The WOW Factor

B

uilding a luxury home can have its challenges.

And we’re not only talking about footing the final bill.

Sometimes it’s the location and the lay of the land that present the highest hurdles — and achieve the loftiest results.

Take the stunning cliff-hanger home on the waterfront at Deep Cove featured by writer Grania Litwin and photographed by Geoff Hobson.

Christopher Developments and KB Design combined to create this absolute gem that cleaned house at the recent CARE Awards, taking the Project of the Year and Best Single-Family Home among other accolades.

The finished product is indeed a winner.

The waterfront site is less than 15 metres wide and sloped to the beach at a 45-degree angle.

Tight quarters and dizzying drops challenged the designer and the builder and his crews.

There were neighbours’ concerns, archeological

delays and ocean currents and tides to contend with at this restrictive but beautiful location.

In the end, ingenuity by some of the best designing and building minds in the business paid handsome dividends to the owners who now enjoy a unique living space in our beautiful corner of the planet .

Mangiacasale, a Victoria resident whose parents emigrated to Canada in the 1950s from Italy, sets the stage for Puccini’s La bohème, one of the composer’s best works being staged by Pacific Opera Victoria. It will run for five nights in February at the Royal Theatre, featuring ItalianCanadian soprano Lucia Cesaroni as Mimi under the baton of conductor Giuseppe Pietraroia.

STUNNING HOME PAYS HOMAGE TO GEOMETRIC DESIGN, FUNCTION AND FORM â&#x20AC;&#x201D; AND SYMBOLISM

W

ith its smooth stucco walls, circular auto court and blood-red metal sculpture at the entrance, this home is a love letter to international modern design. It’s also a psalm to minimalism and open-concept living.

It is the dream and design of Wail Majeed, a man with an unabashed devotion to geometric form and a romantic who appreciates the power of symbolism.

“The sky is the artwork here,” he says as he leads the way into the gleaming white living room. Sunlight fills the room, and outside glints the blue water of a large negative-edge pool that hugs the base of this enormous wall of glass. The grand space is defined on either side by matching, chimneyless, linear fire burners installed in raised black granite hearth stones. Powered by biofuel, these “eco fires” are a sleek and green replacement for a traditional fireplace.

The fire element is essential to the way Majeed hopes the space is experienced — Earth, sky, water, fire.

It is meant to be a visual concert — each a separate instrument, but together a comforting symphony of the familiar, and a reminder that within even everyday elements there is potential for the spectacular.

A music room with a baby grand piano is on one side of the living area, a dining room on the other. The dining space flows into a kitchen with glossy white lacquered cabinets, a breakfast area and a family room where a few family photos are displayed on otherwise almost empty shelves.

Beyond the music room, on the other side of the living room, is a guest suite, a powder bath with stunning red fixtures and offices.

An elevator and two grand staircases, one from the east side of the entryway and one from the west, serve the top floor. The garage is below the house, and the third level is devoted to bedrooms and baths for this family of four, as well as a game room. The blue silicon sink with LEDs in his son’s bath is the sort of unique find the Majeeds appreciate. >

SSPLASHES OF RED ...A N D A FEW MOR E C OL OURS TOO! They have lived in this Texas house about a year, but it has been a part of their conversation and central to their dreams for much longer.

They bought the oddly shaped, sloping lot in 2007, and began the hard work of planning the home they imagined. He relied on his friend and architect, Ken Schaumburg, for project support.

As they explored floor sketches, the house began to wiggle out of its cocoon of imagination and into the world of possibility. And then one day it came to life. From that moment on, Majeed says, he called the house by a name: Villa Quantum.

That center is marked now by that defining red metal sculpture set in the approach to the house. “It’s called ‘Couple,’ ” says Majeed. He likes the idea that he and his wife are the couple at the creative center, the quantum point, of the home.

The Majeeds envisioned a brilliant white interior for the entire house: floors, walls, ceilings. Working within that dream and with a list of how

Majeed wanted upper and lower kitchen cabinets to function, they forged plans for an ultra-modern kitchen: Italian-made white lacquer cabinets, electrical outlets hidden in pop-up towers tucked into the Caesarstone countertops, a generous roll-out spice rack, refrigerator and freezer camouflaged by this gleaming custom cabinetry, and more.

Their favorite space is the living room, where the graceful curve of custom white leather couches balances the sharp angles of the architecture. Because Majeed’s favorite color is red, the color of life and passion, he added red pillows and a bold red stripe at the back of each linear fire burner.

“Throughout the house there is a mark or stripe of red. It starts outside with the sculpture and moves into the entry and into the living room and radiates through the rest of the house,” she says. In the dining room, that signature splash of red is found on only one leg of the otherwise white dining table. CH

ts marketing program had yet to be launched, but there had been calls from around the world.

