t’s time to paint, redesign, remodel. Time to refresh. Welcome to our annual renovation edition of Capital Home. With autumn around the corner and change in the air, reinvention of our personal living spaces isn’t only a necessary exercise, but a rejuvenating one. No matter what the project — whether it’s fresh colours for a few rooms or a complete down-tothe-studs remake — sprucing up your space can be a challenge. So we hope this issue provides some inspiration. Noted homes photographer Tony Colangelo leads off with some eye-catching projects he’s been tasked to shoot through the capital region. You can take several ideas from this mini portfolio and see the ďŹ ne work of local builders and designers. If you have a green makeover on your mind, the ‘net-zero’ waterfront home of a transplanted Alberta couple on Cordova Bay is the ďŹ nest example in Canada, where the house produces more energy than it actually needs. It’s in the sustainability stratosphere, but you can get an idea of where to start. We also feature a stunning makeover of what used to be a bland bungalow in Oak Bay and how

Always overshadowed by its famous sister city San Francisco, Kim reveals that Oakland — a city under constant renovation and reinvention — is full of surprises with its food, parks, architecture and history. A recent poll from CIBC indicates that 48 per cent of Canadians are choosing to renovate this year, spending $11,800 each on average. Homeowners in Ontario and British Columbia plan to spend the most at $16,000 and $13,200, respectively. The poll also says as many as 56 per cent of homeowners who plan to renovate are choosing to stay put and spruce up their space instead of

selling their current home and buying another. Twelve per cent want to increase the value of their home to sell. he first home in Canada to qualify under the new Net-Zero Home Labelling Program has just been completed in Saanich, and ironically, it was built by two Albertans who moved to the coast from Edmonton, the hub of this country’s petrochemical industry. “My wife and I kind of chuckle to ourselves when we think about that,” said Barry Buchkowsky, who was born in Edmonton and is definitely pro oil, having grown up in that environment. “It’s funny because we always had the impression that people here on Vancouver Island and in B.C. are very eco friendly and eco sensitive, yet here we are, Albertans, building a house like this. “There are many homes in Canada that are built to extremely high standards with solar panels and other systems, homes that have just not been recognized. But we do think it’s pretty cool that this is the first to have met all the new qualifications, and our house is in a dream location, too. We’re on the water in Cordova Bay, and we’ve also managed to fill our boots with what we believe in.” >

SOLAR PANELS AND A PHOTOVOLTAIC ARRAY ENSURE THE HOME PRODUCES MORE ENERGY THAN IT CONSUMES, EVEN THOUGH IT IS LOCATED ON THE CORDOVA BAY WATERFRONT AND HAS MOSTLY WINDOWS ON ONE SIDE.

The Canadian Home Builders’ Association in Ottawa recently announced that Victoria’s Falcon Heights Contracting had managed to create a Net-Zero house — a house that produces as much energy as it consumes. SEE SIDEBAR 4HIS UNIQUE BUILDING IS ATTRACTIVE AND STYLISH WITH A SWOOPING ROOmINE AND LOTS of glass, but like a high performance car, it’s real genius lies under the hood. Inside, this house boasts triple-paned windows and high-performance doors. The roof gleams with solar panels and a photovoltaic array, systems that heat domestic hot water and generate electric power, respectively. Walls and ceilings are filled with extreme levels of insulation, all the landscaping features permeable hard surfaces, there is an electric car charger, high performance HRV and Heppa filtration systems, an efficient ductless dryer and much, much more. The Buchkowskys always wanted to build an eco friendly, energy efficient home, but hadn’t imagined shooting this far into the sustainability stratosphere until they met BUILDER $AVE -AC+ENZIE OWNER OF &ALCON Heights. He had just taken Net-Zero training in Kelowna and suggested aiming for the prestigious new designation. > Capital HOME | 25

OWNERS ENVISIONED CURVED BEAMS TO MIRROR THE WAVES OF THE OCEAN.

“We had wanted our dream home to be the best it could be and as sustainable as responsibly possible with things like solar panels,” said Barry, an engineer. But this was another level altogether and they weren’t sure it was even possible since one side of their house would face the water and be almost all windows. But the builder said it was doable, and one year later the home was built with Net-Zero qualities only adding about 12 per cent to the cost. MacKenzie said the home had already been designed when Falcon Heights came on board. “In a perfect world the energy modelling should be done early on, jointly with the design planning, to avoid unnecessary delays and compromises,” but after 13 rounds of “gruelling” energy modelling they came up with a package. Changes included increasing the home’s R value performance with two-pound, closed cell spray foam insulation in the walls and ceiling. “We used a very dense product that is applied in layers to gave us an R value of 45 in the walls and 65 in the ceiling.” Next came a weather resistant air barrier of Typar building wrap, semi-rigid insulation which acts as a thermal break on the outside of both

