It is offically Lobster Season! Photo By Chris Burville featuring Spencer Wood

The great thing about Bermuda is that vacation season doesn’t ever completely wind down and September, although technically a fall month, will have you basking in sunshine while temperatures will fool you into thinking it is still summer. The only thing that might put a damper on your trip is a tropical cyclone but if you are a daredevil type Bermuda might just be the perfect place to experience one, especially in September. Speaking of daredevils, we are absolutely thrilled to give a big warm welcome to Lobster Season and we would like to specially thank Photographer Chris Burville and Lobster Diver Spencer Wood for the fantastic photo on our cover. Lobster Season marks the start of a great winter water sport and delicious meals to be enjoyed at a number of Restaurants across the Island. On page 86 learn how to cook a Lobster Thermidor with the experts from The Lobster Pot Restaurant who are celebrating their 40th Anniversary this year. If you are getting ants in your pants thinking about how exciting it would be to go that extra mile and do the lobster diving yourself, you will want to consult the Ministry of Environment & Planning – Department of Conservation. As far as we know, there are a number of rules that apply when taking these Spiny Lobsters from their seabed homes. Should you want to pick one up already at rest, Lindo’s is the place to go. There are a number of exciting things to do this month. City of Hamilton will host its Fort Night Fever Finale on September 20th at Fort Hamilton. You can expect a night of island style extravaganza and good times. Why stop there, the very next night is the 2nd Annual Lennon Bermuda Peace Concert held at the Botanical Gardens. Both events information can be found on page 16. Have you always wanted to try Paddle Boarding? We couldn’t get enough when we went on a tour with Island Winds this summer - read all about it on page 28. Perhaps you are more of an indoor activities type, there is a lecture with NYC Artist Sanford Biggers on September 13th at the Bermuda National Gallery - read more on page 54. All of these activities are most likely working up your appetite. This month we suggest you go Back to Basics and experience Northrock Restaurant at it’s best, learn more about Chef Monts on page 66 and what he has cooking in his kitchen this month. Have a Bermudaful September and enjoy the tail end of summer!

BERMUDA haha In The Clearing Stands... By Roger Crombie

I’m in the process of moving house. Packing boxes for days on end, with little to occupy the mind, I cast my thoughts back to how often I’d packed boxes in Bermuda over the years. Sun Valley, around the corner from the military complex, was the first place I stayed, temporarily, on the Island. My personal possessions from the UK, endless boxes of junk, didn’t arrive until after I moved to Palm Grove, in Devonshire. My boss rented the enormous house at the top of the hill; I was upstairs in the big one in front, overlooking the front garden. My worldly possessions arrived in Bermuda unannounced one day, with a Customs officer attached to them. His job was to assess how much tax I’d have to pay to import all the things I’d already paid tax on. To be fair, he didn’t ask for a fortune. Weeks of unpacking were leavened by my Mother visiting and kitting the apartment out Gibbons Company-style, which was about all I could afford at the time. In due course, I lost my job. The house went with the job, so I lost that too. I didn’t have to pack boxes, though. From the house at the front, I moved to the cottage immediately behind it. Moving my stuff by hand took about 1,700 round trips. Moving to Alaska would have been much less trouble. I became a VIP at work and was asked to live in a style becoming my new-found magnificence. Boxed everything. The Gibbons Company very kindly moved me up to a fabulous house on Knapton Hill. This was in the days when people thought I might amount to something. My mother didn’t come out to help me with the move into Knapton Hill, but I knew exactly what to do because I had a girlfriend to issue the instructions. Then lost that job; as a result, lost the house and the right to live in Bermuda; packed the boxes again. Everything went into storage for 15 years. Many moons later, I landed another job back in Bermuda, and moved into a furnished garage on the North Shore in Flatts. Over a 10-year period, I loaded it up with new junk, as you do. Then the landlord decided he needed the place; lost the house; packed the boxes. Off to Ferry Reach, my final Bermuda residence. Spent eight or nine years there before work permit difficulties arose. Lost the permit; lost the house; packed the boxes. By now, I had accumulated so much junk that I ran out of time to deal with it and left half of it behind. Good things; nice things; my things. To complete the story: settled in London; unpacked my Bermuda goods (no taxes to pay). Added to that pile of junk a whole new pile of junk. Earlier this year, I lost the desire to live there; sold the apartment; now I’m packing boxes again. My life, in six words: in the clearing stands a boxer. 10 This Week in Bermuda | SEPTEMBER 2013