In fact, this summer the $100-million Customs House residential project, slated for two buildings at the gateway to Victoria’s historic downtown, was little more than a boarded up site with a picture of an idea attached to its exterior promising something special.

“This location is, I think, one of the greatest locations in North America. I don’t know if there is a more beautiful setting than being on our Inner Harbour,” says developer Stan Sipos. “For us, it has been an extremely difficult and diligent process to ensure this building is replaced with something that will be here for hundreds of years.

“This is the gateway to our inner core.

And having a beautiful building as a gateway, next to the Belmont building [across the street at the corner of Humboldt and Government streets] is like a couple of pillars inviting you down into here.”

The new configuration of the Customs House project will see 57 high-end condos built in what was the Canada Customs building at 816 Government St. and the adjoining heritage building that faces Wharf Street. The heritage facade will be maintained while the interior will be gutted and renovated.

And inside its walls, Sipos promises nothing but the best.

He intends to establish lush, inviting living spaces with high-end finishes with painstaking attention to detail in all things.

And that will command top dollar.

The price seemed only to fuel interest in the project. While the marketing program launched only a month ago, nearly half of the 57 units have been spoken for — including a 4,000 square foot penthouse suite which sold for $10 million.

Details in the suites include kitchens boasting imported Italian cabinets, high-end appliances and engineered stone countertops, bathrooms in porcelain and marble and living spaces with ceilings as high as 13-feet with wide-planked engineered hardwood and imported cabinetry.

Architect Paul Merrick promises the design of the project will etch the building into people’s consciousness.

“This place was never really strong in anyone’s mental map. One of the most meaningful things this new place is going to do is make it a contributor to this part of the city, and by doing that it will contribute to the whole city,” he said.

So far, the work on the building has included interior demolition and remediation work.

Demolition of the building that faces Government Street could be completed by Christmas, and construction of the new building will take just over two years. CH

his attractive waterfront cottage may look as if it was conceived by celebrated 20th-Century abstract artist Piet Mondrian, but its visionary vocabulary and contemporary aesthetics are pure WestCoast modern. And while Mondrian was partial to primary colours such as red, yellow and black in his piles of cubes, this home employs a crisp, palette of sophisticated white, grey and brown — all outlined in slender strands of black.

Built by Christopher Developments, the award-winning home’s bold exterior is complemented by an equally distinctive interior. One of the most eye-catching details is a large, honey-grained slab of Mexican parota wood inlaid into the kitchen island. Hobson Woodworks meticulously merged the reddish-brown block into a solid piece of white Caesarstone quartz: “We modified the slab so that it would replicate a live-edge look then perfectly married it together with the stone,” said Geoff Hobson. It took a plenty of hand fitting and sanding to a minute level, but the result is a strong physical feature, a standout look.

It is just one of many details that earned the North Saanich home four golds and three silvers at the recent CARE awards, and why the owner-wife said: “This house is more than a dream house, it’s a dream come true. We have a piece of paradise here and especially love how bright the interiors are.”

SHEER WILLPOWER The 1,790-square-foot house is filled with light now, but there were some dark days during construction. It was a challenge that both the out-of-province owners and contractor described as a nightmare at times. “I honestly don’t think we could have achieved this without our builder,” said the owner, referring to Chris Walker’s determination and resilience.

“It is a testament to him that we were able to achieve this with so many huge and seemingly-ridiculous restrictions, ranging from geological issues relating to fish spawning and tsunamis, to a suggestion [which turned out to be false] that it might be an archaeologically important site. There were enough obstacles to make anyone pull their hair out and abandon the project … we are incredibly grateful for Chris’s know-how, attention to detail and willpower.”

The numerous challenges included limited square footage in the house, a waterfront site less than 15 metres wide and sloped to the beach at a 45-degree angle. Not only was it difficult terrain— especially as crews were working in tight quarters right up against property lines with a drop of 13 metres — but there was also a dilapidated seawall that needed to be rebuilt immediately, to stop erosion. “We had to excavate below high tide, sandbag the ocean front and build very large concrete footings,” said Walker. The wall is four metres high with only about half showing above grade. >41

Once the excavation began, a neighbour suggested they might be disturbing an archaeological midden so work instantly halted while an archaeologist got involved and the builder was told to preserve every seashell. Soon it was learned that the debris in question was atop an old septic field, “but that was a nightmare for a while,” said Walker, noting it was one of the toughest sites he’s worked on in 25 years.

Because of the unusual design, the home also required many beams to support “all those boxes” and the flat roof had only a slight slope and no overhangs, so it was imperative there be no water penetration.