walls and roof, rain screening and exterior cladding, which included a variety of finishes of rock, stucco, aluminum panels, local stone and cedar siding. The walls must to be able to breathe, he stressed. “Back in the condo days of not handling vapour barriers correctly we got a lot of rotting buildings, because of a lack of air transfer and overhangs.” “A forced air mechanical system was not the ideal choice here so we used a cutting edge technology air-to-water Gree heat pump system to provide radiant head and mild cooling. To achieve NetZero, you don’t want huge heating or cooling loads. You want to be warm inside in the winter, but you don’t want to be too hot in the summer because it takes electricity to run cooling systems.” And this is achieved with energy smart windows. MacKenzie said every home is different, as is every homeowner’s budget, “so you play with the configurations. It’s a balancing act of give and take to arrive at Net-Zero, how to get the best performance while staying with conventional building techniques. We didn’t want costs going through the roof. O MacKenzie, who is proud to be at the forefront of green building practices, said even if homeowners don’t plan to meet Net-Zero levels they should start moving toward that goal as the concept is being phased into the national building code. A project can include increased insulation values for instance, high performance windows and doors and the option of installing alternative energy source at a later date. MASTERPIECE ART-LOVING COUPLE TURN ‘BLANK-SLATE’ HOME INTO OWN PERSONAL WORK OF ART

W

alk by Ann Godin and Phillip Bourque’s Oak Bay home and you’ll think that it’s been renovated, but you might not be able to put your finger on precisely what was done. And that’s just the way the couple wanted it. “It was important to us to have the renovation fit the neighbourhood,” Godin said. “We want to be good neighbours, and we didn’t want the renovation to be ‘in your face.’ ” The grey and white house looks like a beach cottage, in keeping with its location a block from Willows Beach. And while the house still fits in with the neighbourhood, the renovation was dramatic. Only the living room of the traditional 1945 bungalow remains in the same location in the home. Gone are the smaller enclosed rooms of the original house. Now, the interior is open and flooded with light. Warm white walls provide a gallery-like backdrop for the couple’s art collection. Every bit of space on the 1,800-square-foot main floor has been put to use, along with the 600 square feet in the basement addition. >

Even with a window-ďŹ lled addition that created a master bedroom area and a basement area with eight-foot ceilings, the home is not large by some modern standards. “I’ve done too many residential condos to be wasteful of space,’ said Bourque, an architect, who designed the reno. He’s not a fan of large houses with wasted space. “This is sort of a modest house, but we did a lot with it. We like that from the street, it doesn’t look overly large. But when you get inside, it’s very open.â€? Bourque and Godin moved to Victoria from Calgary. They had a condo on the Gorge for ďŹ ve years and often holidayed in Victoria. After one of their trips, Godin realized she had had enough of Calgary’s cold weather, and the couple decided to make Victoria their home. Both have self-employed careers where they can work anywhere. Godin is a French translator and Bourque is an architect. The decision to move was much easier than actually ďŹ nding a new home to renovate. The couple wanted a house, not their condo, and looked all over the Greater Victoria area. They were looking for a property to renovate that had good bones and gave them lots of light. They also wanted to be within walking distance to cafes, restaurants and shopping. But the big draw was the lot. “We wanted one that faced west and got the south sun. We didn’t want a lot of trees or buildings around.� The property is on a residential street with neighbours all around, but had mature vegetation providing privacy. The couple toyed with adding another storey to the house, but decided against it. It would block the neighbour’s sun, and Bourque wanted to keep the lower form style of house traditional to the neighbhourhood. Godin’s priority was having as much light as possible brought into the house. While she had tired of Calgary’s chilly temperatures, she did miss its sunshine. >

So Bourque got to work, creating what is essentially a lantern in the middle of the house. He added gables to the house that create interesting peaks looking at the house from the front. Those gables also create a high-ceilinged ROOmINE WITH NUMEROUS WINDOWS THAT BRING light into the middle and darkest part of the house. The interior is done in white, soft greys and oatmeal, with lighter wood and metal accents that reinforce the sense of light and space. Corner windows in the dining room, living room, ofďŹ ce and bedrooms allow the light to mOW THROUGH “You get more light and you can see quite a bit further with even a small corner window. It expands the visibility inside the house,â€? Bourque said. “It also looks nice from the outside, a 1930s modern look, which I’ve always liked.â€?

“Marble is very soft and it scratches, but we’re not stressed about that,� Godin said. “It is part of the patina. We live with it and love it.� A small seating area at the far end of the kitchen is a cozy spot to watch the news while cooking and also has a lovely view over the back garden and pool. Bourque’s sister is also an architect who does a lot of residential renovations in Toronto. She gave them some good kitchen advice: buy your appliances early in the process.

