Prawn Crystal Spring Rolls Serves 6 I learned to make these at the home of a tipsy boatman on the banks of the Mekong River. They are utterly delicious – fresh, crunchy and tasty – and are really easy to make, even though they take a little time to put together. Get someone to give you a hand soaking the rice paper. The trick is to soak one at a time, as they are very delicate, and by the time you have filled one, the next one will be ready to roll with a little help from a friend.
INGREDIENTS Dipping Sauce • ½ cup rice vinegar • ¼ cup boiling water • ½ cup castor sugar • 1 Tbs fish sauce • 2 small chillies, chopped • 1 Tbs chopped fresh coriander • 1 tsp sesame oil • 1Tbs finely-diced fresh cucumber
Spring Rolls • 24 prawns, deveined, lightly steamed and shelled • 1 cup finely shredded red cabbage • 1 large carrot, peeled and thinly julienned • 1 cup freshest bean sprouts • 1 medium English cucumber, julienned • 24 large fresh mint leaves • 24 fresh basil leaves • 12 coriander sprigs • 24 butter lettuce leaves • 12 dried rice paper rounds
METHOD • Make the dipping sauce first. Place the vinegar and water in a saucepan over medium heat and add the sugar, stirring to dissolve. Bring to the boil and let it bubble away for a few minutes. Remove from the heat and stir in the fish sauce and chillies. Stir in the chopped coriander, sesame oil and diced cucumber when cool and set aside. • To make the spring rolls, place one rice paper at a time in a bowl of warm water to to soften it slightly. Remove to a flat surface and place a little red cabbage, carrot, a few bean sprouts and some cucumber in the centre of the rice paper and top with two fresh mint and basil leaves and a sprig of coriander. Now top with two prawns and a lettuce leaf. If the leaves are too big, trim them to size. • Fold in the sides of the rice paper and gently roll up nice and tight. Do the same with the remaining rounds of rice paper. Pack onto a tray with enough space between them so they don’t stick together, and cover with a damp clean cloth. • When you are ready to serve, slice the rolls in half diagonally, place on a plate and serve with dipping sauce I sometimes make these with shredded duck breast, rare thinly-sliced beef fillet, shredded chicken breasts, or even leave out the meat and go vegetarian. If you can lay your hands on some Vietnamese mint, please add a leaf to your roll. Tip: You can make these up to two hours ahead – just cover them with a clean damp cloth to prevent them from drying out! © Taste The World with Jenny Morris 2013 –2015

Health & Wellbeing Pollen not the biggest culprit behind SA’s hayfever woes It’s the height of the hayfever season. Hayfever is a condition that affects approximately 30% of South Africans, but pollen might not be the main culprit behind your nasal allergy misery. For decades, hayfever sufferers have been led to believe that their condition is brought on by the amount of pollen in the air, but there are a host of other triggers too. Pollen could in many cases elicit a severe allergic reaction, but sufferers will be surprised to learn that their nasal allergies might not have anything to do with pollen spores. Pinpointing where and when an allergy occurs is vital. Even though the treatment might be the same in many cases, avoiding the source is a crucial part of tackling an allergy, and this can only be done if the trigger has been identified correctly with a good history and confirmatory tests, such as skin prick tests. Nasal allergy sufferers should see a doctor with skills in allergy to perform a skin prick test or an immunoglobulin (IgE) antibody test, which will help to diagnose an allergy to a specific substance or substances. Since IgE antibodies are unique to each allergen, tests are very good at picking up ‘sensitisation’ or the presence of these antibodies. However, any result must be carefully checked against the patient’s history, as some people might have antibodies that are not related to any of the symptoms. Doing the test is important, because it might just uncover an allergy that you knew nothing about and by avoiding it, could significantly reduce your symptoms and improve your quality of life. Importantly, if you are not ‘sensitised’ to an allergen, avoiding it will make no difference whatsoever. Hayfever symptoms vary from person to person, but typically include an itchy, runny or blocked nose, watery eyes, sneezing, coughing, scratchy throat, postnasal drip and/or fatigue. In general, there is a huge misconception that if someone sneezes a lot, they must have pollen-induced hayfever, when it could be due to many other allergens such as dust mites, pets or cockroaches. The most commonly inhaled allergens are:

