As I watched the Winter Olympics a few weeks ago, I had to continually remind myself that those athletes weren’t born with an innate ability to glide down a hillside on a pair of skis. They most likely displayed remarkable skills on the slopes as children and worked arduously to develop those abilities over the course of many years in order to gain Olympic caliber. Yet the longer I watched the athletes execute those amazing feats, the more I felt like somewhat of a loser simply sitting on my inactive derriere. No doubt I could never manage a fraction of what they were able to do. I suppose if I were to turn back time (and we’d have to go back quite a distance), and I had the inkling as a child to pursue an activity to a world-class level, I might have a shot if I applied my heart and soul … and my entire life to that specific goal. That notion – the truth that any ordinary man or woman can accomplish an extraordinary goal by sheer determination and relentless pursuit has stayed with me long past the closing ceremony. I began to realize that the achievers in life, whether in sports or business, are the ones who make a resolution to win and never retract their commitment. They are the ones who gather the right tools, surround themselves with the right people, and apply the essential habits that navigate them to the ultimate finish line. This realization helped me read this Spring Issue of Thrifty Hunter with great interest as it’s filled with stories and illustrations of people who have pursued their dreams, applied themselves to achieve their goals and have enjoyed tremendous success. The profiles throughout this edition captured my interest and reinforced the idea that any target can be attained with a commitment to a well-developed plan. I was inspired to revisit some of my personal aspirations, as I’m sure some of you may as well. Whether they won the gold or not, each Olympian who participated in the elite event demonstrated their tenacity to achieve beyond their perceived limitations. May we all live life with that same fervor.

CJ BY COOKIE JOHNSON Jeans are a way of life By Nicole Vollert
Cookie Johnson is not only the wife of the sports legend and philanthropist Magic Johnson, but also the creator of a chic, premium denim brand called “CJ by Cookie Johnson.” Thrifty Hunter had the privilege of joining her one afternoon at a Neiman Marcus event, which introduced her Truth Collection and celebrated her CJ Brand’s 5th Anniversary. A portion of the Truth Jeans and Truth Tee sales benefit the Magic Johnson Foundation’s HIV/AIDS initiative; $10 dollars for every Truth jean and $2 dollars for every Truth tee. We, too, didn’t want to miss the opportunity to support a great cause and purchase our very own Truth tees! Before stepping up to the register, we enjoyed the opportunity to interview the fashion-forward Cookie Johnson. Cookie was wearing her eye-catching red Truth Tee and denim blue Truth Jeans, causing us to covet her stylish look. Nicole Vollert: What was your inspiration for the CJ Jeans and the Truth brand? Cookie Johnson: Me. I have curves--a behind and thighs--and I couldn’t find a premium denim brand to fit my body type. And I mean premium denim, like the Paige and the J Brand—they’re for a very long and lean body type. Jeans are a way of life. Everyone wants the right pair of jeans and it’s not fair that if you have a little bit of a butt and thighs, you can’t wear premium denim jeans. So, that is why I designed them. NV: Is your husband involved with the brand at all? CJ: No. He’s not involved at all, but he does support me. NV: Well, it’s nice to have his support. So, primarily, what started the brand was the void you saw in the denim market, correct? CJ: Yes and I felt it wasn’t just me. A lot of women out there had the same problem. There are so many body types--not just the tall and lean. Initially, I partnered with Michael Glasser, one of the founders of 7 for all mankind. Now, I have a new partner, Mitchell Quaranta of Swatfame. I want to branch out and do more than just premium denim. I want to offer style at a lower price range. My husband built his brand in the inner city, so we have our following there and I want to do something for them as well. NV: We look forward to that. What is your current price point? CJ: Our prices range from $128 to $188. Another unique aspect of our brand is that we offer a size range from size 2 to18. Most premium denim brands only go to a size 12. We also just started a plus-size division. NV: Do you have petites as well? CJ: We haven’t gotten there yet! Petites and tall are next.

NV: Are you involved in the fittings? CJ: Yes, I go there four days a week! I went to school for fashion; I was a buyer for years so fashion isn’t new to me. I have a design team and I am very involved in the creative process. Not only is Cookie Johnson involved with the creative process at CJ Brand with its Truth Jean and Truth Tee, she is also involved in the Magic Johnson Foundation and its effort to fund AIDs research. Eddie Borgo Accessories I ND US T RI A L S T R E N G T H G L A M OU R Eddie Borgo is a cutting-edge accessories designer from New York. His jewelry line is characterized by modern and bold styling with amazing metal hardware and industrial strength glamour.When we met up with him recently at Neiman Marcus, woodland Hills, he unveiled to Thrifty Hunger his new collection of jewelry boxes in addition to his new jewelry collection inspired by the legendary Cleopatra. Eddie Borgo: This is our first classification outside of jewelry. (He points to the intricate jewelry box) Monique Reidy: It’s vintage chic. We were told that your grandmother was the inspiration. EB: Yes. She had a train case that was a similar construction to our jewelry box and when she passed, she gave it to my mother. Women used train cases to store their cosmetics, jewelry and anything they wanted to take when traveling on the train — anything else would go underneath and get stored when they traveled. So train cases were dear to women’s hearts because it held their best things when they would travel. I begged my mom to let me borrow the box. She let me borrow it and I designed the jewelry box. I sort of sketched it with that in mind. Each jewelry box is handmade and custom made. MR: Everything is quite unique. What was your inspiration for the jewelry? EB: I think for a lot of young brands, the inspiration changes from season to season-- very rapidly--as trends change. Our brand is sort of the antitheses of that; our aesthetic is always meant to be recognizable. So you walk from room to room and see that there is a similar language to each piece. We do love geometry so much in the studio--in modern art and modern architecture. Much of the collection continues to be inspired by that environment. Cleopatra inspired this recent collection. She was a global leader at a time when women were just not considered leaders. We symbolize the power of women; I want women who wear our jewelry to feel empowered. MR: It’s wonderful you have been led to incorporate the power and mystery of Cleopatra in your jewelry. You seem much like Cleopatra in that you are very creative and a leader in your realm. You are an innovator and very cutting edge.
EB: Thank you. Well, I am such a lover of history. I got my Bachelor of Arts in art history, which led me to the history of adornment. Jewelry is so personal--such a personal buy. It really can communicate your taste level and what you are trying to communicate through your wardrobe. So, I love what we do and how it allows women to express themselves. MR: I love this five-finger ring. What inspired that? EB: We have a tool we use for sizing that inspired it. One day we started playing with the shank and decided to do a fiver-finger ring. Now, it’s one of our most popular styles. And sometimes when you are in the midst of this very saturated, creative environment, there will be a little idea that is sort of an afterthought, which will be the most successful idea of that season. That’s what the five-finger ring turned out to be. MR: Do you have any interest in doing purses? EB: Yes. We are now putting together a program to launch a larger leather goods collection—wallets and purses. Our competency is metal, so when we started playing around with leather, we only wanted to produce them in Italy and we finally identified our leather manufacture. I think by bringing those two worlds together, we will be able to create something that is very unique in the marketplace. We do hardware really well on a bracelet, so why not translate that hardware onto a purse or a belt? Why not, indeed?! We look forward to seeing more designs from jewelry designer Eddie Borgo who will be launching his leather collection very soon. Kandee Johnson
We sat down for a makeup chat with the scrumptious and accomplished professional makeup artist Kandee Johnson. She divulged her top makeup secrets to us, which we can’t share here, but you can check out her blog and you tube channel. She did show us what’s in her makeup bag and boy did we feel like kids in a Kandee store! We asked Kandee a few quesitions: What is your favorite look for summer? I love a beachy nude bare eye, pretty lashes, a pale lip balm and a healthy highlight summer glow. What is your favorite lip gloss? I am not a fan of lipgloss, it sticks to your hair. Also, sticking the wand back into the tube, that grosses me out. It’s a breeding ground for bacteria. I have a large collection of them, which is ridiculous. I love a good lip balm. The Korres jasmine lip butter, I love it! It’s a lipgloss in a balm. What are your best quick tips for everyday makeup? The key is using a little concealer. It gets rid of redness, makes you more awake, one of my key products. Give us some tips for mature skin. Make sure you are not using frosts or shimmers on the eye. I like using a waterproof liner, that way if you have a heavy lid or creapy skin, and you blink, it won’t stain the upper lid. I like a heavy liner and mascara, it makes the eye more open and awake. I used to shop at Contempo Casuals, I hear you worked there. Yes, it was my first real job. I spent all of my checks buying baby doll dresses and knee high socks. My favorite part was dressing the mannequins and then the day they let me use the cash register, I was like “I just want to push the buttons.” I was 16, buttons impressed me. Baby doll dresses were the rage, I had them all! (At this point we were laughing so hard we had to take a moment to breath!)

