year ahead Gosh, January gone already and the joy of a relaxing break over Christmas is fading fast although I won’t forget our lovely fourday sojourn in New Plymouth where we viewed the Festival of Lights in the city’s magnificent Pukekura Park – lucky, lucky locals.

It seems beautiful Taranaki is often overlooked by tourists yet there is so much to see and do. We enjoyed great accommodation and service at the Novotel Hobson Hotel, we dined well – probably, too well – all around the town but especially appreciated waterfront venues and we loved the eight kilometre coastal walkway with its constant sea change.

But, now, it’s back to business as we start planning upcoming editions of SOUTH. Naturally, after chatting with well known interior designer, Rachael Buxton about her Parisian art adventure for this month’s edition, and also to Poco Loco’s head chef, Winika Hutchins about her Spanish experience, I am excited about the many more creatives we have within our own region.

magazine, SOUTH is committed to covering a wide range of topics and themes and while most are designed to bring only pleasure, this year we will endeavour to keep an eye on political shenanigans as the election rolls around. No doubt, all parties will be jostling to have their say and make their promises but just how much can be believed is the question – fun times to come!

National politics aside, SOUTH looks to also keep an eye on local infrastructure progress which affects us all especially as housing growth accelerates in the area. Indeed, it seems we have exciting, and possibly, trying times ahead, but in the meantime, why not relax with this month’s SOUTH and enjoy a, hopefully, satisfying start to the year.

POP-UP GLOBE’S ROMEO AND JULIET –

love’s heavy burden

What’s in a name? A rose by any other name may smell just as sweet but can a venue carrying (more or less) the same name as one of the most famous theatres ever built live up to its reputation? JON RAWLINSON went along to the Pop-up Globe to find out.

Shakespeare did not write his plays using big words understood only by highborn, highbrow, intellectual types; he wrote in a language of the streets, turning out bawdy, violent, action-packed blockbusters for the hoi polloi. Recently, I was pleased to me among the latest of the hoi polloi to experience a show made just for us.

With the Pop-up Globe set to pop off for the foreseeable future from late March, I felt compelled to take in a show while there was still time.

And, with Valentine’s Day coming up, I could think of no better early gift for my partner than to take her to see, perhaps, the greatest love story ever told.

story of passion and affairs of the mind as of the heart; the second edge to the sword of love is tragedy – and it cuts much deeper – where ‘violent delights’ result in ‘violent ends.’ The Globe’s troupe on the night scored hit after hit in this respect just for a start.

Although I’ve seen this play before, the authenticity of the venue promised to offer something extra, which it did. But, whenever any troupe attempts to deliver authenticity with regards to Shakespeare’s work, it does so ‘armed against itself’.

The problem is simply that the audience is not from the 16th Century. But the producers of this show don’t just give up and

ignore this stumbling block; instead, they’ve included some contemporary touches – from props and costumes to lines and off-script jokes.

to be performed – that’s where all involved really earned their standing ovation.

While decking out the apothecary as a ‘gansta’ drug dealer was spot on for me, a balcony scene with one young lover dressed as a banana and the other as a strawberry was just a bit too much, even though I knew it was meant to be performed in masquerade attire, lending a degree of childishness and joviality to the scene.

The Globe team did not come to revere Shakespeare’s work; they came to enjoy it (as any live performers of any type should) thereby fuelling the audience’s delight which, in turn, spurred the cast on further. This enchanting, ever-upward cycle is what can make theatre so special – ‘Old Bill’ fully appreciated this is, which is (largely) why we’re still reviewing his plays to this day.

The result was a show that may not be faithful to every last detail but, more importantly it was faithful to the spirit in which the story was written and was intended

So, adieu and thank you, Globe, your parting really is such sweet sorrow. Apologies for such an obvious closing line but the phrase fits like a glove. south | february 2020 | 5

With Acacia Cove Retirement Village

Acacia Cove Retirement Village, established for some 21 years, has built a reputation for occupying an idyllic location bounded by the estuary at Wattle Downs and handy to the golf course across the road. SOUTH talked to manager Bruce Cullington about the range of living options and the environment which has made this an award-winning village.