• different types of pollen (from trees, grass, weeds and flowers) • house dust mite • cat and dog dander • cockroaches • fungal spores Other triggers that could worsen symptoms include: • Strong perfumes and cold air can trigger nasal symptoms by nonallergic mechanisms • Red wine – alcohol is a vasodilator, which widens your blood vessels and can cause a runny or stuffy nose, but wine in particular can exacerbate symptoms because it contains sulphites. Red wine is highest in sulphites and is fermented with grape skins, which contain a protein allergen. • Veggie drawer – some fruits and vegetables contain proteins similar to those found in pollen, which can confuse your immune system. • Swap contact lenses for glasses on high-pollen days since dust and pollen can stick to contact lenses, trapping allergens against your already itchy and irritated eyes. • Swimming in chlorinated pools may irritate your airways, which could aggravate allergy symptoms. • A humidifier is a reservoir for mould and bacteria, so clean it regularly to get the maximum relief from this device. One can treat nasal allergies with antihistamines, which prevent histamine from attaching to your cells and causing symptoms. A decongestant can also be used to reduce the swelling in the nasal passages, but the latter could cause a rebound effect if used for longer than the recommended three to five days, which could end up making you even more congested, so use only as directed. Golden Rules for Staying Safe this H After reporting that 60% of national and provincial roads in South Africa were in very poor condition, the Automobile Association of South Africa (AA) have listed some golden rules for motorists to observe before departing on their holiday this year. It is important to plan your trip and if you are aware of possible delays on a particular route or the general condition of the road you are about to travel on, driver frustration can be minimized because it will be expected. When traveling to remote areas, check with people at the point of destination what the expected road conditions you are likely to encounter and give them an approximate time of arrival – if you are delayed, let them know.

Please be aware that the holiday season is a time when many more drivers and pedestrians tend to be on the roads under the influence of alcohol and it is for this reason that motorists can expect higher levels of law enforcement in this regard.

The AA has listed the following guidelines to assist you on your journey and to help ensure you reach your destination safely: • Lights, indicators, windscreen wipers, brakes, steering, exhaust systems and tyres should be carefully examined for faults. • Motorists unsure about the roadworthiness of their vehicles can have a technical examination done at any AA DEKRA centre. • Always carry a spare fan belt and radiator hose in the boot; these could save time and money in the event of a breakdown. • Check insurance policies. Motor vehicle, householder and life assurance policies should be in order and kept in a safe place. • Newspaper and milk deliveries should be canceled and provision made for the care of pets. • Travelers should inform their nearest police station of the period that they will be away from home. • Families traveling an unfamiliar route must plan their journey, use major routes and try and avoid back roads. • Always wear your seatbelt and maintain at least a three to four second following distance. • Increase your following distance at night and on wet roads to six seconds or more. • Fatigue and eye strain can be avoided by making frequent rest stops; driver changes are advisable at rest stops. • Include safety breaks every two hours or every 200 kilometers traveled. • Cars should be locked when unattended, with no valuables inside where they can be seen by passer-bys.