In addition to the two-tone exterior stucco, the exterior features an aluminum siding product called Longboard that looks like walnut-stained wood. “It fools a lot of people,” said Walker, who added it’s expensive but incredibly durable, won’t rot, warp, fade, or ever need staining — and it’s recyclable. Like conventional siding, the product comes in long boards, but with a mechanism that attaches it to a wall. This was the first time Walker used it, but he is now incorporating it into other projects.

The home can now weather the elements in style and it is filled with both sunlight and moonlight thanks to a long row of skylights linking the master bedroom to the bathroom, walk-in closet and in-suite laundry. A parallel line of skylights creates an atrium over the stairs —and all are fitted with solar-powered automated blinds.

After buying the property a decade ago, and temporarily renting the existing old cottage for seven years, the owners decided to demolish and rebuild while they were still based in another province. “We needed great support as we were not here for the build and only flew in occasionally,” said the owner. In addition to Walker, she said her “dream team” included KB Design’s Keith Baker and interior expert Loren Turner, at Zebra Group.

There were many, many issues to hurdle through, like building the sea wall when the oysters were asleep.”

Baker explained the small dimensions, property slope and restrictive footprint were tricky, “but we maxed out the house right to the square inch… despite the many, many issues to hurdle through, like building the wall when the oysters were asleep,” he said with a chuckle.

The feeling of space was achieved through added volume and, although the home has a smallish floor plan, it doesn’t live small, because of the high ceilings, long sightlines and its relationship to outside. “Putting skylights over stairs is a great device to bring light inside all day, and light always helps expand a space,” he said.

The owners didn’t want to heat, clean, furnish, maintain or decorate a large home so this house is perfect for them, and while it has a modern vibe it never feels cavernous or cold.

Using wood is a wonderful way to add warmth in a contemporary space, said interior designer Lorin Turner, who also added texture and curves with features such as the two-storey stone wall in the dining room and wooden slab inlay in the kitchen island.

“We were very strategic with these elements as we didn’t want sensory overload. This is after all, a house that celebrates the view and architecture,” said Turner. CH

saw the listing on MLS and immediately realized it had everything they wanted.

“It was really remarkable … 99 of 100 per cent. And I actually can’t tell you what it’s missing,” he said with a chuckle.

It has their favourite colour scheme of grey and white. It is transitional, meaning it is neither too contemporary nor too traditional, and it is in a private setting with wonderful views. “So we pounced,” he said.

The owners were also pleased to learn their new home was a recently prizewinner. It took a gold CARE award for best single-family detached spec home over 2,500 square feet, and three silvers, for best traditional bathroom, best kitchen under 250 square feet, and best interior. “It was like sweeping the Olympics,” said Kershaw, who raves >57

Philco’s in-house decorating expert, Eric Gibson, helped the clients decide where and how to spend dollars. “Things like concrete and roofing cost a lot, but where you really win people over is with the flooring, cabinets and millwork. The owners appreciate everything about their home, including a master dressing and bathroom that are bigger than the master bedroom, with built-in shoe racks, double hanging shirt rails and more drawers than anyone could possibly want.

In the kitchen, all the appliances are Jenn-Air Pro Series and the owners added a warming oven and trash compactor. For a recent party they hired caterers, “and it was so cool to see they were able to spread everything all over the place,” said Lingerfelt, who studied architecture as well as gastronomy. “We also have a large pantry, and I’ve not had the pleasure of owning one for some time, so I’m enjoying that. It looks like a grocery store now.

It’s wonderful having everything orderly.”

Speaking of orderly, they love the home’s automated systems that control everything from heating to security, all from a cell

phone. “We were in Mauritius recently and when someone came to the door I was able to speak to them directly,” said Kershaw.

Designer Ryan Hoyt said the project’s biggest consideration was how to create a retirement-style home with main-floor living and high-functioning entertainment space, in a house with a bungalow feel.

This subdivision has design restrictions that wanted homes not looking like two storeys, he said, “so we sculpted the upstairs into the steep pitch roof. And while the 2.5 acre property was spacious, a development permit called for a relatively small footprint,” so he had to creativly retain water views and skirt rocky outcrops.

“The key here was to avoid the look of a monster home, while making the home look grand and executive. Lots of people want to downsize, but they don’t want to get too small,” said Hoyt.

Everyt hing from heating to security is controlled by a cell phone.

Although in the past they have moved frequently, Kershaw said they feel “very centred here, very at peace in this house,” but he also added they’ve never lost a penny on a real estate deal. And they don’t ever waste time de-cluttering because they de-cluttered long ago. “The trick is never to get attached to something in the first place,” he said, adding their moves are painless. “I just get out of Jim’s way when he’s unpacking because he can unload 50 boxes in four hours.”

Friends ask why would they move, what more they could possibly want in a home. It’s a difficult question, but Kershaw responds: “We have a reputation to keep moving.” >

s a kitchen and bath designer with Design One Stevens Interiors, she knows that completing a major renovation can be stressful and overwhelming. That’s why she has focused her career in helping clients navigate the process.

