PEARL MOUNTAIN FARM Pearl Mountain Farm consists of 34 hectares of land on the upper slopes of Paarl Mountain in Noorder-Paarl, offering expansive views across the valley towards the Du Toitskloof Mountains. It is owned and run by Graham Retief and his sons David, Zed, and Luke, having been in their family for 5 generations.

The original plot began as a 2 hectare grant to a German blacksmith, Johan Guntherloch, who erected a simple dwelling and a blacksmith forge in 1747. These buildings were recently renovated and now house the aptly named Blacksmith’s Kitchen restau-rant, with the charm of this early building

Red grape vines, comprising Shiraz, Cabernet and Merlot, were planted with the first vintage bottled in 2004 under the Retief Wines label, each as a single cultivar.

Once these were established, Chardonnay was added, bringing both a wooded and unwooded version into the range in 2013, with their Chenin Blanc vineyards producing a 2015 vintage. A small block of recently planted Sauvignon Blanc will complement the range in the near future.

The farm now has two wine labels, Retief, the premium range, and Stubborn Man, a literal translation of ‘Retief’. All the wines are vinified off-site by winemaker Robert Frater, but a cellar is part of the family’s long term vision.

With a wonderful combination of spectacular views, quality wine and superb food, this venue offers a fine array of choices to make any ordinary day or a special event into something memorable.

Over subsequent years, the farm was enlarged to 70 hectares and was purchased in 1873 by Jacques Francois Retief, who pursued mixed farming, including wine production and dairy cattle. After WWII, the farm was subdivided between 2 brothers and in 1947 David Le Roux Retief took ownership of the original farm and buildings, while the older brother chose to build a new homestead on the second portion.

Export table grapes became the main farming activity until 2001, when Graham Retief began to return this prime terroir to wine production and, more recently, olive trees were also added to the mix.

Today, Graham is the M.D., David looks after the farming operations and the grounds, Zed runs the restaurant, which opened in 2014, and Luke oversees the renovation and development of a new conference and

ROAST LEG OF LAMB WITH ANCHOVY Deliciously comforting, and the

leftovers make great sandwich fillers.

PREP TIME: MORE THAN 2 HOURS SERVES: 6 INGREDIENTS • 2 kilograms leg of lamb • 4 garlic cloves, thinly sliced • 3 sprigs rosemary, snipped into 2cm lengths • 1 pinch rosemary and olive seasoning, or season to taste • 1 can anchovy fillets in oil • (50g) 23 ml brown gravy powder • 2 tbsp olive oil • 1 dash sherry, or squeeze lemon juice (optional) DIRECTIONS 1. Stuff lamb with garlic and rosemary by making holes in meat with the point of a chef’s knife and inserting a sliver of garlic and a tiny piece of fresh rosemary into each hole.

Season with rosemary and olive seasoning.

2. Mash anchovies in their own oil with a little extra olive oil to form a paste.

Rub all over meat. Refrigerate for a couple of hours or overnight. Bring meat to room

temperature before roasting. Preheat oven to 200 ̇C. Place lamb on a rack over a roasting pan.

Add 2 cups (500ml) water to pan.Roast meat uncovered for 30 minutes.

Reduce heat to 180 ̇C and roast fo ranother 1-1½ hours (uncovered) or until cooked to your liking (on a meat thermometer, medium done reads 71 ̇C).

Remove lamb from oven and allow to rest for 10 minutes covered with foil before carving.

Add 2 cups (500ml) water to pan juices and thicken with Ina Paarman’s brown gravy powder, mixed with a little water. Season to taste. Add sherry or lemon juice for extra flavour.

STEP-BY-STEP CARVING Wrap a clean cloth around exposed shank bone.

Position leg on its side and, using a very sharp chef’s or carving knife, carve into neat, thin slices.

Finally cut along long bones to loosen slices and arrange on a warmed meat platter.

Turn leg over and carve other side the same way, until you end up with completely clean bones.

TIP Ensure the butcher doesn’t cut the shank (leg) bone because when carving it serves as a ‘handle’. However, ask them to fillet out the pelvic bone, which can get in the way when carving.

LIME-GLAZED BABY CARROTS The citrus adds a yummy zing to this side dish.

INGREDIENTS • 2 bunches baby carrots, or coloured carrots,

blanched 30 ml butter 45 ml honey 2 limes, juiced (40ml) and zest

DIRECTIONS 1. Sauté carrots with butter, honey and the lime juice and zest until honey caramelises, about 5 minutes.

2. Serve immediately.

PREP TIME: MORE THAN 2 HOURS SERVES: 8 INGREDIENTS • 2 litres vanilla ice cream, softened • 140 grams dried fruit mix, plus extra for serving • 100 grams glacé cherries, chopped, plus extra for serving • 2 slabs milk chocolate, (90g each) melted, plus extra for serving DIRECTIONS 1. Line a 2-litre mould with two strips of baking paper.

anything but Christmas is now merely weeks away - get ahead by making these mince pies now and putting them in the freezer.

INGREDIENTS • 2 tablespoons brown sugar • 2 tablespoons brandy • 1 small Granny Smith apple, peeled, cored, coarsely grated • 85g raisins, coarsely chopped • 85g currants • 85g sultanas • 60g glace cherries, coarsely chopped • 115g (⅓cup) breakfast marmalade • 1/4 teaspoon mixed spice • 600g (4 cups) plain flour • 80g (½ cup) icing sugar mixture • 300g chilled butter, chopped • 2 egg yolks • 4-5 tablespoons water • White sugar, to sprinkle • Icing sugar, to dust

A stroke is a “brain attack”. It can happen to anyone at any time. It occurs when blood flow to an area of brain is cut off. When this happens, brain cells are deprived of oxygen and begin to die. When brain cells die during a stroke, abilities controlled by that area of the brain such as memory and muscle control are lost.

How a person may be affected by their stroke depends on where the stroke occurs in the brain and how much of the brain is damaged. For example, someone who had a small stroke may only have minor problems such as temporary weakness of an arm or leg. People who have larger strokes may be permanently paralysed on one side of their body or lose their ability to speak. Some people recover completely from strokes, but more than 2/3 of survivors will have some type of disability.

At Mediclinic Vergelegen we have highly skilled and competent multidisciplinary team of specialists taking care of patients who have suffered a stroke. During the past year, we have treated more than 200 stroke patients with a high degree of success. But it is essential to get a suspected stroke patient to hospital as quick as possible because time is of utmost importance.

At the first sign of a suspected stroke, or any

An impromptu ‘mock run’ was set-up in the Emergency Centre when one of the visiting doctors acted as patient and our team took over the emergency treatment protocol. Elapsed time is essential (referred to as “needle time”) measuring the time from the injection of anticlotting agents, undergoing a CT-scan and the patient reaching the Cardiac Catheter Laboratory for interventional treatment of intracerebral clotting, and finally to the Intensive Care Unit. All achieved within 26 minutes!

In the post-event discussion visiting colleagues who work in large Centers of Excellence in Berlin, Biel-Bienne and Stuttgart confirmed that our treatment protocol and time limits are well within International standards. This assurance aligns our Stroke Treatment Centre at Mediclinic Vergelegen on par with oustanding treatment centers elsewhere in the world.
