Jenny Jenny Morris – aka The Giggling Gourmet – is one of SA’s most-loved food personalities. She is a restaurateur (Yumcious, in Greenpoint), author, radio and TV presenter, celebrity chef, teacher and culinary tour guide who has had an ongoing love affair with food since she was a child, when she started making mouth-watering treats for school fundraisers. It’s a love affair in the true sense of the word, one that employs all the senses.

Q: What are your go-to ingredients? A: I cannot live without garlic, olive oil, chillies, parmesan cheese, lemons, cumin and dhania (cilantro)! Q: For which celebrities have you cooked? A: For dozens of celebrities and royals ... amongst others Prince Charles, Thabo Mbeki, Kennith Kaunda, Charlize Theron, Al Gore, and the Duke and Dutchess of Kent. Q: What do you enjoy when you’re not cooking? A: I love to read, garden, listen to music and watch a good movie.

Q: Tell us about Yumcious – it’s origins, your vision, what you are offering. A: Yumcious serves fine casual food. I spend almost evey night of my life dreaming up recipes. I can almost taste the colours, textures and flavours in my dreams, they are so real. I needed an outlet other than my cooking school to turn these recipes into reality. I wanted to serve fine casual food to lots of people, and the food is just that.

Q: Who would be at your dream dinner party? A: Hugh Laurie, Beth Hart, Helen Zille and Jamie Oliver.

Q: How did your journey as a foodie start? A: From a young age, I have always had a very adventurous palate. My parents welcomed us in the kitchen and were always introducing us to new ingredients. I always knew my life would revolve around food.

Q: Any exciting things in the pipeline our readers may know about? A: Oh, I look very much forward to be cooking a New Year’s dinner in Antartica! It is the first time for a South African celebrity chef to do that!

Q: What is your advice for the foodie who wants to become a better cook? A: Eat with the seasons. Be willing to try new, interesting ingredients.


One of my best Vietnamese experiences was the day we all piled into a long boat and went off down the soupy green Mekong River. We were on our way to the home of a local family for a New Year’s lunch. Our boatman at the back kept saying, “Okay ladies, little bit to the left, little bit to the right. Forwards! Backwards!” We had to keep the boat balanced because, trust me, the last thing we wanted was to capsize into that water! The river is the lifeblood of the people who live along its banks. We saw an old lady plucking a chicken, washing and rinsing it; a bit further downstream was a man bathing his dog; then there were people doing the dishes and washing their clothes; and finally someone with his bum perched out over the water! The locals obviously have to boil every drop of that water and filter it for drinking. We eventually made it to our destination, scrambling and digging our way up the bank to the home of our hosts, where we received a wonderful warm welcome from the family and their neighbours. The table was beautifully set and I can’t even begin to describe the wonderful aromas – star anise, hints of ginger, garlic. There were bowls brimming with enticing ingredients: flaked brisket, slow-braised with lots and lots of love; the fattest plump pink prawns; fresh mint, coriander, basil and what they call morning glory; water weed, also known as swamp cabbage, which gives lots of texture to the food; slivered cucumber and carrots; and a gorgeous dipping sauce. The idea was that the man of the household would show us how to roll all of this into crystal spring rolls, after which we would make our own. It’s a fabulous idea for

entertaining at home, in any country. As it was New Year, they offered us chrysanthemum wine, a bitter drink with no alcoholic kick. We reciprocated by offering our own New Year wine from Cape Town – one of the women in our group had a bottle of whisky in her bag. Needless to say, it had much more of an effect on them than the chrysanthemum wine had on us! The head man was knocking it back and loving it. After quite a few shots, he took some of the spring roll wrappers, which he soaked in a little warm water, laid them out, and proceeded to fill them. While he was doing this, all the attention was on his hands and when I looked down – well! – I have never seen such filthy, grubby fingers or such black nails. I was heaving deep inside and thinking, “Please don’t let him touch my food, I won’t be able to eat it.” Of course he rolled the most perfect, tight little spring roll and offered it to me. I couldn’t let him lose face and neither could I, so I said, “I am not worthy of this.” So he gave it to a friend sitting next to me – and she didn’t love me for that! He continued to partake of the Cape Town New Year wine for the rest of the meal and when we eventually got down that hill, into the boat and back onto the river, we were telling one another which way to lean to balance the boat. We hadn’t realised that the spring roll man and our boatman were one and the same, and he was no longer in any condition to keep himself or us upright. Spring Rolls can be filled with any type of filling that grabs your fancy – beef, pork, chicken, duck seafood or just all kinds of crunchy veggies.