Kandee, you were one of the first You Tube makeup artist teaching tutorials. You pioneered this mass explosion of artistry tutorials. What is happening between amateurs vlogging and the real experts? Where do you see us going with blogs and the Internet? I think it is in very dangerous waters now because anyone who has a large following doesn’t have to be an expert, they can recommend something as if they were and people believe them because of their mass followers. It is hard for people that have legitimate advice and may not have a lot of followers and so their message, their skills, their talent never gets out there. I feel there is going to be like the .com bust, there were so many web sites, it was over saturated. Now you go to the Internet and it’s overwhelming, I feel like You Tube has reached that point. There were a few people when I started, now there are hundreds of thousands. The same thing with the bloggers, everybody has a blog, and one person will say “this is the best pallet” and 20 others will say they hate it. I don’t know, I kinda hope there is a rise back to the old school , either it is magazines or whoever promotes quality and has accountability. There is no longer one source to find your information and that is a blessing and a curse as you get many opinions, but there is no longer the one source you can trust. Happy Hour: The name does not exactly invite a cornucopia of culinary thoughts — we tend to put happy hour in a corner, throw out some chips & salsa, maybe some dried up wings and cheap beer. We are on a hunt for a great meal with happy hour prices — sans the nacho bar. Budgets everywhere die a slow death each day and the number one suspect is, you guessed it, eating out. With the surge of cooking shows combined with mouth watering pictures of “the best meal ever” on Facebook, our desires for fine dining have taken over any sense of reality of what we can actually afford. However, there is always a way to balance your desire to fulfill your foodie palate with what your wallet will allow. Designer dining can be achieved by thinking outside the box. Restaurants in California and around the world are serving guests gourmet appetizers and handcrafted drinks, yet still giving them a great dining experience at a great price. So let’s rethink our game plan. You are craving an amazing meal. You don’t want to pay amazing prices. Meet the “new and improved” happy hour solution. Shift the time you go to dinner by an hour or so and enjoy virtually the same meal at a fraction of the price. This is sure to make your stomach and wallet do a collective happy dance. We decided to find places in our city, Long Beach, California, where we have already eaten and put “happy hour” to the test. Shine A Light Parker’s Lighthouse has been an institution in fine dining for decades in Long Beach and is a place where you can have some great fish or a steak; however, Parker’s is really changing the landscape of the traditional happy hour and offering some great meals. According to General Manager, Michael Cole, guests have been respond-

ing to the happy hour at Parker’s Lighthouse, “once we shifted our happy hour downstairs, added sliding doors to our patio, opening up the view, offered great menu items, people were blown away.” Normally, we might save Parker’s Lighthouse for a special occasion meal, so finding their happy hour with a long list of items we could order was a score for us. Don’t let a traditionally higher priced restaurant intimate your wallet. Parker’s happy hour is a great example of fine dining delivered at a budget-approved price. Our Happy Hour: 2 Parker’s Jalapeno Margaritas, 2 Sapporo beers, 1 Jumbo Lump Crab Cake, 1 California Roll, and 1 Kobe Beef Burger. If it weren’t for happy hour, we would have spent $35 more, proof that this happy hour really does deliver a dose of happy! Cold Brew Some places are just better with friends and Belmont Brewery was our choice to hang out, watch the Lakers game and have a couple micro brews with our friends Jane and Kevin. Belmont Brewery makes their own beer and is another great restaurant in our neighborhood serving up some great food at happy hour prices. Of course the best part of hanging out with friends at a brew restaurant with happy hour prices, is that we all get to order many items and pass them all around. Sharing is the name of the game at Belmont Brewery where appetizers are all 50% off and a pint of high quality beer is just $3.50. Our Happy Hour: Six Specialty Beers, 2 Traditional Margaritas, 1 Brews Wings, 1 Spinach Artichoke Dip, 1 Calamari, 1 Baja Fish Tacos, and 1 Side of French Fries. All in all, we saved $27.00, which makes it possible for all of us to enjoy another meal out without having to look for loose change in the crevices of our couch.
FOOD On Broadway Christy’s on Broadway is one of those iconic neighborhood bistros that locals flock to and keep coming back for the family atmosphere and feeling like you are hanging out in your own living room. Speaking with Assistant Manager Maria Brief, she tells us that you can see some of the same crowd every night, either for the happy hour prices or sitting down in the restaurant. Owned by restaurateur Christy Bono, Christy’s infuses a lot of family recipes in their food, as well as making you feel at home.