Paddle Boarding Adventures with Island Winds Bermuda “I was pretty nervous, I didn’t even know if I would be able to stand up on the thing. Before I knew it, I was gliding along the open water smiling down at a baby turtle swimming beside me.” A Paddle Board lesson is an ideal adventure for any occasion and suitable for just about anyone. This is the TWiB Teams’ top pick for summer fun and our favourite new way to enjoy a hot day out on the open water. Some things are just worth trying out so we packed our bags and headed up to Somerset to meet Glenn Mello, owner of Island Winds Bermuda. Once you arrive and start getting set up, the first thing Glenn will do is give you a general overview of what you can expect and things you can consider to keep you safe while you are getting comfortable being on a board. You will be outfitted with Island Winds regular safety standards including a safety leash and a safety vest. Glenn tailors a board and a paddle to each person going on the tour based on height, weight and experience. For a beginner, a board with a high level of stability will be provided. Next, Glenn decides on the route to take and this again will depend on the group’s overall comfort level. The route may adjust while the tour is in motion as Glenn sees fit. For example, he may lead the tour close to land until he feels that everyone is confident enough to explore the open water. If anyone needs a little extra guidance, Glenn will glide along side offering extra instruction on how to make the best of the experience. We had a fantastic time with Glenn. He really took his time and made us comfortable before we even got our feet wet. Once we were in the water I felt it didn’t take long for us to feel comfortable and pretty soon each of us was gliding off and exploring. I think the highlight for me is when I looked down and saw a baby turtle swimming beside my board. I have lived in Bermuda off and on my whole life and the only time I have ever gotten this close to a turle was at the Aquarium. Paddleboarding is an excellent way to get out and enjoy our sea life while getting a little exercise too! 28 This Week in Bermuda | SEPTEMBER 2013

Art Matters

Sanford Biggers NYC ARTIST

By lisa howie Director Bermuda National Gallery Sanford Biggers, Quilt #19 (Rockstar), 2013. Repurposed quilt, fabric treated acrylic, spray paint and silkscreen.

Thanks to PartnerRe, the Bermuda National Gallery continues to offer an Art Lecture series, featuring international museum curators, artists and scholars. We make our selection of speakers with consideration to current exhibitions, the BNG collection, and future projects and partnerships. At an exhibition opening at the Studio Museum of Harlem last year, I bumped into L.A. based art dealer Alitash Kebede, who loaned us her collection for the Living With Art exhibition held in 2008. She introduced me to Sanford Biggers, a rising star in the contemporary American art scene. At the time, he had a show on at the Brooklyn Museum of Art, which I was able to see that weekend. I was so impressed with the show, with the quality of expression, his sensitive and wry handling of historical elements, such as the Atlantic Slave Trade, the Underground Railroad, and black-faced minstrel shows. In light of Bermuda’s history, and how many local artists shy from the politic in their artwork, I thought Biggers would be a good fit for the lecture series. Plus, he intends to visit West Africa with Kebede, which will inspire a new series of works that may well come to the BNG for an exhibition. Sanford Biggers will be speaking at the BNG on Friday, September 13. He will discuss his work from the past two years, including his solo at the Brooklyn Museum, Sweet Funk: An Introspective. Biggers has come to international prominence in the last decade with a body of work that investigates the themes of identity, race, African American history, and spirituality, oftentimes through the blending of installation and performance. His latest work continues the exploration of these themes through their stylistic departure, painting on historical quilts. Please join us for Suppositions: Sanford Biggers. Friday, September 13th, 5:30 pm reception and 6:00 pm lecture. $10 members; $20 non-members. RSVP (441) 295-9428. The Bermuda National Gallery is located in City Hall, Hamilton, beside the bus stop. When in St. George’s please visit the BNG East, just north of the Town Square in Bridge House. At both locations admission is free. Please see www.bng.bm for more information. 54 This Week in Bermuda | SEPTEMBER 2013

