain-suit. I pulled the club cover and placed it over my clubs and told Monty I had an extra towel he could use to dry off my grips. Then I pulled out the umbrella and Monty asked, “What are you going to do with that? I’m not going to fight that thing in this wind.” You can imagine that I was a bit put off! Then Monty gave me some of the best advice I have ever received. He said, “Why don’t you just learn to play in the rain; you are going to get wet anyway!” That’s the day I changed my rain philosophy and I have been enjoying playing in the rain ever since. Here are some pointers that can help take the pain of rain out of your game. First, take Monty’s advice: you are going to get wet, let it rain. Next, make sure you have a good rain suit. There are several great suits available, pick one that fits your needs. Make sure you have waterproof golf shoes and if you are on holiday, you may want to take two pairs. Leave the umbrella at home. Finally the most important item that is required to overcome the nuisance of rain, buy a pair of Foot-Joy Rain Grip Golf Gloves. Sold in pairs, the gloves perform best when wet. Back to school What are the three words you’d least like to hear?: “We’ve caught you”; “I’m leaving you”; or “Wow, that’s tiny”? For kids, the world has not any three words less fair to show than the dreaded “Back to school”. Do you remember those endless summers, when your only responsibility was to enjoy yourself? When eight weeks off seemed like forever? When the sun shone every day, and life was full of tents and museums, picnics and parades? And then suddenly, without warning or justice, it was “Back to school”. Your parents might have started to mention it ahead of time, but you didn’t hear them. You might even have been taken to buy a new blazer or skirt, but that was an adventure in itself, even if the intended purchase was a hateful reminder of last term, last year, and other long-forgotten times. Out of the blue, bedtime was brought forward; the crystal radio set (a sort of oldies’ iPod, kids) was no longer to be listened to under the sheets at night; and breakfast was at 7:00 sharp the next morning, and you’d better not keep your Dad waiting when he’s ready to drop you off at school on the way to work. A sense of doom prevailed. “Back to school” signified the end of the world you loved, and the start of a world you didn’t. All the goodness was drained out of everything as the awful day approached. The new blazer had to be taken out of its plastic bag. One appalling September day, and this I shall never forget, I had to wear long trousers for the first time, a shocking and unwanted step on the road to adulthood. As part of the ritual of humiliation, I had to try on the long, grey school pants in front of the entire family and some neighbours, who had been brought in especially for the occasion. I changed into the ghastly things in the downstairs bathroom, did up the buttons (a sort of oldies’ velcro, kids) and emerged to applause. I vowed revenge on the entire human race, as surely as Superman had vowed to take down Lex Luthor in that summer’s final comic book. I hadn’t thought of that day until now, nor had I realised that living in Bermuda was my way of getting back at the adult world. Like most of the men I know, I wear short trousers whenever I possibly can — year round, in my case. I didn’t until this very moment understand that I was daily extracting my promised revenge on a hateful world, like Dr. Brown in the Premier’s office. Those long pants weren’t just a casual means of humiliation; they were a form of subjugation. No wonder I hated them. No wonder “Back to school” always sounded more like a command than an invitation, reinforcing the notion that I was a prisoner, trapped in the adult world. Good job I never had kids. Or grew up, come to think of it.

… That the flying boat Cavalier was assembled in Bermuda? In 1937, Imperial Airways and Pan American World Airways started a New York to Bermuda air service with Imperial Airways using their Empire flying boat Cavalier. With a range of about 1500 km, Cavalier was unable to fly to Bermuda and was shipped here by sea and assembled in Bermuda. Built by Short Brothers of Rochester in England, the S.23 Cavalier had a wingspan of 35 meters, a length of 27 meters, an empty weight of 10.9 tons and a loaded weight of 18.4 tons. Cavalier was powered by four Bristol Pegasus engines, each providing 920 horse power. Cruising speed was 165 mph and maximum speed was 200 mph. Cavalier had two decks: an upper deck for the flight crew and mail, and a lower deck with luxury passenger accommodations. After being dismantled by Short and Imperial Airways engineers at the Rochester factory, Cavalier was shipped to Bermuda in 21 crates aboard the RMS Lochkatrine. The largest crate – 90 x 19 x 12 feet – containing the fuselage, was the largest crate ever to be shipped from London and was used for many years as both a work shop and club room. After unloading at Bermuda’s Dockyard, the fuselage was towed to Darrell’s Island where Cavalier was re-assembled under the supervision of Imperial Airways engineer Len Turnhill. On 18th February 1937 Cavalier took to the air once again and on 8th June made the first of two inaugural flights to New York. After flying twice per week between Bermuda and New York, disaster struck on 19th January 1939 when, less than half way between Port Washington and Bermuda, icing of the carburetors forced Cavalier to land on the water. After sending an S.O.S. signal and first reporting ‘okay’ after landing on the storm-tossed waves, ten minutes later came the one-word message ‘sinking’ and then silence.