Go out and find the restaurants in your neighborhood where you can score a gourmet meal at happy hour prices—you will be surprised what you will find.

If you are willing to think outside the box, there are countless opportunities to explore the world in which accommodations can be free by way of housesitting. TrustedHousesitters.com, a website listing homeowners from all over the globe looking for reliable caretakers to watch their homes while they go away on vacation, is a great place to start. You can do it as a one-off or make it a lifestyle, but it can become a win-win for everyone. You pay your flight and visit the place of your choice after checking out photos, the situation and ironing out all the necessary details. “Previous house sitting experience isn’t necessary to get started. Most of us have the relevant experience needed from caring for our own homes and pets,” says Lisa Logan, marketing director, TrustedHousesitters. Com. “Homeowners are simply looking for people who are honest and reliable so they can relax and enjoy their time away.” The first step is to become a member of the website which costs $49 for three months or $79 for a year (fees are subject to change) and then to set up a profile. Logan says the fundamental profile takes about five minutes and can be added to as you have more time. “Your profile page is your selling tool,” she says. “There is plenty of space to add photos, lots of information about what experience you have, references and even a video introduction.” Once you’ve joined, you will receive daily emails with site updates that 58

include the wonderful opportunities available. For 25- year old Sara Grove and her boyfriend Tyson Hale, 30, housesitting has become a way of life for more than two years. They have been all over the U.S., Spain, Thailand and when we spoke, they were in Fez, Morocco on a four-month assignment “taking French classes, learning Arabic, teaching yoga and volunteering in the local community,” said Grove. They work over the Internet, running their online magazine, Raw Food Magazine, which makes it easy for them to be mobile, but housesitting is available to everyone, even just as a vacation. Grove said she enjoys connecting with the people wherever they stay and they love watching the pets when they are part of the equation. She and her partner don’t maintain a residence anywhere, so they incur no rent, which makes them full time housesitters, but that, also, is not a requirement. Naturally, the outlay in money depends on where you travel and each assignment. “Each one is different, some homeowners will expect you to pay utilities and some won’t,” said Grove. “Some assignments require visas, cars and security deposits. Others don’t. We evaluate each assignment from a financial perspective before committing. We consider airfare, length of the assignment, cost of utilities, transport (will we be maintaining and fueling a car? Using public transit? Walking?), cost of living in the host country, visas, etc. Flying to Morocco was expensive. We would
T R AV E L not have taken the assignment for six weeks or less. But, for four months we will live here much more cheaply than any U.S. city. We live on about $10 a day here, easily, and absolutely love it. If we chose geographically closer assignments, we could pare down on travel costs. But, for us, traveling to new and unexpected places is part of why we love house-sitting.” Grove said duties might include playing with,feeding and exercising the pets, and keeping the house and pool clean. Their favorite housesitting experience occurred last October when one assignment turned into two. “We first started in Thailand, on a beautiful island called Koh Samui,” said Grove. “The lovely homeowners, who wanted to see their family back in the UK, gave us their trust and beautiful German Shepherds who they loved dearly. It was a great fit and a couple of days later we were waving goodbye at the airport. “The plan was to head back to the U.S. after this housesitting assignment ended; but, a week before it ended we were contacted by a lovely couple in Malaga, Spain looking for house sitters for the holidays. Our pleasant Skype call determined it was another great fit and around the world we went. “On our way to Spain we stopped in Sri Lanka and Rome for a few days of sight seeing before jumping into our next assignment,” she continued. “Our favorite part: the Roman Coliseum!” “Living in Spain was unexpected and so amazing. We had three incredible months looking after the coziest Spanish cottage and precious dog, Rayo. We made some great friends and I am sure we will return to housesit for them again. We couldn’t have asked for a better Christmas.” Like Grove and Hale, 32-year-old Jessica Armstrong and her boyfriend John Chapin, 34, do their work over the Internet, which makes traveling easy. They, too, gave up their residences, which made the financial end that much more cost-effective while they housesat in the last year in such places as Chile, Spain, England, the Netherlands, Scotland, Indonesia and Singapore with visits in between to Panama, Peru, Denmark, Thailand, Malaysia and Vietnam. “The average sitter pays for flights and other transportation,” said Armstrong. “Food costs are lower because you have access to a kitchen and don’t have to eat out three times a day, like you would in most situations as a regular tourist. It’s probably the best deal to housesit in an expensive country, because you’ll be saving more on accommodation and eating out, and to go for as long a time as possible so that you get many days for your trip out of the fixed cost of a plane ticket (or overland travel if you happen to be close enough). And it’s important to weigh the savings against the work required. THE 529 PLAN: THE SMART WAY TO SAVE FOR COLLEGE B y K e l l y Tr e v e t h a n In today’s world of skyrocketing college tuition increases, saving for college can create heart palpitations for most parents. I remember vividly walking my daughter Kelsey across many college campuses from Princeton to Duke to NYU. When our daughter started looking for colleges, I was relegated to touring the east coast schools, and my wife Tiffani showed Kelsey colleges on the west coast such as USC, USD, Cal Poly and Pepperdine University in Malibu California. When our daughter felt the humidity of North Carolina’s summer months, andthe fact that they can’t wear flip flops and shorts year round in New York City, she quickly made her decision to stay out west and selected Pepperdine University. I recall walking around the Pepperdine campus and finally realized that there was a view of the Pacific Ocean from every location, and bumping into Britney Spears or Adam Sandler down at the local Starbucks wasn’t too shabby either. My first thought was, I’m not too old to go back to college right? I always wanted to get my MBA, what better time and place then Malibu? I mentioned to my wife and daughter, I think it’s a perfect time for Dad to go back to college. Strangely enough, I immediately received a violent and sharp, piercing double stare from my wife & daughter. I was jealous about our daughter’s college choice, but so proud that she worked so hard to put herself in the position to have such choices. My pride and excitement of moving her onto the Pepperdine University campus was followed by the shock and awe of paying for it. All in from tuition, books, room & board, and spending money for our little princess, we were spending roughly $60,000 annually for college. Yes that number is correct, 240,000.00 US dollars to send a child for four years to a private University. Let’s put that into perspective. If you are having a baby this year, and would like to make certain that you will have the funds necessary to pay for four years of private college tuition when that childreaches college age, you will need to save 1600.00 dollars per month fromnow until your child reaches 18. That is based on college costs rising seven percent per year from here forward & assuming an annual investment return of nine percent on the 529 plan assets you are putting away each month.
In 1996 congress passed a law that created the 529 plan, which allows parents and any other person of interest to put $14,000 x 5 years for a total of 70,000.00 per person, into a 529 plan for any child. These funds go into the 529 plan after tax, but grow tax free and are withdrawn tax free as long as the funds are used for approved college expenses from tuition, books, room and board, as well as other approved items. That’s not all: The unused amount within the 529 plan for one child, can be transferred and used by another sibling should one child not need all the funds originally saved. The 529 plan can receive gifts from any family member such as grandparents, aunts, uncles and even friends. You can front end load a 529 plan with as much as $395,000 with initial gifts. Speaking of gifts, once these contributions are made, they are considered completed gifts for estate tax purpose for the person who made the 529 contribution. The trustee on the 529 plan controls when the distributions are made, and for parents who have made the 529 gifts but who have an asset base outside of the 529 plan to pay those college tuition bills, they can leave the assets in the 529 plan allowing the parents or donors skip one generation. This means allowing the funds to grow tax free for the next generation. How cool is that? Now you can create a dynasty gift of a college education for your future grandchildren. Saving for college in today’s environment is daunting as college expenses will most likely continue to rise. However, if parents start early, they put their children/grandchildren in a much better position to receive the education they deserve. *Before investing in a 529 savings plan, please read the plan disclosure document and other relevant documents carefully. Also, consider the investment objectives, risks, charges, and expenses carefully. As with other investments, there are generally fees and expenses associated with a 529 plan. The tax implications should be discussed with your legal and/or tax advisors because they can vary significantly from state to state. Also note that most states offer their own 529 plans, which may provide advantages and benefits exclusively for their residents and taxpayers. Jessica and Kristin Bardwell: OUR MOTHER’S LEGACY LIVES ON
Everyone loved Pam Bardwell – her home was the place that all the kids wanted to be and she dedicated her life to helping others and working with children in her hometown community of Westlake Village, Calif. Bardwell was in great shape, ran five or six times a week and took good care of herself - so it was with shock and sadness that her family learned that Bardwell had pancreatic cancer at just 52 years of age. She fought a brave battle against the disease for 19 months, but sadly lost the fight leaving her family and community devastated. Bardwell’s two daughters, Kristen and Jessica, had to find a way to uphold their mom’s legacy of caring for others and to somehow fill the void of her absence. Here is their story: Jessica: Ten years ago I couldn’t have told you what pancreatic cancer was but now we are far too familiar with the devastating effects. This form of cancer is the most lethal and the mortality rate far too high. We started our charity because after mom’s death we felt so helpless; this was something we could do to honor her. Kristen: After she passed away we had to figure out something productive to do with our confusion and sadness. We put on a running event as a way to honor her memory and raise awareness for pancreatic cancer. The event is PAM’s Run (Pancreatic Cancer Awareness Mobilization). We had no idea the level of work needed to set this up. We had to get city permits, arrange the date with the Sheriff ’s Department and determine the timing and needs for the event. It was quite a learning process, but so worth it. Jessica: We thought when we started out that the race might just be our family attending, but we did a lot of reaching out and over 600 people showed up! It was unbelievable and amazing. It was then that we realized that this was bigger than we ever dreamed. In our second year we came across The Lustgarten Foundation, the nation’s largest private supporter of pancreatic cancer research. We were so impressed by what they do that we partnered with them for our second annual run. Kristen: The first year people told us that we would be lucky to just break even. But we knew we were onto something bigger than ourselves. Over the past six years we have raised $600,000 through our own races