“Understanding the client’s vision, how they will use their space, how they like to entertain, contribute to a space that looks great but also just works,” explains Carole, adding “most clients have an idea of how they want their space to look, but aren’t able to articulate those ideas into plans or understand the proper flow of a space. That’s where I can really add value.”

L

ack of function was the motivation to updating this 1990’s master ensuite. The main factor was a back injury that was becoming more problematic with the outdated fixtures and dysfunctional layout.

To solve this, the layout was first addressed. Working within the original footprint, the shower was increased to allow easier access and mobility. The vanity was re-configured to allow for his and her storage, better function and increased height to prevent unnecessary bending. The tub deck height was increased to allow the client to sit and swing legs in for use. The location of the tub filler was positioned to allow the client to sit while accessing to fill. The toilet height was also addressed and increased.

The objective was to create a classic timeless bathroom with modern conveniences and function. A few splurge items were in floor heating and quality fixtures. Hansgrohe was chosen for the modern, yet classic lines with lever and push button options for effortless use. The walls were painted a classic grey with a warm white for trim and ceiling to provide that restful, spa-like experience.

Carrera-looking porcelain tile was masterfully laid and gave us that timeless feel we were after. Stacked marble in the back splash was that third element used to give character and texture to the interior design.

ELITE MEAL THAT CAME TO BE IN THE 1960s REMAINS A HALLMARK OF FINE DINING

A Surf and Turf typically pairs a juicy steak with succulent lobster tail.

It’s a classic of modern American culinary convention.

ccording to food history website foodtimeline.org, while meat and seafood have been served at the same meal since antiquity, food historians generally agree the pairing of “surf and turf” is a modern American convention.

Foodtimeline.org says fine establishments catering to elite diners craving both lobster and steak on the plate introduced the dish in the 1960s and that fact was noted in newspaper articles and ads from New York to Chicago to Portland.

Just who served the first surf and turf is not known, but a few sources suggest it was Seattle Space Needle’s restaurant, Sky City, during the 1962 World’s Fair.

Although there are now variations of what constitutes surf and turf, the classic combination is still a tender steak, such as filet mignon (beef tenderloin steak) and lobster, often just the tail.

Both can be pricy, so if you’re preparing them at home for your beloved, you will want to cook them just right, or the expense won’t feel worth it. To assist you, I have provided tips on cooking steak and lobster tail and a recipe. >

A CLASSIC COMBINATION Cooking Steak 101 B

efore cooking, let the steak warm at room temperature at least 20 minutes. If cooked refrigerator cold, it won’t cook evenly. Also, preheat your grill or skillet. If you don’t, the meat may stick and/or you won’t achieve a nice sear or grill marks.

A steak becomes firmer as it cooks. To see how it’s progressing, lightly press the steak in the centre. When very rare, the meat will feel quite soft; medium-rare steaks will be somewhat soft, but offer a little resistance.

A medium steak will start to feel firm, but still have some give. Well-done meat will feel very firm.

AN EXAMPLE OF A PERFECTLY COOKED RARE STEAK. Gauging a steak’s doneness by touch takes practice. If you’re a novice, it’s OK to cheat and make a small incision into the thickest part of a steak and peek inside to see how it’s cooked. If you keep practising the touch technique, after a while you’ll be a pro at judging and not have to peek.

Preparing restaurant style lobster tails 101 A

restaurant-style way of preparing lobster tails for roasting, where before cooking the meat is removed from the shell and set on top.

Lobster tails are sold frozen, or thawed from frozen. If you’ve bought the former, you can thaw them by setting them in a sided dish in the refrigerator the day before you’ll serve them.

If your forgot to do that, you could also submerge the tail in cold water 30 minutes, or until thawed.

Grilled Steak with Roasted Lobster I

like to serve this classic “surf and turf” combo steak-house-style, with a baked potato and a buttered green vegetable, such as asparagus, broccolini or green beans, alongside.

Preparation time: 20 minutes Cooking time: About 10 minutes Makes: two servings 2 (6-oz /170g) beef tenderloin steaks or strip loin medallions, each about 2-inches thick (see Note) s OLIVE OIL FOR BRUSHING s SALT AND FRESHLY GROUND BLACK pepper to taste 2 (3 to 4 oz./85 to 115 gram) lobster TAILS THAWED IF FROZEN AND PATTED DRY 2 Tbsp melted butter SMALL GARLIC CLOVE MINCED s PINCHES PAPRIKA AND CAYENNE PEPPER 2 tsp lemon juice 2 lemon wedges s MELTED BUTTER TO TASTE FOR DIPPING

Brush the steaks lightly with olive oil; season with salt and pepper. Let steaks warm at room temperature at least 20 minutes.