Prawn Crystal Spring Rolls Serves 6

I learned to make these at the home of a tipsy boatman on the banks of the Mekong River. They are utterly delicious – fresh, crunchy and tasty – and are really easy to make, even though they take a little time to put together. Get someone to give you a hand soaking the rice paper. The trick is to soak one at a time, as they are very delicate, and by the time you have filled one, the next one will be ready to roll with a little help from a friend.

INGREDIENTS Dipping Sauce • ½ cup rice vinegar • ¼ cup boiling water • ½ cup castor sugar • 1 Tbs fish sauce • 2 small chillies, chopped • 1 Tbs chopped fresh coriander • 1 tsp sesame oil • 1Tbs finely-diced fresh cucumber

Spring Rolls • 24 prawns, deveined, lightly steamed and shelled • 1 cup finely shredded red cabbage • 1 large carrot, peeled and thinly julienned • 1 cup freshest bean sprouts • 1 medium English cucumber, julienned • 24 large fresh mint leaves • 24 fresh basil leaves • 12 coriander sprigs • 24 butter lettuce leaves • 12 dried rice paper rounds

METHOD

• Make the dipping sauce first. Place the vinegar and water in a saucepan over medium heat and add the sugar, stirring to dissolve. Bring to the boil and let it bubble away for a few minutes. Remove from the heat and stir in the fish sauce and chillies. Stir in the chopped coriander, sesame oil and diced cucumber when cool and set aside. • To make the spring rolls, place one rice paper at a time in a bowl of warm water to to soften it slightly. Remove to a flat surface and place a little red cabbage, carrot, a few bean sprouts and some cucumber in the centre of the rice paper and top with two fresh mint and basil leaves and a sprig of coriander. Now top with two prawns and a lettuce leaf. If the leaves are too big, trim them to size. • Fold in the sides of the rice paper and gently roll up nice and tight. Do the same with the remaining rounds of rice paper. Pack onto a tray with enough space between them so they don’t stick together, and cover with a damp clean cloth. • When you are ready to serve, slice the rolls in half diagonally, place on a plate and serve with dipping sauce I sometimes make these with shredded duck breast, rare thinly-sliced beef fillet, shredded chicken breasts, or even leave out the meat and go vegetarian. If you can lay your hands on some Vietnamese mint, please add a leaf to your roll.

Health & Wellbeing Pollen not the biggest culprit behind SA’s hayfever woes It’s the height of the hayfever season. Hayfever is a condition that affects approximately 30% of South Africans, but pollen might not be the main culprit behind your nasal allergy misery. For decades, hayfever sufferers have been led to believe that their condition is brought on by the amount of pollen in the air, but there are a host of other triggers too. Pollen could in many cases elicit a severe allergic reaction, but sufferers will be surprised to learn that their nasal allergies might not have anything to do with pollen spores. Pinpointing where and when an allergy occurs is vital. Even though the treatment might be the same in many cases, avoiding the source is a crucial part of tackling an allergy, and this can only be done if the trigger has been identified correctly with a good history and confirmatory tests, such as skin prick tests. Nasal allergy sufferers should see a doctor with skills in allergy to perform a skin prick test or an immunoglobulin (IgE) antibody test, which will help to diagnose an allergy to a specific substance or substances. Since IgE antibodies are unique to each allergen, tests are very good at picking up ‘sensitisation’ or the presence of these antibodies. However, any result must be carefully checked against the patient’s history, as some people might have antibodies that are not related to any of the symptoms. Doing the test is important, because it might just uncover an allergy that you knew nothing about and by avoiding it, could significantly reduce your symptoms and improve your quality of life. Importantly, if you are not ‘sensitised’ to an allergen, avoiding it will make no difference whatsoever. Hayfever symptoms vary from person to person, but typically include an itchy, runny or blocked nose, watery eyes, sneezing, coughing, scratchy throat, postnasal drip and/or fatigue. In general, there is a huge misconception that if someone sneezes a lot, they must have pollen-induced hayfever, when it could be due to many other allergens such as dust mites, pets or cockroaches. The most commonly inhaled allergens are:

• different types of pollen (from trees, grass, weeds and flowers) • house dust mite • cat and dog dander • cockroaches • fungal spores Other triggers that could worsen symptoms include: • Strong perfumes and cold air can trigger nasal symptoms by nonallergic mechanisms • Red wine – alcohol is a vasodilator, which widens your blood vessels and can cause a runny or stuffy nose, but wine in particular can exacerbate symptoms because it contains sulphites. Red wine is highest in sulphites and is fermented with grape skins, which contain a protein allergen. • Veggie drawer – some fruits and vegetables contain proteins similar to those found in pollen, which can confuse your immune system. • Swap contact lenses for glasses on high-pollen days since dust and pollen can stick to contact lenses, trapping allergens against your already itchy and irritated eyes. • Swimming in chlorinated pools may irritate your airways, which could aggravate allergy symptoms. • A humidifier is a reservoir for mould and bacteria, so clean it regularly to get the maximum relief from this device. One can treat nasal allergies with antihistamines, which prevent histamine from attaching to your cells and causing symptoms. A decongestant can also be used to reduce the swelling in the nasal passages, but the latter could cause a rebound effect if used for longer than the recommended three to five days, which could end up making you even more congested, so use only as directed. GONUBIE PRIMARY SCHOOL School Play During the first week of the school term, GPS put on the play Freezeland (adapted from the movie Frozen). Taking the lead roles in the play were Paige Schonknecht, Matthew Bedser, Jade Sangerhaus, Lianel van Niekerk, Anam Kondile and Mahle Qina.

Graad R’s besoek hospitaal Die twee Graad R-klasse het die Lifehospitaal in Beaconbaai besoek. Hulle is op ‘n begeleide toer deur die hospitaal geneem en het sommer baie nuwe dinge geleer, onder andere om te sorg dat jou hande altyd skoon is. Ons glo na dié uitstappie sal niemand meer bang wees vir ‘n hospitaal nie.

Soms is dit baie lekkerder om eerder jou bene te verf as op die papier.

Showcase of Voorpos talent We ended off the third term with a vibrant showcase of Voorpos talent. The delighted audience was taken on a trip around the world, with the highlight of the evening most definitely being the hip hop item performed by a few brave staff members. Thank you to the cultural department for a most entertaining evening!

BEACONHURST SCHOOL Heritage Day Diversity was the name of the game as Beaconhurst celebrated Heritage Day. The Primary School learners enthusiastically presented plays, poems, folktales, traditional dances and musical items from different cultures, while the High School held a best traditionally dressed competition.

Beaconhurst Kingfisher Festival On 10 September, Beaconhurst hosted its fourth annual Kingfisher Festival. Despite the challenging weather, spirits were high. Thanks to generous sponsors and the unwavering support of all those who attended. The events was once again a great success!

Legal Eagles Beaconhurst High School Moot Court learners placed first in the Eastern Cape after the Moot Court Provincial Round at Walter Sisulu University in Mthatha, and finished 2nd in the country when they participated at National level from 5 October in Pretoria.

Gr 7s Outdoor Tour 2016 George Randell Primary Grade 7 learners visited Oudtshoorn and Knysna for their 2016 Outdoor Tour. It was a jam-packed educational and fun-filled five days and a great experience for all! This was a truly wonderful way to end one’s primary school education!

Girls’ Cricket The first round of trials for Girls’ Cricket took place recently. Some very talented players came forward and it is a pleasure to work with passionate coaches and girls giving 110%, desperately wanting to be selected for the squad. Girls’ Cricket fixtures will start early in 2017.