Irish Dancing Championships
Scout Spong (Grade 9) is the youngest player on the Western Cape’s Women’s Ice Hockey Team. She was selected to represent Western Province in the 2016 Inter-Provincial tournament that took place from 24 to 26 September at Grand West. Scout was selected by her team mates as the MVP and then selected by the coaches and the national team staff to participate in the All Star Game, with selected players from all the teams combined together on the last day of the tournament.
Robyn White (Grade 11), Chelsea Chapman (Grade 11), Sarah Jeffery (Grade 10) and Cheyenne Kersting (Grade 8) participated in the 2016 South African Irish Dancing Championships in Johannesburg from 30 September to 2 October. Chelsea placed 6th (U16), Cheyenne placed 4th (U13) and Robyn (U16) and Sarah (U15) placed first in their categories. Sarah and Robyn are South African Champions in their age groups and will represent South Africa at the Irish Dancing World Championships in Dublin in 2017. Nkosi Albert Luthuli Oral History Competition Tamia Abrahams and Yvonne Makwara competed in the national round of the Nkosi Albert Luthuli Oral History Competition this week. It was the second time that both Tamia and Yvonne competed at the national level of this competition and their previous experience definitely stood them in good stead. Tamia placed 2nd and Yvonne ended in 4th place. Congratulations to both girls on representing themselves, their school and their community so well. HOËRSKOOL STRAND KFC HS Punt-Krieketfees Hierdie fees waaraan die eerste krieketspan gedurende die September-vakansie op Mosselbaai deelgeneem het, word as die grootste in Afrika gereken. Sedert 2012 is die HS Strand nog elke jaar deel van hierdie skouspel. 2016 sal altyd as ‘n besondere hoogtepunt in die HS Strand se krieketannale onthou word. Die Strand het daarin geslaag om al drie hulle voldagwedstryde te wen – ‘n besondere prestasie. Hulle het slegs die verkorte weergawe van die spel, die 20/20-wedstryd, teen HS Nico Malan van Humansdorp verloor. In die eerste wedstryd het die Strand met Wynberg, ’n krieketkrag in Suid-Afrika, se tweede span afgereken. Die Strand het hierdie wedstryd met 4 paaltjies gewen. In die tweede wedstryd het die Strand met die HS DF Malan afgereken en wel met 5 paaltjies. DF Malan is vir 130 lopies uitgehaal. Johann Laubscher het met 3 paaltjies vir 29 lopies uitgeblink. Mnr. Rudi Koertzen,’n gewese toetsskeidsregter met 108 toetse agter sy naam, het in hierdie wedstryd as skeidsregter opgetree. Hy het hierdie wedstryd as een van die aangenaamstes van sy loopbaan beskou. Dit is ‘n besondere kompliment vir ons skool se krieket. In die laaste wedstryd het die Strand die hoogaangeskrewe Oakdale Landbouskool met 8 paaltjies geklop. Oakdale is vir slegs 46 lopies uitgehaal. Wiehann Meyer het weer eens geskitter en 2 paaltjies vir 2 lopies laat kantel. Christopher Bodenstein het ongetwyfeld vir die hoogtepunt van die toer gesorg deur 6 paaltjies vir 6 lopies na 7 boulbeurte te laat kantel. Dit is inderdaad ‘n briljante vertoning.
Die span saam met Rudi Koertzen (links voor), ‘n SA-skeidsregter wat in 108 toetse wêreldwyd opgetree het.

Hoërskool Strand-leerder Michael Karpesteyn (Graad 9) is die nuwe Suid-Afrikaanse kampioen in Power Breaking (Martial Arts) vir seuns 15–17 jaar. Michael het op 1 en 2 Oktober as deel van die WP Sports Martial Arts-span aan die NMA/ISKA Suid-Afrikaanse Kampioenskap deelgeneem. Hy is ook opgeneem in die Protea-span om volgende jaar in die VSA deel te neem by die NMA/ISKA Wêreldkampioenskap te Florida.

Arendskild Baie dankie aan die matrieks van 1986 vir die nuwe skild wat hulle geskenk het. Die Arendskild is vir die eerste keer by die matrieks se afskeid en prysuitdeling in die stadsaal toegeken aan die leerder wat die meeste aksie geneem het om die trotse beeld van die skool in die gemeenskap en wyer te bevorder. Die eerste wenner was Tiana Coetzee.