Tell us about the accommodation makeup at Acacia Cove – does it offer apartments, units, villas or individual rooms?

We have 217 villas and 15 apartments.

These days people live longer so are retirement resorts/villages attracting younger retirees and do some of your residents still work?

Our average entry age is 72 years so, yes, many of our residents are still in paid employment and many others do voluntary work at hospice, Meals on Wheels, St Vincent de Paul, Riding for the Disabled and other organisations.

What type of communal facilities within the village environment does Acacia Cove offer retirees living there?

We have a bowling green, indoor swimming pool, village green, snooker table, craft room, meeting room, bar, library, hair salon, restaurant and dining room.

It is well known that staying active and having special interests encourages wellbeing and mental health, do you offer an actual programme of activities within the village and if so what do they include?

We have approximately 30 regular activities which are predominantly run by resident volunteers. The activity programme is regularly reviewed to ensure that activities offered are good for the mind, body and soul. These include outdoor bowls, indoor bowls, water aerobics, table tennis, golf, petanque, walking, snooker, whist, darts, osteo-exercises, a choir, tai chi, meditation, art, housie, a men’s group and several card and board games. www.southmagazine.co.nz

Acacia Cove’s Active Ageing Programme’ won an award at the Eldercare Innovation Awards, (part of the 8th Asia-Pacific Investment Forum in Singapore). You were the first New Zealand village to win an award at this competition so what does that mean to you?

It reinforces the fact that so many resident volunteers have created and manage a diverse range of activities so that their friends and neighbours can live longer, healthier and more balanced lives.

What about the social life outside of the village – do you organise outings such as day trips or to public concerts? Do some residents organise their own group outings beyond those organised by management?

Our social committee arranges regular special interest trips.

However, many of our residents belong to outside organisations such as Probus, U3A and gardening groups and, therefore, lead quite busy and active social lives.

What is it about life at Acacia Cove that attracts residents?

How liberal is their lifestyle? Are there any restrictions on what they can do or the hours they keep?

Prospective new residents often comment that they can feel that the village is different from others the moment they drive through the gates. They remark on its low density, beautiful grounds and how positive

and happy everyone seems. Most residents are able to come and go as they please just as if they were living in the wider community. They advantage is they live in a safe environment where assistance is on hand if needed and difficult chores can be taken care of. We encourage residents to live as full a life as possible.

Is there anything new on the drawing board for Acacia Cove?

We are continually looking at ways to improve our services.

Does Acacia Cove have a hospital wing? If not what is the procedure if someone needs hospital care, especially long term?

We do not have care on site but several years ago the village owners sold land opposite the village to Bupa NZ Ltd with the proviso that our residents had priority. This has been very successful.

To Paris with love Rachael Buxton is well known as an interior designer, retailer, body builder, and artist….

Oops, so some readers didn’t know this talented local (who has just moved her eclectic fashion, homeware and gift business out of the Old Karaka Church), was an artist. HELEN PERRY didn’t either but on learning about Rachel’s hidden talent she delved further.

What artist with a thirst for learning would turn down a chance to study in Paris? Not Rachel Buxton, that’s for sure.

After 22 years as an interior designer, who is still passionately involved in the industry, she confesses that, for a long time, her creative mind has steered her towards painting.

“Even as a child I was artistic but at my school art wasn’t especially valued as a career. Instead, I ended up studying genetic engineering at Canterbury University then did a post graduate marketing degree before working in the pharmaceutical business. I was miserable.”

Rachael’s discontent was the catalyst for moving to London to study interior design and she subsequently set out on the path she has followed for two decades.

But the call to canvas was never far from mind even though her energy and athleticism steered her down various other paths – competitive body building for one.

“But last year I began talking about doing what I’d wanted to do for a long time – explore my desire to paint.”

Rachael applied online for summer school at the Paris American Academy, an affiliated tertiary member of the Ecole des Beaux Arts in Paris – “I never expected to be accepted,” she admits.

