W
e’re fortunate here on the bottom of this big rock on the edge of the Pacific to enjoy our summers surrounded by water. So at Capital Home we make it a point at this time of year to celebrate our relationship with water and the glorious season of summer. It’s everyone’s favourite time of the year, with trips to the beach, festivals, family vacations, barbecues and picnics, boating, fishing and those long warm nights where memories are made. In this edition, we take tours of four waterfront homes from Saanich to Sooke and from Langford to Gig Harbour in the U.S. Each is unique with their own histories and family ties, but all are connected to water. A multi-generation home on a sliver of land jutting into Langford Lake has emerged with fresh and modern renovations for new family members to enjoy. It’s the same for a Cordova Bay beach home, stripped to its studs in a massive remake for a big family to use as their vacation home. And in Washington, a cabin remodel
brings stunning results on a remote peninsula in Pearce County, where the owner says “there’s not a day I’m not grateful here.” At Spirit Bay in East Sooke, a colourful community of blue, purple and yellow homes — the palette continues as the houses are built — spring up against the rocky cliffs and deep-blue ocean in a post-card-scene setting. This issue also brings you some of summer’s ‘musthaves’ to enjoy the season and — because we all like to live outside — the latest in tricking out the patio and outdoor kitchen. There’s a tasty and quick way to cook halibut on the grill and our food writer, Eric Akis, takes local seafood to another level without turning on the heat. Hint: It goes very well with a margarita — that perfect summer drink. If you’re heading out of the road, Seattle’s iconic Pike Place Market is just a Clipper ride away. And if you haven’t been in a while, you will be surprised to see the massive improvements in size and scope.
Closer to home, the Huu-ay-aht First Nation is offering tours of the ancient capital Kiixin to share their cultural heritage with the world and revitalize the quiet coastal town of Bamfield. The ancient site is located between the popular tourist destinations of Ucluelet and the West Coast Trail, and is accessible by logging road, plane or ferry from Port Alberni. The Canadian government declared the village and fortress, which dates back to the 19th century, a National Historic Site in 1999. So kick back and enjoy the summer. FUN FACT: The aerial distance from Victoria on the Strait of Juan de Fuca to Stewart on the Alaska border at the head of the Portland Canal is 965 kilometres. That’s a lot of water and coastline to enjoy. Because of its many deep inlets and complicated island shorelines — and 40,000 islands of varying sizes, including Vancouver Island and Haida Gwaii —the total length of the B.C. coast is more than 25,725 kilometres.

ew empty nesters, searching for a forever home to suit their new lifestyle, have discovered a sustainable seaside community 35 minutes from Victoria. After all the children are gone, many couples’ thoughts turn to downsizing and travel. Many have been lured to the advantage of condominiums located in busy cities. But others, like Shauna and Rob Strasdin, wanted to join a “community.” Sustainable communities differ from regular development projects because of their vision — a vision that includes environmental protection and social responsibility. Spirit Bay, located on the shores of Beecher Bay in East Sooke, is one such development. “It’s a delicate balance between privacy and community,” said Ari Cota, president of Scala Development, general contractor and responsible for the project’s architectural and landscape design. Like many people, the Strasdins were attracted to the master plan of the project, which envisions a vibrant, pedestrian-friendly community, with narrow, winding streets and a central town centre. Plans are for a future grocery store, medical centre, bakery, coffee shop —even a spa and wellness resort built on site. >

Beecher Bay is also the home of the 365-berth Cheanuh Marina, located between two well-known fishing grounds. “We’re not just creating houses, we are creating a community,” said Cota, a civil engineer and architecture designer. “This is new urbanism.” This isn’t your typical housing development, either. The 40-hectare project site is on traditional Scia’new (Beecher Bay) First Nation territory. The band has partnered with the Trust for Sustainable Development to build between 550 and 600 homes on the property. The Scia’new people remain the majority shareholders in the $500-million project and have final say in respect to construction. They have taken great pains to minimize impact of construction, protecting trees,
vegetation and wildlife habitat wherever possible. There are no sprawling mansions or monster houses blocking the view. Instead, there are 18 different cottage plans, from a one-bedroom occupying only 493 square feet to a threebedroom with den boasting 1,920-square-feet. The models were designed taking in account the property’s topography and individual sightlines. And each are painted in bright, vibrant colours. “We wanted to emulate the feel of a fisherman’s village,” said Doug Makaross, vicepresident of Scala. The Strasdin’s home, called the Stonington, is one of the largest plans, at 1,805 square feet. The three-bedroom, three-and-a-half >