“She said that as the project progresses and money dwindles, you’ll have to make compromises, and you don’t want to do that on appliances,� Godin said. The living room is in the same location and is the same size as the original. The couple likes its coziness. Although it is bright with corner windows, the ceiling isn’t vaulted. The room is warm and welcoming. “A room is like a garden. It tells you what it needs,� Godin said.

olour psychology probably doesn’t affect your life on a day-to-day basis — until you’re trying to sell your home. The colour of your walls can actually raise or lower the value of your property, a dollar amount that changes annually along with the year’s colour trends. Zillow recently examined more than 32,000 photos of sold homes, dissecting how certain colours impact their closing price. While some of the don’ts from 2016 still stand, 2017 has ushered in brand-new swatches of profitable paint colours. Here are the dos and don’ts of paint colours in 2017, as originally reported by MarketWatch.

DO: Keep it light. “Painting walls in fresh, natural-looking colours, particularly in shades of blue and pale grey, not only make a home feel larger, but are also neutral enough to help future buyers envision themselves living in the space,” said Zillow chief economist, Svenja Gudell. Homes with blue bathrooms, specifically lighter shades of blue or periwinkle, brought in about $5,440 more than expected. Similarly, light blue-grey kitchens sold for $1,809 more, while natural hues like oatmeal and pale grey consistently overperformed. DON’T: While a yellow kitchen brought in $1,100 more in 2016, the sunny hue is now lowering your home’s value by an estimated $820. Similarly, walls with no colour at all (read: stark white) had the most negative impact on sale prices. “Homes with white bathrooms, for instance, sold for an average of $4,035 less than similar homes,” noted Zillow. ome colour crushes come and go. Others develop into true love that lasts forever. That’s how I feel about the colour blue, especially when it’s paired with white. Blue and white is a cornerstone of my personal design style, and you’ll find it all over my home. Everyone falls in love for a reason. For me, and blue and white, there are a lot of things that make my heart hammer hard. It’s fresh and clean and feels new every time you use it. It’s timeless and classic, never out of style. It adds sophistication to a space. It’s easy to design with: so approachable and forgiving. It can add a jolt of energy or whisper calm. It pairs well with just about every other colour, from brown to green to red to pink to yellow. Need I go on? When I had my historic home, we held open houses several times a year, inviting people to make the trip to our quaint town to get ideas and inspiration. All the photos were taken at my home during one of my spring open houses. They capture the inventive ways you can use blue and white in your decor to create a mood. One of my favorite looks in my dining room where we hung amazing paper lanterns. We loved the playful touch they added, so we

suspended them from bamboo rods, using blue ribbons, then anchored them in two large white vases. It was a magical affect. We had a square tablecloth custom made out of this chipper fabric, then turned it on the diagonal at the center of the table. That’s one of my favorite ways to use tablecloths, because it allows you to add the colour and texture of textiles, yet still let the beauty of the tabletop shine through. The place settings are super simple: everyday white plates topped with a sweet blue and white salad plate. When I entertain, I like to put a surprise at each guest’s place, like this little gift, wrapped in a coordinating paper. I have collected blue-and-white serving pieces through the years, so we added them to our table. A mix of patterns makes the setting more interesting. I got some of the old platters for a song because they had a chip or crack. I’m OK with signs of age. I think it adds to their character. We carried the blue-and-white love out to my screened porch. I filled this old wooden plant stand with blue and white cachepots filled with live plants. Blue and white containers come in every price point, from inexpensive to investment pieces, so no matter what your budget, you’ll find pieces you’ll love. CH

aturated shades of celadon — a cool, calming colour that takes it’s name from 10th century transparent jade glaze — drench the walls of this beautiful Shoal Point condo and create a fitting backdrop for the homeowners, who enjoyed many years together in the Orient. “My Chinese name, chosen by my grandmother, also relates to this colour and means, I aspire to jade,” said Angela, an elegant and soft-spoken woman who is “crazy” for yellow and green, and dressed for this interview in celery-coloured silk pants and blouse. Her father soon decided to move the family to Taiwan where he joined the foreign ministry and was sent to Washington as a delegate to the UN, attached to the embassy. Shortly after separating from her ďŹ rst husband she saw a movie called The Year of Living Dangerously and thought to herself: “I could languish here or see the world. I was bored. ďŹ nish. The walls in almost all the rooms are now soft celadon, although the ofďŹ ce is pure white, with gleaming white countertops and cabinets. In the kitchen, the owners added granite COUNTERTOPS AND A PORCELAIN mOOR TILE THAT RESEMBLES natural linen. Over the sink, where a window looks out partially on a neighbouring suite’s wall she added glass shelving to display favourite small blue and white china pieces. “This is just the residual of my blue-and-white collection. I just kept a few pieces because I have now moved on to green and white. Nothing beige about me.â€? A hanging cabinet over the bar was added to separate it from the nook, and to also increase storage for glassware. Glazed on both sides and ďŹ lled with crystal, this new cabinet doesn’t block any light; in fact it adds sparkle to the kitchen. She kept the original cabinets, but changed several of the doors to glass, “because I love to look at my dishes.â€? Angela explained she did not grow up privileged, although her family was not poor. “My parents were strict and we had to work for what we got. They had grown up in tumultuous times during the war and experienced great hardship, losing almost everything when they escaped, so we were taught to be frugal, not to waste, to take nothing for granted.â€?