Meredith Andrews, Photographer By Candice Dickinson

With her family and studio in Sweden and regular travel home to Bermuda, Meredith Andrews captures contemporary portrait, travel, lifestyle and food photography for international magazines and a variety of publications. Meredith obtained her undergraduate degree at McGill University in Montreal, Canada followed by a master’s degree in photography at Goldsmiths College near London, England. She worked as a freelance photographic assistant for approximately four years before returning to Bermuda and working at the Royal Gazette along side Bermudian photographers Tamel Simons and David Skinner who were quite inspirational to Meredith. She then freelanced in Bermuda for a few years before moving to Sweden where she currently lives with her husband and two children. Tell us about Portraits of Power, your most recent solo exhibition at the Bermuda National Gallery (BNG). I was among a selection of local photographers who were asked to create stories about Bermudian society, particularly on aspects that aren’t normally celebrated or put in a frame and showcased in an art gallery. I don’t live in Bermuda year round so I didn’t feel it was my place to pass comment on most issues, however as a mother of two I did appreciate that Bermuda is home to many single mothers and I decided to focus on the these women and the women in their lives who support them. Originally my efforts were to be showcased in the Eyes on the World exhibition at the BNG however a decision was made by the gallery to create a solo exhibition that was titled Portraits of Power. I exclusively visited female households across the island 56 This Week in Bermuda | SEPTEMBER 2013

What was the public’s reaction to your exhibit, Portraits of Power? A lot of viewers came into the gallery to see this exhibit that don’t ordinarily visit and this is something that I am very proud of. There have also been a lot of questions created from the exhibit; people are asking were the fathers come into place and why I only choose to represent the women in these children’s lives. each tied in with Bermudian society. These women for each of their own reasons were raising their children without a father figure. The focus was intentionally just on, who was in the picture and the story that the photograph portrayed.

Please tell us about Carla who is featured in Eyes on the World. Carla, one of my subjects invited me into her home one day from 5:00am on where I followed her for a few hours learning what life was like for her and her three children. Carla expressed things like how important it was for her to spend quality time with each of her children everyday and explained how she balanced being a single parent working, studying, saving and raising her three children. How will the reaction of your latest work influence your next project? My next exhibit will take a look at contemporary Fatherhood in Bermuda particularly at households where a lot of or all of the parenting responsibility fall on the shoulder of the father, whether that be a widower, a very engaged father who is separated from his partner, a step father, a mentor, a grandfather, a father who’s child is perhaps not even in Bermuda. Golf Across the islAnd “The Port Royal Golf Course mystique and a vision for the future” By kim Swan jp, Teaching Professional Port Royal Golf Developmental Program