Nevertheless she sent in her portfolio and then went about her daily life here.

“But blow me down, I then received notification I had a place on the four-week course, one of five students – two from Georgia, who had won a national art competition,

two 21 year old students from St John’s University in Boston and me.”

But perhaps Rachael’s good luck (as she calls it) wasn’t entirely surprising. In 2016 she entered three pieces of her work in the Franklin Arts Festival and took out second place in her category with a portrait of her daughter, Olivia.

So, on hearing the good news from France she set about making her way there in July last year.

“I remember arriving early at the first class and was chatting with the tutor when he asked if I was looking forward to the sculpture classes.

‘What sculpture?’ I asked. I didn’t know anything about that. The course I’d seen [from the previous year] only mentioned painting and drawing.

“I quickly learnt I was in for a lot more during that amazing four

weeks. Learning to sculpt was a medium I’d not worked in before so it was a baptism by fire!

Working initially with wax, then plaster and finally in bronze before adding the patina, Rachael admits the whole process proved extraordinary.

“We had just done a life drawing class with nude models – that was a challenge in itself; very intimate and I had to train my mind to switch off from the nakedness and concentrate on the body.

“Fortunately, when set a creative task in the sculpture class, I still had the human form in mind so I decided to go with that. Having done body sculpting [building], bodies were something I knew about; I understood them and felt I could bring that knowledge together in my first attempt at sculpting. www.southmagazine.co.nz

And, indeed, Rachael’s piece clearly portrays a well formed, young woman seated with legs tucked neatly to one side, a project she is proud to have completed successfully.

“However, what I found absolutely astounding was learning the patina process from Carlos, an acclaimed sculptor who I saw pictured carrying out restoration work on the bronze equestrian statue of the Sun King, Louis X1V at the entrance to Le Chateau de Versailles.

“I kept thinking, here’s me, raised on a Canterbury farm far from Paris, learning from such an esteemed artist. Amazingly, he never once made me feel inadequate in my efforts. Carlos barely spoke a word of English so we communicated via gesture and google translate.”

“Back in the studio and in my apartment, I was already working in acrylics but Paris was in the middle of a heat wave – more than 40 degrees each day – so this wasn’t a suitable medium to work with at that time; the acrylic dried too quickly.

“I had to switch to my preferred medium, oils, and spent most of my evenings painting until 3am. I was in my element; time meant nothing.”

Now that she is home again Rachael says her goal is to pick up on her art and run with it.

“There are so many avenues to explore and, sometimes, between sport, parenting, my business – I am presently seeking new premises in Pukekohe – plus a new home and garden to keep under control, I wonder if there is time.

“It’s really a case of setting

boundaries for myself and, despite liking a lot of things, a lot of different things, I am a goalfocused person keen to explore my creativity; even have an exhibition later in the year.”

What’s more, Paris has provided Rachael with plenty of inspiration.

She says during a visit to Monet’s garden she was as galvanised by the house as she was the garden.

“Although heading towards another decade, I have so much energy; I’m still in the exploration stage of using art as an extension of my life.

“His [Monet’s] use of vibrant colours in a sombre era dominated

by Queen Victoria’s mourning, then becoming more lively during her son, Edward the V11’s reign before being subdued again by the First World War, was remarkable.

“I want to probe my creativity and Paris certainly set me on a new pathway. To return there is part of the plan but then so is opening my new interior design store in Pukekohe, embracing sport – I’m an active member of the Waiau Pa, senior women’s hockey group, too – and being a parent to my 11 year old daughter, Olivia.

“This adventurous use of colour impacted so profoundly that on returning home I found myself using similarly brilliant tones to paint some bookcases. It shows the power of art gets into your soul

Myanmar South East Asia has always appealed to CARMEN BIRD so when she and friends had an opportunity to visit hot and intriguing Myanmar, she quickly signed on for 10 days of exploring.