Rescued from near dereliction through a protracted restoration, the building now houses exhibits on slavery and Bermuda’s military and seafaring history. Don’t miss the breath- taking Hall of History mural created by Bermudian artist Graham Foster and depicting Bermuda through the ages. THE SESSIONS HOUSE, Parliament Street, Hamilton The Sessions House is where Bermuda legislates its affairs. A simple, four-square Georgian structure, the Sessions House was embellished on its southern, ceremonial front during the Victorian era to coincide with Queen Victoria’s Golden Jubilee in 1887. The house sits at 10am on Fridays from November until it concludes its business, usually by July. 441 292-7408. THE CABINET BUILDING AND CENATAPH, Front Street, Hamilton Set back from the street in a park-like setting, the elegant Cabinet Building with its graceful Ionic columns was completed in 1841. This important building houses the Premier’s offices and is where the Senate meets every Wednesday. FORT HAMILTON, Happy Valley Road in Pembroke on the outskirts of Hamilton A sentinel that has been protectively overseeing Hamilton Harbour since 1889, Fort Hamilton with its moat gardens, green lawns, musty dungeons and never-tried artillery is worth a visit. GOVERNMENT HOUSE, Langton Hill, Pembroke This imposing structure is the official residence of Bermuda’s governor, who represents H.M. Queen Elizabeth II. Completed in 1892, Government House was designed by Scottish architect William Hay, whose best-known legacy to Bermuda is the Anglican cathedral in Hamilton. PETER’S CHURCH, Port Royal Golf Course Duke of York Street Situated in appropriate loftiness above the main street of St. George’s, St. Peter’s Church is one of the island’s most beloved landmarks and is the oldest anglican church continuously occupied in the New World. The first church on the site was constructed in 1612 of native cedar and a thatched roof. This original edifice was replaced seven years later by a more permanent structure that lasted almost a hundred years, until the hurricane of 1712. THE OLD RECTORY, Broad Alley, St. George’s, behind St. Peter’s Church Built in 1699, this charming cottage on one of the numerous picturesque back streets in St. George’s is one of Bermuda’s oldest houses. Acquired in 1700 by Captain George Dew, an unsuccessful privateer who became a St. George’s assemblyman, The Old Rectory acquired its current name when it became the residence of the Rev. Alexander Richardson in the last quarter of the eighteenth century. ST. GEORGE’S HISTORICAL SOCIETY MUSEUM, Duke of Kent Street and Featherbed Alley Built around 1734 as a private residence, Mitchell House is a fine example of eighteenth-century Bermudian domestic architecture and has been home to the St. George’s Historical Society since 1920. BERMUDIAN HERITAGE ASSOCIATION, Samaritan’s Lodge, Intersection of York and Water Streets St. George’s newest museum was formed in 1994 to preserve and document the history of black culture and achievement in Bermuda. Displays include a fascinating assortment of memorabilia relating to the many areas in which blacks have made a contribution since first arriving on the island in 1616: shipbuilding, piloting, construction, nursing, music, sports and politics, to name a few. elevation behind Town Hall, is one of the island’s oldest, most historically important buildings. Erected around 1620 by Governor Nathaniel Butler, the State House is open to the public 10am-4pm on Wednesdays only. THE UNFINISHED CHURCH Duke of Kent Street, St. George’s The impressive Gothic vestige that looms over the town of St. George’s was begun in 1870 as a replacement for St. Peter’s, which had fallen into a state of serious disrepair. Designed by William Hay, the Scottish-born architect who later drew the plans for Hamilton’s cathedral, the St. George’s church was abandoned in 1899 when near completion. FORT ST. CATHERINE St. Catherine’s Point, St. George’s Fort St. Catherine stands on the site of one of the four towers that Governor Richard Moore erected along Bermuda’s coast around 1613. None of these original towers, the first English forts in the New World, survive. The present, completely restored structure dates from the midnineteenth century and is home to fascinating exhibits including military guns and weapons. Open daily 10:00am-4:00pm. CARTER HOUSE Southside Road, St. David’s Carter House was probably built in the 1720s by John Hayward and his wife Martha, reputedly a descendant of Christopher Carter, one of the two Sea Venture survivors who stayed behind when the vessel’s other passengers continued on to Virginia in 1610. Crystal Caves