PAUL ROOS GIMNASIUM 0/15A Tennis Baie geluk aan die 0/15 A-tennisspan van Paul Roos Gimnasium wat aan HS Stellenbosch se Gemengde 0/15-toernooi vir 2016 deelgeneem en gewen het. Die PRG span was verteenwoordig deur Wikus Robbertse, Ruben Fortuin en Paul Ellis. Die span het daarin geslaag om vir die derde agtereenvolgende jaar in die eerste plek klaar te maak saam met HS Bloemhof. Die toernooi, waarin die seuns 'n enkelspelwedstryd en 'n gemende dubbelspelwedstryd moet speel, is gekenmerk deur baie goeie tennis, veral in die laaste wedstryd teen Curro Durbanville. Die skole wat deelgeneem het was: • Paul Roos en Bloemhof • Meisieskool Paarl en Paarl Boishaai • Paarl Gimnasium • HS Stellenbosch • HS Stellenberg • Curro Durbanville Nadat al die skole teen mekaar meegeding het op 'n rondomtaliebasis, is Paul Roos en Bloemhof as die wenners aangewys. Curro Durbanville was tweede met slegs 2 punte agter PRG, en Meisieskool Paarl/Boishaai was in die derde plek. Wikus Robbertse is ook by die toernooi as die Beste Seun Speler van die toernooi aangewys. Baie geluk aan die 0/15-span!!

Toneel PRG se teaterproduksie, getiteld Vlug, het pas teruggekeer van Potchefstroom waar dit deelgeneem het aan die finale rondte van die ATKV-tienertoneel. PRG is benoem vir sewe toekennings en het weggeloop met die Beste Akteur, toegeken aan Hardus Van Staden. Die teks is geskryf deur Esther Von Waltsleben wat ook die regie behartig het. Die konsep van Vlug is geïnspireer deur die klassieke werk van William Golding, The Lord of the Flies. Die geselskap het bestaan uit 18 leerders: 13 akteurs en vyf tegnici. Die spanbestuurder, mnr. Jan-Hendrik Opperman, is bygestaan deur mev. Christine Canaris. Die groep het in die eerste kwartaal op ‘n toneelkamp na Stilbaai gegaan waar ‘n groot deel van die vaslegging van die produksie gedoen is. Deur die loop van die jaar het die toneelstuk aan vier kompetisies deelgeneem (Namakwaland, Klein Libertas, Durbanville, ATKV), waarvan laasgenoemde die nasionale kompetisie is. By die 200 tienertoneelstukke het landwyd deelgeneem en Paul Roos was onder die Top 10 skole. Waarlik ‘n prestasie!
The Paul Roos Gymnasium Mountain Biking team qualified for the Spur Schools Mountain Biking Finals in the Magaliesberg from 7 to 9 Oktober 2016. This prestigious annual MTB event represents the cream of SA schools riders and is always a huge challenge for every rider and school. Paul Roos Gymnasium ended in a very credible third place overall to claim the bronze medal at this year’s event. One of the TOP 10 cycling schools in South Africa! More than 10 500 kids across South Africa competed in the Spur Schools Mountain Bike League season this year. The final consisted of 438 riders from 84 schools, who all wanted to pedal their way to victory, as the Spur Schools Mountain Bike League champions! The competition was tough, but the Parel Vallei cycling team showed true grit under the passionate guidance of Mrs Hanri Dalton, their coach. Parel Vallei claimed a second place in the mixed category and came 4th in the boys’ category (only 3 points behind Paul Roos). We are extremely proud of these results and thus of our place as one of the best cycling schools in SA! Individual results – girls: • Sub-juniors: 18th - Mikayla Forrester • Youth u/16: 7th - Carla Steyn • Junior woman: 10th - Jana Barry Individual results – boys: • Sub-juniors: 7th - Joshua Burger • Youth u/15: 7th - Ryan Kellerman • Junior men: 4th - Matthew Keyser, 9th - Joshua de Freitas and 22nd - Ivan Laubser We are also proud of the 5 Parel Valleiers who were selected to team up with other schools to represent the Western Province on the last day of this league. This SASC Inter-provincial competition, whereby the best 10 results were added to crown the winning province, was won by the defending champion North West with 242 points, Gauteng finished in a close second with 240 points, with the Western Province in third place with 224 points. Students Celebrate 13 years of schooling at Somerset College Nineteen Somerset College students got together to celebrate the 13 happy years they have enjoyed at their school. Seven of these students joined Somerset College in Grade 0, and the rest have been at the school even longer, as they attended the College Pre-Prep! There was much reminiscing that took place, particularly about some of their much-loved teachers and the fun goings-on in the playground. The College matriculants start their final Independent Examinations Board (IEB) matric examinations next week, for which we know they are well prepared.