harmonious When she came to Washington at age nine, she didn’t speak English so she spent a lot of time looking at paintings and books, going to museums, listening to music and cultivating her own unique taste. She says decorating a house is like curating an art exhibition, and once she chooses a piece she usually has it for life. For instance, she gave her husband a threemetre long, 180-year-old alter table for a wedding present and it has gone everywhere with them. “With every move, I have had to source some antique people who can take it apart, as it will not ďŹ t in elevators. The last time, it was walked up the stairs. Luckily it has mortise and tenon joints so it comes apart with a soft mallet.â€? Made of heavy elm wood from south China, decades ago the piece would have been used in private homes for ancestor worship, and decorated with paintings, incense and fruit. She has decorated it with favoured pieces of porcelain and ivory collected by her mother as well as her husband’s great grandfather and grandfather, who was in the tea trade in China and Ceylon. In a sense it is still honouring the ancestors. In Hong Kong, almost anything can be custom crafted, so Angela had most of their soft furnishings made to measure and also ordered extra slipcovers, including three sets for her livingroom sofas. She chose fabric from the famous Jim

A JADE J JJEWEL Thompson company, a store which is renowned for its silks that also does linen and cotton upholstery for hotels and sells fabric from its warehouse outside Bangkok. “You can ďŹ nd the best fabrics for almost nothing there, for less than the cost of mailing them to Hong Kong‌â€? And so in addition to the ones currently on her sofas, she has a set in cream velvet with blue piping, and one with white Ming vases printed on a blue background. Among the many treasures in their home, hanging on the wall above the old alter, is a painting of white ducks. “After I arrived in Hong Kong in 1984, I was walking down the street and saw a man sitting with a selection of rolled up scrolls. He was asking 200 HK dollars for this, ABOUT #DN AND ) BOUGHT IT v 7HEN SHE TOOK the silk scroll to a frame shop the owner tried aggressively to buy it, seemingly enthralled by the inscriptions on one side. She didn’t sell, but had it appraised by Christie’s Hong Kong auction

house 25 years ago and it was valued at more than $100,000. “It was painted by the artist who founded the school of duck painting in China. It was a school, not as popular as the ďŹ sh school, but from the 3OONG 3UNG DYNASTY IN THE TH CENTURY /VER the centuries, different art historians had written inscriptions on the side to authenticate it.â€? Angela stressed she doesn’t have to spend a lot of money to love a piece. She spotted the two watercolours of women, now hanging in her front hall, in an old laundry in Hanoi. She fell in love with the paintings even though they were covered in dust and cobwebs, and asked if she could buy them. The bemused owner agreed. “Every painting here comes from a period in my life and represents something. The worth is not who did it, although some are treasures, but each piece reminds me of a different milestone. They represent something lasting.â€? CH

rchitect James Steel designed a new hilltop home for both of his parents — dad Bruce, mom Gloria — and, in the ultimate father-son bonding project, in true collaboration with his builder/ developer dad. “I took him a cocktail napkin and said, “That’s what I want to do,’ ” Bruce says. “My dad has a very strong vision of what he wants,” says James, principal of Steel Architects. “I was thinking what he would think.” The universal first thought: Bruce and Gloria’s previous home, in Gig Harbor, Washington, had turned threatening. “They had to navigate steep stairs and a bridge over a creek just to get to the front door,” James says. “This new house was designed around the idea of aging in place. It’s 2,800 square feet, all on one level, minimizing barriers as they grow older.” Even better, it’s in Tacoma — and Tacoma is home. >67