has been converted into a museum that commemorates the pre-war agrarian traditions of St. David’s. ST. DAVID’S LIGHTHOUSE Mount Hill, St. David’s Constructed of Bermuda stone, this 55-foot structure is one of two local lighthouses. Lit for the first time in 1879, its fixed white light enabled navigators to take cross bearings with the flashing beacon emitted by Gibbs Hill lighthouse way up the coast in Southampton. CRYSTAL CAVES Wilkinson Avenue, Bailey’s Bay Two young boys discovered this magical underground world comprising stalactites, stalagmites and a clear, fifty-five foot deep lake by accident in 1905. Subsequently it has become a leading attraction for visitors who can now also visit a nearby sister site, Fantasy Cave. A café and a gift shop are also located on the premises. Crystal Caves, which is on the bus route between Hamilton and St. George’s, is open seven days a week except on public holidays that occur during the winter months. I have been with the Fairmont for 24 years tending bar at the Southampton Fairmont, The Waterlot Inn and now the Hamilton Fairmont. What keeps me going are the guests I have had the pleasure of meeting over the years. I have been involved in a number of mix logy contests and have won many of them. Just recently I was awarded the 2008 VIP award for the Bartender of the Year. That just shows me that I’m not ready to be set out to pasture yet. I think that you just get better with age. He proudly relates how he has cooked for famous people such as President Carter, Michael Douglas, David Bowie, Iman and even the President of Italy. “I always chose to work in an environment of a very high standard, alongside many respected head chefs”, thus he trained and worked in some of Italy’s most prestigious hotels and restaurants….always remembering that to be the best chef meant “your heart was in your hands!” Today Chef Livio prides himself on maintaining this rule so, with very few exceptions, everything on his menu is made in his kitchen. Fish Anyone? “I really like to eat fish, I’m just scared of cooking it”, is the most common response I get. The reason? If you’re like me, I grew up with a Mom who thought nothing was cooked until it was dry and terribly well done, fish included. So, whenever you do cook fish, you’re always so worried of over cooking it, but then worried of under cooking it due to not wanting to over cook it. Does that make sense to anyone else but me? My favourite way to cook fish is pan-frying. It’s what my wife grew up with. Her Dad would come home with a great catch, clean it and then her Mom would dust it with seasoned flour and pan fry it for an awesome dinner: flaky fish, fried golden brown in a crisp crust. It brings back memories that make my mouth water to this day. Here are a couple of tasty recipes that will have you telling your own “fish tales”. Soy Balsamic Lacquered Cod 6-4 oz. Cod fillet 1 tbsp. soy balsamic glaze (recipe follows) 1 tbsp. carrot coulis (recipe follows) 1/8 oz. chives MAPLE GLAZED YAMS (Yields 1 lb.) 1 lb. yams, diced 2 oz. maple syrup 2 oz. butter 1/2 oz. shallots
8 oz. chicken stock 1/8 oz. ginger, ground 1/8 oz. cloves, ground 1/8 oz. cayenne, ground
SOY BALSAMIC GLAZE (Makes 2 cups) 1 cup lite soy sauce 1 cup balsamic vinegar 1/2 oz. shallots, chopped 1/8 oz. garlic, chopped

CARROT COULIS (Makes 28 oz.) 1 lb. carrots, sliced 1 oz. shallots, sliced 1/4 oz. garlic, sliced 1/2 oz. red curry paste 2 oz. butter 2 cups chicken stock To make yams: Sweat ginger and shallots in butter. Add remaining ingredients and cook until tender, about 4 minutes. To make glaze: Combine all ingredients in medium saucepan. To make carrot coulis: Sweat the shallots and carrots in butter. Add curry paste to carrots. Cook gently over a low-medium heat. Add the chicken stock, and simmer gently until carrots are very tender. Puree in a blender. Season with salt and pepper. To prepare cod: Sauté cod, skin side down until crispy. When skin is crisp and fish is partially cooked, add soy-balsamic glaze. Reduce glaze until it reaches a syrupy consistency and the skin is completely coated with the sauce. To assemble: Place yams in the center of the plate. Top with cod. Spoon the soy-balsamic glaze over the fish and around the plate. Drizzle with carrot coulis and garnish with chopped chives. Serve and enjoy! SALMON POMODORO Yield: 6 servings 6 Salmon fillets (6-oz. portions) 3 tsp. kosher salt 3 tsp. black pepper, fresh ground 3 cups ripe tomato, diced 1/2 cup + 2 tbsp. orange juice concentrate 12 cloves garlic, roasted, mashed into paste 6 tbsp. sherry vinegar 1-1/4 cup extra virgin olive oil 6 tbsp. + garnish parsley, fresh chopped 12 ciabatta bread rolls, cut in half horizontally 12 oz. arugula, whole, rinsed, dry 1 lb. red onion, julienne, caramelized and chilled Season salmon with salt and pepper and pan-sear in 1/2 the amount of the olive oil for 2-3 minutes per side over medium-high heat. Remove from pan; reserve on side. Add tomato to pan, stir around to begin removing caramelization from salmon. Add orange juice concentrate and garlic paste. Bring to high heat and reduce until thick. Add salmon back to pan and toss (gently) to coat while drizzling with sherry vinegar and extra virgin olive oil. Add parsley, salt and pepper to taste. Brush bread with remaining olive oil and grill (flat top or flame broil) until golden brown. Place arugula over bottom slice of bread, top with salmon, drizzle with additional sauce and serve open-faced with caramelized onions and a sprinkle of fresh parsley. I hope you’re willing to make the plunge into serving fish at your own home table, now that you have these simple yet fun recipes.