in Westlake Village. People come out in full force and run as individuals or as a team. Vendors partner with us to share a healthy lifestyle, along with music and lots of fun. The whole family can participate either by running or attending the expo. Jessica: By partnering with The Lustgarten Foundation we have been able to break through to pancreatic survivors and to families of those who lost the battle. The Foundation has raised $24 Million over the years and we are their California division. One woman came out last year in a wheelchair, she was participating in a clinical trial that is keeping her alive and this year she was able to walk and be a part of it - cancer free! Beautiful stories like hers fill us with hope and let us know that things are moving in the right direction. Kirsten: Mom’s journey taught all of us how important it is to appreciate every moment. She took the devastating news with such grace. As sad as it was, it was a beautiful time that allowed us to have amazing conversations and helped us put life into perspective. Her last months gave us beautiful moments and wonderful memories. Jessica: We feel like we are in a place where there really is hope – a cure is out there and we are trying to find it and need everyone’s help. Though she was known in the Ukraine as “the Queen of Soundtracks,” Newton’s manager and best friend, Veronica, prepared her for years to leave her homeland knowing that America would provide greater opportunity for her. Just three weeks after coming in fourth in Eurovision, an international talent competition, Newton turned down offers for bigger stardom at home for the opportunity to perform in the U.S. At this same time America was noticing Newton and JK Music Group founders Julia Kurbatova and Oleg Shmelev invited her to America for a two-week recording session. During that session she also sang for Randy Jackson and the two clicked. “I felt his energy and knew he was something special,” she says of the Grammy-Award winner, who produced her stateside debut.
Already a superstar in the Ukraine, a young woman lands in a foreign country not knowing the language, having no friends, with only her dream of making it in the United States. Mika Newton, a singer and song writer, took acting lessons just to learn the English language and after four months of sequestering herself, went boldly out into the world of Hollywood. Relaxed and beautiful, Mika Newton fills the funky coffee house with her energy and warmth, flawless skin and infectious smile and shares about life in the Ukraine and her bold move to the U.S. two years ago. Performing since she was just five years old, Newton signed her first contract at the age of 17 with the largest music producer in her country. “I thank God that at five years old I knew that I wanted to sing – I had no idea I could make money – I just wanted to perform.”
When asked about her adjustment to a new country Newton said, “I was reborn in America. I feel like a kid with a new country, new mentality, new language – it’s like I’m five years old again!” She wants to perform for everyone, those back home and all over the world. “I feel I have a strong message for young people – I want them to know that if they believe in themselves and work hard, they can achieve their dreams.” She wants her fans to know that she loves hearing from them as it really inspires her, “It’s an exchange,” Newton says, “I give my fans songs and they give me their support – it’s an invisible conversation!”

DS: How do you like working on “Shameless?” Kenney: I love it, it is really fun and I love the cast and crew. Shameless is a part of my life and we’ve all gotten so close, it’s like a family. DS: How is it being a bi-coastal teen? Kenney: We film four and a half months out of the year in Los Angeles and a month in Chicago. My home base is actually on both coasts. My mom lives in New Jersey and I am there most of the year. My dad lives in Los Angeles and my parents chose to do that so I could always be at home. I’m an only child so it is peaceful when I am at home and on set, it’s like I have siblings – it’s perfect. DS: What about school? Kenney: I am a freshman in high school and I love to hang out with friends. I’ve always chosen to go to a real school outside of being tutored on set. I don’t want to regret not getting a childhood – I don’t want to be a diva.