Myanmar is a country in political turmoil. With its Prime Minister, Aung San Suu Kyi, previously under house arrest for some 15 years, and the military having control of the land, we chose, for safety reasons, to stay away from the borders. Instead we visited Yangon, Bagan, Mandalay, Kathaw and Inle Lake, all incredibly interesting and all so very different.

pronounced Mou Mou – nothing sounds as it is spelt – even the local currency, ‘kwat’ is pronounced ‘jet’ which was very confusing.

We flew Singapore Airlines and after a quick stop over at the airport, followed by a 2 1/2 hour flight, we landed in Yangon. Our first day in the city was an assault on the senses; a glorious mess of chaos, food, temples, people, markets and apartments as far as the eye could see. Not to mention the traffic!

The food was an eclectic mix of flavours influenced by the cuisines of India, Thailand and China. We tried several curries, Shan style rice, aubergine salads, papaya salad and tea salad all served with a variety of sauces and loads of chilli.

Local guides in every location were outstanding, articulate and knowledgeable. They went out of their way to proudly show us around their country.

Lunch at Rangoon Tea House provided our first taste of Burmese food, a delicious meal washed down with local beer, Myanmar Premium.

Everything we ate was delicious, tasty and fresh. Moreover it was cheap. For example, dinner accounts, which included beer, sometimes amounted to just $7 per person.

Of course, it was no surprise that, like many Asian countries,

Myanmar was a land of temples, pagodas and stupas, the most famous being Shwedagon in Yangon. It was spectacular, an absolute masterpiece of architecture, much of it adorned with gold and thousands of jewels, estimated to be worth 3 billion dollars; a crazy juxtaposition of life when so much of the country lives in poverty.

More than 90 percent of the population is Buddhist and the country is covered in temples with statues of Buddha in all shapes and sizes, many coated in gold and all incredibly awe-inspiring.

After meeting kind, lovely and gentle people I gained a newfound respect for Buddhism even from my atheist perspective.

I also came away with a new respect for local dress. Because it wasn’t appropriate to show too much skin our group was keen to respect local ways. Therefore, it wasn’t long before my cut off denims were left in my suitcase

and, instead, I splashed out on several ‘longyis’ or sarongs, at about $5 each. I wore these for most of our journey.

Our time in Yangon was also spent at local markets, visiting more of those fascinating temples and wandering streets lined with food stalls which served up virtually every bit of animal you could imagine, usually cooked on skewers. However, there was plenty of beautiful, exotic fruit and vegetables, too.

We also hopped on board a tuk tuk to visit a lacquer shop, our first introduction to the wonderful craftsmanship of the Burmese people. A train ride with locals was another revelation or, perhaps it was us who were the revelation – local commuters constantly marvelled at our foreign looks especially friend Frances with her curly, blonde hair.

complete change of scenery. Far from the hustle and bustle of the city we instantly fell in love with the countryside.

Recently named a UNESCO World Heritage Site, it was made up of plains and fields dotted with stupas, temples, pagodas and ruins of buildings many of them built in the 11th and 12th centuries.

At one time there were 10,000 of these architectural wonders; now just over 3000 remain.

Although Bagan is famous for its sunrise hot air balloon flights, unfortunately, after a 4am start, a bus ride and a safety briefing, the weather was not on our side so our balloon flight was cancelled.

It has now been relegated to my bucket list.

Walking around the dusty streets of Bagan was a step back in time.

the age of nine years to create an elongated neck. Because this disfiguration can cause physical problems, it is becoming a dying tradition.

A visit to a local village and school revealed another world to ours.

Huge cows were tethered next to houses; older women sat on dirt floors smoking tobacco rolled in corn husks while they cooked meals over open fires and school children welcomed us with singing and dancing.

It was hard to leave magical Bagan but the city of Mandalay called.

The central Mandalay Palace, surrounded by a huge moat, has been built on the Irrawaddy River.

We took a boat trip across the river and spent a day sightseeing by horse and cart, visiting markets, a monastery and more temples.

Everywhere we went, the craftsmanship of the Burmese people impressed. We saw numerous traditional family

businesses where skills had been handed down through the generations.

