Forward Magazine
emerged as a communication tool to unite the campuses
and communities that we serve while we engineered a new world in campus dining. While it has been very challenging to predict what the ever-changing landscape of higher education would evolve into, one thing was evident, as institutions and as partners, we had to move and forward was exactly where we went.
The past academic year has been a testament of the resilience and ingenuity we have as a higher education and contract dining community. We were able to introduce new minimized contact strategies and digital programs to preserve the student experience. Together we mitigated risks, kept a careful eye on public safety and proudly served the world’s next generation of leaders. As a collective, there is a lot to be proud of.
Where do we go from here?
As the world is opening back up and safety guidelines are once again shifting, there’s only one path to take- the continual path . Forward is not a coinage for Thompson Hospitality. It is our commitment to challenging norms, breaking glass ceilings and forging a new journey for our partners. You can expect to see our new dining experience intertwined with the nostalgia of pre-COVID and the innovation of the tomorrow to bring a new normal into existence.

Luxury Living ON CAMPUS The college experience is not what it used to be. In fact, schools across the country have regularly announced their strides toward excellence, including academic accommodations, enhanced real-world learning, and even improved dining. The COVID-19 pandemic, moreover, has revealed gaps in higher education that could be filled by normalizing the concept of luxurious living on college campuses. It all starts with a commitment to excellence, wherein schools consistently achieve their goals through thoughtful decision-making, like at Virginia State University. VSU has solidified its commitment to excellence by providing opportunities for students to receive a quality education at little to no cost.
Promoting wellbeing is another important aspect of luxury campus living, and Coppin State University makes sure to invest in its students’ health. Coppin hosts a large array of wellness programs, including Massage Mondays, cooking demonstrations and Lunch n’ Learns that promote wellbeing awareness.
The VSU Virginia College Affordability Network (VCAN) offers free tuition to local Pell Grant-eligible high school students. Students living within a 25-mile radius of campus have the opportunity to attend college without the added pressure of paying for it. VSU announced in late April that 150 qualified students had already taken advantage of the VCAN initiative, making excellence affordable.
Coppin also hosts Wellness Week, where each day is dedicated to a different aspect of health and wellbeing. Some of the many focuses include mental health, mindfulness, meditation, nutrition and dieting, relationships, and much more. Focusing on these aspects helps promote a healthier environment for students to thrive in, both personally and academically.
The luxurious life involves paying attention to details, and Tuskegee University knows that college is not just about the four years you spend on campus. That’s why, starting this fall, Tuskegee is launching the Student Freedom Initiative, a 501(c)(3) nonprofit organization geared toward minority students. The Student Freedom Initiative creates generational change by helping students in their undergraduate degrees and providing them with enhanced career opportunities as they join the workforce. This initiative, to be launched at a total of 10 HBCUs in the fall, is an example of how paying attention to details can have lasting effects, and result in an overall luxurious college experience.
As the COVID-19 pandemic begins to subside, many schools are reworking how they cater to their students by analyzing everything — including meal plans. At Thompson Hospitality, we strive to provide a positive experience to every relationship in which we are involved: one guest, one client, one team member at a time. The college experience is meant to prepare students for opportunities that will be available to them upon graduation. By normalizing luxury living, schools can display some of the finest lifestyles available to students that continue to demonstrate hard work and dedication.

COIVD-19 has definitely redefined the “college experience,” but as the pandemic begins to slow down, here are a few ways to remain safe on the way back to campus.