f you have some time on an autumn day and want to make something rustic and Italian for dinner, put on an apron, roll up your sleeves and make gnocchi. There are quite a few steps involved, but your reward will be pillowy bites of goodness that you can sauce and flavour in tasty ways. The culinary reference book, The New Food Lover’s Companion, says gnocchi, pronounced “NYOH—kee,” is Italian for dumplings. These dumplings are small and pasta-like and can be made from such things as potatoes or ricotta cheese blended with flour. Eggs or egg yolks are added to hold the dough together and ingredients such as Parmesan cheese are mixed in for flavour. My recipe uses potatoes and a tome called The Foods of Italy says that when cooking them you want to keep them as dry as possible as too much moisture will result in heavy, dense gnocchi. The book also notes that baking (russet) potatoes are best type to use for gnocchi because they have a low moisture content and baking them in their skins keeps them drier than boiling. In my recipe for homemade gnocchi, you’ll see that, once the gnocchi is formed, you can boil them ahead of time, cool them and then refrigerate them until ready to reheat and top with saucy, mini meatballs made fresh from Italian sausage meat. If saucy meatballs are not your thing, then try my second recipe which sees the homemade gnocchi deliciously tossed with bits of cooked squash, sage, garlic, Parmesan cheese, butter and olive oil. To further guide you on how to make gnocchi, I’ve provided some step-by-step photos on how to work and shape the dough. For a very hearty dinner, I like to serve gnocchi with crusty bread and a simple side salad.

2 1/4 lbs (1 kg) baking potatoes (about 3 large ones) 2 large egg yolks 1/4 tsp salt 1/4 cup freshly grated Parmesan cheese (not the dried, powdered type), plus some for the table 1 1/2 to 2 cups all-purpose our, plus some for the work surface 1 Tbsp extra virgin olive oil, plus some for greasing 1 1/4 lbs mild, medium or hot Italian sausages 1 (660 mL) jar passata di pomodoro (strained tomatoes; see Note) 1 cup chicken stock Preheat oven to 375ËšF. Prick each potato a few times with a fork, and then bake 65 to 70 minutes, or until very tender. Cool potatoes 10 minutes; until safe enough to handle but still warm. Cut each potato lengthwise in half and with a small spoon scoop out as much of the esh as you can into a bowl. Keep potatoes skins for another use or compost. Now push the potatoes through a ricer or food mill; thoroughly mash in the bowl by hand with a potato masher; or place in the bowl of your stand mixer and mash with paddle attachment until very smooth. The latter is what I did. Mix in the egg yolks, 1/4 cup parmesan cheese and salt. Mix in 1 cup of the our until well combined. Lightly our a work surface and transfer the dough on to it. Knead the dough, incorporating 1/2 to 1 cup more of the our, as needed, into a pliable ball that is still slightly damp to the touch, but does not stick to your ďŹ ngers. Divide the dough into quarters. Roll one quarter into a 3/4-inch (2 cm) diameter log. Cut the log into 1-inch (2.5 cm) long pieces. Flour one of your ďŹ ngers and make a deep dimple into each piece of dough. Roll the non-

dimpled side of each piece of dough over the tines of a fork to create ridges, and then set, not touching, on a large baking sheet lined with parchment paper. Repeat with the remaining dough. Bring a very large pot of lightly salted water to a boil. Line a second large baking sheet with parchment paper and grease the paper with olive oil. Cook the gnocchi in the boiling water, in 3 or 4 batches, until they oat to the surface, about 2 minutes. Scoop out the gnocchi with a slotted spoon and place on the baking sheet. (Gnocchi could be made to this point up to a day in advance. Cool to room temperature, cover and refrigerate until needed.) Remove the casing from the sausages and pull the meat into 36 to 42 small, 3/4-inch pieces. Moistens your hands lightly with cold water and roll the pieces of sausage into mini meatballs. Place the oil in a wide skillet and set over medium, medium-high heat. When hot, add sausage meatballs and cook until nicely browned on all sides, about 4 to 5 minutes. Drain away the excess fat. Pour the passata di pomodoro and stock into the skillet and bring to a gentle simmer. Loosely cover and simmer the meatballs 10 minutes, adjusting the heat as needed to maintain a gentle simmer. While the meatballs simmer, bring a clean and large pot of water to boil. When the meatballs have done simmering, place your prepared gnocchi into the boiling water and heat thorough a minute or two. Scoop out and divide the gnocchi among pasta bowls and spoon on the saucy meatballs. Garnish each serving with a few fresh basil or oregano leaves. Serve with a chunk Parmesan cheese, for grating on top of the gnocchi at the table.

n this recipe tender gnocchi is tossed and flavoured with a bits of cooked squash, crisply cooked sage leaves and garlic, all cooked in a butter/olive oil mixture. 1 batch homemade gnocchi 1 3/4 cups cubed squash, such as butternut, banana or acorn, simmered, until just tender, drained well and cooled on a plate (see Note), 2 Tbsp butter 2 Tbsp extra virgin olive oil, pluse some for drizzling 2 large garlic cloves, finely chopped 24 small to medium whole fresh sage leaves 1⁄3 cup freshly grated Parmesan cheese, plus some for the table salt and freshly ground black pepper to taste