DS: What would you like to do more when you’re not working? Kenney: I would definitely travel – I would love to live in Tokyo after college. I would go to Paris – I’ve been there a couple of times and I love it. Iceland is one of my favorite countries especially for the whale watching tour. DS: Any last words for your audience? Kenney: Work hard, play hard. When you work hard, it pays off and then you can reward yourself by playing hard. I have so much fun with what I do; I want others to have the same. As a precocious two year old, Ryan Newman, would point to the TV and say, “I do that!” Her determination and passion resulted in landing modeling jobs and filming commercials as a pre-schooler. Newman made her film debut at seven years old in the film “Zoom” opposite Tim Allen, Courtney Cox and Chevy Chase portraying a superhero that seeks to save the world from destruction, for which she trained in martial arts. In 2010 she won the Young Artist Award for Best Performance in a TV Series by a Leading Actress. Now 16 years old, Newman plays Emily Hobbs on “See Dad Run” (Nick at Night) and she loves her job. “I was involved so young – I received my training on set rather than in acting class.” In order to pursue her career, Newman is home schooled but wants her fans to know, “I’m a normal teenage girl; I love to hang out with friends, dance and fashion. I work hard both as a student and an actress.” Close to Newman’s heart is her dedication to working with the antibullying charity, The Farley Project. She shares that she has experienced the pain of being bullied in her life and it makes her passionate about helping those going through it. “I have been there, I feel their pain,” says Newman. “I also feel bad for those people who feel the need to tear others down. It’s their own pain that makes them do that – it makes you wonder what they may have been through to put that on someone else.” Her advice, “I encourage everyone to pursue what they love and don’t stop. Find your passion and give it your all.”

Sydne Summer (and yes, that’s her real name!) is a style expert, stylist, host and blogger. “I was always into fashion. Even as a kid I went to a school where we had to wear uniforms and I would lay out five outfits every weekend for the following week – including accessories and hair ribbons, everything had to match.” Today, Summer says it is still a great idea to lay out five entire outfits, including accessories, every Sunday to alleviate early morning fashion stress. Summer attended a liberal arts college and during an internship in the industry she fell in love with editorials in fashion. As a fashion editor at “E,” Summer loved dressing up all the time and it ignited her passion to report on style. It was during this time that she started her blog on the side and it began to grow organically into what it is today. “My blog is all about aspiration and fashion – I make sure that the looks I create are something that every woman can actually purchase. Everything I wear or place on models is available at affordable prices.” Summer just turned 30 years old and feels very fortunate to be in a place where she enjoys what she does. “Thirty is just a number – I love my life!” As well she should, Summer is in high demand and works non-stop to bring fashion forward colors, styles and trends to American women. Jamming with his dad and getting to join him on stage as a little kid, Salvador Santana was inspired by his father, legendary guitarist, composer, singer and band leader, Carlos Santana, and both grandfathers who were also musicians. “It’s in the blood,” the younger Santana asserts with a smooth, kind voice that reflects the character inside. “I was fortunate enough to have a supportive family and make important decisions to stay focused on the music – I am so grateful to have this life and career.” Santana’s passion radiates from him and playing piano is his love. “When dad would invite me on stage to join his band, I played percussion, cowbell, maracas – he just wanted me to get comfortable being up there. But Santana didn’t even realize the magnitude of what he was doing, “It was just jamming with dad. It was family time and it is so cool that we get to share that form of language together – music – in front of thousands or just the two of us hanging out and jamming.” Santana is sure of who he is, a musician who takes from his education and experiences to be of service to the world. “If I can lift somebody up and change their point of view in a positive way – that is one of the highest forms of validation. I continue to grow to make a difference to other people.” Members of his current band, Jared on guitar and Blake on drums – went to Cal Arts with Santana and he is glad they were able to join forces. Then Alex, a great vocalist and keyboard player, and Tristan on base, joined them to complete their sound. Santana says, “I get to work with good friends who are professional musicians. It pushes me to be a better musician and be on point as much as possible.” Santana is a good man and someone to watch. Words from his own tracks describe him well: Santana is going to continue to “Rise Up” in glory because he is a hero that deserves to be moving “Into the Light.” A L E X N E S T E R A N D S A LVA D O R S A N TA N A

Burn It Down to Rise Above It At the request of Alex Nester, vocalist and keyboard for Salvador Santana, the band performed for her charity performance “Burn It Down.” It was an amazing event and Santana was happy to help. Nester had her own reasons for doing it. A young, vibrant 16-year old on the cusp of her adult life, Nester was diagnosed with Non Hodgkin’s Lymphoma. Nester shares, “I had just started dating my boyfriend who is now my husband. He stayed right by my side.” She had been getting sick but waited to go to the doctor until it got to the point that she was hurting everywhere and doubled over in pain. In February 2001, the doctor pulled her mom to the side and told her the diagnosis. Nester remembers, “I heard the word cancer and to hear it any age is horrific. My instant reaction was ‘I’m going to die – not fair – I have too much to do – too much I want to do – I’m just a kid’. I was scared and started crying and praying. I was one of the lucky ones, my chemo treatments only lasted about three months, but when I was losing my hair and feeling so sick it felt like a lifetime.” “I remember when I was at my lowest point, I would put on a song and it would completely take me out of my world – all the pain was gone, the sadness, the depression, the stress. I was able to breathe and be normal for those four minutes of the song. Music gave me a second wind that was really helpful.” Because music brought Nester through her recovery, on the anniversary of being 10 years cancer free, she wanted to have a party and what better way than to have a concert and give back for all the people that had been there for her and to benefit all the people still going through the battle. “Burn It Down to Rise Above It” started in 2011 and was a huge success. We had the second one in 2013 and I was not working with Salvador Santana at the time but asked if he would be a part of the concert. Santana shares, “I’m so grateful that Alex asked me to be a part of it. Cancer and diseases of that kind are a double edged sword because it is tough to get through it but it also brings people closer. What better way to be of service and care and help out others than by uplifting people through music. Let’s do it again!” Nester is grateful for Santana’s giving heart and participation. She knows that cancer has touched every single person in one way or another. The “Burn It Down” concert in 2013 was a great second year and inspired Nester to keep going and make it a bi-annual event. “People like to help other people and fighting cancer with music is the coolest way to give back.” The next “Burn It Down” is in 2015 and Nester plans to make it incredible. “I am super excited to have Salvador on board again and I received tremendous help in putting it together from my husband, my parents, Danica Selvaggio, Katie Brown and Camille Goncharow. We are excited to see how we can grow it. We have been able to raise over $10,000 at each concert and donated the proceeds to The Marcelle Erian Cancer Foundation (www.MarcelleErianCancerFoundation.org). “I sit on the board of the foundation which helps assist cancer patients financially. Even if a cure for cancer is found, we are still going to have to pay for it – we have to get people well and as and comfortable as possible.” The money and donations are great and we want to inspire people to also go out and help those struggling to survive by donating an ear to listen, a shoulder to cry on or perhaps provide a ride to and from chemo treatments. We want to do everything we can to help people get through the cancer battle and at the end of their journey they won’t hurt any more.