Loyolo Kilani demonstrates the nearly impossible feat of navigating one’s way through a tunnel. They visited the Cango Caves, squeezing through the tiny tunnels, as well as learning about the rich history of the caves.

The tour included a visit to Highgate Ostrich Farm and ostrich rides, as well as learning a great deal about these fascinating animals.

At Windgevandel Holiday Farm they enjoyed camel rides, boat rides and team building activities.

Bonke Keti played an extra on Impendulo and will be appearing on YoTV next year. She travelled to Joburg to take part in this exciting acting opportunity. She enjoyed the experience and will be returning to Joburg next year for more screen time. She has also been accepted to the National School of Arts. Well done, Bonke!

Cambridge is embarking on the 2016 Novel Writing challenge. 20 students and three staff members will be be trained during October and write books in November. If you or your school are interested in taking part in this amazing challenge, email rvalentine@ cambridgeprimary.co.za.

Prize-giving Cambridge High School held their annual prize-giving on Monday, 10 October. In attendance was guest of honour, Mr Michael Williams, and his wife, Ms Ettie Williams, head prefects Ethan Bessenger and Elaine Barnard, and newly-appointed headmaster of Cambridge High School, Mr Spencer Welman. Mr Williams lives in the Western Cape and is a highly-acclaimed novelist and playwright. He is responsible for penning titles such as Who Killed Jimmy Valentine?, Hijack City and The Eighth Man, which form the Jake Mulligan mystery trilogy. He is currently the director of the Cape Town Opera at the Artscape Theatre.

The Unparallelables lived up to their name and came in first place in the U19 age category of the SA Schools National Adventure Race Championships. Zachary Swart, Josh Swinney, Johan van der Walt and Nicola Swart finished the gruelling running, cycling, kloofing, wading course in 8hrs 52 minutes, 36 minutes ahead of their fellow Lilyfontein learners in second place.

Phillip Nel took 4 wickets for 16 runs in 3 overs bowled. Stirling followed and scored 118 runs for the loss of 4 wickets and won the match by 6 wickets and Robin Jonker scored the most runs 29. T20 v Howick Howick batted first and were all bowled out for 113, Tyler Pitcher taking 4 wickets for 9 runs. Stirling passed the score with 3 wickets down; top scorers Tyler pitcher 22 not out and Phillip Nel 29 not out. T20 v Wartburg Wartburg batted first and scored 119 for 6, Phillip Nel took 4 wickets for 15 runs in 3 overs. Stirling went in to batt and scored 122/3 winning the match by 7 wickets, Phillip Nel scored 52 not out. 50 over match v George Campbell Stirling batted first and managed 178/ 10 after 49.1 overs. Daniel Berndt scored 54 and Kyle Deetlefs 25 runs. George Campbell were all out for 122 and Stirling won the match by 56 runs.

Water Polo Clarendon High School hosted the Stayers u/15A and 1st team Water Polo Tournament. Our 1st team placed third overall. Clarendon u/15A faced Clarendon u/14A in the final. A well matched, outstanding game from both teams led to a draw. The winner had to be decided on a penalty shoot out. The u/14A team (below) won the shootout and were placed first in the tournament.

On 31 August, 14 learners from Hudson Park High School exchanged with 14 Bhongolethu students for the day to experience a day at each school respectively. The learners thoroughly enjoyed the experience and could not stop talking about what they had done and the friends they had made. We prepare children for Grade 1 & instil the love of learning Learn and Play has well qualified teachers. 3 qualified primary school teachers, 2 studying for B Ed degrees, 2 qualified pre-primary school teachers and 2 completing N6 in early childhood education. We have a warm, loving environment that provides the stimulation for learning. Pre-primary children do a school readiness course and a basic computer course that involves educational exercises and follow CAPS. Assessments are done regularly and reports are completed twice a year. We take children from 15 months through to and including 6 years old. Security and safety of the children is important and we have 36 CCTV cameras covering classrooms and playgrounds. Our times are from 07h00 till 17h15 and we remain open throughout the year only closing over the Christmas holidays. Parents interested can pop in any time to see for themselves.