bath home features one bedroom on the main floor and two bedrooms on a second level — all with their own ensuite bathrooms. They chose to customize their home, adding a fireplace in the master bedroom and terraces (accessed via patio doors) off the living room and bedroom. Their interior designer helped them choose a neutral white palate with a dove grey lower cabinets only on the kitchen island. The farmhouse sink is bracketed by countertops of white sandstone quartz, with white subway tiles for the backslash. Chrome pendant lights and countertop stools compliment stainless steel appliances. The open- concept design of the main floor has been further enhanced by the elimination of the walls that form the staircase. The master bedroom boasts a walk-in closet and an ensuite bathroom with twin sinks and an elegant soaker tub. The generous 19-foot by 13-foot master allows for a pair of easy chairs to be placed beside the room’s gas fireplace. French patio doors give occupants an unobstructed view of the water and open onto a covered deck. None of the plans include a drive-in garage. That was intentional. There is parking for two vehicles with some new homeowners building carriage houses with secondary suites above. Cota said that unlike a regular subdivision, where a homeowner can simply drive in and out of their garage, homeowners at Spirit Bay have to get out of their cars and greet their neighbours. “It’s all part of the plan,” he said. “Let ’s go to t he lake.” It’s a familiar summer refrain and it conjures up a rowboat-full of languid holiday images — like dips into refreshing water, sparkling drinks muddled with mint, or snoozes on a striped towel while stretched out lizard-like on a dock. For the Martens, this is no idle dream because the family lives year-round on Langford Lake, in what they believe is a century-old house that sits astride a tiny peninsula with water on both sides. “We see the sun rise on one side, and we see it set on the other,” said Kirsten Marten, whose family dines outside every night during good weather, at a table in the vegetable garden surrounded by the heady scent of basil. Husband Jeremy’s parents bought the home when he was six, so he has lived there most of his life, including after his mother died and during his father’s long illness. So the home is steeped in memories, like when his father raised the building to add a new main floor, or when his mother created a rose garden with cuttings from the father’s home in England. >