Be Informed There’s no doubt that many students are ready to get back into the groove of the original college experience. However, with the coronavirus still present, make sure to stay up-to-date on the most recent announcements from The Centers for Disease Control and Prevention, which provide regular updates on the COVID-19 pandemic. The CDC also provides information on the COVID-19 vaccine — and everyone 12 years of age and older are now eligible to receive it. Countless vaccine distribution centers across the country, from college basketball stadiums to grocery stores, are vaccinating hundreds of thousands of people each day. Virginia State University, for example, has distributed almost 100,000 vaccines from their Multi-Purpose Center. Take time to learn about the different vaccines, and register to receive the one that’s right for you! Be Comfortable The COVID-19 pandemic has cast a lot of uncertainty on college campuses, so it’s important to stay true to yourself. It’s okay to have varied opinions about the vaccine. It’s also okay to move at your own pace with mask-wearing. It’s important to remember that what may be comfortable for one person could be uncomfortable for the next. To avoid clashing with your classmates later on, make sure to set boundaries early.In addition to setting boundaries, don’t be afraid to ask questions! As the CDC and World Health Organization learn more about the virus, information will be shared with the public. With so much information being shared over the Internet and social media, it can be a little hard to keep up. Be sure to find information that is relevant to your state and your school to ensure you are making the best decisions. Be Smart
Most schools are releasing plans for the fall semester sometime during the summer. Once these plans are announced, read them carefully to understand the guidelines for moving-in, COVID-19 testing protocols, and mask requirements. Those that are fully vaccinated may be exempt from certain requirements as well — the CDC has lifted the majority of COVID-19 restrictions for vaccinated people, but colleges can still place requirements they deem necessary.

Recipes in Honor of International Day of World's Indigenous People
4.Blueberry and Peach Salsa 1. Mix the blueberries, diced peaches, diced tomatoes, minced green onions, salt and pepper, and other optional ingredients 2. Serve with your favorite tortilla chips.
1.Three Sisters Soup
3. Bring the soup to a boil then turn to medium heat until the remaining ingredients are cooked through.
2. Add onion and garlic, then cook for three to five minutes or until tender.
4. Add stock, corn, hominy, and beans, then bring to a boil. 5. Reduce heat to low and cook, stirring occasionally, for 15-20 minutes to develop flavors. 6. Stir in puréed squash, and cook for five minutes or until heated through. 7. Serve warm with chives and plain yogurt as a garnish.
2.Double Cornbread Muffins 1. Position a rack in the center of the oven and heat the oven to 350° F. 2. Spray muffin liners with cooking spray and place in the tray. 3. In a large bowl, stir together cornmeal, flour, baking powder, baking soda, and salt until combined. In a separate bowl, whisk together the melted butter, oil, and maple syrup until a thick slurry forms. 4. Whisk in the eggs, one at a time, and then whisk in buttermilk and sour cream.
3.Wild Rice Burger
1. Thoroughly mix the wild rice, ground beef, and optional ingredients, if desired, in a large bowl until the texture is consistent. 2. Form into patties and grill or cook, and then serve as a standard hamburger.

1. Boil water in a large saucepan, then add dry meat (jerky). This process will take a while because the dry meat must become soft, which could take up to three or four hours. During this process, you can change the water out. 2. Once the dried meat is soft, add the potatoes or hominy and salt pork. (At this point, you do not want to change the water because this is where you capture all of the flavors).
1. Melt butter in a large saucepan over medium heat
3. Stir in spices, and cook for one minute.
5.Dry Meat Soup
5. Pour the wet egg mixture into the cornmeal mixture, and then, using a rubber spatula, fold together until all of the cornmeal is completely incorporated.
6.Pemmican
1. Pound meat (buffalo, game, or beef) very thin and dry in the oven. 2. Grind the dried meat in a food processor. 3. Add the chokecherries (or juneberries) and blend. The consistency should be dry and loose with fruit broken up. 4. Add melted lard slowly while mixing. Two tablespoons of fat are used for each 4-5 ounces of meat plus 1/3 cup of fruit. Fat changes the consistency and makes it appear semi-moist instead of dry and improves the flavor and texture. 5. Store in paper bags.
6. Fold in the corn kernels and the sage until they are evenly distributed throughout the batter.
7.Wojapi
1. In a saucepan, simmer berries of choice and water over low heat, stirring occasionally. (If using fresh berries, you may need more water to keep them from scorching.) 2. Once the berries are broken down into a sauce, spoon out some sauce and whisk in the thickener. Fresh berries should need 1 tablespoon, but frozen ones might need 2 tablespoons thickener. 3. Whisk until completely dissolved, then add back to the rest of the sauce.
7. Fill muffin cups half full and bake for 20 to 30 minutes, or until the tops are light golden brown. Use a toothpick to test if they are cooked all the way through. Let cool completely in the pan on a wire rack.
4. Sweeten to taste with maple syrup.