Meanwhile, line a small, shallow baking pan with parchment paper. Prepare the lobster tails for roasting as shown in the step-by-step photos, and then set in the pan (see Eric’s options).

Combine the 2 Tbsp melted butter, garlic, paprika, cayenne and lemon juice in a small dish. Generously brush the mixture on the lobster meat.

Preheat the oven to 425 F. Preheat your indoor grill or barbecue to medium-high (see Eric’s options).

Roast the lobster tails 8 to 10 minutes, or until just cooked through. (When ready, the lobster will feel slightly firm, not stiff and rubbery, a sign it’s overcooked. If it still feels soft, it’s not cooked.)

While the lobster cooks, grill the steaks to the desired doneness, about 2 to 3 minutes per side for rare, and 3 to 4 minutes for medium-rare to medium.

To serve, set one steak and one lobster tail on each of two heated plates. Set a small dish of the butter and lemon wedge beside each lobster tail, and serve. > NOTE: A STRIP LOIN MEDALLION IS A THICK STRIP LOIN (NEW YORK) STEAK THAT’S BEEN CUT IN HALF, WIDTHWISE, AND TIED AND SHAPED INTO A MEDALLION. YOU’LL FIND THEM FOR SALE AT SOME SUPERMARKETS.

ERIC’S OPTIONS: THE LOBSTER TAILS CAN BE MADE OVEN-READY SEVERAL HOURS IN ADVANCE; COVER AND REFRIGERATE UNTIL YOU’RE READY TO ROAST THEM. BRUSH WITH THE BUTTER MIXTURE JUST BEFORE COOKING THEM, AND ADD A MINUTE OR SO TO THE COOKING TIME AS THE LOBSTER WILL BE QUITE COLD. FROM ITS ROOTS IN NEW ORLEANS MORE THAN A HALF CENTURY AGO, BANANAS FOSTER REMAINS A MOST DIVINE DESSERT

I

enjoy learning about the history of food and how certain dishes were named, particularly the sweet, rich and luxurious ones.

One definitely meeting that criteria is Bananas Foster.

A number of years ago, I had the dessert at the place it was invented, Brennan’s restaurant in New Orleans, a fine-dining establishment that’s been in business since 1946. I had a splendid meal there and to celebrate the occasion I bought a cookbook filled with recipes for menu items served there.

It’s called Breakfast at Brennan’s and Dinner Too and it has a recipe for Bananas Foster. Beside it is a write up about who created it, and why and how it was named.

The story goes that in the 1950s, New Orleans was the major port of entry for bananas from Central and South America. To recognize that distinction and to promote the fruit, the restaurant’s owner, Owen Edward Brennan, asked his chef, Paul Blangé, to use those bananas in a new dish.

Around the same time, Brennan was asking his chef for that new creation, a publication called Holiday Magazine was asking him for a new recipe that they could run beside a feature story it was doing on the restaurant. The timing was perfect, as it would help promote his chef’s divine new dish he dubbed Bananas Foster.

The dessert was named in honour of Richard Foster, a regular customer at Brennan’s and a good friend of Owen Brennan. At that time both men served on the New Orleans Crime Commission, which was trying to clean up the city’s French Quarter.

Ironically, though, that new dessert was bit of a crime itself, in that

it was sinfully rich, divine and flamed with booze. When it was first prepared tableside in the restaurant it drew a lot attention and still does. According to the book, thrifty-five thousand pounds of bananas are flamed each year at Brennan’s in the preparation of this now worldfamous dessert.

To make it, in a pan, butter is melted and combined with brown sugar and cinnamon. In goes some banana liqueur, and then pieces of banana are added. After the bananas soften and begin to brown, rum is poured in, warmed and then ignited, flambéing the bananas. When the flame dies down, the bananas and their wicked sauce are served with vanilla ice cream. Yum! As noted, it’s rich and very much a special occasion dessert you have every once in awhile. If you can’t make it to Brennan’s, I have a recipe for Banana’s Foster. It serves two and would provide a sweet way to end a romantic dinner.

These days, you’ll also find of other dishes where Bananas Foster, or some form of them, are incorporated into them, such as Bananas Foster waffles and Bananas Foster bread pudding.

You will also find cakes featuring the name of the dish including my recipe, Banana Fosters upside-down cake. To make it, sliced bananas are set on a butter/brown sugar mixture flavoured with cinnamon, banana liqueur and rum. Banana-flavoured cake batter gets poured into the pan and when baked, cooled a bit and then inverted, you end up with a beautiful, banana-topped cake that tastes divine. Like Bananas Foster, it’s very much a special occasion dessert that in this > case will serve eight to 10.