Make, cook and cool the homemade gnocchi featured in the recipe page 76. Bring a large pot of water to a simmer over medium heat. When the water is simmering, set a very large skillet over medium heat. When the skillet is hot, add the butter and oil. When the butter starts to melt, add the prepared gnocchi to the simmering water. When the butter has completely melted, add the sage and squash and cook until the sage becomes very fragrant and slightly crisp on the outer edges. Mix in the garlic and cook one minute more. Scoop the hot gnocchi out of the water and into the skillet. Sprinkle in the cheese, salt and pepper and toss to coat. Divide the gnocchi among pasta bowls. Smart technology is making its way into the kitchen in ways big and small, but not everything will get you cookin’. Splashier items like Wi-Fi-connected refrigerators and stoves that let you operate them remotely look cool, but cooking experts aren’t sold on them yet for home use, noting that the technology may be obsolete long before the traditional aspect of the appliance stops working. Instead, they say three smart gadgets are worth a home chef’s dollars.

kitchen GADGETS SMART THERMOMETER Lisa McManus, a tasting and testing expert, said though some smart kitchen devices feel like either the technology or the device’s function is an afterthought, that’s not the case with a smart thermometer. When home chefs need to step away while cooking, being able to use an app to check on the food’s temperature is a handy way to avoid overcooking the meal. “It gave us accurate, clear temperature readouts, which is basically what you want in a good thermometer. The smart side of this product — where it uses Bluetooth to send information to your phone — works as well as the thermometer itself. What’s more, applying smart technology here isn’t just an extra; it solves a real problem,” McManus said. A host of other smart thermometers are available, such as Weber’s iGrill2, which was made specifically for a grill’s high temperatures.

SOUS VIDE MACHINES

A longtime favorite of chefs, sous vide machines are coming down in price and making their way into home kitchens. Sous vide machines allow food to retain more flavor because food is cooked slowly in an airtight bag under circulating water at low temperatures. Chef Brian Schreiber and Lance Nitahara, a lecturing culinary instructorm, raved about them. “It’s a really great way to cook to maximize your flavor. I think in the next year or two, sous vide is going to pop up more and more, especially as people get more educated,” Schreiber said. “It creates a controlled environment that you don’t get with traditional cooking.” The low and slow cooking times make monitoring sous vide cooking from an app easy. There are two top smart sous vide machines, the Anova Precision Cooker and the ChefSteps Joule. Tests by popular technology magazines show they essentially cook the same. The main difference is the Anova can be controlled by both manual touch and app, while the Joule is controlled almost exclusively via the app.

INDUCTION BURNER

These burners are more efficient than gas burners; they heat up fast and cool off quickly, plus they let chefs digitally control the exact temperature. If you have recipes you did once and it turned out great, you can notate what number you set it to and get that number every single time. While most induction burners are part of complete ranges, some single induction burner plates are coming out that are Wi-Fi-enabled. To work on an induction burner, a pan must be made of a magnetic material, meaning aluminum pans won’t work. Hestan Cue’s single induction burner comes with a smart pan that works with the induction burner and includes a recipe app via Bluetooth technology that guides users through cooking and automatically adjusts the temperature for each step. Chefs expect induction burners will become more popular. “It’s the future of cooking today,” says one cooking expert. “A lot of kitchens are turning to induction burners.

he line-up outside Bakesale Betty is 30 deep of amazingly cheery people waiting for the buttermilk fried chicken sandwiches that have made this restaurant a must-eat-at in Oakland. Owner Alison Barakat, in her trademark blue bob wig, is chatting them up when she gets a call. “They’ll be ready in ďŹ ve minutes. Just come to the front,â€? she says. A few minutes later, two guys who work at the hardware store down the block pop in to pick up sandwiches. “This is just how we do things in Oakland. These guys have a short lunch break so we help them out by having their sandwiches ready and waiting. We’re a community,â€? Barakat said. She does the same for the local ďŹ reďŹ ghters at the nearby station. That sense of community permeates Oakland, the city across the bay that most tourists don’t think about when they visit its glitzy sister, San Francisco. Community, diversity and progressive politics are points of pride in Oakland, with posters advocating for social justice plastering even the window of a Michelin-starred restaurant. Over the past few years, Oakland has seen its reputation for high-crime rates and sketchy neighbourhoods replaced with one for its growing food and arts scene, slightly more affordable housing than San Francisco

