•“Beet”comesfromtheGreekletter“beta” becauseitlooksliketheGreekletterB.

•Beetsareredbecauseofpigmentscalled betalains,whichalsocausetheredcolorof cactusflowers,rhubarb,andchard.Some peoplecannotmetabolizebetalains,whichis expelledthroughtheurine,turningitpink.

•Carrotscontainpigmentscalledcarotenoids, includingbetacarotene.Notonlydothese pigmentgivecarrotstheirorangecolor,but theyalsoactastheprecursorstovitaminA. MANAGINGHOLIDAY STRESSAND HYPERTENSION

Let’sfaceit–formostpeople,thishasbeena toughyear.Now,totopthatoff,we’recomingup onthemoststressfultimeofyear.Withstress,for thosesusceptible,highbloodpressuregoesalong withitall.

Whenastressfuleventhappens,thebodygoesinto “fightorflightmode”.Hormonesarereleasedto helpthepersonwitheitherincreasedstrengthto fight,orendurancetorun.It’sasurvival mechanism,andanawesomeoneatthat.Unlike theoccasionalbigstressfulevent,wehave multiplesmallerevents,chronically. Nooneisimmunetostress.Howwerespondto stressandwhatkeepsyourbloodpressuredownis whatmatters.

Whenstressed,thehormonesadrenalineand cortisolgetreleased,activatingthefightorflight response–theheartbeatsfasterandtheblood vesselsconstrictinordertogetmoreblood moving.Thisincreasesbloodpressure.That’s okayonanoccasionalbasis,butwhenthathappens chronically,wemayhaveaproblem.

Althoughstudieshaven’tascertainedforsureif chronicstresscauseshypertension,theassociated actionsinresponsetostressmay.

Oneofthoseisourdiet.Whenstressed,weneed extranutrientssowehavethematerialsthebody needstomanagethestressresponse.Insteadof eatingbetter,morenutrient-densefoods,when stressed,manypeoplegoforthejunkfoods.

Stressedpeopletendtoeatmoresugarandcarbs, morefastfoods,morecoffee,alcohol,energy drinksandanythingto“justgetthroughit”.This could,overtime,leadtohypertension.

Stressedpeopletendtosleepless,stayinguplate tryingtogetthingsdone.Lesssleepreducesyour abilitytocopewithstress,makingitworse.In addition,itwasfoundthatpeoplewhotakelonger than14minutestofallasleephavea300%greater chanceofhavinghypertension.So,gettobed early,andifyouhaveinsomnia,consider acupuncturetostraightenyouout.

Hypertensionisalsoworsethistimeofyeardueto thestressfuleffectofcoldontheheart.Coldcauses vascularconstriction,increasingbloodpressure. Sodresswarm.VitaminDdeficiency,common thistimeofyear,mayalsocontributeto hypertension.VitaminDisknownforitspositive effectonmood–especiallyanxietyand depression,morecommonthistimeofyear.

Themonk,who'dtakenavowofpoverty, additionallypurchaseda$40,000Swisswatch. Thosewhoreviewedandapprovedthe applicationsshouldhavebeencluedinbythe nameofthemonasticproperty:ShrineofSt. NicholastheWonderworker,PatronofSailors, Brewers&RepentantThieves.Atthiswriting, thepairhasbeenreleasedonacomparatively tiny$10,000bondafterarraignment. ATexaswomandidn'tnabasmuchcash,butthe circumstancesarestilldespicable.Thewoman andherhusbandclaimedVAandSSAdisability moneybecausetheysaidthattheveteranhadan activedutyinjurythatlefthimparalyzedfrom thewaistdown.They'dbeengivenanadapted homebyanonprofitgroup,aspeciallyequipped vehicleandmoney.Athumbs-uptothelocal news,however,fortheirinvestigationafterbeing sentavideooftheveteranwalkingaroundthe neighborhoodandplayingbasketball. Theveterandiedinfederalcustodywhile awaitingtrial,buthisspousewasfoundguiltyof mailfraud,wirefraud,healthcarefraud,theftof governmentfundsandmore.Atsentencingshe faces20yearsforeachwireandmailfraud charge,10yearsoneachhealthcarefraudcharge andtheftoffundsandfiveyearsforeachfalse statementrelatedtoahealthcarematter. (WrittenbyBarbaraPowell,aresidentatTheLodgeAssistedLiving) WhenIlearnedtotalkasasmallchild,itwas discoveredthatIwastonguetied.Hardly anyonecouldunderstandme.Inadditionto beingtonguetiedIwasextremelyshy.Ihad thesetwodisabilitieswhenIstartedschool.One dayIoverheardmyMotherandfathertalking. Myfathersaidthathethoughtthattheyshould takemetothedoctorandhavemytongue ‘clipped’.Thiswouldenablemetospeakmore clearly.Thethoughtofhavingmytonguecut scaredmesobadlythatIdeterminedtoteach myselftospeakcorrectly.