In particular, we were impressed by the silk and lotus workshops where the lotus was meticulously sliced then twisted into fibre ready for weaving. The yarn was woven on huge wooden looms with foot pedals made from solid tree branches.

We also saw gold paper being made by artisans who beat the gold with huge mallets for hours to create paper. Add to this beautiful wood carvings as well as jewellery making and it was difficult not to be awestruck.

Then there was the jade – heaps of it! Street vendors and hawkers sold jade everywhere and we all came home with jade bracelets, cheap at about $5 each.

Finally, our last stop – Inle Lake. It was the most interesting place with wooden houses built on stilts and

floating gardens dotted around the lake. Home to the famous Intha – ‘one-legged’ fishermen – it was an absolute highlight to see these men fishing from canoes with huge nets while balancing on one foot.

With so much to see and do on the lake, we travelled everywhere via long, motorised canoes calling at different villages and markets. We saw more amazing craftspeople makes the likes of bags, hand crafted silver and gold jewellery, hand woven silk and lotus plus incredible hand painted art works.

Once again there was jade, jade and more jade.

Myanmar proved to be an incredible country and, for this a photographer, one of the most picturesque she has visited.

Vibrant, welcoming and colourful, its people were truly beautiful. A magical, spiritual place, it tops all the other countries I have visited to date, now earning the title of, My Favourite; perhaps it will be yours too. south | february 2020 | 15

During winter last year HELEN PERRY enjoyed a girls’ weekend in New Plymouth and despite wet, blustery weather, she was enchanted by the city. However, because outdoor activities were restricted, she determined to go back in summer and returned – with husband in tow – during the recent Christmas break. There was plenty to delight.

Poor weather last June meant missing out on some of New Plymouth’s prime beauty spots.

This time I made sure we visited those previously overlooked.

FESTIVAL OF LIGHTS (Pukekura Park): Ten years ago, during an overnight stopover in New Plymouth, I planned to view Pukekura Park’s Festival of Lights.

Pouring rain meant it wasn’t to be.

With time and weather on my side in December, this amazing 52ha park was top of my ‘must visit’ list.

A Garden of National Significance, it lives up to its reputation as New Zealand’s premier botanical gardens – unbelievably beautiful with such diverse plantings.

We chose a Sunday evening to view the lights and although we were among hundreds wandering

the tracks, we moved comfortably.

Displays were many and colourful, prompting constant exclamations of wonder. We took it all in, but, perhaps, my favourite park viewing occurred the previous day when we took the…..

PUKEKURA PARK BUGGY TOUR: Prior to seeing the lights we decided to do a reconnaissance walk around the park grounds, familiarising ourselves with the various dells and walkways while also exploring the fascinating fernery. After a cuppa at the Tea House, (gifted to New Plymouth in 1931) overlooking the lake, we jumped aboard the 45-minute buggy tour for just $5 each – wonderful.

at water’s edge, this café was intimate, rustic and loaded with character; we could have been relaxing in a Greek fishing village. Two glasses of wine and a generous serving of fresh (really fresh) panfried gurnard with a Persian salad – cherries and grapes in the mix – and we were well fed.

We planned to return but the next day decided to try….

GUSTO RESTAURANT, CAFÉ & BAR: Just metres form Manou’s and, again, perched right on the water, what Gusto lacked in character (it was spacious and airy,) it made up for in its menu.

I could not fault my delicious, flambéed chicken livers with smoked manuka bacon, field mushrooms and caramelised onions served on potato croquettes, finished in a balsamic

and brandy cream sauce topped with kumara thins. It was to die for and just $22. Husband ordered the Manuka smoked fish cake served with wasabi mayonnaise, fresh Gusto salad, chilli flakes and capsicum pesto, topped with a hollandaise-coated poached egg, finished with lemon infused olive oil (also $22.00). We relished every mouthful and talked wistfully of a day when such dishes might appear on Pukekohe menus!

What’s more staff members were all so obliging – in particular, Pania’s smile and enthusiasm for her role, (despite being rushed off her feet by a packed house), gave us the warm fuzzies. I’d go back tomorrow.