After both parents died, Jeremy and his sister came to an arrangement that allowed him to take ownership of the one-of-a-kind property. The family moved in nine years ago and while the decision was a breeze for Jeremy, it wasn’t so simple for city-dweller Kirsten: “The house wasn’t my style at all, although I liked the lifestyle.” They decided to live there for a year to see how they liked it, and that first winter was difficult because the property can be gloomy and dark, and low lying areas like the vegetable garden flood every year. But the glories of summer outshone the winter blues and their two sons, aged eight and 10, never knew Jeremy’s parents, Edward and Claire, so the home is like a living legacy. After deciding to stay in the 1,500-square foot house, the Martens took three years planning improvements. “It felt really good, in this day and age of new builds and tearing places down, to take something with as much character and history as this place and bring it back, ” said Kirsten, who worked part time for the Juvenile Diabetes Research > THE WEST FACING SIDE OF THE PROPERTY IS WHERE FAMILY AND FRIENDS GATHER FOR LATE AFTERNOONS AND EVENINGS. Jeremy eased out of his computer consulting business while finishing his masters, and is now a school counsellor in Colwood, Langford, Metchosin and Sooke. “One of the big question marks early on was about commuting into town in peak times,” he recalled, but it hasn’t been a concern. Their first project was to renovate the tiny kitchen. “When we moved in, I was pregnant and couldn’t be in the kitchen with anyone else,” said Kirsten with a chuckle. The kids can be in the living room watching television while adults hang out in the kitchen and dining room, now one big room. Jeremy explained: “We had a flood when a water tank blew and all the main floor laminate puffed up.” It was covered by insurance, so they upgraded to hardwood and everything looked great, until they were given a kitten. She slept in the downstairs bathroom and one night accidentally rubbed up against a faucet lever. “Our free kitten ended up costing us a massive insurance claim again, as water flooded into three different rooms and under a wall. I phoned the insurer and said you aren’t going to believe this … and there was a huge pause.” Intact Insurance was fantastic, he said. boardwalks and marine structures, built the deck. Jeremy does as much work as he can, but acknowledges, “You get superior results when you hire specialists. Like our stucco guys from Logue and Bridges, who were fantastic, super kind, positive and meticulous. All the walls were crooked and bowed, but it was no problem. They were artists, so it ended up a technical treat.â€? Jeremy loves living in the same house as his parents did. A few weeks ago, he took down a wall to run some cables and found a twoby-three foot section covered with his dad’s construction calculations. “Another time we found a note my mum wrote to my dad ‌ and when we were demo-ing the kitchen after work, at about midnight when I was kinda tired and a bit delirious, I suddenly realized I was pulling up the suboor that I’d helped put down when I was 12, and using the same hammer.â€? Kids are always swimming, kayaking or exploring. About half the property is totally wild and we have eagles, families of baby ducks, racoons, otters, muskrats.â€? The family gets to see the weather up close, too, said Jeremy. “You deďŹ nitely feel in touch with the elements because you are not just looking at 10 feet of yard, but half a mile of open space. The wind can absolutely rip through the property and we once had a trampoline y up into the trees and break branches before launching itself into the lake. We had to hire divers with salvage equipment to get it out. “But when summer hits you feel fully on vacation and it’s cool to come home and see people here going bananas.â€? hese crazy days, potential buyers hurtle through all sorts of unheard-of hoops to land a home of their own. But even 30 years ago, after professing their interest in a tiny little cabin on a remote Pierce County peninsula in Washington, Jim and Carolyn Milgard faced a rather unusual presale inquisition. She asked them: ‘When you’re walking on the beach, what do you like to find?’ They said: ‘Oysters and clams. It’s set up with two axes, and allowed to engage with the property.” The Milgards’ 7,000+-square-foot, northwest contemporary home always has embraced its dramatic Puget Sound waterfront (and the resulting weather) to the point of seamless assimilation, through sweeping overhangs and rich, natural materials, but the “contemporary” part, all agreed, needed a little attention. “Over the years, there were things that needed to be cleaner,” Haddad says. “We remodeled the two kids’ rooms. Since they’re not here anymore,
we reconfigured them more like a suite. We remodeled the kitchen and the master suite, bathroom and dressing room. Everything was neutralized and simplified. The fir trim had naturally gone orange; all the wood was stripped and re-stained. We refinished the floors. New paint. We also quieted the house down, to calm, quiet space. The interior is cleaned up and crisper.” With custom-designed pieces by Doug Rasar Interior Design, Carolyn says, “all the furnishings are new in the whole house. Every room has its own personality.” >

In the “completely reconfigured and opened-up” kitchen, Haddad says, the new black-granite island with an organic brush finish serves as “almost a piece of art, a link between architecture and furnishings” — and as an important anchor. “The grid of structure is what we always start with. When we remodeled, the island centers on the beams and gives an order.” Down a couple gentle stairs, 30-year-old fir columns rise to shoulder exposed beams in the subdued yet magnificent living room, itself a peninsula of sparkling glass overlooking a horizon of saltwater, and a brilliantly integrated pool. >

In the family room, new steel shelves, a steel box for the big-screen TV and redesigned fireplace doors “add a layer of detailing,” Haddad says, while new casework surrounds a giant, glowing aquarium along a wall of refinished and refined storage space. It’s new, but it’s not. It’s a legacy house, and property, modified and modernized for a new family (big-picture, historically speaking) and its future. “People can’t believe it’s 30 years old,” Carolyn says. “When you have something like this, people are just kind of overwhelmed. It’s a special place. There is not a day I’m not grateful here.” CH

GO FISH!
COOL, COLOURFUL AND SUMMER TASTY – ENJOY THE BOUNTIES OF SALISH SEA hen the weather is hot, and you want to serve fresh B.C. fish in an appetizing way, don’t loose your cool, and don’t turn on your stove. You won’t have to if you make ceviche or gravlax — dishes that now have global appeal that originated in two very different parts of the world. Ceviche, pronounced “seh-VEE-chay” and also spelled seviche, is a Latin American dish enjoyed in places such as Peru, Mexico and Ecuador. Soaking raw fish or seafood in a marinade that’s primarily citrus juice is how it’s made. The acid in the juice “cooks” the fish, turning it opaque and firming it up until pleasing in texture. In my recipe for ceviche, I used rockfish fillets, which is also called Pacific snapper. That’s the market name for several species of rockfish commercially harvested off Vancouver Island. You will find rockfish at most supermarkets and seafood stores.