Port Royal Golf Course is not only an exquisite championship golf course with an inviting atmosphere - but it is also a golf course which provides an excellent practice facility for players of all levels to develop their skills. Most golfers want to shoot lower scores, but it is usually in our bar (not the practice areas) around a ‘Dark N Stormy’ that you often hear these same golfers, not only discussing their rounds, but also providing critiques of the tour pros on ESPN or the Golf Channel. You have to love these armchair golf critics - especially aided by our national beverage - for it is their love for the game that keeps the industry growing. At Port Royal Golf Developmental Program we encourage persons to work consistently on their golf game by practising simple fundamentals that will enable the golfer to make solid execution that enables them to have the confidence to hit the ball within close proximity of where they want it (ball) to go. Personally, while I am enjoying my reconnection with the game of golf, as the Teaching Professional with the developmental program here at Port Royal Golf Course in Bermuda, I am also focusing on my golf game as well - I find that helpful by allowing me to relate to the frustrations of my students. In addition, I feel that it is important as a coach, to keep my game sharp, as it is a necessity for me to be able to demonstrate what to do to the persons that I teach - representing golfers of all skill levels. Thankfully the competitive juices are still flowing and I look forward to competing against my contemporaries internationally on occasion and alongside of my students and helping them grow successfully in the sport. There is great satisfaction for me as a golf coach, to earn a living in the trade that I love, on the course were I was taught the game of golf and in the community were my family originated. Port Royal Golf Course, situated on the gorgeous south shore coastline in Southampton, Bermuda represents a homecoming for me and an opportunity to share my 40 years of global golfing knowledge and experience with the thousands of people around the world making a pilgrimage to experience the great course I grew up on and proudly call home Port Royal Golf Course, Home to the PGA Grand Slam of Golf. For me Port Royal represents a special mystic as my mother was born in this area before it was Port Royal Golf Course; my mentor who taught the game of golf, practised on parts of this same property and envisioned it becoming a golf course before Port Royal Golf Course was even built. In hindsight, today it is no surprise to me why I won three Bermuda Open Championships on Port Royal Golf Course before age 30. As I walk these hallowed grounds, ply my trade and savour the sunsets, I envision improving Port Royal beyond its present day status by incorporating the Munro Beach property into an oceanside Clubhouse with beach front villas and two classic coastal finishing holes. The existing clubhouse would be converted into a convention centre, fitness facility, spa and the Home of the Port Royal Golf Developmental Centre for Golf Excellence. A facility that would enhance business and leisure travel by supporting the marketability of local properties large and small with an enhanced world class product. We invite you to visit Port Royal Golf Course to experience the challenge, beauty and mystic of our golf course that plays host to four major champions at the PGA Grand Slam of Golf. 60 This Week in Bermuda | SEPTEMBER 2013

Heritage Matters “In Praise of Limestone” By Dr. Edward Harris, MBE JP

Master Mason Larry Mills (centre) with former quarrymen Fred Phillips and Robert Simmons holding one of the great saws that were essential to the cutting of Bermuda stone.

Much of the surface of the Earth upon which we play out our lives is fortuitously comprised of rock, a generally hard material composed of minerals and other useful ingredients, such as diamonds. Perhaps one of the greatest writers of the last century, W. H. Auden, used one of the last for his ‘lavender marriage’ to a daughter of Thomas Mann (a German Jew of distinction), thus saving her from the death camps of the 1939–45 war. Auden was much taken with the karst countryside around York, England, where he grew to maturity, and his poem “In Praise of Limestone” is a paean to underlying structure of his homeland. He would perhaps have written the same were he to Bermuda born: The blessed will not care what angle they are regarded from, Having nothing to hide. Dear, I know nothing of Either, but when I try to imagine a faultless love Or the life to come, what I hear is the murmur Of underground streams, what I see is a limestone landscape. Jennifer Gray, Director of the Bermuda National Trust and Sharon Vesey, the donor of the eight-acre Vesey Nature Reserve which was named in honour of her Bermudian family.

62 This Week in Bermuda | SEPTEMBER 2013

Heritage Matters Of the triplets of the air, sea and land in Bermuda the last is foremost and almost entirely limestone. This article is about a recent event that is in praise of the heritage of limestone, being the preservation of several quarries once used for the extraction of that extraordinary material from the earth for the benefit of Bermudians. At ‘Skroggins Hill’ in Southampton, by Evan’s Bay, and just off the Railway Trail, is to be found an eight-acre parcel of land that is now in the trusteeship of the Bermuda National Trust and the Bermuda Audubon Society, thanks to an extraordinary gift by Bermudian Miss Sharon Vesey. Within the plot of land are the quarries, which are now major outdoor museums to generations of stonecutters; one quarry has sheer faces that rise some 25 feet off the ground, elevations which are as straight as a die, as cut by men of long ago. The quarries in the ‘Vesey Nature Reserve’ cannot be underestimated as a memorial to Bermuda’s limestone and allied industries, such as lime burning and the masonry trades. Without that limestone, it is unlikely that we would have the wonderful heritage of unique vernacular architecture that is our historic homes and other buildings, such as the fortifications. Had the volcano that forms the resting place for this limestone cap come and stayed above the surface of the sea, we would likely have built in timber, for basalts and other such harder rocks are difficult to work, nor does their incineration produce the vital quicklime for paints and mortars so essential to the Bermuda architectural idiom. Hurricanes love houses of wood and their destruction would have resulted in the loss of much of the portable cultural heritage that yet survives in our solid limestone homes. Indeed, it is more than fair to say that without limestone, Bermuda would simply not exist as what some would aptly like to advertise as the ‘Cultural Capital of the Western North Atlantic’. From the hard limestones of Dockyard to the softer rocks of the Lower Parishes, the island is indebted to the whim of Nature that produced the geology of the island, as it was found in 1505 and later settled in 1612: praise be to Bermuda limestone! The main quarry at the Vesey Nature Reserve is now the first heritage memorial to the fundamental Bermuda industry of stonecutting and the men who worked in that trade from 1612 into modern times.