And, on that note, I’ll say goodbye to New Plymouth but, for sure, I’m going back. south | february 2020 | 17

Gap Year in Ghana A lifelong dream to do volunteer work overseas has come true for ACG Strathallan’s 2019 Head Girl, Erin O’Mara.

Warm-hearted 17-year-old, Erin O’Mara, has received a Zonta International Young Women in Public Affairs Award scholarship.

This allows her to travel to Ghana for six months to teach children in the small village of Gomoa.

“I’m so excited to meet the children who I’ll be helping in Gomoa. I can’t wait to fulfil my dream and to push myself right out of my comfort zone. It will be interesting to see how much I’ve changed when I come back!”

“I’ve always wanted to travel and volunteer overseas, and I thought why not do it when I’m young. I’m super excited, but terrified as well,” says Erin.

One thing that’s unlikely to change though is Erin’s unwavering desire to benefit others.

“I’ve always wanted to help people in any way I can. I’m not sure what I’ll do once I get back from Ghana – I’m looking at sociology and cultural anthropology, as well as political science and psychology, so I can volunteer overseas working in humanitarian aid or for the UN.

“Receiving this scholarship means so much. It will help me pursue my dream and it has shown me that people appreciate what I do. To receive it was truly humbling as it made me reflect on my role and my purpose, and trust that I’m on the right path.”

Erin is passionate about changing lives for the better, and during the seven years she spent at ACG Strathallan, she has honed her leadership skills, built resilience and inspired others through her actions.

While these qualities will stand Erin in good stead for the future, she now has the chance to be a role model for children more than 16,000 kilometres away in a tiny village near Accra.

Diet: Specially formulated puppy diets meet their high energy needs and contain nutrients such as calcium and phosphorus in the correct proportions to aid their rapid growth. Have fresh water available.

Fleas: Year-round flea control is essential in preventing possible anaemia in puppies and skin disease in dogs.

Desexing: Female dogs can be desexed from four to six months of age before they come into season. Male dogs can be neutered (castrated) from five to six months of age.

Vaccination: Vaccinate against parvovirus, distemper, hepatitis and leptospirosis, plus kennel cough for those staying in boarding kennels. Start at six weeks of age with boosters at three to four week intervals, usually finishing at 16 weeks of age. Puppies are particularly susceptible to parvovirus, so limit your puppy’s access to public areas and other dogs until 10 days after the vaccination programme has been completed at 16 weeks. Adult dogs require a health check once a year along with appropriate vaccinations to ensure continued protection.

Socialisation: Between the ages of four and 16 weeks of age, puppies need to experience all types of situations and people in a positive, friendly way. Puppy pre-school is a great way to do this.

Registration & micro-chipping: All dogs must be registered with your local council once they are three months old and need to be microchipped within two months of this.

Detox a crock?

CONSUMER WATCHDOG CROSSES TEAS Detox teas may do little to nothing for one’s waistline but they are a waste of money and could do more harm than good, Sue Chetwin from Consumer NZ believes.

“These types of products make various claims about weight loss or ‘detoxing’ but they can be little more than laxatives in disguise,” she says. “You don’t need to buy a pricey tea to ‘detox’; your body is already primed to get rid of toxins by itself.”

Spirits are high amongst residents who have moved into spacious villas on the Karaka estate.

Both these two families are residing in villas while awaiting the completion of the first apartments.

“Over the years I’ve been part of horse racing syndicates; I’ve had a lot of luck, a lot of travel and lot of fun – one our of horses, Changeover, even won the New Zealand Trotting Cup in 2008 – very exciting.

“Although I’m still working with [well known horse transport company] Majestic, I’m no longer a part of any breeding or racing syndicate but my interest hasn’t waned.

"It’s wonderful to learn there will be others here with similar interests and background – that was important to me when I decided to buy my apartment.”

Like Bev and Jane Smith, Lorna says her move to the Karaka estate was motivated by a need to downsize, take more time to socialise and to enjoy a less hectic pace of life.

big winners Cooking competitions worldwide have launched prestigious restaurant careers so, given the chance to compete internationally, most trainee chefs would not refuse. Terrifying as that can be, one young local welcomed such an opportunity proving she has the talent to mix it with the best. HELEN PERRY reports.