I cubed that fish and to make my ceviche first marinated it in a lime-juice mixture spiked with tequila and agave syrup, which is made from the agave tequiliana (tequila) plant. Once that process was done, most of the lime-juice mixture was drained away. I then tossed the fish with such things as avocado, cherry tomatoes, shallot, cilantro and olive oil. The end result is a cool, colourful and very tasty fish dish that you can serve as an appetizer, or even a light lunch, on a warm day, perhaps while sipping a margarita. Curing salmon fillet with salt, spices, sugar, dill and sometimes alcohol is how the Scandinavian-in-origin dish, gravlax, also spelled gravlaks, is made. I used bright-red, readilyavailable-in-summer, B.C. sockeye salmon to make my gravlax. And I did decide that I would also flavour it with alcohol, Vancouver Islandmade vodka.
After the fish is coated with the curing ingredients, it’s covered, weighted and refrigerated two to three days. During that process the fish is turned occasionally, it absorbs and is flavoured by the curing ingredients, and it firms up. When ready, like cold-smoked salmon or lox, it becomes something that’s quite delicious that you can thinly slice and serve with rye bread, mustard dill sauce and other accents. When making ceviche and gravlax, make sure the fish is very fresh, smells sweet and sea-like, and has firm flesh that glistens. Do not use fish that smells overly fishy, looks dull, soft or is falling apart to make ceviche or gravlax, or it will also have those undesired qualities. To find the freshest fish, shop at places that sell a lot of it, ensuring there’s always a fresh, new supply arriving each day.

ROCKFISH CEVICHE with Tequila and Lime
n this recipe, cubes of fresh rockfish are soaked in a tequila-spiked, lime juice mixture. During that process the acid in the marinade “cooks” the fish, turning it opaque and firming up the flesh. The fish is then drained and tastily combined with such things as avocado, cherry tomatoes and cilantro, creating a palate pleasing, colourful summer appetizer.

Preparation time: 40 minutes, plus marinating time Cooking time: none Makes: six appetizer servings 1 tsp finely grated lime zest 2/3 cup freshly squeezed lime juice, plus some for rims of the glasses (see Note 1) 2 Tbsp tequila 2 tsp agave syrup (see Note 2) 1/2 tsp fine sea salt 400 grams rockfish fillets (also called Pacific snapper), any bones removed, flesh cut into 1/2-inch cubes 1 medium, ripe avocado, cut in 1/2inch cubes
8 cherry tomatoes, quartered (use a mix of different coloured ones) 1/3 cup finely chopped fresh poblano or green bell pepper 2 Tbsp finely chopped shallot or red onion 3 Tbsp chopped fresh cilantro 3 Tbsp olive oil a few splashes hot pepper sauce, such as Tabasco flaked or coarse salt, for rims of the glasses 6 lime wedges, for garnish
Combine the lime zest and 2/3 cup lime juice, tequila, agave syrup and 1/2 tsp salt in a medium glass or other non-reactive bowl. Mix in the rockfish. Cover, refrigerate and marinate for four hours, or until the fish has turned opaque and appears cooked from the acid in the marinade. Drain and discard all but 2 Tbsp of the liquid in the bowl. Now add the avocado, tomatoes, poblano pepper (or green bell pepper), shallot (or onion), cilantro, oil and hot pepper sauce to the fish and gently toss to combine. Spread some lime juice on a small plate. Sprinkle some flaked (or coarse) sea salt on a second small plate. Dip the rims of each of six (about 6 oz) decorative glasses in the lime juice. Now dip and coat the rims in the sea salt. Divide the ceviche mixture among the glasses, garnish with lime wedges, and serve. Note 1: You’ll need seven to eight large limes to get the juice and wedges required for this recipe. aromatic, about two minutes, and then cool to room temperature. Coarsely crush the coriander seeds and peppercorns in mortar with pestle, or in a spice grinder. If you don’t have either of those, you could set the spices on a work surface, and crush them by rolling the bottom of heavy skillet over them, pressing down while you do. Put the crushed spices in a bowl and mix in salt and sugar. Pat the salmon fillet dry with paper towel. Set the fish on a work surface, skin-side-up. With a very sharp knife, make six to eight widthwise and very shallow (don’t go too far in to the flesh) slits through the skin. (These slits will allow the flavourings to reach the flesh from the skin side). Set the salmon fillet, skin-side-up, in a glass or other non-reactive sided dish that’s