here is no there there,â€? Gertrude Stein infamously wrote in her autobiography after revisiting Oakland 45 years after leaving to ďŹ nd her childhood home gone and the city changed. While there is some dispute as to just what Stein meant by the comment, it’s been widely interpreted to mean that Oakland has no core, and that may we true. Rather, the city is made up of numerous neighbourhoods, tied together by geography and minds of their own. Piedmont is one of those villages. If you could create a model main street for an urban village, this would be a contender. Piedmont Avenue is ďŹ lled with small, independent shops, with no chain stores IN SIGHT 4HERE ARE VERY FEW CHAIN STORES IN /AKLAND GENERALLY It’s a good place to spend a couple of hours enjoying the eclectic mix of shops, good restaurants, coffee shops, an old-fashioned ice creamery and a movie theatre that focuses on independent and foreign movies. Secondhand bookstore Black Swan Books has a good selection. Pop around the corner to Issues, a newsstand that carries hundreds of magazines and other independent publications. 1UIRKY VINTAGE SHOPS COULD DRAW IN COLLECTORS F OR HOURS 3EVERAL stores on the street focus on doing, rather than consuming. Sew Images has a wall of every thread colour you could imagine, and onsite sewing classes. Rare Bird is half retro clothing and funky t-shirts that celebrate Oakland and half maker shop. Take a handlettering course, carve your own stamp, make a candle. It all creates an appetite and Piedmont Avenue has a little of something for everyone. Commis has two Michelin stars. If you’ve planned at least a week ahead, you might get a reservation for its set eight-course menu for $149. Fenton’s Creamery has perfected ice cream concoctions and diner-style food during its 122 years in Oakland. It also had a cameo in Pixar’s movie “Up.â€?

If you want something cutting edge, try the Impossible Burger at KronnerBurger. It’s one of the select restaurants in the U.S. that serves the plant-based burger being marketed as being so meatlike that it bleeds. And it does. Or at least it’s pinkish inside. It’s the work of Impossible Foods, a Silicon Valley startup. A team of scientists, engineers, chefs, farmers and foodies studied meat for ďŹ ve years, from how it sizzles to what happens when you sink your teeth into a burger. The main ingredients are wheat protein and potato. It’s bound with xanthan and konjac, a high-ďŹ bre vegan substitute for gelatin FROM *APAN AND IS mAVOURED WITH COCONUT OIL VITAMINS AMINO ACIDS and sugars. But the star is a special ingredient called “heme.â€? It’s abundant in animal muscle and contributes to the characteristic colour and taste of meat. The company discovered how to take heme from plants and produce it using fermentation, similar to the method that’s been used to make Belgian beer for nearly a thousand years. !T IT IS PRICEY ! REGULAR BURGER AT +RONNERBURGER IS But it tasted and felt like the real thing, not a wanna-be veggie burger. I left feeling satisďŹ ed and full, but not uncomfortably so as you often do after a meat burger. I’d deďŹ nitely order it again, not miss the meat at all and enjoy feeling virtuous. Finish the day with a walk up to Mountain View Cemetery, with its peaceful atmosphere and terriďŹ c views of the Bay and San Francisco. The 226-acre park-like cemetery has a Victoria connection. The cemetery was designed in 1863 by Frederick Law Olmsted, a famed landscape architect who also designed Central Park in New York City. His goal was to create a space that would express a harmony between humankind and the natural setting. He is also the uncle and stepfather to John Charles Olmsted, who designed Uplands in Victoria. >

ou won’t ďŹ nd tourist-oriented knickknack shops or cute red lanterns lining the streets in Oakland’s Chinatown, one of the oldest in the United States. It came to be in the 1850s, when a wave of Chinese immigrants moved to the Bay area to work on Central PaciďŹ c Railroad. The population and diversity of the neighborhood grew in the 20th century after the destruction of San Francisco’s Chinatown in the 1906 earthquake, along with a major increase in immigration from China and Southeast Asia in the ‘70s, ‘80s, and ‘90s. The end of the Vietnam War brought thousands of refugees from the southeastern part of Asia. This is a working Chinatown, with its 16 blocks ďŹ lled with people of Chinese, Korean, Vietnamese and Japanese ancestry busy with

life. That’s a big part of its appeal, along with the terriďŹ c public art and food that I’m still thinking about. “Oakland’s Chinatown doesn’t have all of the merchandise and trinket shops. It has a thriving culture and a rich tapestry of art. It’s real,â€? said 3AGE ,ORING EXECUTIVE DIRECTOR OF THE $RAGON School, a non-proďŹ t association that has created an outdoor art gallery in Chinatown. Neighbourhood youth, with guidance from established grafďŹ ti artists and graphic designers, have created more than 100 dragons throughout Chinatown. They work with business owners to create the public murals and are now branching out to other colourful creations, such as the Chinese zodiac. “Robust public art is a visual cue that a city has a lot of entrepreneurial and artistic types. These changes have happened over the last decade or so, said B.J. Hanson, who runs Sacred Wheel, a cafĂŠ and cheese shop that is a must-stop for its sriracha-topped fried mac and cheese and tomato soup, made with a touch of Pabst Blue Ribbon beer. “When I was growing up, you didn’t go to Oakland. It was a place you didn’t even drive through,â€? said the 46-year-old. Now it’s so popular that a lot of people working in Oakland can’t afford the rents. >