There’s no trifling with truffles, those earthy, pungent somewhat garlicky and very expensive fungi which are difficult to farm and difficult to find. And, few know this better than Winika Hutchins, head chef at Pukekohe’s Poco Loco Restaurant.

Late last year this talented young woman, who is just starting her final year of training at Ignite College in Manukau, was chosen to compete at Cocinando con Trufa, the world truffle championships in Spain.

“We arrived on a December Friday and had the weekend to do some sightseeing and also to prepare for the first day of competition on the Monday – it was pretty nervewracking stuff.

Her role? To assist Alok Asanath, head chef from the Tasting Shed in a two-part cook off against teams from nine other countries – the USA, The United Kingdom, Ireland, the United Arab Emirates, Italy, Chile, Ecuador, South Africa and, of course, Spain.

Not only was the Concinando con Trufa, Winika’s first culinary contest it was also the first time she had travelled overseas – “that was an eye-opener.”

“Our first dish was based around truffle-infused lamb and included the use of chai mayo, truffle oil, lamb jus, onion puree, chewy sago and hazelnut crumble. I just followed orders – thank goodness for that!” she laughs.

“Teams were made up of a professional chef assisted by a culinary student,” Winika says.

“I was hugely excited but so, so nervous as I hadn’t actually cooked with truffles before.

“For the final we were given a mystery box which included both lamb and rabbit with truffles, of course. Although we didn’t win – honours went to Spain – I was still stunned that we made the final five; I thought we did really, really well.”

“That made the competition quite stressful especially cooking on a stage and not in a kitchen. But Alok was fantastic. At the end of the first stage, we had made it

to trainee chef then to head chef at the popular Mediterranean/ Spanish style tapas restaurant.

“It was pretty scary at first. Moving into the kitchen seemed a big leap and if it hadn’t been for my bosses encouraging me every step of the way I might not have followed this path,” Winika admits.

“I’m not sure what they saw in me but I’m glad they saw something!

They pushed me to go to college and Ignite has pushed me on my studies.

“I’ve now completed levels three and four and just have level five to go. I won’t finish until early next year because after the competition, Ignite offered me the chance to do a three-month internship at a Michelin-star restaurant in Spain. I never imagined this would be possible; now I go in August.”

Winilka says that on leaving Pukekohe High School at the end of Year 13 she had no real career plan.

“I’d just been winging it. Then, when I left school, mum said I had to get a job. That’s when I started at Poco Loco washing dishes.

Thank goodness I did. It’s now

a long way from where I might have been. I’m just so thankful for my family, the college, my bosses and my friends who have supported and urged me on.”

While Winika is now totally focused on furthering her career, she says starting study again was “a bit tough’ but adds nothing compares to the pressure of the competition in Spain.

“Having come as far as I have with my job and my study I thought I knew everything. I soon found out how much I didn’t know! Now I just want to learn more and experience more.”

Winika’s thirst for knowledge is, perhaps, the driver to her success. She works six nights a week and studies at Ignite College five mornings a week. She’s also prepared to sacrifice her Mondays off for work experience if it arises.

“Eventually I want to travel so I get more skills and more knowledge.

“I can’t wait to go back to Spain and work with chefs there. I have a lot to learn but I’m determined to keep learning and developing; beyond that I’m not yet sure where cooking will take me.”

• Dash of soda water • Strawberry • Ice Measure Seedlip Grove, cold tea, lemon juice and honey syrup into a glass. Mix well with a bar spoon.

Add a generous amount of ice.

Splash in a dash of soda water and stir. Garnish with a fresh slice of strawberry.

Add all ingredients into mix well. Add ice. Top with extra tomato juice if needed. Stir, then garnish. The garnishes are endless – we chose a slice of red capsicum, cherry tomato, sage and l rosemary. Alternatively, use a traditiona celery stick and olive, or go for native kawakawa.