large enough to hold it and allow it to sit flat (my dish was 16- x 10-inches). Top and rub the skin-side of the fish with half the salt/sugar/ spice mixture. Now top fish with half the dill. Turn the fish over, and then drizzle the flesh side of it with the vodka. Now top the fish with the remaining salt/sugar/spice mixture, and then the remaining dill. Cover the fish with plastic wrap, and then aluminum foil. Now place something heavy on the covered fish, such as a weighty cutting board, platter topped with cans of foods, or a brick or two. Refrigerate and let salmon cure 48 to 72 hours. (The longer the salmon is cured, the firmer and more “cooked” looking it becomes.) During this process, turn the fish every 12 hours or so and baste it with the accumulated liquid in the dish, covering and weighting it again after you do. When cured, remove the fish from the marinade and pull off, or, with cold water, rinse off, the flavourings. Pat the fish dry. Set fish on a platter, cover and refrigerate until ready to serve. The gravlax will keep in refrigerator two or three days (see Note 3). When ready to serve, set fish on a cutting board, skin-side down. With a very sharp knife, starting at the tail end, slice the fish on the bias into very thin slices. Serve the gravlax with the rye bread, mustard sauce, red onion, dill sprigs and capers. Note 1: Salmon fillets have small pin bones embedded in the flesh that fish retailers usually remove. If they haven’t, you’ll need to remove them before making the gravlax. To do so, place the fillet on a work surface, skin-side down. Run a finger down the upper middle of the flesh. The bones should pop up. Grab the end of the bones with tweezers or pliers and pull them out.

HOW TO: PREPARE GRAVLAX Use the words and images below to help you prepare Eric’s Sockeye Salmon Gravlax with Island Vodka recipe. Step 1: Ready your flavourings To make gravlax, you’ll have to toast and then crush peppercorns and coriander seeds, and then mix them with sea salt and sugar. You’ll also need some fresh dill and vodka for your gravlax. Step 2: Set fish in a dish Set the salmon fillet, skin-side-up, in a glass or other non-reactive sided dish. Top the skin-side of the fish with half the salt/sugar/ spice mixture and half the dill. Turn the fish over, and then drizzle the flesh side of fish with the vodka.

2 oz Tequila, 1 oz Lime juice, 1 oz Cointreau PREPARATION: Rub the rim of the glass with the lime slice to make the salt stick to it. Shake the other ingredients with ice, then carefully pour into the glass (taking care not to dislodge any salt). Garnish and serve over ice. SERVED: On the rocks; poured over ice STANDARD GARNISH: Lime slice, Salt on the rim DRINKWARE: Margarita glass

1/3 cup vegetable oil 2 to 3 Tbsp chopped fresh dill salt and ground white pepper, to taste
Place Dijon mustard, mustard powder, vinegar and sugar in a medium bowl and whisk to combine. Now very, very slowly dribble and whisk in the oil, creating an emulsified sauce. Mix in the dill. Taste and season sauce with salt and pepper. Transfer sauce to a decorative bowl, cover and refrigerate until ready to serve with the gravlax. Sauce will keep in the refrigerator a week or more. HALIBUT WITH CAPER BUTTER HERB SAUCE IN 20 MINUTES, SUMMER ON THE PLATE
T
here is nothing I love to eat more in warm weather than a piece of fresh seasonal fish cooked on the grill — the slightly sweet flesh offset by a tiny bit of char. Halibut is mild, tender and sweet, and it’s a fantastic lean source of protein. A fourounce serving has 24 grams of protein, a little over two grams of fat, and offers a nice showing of B vitamins and minerals, all for 120 calories. My go-to strategy for grilling mild white fish is to keep it super simple on the actual grill, and then top it with a quick sauce made from a few ingredients. Pat the fish dry gently, and toss on the grill with just a little salt, pepper and olive oil. Once the fish is cooked, I top it straight from the grill with the sauce. While the fish is cooking, whip up a sauce with a little acid (like lemon or vinegar), aromatics (like minced garlic, shallot or green onion), herbs, and a tiny touch of fat (like olive oil or butter). Pouring it on while the fish is hot makes the simple flavours come alive. Grilled halibut with butter caper herb sauce is an excellent starting point for mastering this easy fishgrilling blueprint that you’ll use both on weekends and busy weeknight meals. In under 20 minutes, you can have summer on the plate.
GRILLED HALIBUT SERVINGS: 6 START TO FINISH: 20 minutes 1 3/4 pounds of fresh Alaskan halibut fillet (or other firm whiteflesh fish), checked for bones 1/2 lemon, for squeezing 2 teaspoons olive oil salt and pepper
SAUCE: 2 tablespoons butter 1 clove garlic, minced 2 tablespoons capers, plus a little of the juice 2 tablespoons lemon juice, a handful of chopped tender herbs, like basil, parsley, or cilantro