Bananas Foster

T

his famed dessert, invented in 1951 at Brennan’s restaurant in New Orleans, sees hot bananas simmered and flamed in a sumptuous, caramel-like sauce.

PREPARATION TIME: 10 minutes COOKING TIME: About five minutes MAKES: two servings 2 Tbsp butter 1/2 C. packed golden-brown sugar 1/4 tsp ground cinnamon 2 Tbsp banana liqueur (see Note) 2 large bananas, peeled and

PREPARATION TIME: 30 minutes COOKING TIME: 50 to 55 minutes MAKES: eight to 10 servings quartered, lengthwise 2 Tbsp white rum TO SCOOPS VANILLA ICE CREAM 2 mint sprigs, for garnish (optional)

Place butter, sugar and cinnamon in a 10-inch skillet and set over medium heat. Stir and cook until the butter and sugar melt together. Now mix in the banana liqueur.

Add the bananas to the pan, turn to coat, and heat through until they just start to soften in the centre. Pour in the rum and let it warm a few seconds. Tilt the pan slightly away from you, and very, very carefully ignite with a long match.

Cook, shaking the pan, until the flames die out, about one to two minutes.

Divide the bananas and sauce between two serving dishes and serve with the ice cream. Garnish each serving, if desired, with a mint sprig.

Note: Banana-flavoured liqueur, such as Bols Creme de Bananes, is available at most liquors stores. If you can’t find it or don’t think you will use it very often, you could replace it in this recipe with another alcohol, such as orange liqueur.

The taste won’t be same, but it will still be divine.

his cake see a rich batter spooned over sliced bananas flavoured as you would Bananas Foster. Once baked, you invert the cake, revealing the sumptuous banana topping.

FOR BANANA FOSTERS TOPPING 1/4 cup soft butter 1 cup packed golden-brown sugar 2 Tbsp white rum 2 Tbsp banana liqueur 1/2 tsp ground cinnamon 2 large ripe bananas, cut into 1/4-inch thick slices

FOR CAKE BATTER 1 1/2 cups all-purpose flour 3/4 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1/2 cup buttermilk 1 cup mashed ripe banana (see Note)

1/3 cup soft butter 1 1/4 cups granulated sugar TSP PURE VANILLA EXTRACT 2 large eggs VANILLA ICED CREAM TO TASTE mint sprigs, for garnish (optional)

Position an oven rack in the middle position. Preheat oven to 350 F (use regular heat, not convection).

Make topping by placing 1/4 cup butter, brown sugar, rum, banana liqueur and cinnamon in the bowl of your standing mixer fitted with the paddle attachment (see Note). Beat those ingredients until well combined. Spread brown sugar mixture all over the bottom of a 9-inch round, 2-inch tall, non-stick baking pan.

Arrange the banana slices in circular fashion on top of the brown sugar mixture.

(The brown sugar mixture should be almost completely covered with the bananas). Set the cake pan aside for now.

To make cake batter, place flour, baking soda, baking powder and salt in a medium bowl and whisk to combine. Combine the buttermilk and mashed bananas in another bowl.

Place the 1/3 cup butter, granulated sugar and vanilla extract in the bowl of your stand mixer fitted with the paddle attachment. Beat mixture until very well combined. Now beat in the eggs, one at a time, beating thoroughly after each

addition. Add flour mixture alternatively with buttermilk/banana mixture, mixing until just combined. Scrap the sides of the bowl and mix 30 seconds more.

Pour the batter into the cake pan. Bake 50 to 55 minutes (see note), or until the cake springs back when gently touched in the centre. Cool the cake 15 minutes.

Run a paring knife around the edge of the cake. Set a cake plate over the pan (see note). Carefully and quickly invert the cake and release onto the plate. Serve wedges of the cake warm or at room temperature with a scoop of vanilla ice cream. Garnish with mint sprigs, if desired.

NOTE: Two large bananas should yield the one cup of mashed bananas needed here. If you don’t have a stand mixer, you could use a hand-held electric mixer for this recipe. If the brown sugar mixture bubbles over the edges of the pan later in the baking process, set a baking sheet on a rack below the cake pan to catch those drips. If you don’t have a cake plate, after baking, invert the cake on a parchment paper-lined board and serve it from there.

Simple Sauce

1 x 395g tin sweetened condensed milk

throughout the cooking process.

Simmer, uncovered for 3 hours.

STEP 1: Remove label from the unopened can of condensed milk.

Fill a deep medium saucepan with water. Bring to the boil. Carefully place the can in the saucepan, ensuring there’s enough water to completely cover the can at all times, topping up water frequently

STEP 2: Ensure the can is completely covered with water at all times during cooking.

STEP 3: Carefully remove the can from the boiling water. Allow to cool completely before opening and using as a caramel spread or dip.