This recipe works well by making it in advance in a large batch and keeping chilled in the fridge.

Make sure you don’t add ice or soda until serving, to ensure no dilution of flavours.

PARMIGIANA Most people are familiar with chicken parmigiana but, for a tasty alternative, try this delicious pork version – it’s sure to be a hit with the whole family.

Preparation Time: 40 minutes Cooking Time: 30 minutes

INGREDIENTS • 4 x NZ pork leg steaks, 1-2 cm thick • Few sprigs fresh basil, leaves and stalks separated, stalks chopped • Olive oil • 4 cloves garlic, diced • 1 onion, diced • 2 cups pasatta or tomato puree • 2 cups breadcrumbs • 1 tbsp fresh thyme leaves, finely chopped • 1/2 cup grated parmesan • 1 cup grated mozzarella • Finely grated zest of 1 lemon • 2 eggs, whisked • Salt and pepper • 1 tsp sugar • 1 cup plain flour

METHOD Heat a deep pan or pot to medium heat and sauté the garlic, onion and basil stalks in a little olive oil until soft. Add the tomato puree and sugar, and simmer over low heat for 20 minutes. Season with salt and pepper and set aside.

In a large bowl, combine the breadcrumbs with lemon zest, finely chopped thyme and half the grated parmesan.

Lay three plates out on your bench top, and place the flour on one, the whisked eggs on another, and the breadcrumb mixture onto the third.

Sure to be a hit with the whole family!

One by one, dip the NZ pork steaks into the flour, then egg and then breadcrumbs, remembering to coat all sides of the pork during each stage.

Heat olive oil in a deep pan over medium-high heat, and fry for 4 minutes on each side until golden brown.

Preheat the oven to 180°C. Place the NZ pork steaks in a baking dish and spoon over the tomato sauce. Sprinkle over the grated mozzarella, remaining grated parmesan and basil leaves, and bake for 20-25 minutes.

Serve with dressed rocket salad.

hydrangeas Hydrangeas may exude a sense of old fashioned charm but they are right at home in Kiwi gardens, adding add colour and form to the most modern landscape. Easy to grow and maintain they require some shade to ensure their vibrant colours remain bright.

Readers who have been out and about this summer, will probably have noticed hydrangeas flourishing not only in gardens but on farm boundaries and along country roads. What’s more, those lucky enough to have visited New Plymouth’s Pukekura Park in the past few weeks, are sure to have admired the amazing hydrangea blooms which come in such a diverse range of colours.

Flowering from early spring to late autumn, hydrangeas are in fine form and blooming marvellously in many places at present.

Natives of southern and eastern Asia, as well as the Americas, hydrangeas are found worldwide.

Although there are evergreen varieties, the deciduous shrubs are most widely cultivated.

A genus of approximately 75 species of plant, the most common variety of hydrangea here in New Zealand has been the pink or blue hydrangea macrophylla, also known as the mophead.

Mophead flowers are round in shape, rather large and are reminiscent of the head of a mop.

Other hydrangeas, commonly known as lacecaps, have flowerheads with less pronounced, flatter flowers.

characterising hydrangeas are directly related to soil conditions.

By applying an acid fertiliser, ammonium sulphate or aluminium sulphate, you can enhance those blue hues. Alternatively, if you prefer your hydrangeas to be pretty in pink, try adding lime.

Of course, today there isn’t just one shade of blue and pink – colours range from the lightest azures to deep violet hues while the pinks also amble from soft baby shades through to rich pinks bordering on crimson.

While raindrops keep falling on our heads it’s important to ensure hydrangeas don’t receive too much of what’s good for them as overwatering can lead to root rot.

If the rain is staying away in your area monitor plants regularly to ensure they are not drying out. A light misting will help if the leaves begin to wilt.

Available from garden centres, hydrangeas should ideally be planted in early summer, ensuring they won’t fall victim to frosts.

Choose an area in your garden where the plants will benefit from partial shade. Although they can thrive in sunny conditions, the flowers will live longer and develop better with a little shade. Prune back when all leaves have fallen.