JENNY BERGGREN ACE OF BASE Last Shining Beacon By Imaan Jalali
I was a whole foot shorter and into Power Rangers when Ace of Base usurped the brass ring of the music world in 1994. It was a time when things were simpler—there was no texting, few cell phones, no social networking, and barely a hint of an Internet for public consumption. The manner in which humanity got on with day-to-day affairs was slower, but perhaps more meaningful. During that era, the smell of “teen spirit” became imbued with a potpourri of energetically melodic beats, accented by two delightfully feminine Swedish voices. One, Linn, had fair hair and a layered voice, reminiscent of Cher. The other, Jenny, who acted as both sister and professional partner, was a brunette with a voice as blissfully high as the sky. When they sang together on their record-smashing debut album, The Sign, the masses could not help but fall in love with “All That She Wants,” or be less than spellbound by “Waiting For Magic.” The titular song was the most successful, though, staying at No. 1 for six weeks atop the Billboard charts—the driving force behind 23 million albums sold, en route to nearly 60 million sold worldwide over the long haul. These two sisters were complemented by two male counterparts, which included Jonas, brother to the sisters and genius producer; and Ulf, friend of the family and heartthrob producer of the foursome. Today, in the year 2014, Linn is living life in the way she has likely always intended—placid and undisturbed; Jonas still has a passion for

writing music, but is mostly preoccupied with family life; and Ulf has mostly left the music domain altogether, instead focusing on business pursuits. Standing alone, proud, and still young at heart and in age is Jenny, who is the last remaining performer of the group. Just 41-years old, Jenny is arguably the most interesting member of the group, as corroborated by a historical lens that evinces her evolution as an entertainer, once initially reluctant, but having grown comfortably into her own skin to become, in many ways, Ace of Base’s marquee Avenger. Now a wife to a notable Swedish pianist, Jakob Petren, and mother to two children, Jenny balances her time wisely between touring as a solo artist, giving back to her community as a church leader, and doling out unconditional love to her loved ones. So, when I inquired about an interview with her, I had doubts that someone as busy as she is would not only call me from her native homeland of Gothenburg, Sweden, but incur the long-distance rate, and do so for an incredibly generous 75 minutes. The interview was scheduled for 12 a.m. Los Angeles time, 9 a.m. Sweden time. Because I hadn’t quite gotten the final confirmation that it was set in stone, I wasn’t sure I’d get a call until my cellphone started buzzing one minute later from a “restricted” number. I hurriedly picked it up, shuffling around my desk for my hand-written questions on yellow pad, and eked out a guttural “Jenny?” before clearing my throat. Here I was talking to a woman whose songs surprisingly
edged out grunge tunes to become the anthems of my fourth-grade class. Many of my classmates, as I recall, had a greater affinity for the “blonde” singer, but I had always preferred her less-heralded younger sister.

To begin, I decided to warm up the interview by asking seemingly arbitrary questions about the last time she laughed heartily, and cried. I believed they would shed light on her personal side—and they did exactly that. In response to my query about her laughing tendencies, she proceeded to tell me that endorphins, through exercise at her local gym, usually make her more susceptible to uncontrollable guffawing, which is what transpired the last time she was there. As to why, the only thing I could recall in her retelling of the anecdote was an inside joke about Swedish high-jumping that naturally went over my head. Her next response about the last time she cried provided insight into a woman whose faith in God has led her to becoming a regular part of her church community, even going so far as to provide lectures and musical performances free of charge, for all to see and hear. As she expressed to me, she and her siblings grew up attending church, as her father Goran, a doctor, and mother, Birgitta, had a vested interest in it, the latter of whom continues to be a language teacher/translator and religious scholar. Upon having become a loving mother herself, Jenny similarly takes her young ones to church. The last time she did, despite affirming to me that she isn’t an overly sentimental person, she couldn’t resist welling up with tears while watching the next generation of her family lineage, her progeny, sing from the heart. When I asked her how she’d rate her current level of fame on a scale of one through 10, Jenny was harsh on herself, answering with an inglorious zero. Her self-deprecation didn’t end there as she confessed to me that she has never really felt famous even during the band’s peak years in the mid1990s. The incessant travel by plane and caravan, always toting a suitcase, pressing on through tired eyes, and having to fulfill one obligation after another was a far cry from the image of pomp and circumstance of pop glamor. Furthermore, she divulged that during the group’s ascent into the mainstream, she had felt like she was doing something that was not really her calling. The notion that she invited a musical destiny to her front doorstep, so to speak, was a point hammered by a mentor of hers at the time, who taught Jenny to accept whatever comes and to have the self-confidence to object when something is not to her liking. As a result, Jenny learned to process her goals, fulfill them and to become more empowered. That being said, there are times when she still does find herself temporarily drawn to negativity, but she and her husband are there to steer each other way from it. For her, maintaining a positive attitude has been inclusive of being down to earth and making friends with individuals all over the world, who can nourish her to become a more informed person. She gushed over a few American friends she keeps in contact with, notably one named Tracy, who remind her to think big. It’s as if she has been enamored with the American mystique of having the unfettered freedom to capture opportunities and accomplish the impossible, which I couldn’t help but point out that she has already accomplished as a Swede. Yet, in the face of all of her triumphs, she hasn’t felt self-sufficient until recently, having usually relied on her older sister Linn to make decisions for her. Now the head of her household, along with her husband, she relishes the chance to prioritize decision-making even if the road to enlightenment is appropriately gilded with mistakes. One such regret was having made handshake deals, not ones in writing, which had haunted her from a professional standpoint.
Thus, over time she has learned to become much more conscientious of such “minute” details, course-correcting the way in which she handled them. Perhaps the greatest example of Jenny’s fastidiousness to not sign anything until she was completely aware of her (musical) rights occurred in 1994 in Hamburg, Germany, where she had a lawyer explain the intricacies of each page of an important German-typed contract. Looking back, she recalled the executives in the conference room being somewhat in awe of a woman in her early twenties, who challenged the gender-age roles of contract protocol like she did. As challenging as it has been to learn from her professional mistakes, however, it pales in comparison to the time a miscreant put a date-rape drug in 15-year-old Jenny’s soda drink. That trauma would later be overshadowed by the near-tragedy of an attempted knife attack by a crazed female fan in her parents’ home, where she was still living, in the spring of 1994. According to fan lore, in the briskness of night, Jenny felt the cold edge of a blade at her throat, only to startle awake and see a woman staring solemnly from above. The perpetrator spoke German to Jenny, who luckily knew the language enough to calm down a predicament that could’ve been irrevocably disastrous. But the trying ordeal was enough to give Jenny severe post-traumatic stress disorder, which upended her brain wiring. To get the healing process in motion, Jenny consulted a priest, talked to her parents more than ever, and often asked her siblings to sleep in the same room as she