A postcard of the early twentieth century shows the popularity of stonecutting and quarries to visitors, most of who would have never seen such a fundamental and unchanging industry at first hand.

Do You Know... … About Sterling Silver Souvenir Spoons – Part 2 By Horst Augustinovic

The majority of the Bermuda cut-out sterling silver souvenir spoons were made by Charles A Robbins Company in Attleboro, Massachusetts. The company was founded in 1892, and stopped making spoons in 1963. In addition to a variety of sterling souvenir spoons, they made sterling souvenir forks, ladles, knives, and letter openers. Another Attleboro company, Watson & Newell, made some similar spoons, but they mainly produced jewelry. At one point the area around Attleboro, Massachusetts, was know as the ‘Silver Capital of the United States’. Enameled Bermuda souvenir spoons were made by several companies, most being in Canada, the U.S. and England. The majority of Bermuda’s enameled spoons were made by four Canadian companies: Caron Brothers, C. Back To Basics Brendan J. Monts | Northrock Restaurant By Candice Dickinson

Northrock Restaurant on South Road is a hidden gem that one accidently stumbles upon and finds a very pleasent discovery indeed. With just enough enchantment to keep you engaged, the restaurant also offers just the right amount of attention to make you feel at home. At Northrock, an ideal combination of comfort food classics meet outstanding flavours and an unparalleled wine selection featuring seventy carefully selected bottles from around the world, will bring you back to indulge over and over again. Meet Chef Monts Brendan J. Monts is a small town guy who grew up on a farm in Ohio. He spent his childhood in the fields and was jarring his own food as far back as he can remember. Chef Monts initially pursued graphic arts in college but left after accepting a cooking position on a small island. Eventually he ended up in Florida and started working under a Certified Master Chef at a private yacht club. Things began to fall into place and he soon discovered that everything he learned during his early years would greatly influence him as a Chef and teach him to really appreciate his heritage. Chef Monts went on to work in Naples, Florida at the Ritz Carlton and then returned to the US to work at Café Boulud in Palm Beach, Florida, a sister restaurant to the famous Daniel Boulud in NYC. What brought Chef Monts to Bermuda? Ben Mokrani, the new owner of Northrock Restaurant was searching for the right Chef who he would work with closely creating the quality and uniqueness that he envisioned. Once he came across Chef Monts résumé, he brought him to Bermuda within just three weeks. Ben and Chef Monts are going back to basics recreating traditional comfort foods such as stews and curries that people love while adding a twist of undeniable flavour that will set Northrock apart from any other restaurant on the island. Chef Monts makes everything from scratch, even the ketchup. He uses the freshest available meats and seafoods along with local in season produce. With each dish, there are stories to be told that have been lost over hundreds of years. From Chef Monts Portuguese Stew cooked in a Cataplana and served with a wine cork in the sauce to his S’mores, a simple dish prepared and served in a new and exciting way, Northrock is serving family favourites that will keep you coming back for more. 66 This Week in Bermuda | SEPTEMBER 2013