Heat a gas or charcoal grill to medium high. Scrub the grill grates with a brush or tongs and ball of foil to clean off burnt food debris, and lightly oil the grates. Squeeze a little lemon juice on the halibut and let it sit a few minutes before blotting it dry gently with a paper towel. Season the fish with a little salt and pepper. Drizzle the olive oil over both sides of the fish, and use your fingers to coat the whole fillet lightly with oil. Once the grill is hot, place the fish flesh side down on the grill. Allow to cook about five to six minutes on the first side. Use a metal spatula to flip the fish to cook the second side, until cooked through but not dry, about three to four more minutes. (To help keep the fish from sticking, don’t flip it too soon, and flip the fish with a purposeful, quick motion.) Meanwhile, heat the butter and garlic in a small sauce pan on the stove at medium heat until the garlic is aromatic, about two minutes. Add the capers with a little caper liquid and the lemon juice and whisk to combine. Remove from heat, stir the herbs into the sauce and then pour over the fish just as it comes off the grill. Serve. hether you’re lounging around the pool or telling stories around the fire pit, you love entertaining outdoors. So why wait to design and build the outdoor kitchen you’ve been dreaming about? There’s no time like the present. And these tips will help you down the path to success.
PICK THE RIGHT SPOT: Location is everything when it comes to planning your outdoor kitchen. Not only will placing it in the wrong spot be inconvenient and uncomfortable, but it could also be dangerous. Start by locating any utility lines, underground and overhead, and design with those in mind. You don’t want to cut into buried lines during the building process, nor do you want to build directly under an overhead power line that poses a risk every time you raise an umbrella. Next, consider the weather. You’ll have more fun in your outdoor kitchen if you locate it away from windy or overly sunny areas. Plan to build your space within natural windscreens and shade from your landscaping. Then install elements to protect your kitchen from the elements that pose a challenge for comfort and cooking.
HOW O TO O PLAN: IT’S SAID THAT THE KITCHEN IS THE HEART OF THE HOME; WHEN YOU’RE ENTERTAINING, GUESTS OFTEN CONGREGATE IN OR NEAR THE KITCHEN TO VISIT WITH THE COOK AND EACH OTHER.
Traffic flow and the proximity to your indoor kitchen are also worth considering. Plan a spot that places the two kitchens conveniently close. But be sure that the proximity and placement of the outdoor appliances are oriented to prevent smoke from drifting indoors.
CHOOSE FUNCTION OVER FORM: Grill, rotisserie, oven, stovetop, brick oven, blender, wine cooler — there are so many choices. But if you aren’t using them regularly, they’re needlessly taking up counter and cabinet space. Before going overboard on the appliances, ask yourself what you’re going to be cooking and what you’ll actually use. Generally, you’ll need a refrigerator and a grill or other cooking source, as well as some storage and prep space. Embellished wood cabinetry makes a bold statement in an indoor kitchen, but exposure to the elements makes wood cabinets impractical for the outdoors. Instead, opt for stone, concrete, or steel countertops and cabinets. Not only do they give your kitchen a modern appearance, but they’re also durable and easy to clean. Investing in practical kitchen elements from the start will render savings in upkeep down the road.
KEEP IT SOCIAL: It’s said that the kitchen is the heart of the home; when you’re entertaining, guests often congregate in or near the kitchen to visit with the cook and each other. Arrange your outdoor kitchen to allow for that as well. Site your dining and lounging areas near enough that you can chat with guests while preparing the meal. (This also makes it easier to get food to the table). Set the ambience with good lighting. Add brighter lights to pathways, cooking areas and activity areas, then go for adjustable lighting in the dining or lounging areas. Colored bulbs help to set the mood, but save them for areas in which illumination isn’t necessary to keep everyone safe and sound. A large television designed for outdoor use is a great addition for some gatherings; turn your kitchen and lounge area into an outdoor movie theater or mini sports arena. Add a sound system for background music or for amplifying the television’s sound. Add a large table, a fireplace or fire pit, an overhead fan or two, and some comfortable seating, and you’re ready to entertain. CH