A R T S & C U LT U R E did. Jenny tried hard to keep the record companies in the dark about her psychological vulnerability but, alas, the story had nevertheless found its way to the Swedish press. Though she admits that the distressing event made her stronger, she further admits it would affect her as much, if not more so, if a similar tribulation were to transpire again. While it was embarrassing for the tabloids to publish such intrusive information, it did less damage to her and Ace of Base’s legacy than the revelation that Ulf Eckberg, a member of the quartet, was once in a youth group that espoused Nazi principles. When this was initially brought to the media forefront in 1994/95, Ulf admitted his indiscretions, but also disavowed his past ties, chalking them up to a misguided, irascible time, which preluded his awakening as a constructive citizen of the world. Last year, a Huffington Post article randomly regurgitated Ulf ’s erstwhile affiliations, which came as an eyebrow-raising shock, because not only has Ace of Base been long disbanded, but the accusations have already been owned up to. The other three members of the group, though, have to deal with the fact that Google has indexed the prolifically-read article close to the top of the band’s “search results,” temporarily tarnishing Ace of Base’s legacy as being (erroneously) associated with Nazism. When asked about it, Jenny admitted that she still feels the repercussions of Ulf ’s adolescent transgressions. Moreover, she confided that it has been difficult for her, as well as the Jewish record company executives who have presided over the group. Not to mention, there is the compelling irony that Israel has always been Jenny’s favorite country to visit, for all of its holiness, reverence and coexistence among the citizenry there, or, as she would say, “I have one foot in Sweden and the other in Israel.” As she continues to move forward in life with a peace of mind that she thought she’d never have, Jenny wakes up each morning hoping to edify the people she comes into contact with—to let children and adults know that they can acquire the power to become secure with themselves, to cast aside fear, superseding it with the staunch, soothing belief in a higher power. Driven by a way of life that promotes altruism, Jenny has gone to great lengths to both entertain and educate, yet she doesn’t see it as an exhausting duty, but a decision that she has come to make on her own volition. And it is why, despite Ace of Base no longer being active that Jenny has an ineffable flame about her that would, at worst, flicker and, at best, roar with unbridled passion. Lastly, I asked about the nationally-run Pizza Hut commercial in the United States, which extensively features Ace of Base’s “The Sign” music video. She remarked that she personally knew the man who brought Pizza Hut to Sweden, but seemed to be otherwise not too ecstatic about the ad, perhaps because she had other thoughts looming. For Jenny, who was going to be heading to a ski resort following our interview, it became clear that the here and now has always resonated with her the most. What is Mutiple Sclerosis? Mutiple Sclerosis is damage in the central nervous system that results in the varied and unpredictable symptoms of the disease. The National MS Society provides some helpful info about the condition and how you can help the cause to find a cure: Who gets MS? Anyone may develop MS but there are some patterns. More than two to three times as many women as men develop MS and this gender difference has been increasing over the past 50 years. Studies suggest that genetic risk factors increase the risk of developing MS, but there is no evidence that MS is directly inherited. Environmental factors, such as low Vitamin D and cigarette smoking have also been shown to increase the risk of MS. MS occurs in most ethnic groups, including African-Americans, Asians and Hispanics/Latinos, but is most common in Caucasians of northern European ancestry. How many people have MS? More than 2.3 million people are affected by MS worldwide. Because the Centers for Disease Control and Prevention (CDC) does not require U.S. physicians to report new cases, and because symptoms can be completely invisible, the prevalence of MS in the U.S. can only be estimated. Can MS be cured? Not yet. There are now FDA-approved medications that have been shown to "modify" the course of MS by reducing the number of relapses and delaying progression of disability to some degree. In addition, many therapeutic and technological advances are helping people manage symptoms. Advances in treating and understanding MS are made every year, and progress in research to find a cure is very encouraging. Multiple sclerosis and the MS movement is engaged to addressing the challenges of MS today while moving toward long-term solutions for tomorrow. It becomes better known each year, but more must be done. Every connection counts when it comes to increasing awareness and support for the cause. Every individual connected, whether it’s through social networks, email or a personal connection, every dollar raised, every video viewed; each connection has the opportunity to change the world for people affected by MS. CHRISTINA FERRARE
The Extraordinary Life of an Extraordinary Woman By Debbie Sullivan
An international model, spokesperson, TV host, author, wife, and mother – Cristina Ferrare , albeit humble and grateful, has enjoyed an extraordinary life. “When I was 18 I moved to New York and started modeling and was coincidentally placed in both Vogue and Cosmo at the same time – it was serendipitous – and I never looked back.” During her 25 years as a supermodel she became a spokesperson for Max Factor and endorsed numerous commercial products. In the interim, she got married and had two children. When her marriage ended, she moved her little family back to California and lived with her parents. “God always had my back,” shares Ferrare, “I received a call from Tom Van Amburg who asked me to host a morning show in Los Angeles with Steve Edwards who became my mentor. It was wonderful - our show shot to number one and stayed there for five years. That show allowed me to rent a sweet little house in Brentwood and put my children in private school. It was so fulfilling for me to be able to provide for my children on my own.” It was during this time that Ferrare met and fell in love with her soul mate, Tony Thomopoulos, an entertainment executive. He had three children, she had two and together they had two more for a total of seven. “We embarked on this amazing journey that is still going on – we’ve been married for 30 years, we still have a consuming love affair and the children are wonderful.” Fast forward to 2012, Ferrare was retired when Woody Fraser called her to do “Home and Family.” “I was writing on women’s issues and cooking and at first I said no. But he was persistent and I am so happy I agreed. This is one of the best things that 86