STEP 4: Alternately, combine 200g butter with 200g brown sugar in a medium saucepan. Stir over low heat until the butter and sugar become a smooth liquid.

F

or a man who died more than 90 years ago, Giacomo Puccini still exerts extraordinary influence over the culture and economy of his birthplace, Lucca, Italy, where visitors can take in a performance of the composer’s work almost every night of the year.

Puccini seems to be everywhere in this fortress city, about 90 kilometres west of Florence, where you can stroll or bike along the four-kilometre, tree-lined top of its well-preserved ramparts.

The narrow streets in the historic centre – where few vehicles are permitted – fill with thousands of tourists a year, lured by the history and architecture, and the legend and music of the Tuscan city’s most famous son.

Visitors can stay at the charming, family-run Piccolo Hotel Puccini, dine on fine handmade pizza and pasta at Puccio & Puccini trattoria and tour a museum in the home where Puccini was born.

A second museum fills a villa where the composer once lived in the countryside, about 25 kilometres west of Lucca.

In Piazza Cittadella, one of the city’s many public squares, the maestro himself, cast in life-size bronze, sits atop a plinth, relaxing in an armchair, his left ankle perched on his right knee, a smoke between the fingers of his right hand. A chain smoker of cigars and cigarettes, Puccini died of throat cancer in 1924 at the age of 65.

So it’s surprising to discover the composer has only recently become a symbol for Lucca.

“In 1994, when they put up the statue of Puccini, it was a shock for the Lucchesi. ‘Who is he?’ they said. Then, ‘Oh, Puccini.

Oh, yes,’” said Gabriele Calabrese, doyen among local tour guides, featured in travel guru Rick Steves’ Italian guidebook and television show. >

It was only in 2015 that a collaboration emerged among the area’s Chamber of Commerce, artistic and cultural institutions, local governments and marketing agencies to brand the region “The Lands of Giacomo Puccini,” launching a worldwide promotional campaign.

“So, Puccini became – and is going to be even more – the symbol that can link with all the other things in the town,” Calabrese said, laughing as he noted that you can now purchase chocolates and cigars with Puccini’s image on them.

Tourism figures reflect the success of the campaign, said Francesca Sargenti, head of international marketing for Lucca’s Chamber of Commerce. Just in the first year, the number of foreign visitors to the province, which includes Lucca and surrounding towns and villages, jumped almost 3.5 per cent – to 449,300 visitors in 2016 from 434,636 in 2015. It’s up 17.5 per cent since 2001.

The Puccini Birth Home Museum had 34,000 visitors in 2016 – up more than 40 per cent from the 24,000 in 2014. Seven euros buys one ticket (5 euros, if you’re a student or a senior) into the 12 exhibition rooms. The centrepiece of the music room is the Steinway grand piano Puccini bought

in 1901 and used to compose much of his last opera, Turandot. The attic is a shrine to one of his most famous works, La bohème, designed by the local Teatro del Giglio to look like the garret setting of the opera. There’s even a Puccini Museum app, which guides users through the museum and to Puccini-related sites around Lucca.

The big draw, though, is Puccini’s music. Calabrese is putting together a new tour to be called Puccini and the music of Lucca, which will touch on other famous musicians and composers with links to the area, including Boccherini, Geminiani and Paganini.

In Tuscany, Calabrese said, each town was an independent state until 1861 when they joined to form a constitutional monarchy, which lasted until 1946, when Italians voted to become a republic.

Through the centuries, music was the link. “All excuses were good to produce music,” Calabrese said. “Nowadays, we have 50 churches, but in the old times, we had 101 … every day was a good excuse to make music in honour of a saint or a wedding or a funeral and the election of senators every two months at the end of which they had to produce new music in honour of the new government.” >81

“La bohème is the greatest summary of everything Puccini understood about the psychology of the audience. He wrote a fantastic story full of important feelings and emotions and sentiments and then he put fantastic melodies in that, absolutely unbeatable,” Colombini said.

Vernon agrees that Puccini’s operas reveal a keen sense of timing. “He writes so well for the opera house that he even knows exactly how long it will take for one of his characters to cross the stage. It’s unheard of.

It’s a kind of mastery that few people have.”

he touches the heart so directly and immediately, and it stirs your emotions,” said Timothy Vernon, artistic director of Pacific Opera Victoria, which will mount a production of La bohème in February. “It’s impossible

Puccini’s ancestors played a big role in the music of the city, with five generations serving as organist and master of the chapel for the Lucca’s cathedral, San Martino.

“Puccini was the result of all this,” Calabrese said, calling the composer “the final jewel” in Lucca’s rich musical lineage.

That history resounds to rafters at the Church of San Giovanni, home base of the Puccini e La Sua Lucca festival company of 80 professional singers, four pianists, two symphony orchestras and two choirs that present about 360 concerts a year. No wonder that, sometimes, when you’re walking along the often narrow, stone-block streets, you hear through an open window one of the many resident musicians practising for a performance.