The 1960’s architect’s build was taken right down to the studs and rebuilt in West-Coast contemporary style — and much of the design surrounded “functionality” for a young growing family. “We wanted it to be very contemporary, but also family friendly and functional for them,” said Richardson. The 10-month project saw Richardson and the family work closely on almost every aspect of the home. “It was very rewarding to work with the clients,” she said. “They had extremely refined taste in all of the elements of the home,” from the exquisite light fixtures supplied by Mcl arens Lighting and Gabriel Ross to the glass and steeling railings that enhance the outdoor deck and the gorgeous waterfront views . Richardson credits a stellar cast of subcontractors and suppliers on the job, including Dreamcatcher Cabinetry, Avilion Metalworks, McLeod Electric, Hourigan’s Flooring, Lifetime Tile and Stone, First Response Glass, Incredible Closets and Bartle & Gibson. “We focused on adding organic and whimsical touches throughout the home,” says Richardson. “The hardwood floors are exceptional and give it that west-coast contemporary feel that runs out to the deck and the glass railing that gives way to the beautiful waterfront views.”

Pike Place Market & Beyond YOUR FAVOURITE PLACE IN SEATTLE IS GETTING BIGGER AND BETTER

O
pen since 1907, Pike Place Market is one of the oldest continuously operating farmers markets in the United States. That historic significance — and those iconic waterfront views over Puget Sound— draw 10 million visitors a year to its dark alleys and cramped, creaky stairways. But “cramped and creaky” don’t do justice to what is also a bustling nine-acre neighborhood and a slice of Seattle’s soul. Now, for the first time in 40 years, Pike Place Market leaders have revived and expanded the destination to include 12,000-square-feet of shops and restaurants, colorful public art installations and 300 new underground parking spaces. The $74-million MarketFront project is part of the larger Waterfront Seattle Program, a major redevelopment that will transform Seattle’s central waterfront from Pioneer Square to Belltown. When it’s finished in 2024, locals and visitors will benefit from several changes, including a first-time waterfront bike path and promenade reminiscent of San Francisco’s Embarcadero, and a much-needed makeover of Seattle Aquarium. No need to wait, though. The western expansion of Pike Place Market is complete and definitely worth a visit, the next time you’re in Seattle.