ever happened to me – my ‘Home and Family’. I love every person on our staff of 75. It’s such a joyous and wonderful experience, it’s like going to day camp every day! And co-host Mark Steines is my forever friend and our families are very close.” On “Home and Family” they built a real house – starting from the garage, kitchen, family room, bedroom, bathroom, dining and even a man’s cave. Ferrare is very involved with the production and does much of the work on the house herself – including the flowers! “Mark and I love our TV home like a real home.” The hosts share do-it-yourself projects as well as crafting, cooking and ask experts to come on to discuss important life issues like colon cancer awareness. Ferrare shares, “We cover everything that has to do with real life. We do the best we can to bring empowering information to those who watch, we want to make it easier to deal with everyday problems.” Ferrare’s love of cooking is reflected in her book, “A Big Bowl of Love.” She is working on a new cookbook “A Change of Heart.” “Since people don’t change the way they eat, we will show them how to change the way we are making the recipes.” Ferrare is working with a cardiologist from UCLA along with Barbara Streisand and a very special photographer, Mark Steines, whose real love is photography. “I told him I was doing this book and asked if he was interested in photographing my dishes – and a partnership was born! The book contains delicious recipes like ravioli, sloppy Joes, sauces and desserts that are made healthier.” Ferrare’s voice raises, her face is flushed as she shares passionately, “I’ve lived a lot in life – married, divorced, children, blended family, children who struggled with life issues, a mother going through Alzheimer’s, grandchildren – I can relate to women and their life issues and love helping in any way I can.” “To be my age and be able to do something I love so passionately is such a gift that I never take for granted. Life is extraordinary.”

I make mine with Greek yogurt and fresh peaches, but you can substitute your favorite ice cream, frozen yogurt, or sorbet. Directions Pre -heat oven to 275. In large bowl add oatmeal, cinnamon, salt, mix well. heat the Agave syrup and coconut oil until warm, pour over oatmeal and use wooden spook to mix well. Add the walnuts and almonds, mix again. Bake for 20 minutes then turn baking pans so the back is in the front, give the pan a good shake. Bake for another 20 minutes or until the oatmeal is a rich golden caramel color. let cool for 15 minutes then add raisins, cranberries and cherries. Note: Be care not to burn the sides, they have a tendency to brown quicker then the middle, if you see the oats are turning too quickly use a metal spatula to move them around.
Directions Preheat the oven to 375°F. Spray a 6-cup muffin tin generously with cooking spray. Remove 6 sheets of phyllo from the package, and cover them with a kitchen towel to keep them from drying out. Store the rest of the phyllo in the refrigerator. Lay 1 sheet of phyllo dough on a work surface, and keep the remaining sheets covered with a damp towel to prevent them from drying out. Spray the sheet lightly with cooking spray. Cut the sheet into 5 (6-inch by 6-inch) squares. Place 1 square gently inside a muffin cup, and press the bottom to fit into the cup. Lay the other 4 squares in the muffin cup at different angles until all 5 have been gently pressed in. The ends of the phyllo dough will be taller than the cup and should overlap. Repeat the process for the other 5 muffin cups. Bake for 5 to 8 minutes or until golden brown. Remove from the oven and let cool completely before trying to lift the cups from the muffin tins. Gently lift the phyllo cups and place on a platter. Fill each to the top with yogurt. Add half a peach, and sprinkle with ¹?8 teaspoon of cinnamon, 1 teaspoon of chopped walnuts, 2 mint leaves torn into small pieces, and 1 teaspoon of honey.

It’s important to have all your ingredients ready before you start to assemble your tower. ·Cut 6 bread rounds using a 4-1/2 inch cookie cutter. Set aside. Slice the baby Roma tomatoes in half lengthwise. Set aside. Fry the bacon in a skillet until crispy. Remove the bacon from the skillet and place on a paper towel to absorb excess oil. Lower the heat under the skillet to medium, add the shallots to the bacon drippings, and saute for 30 seconds, until the shallots start to turn a bit crispy. ·Add the apple cider vinegar, and with a wooden spoon, stir well, scraping the brown bits from the bottom of the pan. Pour into a small bowl and set aside to use as dressing. Return the skillet to the stove over medium heat. Add as many bread rounds as will fit in the pan. Lightly toast both sides of the bread. Be careful that the flame isn’t too high; you don’t wan to burn the bread, so stay with it until all 6 pieces have been toasted lightly. Set aside. ·Crumble the cooked bacon into small bits and set aside in a small bowl. Cut the heirloom tomatoes into slices slightly less than 1/2 inch thick. You should have 18 slices that are consistent in size. You will have some tomato left over. ·Cut the buffalo mozzarella into slices slightly less than 1/2 inch thick. You should have 12 slices that are consistent in size. ·Stack all 10 of the basil leaves on top of one another, roll them into a cigarette shape, and slice thin.

·Make an assembly line: toasted bread, heirloom, tomatoes, sliced mozzarella, shallot dressing, bacon bits, kosher salt, basil. Place one toasted bread round on a salad plate, add a slice of heirloom tomato, and sprinkle with a small pinch each of salt and pepper ·Drizzle on several tiny drops of shallot dressing and a pinch of crumbled bacon, letting a little fall onto the plate as well. ·Top with a slice of mozzarella cheese and then another slice of tomato. Repeat this process until you have three slices of heirloom tomato and two slices of mozzarella cheese in your tower. ·On the last tomato slice, the one that tops the tower, sprinkle more bacon bits, then lightly drizzle a tiny bit more of the dressing (a little goes a long way), including some on the plate for a professional look. Garnish with a few strips of basil. ·Add 5 to 6 baby Roma tomato halves to the plate and sprinkle with a pinch of kosher salt.Repeat the assembly process for the other 5 towers
C AR A M E LI Z E D S CALLOPS W ITH W HITE WINE The crescent-shaped muscle that attaches the scallop to the shell will toughen when cooked. You need to remove the muscle by peeling it away from the sides of each scallop before cooking. Rinse and dry scallops well. Sprinkle both sides of scallops with a pinch of salt and pepper. Heat a skillet on medium-high for 2 minutes. Add the clarified butter, and swirl to coat the pan. When the butter stats to foam, get ready to add the scallops. Working quickly, coat one side of each scallop in sugar (hold the sides of the scallop and dip in the sugar, using a twisting motion to coat evenly on one side only.) Place the scallops, sugar side down on the skillet and saute for 2-1/2 minutes. If the sugar starts to brown too quickly, turn down the heat. Turn the scallops over and saute for 1 minute. Add the white wine and lemon juice and reduce by half. After about 1-1/2 minutes, transfer the scallops to a warm platter and pour the pan juices over the top. Garnish with chopped parsley, chives, and lemon zest.

When the butter is melted, carefully remove the foam that forms on top. Pour the clear buttery liquid in a bowl, be careful not to let the whey at the bottom get into the bowl. The whey will burn and turn brown at a high temperature. Discard the foam and whey. Leftovers can be stored in the refrigerator for up to 3 weeks.