Portuguese Stew Using a Cataplana, a broad domed dish made of copper, Chef Monts recreates traditonal Portuguese Stew. He explains that the sealed dome and curvature of the Cataplana cooks the ingredients evenly in a time sensitive manor. This dish has a kick but is not too spicy and features Clams, Mussels, Shrimp and Calamari while cooked in a tomato pepper broth base with chorizo. Traditionally a wine cork is cooked in the stew to bring out the flavours of the seafood . Chef Monts serves this dish with toasted sour dough bread for broth dipping pleasures. Pairing: Enjoy with a bottle/glass of Jean-Luc Colombo Cape Bleue Rosé 2012

West Indian Curry Imagine a phenomenal blend of mango, sweet potato, lime, cilantro, okra, cinnamon, coriander and ginger. Local fish is always used when available along with delicious shrimps and scallops. Coconut milk and a slight kick bring it together.

Pairing: Enjoy with a bottle/glass of Chateau Ste. Michelle Riesling 2010

Gourmet Espetada Another traditional Portuguese dish that is usually made with large chunks of meat rubbed in garlic and salt, then skewed on a bay leaf stick and served with vegtables such as onions and bell peppers and left to grill over smouldering wood chips. Choose from Steak, Surf n Turf, Chicken, Vegetarian or S’MORES!!! The S’mores dish is mainly for kids but many adults order it too. It is a great representation of Chef Monts love for keeping families happy. It reminds him of home, and the simple life. Pairing: Enjoy with a bottle/glass of Sanford Santa Rita Hills Pinot Noir 2009

Panna Cotta A melt-in-your-mouth simple and light summer dessert featuring cream, milk and sugar infused with lemon grass, caramelized banana and pineapple. Pairing: Enjoy with a bottle/glass of Paul Jaboulet Aîné Muscat de Beaumes de Venise 2010 Wine Pairings COURTESY OF: Stefan F. DIRECTIONS

K! 1. Preheat oven to 400ºF. Line a baking sheet with aluminium foil and set aside. 2. Bring a pot of water containing the lemons to a boil. 3. Lay the live lobster on your work surface, back side down, exposing the underside of the crustacean. 4. Cut the lobster in half, lengthwise from head to tail. 5. Remove the stomach and the intestinal vein that runs between the tail and the stomach section. 6. Rinse the lobster halves under cold running water to ensure that the internal cavities are clean. 7. Place the lobsters into the boiling water and cook until shell is red and meat is firm and white. This will take approximately eight to ten minutes. 8. Transfer the lobsters to an ice bath to stop the cooking process. 9. When the lobsters are cool enough to handle, scoop out the meat and cut into one inch chunks. 10. Place the lobster meat in a bowl and lobster shells onto the prepared baking sheet. 11. Melt the butter in a saucepan over medium heat. Add the flour and whisk to combine. 12. Whisk constantly to make a light roux, approximately two minutes. 13. Add brandy and whisk for a further ten seconds. 14. Slowly add milk whisking until all ingredients are incorporated. 15. Add button mushrooms. 16. Bring to a boil and reduce heat immediately to low. Simmer until thick enough to coat the back of a spoon. 17. Slowly add the cream, stirring constantly until all ingredients are incorporated. 18. Add the lobster meat to the sauce to combine, adding salt and pepper to taste. 19. Divide the mixture evenly between the four lobster halves and sprinkle each with the grated parmesan cheese. 20. Broil until golden brown approximately five minutes. Watch carefully to avoid burning. 21. Serve with your favourite vegetables and sides. Enjoy!

“Sonoma-Cutrer Russian River Chardonnay. Russian River Ranches is a cuvée crafted from several estate vineyards, each contributing its own distinct personality. Pretty aromas of jasmine and rose petal give way to tropical fruits like pineapple and mango. Medium-weight and clean with a wonderful acid backbone, the wine expands in the glass, offering up grapefruit, lemon, pear and kumquat with subtle vanilla bean and herbal mushroom. The lingering finish displays hints of minerality, along a surprising kiss of strawberry. A market basket of aromas and flavors.” Wine Pairing COURTESY OF: April Gosling Naude Available at Gosling’s Stores