Start on Western Avenue, where Seattle artist John Fleming’s Western Tapestry has revived the drab concrete thoroughfare with 1,670 bright, multicolored aluminum strips varying in length from four to 40 metres. It’s particularly stunning at night, when LED lights illuminate the wall. Cross the street, heading west toward the bay, and you will spot the MarketFront. Don’t miss the airy new Pavilion, a bright space showcasing the handmade crafts and specialty products of 47 local artists and farmers (and freeing up elbow room at the busy indoor Market). Roll-up doors keep you dry on rainy days so you can shop without getting soaked. From there, take the Grand Staircase to Producers Hall. Under exposed wood beams reminiscent of the original Market, four artisan purveyors showcase on-site production of their culinary goods. In one corner, Honest Biscuits churns out square-shaped, southern-style biscuits with Seattle twists, like the MacGregor, made with ingredients from the Market’s Bavarian Meats and Beecher’s Cheese. Just behind Honest Biscuits, there’s Indi Chocolate, a tiny artisan chocolate factory and cafe, serving up small-batch bars, desserts and espresso drinks (hello, Mole Caramel Latte) made with cacao sourced from around the world. Ask for a sample of whatever dark chocolate the staff is whipping up that day. Thirsty? Head over to Old Stove Brewing Co, a light-filled brew house with an 80-foot window wall perfect for catching marine traffic in and out of Elliott Bay. The brewery currently has 12 rotating beers on tap and a small pub menu. Once construction of the 15-barrel, grain-to-glass brewery is complete this June, expect a full gastropub menu with a woodfired oven — dressed as a giant beer can — and 24 beers. For now, ask to watch as they seal your 32-ounce to-go can with a nifty stainless steel Crowler machine. The buzziest food experience will be at Little Fish when it opens this summer. A new venture from restaurateur Bryan Jarr and award-winning former San Francisco chef Zoi Antonitsas, the 3,000 square-foot restaurant will also serve as a modern craft cannery, where patrons can watch chefs house-curing and canning salted and smoked seafood from Puget Sound waters and beyond. Dishes like Penn Cove Mussels in Apple Cider Vinegar and Smoked Paprika or Albacore Tuna Belly in Olive Oil will be featured on a menu celebrating Basque, Scandinavian and Japanese cuisine. Prefer to let the sea breezes sharpen your appetite? Head to the new plaza and viewing deck for panoramic views of Mount Rainier to the Olympic Mountains. Stop at the landings of the Grand Staircase to snap selfies in front of Vashon Island artist Clare Dohna’s large and colorful mosaic murals with tiles of fish, flowers, fruits and vegetables. Particularly on gray days, when the sun refuses to emerge, the tiles provide just the pop of color to remind you of the overwhelming bounty of the Pacific Northwest, captured in one historic public market. >

Tour of Ancient Indigenous Village Offers Unique B.C. Vacation Opportunity BAMFIELD — Surrounded by old-growth rainforest against the rocky shoreline on the southwest edge of Vancouver Island lies a centuries-old Indigenous village where traditional longhouses accessible only by foot remain undisturbed. The Huu-ay-aht First Nation began offering tours of the ancient capital Kiixin — pronounced kee-hin — last year in an effort to share their cultural heritage with the world and revitalize the quiet coastal town of Bamfield. Trevor Cootes, a member of the Huu-ay-aht’s executive council, says opening up the rare archeological site to the world has been years in the making. “For guests coming into our territory ... they’re almost witnessing what we’re doing in regards to truth and reconciliation. Truth and reconciliation has to do more with ourselves and how we put our own culture back into our day-to-day lives.” The Huu-ay-aht is among several Vancouver Island First Nations to sign a treaty in 2011 and is self-governing. The ancient site near Bamfield is located between the popular tourist destinations of Ucluelet and the West Coast Trail, and is accessible by either logging road, plane or ferry from Port Alberni. > Capital HOME SUMMER 2018 | 95
TRAVEL B.C. The Canadian government declared the village and fortress, which dates back to the 19th century, a National Historic Site in 1999. The roughly three-hour tour offers more than a history lesson about the site. Guides tell stories reflecting the beliefs and traditions of the Huu-ay-aht people, including a tale of how their warriors reclaimed the land from a neighbouring nation and spiritual beliefs rooted in the land, water and stars. “In our culture when you come to our territory and we share something to you, a part of that responsibility is that you now are a witness to who we are as Huu-ay-aht people,” Cootes says. “Instead of just paying for a tour, you’re being part of something and there is almost this life-long connection to Huu-ay-aht.” Visitors also learn about significant plant life in the area used for cultural and medicinal purposes. “The idea is that we paint a picture of what is in the land,” Cootes says. Visitors can add on a traditional food component to the Kiixin tour and also take trips hiking in the forests, kayaking, or boating from Bamfield. Accommodations in and around Bamfield range from camping to waterfront lodges, many of which are owned by the First Nation, Cootes says.
While the Kiixin tour is one of a kind, the number of Indigenous cultural activities across B.C. has grown significantly with more than 400 new tourism businesses taking off between 2012 and 2017. Tracy Eyssens, chief executive officer with Indigenous Tourism BC, says they are tapping into Canadian and international interests in their heritage to both boost local economies and set the record straight about their culture. “No, we don’t live in igloos, no we don’t live in teepees,” she says. “We are changing those cliches, or those myths, or the perceptions that consumers have about Indigenous people in B.C.” Recent federal funding to Indigenous Tourism BC is intended to help expand the industry by giving more communities like the Huu-ay-aht support to develop and expand attractions in the coming years, Eyssens says.