Therewasasitcomontheradio.Itwasabouta teenageboybythenameofHenryAldridge. Thisradioprogramalwaysbeganwiththe mothercalling,“Henry.HenryAldridge!”henry respondedbyanswering,“Coming.Mother!” Ourfamilyalwayslistenedtothisprogram.It wasapartofourlife.Thesephraseswere spokenloudlyandclearly.Thename“Henry Aldridge”wouldbeaperfectnametobeginmy determinedefforttospeakcorrectly.Ibeganmy journeybylearningtoslay“HenryAldridge” loudandclear.MyparentssawthatIwas beginningtospeakcorrectly.The‘clippingof thetongue’wasnevermentionedtome. Throughouttheyears,Iwrotewordsdownand markedtheaccentandvowelsounds.Icannot remembereversharingmyself-taught accomplishmentwithanyone.Iwasaveryshy person.Attheageof35,afriendtoldmethat therewastobeanall-dayhealingservicethe followingSaturdayatBishopLynchHigh School.Iwenttothishealingserviceandstayed allday.Itookpartineverything.Ididnottalkto anyoneorsayanythingalldaylong.Itwasa niceday.NotlongafterthishealingserviceI begantonoticethatIwasnotsoshy.Istartedto expressmythoughtsandopinions.Idetermined thatI“stepout”andspeakevenifIwaswrong orthoughtthatImightsoundstupid. IjoinedtheToastmasters,nottomakepublic speeches,buttolearntotalktopeopleonaone toonebasisandtobeabletoexpressmyselfto otherindividualsinanintelligentway. Toastmastersaregenerallyself-confident, educated

peopleontheirwayupintheircompanies.Idid notfitintoanyofthesecategories.Ihadastory totell,butnooneknewthat.Ihadaveryserious reasonforbeingthere,butnooneknewthat either.Alotofthemembersdidnotwantmein thegroupbutIhungintherebecauseIwas learning.IfIwasapersonwhogaveupeasily,I wouldstillbetonguetied.

Areallypretty,educated,womanwhowasan excellentspeaker,toldmethatIwastheworst speakerthatshehadeverheard.Shesaid,‘Ifyou say,‘uh…uh…uh…’onemoretime,Ithinkthat Iwillscream.Iwentacouplemoretimestothe meetingsandthenIquit.

WhenItellmystory,peoplealwayssaythatit wasterribleforJilltosaythattome.Myanswer isthat‘IknowthatJillwasnottryingtodome anyfavorsbutshedidhelpmetremendously.I don’tbelievethatIeversaid’uh…uh…uh…’ again.

Anothermemberofourchapter,awonderfulgirl bythenameofJanetcametomyhouse2or3 timesandaskedmetocomeback.However,I feltthatmytimewasup.Itwastimeformeto moveon.Ihadlearnedagreatdeal.Ihadgotten whatIneeded.

Allthroughmylife,Ikeeprunninginto ‘Janet’s’.Theyaretrulykindpeople.Ididn’t qualifytobewiththisgiftedgroupofpeople.I neededthemforaperiodoftime.

ArmedwithwhatIhadlearnedatToastmasters, IenrolledinaclassforPublicSpeakingatthe communitycollege.

MissClaraourteachernoranyoneelseinmy classknewthatIhadbeeninToastmasters. Theclasswaspredictableandfun.Igotalotof goodfeedbackandgoodgradesMissClara.At theendoftheyear,Igotthat‘A’onmyreport card.MissClaralikedmeandmyspeaking.I haveusedwhatIlearnedatToastmastersandthe communitycollegemanytimesduringthelast 30years.MostpeoplethinkthatIamjusttalking normallyandthatImaybealittleaggressive. Butthen,theydon’tknowmystoryandthey don’tknowwhereIcamefromTheyprobably haveneverevenheardofHenry Aldridge………