Those old brewing traditions have been revived in the last decade, with 12 breweries open and

The art walk has also expanded into First Friday, a lively street festival that draws thousands of visitors to its live music, one-night art installations, street performances and food trucks. A quieter way to view the art and talk to the artists is the Saturday Stroll. Artists open their

spaces each Saturday afternoon. Take part in talks, receptions, film screenings or trunk shows. The Oakland Museum of California becomes a festive night market every Friday night that is worth the trip to Oakland. This national historic landmark has been meticulously refurbished to its original 1931 grandeur. You be the judge. The cathedral is right across the road from Lake Merritt, a large tidal lagoon in the middle of Oakland. JACK LONDON SQUARE: History still in the making The square, named after the author of “Call of the Wild” and “Sea Wolf,” offers a little of everything. It’s a walking/cycling-friendly waterfront area that is also a bustling port with huge container ships; a place where the oldest saloon in the Bay area is beside the Museum of Capitalism; and a community where turn-of the-century warehouses co-exist beside edgy modern buildings. Heinold’s First and Last Chance saloon is constructed of remnants from an old whaling ship. As a teenager, Jack London studied at the same tables still used today. It’s also said he returned to his favourite table years later and wrote notes that would become his famous books. The slanted floor, caused by the 1906 earthquake, remains. The place fits a dozen people at most, but there’s waterview seating outside. It’s near a modern building that hopes to soon have a food market and restaurants. Part of the top floor is now the Museum of Capitalism, where 60 artists from around the world depict present day capitalist values from a future perspective. It’s a thought-provoking modern art museum that somehow feels right at home in Oakland,

KINDERDIJK, Netherlands — The windmills at Kinderdijk were built in the mid-1700s as a way to clear water from the low-lying landscape of the western Netherlands. Sometime in the 1950s, the millers and water board members started seeing visitors in sneakers carrying cameras. Yes, tourists. 4HE $UTCH EMBRACED THE VISITORS AND THE +INDERDIJK windmills have since become one of the country’s most popular tourist destinations while continuing to help manage the Netherlands’ ongoing fight to stay above water. There are some windmills north of Amsterdam that “were built for the tourists, but we’re a historical site where tourists come, so it’s the other way around,” said Kinderdijk communications manager Peter Paul Klapwijk. “Tourism is a means to uphold our site.” Kinderdijk, which translates to children’s dike, lies in the !LBLASSERWAARD POLDER LAND THAT S BEEN RECLAIMED FROM THE SEA MARSHES OR RIVER mOODPLAINS AT THE CONmUENCE OF THE Lek and Noord rivers. The village is in the western portion of the Netherlands, much of which is near or even below sea level. 4HE LOWLANDS HAVE BEEN PRONE TO mOODING THROUGH THE ages despite the building of canals and dikes, including the 3AINT %LISABETH S mOOD THAT KILLED THOUSANDS AFTER THE dikes broke in several places. 4O STEM THE mOODING THE +INDERDIJK WINDMILLS WERE BUILT in 1738 and 1740 — two earlier than that — to move water from the lower areas to higher spots and into the river. >

A photgraphers paradise Nineteen of the original 20 Kinderdijk windmills remain and were named a UNESCO World Heritage site in 1997. And what a sight they are. Lining the canals that zigzag between the two rivers, the windmills are a striking AND ICONIC GLIMPSE INTO $UTCH HISTORY WITH a modern-day functionality. The windmills work in conjunction with pumping stations to move water from the lower-lying areas to higher ground and into the river. Of the 19 mills, 16 still have millers who live inside and manoeuvre the massive sails in the wind. For tourists, walkways lead from the visitor centre to the mills and boat tours are offered along the canals. Two mills

serve as museums, filled with vintage millers’ items and photos with ladders to climb through and see the inner works. The mills also are functional, so be prepared to feel the entire building shake when the sails are whipping around in the wind. About 300,000 people buy tickets to visit the Kinderdijk windmills each year, with about 500,000 more walking through the area without taking the tours. Kinderdijk has plans to build a new visitor’s centre and to refurbish the pumping station with an exhibition about the future of water management with climate change. CH