“Puccini is the most performed opera composer in the world,” said Andrea Colombini, the conductor and artistic director who founded the festival in 2004.

There was little local interest or support when he and his family invested hundreds of thousands of euros to launch the festival. Today, he works with 47 tour operators around the world to bring visitors to Lucca.

The festival, which offers a concert every night of the week almost every month, focusses on the music

of Puccini, but includes the works of other composers.

“It would not be possible to have Puccini’s music only because the closed pieces – the arias and duets from Puccini’s works – are only 27,” Colombini said. So, Puccini shares the bill with the likes of Mozart and Verdi as well as traditional Neapolitan folk songs.

Of the 55,000 people a year who purchase tickets to the Puccini festival concerts, 99 per cent are foreigners. But it is the Italians and the economy of Lucca that benefit, Colombini said.

“The income [generated] from the festival – when you think of all the restaurants, transportation and services [used by concert patrons] – is something from 40-million to 50-million euros per year,” he said. Lucca’s Chamber of Commerce did not have figures for the economic impact of tourism.

Lucca also appeals to tourists looking for a nonPuccini experience. There’s the Women of Jazz Festival for three weeks in October, a tango festival that celebrated its second edition in October, and pop, rock and contemporary music concerts. This year’s Summer Festival, over six weeks from midJune through late July, included performances by Green Day, Lauryn Hill, Mary J. Blige and Imagine Dragons. In September, the Rolling Stones attracted an audience of 55,000 to a specially created outdoor venue along the city’s famous walls. >

In April, almost 18,000 people participated in the 41st edition of the annual March of the Villas, a non-competitive race for runners and walkers with routes around Lucca that range from three kilometres to 28 kilometres in length.

In September, Lucca’s festival month, Lucchesi from around the world return home to take part in the procession and celebration of the Volto Santo, a wooden crucifix and image of Christ. Said to have been carved by Jesus’s contemporary Nicodemus and then miraculously appeared in Lucca in 782, the gilded icon stands in a small octagonal, birdcage-like chapel inside Lucca’s Roman Catholic cathedral or “duomo,” San Martino. Dating from the second century, it was built and rebuilt over hundreds of years, obvious in the striking contrast between the façade of soaring arches and elaborately carved columns in brilliant white marble accented in pink and green, and the relatively plain, linear bell tower with a base made of quartz in a mixture of flat, deep colours and a white marble top. A small labyrinth embedded in the westernmost pillar of the portico is thought to predate the famous 13thcentury labyrinth of Chartres.

A metaphoric world away from its many churches, Lucca is also known for hosting the largest comics and games festival in Europe in November, an annual event for more than 50 years. No surprise that two million euros is being spent to renovate the city’s Comics Museum.

Lucca also has a handful of small museums, including two in former family mansions. Palazzo Mansi National Museum, a sumptuously decorated Baroque palace built in the 1600s for a wealthy merchant, features 18th-century art, frescoes and huge, elaborate tapestries that cover the walls. Another stunning palace, Palazzo Pfanner, is worth a visit just for the grand courtyard gardens with statues of Roman

and Greek gods. Still owned by the Pfanner family, a palatial first-floor apartment can be rented on Airbnb or vacation rental by owner for an average of less than $175 Cdn a night, depending on the month.

Fans of architecture will be fascinated by the mix of architectural styles, sometimes all in one building because they were begun in one century and finished hundreds of years later. The elliptical shape of Piazza dell’Anfiteatro hints at its origin as a Roman amphitheatre. A ring of buildings from the 1800s surrounds the centre, a public plaza reached through four gateways, the lowest of which reveals its Roman remains. The streetscape preserves the rectangular grid of narrow, straight streets first developed in the second century when Lucca was a Roman colony.

For a panoramic view of those streets, it’s worth climbing the 45-metre Guinigi tower, built in the late 1300s for a wealthy silk merchant. Restored in the 1980s, the red-brick tower features tall Holm oak trees in a rooftop garden from which you can look over the city’s red-tiled roofs to the

surrounding Tuscan hills. To get a different perspective, you can climb the 50-metre Torre delle Ore (clock tower) and also see the bells and mechanism that date from the 1700s. A combined ticket, just 9 euros, gains entrance to both towers and the city’s 197-year-old botanical garden, a twohectare scientific research centre with paths and benches in a lush triangle with a pond and more than 200 species of colourful plants, shrubs and towering trees.

While conductor Colombini is thrilled that Puccini and his music is luring more tourists to Lucca, he said he knows it’s the setting that makes people want to stay longer.

“You go out from a concert and you have a fantastic city to be explored.”
